Their selection of food and drink uses local catering suppliers, organic and sustainable producers as well as home-produced food. In 2018, they will be working towards the Soil Association ‘Food for Life’ quality standard. Ingredients conflicting with their conservation work are avoided. Terroir, from the French for land, is the term used to define the natural environment in which a particular wine is produced, taking into account soil, topography and climate. In fact, the UK’s modern commercial viticulture was established in Hampshire in 1952 with Sir Guy Salisbury-Jones’ pioneering vineyard at Hambledon. Corinne Seely, Head Winemaker at Exton Park, in the Meon Valley, says: “What a bounty we have in Hampshire! Ninety million years of history have created similar soils here as in the Champagne region. The same band of chalk that we find in northern France can be traced under the English Channel and directly into Hampshire’s South Downs National Park. Exton 78

The sea, now just a few miles away, has deposited its treasure, thus imparting distinct minerality, a kind of salinity, and a vibrant elegance to our wines.” However, Hampshire’s terroir (or landscape) also provides the ideal conditions for a variety of crops and livestock, cultivated and wild. The county’s clear chalk streams are world renowned for the quality of their watercress and brown trout.

2 tbsp. rapeseed oil 1 large onion, roughly chopped 1 large baking potato, peeled and roughly chopped 2 litres vegetable stock 300g frozen peas 2 bunches watercress, stalks removed 150g fresh spinach, washed Leaves from 4 sprigs of mint Salt and pepper

1. Heat oil in pan over a medium heat. Add the potatoes and onion, and sweat off for about 20 minutes, stirring occasionally. 2. Add the vegetable stock, stir and leave to simmer gently for 30 minutes, or until the potatoes and onions are soft. 3. Remove pan from the heat. Add the peas, watercress, spinach and mint and leave to wilt for 10 minutes. 4. Blend the soup (preferably with a stick blender as this will be less messy!), check for seasoning and enjoy.

What’s Brewing Our thirst for craft beer and cider is being fulfilled by a growing number of passionate and talented Hampshire brewers. With more than 50 microbreweries now tucked away on industrial estates, farms and in city centres, the local beer and cider scene has become a vibrant part of the county’s food and drink community. Charlotte Johnson from Meon Valley Cider recognises the buzz around local drinks in the region: “I find the level of innovation in the Hampshire food and drink community inspiring. This is met with enthusiasm from customers who are eager to hunt out new flavours and are much more experimental in their drinking.” The local landscape provides ingredients to ensure a distinctive Hampshire flavour. At Meon Valley Cider locally grown apples from the Blackmoor Estate and Hill Farm Orchard are combined with cider apples to create a unique and almost wine-like flavour. At Upham Brewery, the flavour is achieved in part through the use of a bore hole which draws natural water from the chalky South Downs.

One of the best ways consumers can help small breweries is to support their local pubs and specifically buy and ask for locally brewed drinks.” Many breweries are eager to share their passion with their customers through tour and tasting events taking place throughout the year. These events also help microbreweries engage with their customer base and ensure they are brewing what customers what to drink.” Martin Roberts has been brewing at Bowman Ales in the Meon Valley for ten years: “One of the wonderful things about craft breweries is how quickly we can respond to changing customer tastes. Smaller breweries offer versatility that larger set ups struggle to match. We’ve noticed IPA Ales and darker beers are particularly popular at the moment. 500g beef brisket 3tbs rapeseed oil 2 fennels, sliced 2 large leeks, finely sliced 1 red onion, sliced 1 carrot, diced 3 garlic cloves, crushed 150ml full bodied red wine 150ml beef stock 4-5tbs tomato puree 25g dried wild mushrooms Sage, bay leaf Parsley, finely chopped Salt and pepper to taste 340g papardelle

1. To make the sauce, heat the oil in a large pan and brown the brisket in one piece till seared. Set aside. 2. Heat more oil in the pan and soften the fennels, leeks, onion, carrot and garlic for 12-15 minutes or until soft. Set aside. 3. Preheat the oven to 130C and place the meat, sautéed vegetables and tomato puree, sage and bay leaf in a large tray. Cover with red wine and stock and cook for another 3-4 hours till the meat is tender. 4. Remove the meat and shred with two forks. 5. In a small bowl soak the mushrooms for at least 10 minutes and add to the tray with vegetables 6. Cook the pasta until it’s just al dente. 7. Check the seasoning, heat through and stir through the pasta.
