VEGAN THRIFT MARKET 31 OCTOBER

the chef’s choice TERIYAKI CHICKEN

1 teaspoon cooking oil 2 teaspoons grated ginger

30 ml tablespoons sake 60 ml tablespoons soy sauce 30 ml tablespoons mirin A splash of sesame oil 750 g deboned, skinless chicken thighs 30 ml tablespoons soft light brown sugar 300 - 450 g rice (cooked according to packet instructions) METHOD In a deep mixing bowl, combine the sake, mirin, soy sauce, sugar, ginger and sesame oil. Add the prepared chicken and allow to marinate for 15 minutes. Heat the oil in a pan. Remove the chicken pieces from the marinade, reserving it for later and sauté until cooked on the outside. Pour the reserved marinade over the chicken in the pan and bring to a bubble, then turn down the heat to a gentle simmer and cook for about 5 minutes - cut into a piece of chicken to make sure it’s cooked through. Remove the chicken from the pan (keep warm in a bowl covered in foil) and turn the heat up to let the liquid boil down to a thick, dark syrup. Return the chicken pieces to the pan, stir well so that they are all coated in the sticky, savoury syrup. Serve on a bed of fluffy steamed white rice. SUMMER SALMON GRAVADLAX 1 kg rock salt 1 side of salmon 850 g white sugar 15 cloves, crushed 2-4 handfuls of fresh dill Juice and zest of 2 lemons 20 g coriander seeds, crushed 200 g mixed peppercorns, crushed METHOD Mix all the ingredients together and cover the salmon side - making sure it is covered entirely. Cover and refrigerate for 24 hours. Remove the salmon from the cure and rinse off under cold running water and pat dry with kitchen towels. Slice and serve plain or with a squeeze of fresh lemon juice. 8

EASY PAN FRIED BEEF FILLET Beef fillet, cut into 4 steaks (allow 100 grams – 125 grams per head) Butter Olive oil 2 whole cloves of garlic 2 sprigs of fresh rosemary Salt and freshly cracked pepper METHOD Heat a frying pan to a moderate heat with a splash of oil, adding the garlic cloves and the rosemary. Season the steaks with salt and pepper and cook for 1½-2½ mins on each side, ensuring that it’s cooked around the rounded edges too, turning to seal them. Add a knob of butter, allow it to foam and spoon the butter over the steaks to baste. Remove from the heat and allow to rest on a plate, covered with foil before serving. Serve with sides of your choice.

LAMB CHOPS 8 lamb chops 1/2 cup olive oil 1/2 cup red wine 4 large garlic cloves Salt and freshly ground black pepper 1/2 cup freshly squeezed lemon juice 3 tablespoons chopped fresh rosemary leaves METHOD Place the garlic, rosemary, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper in a food processor pulse until the herbs are finely minced. Add lemon juice, olive oil, red wine and combine. Place chops in a bowl and pour the marinade over the chops, turning to coat both sides. Seal and refrigerate for at least 2 hours but preferably overnight. Remove the lamb from the marinade, season with salt and pepper, and grill or pan fry on a medium-high heat for 4-5 minutes on each side. Set aside on a plate, cover with foil and allow it to rest for 10 minutes. Serve hot.

LEMON BERRY TART Tart base 8 eggs 350g cake flour 50g icing sugar 50g ground almonds 150g cold butter until crumbly 25 g finely grated lemon zest 100 ml freshly squeezed lemon juice 100 g castor sugar 200 ml cream METHOD Preheat the oven to 200ºC. Blend flour, icing sugar, ground almonds and butter until crumbly. Add 2 whole eggs and process until combined. Knead dough until it forms a small soft ball. Wrap in cling wrap and refrigerate for 45 minutes. Roll pastry between sheets of baking paper until large enough to line a shallow (3cm deep) Loose based flan tin or springform pan. Lift pastry into tin, press into sides and trim the edges. Cover and refrigerate for an additional 30 minutes. Place tin on an oven tray and blind bake (place a sheet of baking paper over the top, cover with dried beans or reusable baking beans) for 15 minutes. Remove and turn the oven down to 160ºC. Remove paper and beans; bake for another 15 minutes or until lightly browned and remove from the oven. EASY CHARCUTERIE BOARD 200 g salami 200 g parma ham 200 g chorizo, sliced into coins 100 g blue cheese 100 g camembert 100 g mature cheddar 3 cups fruit of your choice such as berries, cherries, grapes, melon 2 cups of pickles such as peppadews or pickled onions Preserves of your choice 1 baguette sliced Breadsticks/crackers of your choice INSTRUCTIONS Place the ingredients onto a large serving board or platter. Pile each ingredient together to create a more visually appealing end result. Place fruit in between for colour and texture. 10

Since its inception, the theatre has stayed true to its promise of always being open to everyone who visits it and to create work of the highest artistic quality.

The objective is to reflect the cultures of all the people of South Africa on its stages and in its foyers and galleries and, thereby, nurturing an interactive and meaningful relationship with its audiences and patrons, while generating a spirit of goodwill and creativity. It is a cultural icon and one of the most accessible and inclusive theatres in the country, garnering local and international awards, accolades and recognition for its inherent and proudly South African productions which speak to the heart of the country’s social landscape with universal themes. The theatre complex boasts five theatres, two rehearsal spaces, a bar and a restaurant. Well over 500 000 patrons attend over 2 700 performances annually, making it one of the busiest theatres in Southern Africa. The Baxter remains resilient through the devastating impact of COVID-19 on theatre and the arts. Soon after the lockdown and national state 12

of disaster were first announced in South Africa, in March 2020, the theatre embarked on an innovative financial sustainability campaign, called Baxter Coffee Angels. The ask was simply for patrons, theatre and arts lovers to donate as little as R30 a month (the price of a cup of coffee), or more (where possible), to ensure the iconic theatre’s financial sustainability during this time and into the future. architect Jack Barnett, it came into being as the result of a bequest from the late Dr William Duncan Baxter. In his will he bequeathed R553 866 to the University of Cape Town, for the purpose of establishing a theatre, which would - in his words - develop and cultivate the arts in Cape Town and the adjacent districts for all artists”. This bequest was split between building the premises and establishing a permanent endowment fund for The Baxter’s activities.

The Baxter Theatre Centre’s very existence is based, and was founded on, resistance, resilience and pushing boundaries. It is the only remaining, operational theatre in the Western Cape - and one of about two, possibly more, in South Africa who’s doors have always been open to all who visited it.

Dr Barnett wanted to design a theatre that embodied the South African spirit and culture, at a time when South Africa was much divided. A theatre like The Baxter could not just cater for ‘whites only’, it had to embrace all the people of Cape Town, made difficult due to the laws that were enforced. The entertainment Act of 1931 introduced legal censorship and the Publication and Entertainment Act of 1963, segregated black and white audiences unless under special licenses. To build The Baxter in the city centre meant that black people could not access it and that is why the University of Cape Town in Rondebosch, became a strategic location and venue for a theatre for all.

The iconic, multi-award-winning theatre continues that legacy today, through its programming and its commitment to creating and producing new South African work. Social justice content, tackled headon, has earned the theatre much respect, garnering several accolades, locally and internationally. Through his vision, leadership and passion, William Duncan Baxter, along with some like-minded friends, the Baxter Theatre Centre opened to all, on 1 August 1977. Designed by the award-winning

Dr Baxter’s will stipulated, “For all the people of Cape Town … utilise this bequest for the purpose of developing and cultivating the arts.

This could, I am satisfied, best be done by establishing a theatre in Cape Town in which plays, operas, ballets, concerts and other forms of entertainment can be given.” This is fundamental to, and is lived daily, through The Baxter’s ethos, vision, mission and operations. In 2017, to celebrate its 40th birthday, The Baxter achieved the rare distinction of taking six awardwinning productions to the Edinburgh Fridge Festival, led by CEO, artistic director and producer, Lara Foot. Many of the productions staged over the years and those produced in recent years are further testament to its history of pushing boundaries and resistance. Some of these productions include The Island, Sizwe Banzi is Dead, Woza Albert and Miss Julie. In 1985 Miss Julie caused uproar with the nationalist apartheid government as it was the first kiss on stage between a black man (played by John Kani) and a white woman (played by Sandra Prinsloo) in South Africa. In more recent years, productions such as the The Fall, Tshepang and many of the offerings at The Baxter’s hugely successful annual Zabalaza Theatre Festival.

The Baxter does not receive any funding from the national government nor from the National Lotteries Commission. UCT covers approximately one-third of its annual operational expenses and the theatre has to raise the remainder themselves. The rest of its expenses are paid from annual income, which includes ticket sales, donations, theatre rentals and interest on the Permanent Endowment Fund. Despite its funding challenges, The Baxter continues to thrive, win awards for its productions, create meaningful, cutting-edge work new South African work and remains resilient in the face of adversity, so that the arts and artists can flourish. When the Covid-19 pandemic forced South Africa into lockdown at the end of March 2020, the Cape Town Philharmonic Orchestra – Africa’s oldest and most active multifunctional symphony orchestra – went into survival mode and suspended all its packed public concerts for the year. Nearly two years down the line, the Pandemic’s impact has had severe financial repucussions for the future of the CPO and the orchestra has yet to return to live audiences. The Cape Town Philharmonic Orchestra has developed in shape and size several times since its inception in 1914. Previous Boards and the City Council initially had to adapt to make the organisation viable and dynamic enough to weather the storms of two World Wars, a depression, the turmoil of Apartheid and the changed expectations of a young democracy.

orchestra. It plays a pivotal role in the cultural transformation of local communities. The CPO has identified music as an important game changer and changed its image from an elitist cultural organisation, performing symphony concerts, opera and ballet to a diverse, fully-fledged training and transformation facilitator in education and performance. The impact of the orchestra’s youth projects is unequalled in South Africa. The continuous year-round training projects offer healthy extramural alternatives to young people. The CPO’s impact on the community cannot be underestimated. More than a third of its operational funds goes to training, the transfer of skills and transformation through education. If Cape Town’s permanent, professional orchestra is forced to close down, it will be very difficult to resurrect. Unlike large cities in the western world, there is not enough parttime work for musicians to make a decent living. Gathering a different group of musicians for each concert will drastically affect standards. Eventually, professional musicians (as well

As violence and crime rises in communities, a golden opportunity for cohesion through cultural activities will be lost. Music is not simply entertainment – it is a priceless investment in the future and well-being of a community.

The Cape Town Philharmonic believes in the fusion of many genres and helps to broaden the South African cultural heritage by serving all the musicians of the land: classical, jazz, pop, Indian classical, indigenous and experimental fusion music. family connect Netcare launches Family Connect Line to keep COVID-19 patients and their loved ones connected Dedicated personnel deployed to enhance communication between patients and families In mid-January 2021 Netcare launched a dedicated support line to keep next-of-kin informed on the status of their loved ones who have been hospitalised with COVID-19 and, where possible, to facilitate direct communication between patients and their families. This is in line with the healthcare group’s focus on placing each patient in hospital and their loved ones at the centre of the care provided to them. “The significant surge in people with COVID-19 infections requiring hospitalisation has forced us to focus our attention primarily on optimising our clinical resources to provide the best and safest care possible for all patients,” says Dr Richard Friedland, chief executive officer of Netcare. Unfortunately, as a result of the strain on our resources, communication with patients’ loved ones has at times been affected. “We understand that the hospitalisation of a loved one can be very stressful and anxiety provoking for the next-of-kin, especially during this time when, in order to mitigate the risk of the virus spreading in our hospitals, visitation has been suspended other than in exceptional cases. “As a result and in an effort to improve communication, we have set up the Netcare Family Connect Line. This makes it possible for families to engage with dedicated personnel, mainly social workers who we deployed for this purpose, for information on the status of their loved ones admitted with COVID-19 to any of our Netcare hospitals countrywide, whilst enabling us to maintain patient confidentiality,” Dr Friedland explained. “We understand how crucial it is for families to know how their loved ones in our care are doing, and this new service is dedicated to fulfilling this need,” Dr Friedland says. The number for the Netcare Family Connect Line is 0800 111 266. It will be operational weekdays from 08:00 to 18:00 and weekends from 08:00 to 17:00. The Netcare Family Connect Line service enables patients’ next-of-kin to connect with one of our team of trained call centre professionals, who will facilitate the feedback process. A dedicated Netcare representative at the hospital where the patient is cared for will obtain information on the patient’s status, and will personally phone the family member to provide feedback. Messages to and from the family and patient will also be relayed where direct communication between the family and patient is not possible. Feedback will be provided within hours of the first enquiry and thereafter on a daily basis. Netcare has, since the start of the month, already recruited and deployed 30 social workers to support patients and their families in non-clinical patient liaison roles, which enables healthcare workers to focus solely on their clinical and nursing duties. Netcare hospitals are in the process of expanding the number of social workers to ensure that their services will continue over weekends too. “Already, we are seeing the profound value that the social workers’ efforts have brought for families through facilitating better communication in these unprecedented times, and we believe that this telephonic support service will enhance connection between patients and their loved ones even further.” How the Netcare Family Connect Line works To ensure that loved ones stay connected to patients admitted to Netcare hospitals with COVID-19, Netcare has established a national Family Connect Line, with dedicated Netcare personnel deployed as liaison between patients and their next-of-kin.

Here’s how to use the line: • Phone 0800 111 266 during the Netcare Family Connect Line’s operating hours: Mondays to Fridays, 08:00 to 18:00 and Saturdays and Sundays, 08:00 to 17:00. • Provide the call centre professional with the patient’s case number, which will enable them to immediately identify the patient and the hospital where he or she is being cared for, as well as with your name and surname. This case number is sent via sms to patients admitted to hospital as from Monday, 18 January 2021 as well as to those listed as their next-of-kin.

• Should you not have the patient’s case number, we will require the following information: - Patient’s name and surname - Patient’s ID number - Hospital where the patient is being cared for - Date of the patient’s admission - Your name and surname • The call centre professional will relay your enquiry to a dedicated Netcare representative – either a social worker or patient liaison officer – at the hospital where the patient is cared for, who will confirm with the patient that we may disclose information on their status to you. • The dedicated Netcare representative will contact you telephonically within hours, with information on your loved one’s status. In cases where the representative cannot facilitate direct contact between the patient and family, they will also relay any messages to and from the patient and family, and will continue to update you on the patient’s status on a daily basis during their hospital stay.
