subtly different types of drunkenness. Given that it’s a social phenomenon, many of these terms relate to who is drunk and in what context, rather than just how drunk they are and on what. Only women get squiffy, whereas you’re probably a big fella if you’re getting bladdered regularly. Everyone knows that being annihilated is more extreme than getting tiddly. You grow out of getting paralytic after your early

twenties, apart from at Christmas, whereas you probably won’t get soused unless you reach a particularly embittered middle age. ‘Tired and emotional’ is a gentle euphemism which carries an undercurrent of Private Eye smugness, whereas ‘cunted’ and ‘wankered’ aggressively confront and challenge.

The fuel of a revolution The first person ever to get pissed probably did so on a forerunner of wine, given the ease with which fruit can ferment. No one really knows when we first took control of fermentation and started making it happen deliberately, or where it began, but it is safe to assume that we stumbled across it by accident not long after we started walking

upright, by inadvertently eating fermented berries and realizing that they took the edge off a bad day’s hunting and made us feel a little bolder down the watering hole. Following the feats and the discoveries of the many great explorers, all of the large European powers went on a round-the-world boat race to ‘discover’ as much new territory as possible and claim it, its people and its resources, before the other lot got there.

These voyages brought new products and new wealth back home. There was a sense of optimism, and a growing spirit of invention and industry. The growth of the British empire in India, America and Africa yielded great riches from trade in spices and cotton, not to mention slaves, and meant that there was a new class of merchants who became very rich indeed. The new, working wealthy wanted to prove they were just as good as

the landowning aristocracy, and felt that buying up land themselves was the best way to achieve this. In France, the tension between old and new wealth led to revolution. In England, it helped produce the enclosures. The fashion for land buying and the emergence of new methods of agriculture meant that the rolling, open landscape of Britain was transformed virtually overnight into tightly demarcated fields on which

people who had lived and worked the land for centuries were no longer welcome. With nowhere to live and no means of making money, many people ended up in the newly built workhouses. But many more got on their carts and looked for work in factories, mills and mines. In the eighteenth century, we changed from a nation of farmers to a nation of factory workers. This new wealth, technological change and transformation

of the landscape together revolutionized our drinking habits. Under the old agrarian lifestyle, work and home were one, and drinking was a family thing. But the factory system threw large numbers of men together into artificial environments, free from the social constraints of having to behave in front of the wife and kids. They went to alehouses together to eat and drink, and did so to greater and greater excess.

The fight for the right to get tight It’s a defining feature of drinkers that we love to experiment. We don’t need to reminisce for too long about the lethal cocktails we all bolted down and promptly threw back up in our youth. But we were never unique in this respect – in a corner of the same pub, there were probably a couple of

old men pouring a bottle of sweet stout into a half of bitter. With this experimentation as with so much else in beer, we are merely carrying on a centuries-old trend, and this trend was another factor in the growth of the huge breweries we know today. eighteenth-century pubs offered a variety of beers and ales, and drinkers experimented according to their tastes. The wonderfully named (but almost certainly pseudonymous) Obadiah Poundage told readers of the London Chronicle in November 1760 that Londoners enjoyed a ‘sweet heavy drink, in general used ale mixed with beer, which they purchased from the Ale draper’. While breweries sold their ale as soon as

it was brewed, the ‘Ale draper’ would age some stocks for six to eighteen months, which would produce a sharper, sour taste. In the early 1700s, pale ales brewed for country houses were becoming popular with the gentry, but when yet another war with France led to taxes on malt rising faster than taxes on hops, unhopped sweet ale became more expensive than hoppy, bitter beer.
