WATER-SAVING MESSAGE FROM EXECUTIVE MAYOR PATRICIA DE LILLE Cape Town is currently in the middle of the worst drought in over a 100 years due to a significant decrease in our winter rainfall levels for the third winter in a row. Our dam levels are extremely low and as part of our measures to manage the crisis, we all need to do more to save water and keep our collective consumption at 500 million litres of water a day. This means that all of us will have to work together to conserve water and drive down our combined water usage. If we all stick to using 87 litres per person per day, we can safely navigate our way through the drought especially since we’re expecting a long, harsh summer. Due to the impacts of climate change with reduced rainfall, we are a permanent water scarce region and we all have to adapt to this as the New Normal. The New Normal means that we are no longer only relying on rain to fill our dams for water supply. As the City of Cape Town, we are doing all that we can from our side to ensure there is water for all residents. As part of our Water Resilience Strategy, the City announced our emergency augmentation schemes which are aimed at bringing an additional 500 million litres of water a day from alternative water sources.

Our information also tells us that almost one in two Capetonians are doing everything in their power to save water but many are still not doing their bit despite restrictions being implemented as far back as January 2016. In August, I joined a team of staff members in the Water Department to install water-management devices at high consumption households. The installation of these devices is ongoing. It has been our call for months that all water users must use less than 87 litres per person per day whether they are at home, at work, gym or any other place in the city. In this regard, we advise residents to a use the calculator on the City’s website to monitor their usage: www.capetown.gov.za/thinkwater With the recently announced Level 5 restrictions, emphasis is now also on placing further limits on the commercial sector to reduce its usage. This is the only category of water uses which has not seen a decline in consumption and managers of commercial properties must with immediate effect ensure that their monthly consumption of the municipal supply of water is reduced by 20% compared with a year ago.

This includes getting water through desalination at various scales (inclusive of container solutions, barges and ships), water reuse technology at various scales, aquifer and borehole options, among others.

I want to assure all residents that we will not allow a well-run city to run out of water. We welcome our visitors from all over the world and ask that they too do all they can to use water sparingly during their stay.

We will do all we can to ensure water supply and avoid acute water shortages.

By working together, we do so much more to save this precious resource.

ARTSCAPE THEATRE 15 - 24 Dec 2017 We bring you a perennial favourite for the festive season, in a traditional version of the fairytale ballet, The Nutcracker, which brings to life the story of Clara, Fritz, and their eccentric uncle, Drosselmeyer. The traditional fairytale version of The Nutcracker tells the story of Clara at her family’s Christmas Eve party. Her mysterious uncle, Drosselmeyer, gives her a Nutcracker doll, starting a night of mysteries and magic as the Nutcracker Prince comes to life to defeat the evil Rat King and his army. Clara travels through a magical snowstorm to celebrate their victory on an enchanted island, where she is transformed into the Sugar Plum Fairy. Celebratory dances from all over the world are performed, culminating in the grand pas de deux of the Sugar Plum Fairy and her Prince. This version of the ballet is that of Russian choreographer, Viktor Vynonen. It was first seen in Cape Town in 2000, when Viktor Barykin came to Cape Town to teach it. The pas de deux for the Snow Queen and Prince, choreographed by David Poole in 1972, has been added to the Snow scene, while Madam Bon Bon makes a welcome return to the last act. The annual Cape Town City Ballet ‘Fairy Parade’ for children will be held on Sunday 24 December, following the 15h00 performance. Children, boys and girls, are invited to dress as their favourite fairy tale character and parade onto the stage to receive a surprise gift from Santa Claus.

BOAT-BASED WHALE AND DOLPHIN WATCHING & WHITE SHARK CAGE DIVING

Boat-Based Whale and Dolphin Watching (BBWW) and White Shark Cage Diving (WSCD) are commercial activities involving non-consumptive use of endangered and protected species of cetaceans, including dolphins and the Great White Sharks. BOAT-BASED WHALE AND DOLPHIN WATCHING BBWW is the observation of whales and dolphins behaviour in their natural environment from sea-going vessels. South Africa is one of the best destinations worldwide for watching these mammals ,whether from land or from boats, with annual visits from Southern right and humpback whales and enormous pods of dolphins all year-round. In South Africa, BBWW began in the early 1980s and has grown from an adhoc activity to a regulated commercial operation across 28 designated coastal areas. 20

WHITE SHARK CAGE DIVING WSCD is the observation of free swimming Great White Sharks from vessels and/or from within a protective cage that is submerged in water. The WSCD industry developed shortly after South Africa passed national legislation in 1991 protecting the Great White Shark from all fishing exploitation, and it grew quickly after 1995 in line with global trends. WSCD has provided significant opportunities for on-going access to research on Great White Sharks and opportunities for public education. Regulating utilisation of these species is an important conservation tool to contribute to better understanding of the importance of these top predators in our marine ecosystem. Thus, in addition to providing economic value, regulating BBWW and WSCD provide a greater protection of whales, dolphins and other sharks from consumptive exploitation in the designated areas. BBWW and WSCD operations contribute significantly to the coastal and marine tourism value chain while ensuring the ecological sustainability of these species. BBWW and WSCD have the potential to provide substantial benefits to the local economy in the designated areas by increasing marketing of the area of operation, employing local residents, transferring skills to youth and investing in the corporate social activities.

AREAS FOR BBWW AND WSCD OPERATIONS Areas of operations for BBWW stretch along the coastline, from Port Nolloth in the West coast to Sodwana Bay in the North East. WSCD is limited to areas where Great White Sharks aggregate naturally and mostly at seal colonies.Areas where WSCD is allowed are Dyer Island in Gansbaai, Seal Island in False Bay, Quoin Rock at Quoin Point, Seal Island in Mossel Bay and Algoa Bay in Port Elizabeth.

MEASURES IMPLEMENTED IN REGULATING BBWW & WSCD BBWW and WSCD are regulated through permits allocated in terms of NEM:BAThreatened or Protected Marine Species Regulations, renewable annually for a period of up to ten (10) years. These commercial industries are also managed through policies used as management tools to grow the industries, promote sustainable utilisation, raising awareness and instil conservation ethics. Efforts that have been implemented to support sustainable nonconsumptive utilisation as part of permit conditions include restrictions on number of vessel(s) approaching cetaceans, limiting the duration and number of encounters per group of cetaceans. In addition to the permit system, the industries have established industrial bodies that provide inbound service to its members and engage the Department on issues of concern in the industries.

GENERAL PROHIBITIONS AND PENALTIES Regulations for the management of boatbased whale watching and protection of turtles prohibits any person without a BBWW permit to approach at a distance closer than 300 meters, any whale and to advertise boatbased whale watching or dolphin watching services or undertake a vessel trip to provide for a swim-withdolphin-experience. Regulations for the management of white shark cage diving restrict any person without a WSCD permit to operate a white shark cage diving operation including chumming or attracting white sharks.

The regulations further prohibits approaching closer than 80 meters to a natural predation on seals by white sharks and advertising whites shark cage diving operations or services without a WSCD permit. Any person who contravenes any provisions of these regulations shall be guilty of an offence and liable on conviction to a fine up to a maximum of R300 000 or to imprisonment not exceeding two years. ONE DAY WALKS With Spring kicking in, the great outdoors give us a big call to come and explore. Table Mountain National Park is the only one in the world surrounded by a city, which gives us a huge number of access points and limitless opportunities to choose from.

Bakoven, Camps Bay and Clifton to Sea Point and Green Point; Table Bay, and of course, Robben Island. The short and relatively easy walk to the top of Lion’s Head is necessary for those wanting to enjoy the very best that the Park has to offer.

In addition to the seasons’ moderated weather, it is also the perfect timing to enjoy our unique indigenous flora, mainly the internationally known, our national flower, the Protea. South African National Parks (SANParks) marks 5 main routes along the park which can be experienced one short walk at a time or taken as daily and over-night tracks with existing accommodation camps in few points. Booking must be done. Although there are rangers along the paths, hiring a guide, especially if you are a visitor, is highly recommended. THE 5 MOST POPULAR HIKING ROUTES Use one of the recommended routes to enjoy the wonders the park has to offer. Please be aware that more people die on Table Mountain than Mount Everest. Table Mountain is a mountain, not a hill!

WARNING: It is a Cape Town tradition to hike to the summit of Lion’s Head to toast the full moon as it rises over the distant Hottentots Holland mountains to the east. On these festive occasions, the summit can be very busy. If you decide to join in the fun, please remember alcohol, darkness and the initial steep descent can be a very dangerous combination.

Up - relentlessly up! That’s the only way to describe the path in Platteklip Gorge. It’s the most direct route to the top of the mountain and the most popular. However, it is not a route to be trifled with; the going can be tough. The walk starts on Tafelberg Road and ascends the main gorge that divides the front face (Africa face) of Table Mountain. The path is well constructed with stone steps and anti-erosion gabions, and is not difficult to negotiate at any point.

This pipeline was built to carry water from Disa Gorge in Table Mountain’s Back Table, via the Woodhead Tunnel through the mountain in Slangolie Ravine, to the Molteno Reservoir in Oranjezicht to help slake the thirst of the booming, late 19th century Cape Town. In several places the path is very stony, but it is an easily accessible and popular walk, with many locals making regular use of certain sections; it is part of the Atlantic seaboard way of life. WARNING: The Pipe Track is very exposed to the hot afternoon sun in summer; it is at its best early on summer mornings. Distance: about 6km one-way to Corridor Ravine Time: 4hrs - 4hr30mins return Rating: easy to Slangolie, moderate to Corridor Children: yes, but the full route is tough Dogs: yes Water: tap at the start; take lots in summer PLATTEKLIP TO UPPER CABLEWAY STATION The “highway” to the top.

However, it is steep, and the best way to tackle Platteklip is slowly - don’t try to rush it, and frequent stops will give you a chance to look back at the great view of Cape Town and Table Bay below. Allow sufficient time for walking down, even if your plan is to come down with the cableway. Rapid changes in weather conditions often cause the cableway to shut down unexpectedly, leaving hikers stranded in darkness at the upper cable station. WARNING: Don’t underestimate Platteklip Gorge, which can be extremely hot and/or very cold and windy. The temperature at the top can be much lower than on Tafelberg Road, with an icy wind blowing, even in January and February. Always take enough water, a hat, sun block and warm, windproof clothing with you - even on hot summer days! REMEMBER to get your one-way down ticket for the Cable Car at the bottom. There is no way to get a ticket once you reach the top. Distance: about 3km up! Time: between 1hr for the super fit to 3hrs for the slow Rating: moderate to tough, depending on fitness and weather Children: older children yes, but it is demanding Dogs: not recommended, and not on the cableway Water: always take plenty of your own, especially in summer UPPER CABLEWAY STATION TO MACLEAR’S BEACON WALK This walk is a must if you want to be able to say you’ve stood at the highest point on Table Mountain, even if at 1 088m it is only 21m above the Upper Cableway Station. From the Upper Cableway Station, choose the main path leading to the diagonally opposite corner of what is known as the Western Table – look for plaques as guide marks to make sure you’re on the right track.

It will take you 10 to 15 minutes to walk across to the point where chains and poles have been provided to assist the short climb down the rocky steps at the edge: it is not difficult. Distance: 5.5km overall Time: 45mins to an hour one-way to Maclear’s Beacon Rating: easy Children: yes Dogs: not recommended Water: none available along this route SKELETON GORGE TO MACLEAR’S BEACON: THE SMUTS TRACK The Smuts Track is one of the most popular walks on Table Mountain, and especially in summer when the Afromontane forest offers shade almost all the way up skeleton Gorge, the toughest section. The climb is steep and unrelenting, although not difficult or requiring more than an ability to climb a wooden ladder and negotiate a few rocky steps. However, many people underestimate the effort required, particularly when they go all the way to Maclear’s Beacon. Be prepared; don’t make the same mistake. The walk starts in the Kirstenbosch Botanical Gardens, but the heart of this route begins at the intersection of Skeleton Gorge and the Contour Path. The first 40 to 75 minutes is spent in the forest climbing log and stone steps. About two-thirds of the way up a series of wooden ladders eases the way over steep rocks, which can be slippery when, wet. 28

OVERNIGHT TRAILS The Cape of Good Hope Trail and Hoerikwaggo Trail are two overnight, long hiking trails that start in the Cape of Good Hope Nature Reserve, and are only recommended for people with moderate levels of fitness. While they are not particularly technical, the distances covered are significant, and hikers must be prepared to cover up to 15 kilometres per day. CAPE OF GOOD HOPE TRAIL A two-day, one-night trail that follows a circular route through the reserve. The trail begins and ends at the Cape Point entrance, where there is secure parking available for your vehicle. The trail takes hikers through some of the most pristine wilderness of the reserve, cutting through vast plains of fynbos and over isolated beaches, populated only by the occasional ostrich or baboon. Wildlife, though skittish, is often seen on

The route is straightforward but covers an impressive 33.8 kilometres. As such, you’ll need to be reasonably fit and well-equipped in order to get maximum enjoyment out of the trail. The trail stops off at the beautiful Rooikrans cottages, where cutlery and crockery are provided. Wood for the braai facilities can be pre-ordered at the entrance gate and delivered to the cottage by the time of your arrival. There is also a two-plate gas stove, solar powered lighting and showers in the huts. You must bring your own bedding, however. Bookings are essential, and must be done via the Buffelsfontein Visitor Centre on 021 780 9204 during office hours. The current price is R210 per person, which does not include entrance fees into the Cape of Good Hope Nature reserve. Please familiarise yourself with the Cape of Good Hope Hiking Trail rules before embarking on the trip.

Point, and makes its way north through four tented campsites: Smitswinkel, Silvermine, Slangkop, and Orangekloof, en-route to the Cape Town CBD. You’ll explore two sides of the peninsula, traverse vast ridges and encounter an array of plant, animal, bird and marine life. All campsites are immaculately appointed and offer beautiful surroundings in which to relax after the day’s long walk. They provide accommodation for up to 12 people, and you are required to provide their own bedding and towels. There are full cooking facilities at each site, including braai places, however all accommodation is self-catering, and hikers must make plans to transport their own firelighters and matches – wood is available for purchase at the campsites. Each day brings with it unique sights and scenery, and for a full breakdown of distances and routes, visit the Hoerikwaggo page on the SANParks website. There is no charge for the hike itself, however entrance to Cape Point must be paid, and all accommodation must be booked with SANParks prior to departure. This can be done directly with the Hoerikwaggo Trail Bookings Office on 021 712 7471, or via the check availability tool on the SANParks website. It’s important to remember that the route is linear, and you will need to arrange for your own shuttle system between the starting (Cape Point Nature Reserve) and finishing (Platteklip Washhouses) points. There is secure parking located at both ends of the trail, however this must be pre-arranged and is at the owner’s risk.

THE HOERIKWAGGO TRAIL The Hoerikwaggo Trail is one of the Cape’s hidden hiking gems. This legendary five day, four night hiking trail leads participants through the heart of the Table Mountain National Park, starting at the southern tip of the peninsula, and ending up just metres from the fringe of the Cape Town CBD. The trail is named after the Khoisan word for Table Mountain, “the mountain in the sea”, and in many respects it pays homage to the nomadic people that roamed the vast plains and dramatic mountainsides for many hundreds of years. As you wind your way through the spectacular scenery, it’s hard to believe that busy highways and a bustling city are, at times, just a few kilometres away. Apart from the occasional human encounter, much of the trail is in total solitude and isolation, and you will leave with a new appreciation for the vastness of the national park on our doostep. These recipes are all part of this seasons’ menus, for you to turn it into a shared memory by either hosting at home or making a reservation.

WILD MUSHROOM, ARBORIO, TRUFFLE, ASPARAGUS Mushroom Pure Mushrooms, sliced. Onion, diced. Thyme, finely chopped. Garlic, as needed. Brandy. Cream. Salt and pepper. Saute onions, garlic and thyme until soft. Add mushrooms and cook until they are caramelised. Season Deglaze with brandy. Allow alcohol to cook out. Add cream. Blitz in food processor. Porcini Stock Caramelise mire poix veg (carrots, leeks, celery, onion, thyme and garlic). Add a handful of dried porcinis. Add water and cook until vegetables are soft and flavour has infused. Strain. Risotto Base • Onions, diced • Thyme, finely chopped

• Risotto

Saute onions, garlic and thyme until onions are soft. Add raw Risotto, stir so residual oil coats the grains. Add porcini stock slowly while stirring risotto until almost cooked. Cool down immediately. To Order Saute onion, garlic and thyme until soft. Add mushrooms and caramelize. Add risotto base, mushroom puree and porcini stock. stirring continuously until cooked. Finish with parmesan and fresh parsley. Garnish with steamed asparagus spears. Lastly finish off with milk foam.

CHRISTMAS PUDDING Ingredients: 115 g butter 225 g white or brown sugar 2 eggs Combine the following: 50 g flour 1 tsp baking powder 1 tsp mixed spice ¼ tsp nutmeg ½ tsp cinnamon 115 g bread crumbs

175 g sultanas 175 g raisins 175 g currants 25 g mixed peel 1 green apple, grated Finely grated lemon and orange zest Method Beat butter and sugar until light and fluffy, add eggs and mix. Gradually add the remaining ingredients and mix well. Transfer to a porcelain or heat proof bowl. Cover well with wax wrap and foil and steam for 6 hours, topping up water if necessary. Steam for an additional 2 hours before serving. Serve with homemade vanilla bean creme anglaise.

ROASTED CHICKEN WITH A CHORIZO AND APPLE STUFFING 2kg Chicken Whole Ingredients 4 Large Sprigs thyme 1 Lemon whole cut in half pips removed 2 Tablespoons softened butter 3 Onion Large Peeled and cut roughly or in thick slices 1 Stick celery cubed roughly 6 medium Carrots Large rondals or left whole 1 Garlic Head cut into half 100ml chicken stock. 100ml white wine Stuffing Ingredients 250g stale bread dried – ciabatta 20ml olive oil 1 small onion peeled and diced 80g chorizo chopped 50g chicken liver minced 1 celery stalks diced 3 cloves garlic 50g butter 1 Apples Granny Smith peeled and cubed (small) 1 tbsp Honey 30g Pecan nuts roughly chopped 1tsp chopped sage 1tsp chopped parsley 1 tsp fresh picked thyme ½ tsp lemon zest 75ml apple cider 75ml chicken stock Salt and pepper to taste

Method Preheat oven to 220 degrees. Combine all vegetables, stock, wine, season, drizzle with a little oil, place on roasting pan. Season chicken with salt and pepper and stuff cavity with stuffing. Tie legs together with string to close cavity and tuck the wing tips under the body. Rub chicken with soft butter. Place chicken breast down on top of the vegetables. Drop oven temperature to 190 degrees. Roast chicken for 30 minutes then turn to breast side up continue to roast for another hour, basting on regular intervals with juices. Check doneness buy cutting between a leg and thigh ensure juices run clear. As this is a big chicken and it is stuffed it might need an extra 15 minutes in the oven. Remove from oven and cover with foil to rest for about 15 -20 minutes. (Use juices to make gravy. Serve with favourite roasted potatoes and vegetables.)

Method Sauté onions until soft, add celery, chorizo and continue to cook until tender.Add butter, honey, apples and allow to caramelize slightly. Add pecan nuts and garlic. Add cider to deglaze then add stock and reduce by half. Add herbs, minced liver and bread and allow liquid to get absorbed, continue until soft. Seasoning. Allow to cool. (The stuffing can be made the day before, add 1-2 eggs for a more solid stuffing.)

Method Beat butter and sugar till soft and creamy. Add egg and lastly fold in the dry ingredients. Keep in the refrigerator to firm up.

Method Combine all the ingredients in a small saucepan and cook for a few minutes. Let it cool completely before assembling the tart.

To Assemble The Tart Grease a tart pan well. Roll out pastry on a floured surface. Cut rounds with a biscuit cutter and place one pastry round in each well. Fill wells with fruit mixture and place a second pastry round on top of each one. Brush each tart with egg wash and sprinkle with a few sliced almonds and bake until golden.

DEEP FRIED CAMEMBERT Served with Perdberg’s The Dry Land Collection Longevity Natural Sweet Chenin Blanc. Ingredients 1 round of unripe camembert cheese 120g Mature Wyke Cheddar cheese or any very mature cheddar cheese sliced Flour for dusting the camembert 1 egg beaten ½ cup Panko bread crumbs mixed with 1 tbls white sesame seeds Method Slice the camembert through the centre horizontally and fill with the cheddar cheese, press down and pinch the edges to close and seal the cheese in. Dust the tops and sides with flour and roll the cheese in the beaten egg making sure it is coated all over including the sides. Now roll in the crumbs once and repeat the egg and crumb again. Chill in the fridge till set. Heat the oil and deep fry till golden and crisp all over. Drain on paper towel and serve with, Fig or Gooseberry Jam. 50gm horseradish 100ml oil 200ml jus Method 1. Clean the inside of the turkey, keep the skin intact 2. In a mixing bowl, add chicken mince, pork fat, dry fruit, carrot, eggs, cream, rosemary, brandy and parsley 3. Stuff the mixture in to the turkey breast and tie up to seal the mixture. 4. Put into a baking tray with diced carrot, onion, celery, garlic and oil 5. Cook the turkey for about 1hour at 300 degree C until the turkey is tender and golden brown colour. 6. Serve with hot cranberry sauce, horseradish buttered vegetables and glazed sweet potatoes.

green gardening and eating Making smart choices for ourselves, our community and our planet starts with the small things we can achieve with limited sources. The municipality of Cape Town supports and encourages its’ citizens to take green actions by guidance, advice and sourcing necessities. STARTING AT THE BEGINNING Make sure you have a piece of ground that: • gets a few hours of direct sunlight, ideally six hours; • is sheltered from the wind (create wind barriers if necessary); and • has the best possible soil quality Remember: Cape Town has a Mediterranean-type climate, with cool, wet winters and hot, dry and windy summers. The majority of our soils are nutrient-poor sands, which, together with the hot, dry summers, create very harsh growing conditions for plants. You will need the following: • Access to water (ideally recycled water, like grey water) • Basic gardening tools (e.g. spade, fork and rake) or anything that can be used as a tool (e.g. poles or branches) plus a hosepipe, watering can or other water carrier • Seeds (or seedlings) – make sure you prepare these in a sheltered spot. Note that seeds take 6–12 weeks to become seedlings) • Compost or organic plant food – learn how to make your own compost or worm farms PREPARE YOUR BEDS • Clear the area and remove all rubbish, grass and weeds. Work around trees and bushes so you can use them as a windbreaker or for shade. • Mark out the areas to be planted (your ‘beds’). The beds should be a maximum of one-meter wide so that you can reach your crops without standing in the beds and separated by paths of about 0.5 meters. SORT YOUR SOIL • Mix your soil with compost. Healthy soil should be dark and should smell sweet. • If your ground soil is contaminated, it’s a good idea to build raised beds – remembering that some vegetables need 30–45 centimeters of soil to grow. Artificial fertilizers and pesticides eventually destroy the good microbes (tiny, microscopic living organisms like bacteria and fungi) in the soil. Rather create your own healthy soil by adding compost and placing a layer of mulch on top – keep it thin so seeds can emerge easily! Mulch can be lucerne, grass cuttings, newspaper or leaves. Get planting • Choose seeds according to the season. • Plant a variety of plants. This is good for the health of the soil – and you’ll have fewer insects and pests. • Some plants work beautifully together – this is known as “companion planting”. For example, basil helps to keep pests away and leads to sweeter tomatoes 46

• Make the distance between rows about 20 – 50 centimeters, depending on the size of the crop – make sure there will be enough space for the plants when they are fully grown. • Sprinkle the seeds and cover them with soil, pressing down gently so the seeds are in close contact with the soil. Plant the seeds at a depth three times its length. If you plant it too deep it will struggle to germinate. • Water the seeds gently. • Add a fine layer of mulch. Remove the mulch as soon as the seedlings come through the soil. • Check twice every day to make sure that the seeds don’t dry out. Your soil should feel moist. Time to harvest Depending on the crop, it can take anywhere from six weeks to six months for vegetables to be ready to pick or harvest. Maintaining your garden • Plant every two to three weeks to have a continuous supply of fresh fruits and vegetables • Keep adding nutrients to your soil. Simply add compost on top of your beds. Don’t mix it into the soil at this stage as you will destroy the existing organisms in the soil. WHAT TO GROW IN YOUR FOOD GARDEN To get the most from your food garden, make sure you plant for the right season as well as for our demanding weather systems and natural environment. Green gardening is best Make sure you consider the individual quality of your soil and microclimate before you begin planting and growing. Not every side of the mountain is the same; for example, some soil in the city is sandier than in other areas. It is also very important to plant indigenously – that is, to plant species which belong to this natural environment. When planning your garden, there are some tried and trusted methods you can use to grow healthy, strong plants that are suited for our soils: • Work with nature and plant according to the seasons. • Plant a variety of indigenous plants, even if not edible. This is good for the health of the soil – and you’ll have fewer pests. • Some plants work beautifully together – this is known as “companion planting”. For example, basil helps to keep pests away and leads to sweeter tomatoes. • Create compost and a worm bin with your kitchen waste. Compost improves the quality of your soil, resulting in healthy plants. • Use water wisely. Even when we are not in a water restriction period, water is precious and has to be conserved. Try using alternative water sources for your garden.
