When the temperatures dip, the Dutch start dreaming of another frozen winter and the prospect of ice skating outdoors. Weather forecasts are watched eagerly and skates sharpened just in case! But even if the canals don’t freeze this year, there are plenty of spots in Amsterdam to practice your jumps and twirls. Ice skating locations in Amsterdam Skating over Amsterdam’s frozen canals is a magical winter experience – made even more special by the fact that it’s not possible every year. The temperature generally needs to drop to -4°C or below for 4 consecutive nights to produce ice thick enough to skate on. If the conditions look right, boat traffic is blocked from certain canals to allow the water to freeze. Fingers crossed that the same happens this year! AMSTERDAM BY NIGHT When the sun goes down in Amsterdam that is when the city is at its best. It is without a doubt the most beautiful city in the world. The streets may quiet down, but they are never silent. There is always something going on from the canals to the squares teeming with bars and clubs. The entire landscape of the city – with its bridges, industrial areas and empty streets – is at its most beautiful in the darkest hour of the night. Shadows and artificial lights from houses give a poetic ambiance. Amsterdam’s streets and squares are very busy at night. At the back of the Dam square is the area known as the Red Light District, which is always invaded by large groups of tourists walking through the streets and looking at the windows with the girls. Nearby, small restaurants and cafes are full of people. Around Leidseplein you will find lots of cafes, restaurants, theatres and clubs. Another busy nightlife area is Rembrandtplein. The square is surrounded by the cafes and clubs, which are always full of guests. An important small street traditionally attracting the theatre crowd is Nes (parallel to Rokin). In the nearby cafes you find an intellectual crowd. Areas like the Jordaan and De Pijp are mostly frequented by young people. In its cafes and bars it is easy to meet people and make new friends.

Since the summer of 2013 the quintessential long drink G&T has dominated Amsterdam’s drink menus. It’s something drink enthusiasts couldn’t be happier about. Bars and restaurants are treating these drinks with the care they deserve. A variety of premium quality gins and tonic waters are used, as well as fresh fruits and herbs for garnishes. Finding the best combinations of gin, tonic water and garnish is key. Sounds easy? It’s not at all. The best G&T combinations are well thought-out and actually make sense. HELLO AMSTERDAM DUTCH COURAGE The history of gin takes us back to the history of genever. During the Eighty Years’ War, in 1652, the English troops fought the Dutch out at sea. The Dutch soldiers took a shot of genever before going into battle. The English nicknamed this ritual ‘Dutch courage’, and brought this tradition home to Britain. The Dutch king, Willem of Orange III, strongly promoted and subsidized the consumption and production of local spirits. Logically, the British wanted to start distilling a spirit like genever, but they couldn’t master distilling malt wine, which is the basis of genever. Therefore they left malt wine out of their distillate, which now was a neutral grain spirit with herbs, of which the dominant herb was juniper. This spirit was called gin. Juniper berries, by law, have to be the dominant flavour in gin. Other botanicals like angelica, liquorice, cinnamon, lemon peels, coriander, iris and cloves are often used in the traditional London Dry gins.
FEVER-TREE AND THE REVOLUTION OF TONIC WATERS When they were developing the first ever premium Indian tonic water, Tim Warollow and Charles Rolls didn’t have to think long to come up with its name. Fever-Tree Indian Tonic Water launched in the UK in early 2005 and started a revolution. The finest quality quinine was sourced from the Rwanda Congo border and it was blended with spring water and eight natural botanicals. FeverTree’s smooth fizziness is remarkable; it resembles the delicate bubbles in champagne. The Fever-Tree range consists of four different natural tonic waters and a total of ten natural sodas. Among other premium quality tonic brands on the market are 1724 tonic (from the Inca trail in the Andes mountains), the British Fentimans Botanical Tonic Water, Thomas Henry Tonic Water (born in the German bartender scene), INDI tonic from Spain, and San Pellegrino Aqua Tonica from Italy.

Creative mastermind behind Supperclub, Envy, Mazzo, Nomads, Mercat, Nevy and more cool venues. Ever since he bought his first restaurant in 1999, former textiles-tycoon Bert van der Leden has been on the rise. It all started with the infamous Supperclub. The bastion of Amsterdam’s artistic nightlife had gone bankrupt, just at a time when Bert van der Leden was looking around for a fun new project to start. He bought it without ever having stepped foot inside. And he made a success out of it. Although he is not a big party animal himself, Bert seems to have a good sense of what works. After the Supperclub he went on a spree, opening new bars and restaurants all over the city, always with a strong concept, always in collaboration with the creative crème de la crème of the Netherlands. In a relatively short time, his entrepreneurial gut feelings have given Amsterdam’s nightlife and dining scene an important boost. People who know him say Van der Leden is both a sweet and striking man at the same time. He can be hard on the outside, but he is soft on the inside. And he’s a doubter. He likes to work with a f ixed group of people, pushing ideas back and forth, discussing opportunities and how to pick up on trends. Creative architects, designers, chefs and nightlife butterf lies all inspire him. It’s an unusual mix of people, and that’s probably the basis of their success. And Van der Leden’s role? He is the glue. Maybe that’s his greatest strength, say those involved. People like him and he keeps the team together. Asked about what kind of place is still missing in Amsterdam, he answers that he’s missing a nightclub without loud music, a place where you can simply drink f ine wines and cocktails, chat and enjoy good company. We may be able to step inside such a place before long, because Bert’s mind is never idle. At the moment he and his team are cooking up a number of new concepts. Van der Leden’s latest showpiece is the restaurant Le Coq in the ‘bruggebouw’. It’s a pop-up restaurant, f loating above the lock near Amsterdam Central Station and Westerdok. It is an amazing location, built on a twisty railway bridge dating from 1922. It has windows all around, which offer a panoramic view of the city. In warm weather all the windows can open up. Le Coq will be open until the end of 2015 to serve great food and cocktails.

A few years ago Marie-Jeanne van Hövell tot Westerflier surprised lovers of timeless photography art with her Amsterdam in Winter. Syriana, a restaurant with a Syrian-Lebanese kitchen, a cuisine that is relatively unknown to restaurant visitors and continues to amaze people. The tastes are a class apart, you could say we are dealing with a new culinary taste maker. People like the kitchen because it has many appetizer courses, called ‘mazas’ - very similar to the Spanish tapas. In the restaurant you can also enjoy the unique Arab high-tea with lots of Syrian and Lebanese sweets & treats. In the very heart of the city on the historical street Nes, Mappa is situated in a former coffee house opened in 1810 by the Frascati brothers who became famous for their very popular Frascati Café (from 1940 on). Later, the building was used as a theater with Frascati Café as a part of it. Since 2001, however, restaurant Mappa is the happy occupant. What happens if a computer analyses pictures of the full oeuvre of a painter, determines the average color for every pixel and recreates a new ‘average’ painting? See the result at restaurant Vermeer at the NH Barbizon Palace Hotel. Artist Jeroen van der Most used a computer to calculate the average Vermeer painting. He then turned the result into a new artpiece using traditional paints and lacquers, something never done before. The artwork gives a new view of the essence of the work of the Old Dutch Master. A series of calculated paintings realised with math and statistics form a unique exhibition at the Amsterdam restaurant - opening November 29th. Chef Chris Naylor - who has been the Chef in the Michelin star awarded Restaurant Vermeer since 2005 - serves an exquisite diner especially tailored to the exhibition.

The fun in Amsterdam doesn’t stop when the sun goes down, and the crowded bars and clubs are testimony to this fact. If you’re out in the evening and think bars look deserted, it’s only because Amsterdam’s nightlife starts rather late and you’re probably out too early. With most clubs not opening their doors before 11.30pm and the party not taking off until 1am, many bars and lounges are full of pre-drinkers waiting to embark on a night out. Most bars in Amsterdam are small and rather crowded, so it’s often difficult to find a comfortable spot. However, the cramped nature of these venues is a result of the fact that they’re housed in many historic buildings, which are charming in their own right and offer an alternative nightlife experience. The city’s nightlife is concentrated around two main squares: the Rembrandtplein and Leidseplein, so you always have plenty of options. As a result, a night out in Amsterdam can be a very cultural experience - even if you can’t remember it the next morning.
