Sous Chef The Hawth Theatre Crawley BACKGROUND, COMPANY INFORMATION AND JOB DESCRIPTION Background & Job Function Parkwood Theatres is a division of leisure support services company Parkwood Community Leisure, which is part of Parkwood Holdings plc. The Company operates in excess of 80 facilities nationwide employing over 6,000 employees. Our aim is to deliver high quality services to our customers; the Company also prides itself on its exemplary health and safety record and a commitment to our staff. The Hawth, Crawley opened in May 1989 and is managed by Parkwood Theatres on behalf of Crawley Borough Council under the terms of a 10 year management agreement, which commenced in February 2012. The continuing presentation of a catering service at The Hawth to a very high standard is a priority for both the Company, customers and our Client. The Venue comprises of an 850 seat proscenium arch Main Theatre and a 146 seat Studio Theatre. Both spaces, as well as the grounds surrounding the Venue, are capable of being used in a multitude of formats and layouts which is reflected in The Hawth’s extensive range of programmed arts events and activities. Catering is available seven days a week between the hours of 10am-8pm and the Sous Chef will work a reasonable share of shifts between these hours. Occasionally due to the nature of events, performances, conferences and festivals food service times will vary and shift patterns will be amended to meet the needs of the business as required. It is a requirement of the role that the Sous Chef remains flexible and adaptable, as no two days are the same. Cafe Vita is our brand of in house dinning and serves a range of popular world cuisine dishes to match our customer profile for any given event at The Hawth. Like our venue, our menu and service style varies to meet the requirements of our customers. The Sous Chef will assist the Head Chef in planning, costing and producing quality food that delight our customers every time. The ideal candidate will have experience in a similar role in a Pub, Hotel, or Restaurant. Training will be provided as our operating environment is very unique, and at times fast paced. JOB DESCRIPTION Primary Objectives for the Position will be:
To assist the head chef with the control and management of all kitchen operations at The Hawth
The Sous Chef will focus day to day on the following tasks:
To prepare and cook food to a consistently high standard
To assist the Head Chef with supervising the work of all kitchen staff
To assist the Head Chef with monitoring performance and output of kitchen staff as required
To ensure levels of stock are maintained at the appropriate level to ensure the efficient operation of all kitchen activities
At all times to ensure the utmost levels of cleanliness throughout the kitchen and associated areas of The Hawth in compliance with current and future Food Safety and Hygiene legislation to include HACCP, and the monitoring of a subtle cleaning rota for the operation
To conduct your duties in a manner deemed appropriate and safe at all times.
To liaise with other managers within the Venue to ensure any issues associated with the kitchen and ancillary areas are overcome as a priority
To report any maintenance issues that affect the kitchen operation
To deputise for the Head Chef when requested by the Head Chef or a member of the senior management team
To assist with menu planning, costing, and bespoke event planning to the required standard
To assist with the monitoring of food GP’s and other appropriate Key Performance Indictors as direct by the Head Chef
To accept any other related kitchen duty as instructed by the Head Chef or Front of House Manager
To comply with company policy and procedure at all times
To undertake any other duties as may be required by the Front of House Manager or General Manager to ensure that the business objectives of the contract are achieved
CONDITIONS OF EMPLOYMENT

LOCATION The Hawth Crawley REMUNERATION ÂŁ18,500-19,500 (on experience) HOURS OF WORK 40 hours per week (or 160 hours per month) on a rota basis to include regular evening and weekend working.
HOLIDAYS 28 days Annual Holiday (includes Statutory Holidays)
NOTICE PERIOD 1 month

Qualifications
A good standard of general education Food Hygiene certificate NVQ level 2 Professional Cooking (or equivalent) Experience •
Previous experience in a similar role
