WHAT ‘GOOD INSIDE’ MEANS In 2014 Haigh’s were proud to be the first Australian-owned bean-to-bar chocolate maker to achieve international UTZ certification for our use of ethically and sustainably farmed cocoa beans in the making of our chocolate. When we first announced our certification 70% of our sourced cocoa was certified and our aim was to achieve 100% in the coming years, we are pleased to report that we have now achieved a level of 85% with 100% of the Haigh’s made Easter range being UTZ Certified. Our Supply Chain Manager, Peter Millard (pictured), played an active role
in achieving the certification for Haigh’s Chocolates. UTZ certification puts Haigh’s at the forefront of a sustainable production program that spans cocoa-growing countries from Ghana in West Africa to Peru in South America 100% of the Haigh’s made Easter range is UTZ Certified We want to use only the best beans that are ethically produced to reward farmers and care for sensitive environments. The international UTZ program exposes farmers to better farming methods and
helps them to improve working conditions and take better care of their families and the environment. EASTER RECIPE
Chocolate Hot Cross Buns Preparation time: 30 minutes + proofing time Cooking time: 30 minutes Makes: 16 1 x 7g sachets fast action dried yeast ¼ cup (55g) raw caster sugar 280ml warm milk 60g unsalted butter, melted 1 extra large egg, lightly beaten 2 cups (300g) plain bread flour 1 cup (150g) wholemeal bread flour 1/3 cup (35g) cocoa powder 1 teaspoon mixed spice 1 teaspoon ground cinnamon ¼ teaspoon salt ¾ cup (120g) sultanas 1/3 cup (50g) dried apricots, roughly chopped 100g Haigh’s dark orange block, roughly chopped Flour paste for crosses ½ cup (75g) plain flour 2 teaspoons caster sugar
2 teaspoons oil 1/4 cup (60ml) water, approximately Glaze ¼ cup (80g) apricot jam, hot Combine yeast, sugar and warm milk together in the mixing bowl of a stand mixer, stirring to combine. Cover and allow to stand in a warm place for 10 minutes or until mixture starts to froth. Add melted butter and egg, stirring to combine. Add flours, cocoa, mixed spice, cinnamon and salt to the yeast mixture and using an electric stand mixer with a dough hook, mix until dough comes together. Knead the dough for 5 – 10 minutes or until dough is smooth and elastic. Place dough in a lightly oiled bowl, cover with a clean damp tea towel or plastic wrap and leave to stand in a warm place for an hour or until doubled in size. Preheat oven to 200°C (180°C fanforced) and lightly grease a 23cm square cake tin.
Turn dough onto a clean floured surface, knocking the air out of it, knead for a further 5 minutes or until smooth, working in the sultanas, apricots and chocolate, making sure they are well distributed through the dough. Divide dough into 16 equal pieces and shape into balls. Using a knife gently score a cross on the top of each ball. Place balls into prepared tin, cover and stand in warm place about 30 minutes or until balls have doubled in size. For the flour paste, combine flour, sugar, oil and water, stirring until smooth. Place paste in a disposable piping bag or clean zip lock bag and snip the corner, pipe crosses on buns. Bake balls in preheated oven for 25 minutes or until the tops are golden. Remove from oven and turn buns out onto a wire rack. To double check they are cooked, the base should sound hollow when tapped. Brush tops of buns with hot apricot glaze and allow to cool on wire rack.
