Enchiladas, the main appetizer of Mexican cuisine. By: Jesus Albavera Alvarez.

The enchiladas are part of the wide range of traditional Mexican delicacies directly descended from corn and can be prepared with so many different ingredients to create over 100 varieties of this dish. This dish is considered one of the main delicacies within the category of appetizers or snacks in Mexican cuisine and is derived from the tortilla, having origins in pre-Columbian civilizations of Mesoamerica. The enchiladas are known in Mexico since the time when Miguel Hidalgo, Vicente Guerrero and JosĂŠ MarĂ­a Morelos traveled through the country and found a wide variety of delicacies in all the places they visited. Among these treats they stumbled upon were traditional drinks like atole, hot cocoa and pulque, as well as typical snacks like Tlacoyos, tostadas, gorditas, sopes and the delicious enchiladas. In Mexican cuisine corn and chili are the basis to prepare many specialties. Since pre-Hispanic times these ingredients have given identity and spirit to Mexican

dishes, which is why they are essential when preparing the enchiladas. Typically the ingredients used are corn tortillas, chicken, cream, cheese and a prepared sauce that varies depending on the taste of each person. However there are so many variations of this dish that make it possible to please even the most exclusive cravings. You will find the best enchiladas in CancĂşn at La Parrilla, where you can enjoy this typical dish of Mexican cuisine in the two most common presentations, with green or red sauce.

On October 4 an amazing party was held to celebrate the first anniversary of Gay Traveler's Guide at Mandala Beach Club in Cancun. With a cruise theme and celebrity guests this was a night of pure glamor and fun that lasted until the wee hours of the morning. We were honored to have the presence of Ana Layevska, actress who recently lit up the big screen with the film Cantinflas, Renato Lopez, TV personality and host of E! Latin News, Francisco Rubio, actor of Mexican TV shows and soap operas like Clase 406, Soy tu Fan and Por Siempre mi Amor, Salvador Nu帽ez, vlogger and Moovz ambassador in Mexico, and Chris Salvatore, actor of the Eating Out film series and cover model of this edition of Gay Traveler's Guide.

At the start of this amazing evening our celebrity guests were transported to Mandala Beach Club in luxury cars that Exotic Rides provided (Porsche 911, Mercedes Benz SLS and Camaro) and walked the red carpet, where there was media coverage from Mexico Travel Channel, Top Ten, national and local press and social magazines, as well as a live broadcast by RMX Radio. All guests were greeted with a welcome cocktail sponsored by Red Bull, a souvenir photo in a Luxury Avenue cover frame and various gifts from other sponsors.

Later during the evening guests were able to enjoy a fashion show with exclusive designs by Paul & Shark, drinks sponsored by Tequila Revoluci贸n and Mezcalite, the customary welcome speech, fireworks and a raffle for a 3-night stay at Hard Rock Hotel Puerto Vallarta. It was certainly a memorable night for our guests, but especially for us at Gay Traveler's Guide. We want to thank all of our sponsors and everyone who made it possible for us to reach our first year and celebrate it in a big way.

Cenotes, sacred springs of life in crystal clear water. If you're the type of person that travels looking for new adventures and unique activities we recommend visiting the Route of the Cenotes near Puerto Morelos and swimming in the crystal clear waters of these beautiful caves that can be found in the heart of the Yucatan Peninsula.

Their formation took over hundreds of thousands of years. The cenotes are underground caves that collapsed due to erosion and may be partially or completely flooded. They are formed through hundreds of thousands of years and are classified as open, semiopen, old and cavern-like, depending mainly on their age.

The word cenote has Mayan origin and comes from the term “dzonot”, which means cave with water. Formerly they were considered by the Mayan civilization as a source of life, entrance to the other world and center of communion with the gods.

Enjoy the variety of fun activities you can do here. The cenotes are connected by a network of underground rivers and have various shapes, allowing people to conduct various activities in them. Among these activities there’s snorkeling, cliff diving and scuba diving from cenote to cenote. It is one of the main tourist attractions in Cancun Jason deCaires Taylor’s Underwater Museum of Art is one of Cancun’s biggest attractions. The museum features over 500 sculptures strategically placed at different depths on the sea bed. 35 Chris Salvatore is a model, actor and singer originally from Richboro, Pennsylvania who currently lives in Los Angeles, California. He has played the leading role in three films in the Eating Out franchise: All You Can Eat, Drama Camp and The Open Weekend. He will next appear in the film Paternity Leave. He has also ventured into music and is known for his single "Dirty Love" and others that have been used in the soundtracks of MTV series and the Eating Out franchise.

He has done ad campaigns for different brands of men’s underwear and appeared on the cover of several magazines, including Next, Bridget Marie, among others. He will soon appear in the Naked Issue of Attitude magazine. He is also an activist of the LGBT community, appearing in campaigns like It Gets Better from The Trevor Project. Additionally Chris is an ambassador in the United States of Moovz, a new social network aimed at the gay community.

Salvatore - Chris It was a pleasure to have the opportunity to visit beautiful Cancun and its beaches with my friend Grace and enjoy Mexico for the first time. The idea of having two different photo shoots in another country was very exciting to me and I can say it was an experience that surpassed all my expectations. Since the moment we arrived at Hard Rock Hotel I realized this was going to be an amazing week. Everything was wonderful: the rooms, dĂŠcor, restaurants, entertainment and especially the service from the staff.

- Chris The first shoot started very early and took place at the hotel. I got to wear accessories from different labels sponsored by Luxury Avenue, like Salvatore Ferragamo, Montblanc and Longchamp, as well as clothing from Paul & Shark. The outfits looked amazing in the chic and relaxed atmosphere of the hotel and were a mixture of a semiformal nautical style with everyday clothes for the beach.

- Chris For the second shoot we went to Isla Blanca, a remote beach near Cancun with such a heavenly view that it seemed as if the sea and the sky met and become one. The idea for this shoot was that I was a castaway lost in a tropical island wearing sexy bathing suits by Andrew Christian.

Chris Salvatore’s experience on his visit to the Mexican paradise. - Chris My trip to Mexico wasn’t all business since I was able to establish a very nice friendship with everyone at Gay Traveler’s Guide. Together we were able to share some special moments swimming with dolphins at Dolphin Discovery and enjoying a day of leisure at Garrafon Reef Park in Isla Mujeres.

- Chris We also did some tequila shots while enjoying an authentic Mexican Fiesta and dinner at Xoximilco and I conquered my fears parasailing and bungee jumping at Adventure Bay courtesy of my friends at Cancun Riviera Maya agency.

And if it wasn’t enough I got to enjoy Cancun’s famous nightlife at Palazzo Nightclub and a fun beach party at Mandala Beach.

IslaMujeres Surrounded by paradise. Isla Mujeres, in English called "Island of Women", is a small and beautiful island located just a short 20 minute ferry ride away from Cancun. Isla Mujeres combines the beauty of the Caribbean, a lush tropical jungle and the wonderful heritage of the Mayan civilization. It is only 500 meters wide and 7.5km long and is a Caribbean paradise frequented by the more laid back traveller and diving enthusiasts. You also get many vacationers coming over from Cancun to spend a day or two on the island.

Its magnificent views make it unforgettable to its visitors. Isla Mujeres’ romantic setting with its turquoise blue waters and white sand and spectacular sunsets makes it a favorite amongst honeymooners and couples looking for a memorable wedding in the Mexican Caribbean.

IslaHolbox Harmony with nature Holbox is an island located northwest of Cancun. It is perfect for those seeking the calm tranquility of a fisherman’s village in a paradise setting. IslaContoy Wild scene. The beautiful island of Contoy is located where the Caribbean Sea meets the Gulf of Mexico, about 30 km south of Isla Mujeres. Isla Contoy has no inhabitants apart from the wildlife, and it is only 8.5 km in length and has a surface area of 230 hectares. Only a few tour companies have permission to bring guests to the island and only 200 visitors are allowed each day in order to cause minimal disturbance to the wildlife. Therefore when you visit you can enjoy true tranquility and nature at its finest.

The island of Contoy is home to hundreds of different species of fish and types of birds. Because the island is free of predators, its environment provides the ideal setting for the reproduction of these beautiful birds. Contoy is also home to Boca Iglesia, a community of only 26 inhabitants, only accessible via seaport.

51 The Molcajete A bump in the road taught us that we must... use a mortar, commonly known in Mexico as molcajete. This prehispanic volcanic stone is used today while cooking and it gives the meat a unique and distinctive flavor. Tulum Caribbean fortress. This beautiful walled city that borders the Caribbean Sea is considered one of the most spectacular archaeological sites found in the Riviera Maya.

Breathtaking beaches of white sand and turquoise shades is what this city has to offer, which at the time it was inhabited was called "Zama", the word for sunrise in the Mayan language. This stunning archaeological settlement has always been protected by the Caribbean Sea and large stone walls and, once it was in ruins, was given the name "Tulum", which in Mayan means wall.

MĂŠxico City Cultural Richness In the fall of Tenochtitlan in 1521, Mexico city became the capital of the Viceroyalty of New Spain. With the independence of Mexico the city was appointed as the Federal District (DF) in which the powers of the Union would house.

Mexico City is also the capital of museums, arts, glamor and the most important economic center of Mexico and Latin America. It's amazing what happens when we go on vacation, when we choose a destination of our interest and prepare for the adventure. Personally, I like those trips where you can experience new cultures, new flavors, smells, languages, people, love. Being lost in the streets of a strange country, getting excited when running into someone special, with the mischievous drawbacks that usually happen, those which at the time can be uncomfortable but that depending on our attitude we are able find their silver lining. Those moments are the ones that once our vacation is over we remember and talk about with more enthusiasm and joy. But we must recognize that this is wonderful thanks to a very important factor: our willingness. There are trips that are not as adventurous but allow us to rest, to relax. Arriving at a beach with a delightful climate, with bright sunshine that immediately warms and moistens our skin, with a cool breeze which reminds us that the sea is right in front waiting for us to go in and enjoy. A piña colada, a towel on the sand, music and relax until we watch the sunset. But in order to enjoy all this there is one essential thing: leave the stress behind and overall, be prepared to enjoy what’s there at the time.

67 The problem is that we can’t live on vacation. What would happen if we lived every day with the same willingness to enjoy? Enjoy our house, our space, the clothes we wear every day, perhaps even the love we feel every morning when we wake up. What would happen if we went out to the world every day with the same spirit of adventure we have when we travel? Perhaps we would walk more and discover new paths, new places, new people. We surely wouldn’t feel trapped in routine or boredom. While we can’t live on vacation, we can make our life a journey and realize that as we live with willingness for anything, the discomfort disappears.

By contrast, when we try to control everything, the anguish of not achieving it ends up controlling us. I've always said that happiness is a choice that lies in the way in which we learn to see life and live it. The years go by very fast, a moment doesn’t repeat itself and most of the time we are not aware of this because we don’t live every moment with enough passion. We enjoy life’s ease, but it’s hardships that make us learn. The things you learn now soften the future and that allows us to acknowledge the past. Tortas ahogadas, representative dish of Jalisco. The torta ahogada (or drowned sandwich) is one of the main specialties of the state of Jalisco, where the city of Guadalajara and Tequila are located. This particular dish has become so popular around Mexico that it can be found almost everywhere. Tortas ahogadas are made with a type of bread called “birote”, which is more dense and crunchy than the regular baguette. Its consistency allows it to absorb liquids less, which is why the bread can be submerged in several salsas (or sauces) without losing its shape.

This bread is then filled with sliced, chopped or shredded pork in style of mexican carnitas, then it’s submerged in the special salsa made of chile de arbol and it can be seasoned with a touch of vinegar, cumin and garlic. After this you can add as much tomato sauce and sliced onion (previously marinated in lemon juice) as you like. This dish has proved so popular that you can find in other states and cities of Mexico. In many of these places the recipe has been modified according to the cuisine of each region, but the best tortas ahogadas can only be found in Jalisco.
