150 G “00” FLOUR
150 G DURUM WHEAT FLOUR
3 ORGANIC EGGS PLENTY OF SALT
Measure the flours onto the table or into a bowl Create a well in the middle of the flour with your fingers or a spoon Add the eggs in the middle and begin to gradually mix some of the surrounding flour with the eggs, adding more and more until the dough is well mixed If the pasta dough seems too dry, add a tiny bit of water If the dough seems too sticky, sprinkle some flour on the surface Knead the dough for about 10 minutes until smooth Wrap the dough in plastic wrap, and let the pasta dough rest at room temp
Split the rested dough into four equal-sized pieces, and begin to work, one piece at a time, on the widest setting on the pasta maker Repeat this a few times, so you get the proper elasticity
Continue to feed the dough through the roller, gradually changing the setting and reducing the thickness, until you reach the desired thickness
You can either cut the pasta sheets into thick strips, or alternatively feed the sheets into the attachments, which effortlessly cuts up spaghetti, linguines, or ravioli!
Place the cut up pasta lightly on a kitchen towel or onto a pasta drying rack whilst working the other pieces
Boil the pasta for 2-4 minutes, add plenty of salt in the pasta water Drain once ready
BUNCH OF BASIL
2 GARLIC CLOVES
Peel the garlic cloves and crush in a mortar with olive oil until milklike Add the pine nuts slowly whilst crushing until thick Similarly, add in the basil leaves whilst crushing Add the olive oil until the pesto is a vivid green and runny Mix in the grated parmesan cheese
Enjoy with some freshly made pasta
The basil leaves must be worked until small The more pine nuts you add the softer and milder the pesto will taste In contrary, the more garlic you add the stronger the taste will be Taste whilst making!
You can also use pesto like this:
Boil some potatoes, remove the skin and cut in well sized pieces Add in the pesto and thin slices of red onion if you wish
USED IN THE RECIPE:
1 TBSP PINE NUTS 1 TBSP PARMESAN CHEESE (all amounts are around as mentioned, add to taste) 46-1000/VP MARCATO ATLAS PASTA MAKER 150 MM PINK SU 4 | EAN: 8000011002446N°1
