Farming for a Future

It is no secret that dairy farmers have been struggling to make ends meet. For many years, enterprising farmers across Hampshire have been devising ways to save their family farms through diversification. The positive outcome of this battle for survival is the awardwinning products now available for us to savour. Dedicated farmers have become skilled cheese and ice cream makers fuelled by a determination to keep their businesses alive. Here are the stories of a handful of Hampshire’s farmers.

Celia Haynes and her family started milking 40 pedigree Jerseys at Meadow Cottage Farm in Headley in 1967. “Cream was the first product we introduced in 1968 on a small scale and promoted mainly by word of mouth. A year later we begun bottling raw milk which we continue to do today and sell from the farm. It brings a large amount of extra income with 80p clear profit per litre over the current dairy price. In 1984 we started producing our Meadow Cottage Ice Cream as we had to find a way to increase our income in order to survive. We wanted to utilise the milk we were sending off to the dairy and now manage to send off just 25% during summer months. The diversification has allowed us all to work and live together on the farm at Meadow Cottage. Our latest venture has been to produce beef which we sell from our farm shop. I certainly feel that for dairy farmers, selling our own produce is the only way forward.”

Jack Martin’s family have been dairy farming at Tom Parker Creamery in the Meon Valley since 1921. “The dairy business is somewhat broken, with milk selling for less than water. So, to survive, farmers are forced to keep their cows inside and feed them on concentrated feed. Because we are determined to keep our cows free range and grass-fed as nature intended we couldn’t reduce our costs any further. So, we had to find a way to add value to our milk through diversification. After a lot of research, we spotted a gap in the market for a flavoured milk made with fresh (not UHT) milk produced by free range grass-fed cows combined with only natural ingredients. We launched our iced coffee and chocolate milk in the summer of 2017. Our products have been extremely well received locally and will soon be sold nationally via Milk & More. During 2019 we are launching a range of new flavours including Salted Caramel, Rose, Turmeric and Honey, Fudge Banana and Liquorice.”

Lyburn Farm in the New Forest has been farmed by the Smales family for the past 50 years. Their pedigree herd produces about 1.3 million litres of milk each year half of which is used to make cheese as Mike Smales explains. “It is now twenty years ago that we decided to try and add value to our milk. The writing had been on the wall for some time, so starting in a very small way we decided to make cheese but not a cheddar. It was a question of making something, take it to Farmers’ Markets, see what the response was and then spend 10 years fine tuning the recipe to suit the market place, still a hard yellow cheese, but not a cheddar.

Briddlesford Farm on the Isle of Wight is looked after by three generations of the Griffin family who have owned the farm since 1923. “The only way to make money in dairy farming now is to add value to the milk and sell it directly to the customer. It can be hard to match production to demand as milk has a short shelf life. After careful consideration, about 18 months ago we started using our surplus milk to make cheese. It has been incredibly well-received by our customers and what’s more the cheese has won at the British Cheese Awards, World Cheese Awards, International Cheese Awards and Great Taste Awards.

From those very small beginnings, evolved Old Winchester, representing 50% of our output and Stoney Cross. Now today, we use half of our own cows’ milk and make about 70 tonnes a year. Job done!”

Before moving into cheesemaking we were seriously considering whether to get rid of the herd, it was no longer viable. Now, we are feeling positive about the future.”

“Northney Farm has been running as a family dairy farm for many years, but ongoing pressure from low milk prices meant we had to do things differently. After looking at all the options, we believed that moving into making ice cream had the best chance of success. A group of Hampshire pig farmers had their fortunes changed back in 2010 when Hampshire Fare offered them the opportunity to train as charcuterie makers. Funded by The Prince’s Countryside Fund, local farmers received expert training over a three-year period. The aim was to allow the farmers to diversify and increase their profits at a time when pig farming had become increasingly challenging. Since the project, Hampshire Charcuterie has been in the media spotlight with an appearance on Jimmy and Jamie’s Friday Night Feast and features in national publications. Local chefs have embraced the new products with delicious dishes appearing on menus across the county and beyond.

Bees are the unsung heroes of our food chain. Every fruit and vegetable you eat, along with your morning coffee, tea and fruit juice are brought to you by the pollinating action of one of our little buzzy friends. Their hard work is vital to our natural world as without bees, and their fellow pollinators, we would also be without flowering plants or trees. They are also responsible for producing the honey, propolis and beeswax which feature in many of the things we buy.

Bees have five eyes and are completely blind to red.

Teamwork A honeybee colony works very much as a team. Thousands of females work together to make key decisions on where to forage, whether they should swarm and to monitor the performance of the queen bee. The female workers live for around six weeks, the first three are spent in the hive performing different tasks. During the second three weeks they become foragers collecting nectar, pollen, propolis and water usually within two miles of the hive. In the spring and summer the queen lays several hundred unfertilised eggs which hatch into larger stingless male (drone) bees who pass on the colony’s genes by mating with emerging queens from other colonies.


Honeybees do a waggle dance to communicate the location of nectar and pollen.

Worker bees fly up to 20-25mph when not laden with pollen or nectar and their wings beat 200 times a second.

The Sweet Gifts of Bees How to Help Save Our Bees Honeybees are native to the UK and are unique as they are the only insect that produces a human foodstuff in the form of honey. Before the 1600’s, honey was the only source of sweetness across Europe as sugar was unknown. Honey and honey comb from Hampshire bees are available from a selection of local producers, turn to pages 85-89. The beeswax and propolis produced by bees are also used to make beauty products, candles and other items for the home. Find out more on page 107.

Beekeepers can look after our honeybees but it is our other precious pollinators that are suffering. Around 13 species of native bees have disappeared from the UK since 1900 and another 35 are on the cusp of extinction. The good news is that there is plenty we can do to help the situation. Plant lots of native wildflowers and garden plants such as white clover, dandelions, wild marjoram, English lavender and jasmine. Visit www.rhs.org.uk for more inspiration. Avoid using pesticides in your garden and think about creating spaces for bees to inhabit as one of their struggles is finding a place to live. Autumn is an incredible time of year for produce. It’s also the season for hunkering down, nights by the fire and comfort food. There are some really interesting and unusual varieties of root vegetables to liven up a Sunday roast and add something a little bit special to warming stews and casseroles.
