Reasons to choose local With so many award-winning products made here in Hampshire, shopping locally simply tastes better. Turning your focus to local and being guided by what’s available with each season brings a fresh and unrivalled flavour. Be inspired by the many reasons why buying as much as you can locally just makes sense:
Flavour to savour
Having travelled less miles and being in season means that the food you buy locally offers the very best in flavour. Planning your meals around the seasonal ingredients available can also help with a varied and healthy diet.
Helps farmers and the local economy
Choosing to buy from local producers and at outlets such as farm shops and farmers’ markets helps to ensure these small businesses can continue to trade and supports local employment.
A connected community
Whether you buy directly from the producer, or from a specialist retailer such as a butcher or grocer, there is a chance to interact. This dialogue is an invaluable way to learn about local produce and to make sure you know all about what you are buying.
Protect the land
When you buy locally you help to protect and maintain the greenspaces across the county.
Discover
One local discovery leads to another. Try the award-winning cheese and soon you’ll be pairing it with local wines. There is a whole world of local flavour to explore here in Hampshire. Hampshire Fare supports over 400 local businesses involved in growing, rearing, making, selling and serving local food, drink and craft. Sign up to the monthly Hampshire Fare e-newsletter and be one of the first to know about new products, offers, competitions and events.

Farming for a Future
It is no secret that dairy farmers have been struggling to make ends meet. For many years, enterprising farmers across Hampshire have been devising ways to save their family farms through diversification. The positive outcome of this battle for survival is the awardwinning products now available for us to savour. Dedicated farmers have become skilled cheese and ice cream makers fuelled by a determination to keep their businesses alive. Here are the stories of a handful of Hampshire’s farmers.
39
Celia Haynes and her family started milking 40 pedigree Jerseys at Meadow Cottage Farm in Headley in 1967. “Cream was the first product we introduced in 1968 on a small scale and promoted mainly by word of mouth. A year later we begun bottling raw milk which we continue to do today and sell from the farm. It brings a large amount of extra income with 80p clear profit per litre over the current dairy price. In 1984 we started producing our Meadow Cottage Ice Cream as we had to find a way to increase our income in order to survive. We wanted to utilise the milk we were sending off to the dairy and now manage to send off just 25% during summer months. The diversification has allowed us all to work and live together on the farm at Meadow Cottage. Our latest venture has been to produce beef which we sell from our farm shop. I certainly feel that for dairy farmers, selling our own produce is the only way forward.”

Jack Martin’s family have been dairy farming at Tom Parker Creamery in the Meon Valley since 1921. “The dairy business is somewhat broken, with milk selling for less than water. So, to survive, farmers are forced to keep their cows inside and feed them on concentrated feed. Because we are determined to keep our cows free range and grass-fed as nature intended we couldn’t reduce our costs any further. So, we had to find a way to add value to our milk through diversification. After a lot of research, we spotted a gap in the market for a flavoured milk made with fresh (not UHT) milk produced by free range grass-fed cows combined with only natural ingredients. We launched our iced coffee and chocolate milk in the summer of 2017. Our products have been extremely well received locally and will soon be sold nationally via Milk & More. During 2019 we are launching a range of new flavours including Salted Caramel, Rose, Turmeric and Honey, Fudge Banana and Liquorice.”
www.tomparkercreamery.com
Lyburn Farm in the New Forest has been farmed by the Smales family for the past 50 years. Their pedigree herd produces about 1.3 million litres of milk each year half of which is used to make cheese as Mike Smales explains. “It is now twenty years ago that we decided to try and add value to our milk. The writing had been on the wall for some time, so starting in a very small way we decided to make cheese but not a cheddar. It was a question of making something, take it to Farmers’ Markets, see what the response was and then spend 10 years fine tuning the recipe to suit the market place, still a hard yellow cheese, but not a cheddar.
Briddlesford Farm on the Isle of Wight is looked after by three generations of the Griffin family who have owned the farm since 1923. “The only way to make money in dairy farming now is to add value to the milk and sell it directly to the customer. It can be hard to match production to demand as milk has a short shelf life. After careful consideration, about 18 months ago we started using our surplus milk to make cheese. It has been incredibly well-received by our customers and what’s more the cheese has won at the British Cheese Awards, World Cheese Awards, International Cheese Awards and Great Taste Awards.
From those very small beginnings, evolved Old Winchester, representing 50% of our output and Stoney Cross. Now today, we use half of our own cows’ milk and make about 70 tonnes a year. Job done!”
Before moving into cheesemaking we were seriously considering whether to get rid of the herd, it was no longer viable. Now, we are feeling positive about the future.”

Northney Farm on Hayling Island, has 120 Ayrshire cows and took the decision to diversify into ice cream in 2009 as Tim Pike explains.
Ways to support dairy farmers
“Northney Farm has been running as a family dairy farm for many years, but ongoing pressure from low milk prices meant we had to do things differently. After looking at all the options, we believed that moving into making ice cream had the best chance of success. Since launching our ice cream it has grown to supply businesses all over south-east Hampshire and beyond. We have also started processing our own milk, and we now supply lots of coffee shops and cafés.
• Check for the Red Tractor logo and Union Jack Flag when buying milk and other dairy products so you can be sure it has come from a British farm.
We get great feedback, and our customers know they’re not only getting a fabulous local product - they are supporting a local business that spends resources looking after the countryside and keeping the area looking good. We know that many people care about where their groceries come from, and we encourage everyone to think about their source of milk and to look for local products.”
• Be proud and think local when it comes to cheese! There is world class cheese being made on your doorstep!

42
• Research where you shop to be sure the retailer is paying the farmers a fair price.
• Investigate to see if your local farm sells milk direct to the customer.

CHARCUTERIE
Meat, Fish & Game
HOW
A group of Hampshire pig farmers had their fortunes changed back in 2010 when Hampshire Fare offered them the opportunity to train as charcuterie makers. Funded by The Prince’s Countryside Fund, local farmers received expert training over a three-year period. The aim was to allow the farmers to diversify and increase their profits at a time when pig farming had become increasingly challenging. Since the project, Hampshire Charcuterie has been in the media spotlight with an appearance on Jimmy and Jamie’s Friday Night Feast and features in national publications. Local chefs have embraced the new products with delicious dishes appearing on menus across the county and beyond.
CURE YOUR CONFUSION
Definition: [noun] cold cooked meats. Charcuterie came about as a way of preserving meat before the times of refrigeration. Nowadays it is made and enjoyed for the unique flavours created from the preservation process.
Coppa
Bresola
Guanciale
One of the few Italian salami made from beef. It is a lean meat that has been salted, air-dried and aged for at least a few months.

An unsmoked Italian cured meat product prepared from pork jowl or cheeks.
Lardo
Made using the fatback of a pig, which is then cured with herbs and spices, often rosemary.

Meat, Fish & Game
CAME TO
Charcuterie allows us to maximise the range of products we make from our meat. We’ve been able to continue to farm free range traditional and rare breed pigs at low intensity levels. The pigs are slow maturing which produces delicious tasting high quality meat and fat, perfect for artisan salami and air-dried meat.
Making charcuterie has enabled us to offer our customers a much more varied range of products on our stall at the Hampshire Farmers’ Market and enquiries to supply wholesale increase weekly. One of our most popular products is the Woodland Salami which incorporates the flavours of pork truffle and porcini mushrooms.
Sue and Phil Ambrose – Owners of Ambrose Sausages Winners of the Hampshire Charcuterie category in the Great Hampshire Sausage and Pie Competition, 2015, 2017 & 2018. Gold winners at the British Charcuterie Awards 2018.
A GUIDE TO WHAT’S WHAT Lonza
Air-dried cured pork loin is a lean cured meat, usually seasoned simply with black pepper or fennel.
Pancetta
Sopressata
This dry-cured meat is traditionally made from pork, which is coarsely pressed or ground into sausage. Each region then adds its own flavour and style.
Considered to be Italy’s version of bacon, pancetta is made from pork belly, then usually peppered, rolled, tied, then hung to cure.
Salami
Cured sausage consisting of fermented and air-dried meat, typically beef or pork.

Our Precious
Pollinators
Bees are the unsung heroes of our food chain. Every fruit and vegetable you eat, along with your morning coffee, tea and fruit juice are brought to you by the pollinating action of one of our little buzzy friends. Their hard work is vital to our natural world as without bees, and their fellow pollinators, we would also be without flowering plants or trees. They are also responsible for producing the honey, propolis and beeswax which feature in many of the things we buy.
Bees have five eyes and are completely blind to red.

Teamwork A honeybee colony works very much as a team. Thousands of females work together to make key decisions on where to forage, whether they should swarm and to monitor the performance of the queen bee. The female workers live for around six weeks, the first three are spent in the hive performing different tasks. During the second three weeks they become foragers collecting nectar, pollen, propolis and water usually within two miles of the hive. In the spring and summer the queen lays several hundred unfertilised eggs which hatch into larger stingless male (drone) bees who pass on the colony’s genes by mating with emerging queens from other colonies.
Honeybees do a waggle dance to communicate the location of nectar and pollen.
Worker bees fly up to 20-25mph when not laden with pollen or nectar and their wings beat 200 times a second.
The Sweet Gifts of Bees How to Help Save Our Bees Honeybees are native to the UK and are unique as they are the only insect that produces a human foodstuff in the form of honey. Before the 1600’s, honey was the only source of sweetness across Europe as sugar was unknown. Honey and honey comb from Hampshire bees are available from a selection of local producers, turn to pages 85-89. The beeswax and propolis produced by bees are also used to make beauty products, candles and other items for the home. Find out more on page 107.
The honeybee has six legs, the back pair have stiff hairs where pollen is stored.
Beekeepers can look after our honeybees but it is our other precious pollinators that are suffering. Around 13 species of native bees have disappeared from the UK since 1900 and another 35 are on the cusp of extinction. The good news is that there is plenty we can do to help the situation. Plant lots of native wildflowers and garden plants such as white clover, dandelions, wild marjoram, English lavender and jasmine. Visit www.rhs.org.uk for more inspiration. Avoid using pesticides in your garden and think about creating spaces for bees to inhabit as one of their struggles is finding a place to live. With thanks to Simon Cavill of Bee Good Skincare for his bee knowledge and expertise which inspired this feature.

Supporting Hampshire Producers Business South has been working with Hampshire Fare for 11 years to highlight and support local suppliers in the food, drink and hospitality industry. Our annual trade show offers the chance to showcase produce, network with potential buyers and make valuable connections for the region’s supply chain. Each year sees over 250 local and national hospitality buyers and chefs coming to the show which means more local produce is being showcased and eaten in our restaurants, bars, hotels and cruise ships! Business South’s aim is to support the South’s economic growth and this is one way in which, working with our supporters and Champions we can highlight some of the very best food and drink businesses, both small and large, in a way that delivers tangible results for the whole region. We are the voice of our community and that includes working with and supporting entrepreneurs, small and growing businesses and sole traders. Spring has got to be one of my favourite times of the year to cook and reinvent the menu, especially in May and June when British Asparagus, strawberries and spring lamb is ready to be showcased. Autumn has to be my favourite season. I love watching the vegetables growing throughout the summer, especially the roots and squashes. I really look forward to making chutney and pickle from stone fruits. There is also the game season, braising and mushrooms to savour! Olly Clifford Brown Chef Owner of Clifford Brown’s Brasserie

Autumn is an incredible time of year for produce. It’s also the season for hunkering down, nights by the fire and comfort food. There are some really interesting and unusual varieties of root vegetables to liven up a Sunday roast and add something a little bit special to warming stews and casseroles. A favourite autumn dish is a pan-fried pigeon breast, served with roasted mushroom, olive crumb, spinach and truffle – it’s just delicious! Gordon Stott Chef Owner of The Purefoy Arms 141
