Give Your Daily Fibre Intake a Boost Closing the fibre gap

Dietary fibre has many health benefits, including promoting digestive health, keeping our blood sugar levels healthy, helping with healthy weight and possibly even improving bone health. To benefit from fibre health benefits, it is recommended that women should consume at least 25 gram and men 38 g fibre each day. Current intakes in South Africa are as low as 17g/day in women and 20g/day in men. Meeting daily fibre intake recommendations with foods that intrinsically contain fibre can be a challenge. For example, to get 25 grams of fibre, you would need to eat 21 slices of wheat bread, 1.5 kg of brown rice or almost 1 kg of broccoli. OR, you can start adding fibre to the foods and beverages you’re already consuming. How to use PROMITOR® Soluble Fibre is the ideal ingredient for fibre enrichment because it imparts little to no colour or off flavour and can easily be incorporated into food and drinks you are already consuming. Simply add one teaspoon twice a day to your favourite foods and drinks to give your daily fibre intake a boost. One teaspoon contains approximately 3 g of fibre and one tablespoon contains approximately 7 g of fibre.

Fibre-enriched fluffy pancakes Serves 2

Ingredients

Method

150 g plain flour 2 ½ tbsp PROMITOR® Soluble Fibre 1 tsp baking powder ¼ tsp salt 1 egg 200 ml milk 100 ml Greek yoghurt 50g butter, melted Berries, fruit, jam, yoghurt, maple syrup

1. Mix flour, PROMITOR® Soluble Fibre, baking powder and salt. 2. Stir in milk, egg, yoghurt and half of melted butter. 3. Melt the rest of butter in the frying pan. 4. Fry thin pancakes. 5. Serve with yoghurt, jam, berries, fruit or maple syrup.


Fibre-enriched breakfast shakshuka Serves 2

Ingredients

Method

1 tbsp olive oil 1 large onion, thinly sliced 1 red pepper, cut into long slices 1 green pepper, cut into long slices 2 garlic cloves, finely chopped 1 tsp PROMITOR® Soluble Fibre ¼ tsp cumin seeds ¼ tsp caraway seeds ¼ tsp cayenne pepper ½ tbsp tomato or red pepper puree 400 grams canned tomatoes ½ small bunch fresh coriander, roughly chopped ½ small bunch fresh parsley, roughly chopped 4 free-range eggs 40 g or 1 oz crumbled feta Salt and freshly ground pepper

1. Heat the olive oil in a large, lidded frying pan. Add the onions and peppers and season with salt and pepper. Cook on a medium heat until just softened. Add the garlic and cook for 2 minutes. Sprinkle in the cumin, caraway seeds and cayenne pepper. Add sliced red and green peppers. Stir in the tomato or red pepper purée and cook for a couple more minutes until the paste starts to separate. Add the canned tomatoes with a splash of water and PROMITOR® Soluble Fibre. 2. Simmer for 10 minutes, uncovered, until reduced a little. When the sauce is reduced, stir in the parsley and coriander. 3. Make 4 small wells in the sauce. Break an egg into a cup and drop carefully into a well, repeat with the remaining eggs. Cook for a few more minutes until the whites are just set and the yolks are still runny. Sprinkle the crumbled feta over the dish.


Tangy raspberry smoothie Serves 2

Ingredients A handful of fresh or frozen raspberries 2 mint leaves 150 ml orange juice 200 ml plain yoghurt 2 tsp honey 1 tbsp PROMITORÂŽ Soluble Fibre Ice cubes

Method Combine all ingredients in a blender and blitz until mixed.


Carrot and coriander soup Serves 4

Ingredients

1 tbsp vegetable oil 1 onion, chopped 1 tsp ground coriander 1 potato, chopped 450g carrots, peeled and chopped 1.2 L vegetable or chicken stock 2 tbsp PROMITORÂŽ Soluble Fibre handful coriander

1. Heat 1 tbsp vegetable oil in a large pan, add 1 chopped onion, then fry for 5 mins until softened. 2. Stir in 1 tsp ground coriander and 1 chopped potato, then cook for 1 min. 3. Add the 450g peeled and chopped carrots and 1.2 L vegetable or chicken stock, bring to the boil, then reduce the heat. 4. Cover and cook for 20 mins until the carrots are tender. 5. Stir in 2 tbsp of PROMITORÂŽ Soluble Fibre. 6. Tip into a food processor with a handful of coriander then blitz until smooth. Return to pan, taste, add salt if necessary, then reheat to serve.


Reduced sugar crème caramel (crème renversée) Serves 3

200 ml skimmed milk (0.1% fat) 1 egg 3 tbsp. PROMITOR® Soluble Fibre 30 ml water (for the baking tray) 4 tsp sugar ½ tsp vanilla essence

1. Preheat oven to 125° C. 2. Whisk the egg and gently add the PROMITOR® Soluble Fibre and sugar and continue to whisk to obtain a fully homogenous mix. Avoid lumps by gently adding the powders while mixing. 3. On the stove, add vanilla essence to the skimmed milk and bring the milk to a boil. 4. Add the boiling milk to the egg/sugar mix and stir gently. 5. Pour mixture into individual heat-resistant containers and place them on a baking tray half-filled with water. Place into pre-heated oven and cook for 45 minutes. Cook until dessert is no longer liquid. 6. Take the containers out of the water bath, cool down to room temperature, place a lid on the containers and store the dessert in the refrigerator to fully cool. 7. Best served cool.


Sugar reduced and fibre enriched apple crumble Serves 4

For the crumble topping: 200 g plain flour 100 g unsalted butter 50 g caster sugar 25 g brown sugar 2 ½ tbsp. PROMITOR® Soluble Fibre For the apple filling: 550 g fresh cooking apples 39 g caster sugar 2 tbsp. PROMITOR® Soluble Fibre ½ tsp Ground cinnamon

To make the crumble topping: Cut the butter into cubes. Pre-blend the dry ingredients in a mixing bowl. Rub the butter into the dry ingredients with your fingers, to form crumbs

Peel, core and dice the apples and place into a mixing bowl. Pre-blend the dry ingredients and mix with the apples. Transfer the apple mixture to a large ovenproof dish. Top with the crumble and lightly press down with a fork. Bake in a pre-heated oven at 190C for 35-40 minutes, until crumble is golden and apples are soft


Sourdough bread enriched with fibre Ingredients For the starter: 700 g strong white flour For the loaf: 400 g strong white flour, plus extra for dusting 6 tbsp PROMITOR® Soluble Fibre 1 tsp salt 1 tbsp clear honey 300 g sourdough starter Flavourless oil, for greasing

Method 1. First, make your starter. In a large bowl, mix together 100g of the flour with 125ml slightly warm water. Whisk together until smooth and lump-free. 2. Transfer the starter to a large jar (a 1-litre Kilner jar is good) or a plastic container. Leave the jar or container lid ajar for 1 hr or so in a warm place (around 25°C is ideal), then seal and set aside for 24 hrs. 3. For the next 6 days, you will need to ‘feed’ the starter. Each day, tip away half of the original starter, add an extra 100g of flour and 125ml slightly warm water, and stir well. Try to do this at the same time every day. 4. After 3-4 days you should start to see bubbles appearing on the surface, and it will smell yeasty and a little acidic. This is a good indicator that the starter is working. 5. On day 7, the starter should be quite bubbly and smell much sweeter. It is now ready to be used in baking. 6. Tip the flour, PROMITOR® Soluble Fibre, 225ml warm water, the salt, honey and the starter into a bowl, or a mixer fitted with a dough hook. Stir with a wooden spoon, or on a slow setting in the machine, until combined – add extra flour if it’s too sticky or a little extra warm water if it’s too dry. 7. Tip onto a lightly floured surface and knead for 10 mins until soft and elastic – you should be able to stretch it without it tearing. If you‘re using a mixer, turn up the speed a little and mix for 5 mins. 8. Place the dough in a large, well-oiled bowl and cover with oiled cling film. Leave in a warm place to rise for 3 hrs. You may not see much movement, but don’t be disheartened, as sourdough takes much longer to rise than a conventional yeasted bread. 9. Line a medium-sized bowl with a clean tea towel and flour it really well or, if you have a proving basket, you can use this (see tips below). 10. Tip the dough back onto your work surface and knead briefly to knock out any air bubbles. Shape the dough into a smooth ball and dust it with flour. 11. Place the dough, seam-side up, in the bowl or proving basket, cover loosely with a sheet of oiled cling film and leave at room temperature until roughly doubled in size. The time it takes for your bread to rise will vary depending on the strength of your starter and the temperature in the room, anywhere from 4-8 hrs. The best indicators are your eyes, so don’t worry too much about timings here. You can also prove your bread overnight in the refrigerator. Remove it in the morning and let it continue rising for another hour or 2 at room temperature. The slower the rise, the deeper the flavour you will achieve. 12. Place a large baking tray in the oven, and heat to 230°C/210°C fan/gas 8. Fill a small roasting tin with a little water and place this in the bottom of the oven to create steam. Remove the baking tray from the oven, sprinkle with flour, then carefully tip the risen dough onto the tray. 13. Slash the top a few times with a sharp knife, if you like, then bake for 35-40 mins until golden brown. After baking, your loaf will sound hollow when tapped on.
