WHAT ‘GOOD INSIDE’ MEANS In 2014 Haigh’s were proud to be the first Australian-owned bean-to-bar chocolate maker to achieve international UTZ certification for our use of ethically and sustainably farmed cocoa beans in the making of our chocolate. When we first announced our certification70% of our sourced cocoa was certified and our aim was to achieve 100% in the coming years, we are pleased to report that we have now achieved a level of 80% with 100% of the Haigh’s made Easter range being UTZ Certified. Our Supply Chain Manager, Peter Millard (pictured), played

an active role in achieving the certification for Haigh’s Chocolates.

UTZ certification puts Haigh’s at the forefront of a sustainable production program that spans cocoa-growing countries from Ghana in West Africa to Peru in South America 100% of the Haigh’s made Easter range is UTZ Certified We want to use only the best beans that are ethically produced to reward farmers and care for sensitive environments. The international UTZ program exposes farmers to better

farming methods and helps them to improve working conditions and take better care of their families and the environment. We believe that because we are a part of this program it is good news for both the cocoa farmers who supply Haigh’s and also for our customers; they can enjoy eating our delicious chocolate and know that they are also doing the right thing for farmers and families in emerging economies. EASTER SUNDAY DESSERT

Chocolate Fondants Preparation time: 20 minutes Cooking time: 15 minutes Serves: 6 150g Haigh’s 70% dark chocolate, roughly chopped 150g unsalted butter + extra for greasing, cut into dice 200g light brown sugar 4 large eggs 1 large egg yolk 1 teaspoon vanilla extract 1/2 cup (75g) plain flour, sifted cocoa powder, to dust Pre-heat oven to 200°C (180°C fan forced). Butter the inside of 6 dariole moulds or ramekins. Place butter and chocolate together in a medium mixing bowl over a saucepan of barely simmering water, stirring

occasionally until melted and smooth. Add sugar, stirring to combine and remove from heat. In a separate bowl, combine eggs, yolk and vanilla together, stirring until combined. Add to chocolate mixture, stirring until well combined. Sift the flour over chocolate mixture, stirring until well combined. Divide mixture between prepared dariole moulds, making sure each mould is no more than 2/3 full. Place dariole moulds in preheated oven and cook for 15 minutes or until tops are set and coming away from the moulds. Remove from oven and allow to stand for 1 minute. To serve use a small spatula and very gently ease the fondant away from the edge of the mould. Carefully invert onto small serving plates and dust with cocoa powder. Serve with a dollop of jersey cream and fresh raspberries. Note: filled dariole moulds can be chilled ahead and baked just before serving.
