My home is Zurich’s Old Town. I was raised and still live here today, in one of these centuries-old buildings. From my apartment, I can see the river Limmat flowing past, from my skylight I see Lake Zurich – close to the water, a source of joy! When my daughter was small, she used to say: “I can see the ocean!” Zurich has the kind of “ocean view” that I need. Zu Hause bin ich in der Zürcher Altstadt, hier bin ich aufgewachsen und bis heute wohnhaft, in einem dieser jahrhundertealten Häuser. Ich sehe von meiner Wohnung auf die vorbeifliessende Limmat, vom Dachfenster aus sehe ich den Zürichsee – nah am Wasser, Quell des Glücks! Meine Tochter sagte damals, als sie noch klein war: «Ich kann das Meer sehen!» Zürich hat die «Meersicht», die ich brauche. La mia casa è la città vecchia di Zurigo, dove sono cresciuta e dove vivo ancora oggi, in una di queste case antiche. Dal mio appartamento vedo il fiume Limmat, e dal lucernario anche il Lago di Zurigo: sono in mezzo all’acqua, una fonte di gioia! Mia figlia, quando era ancora piccola, diceva sempre: «Vedo il mare!» Zurigo ha la «vista mare» di cui ho bisogno.

RHINE FALLS At 500 feet wide and 75 feet high, with an average 21,000 cubic feet of water per second, the Rhine Falls near Schaffhausen are Europe’s biggest waterfalls – and a very spectacular sight. We recommend a boat tour in the falls basin over to Centre Rock and further downriver. RAPPERSWIL Located on the “Riviera” of upper Lake Zurich, this city – sometimes termed “the city of roses” – is a charming and hospitable regional centre with a promenade conjuring up a Mediterranean feel, a cosy historic district and many opportunities for sports and leisure activities. LUCERNE With its world-famous Chapel Bridge and Water Tower, Lucerne is arguably Switzerland’s prettiest city, which is best discovered on foot. The Lake Lucerne region further offers countless opportunities for memorable outings and excursions – for example a trip on one of the lake’s paddle steamers.

High Society Sausages If you happen to pass by what seems to be a fastfood joint on Bellevue square, the major tram junction by the lake, and if you should see ladies in evening gowns and men in tuxedos eating sausages at said stand, don’t be surprised. THE STERNEN-GRILL is actually

the most famous – and busiest – place to eat the traditional Swiss Kalbsbratwurst, a long white sausage made from veal, fried to the point of bursting, and served together with mustard and a bürli, a delicious, chewy bread roll with a hard, golden crust. All rounded off by a glass of local beer. “Wait a minute,” I hear my Swiss friends saying. “Why Kalbsbrat-

wurst?” And they are right – I should also mention the equally traditional Cervelat, a shorter but fatter, brownish-red sausage that tastes a bit like a frankfurter but with a smokier and also saltier flavour, which is often referred to as the national sausage. (In numbers: some 160 million sausages are produced in Switzerland each year, which equals a consumption of a good 20 Cervelats per person annually).

I also read somewhere that grilling cervelats on a stick over an open fire – with its ends cut open so they expand like a butterfly’s wings – is a childhood memory for nearly every Swiss person, and as a result many Swiss are emotionally attached to the sausage. As for the ladies in evening gowns and the men in tuxedos? Another local tradition: before an opera premiere, the city’s high society meets at Sternen-Grill to share a small yet hearty meal. But the stand, apart from serving the best sausages in town, is generally a great place for people watching, not only on opening nights. And it is one of few places where you can have lunch or dinner for under ten francs – drink included. So if you don’t happen to pass by the Sternen-Grill by chance, hop on a tram and find out which of the two Swiss sausages suits you best. (No formal wear required.) Music and Berne: The Swiss capital and its theatre are part of my professional life. I’m thrilled that Alberto Venzago’s brother Mario is now the head conductor of the Berne Symphony Orchestra. Near the mountains: Berne, the scene of childhood visits, is today a recurrent scene of my performances. Then as today, a bold jump into the icy river Aare is all it takes to wake me from the fairytale slumber of dignified Berne. Nah den Bergen: Bern, dem die Familienbesuche in der Kindheit galten, und heute immer wieder Ort meiner Auftritte. Im Sommer ein mutiger Sprung in die kalte Aare, damals und heute – dies reisst aus dem feinen Berner Dornröschenschlaf. Vicino alle montagne: Berna, che nei ricordi dell’infanzia è la città dove andavo a visitare i nonni, è ancora oggi un palcoscenico su cui mi esibisco spesso. Oggi come allora, in estate, prendere il coraggio e buttarsi nelle fredde acque dell’Aare è tutto ciò che mi serve per ritemprarmi.

Züri Geschnetzeltes and Berner Rösti: Swiss classics.

My favourite Swiss food is Rösti. These grated, fried potatoes are very traditional and popular – some even consider Rösti the national dish (move over, cheese fondue!) – and there are countless versions of it all over Switzerland. The capital city, Berne, for example, kicks the basic version up a notch and calls it Berner Rösti, adding strips of crisply cooked thick bacon – lardons – and milk for extra richness and flavour.

Memories in Good Taste What does an expatriate Swiss-American look forward to most when she comes to Switzerland? The food! Especially two simple, traditional dishes: Züri-Gschnätzlets and Berner Rösti. WHEN WE MOVED TO SWITZERLAND

in 1979, it was love at first sight, a sentiment that did not diminish during the 16 years that followed. This country will always feel like my second home. One of the many reasons I love it is its food culture. Whenever I visit now, the first places on my itinerary are not the quaint Alpine villages, the intriguing historical sites, the world-class museums or the chic stores lining the

main shopping promenades in cities from Zurich to Geneva. Rather, I head for the farmers’ markets, butcher shops, cheese shops, bakeries and pastry shops, and to my favourite restaurants. I always tell our American friends: “You can’t get a bad meal in Switzerland!” In most cases at least, that’s no exaggeration. The quality is very high.

Although Americans often compare Rösti to hash browns, it is actually more like a potato pie: a golden, glistening, crispy disk outside, and a melt-in-your-mouth, chewy, moist, buttery-salty potato delight inside. And how lucky for me that my second-favourite Swiss food, Züri Gschnätzlets – tender, diced veal Zurich-style in a wine and cream sauce with mushrooms (and sometimes veal kidney) – is usually served with… Rösti! Simple plentiful Swiss ingredients – veal, potatoes, milk, butter – are elevated to Alpine heights when prepared in these classic recipes. I get homesick just thinking about them! Where to Eat in Berne

ROSENGARTEN

Restaurant Falken taurant is also well-known for its “Falkolio” cold-pressed olive oil, bottled exclusively in the small town of Vendone on the north-western coast of Italy. A great gift for lovers of Italian and Spanish cooking.

This restaurant sits high above the winding river Aare and offers splendid views of the Old Town of Berne – a UNESCO World Cultural Heritage Site –, the Jura chain of hills and the Alps. You can also stroll through the historic garden, perfumed by the scent of over 223 types of roses, 200 types of iris and 28 types of rhododendrons before your meal. The menu includes traditional dishes with a modern spin as well as the restaurant’s own Mediterranean creations.

This eatery sheltered by one of the famous arcades in the Old Town is a stone’s throw away from attractions such as the medieval clock tower Zytglogge with its moving puppets, the Bagpiper Fountain or Berne’s Cathedral – and is the ideal place to relax and enjoy a plate of the famous Falken Spaghetti after sightseeing. Giuseppe Verdi composed the most passionate melodies of Italian classical music – and at this restaurant, traditional Italian dining has found a home in Switzerland’s capital – the kitchen of the Emilia-Romagna region, to be exact: Verdi’s home. Wine also enjoys a high standing here, and the restaurant’s guests can choose their bottle in the recently opened Galleria Vini wine gallery.

The place to indulge in traditional Swiss cuisine from the Valais region – such as cheese fondue, raclette and Rösti, a dish based on fried grated potatoes, a little like a potato pie, at reasonable prices. The restaurant has a cosy atmosphere full of old-world charm, but is often full, so you might want to book a table in advance.

The “Delli”, as this restaurant is lovingly called, is mainly frequented by locals. It serves a variety of traditional Swiss dishes, and the house’s speciality is the Bernese platter with various types of sausages and cold meats, boiled potatoes and sauerkraut. The restaurant has been in business since 1892, which might explain why the city’s most famous regulars’ tables can be found here – the one simply called “Number 1” as well as those of the city’s shooting club and the “Helveter” and “Rhenaner” fraternities.

VIP Charter: Nuances of Exclusivity The significance of the cryptic term “VIP Charter” can be explored in detail during these individually booked and arranged travels aboard Helvetic Airways flights. By Christopher Findlay

Some travellers associate the term with gourmet catering and extra legroom; for others, luxury means the option of flexible and direct flights to the desired destination without delay. Like a bespoke suit, Helvetic Airways’ VIP Charter service is tailored exactly to the requirements and desires of customers.

CUSTOMISED TRAVEL A quote can usually be supplied within 48 hours of enquiry, and is

Long live hospitality and comfort! Business travellers and those wishing to experience the various special features will be very comfortable in the bright cabin.

Viva! – the Helvetic Airways business class offers the following advantages over the comfortable Economy Class:

FREE LUGGAGE ALLOWANCE The limit for luggage allowance in Business Class is 30 kilograms (Economy: 20 kilograms).

FULL FLEX TICKETS Tickets purchased for Business Class can be changed to another date at no cost through the Service Center.

SEAT RESERVATION Seats can be reserved by telephone ahead of time at no cost.


SPATIAL SEPARATION The front rows are reserved for Business Class seating. In three-seat groupings, the middle seats are left vacant. This permits relaxed work and ensures the necessary privacy.

DEDICATED ASSISTANCE An experienced crew member with special training caters exclusively to the requirements of Business Class passengers and takes care of their well-being and wishes.

PRIORITY CHECK-IN Separate check-in for Business Class passengers is available at all airports. At selected airports, these guests are also offered use of a “fast lane” security check.

ACCESS TO BUSINESS CLASS LOUNGE Holders of Business Class tickets have free access to the Business Class lounges at airports. Here, travellers can refresh themselves and enjoy their wait in peace and quiet.

EXCLUSIVE FOOD – CUCINA VIVA! Together with our catering service “First Catering”; we offer our guests in the Viva! Class exclusive dishes adapted to the length of the flight. Travellers may enjoy a selection of alcoholic and non-alcoholic beverages.

A Childhood Dream Comes True Co-pilot Christian Suhner describes his training as a professional pilot and the joy of flying.

WHAT MADE YOU WANT TO BECOME A PILOT?

WHAT ARE YOUR PLANS FOR THE FUTURE?

After high school and basic military training, I considered studying medicine, studying music, and training to be a pilot. With the choice of a pilot career, I have fulfilled a childhood dream.

Of course, I’m working towards becoming a commander at some point.

WHAT DOES CHRISTIAN SUHNER DO IN HIS SPARE TIME? I’m a keen musician as well as a bit of

WAS IT A DIFFICULT DECISION? Of course you want to give it some thought. Training is tough and demands a lot of discipline, as well as being expensive. It took me some time to weigh all these factors.

WHEN AND WHERE DID YOU COMPLETE YOUR PILOT TRAINING? My entire instruction was at the Horizon Swiss Flight Academy. I worked on the side as a service technician, in administration, and finally in the maintenance department. This allowed me to continue my pilot training at the same time, while already being in the thick of the “airline business”. My training took three and a half years.

WHAT DO YOU LIKE MOST ABOUT YOUR JOB AS A PILOT? I never cease to be fascinated when our Fokker breaks through the cloud ceiling and we can fly over the Alps in sunny weather. It’s a feeling that you never tire of.

WHICH OTHER FUNCTIONS DO YOU HAVE AT HELVETIC AIRWAYS? Together with the IT department, I develop various applications and contribute to a number of projects.
