hink how many times we will have the opportunity to make a choice each day. What clothes am I going to wear? What am I going to buy at the grocery store? What specific tasks am I going to focus on at work today? What am I going to prepare for dinner? Well, there’s another choice we should be making every day, but put little thought into: Health. That’s a choice only you can make for yourself. Unfortunately, too many people believe disease happens because of bad genes or plain dumb luck. No, disease happens because of the choices—or lack thereof—that you make on a daily basis regarding your health. To get well or remain well, we must carefully weigh our choices pertaining to our diet, our exercise regimens and overall behavior. See, our body is a self-repairing system, but it will only operate optimally if we properly support its functions. Life is hectic, but you can slow down and take the time to make better health choices. For instance, carve out time to make a list of all the high-carbohydrate food you consume and research how you can replace those items with healthier options. Or, set small, specific fitness goals you would like to achieve in one month, six months, and a year from now. That could include running a 5k or marathon. The bottom line is that our health is in our hands. Taking the time to make decisions regarding our health can lead to increased energy, increased mental clarity, and increased happiness. The choice is yours. Much love, health and happiness to you all,

verything we do throughout our lives is a choice. Although we are told that it is our minds that determine what course of action we take, it is really our hearts. In recent generations, we have elevated intellect to the prominent spot of mastery. In fact, we believe this is why there is so much turmoil in individual lives and humanity at large. Our ancestors lived simple lives, interacting with the earth and nature on a daily basis, and cherished instinct much more than mental voracity. The person in the village who possessed the most common sense inherently became the guiding leader. We have somehow come to think that accumulating facts, knowledge, and data is more important than the relevance of consciousness, and this is why we often make problematic decisions. Choice is best created by a marriage between internal wisdom and cerebral navigation. As an example, we have just counseled a guest who explained how he had consulted with 23 doctors to find what was causing his symptoms. Being an intellectual, he cataloged all of their advice, organized all the tests that were preformed, and ultimately compared their advice. He asked us why there was such a disparity from all of these women and men who worked in the same medical field as physicians. We explained that although they had very similar educations, it was how they chose to process that knowledge that determined how they manifested their opinion. He then asked us what he should do. Our answer to him was clear: listen to the most important person. Appearing confused as to which of the doctors would be the most important, we clarified—it’s you. Make your choices based upon your passionate pursuits and remember that life is about filling and fulfilling your unique calling. Your mental and spiritual state is not static, but a continuum of processing your current experiences. How well (or not) you do this is the way you personify who you are. All too often we do not recognize and/or understand why we are experiencing a particular thing. This is because we have abandoned the understanding of heartfelt decisions and process all experiences as successes or failures. Your deceptive mind causes a boatload of guilt, fear, and tenuousness. On the other hand, your core essence never judges or limits you; only guiding you to gain from what you are doing. Make yourself proud of your mind by using the correct one. Learn not to harbor resistance to yourself. Allow each and every event in your life to enrich you, freeing yourself from the shackles of rigidity. It is all up to you—the choice is yours! CORRECTION In the article entitled “Cancer Conquest?” (Vol 38, Iss 3), it was stated that chemotherapy drugs kill half of the patients who take them within the first 30 days. This statement is incorrect. In fact, the study referenced, conducted by Britain’s Public Health England and Cancer Research UK, found that that fewer than 1 in 100 breast cancer patients and 3 in 100 lung cancer patients died within 30 days of having treatment in England. ive weeks before my wedding at the end of March, I found myself traveling to the beautiful surroundings at Hippocrates Health Institute, having found out about it only three weeks prior. It was an early wedding present from my fiancé, who wanted to help me get my health on track, detox my body and give me some much-needed relaxation and rejuvenation before our big day. I have suffered some major ongoing health issues, including constipation and bowel issues, for more than 30 years. I’ve

had food intolerances and allergic rhinitis— which I finally pinpointed to mushrooms. My stomach issues cause me daily upsets, bleeding and embarrassment. I have many days where I have to cancel appointments with my piano students or with my job helping people save money. This costs me income and puts pressure on me mentally and physically. As soon as I arrived at Hippocrates, I was welcomed by staff and guests alike. My room was comfortable, and though I was to be accompanied by two other

guests, I had the first night to myself. Our induction was thorough. I soon learned all about the delicious foods, condiments and little extras, and realized that my bland choices the night before needn’t have scared me into thinking I’d be eating rabbit food for a week—far from it! The addition of raw asparagus, dulse flakes, lemon juice, turmeric and aminos made the sprouts and greens taste simply delicious. I couldn’t wait for my next meal. The special Saturday desserts were worth queueing up for, too—each dairy-free and seriously yummy.

I managed some early-morning swim sessions, which is not like me, but the pools were so peaceful and inviting. My schedule of appointments meant I couldn’t fit in much more exercise, as I wanted to learn from the workshops, too. I experienced many different therapy treatments on the package, including an amazing hara massage (wow!) before my colonic. I was concerned about having this treatment done, given my health conditions, but it did me a world of good. It was an emotional experience, but well worth it. I made good use of the health center and spa, opting for the complete luxuries of oxygen therapy and facial treatments in preparation for my wedding. Every person I saw at Hippocrates had a glow about them, especially on about day three or four. It’s like there’s a beautiful energy that flows through the place, even through those with serious issues. There’s hope here. They are in the right place to find the solutions to their problems. You give lectures and attend health conferences all around the world. Of all the places you’ve been, why did you choose West Palm Beach as Hippocrates Health Institute’s base of operations? In 1985, Hippocrates Health Institute’s board of directors began searching for a new geographic location that the institute could reside in. Many factors were taken into account: accessibility, environmental health, and the quality of the facility. We searched from Hawaii to the Carolinas, but finally settled on West Palm Beach because it has the cleanest air, for this size city, in the United States. We have been delighted that we made the right decision since the yearly sun helps our guests cheerfully transform their lives.

What is your very favorite thing to eat or drink and why? What is Anna Maria’s? After decades of marriage, Anna Maria and I have developed and refined similar tastes. We love all forms of sprouts and their juices. Our bodies know what will happen physically and psychologically after their consumption.

I am an anxious person, and often find myself stress-eating and using food as comfort rather than sustenance. Is a physical detox the first step or is counseling a better way to start addressing this issue? All participants who come through our different programs see our psychotherapists. No doubt, your state of mind and the way you feel about yourself will determine your relationship with food and all else.

The handbook says that tree nuts are safe and healthy to eat, but never peanuts or cashews. What makes peanuts and cashews different from real tree nuts? Cashews are really classified as fruit, not nuts, and can never be eaten raw. The hard shells that house cashews contain urushiol—the chemical found in poison ivy—and must be baked at high temperatures to make them edible. However, heated nuts and oils are known carcinogens and must be avoided. Peanuts are also not nuts— they’re legumes. Science has known for half a century that they contain an aflatoxin that encourages fungi and precipitates cancer. Even the so-called organic varieties of these two non-nuts are hazardous.

Hundreds of years ago, we started to slip away from our natural diet and lifestyle and began to feel the repercussions of this distance. Now, illness and disease have grown rampant. Over the past several centuries, there have been individuals who have guided us to rethink our destructive lifestyles. In order to provide a historical context for the work that we do at Hippocrates Health Institute, I will introduce you to some of the most influential healers since the late 19th century.

ARNOLD EHRET

BERNARR MACFADDEN

ARE WAERLAND

(1886-1922)

A professor and enthusiastic researcher from Germany, Ehret brought his “mucusless diet healing system” into the mainstream. With Ehret’s diet, the West explored a modern scientific perspective on lifestyle medicine for the first time. He spoke about detoxification of mucus, referred to as mucoid plaque or biofilm today. Additionally, Ehret discussed the positive effect of an alkaline diet and fasting. He had many students in the early 20th century, including Paul Bragg.

Macfadden became the first highly effective advocate of natural living. From his personal experience reversing disease and regaining strength, he taught that a plantbased diet, vigorous exercise (including weightlifting), and a positive attitude comprised the triune of exceptional health. Macfadden taught throughout North America and Europe, and brought many visitors to his resort, the Physical Culture Hotel in Dansville, New York. He had a lot to say, having written more than 100 books. He was constantly pursued by mainstream advocates of Western medicine who he dismissed as pill-pushing zealots. One of his well-known axioms was, “We pay a dear price for lazy, inactive life, eating unnourishing foodless foods, which bring unnecessary pain, suffering, and premature aging.”

Waerland was born Finnish, but later became a Swedish citizen. He was known as an idealist in the field of health. Waerland organized the Nordic Association for Scandinavians to improve the overall health of its members. He also founded the world’s first successful health magazine in 1940, presently called HÄLSA. He was a perpetual student and studied science and medicine at universities in Uppsala, Sweden; Sorbonne in Paris; Helsingfors, Finland; Edinburgh, Scotland; and London. According to Waerland’s philosophy, disease and early aging have their origins in poor life choices. To rebuild one’s health, he claimed, one must address these roots. With my Swedish upbringing, he was the first I learned of who taught the significance of raw plant food consumption.

PAUL BRAGG

HERBERT SHELTON

ALMA NISSEN

(1885-1976)

(1895-1985)

(1896-1992)

One of the world’s first triathletes, Bragg was known on occasion to swim from Alcatraz to the shore of San Francisco—bound by handcuffs the entire time. He was also recognized for his bombastic teachings, and his influence as the premier health and fitness guru reaching Olympians and Hollywood actors alike. Bragg studied under Ehret, MacFadden and others. The programs he created were fusions of their various techniques. In 1914, Bragg opened America’s first health store in New York City. He single-handedly introduced health-restoring products into a culture where they previously did not exist—a service the ailing public needed badly. Bragg quickly became renowned for the success of his teachings. He inspired many individuals, including a 15-year-old Jack LaLanne. His mother dragged him to one of Bragg’s lectures in San Francisco, where he came to admire Bragg’s philosophy. LaLanne grew to become one of the pioneers of the body-building and fitness movement. Bragg was sought after as a teacher and a specialist until the day he died— well into his golden years.

Shelton was a naturopathic doctor born in Texas. He reignited the natural hygiene movement, advocating for raw vegan food consumption, fasting, and a pure-lifestyle approach. He founded schools to teach his ideology about health. His teachings spread, and were even referenced by Mahatma Gandhi before his fasting campaigns. In 1956, the American Vegetarian Party asked Shelton to run for president of the United States. Shelton was a founder of the 20th century raw food movement.

Searching for a mentor in my youth, I selected Nissen as my guide, and found an educational haven at her institute as an apprentice. I acquired deep understandings of health, as well as academic stimulation from her vast practical experience founded on the work of great thinkers like Waerland. This Danish-born health promoter reversed her crippling rheumatoid arthritis and went on to work with many prominent research physicians and the Swedish government. She founded a health center nestled by the sea near Stockholm. Partly due to the government’s confidence in her work, Nissen found herself with abundant support. Swedish citizens attended her center with the financial support of the state. People from around the world found relief using her plant-based diet and fasting program. She was best known for using copious amounts of garlic as a medicinal remedy for inflammation and other disorders. Eventually, I became the director of Alma’s clinic, where I spent eight years learning from the best that Europe had to offer. I am still grateful for the rigorous academic and whole-body education I obtained through my work with Alma Nissen.

BERNARD JENSEN

ANN WIGMORE

(1908- 2001)

(1909-1994)

Jensen was born in California and graduated in 1929 as a chiropractor and naturopath. He became a widely traveled teacher and a prolific author, having penned more than 40 books. Best known as the world’s leading authority on iridology, he shared his knowledge on nutrition, hydrotherapy, homeopathy, acupuncture and colon health. For his exceptional achievements, he was awarded the prestigious Pax Mundi Award for World Peace. His best-known adage was, “We must treat the patient, not just the disease.” As a legacy to Dr. Jensen, his daughter-in-law, Dr. Ellen Tart-Jensen, has joined the faculty for the Hippocrates Health Educator program teaching iridology.

Wigmore was born into healing. In the small Lithuanian village where she grew up, she was the surrogate granddaughter of the local physician. In 1952, Harvard doctors diagnosed her with stage 4 colon cancer; they pronounced she would be dead in 90 days. But Wigmore knew what to do. With her grandmother’s traditional healing knowledge in mind, she adopted a raw, organic, plant-based diet. By 1956, she had reversed her disease and founded Hippocrates Health Institute. For 62 years, Hippocrates has worked with and helped hundreds of thousands of people who have either attended our programs here in West Palm Beach, Florida, or have been with us in one of our international conferences. Since 1980, I have co-directed the institute. Each day, I have the privilege to observe the profound effect that pure organic food, powerful motivational thinking and exercise have in the reversal and prevention of disease and premature aging.

There are so many more who deserve to be acknowledged, yet we have now honored some of the most influential and effective leaders in the field of natural health care. Although some were ridiculed and disavowed, they persevered, and without their commitment we would not see today’s burgeoning international movement toward plant-based diets and natural living. Let’s send them thanks and never forget the gifts that they brought.

Doctor Days strives toward a better future for integrative medicine.

Caroline Bryan thought there had to be a better way. A better way to work. A better way to live. A better way for doctors to work with their patients. So, about four years ago, she founded Doctor Days, a three-day immersion experience at Hippocrates Health Institute. Three times a year, Hippocrates welcomes 30 to 35 doctors from all fields of medicine, as well as wellness experts and practitioners, who then immerse themselves in the Hippocrates experience. All of them attend lectures, exchange ideas, and live and learn as a guest would. The goal, Caroline says, is to focus on the all-important lifestyle choices and bring about greater public understanding of the Hippocrates platform. She wants to inspire the doctors to return to their practices, share their findings about the Hippocrates Living Foods Lifestyle, and treat their patients with a greater understanding of what is possible when we add the component of natural health and immune-boosting practices into the “toolbox.” “It’s a fusion of medicine. We want to work together in synergy to create, as a team, the future of medicine,” she says. These highly skilled and trained healthcare professionals often are frustrated with the limited tools they have to treat patients with chronic diseases. Many of them are turning to integrative medicine and seeing the value that complementary care can offer in addition to traditional treatments. Integrative medicine is healing-oriented, considering all aspects of a person’s lifestyle and emphasizing a therapeutic relationship between practitioner and patient. Doctor Days provides a new platform for professionals to understand all the wonderful things Hippocrates has to offer. This program is a new phase in the field of health care, one which merges a multidisciplinary approach. Its goal is to bridge the terrain of traditionally trained medical doctors, nurse practitioners, nurses, and other health professionals, and introduce them to complementary ways of healing, creating optimal health and even disease reversal. Caroline says Hippocrates Health Institute is the perfect place for professionals to experience something that is not part of their everyday lives. HHI is well-known for improving the body’s immune system, helping guests manage their health challenges and achieving optimal performance, she says.

Doctors must apply for the exclusive spots in the Doctor Days program. They come from all over the world, representing major universities and practicing in advanced fields. Just as Hippocrates guests would, participants in Doctor Days go through the detoxification process and enjoy daily organic raw cuisine, green drinks, and wheatgrass juice. positions at Fortune 500 companies. After two decades, she felt run down, stressed out and lacking a sense of well-being and happiness. In 2008, her life went through a massive upheaval personally and financially when the economy took a nose dive. The richness of life had left her with no energy. She suffered chronic fatigue, pre-diabetes, near-obesity, cancerous splotches on her face, and a litany of other ailments. “I had exquisite insurance, but my health needs were not met. I asked myself, ‘Why?’” Caroline says. She attended Hippocrates Health Institute and learned about the lifestyle choices she needed to make to get better, such as not using pharmaceuticals, eating healthy foods, drinking clean water, and reducing work stress. Caroline credits Hippocrates with transforming her life in about 18 months. She says she looks and feels younger and has been reinvigorated with energy, passion, and enthusiasm. She no longer wears glasses because her vision improved. She also worked for a time as an energy therapist on the HHI staff, witnessing the almost “miraculous” speed at which guests healed. She doesn’t believe the aging process means a body must go into decline, because the body has the innate ability to regenerate and heal itself. “Everybody on the planet has a sense of wanting to experience who we are, and the only way to get there is to first understand that it’s all within our grasp through our lifestyle,” Caroline says. “It’s in our hands to create the life that we love.” Today, she remains connected to HHI by organizing Doctor Days and other events, and promoting public awareness for achieving optimal health. Caroline is planning three more Doctor Days Immersion Experiences for 2019. “I’m stronger than ever in every way,” Caroline says. “And, more than anything, I have my life back.”

Imagine if food quality, flavor and health were all connected to the vitality of the soil in which it is grown. | B Y DAN KITTREDGE |

A

curious fact: 30 percent of our human DNA is involved in the function of our noses and tongues. This suggests that we have a very sophisticated built-in smell and taste detection system. And this system seems to serve as a nutrient monitoring mechanism as well. Many of us know that industrialized food is tasteless and lacks aroma. The elements that create fragrance and deliciousness are complex chemical compounds known as plant secondary metabolites. In order for these compounds to develop in food, the soil has to be a well functioning living eco-system. Unfortunately most agricultural soil is not alive. It lacks the vitality that could intelligently organize itself into such a dynamic system that could offer the plants many of the building blocks to create these deeply healing nutrients. HHI founder Ann Wigmore got this. If it is not in the soil, it’s not going to be made by the plants and It’s definitely not going to be in the fruits or vegetables that grow from these plants. I learned this the hard way. As a farmer, and an organic one at that, I saw that my plants were struggling and slowly discovered the simple yet sophisticated interrelationship between soil vitality, plant health and nutrients in food. It’s not about being organic, or conventional, or non-gmo. It’s about supporting the vital life of the soil which industrial fertilizers and pesticides don’t do – or actually can’t do. It may sound strange, but I found that there is an invisible intelligence in soil if it has all the necessary components to foster life. Among the critical needs, soils must have a full spectrum of elements for life to function well: from microbes to animals, a broad set of different elements are necessary. Linus Pauling, winner of two Nobel prizes is often quoted as saying that “at the root of every degenerative disease is a mineral deficiency”. Scientists have tracked this out, and we now know that deficiencies of specific elements are correlated to specific diseases – like diabetes, cancer, osteoporosis, cardiovascular disease etc. As a farmer, I have begun teaching these principles to other farmers so they can replenish and rebuild the soil to produce crops with superior nutrient density along with extraordinary flavor and aroma. I believe there is an undeniable connection between good nutrition, deliciousness and quality.

I started the Bionutrient Food Association (bionutrient.org) to research this connection, facilitate our mission to “Increase Quality in the Food Supply” and educate consumers about the higher-quality crops that are available. The higher demand for flavorful and nutritious crops, the more incentive farmers will have to produce them. To foster this vision, we are part of a broad collaboration to develop a hand-held light meter that will be able to discern relative quality of foods at the supermarket or farmer’s market with a click of a button. Imagine walking up to a bag of carrots, flashing a light at them and being able to tell how nutritious they are. We are only a couple of years away from giving everyone access to this empowering game-changing tool. This project, the Real Food Campaign, (RFC) is enthusiastically endorsed by HHI Executive Director Brian Clement, who believes “Dan’s vision is radical and revolutionary and has the power to not only transform our food system, but heal our bodies and our earth at the same time—while we enjoy natural delicious nourishing food!” All our work, from the engineering the tool, to developing the nutrient database, to determining what management practices correlate with best quality is totally open-source. This means that it will never be controlled by a company and will remain available to the global commons in perpetuity. After years of research and development, we continue to move forward as a non-profit and are looking for donations to complete the work. wo days before the mass shooting at Marjory Stoneman Douglas High School in Parkland, Florida, I was doing research for my honors health class assignment. The project was entitled “Student Ideas Worth Spreading,” similar to the slogan of the well-known TED Talks series. “Nature,” I’d responded excitedly, when asked what my topic would entail. That day, I left a voicemail for Diane Lade, a contact reporter for an area newspaper called the Sun Sentinel. In late 2016, she wrote an article titled, “Seniors Testing Whether ‘Park Prescriptions’ Are Good Medicine,” and it inspired me. I had this strong hunch to keep exploring and called her, hoping she would answer a few questions. It was worthwhile that I did. That Valentine’s Day started like any other. As I handed goody bags to my classmates, I could hardly wait to ask them for their support to revamp the campus nature trail. I had no idea that in less than three hours, the county I was researching would endure a painful tragedy. This event was enough! Students needed a place of serenity now more than ever. The next day, my heart leaped out of my chest when I opened my email. It was a message from Chris Korbelak, manager of Palm Beach County’s Parks and Recreation department. “Hi, Janet,” it began. “Per your call, I would very much like to talk to you about our park prescription program and how our parks and services can be a resource for students and faculty at Palm Beach State College. As a Palm Beach State alumnus, this is of special interest to me.” I received a donation of plants and flowers from Home

Depot just two days after the tragedy, in efforts to get students, faculty and staff together in love and support toward Broward County. It was not long until the scrambled spelling of the word nature, “Neu-Art,” came to me. I began using this term thereafter. What an umbrella nature is; through an abundance of community support via donations and contributions, gathering strength and neutrality, nature provided a memorial near the campus bookstore in the shape of a heart. Marjory Stoneman would have been proud. The school was commonly referred to as “Stoneman Douglas” in articles or on the news, and I couldn’t help but wonder: Who was Marjory Stoneman Douglas? I’d never see a single piece regarding her. So I did a little extra research. Known as the “Grandmother of the Glades,” Stoneman was known as an excellent author, dedicated journalist, and lifetime fighter for South Florida, and was awarded the Presidential Medal of Freedom in 1993 at age 103. I am honored that my work on an idea worth spreading would be emulating the works of a woman who died long before I would come to Florida. Two months later, on April 27, the campus nature trail cleanup was a triumph. We earned, learned and returned our pathway to success (a play on the school’s motto, “Your Pathway to Success”). Nature welcomed us with a smile. Carolyn Beisner, from Palm Beach County’s Environmental Resources Management, and her intern helped us navigate the pond. We removed exotic plants and replaced them with beautiful natives. Pam Blue, the director of health education at Hippocrates Health Institute, shared her natural health journey as well.

According to Florence Williams, author of The Nature Fix, nature makes you happier, healthier, and more creative. She’s right. The term “forest bathing,” which is basically nature therapy, is a homeopathic remedy used since ancient times. I have not found a study that shows detrimental effects of nature; I doubt I ever will. Nature is boundless for offering improvements. If one is already happy, nature will simply bring that one up higher. The influences within nature are priceless. The prospects that it presents when we are off our computers and cellphones multiply intensely. With all the bad in the world, it may seem

like these heavy problems require strategic analysis from experts, and certainly they do. However, the fact of the matter is, going outdoors really is good for you. There are schools that focus their entire curricula on nature and the environment. Studies show that people who go outside more often— exposing themselves to the natural world—live longer and healthier lives. Nature is the Neu-Art. See the art of nature every day in every way. ome on! How old are you? No, not just in simple years. What is your biological age? When we are young, we have a lot of God-given hormones—we’re tall, good-looking, slender and quick to heal. Hormone deficiencies play a larger role in health problems than previously thought. About 78 million Americans are over 60—at this point we’re as ragged and worn-out as an old pair of briefs. Our bodies are losing elasticity, collagen,

muscle mass and vigor. Many people say it’s normal to age, it’s natural to lose your luster and become dull and gray. That’s not true. We don’t lose hormones because we age; we age because we’ve lost our hormones. BLOOD IS THICKER Why go through the trouble of an invasive blood test when you can effortlessly collect five saliva samples and receive quicker, more accurate results? The idea that blood testing is the be-all-end-all to determining the levels in our bodies is a misconception. In fact, saliva is directly produced from blood, but has been filtered of any bound hormones that can interfere with accurate test results. Production of saliva takes place when blood and lymphatic components pass through membrane barriers on their way to three major glands: the parotid gland, the sublingual gland and the submandibular gland. Hormones are considered “bound” when they have been captured by binding globulins, special proteins created specifically to excrete hormones. Your level of binding globulins fluctuates significantly depending on several factors, including disease, obesity, prescription drug use and pregnancy. Blood or serum level measurements are numbers that are affected by bound hormones, even though your body will never actually absorb them. The “free” hormones, also called bio-available hor-

A LITTLE DAB WILL DO Decreased saliva production occurs as we age, possibly due to salivary gland atrophy and, ironically, hormonal imbalance. Despite any decreases, you will be able to collect

sufficient samples for testing. Even if you can muster only the minimum amount, we can see an accurate depiction of hormone levels. Testing starts with the kit. Because saliva hormones are tiny molecules with an electric charge, they tend to stick to plastics used to make tubes, such as polyethylene. Researchers were shocked when they discovered that their collection tubes caused up to 87 percent of hormones to be bound to the plastic walls. To ensure an accurate reading on hormone progression, we collect multiple samples collected during the day in trademarked collection tubes that do not bind to hormones. This means saliva testing can accurately measure even the most minute hormones, such as testosterone in women and children, estrogen in men, or hormones in those who have little or none left. Because of the ease of use for this test, I have happy, healthy patients who routinely check their hormones every six months to track their improvement.

1 green cabbage, finely sliced 1 carrot, shredded 4 red peppers, finely chopped 9 scallions, sliced (save bottoms) 1 hot pepper, or 1/22 tsp cayenne 2 tsp ginger, chopped 3 oz soaked kombu water 1⁄2 1⁄ ⁄2 apple, de-seeded 2 clove cloves ovess garlic kombu seaweed, soaked outer cabbage leaves a weight to compress mixture

DIRECTIONS S T E P 1: 1 : Mix cabbage, carrot, peppers and scallion tops STEP 2 2:: Liquify scallion bottoms, hot pepper/cayenne, garlic, ginger and water in blender. Mix thoroughly with cabbage. STEP 3 3: Pour half the mixture in a ceramic or glass container. Keep pressed down firmly. STEP 4 4: Place the apple into the center. Pour the remaining mixture on top, pressing firmly. S T E P 5: Cover the top with a layer of kombu seaweed. Add a layer of cabbage leaves on top. STEP 6 6: Place weight on top. Be sure that the entire container is sealed and pressurized. The cabbage will begin to foam and ferment. (See image above for a visual example of this process.) STEP 7 7: Leave out at room temperature for 3 to 5 days. STEP 8 8: Uncover and discard cabbage leaves, kombu and apple. Place remainder in a storage container and refrigerate.

before you make changes or adopt a lifestyle that’s good for you. In fact, you don’t really have to know anything! If you see someone doing something and can tell they’re benefiting from it, you can choose to do it for that reason alone. Learn as you go. When you get questions you can’t yet answer, feel free to share your own reasons for choosing your new lifestyle,

and let people know you’re still learning. Increase your knowledge base—not necessarily to become an expert on the subject, but because you want to know what you’re doing so you can refine your choices as you go. You might want to look at where the pressure to know everything came from. My guess is you do it as a way to feel good enough, or to justify yourself and your right to live the way you want in a way that might be different from those around you. Be brave, take a stand for yourself, and keep making choices that are good for you! You may not (yet) be an expert on the raw vegan lifestyle, but you are the authority on your own life and choices.


M

I have tried many times to control the amount of food I eat. I succeed for a while, then I go back to my old habits. I have never been able to sustain my healthy weight. Any suggestions?

A

Portion control is indeed an effective strategy in weight management because it makes it easier to burn more calories than you consume. A 2017 study in the Journal of the Academy of Nutrition and Dietetics found that, in a group of people who wanted to lose weight, those who paid attention to their food lost 37 percent more weight than those who were distracted while eating. Here are a few simple ideas that will help you become a more mindful eater: Keep your food out of easy reach. One study found that food intake was reduced when food sources and serving dishes were kept a reasonable distance from dining and lounging areas. Mentally measure your portions. It can help to learn to visualize how much 5 ounces of avocado is, or 3 ounces of walnut, or two teaspoons of oil, as you’re eating. When you measure in

First, get a strong conviction that raw is right for you. Then, rather than excluding yourself from others, include them in your new choices. this way, you actually control the portion with your mind. Eat in the light. A recent study at Cornell University found that those who ate in a darker room consumed 36 percent more food than those who ate in a brighter room. Eat at a slower pace. Eating a meal in 22 minutes helped students in an experiment to eat 88 percent fewer calories than those who ate the same meal in nine minutes. Drink a lot of water, particularly in between meals. At Hippocrates Health Institute, we do

not recommend drinking with a meal, or immediately before or after, because water could dilute the digestive enzymes and acids. Consider downsizing your dinnerware. Since people are used to eating 92 percent of the food on their plates, it can help to eat on a smaller plate. The size of the plate helps you visually to feel satisfied. Track your consumption. Incorporating an app or a journal into a diet has proven to help portion control because it brings in more awareness to the amount we consume.

Split the portions in restaurants. It is a good practice to share portions, or to take home a portion, when in a restaurant. (Avoiding all-you-can-eat buffets is a good idea as well). Of course, this is not a comprehensive guide. There are more creative ways that you can control portions. Try to customize any or all of these ideas to suit your unique preferences.

Eating only raw foods makes me feel like an outsider with my friends and family. How do I deal with that?

Food is not neutral. Eating is so intertwined with social bonding that your concern about feeling like an outsider is warranted. First, get strong in your conviction that raw is right for you. Then, rather than excluding yourself from others, include them in your new choices. Let them know how important your new way of eating is to you. Let them know that you need and want their support. My message: don’t let this become an area of exclusion, even if it is an area of differences.

I consider it a natural extension of the emotional work we do in the ongoing Healing Circle at Hippocrates Health Institute, and I refer guests to it. What is personal growth?

I

Personal development means connecting with parts of the self that have gone long unattended, expressing deep feelings long untouched. Good inner work helps a person encounter her deepest yearnings for loving relationships, fi nding purpose, loving the self, and then helps undo whatever keeps her from having them. The Living Course weekend is like a therapy pressure cooker. The work is personal, and we do it together. I tell people I love TLC. Hippocrates staff and guests are doing the TLC weekend, and graduates of TLC are signing up as guests of Hippocrates. The Hippocrates and the TLC communities are co-mingling, because we belong together, healing on all fronts.

Why do inner work?

We all accumulate “baggage” from unresolved issues from our own history. We often unwittingly continue with life strategies on how to get the love and acceptance we need, that we formulated when we were little. These strategies often have a “victim” quality to them because, in fact, we were victims when we were kids. We didn’t have any boundary-making skills and ended up carrying on the suffering or the “wrongness” of our family’s dysfunction. To protect ourselves from pain, we build defenses. We shut down our expression, we hide our feelings, we avoid confl ict, we struggle to please. Before long, that’s who we become: our limitations. Ironically, those same defenses keep us from the closeness and intimacy we really want. And worse, they make us sick.

Logistics of the weekend

The weekend starts with some didactic or theoretical material, including the Circle of Belief, the Spectrum of Feelings, and the Victim Triangle. Good, insightful stuff. Then the “redirect” begins: students take turns presenting themselves and why they joined the course. Then, the instructors, using finely tuned intuition, sensitivity, and coaching skills, guide each student to a place of feeling. Next come the emotional “stations” or “pods” where each student gets a chance to explore each color of the feeling spectrum experientially. The anger and fear pods tend to get loud, the energy intense. Finally, it’s possible to feel feelings at 100 percent. No more driving with the brakes on! TLC helps us, through challenging and fun exercises, navigate beyond our core beliefs and defenses that no longer serve us into the realm of choice and love.

The TLC family

Although emotionally corrective, loving experiences as adults don’t in and of themselves heal our childhood wounds, but they sure help. More than a substitute “good family” to replace or supplement our original family, TLC stands as a community of fellow travelers supporting fellow travelers. Each student in the course has three or four “angels”—volunteer TLC graduates who attend as assistants—to follow her through the weekend every step of the way, even during lunch. That kind of love and attentiveness makes it harder to retreat into self-isolation or checking out. We all need angels in our lives!

Sunday is the day of celebration of the hard work of Friday and Saturday. The group celebrates the students; the students celebrate themselves. “I fi nally got to the root of things, and I feel like I can take on the world!” one TLC graduate says. “When it comes to suffering, I know I have a choice now,” says another. e all enjoy eating and, on occasion, will eat when not hungry or overeat just because the food is incredibly tasty or because it enhances our personal or social experiences. An afternoon out with a good friend is certainly more enjoyable with coffee and a pastry. What would a good movie be

without a bag of popcorn? There’s nothing wrong with occasionally using food to enhance enjoyment and celebrate life. The problem arises when we use food in this way so often that we are overweight or our health is at risk. If you regularly eat when you’re not hungry, overeat at meals, or choose to

eat unhealthy comfort foods more often than you’d prefer, there’s a chance you’re eating has an emotional component to it. A craving—or an exaggerated desire to eat in the absence of true physiological hunger cues—represents an emotional appetite. Emotional hunger often feels the same as physical hunger.


M As an emotional eater, you may treat food as a coping tool in a number of ways: • To dull or tranquilize emotions that are difficult to cope with, such as anxiety, anger, sadness, frustration, hopelessness, loneliness, shame, guilt and even happiness and joy; • To calm yourself when experiencing unpleasant sensations such as nervousness, agitation or muscle tension; • To soothe and comfort yourself; • For pleasure, escape and excitement; • To handle stress; • To silence negative, critical, self-defeating thoughts and quiet your mind; • To manage feeling overwhelmed; • To distract yourself from low-motivation states like boredom, lethargy and apathy; • To procrastinate; • Because your life lacks purpose, meaning, passion or inspiration; • Because you feel so much regret regarding your life; • Because you feel deprived in life and want to have no limits; • To try to fi ll up an inner emptiness; • To reward or punish yourself; • To rebel against someone or something; • To ward off sexual attention; • To feel safe. Many emotional eaters believe their eating challenges are the result of factors outside their control. Some people simply love food. Some say they have no time to eat healthy and exercise while working full-time and raising a family. Others say there’s constantly unhealthy, high-fat food around them and it’s just too tempting. Others still say that eating healthy in restaurants without offending others is nearly impossible. While these factors are reasonable and may play a part in your overeating, they do not represent the true cause of your inability to regulate your intake. Emotional eating highlights a difficulty in connecting to yourself; in paying attention to your mind, body, and spirit signals; and in responding appropriately to meet your needs. It’s a sign that you’re lacking self-care skills that are generally learned in childhood. No doubt, your emotional eating has helped you cope daily with emotional states like anxiety and depression, general stress and self-defeating thoughts. But it isn’t a very effective long-term strategy for meeting your needs and desires. Not only does it lead to poor health and weight gain, but it also can never be a substitute for learned skills. Unfortunate-

ly, you won’t learn more effective self-care skills by going on another diet, either! Focusing on external solutions, such as the latest diet or exercise regimen, is like trying to solve the problem of a stalled train by giving it a new coat of paint and polishing its wheels. No matter how much paint or polish we apply, the train will remain stuck. We need to access the

engine that drives the train and accurately diagnose the problem. It’s our inner world of emotions, sensations, needs and thoughts that drive our behavior. 3 STEPS TO ADDRESS YOUR EMOTIONAL EATING 1. ASK YOURSELF:

“What am I feeling in this moment?” Perhaps you just had an argument with your spouse and now all you can think about is ice cream. Pull away from the kitchen and grab pen and paper. Sit upright and ground yourself. Feel your rear in the seat and your feet planted fi rmly on the floor. Jot down what you’re feeling—both emotions and bodily sensations. Research shows the act of writing down your feelings helps regulate your nervous system and interrupt wayward behaviors. You write that you’re feeling angry, frustrated, hurt, drained, lonely and sad. You notice your head hurts, your shoulders are tense and your stomach is in a knot. Ask the noisy, thought-generating part of your brain to be quiet for a moment. Notice your breathing. Inhale relaxation; exhale tension. Try placing one hand on your heart and one hand on an area of tension. You’re beginning to calm down.

2. ASK YOURSELF

“What do I need in this situation?” See if you can identify a need you can meet yourself, rather than one that involves someone else. For example, rather than writing that you need your spouse to be less reactive, you might write that you need peace and harmony in your relationship. Maybe you need hope that things can improve. It may take some flexibility and creativity. It’s often easier to meet physical needs than emotional needs. The more you let go of rigid expectations, the more you’ll open yourself up to a satisfying solution.

3. TELL YOURSELF

“My feelings are valid and my needs can be met.” Access an inner supportive voice—the mature, wise, kind and loving part of you. Using this voice, jot down a few validating, hopeful statements: “It makes sense to feel hurt and angry when my spouse yells at me. The truth is, we both prefer peace and harmony. Let’s revisit this discussion on the weekend when we’re both more relaxed.” When the urge for food is strong, there is an opportunity to practice and build new self-care skills. Every time you practice these skills, you’re wiring-in new neural patterns, making it easier to calm and set limits with yourself. If you’ve been looking outside yourself for the loving kindness and nurturance you crave, you will discover that your true source lies within.

gainst the backdrop of years of policy skirmishes that have corroded consumer confidence in government responsiveness to the health and safety of food for families and children, a new chapter in the

“food fight” was written with global impact. A momentous fl ip has occurred as the Monsanto infestation of our food supply and legislative manipulation began undergoing a major chelating of its lies and false claims.

Challenging the underpinning erosion of distrust of the American food supply, a federal court decision has checkmated the traditional patronage of certain ingredients in food by the food industry. After a contentious Daubert hearing of the credibility of testimony by

expert witnesses, a federal jury found that the Monsanto-Bayer classification and research on glyphosate was “out of bounds.” It also blew the “trumpets of integrity” on the failures of the industry to protect consumers, knowing full well that glyphosate is not safe for human consumption.


W In this case of Dewayne Johnson v Monsanto Company (3:16-md-02741-VC), the Plaintiff alleged that “exposure to certain Monsanto glyphosate-based herbicides, including Roundup, caused him to develop non-Hodgkin’s lymphoma (NHL),” according to the Miller Firm that represented Mr. Johnson. On Aug. 10, the jury returned a verdict of $289.2 million in damages for failure to warn consumers that Roundup weed killer causes cancer with exposure. Mr. Johnson was a groundskeeper for the Benicia Unified School District in California and used the herbicide regularly. The court focused on glyphosate as the main ingredient of Roundup. This milestone ruling is quite compelling as it underscores the crumbs of protective concern for consumers and families that Monsanto has purported for decades. The “big lie” was exposed and became an “inconvenient truth” when it was discovered. Monsanto “failed to warn of this severe health hazard [of glyphosate, and fi nding] that Monsanto acted with malice, oppression or fraud and should be punished for its conduct.” The company refused to warn consumers of the dangers of glyphosate and even fabricated studies that voided consumer protection and undermined the public good. This went against many reputable agencies and groups, such as The Hippocrates Health Institute, US Environmental Protection Agency, and the International Agency for Research on Cancer (ARC) that had been warning of the dangers of glyphosate as a carcinogen for years. The jury used its voice to

determined reliable on their methodology, the questioning proceeded with such experts as Beate Ritz, chair of epidemiology at UCLA, Dr. Chad Nabhan, a chief medical officer in the Chicago area, and Dr. Daniel Goldstein, an expert in lab results, to name a few. The industry was exposed for avoiding true transparency in labeling for years, favoring their own pockets over the health of citizens. It also was revealed in the trial that Monsanto Company employees “ghostwrote” scien-

The Monsanto lawyers, according to Business News, are planning to challenge this verdict. Besides the court decision, the industry continues to fight for position and take advantage of Washington’s emulsi-

fication of food policies. In the publication of the final rules pertaining to the guideline of GMO labeling in our food, the USDA relinquished any responsibility to properly inform consumers of CRISPR products currently on the market and down the road. Falling short of a policy masterpiece in favor of Consumer Rights and transparency of ingredients, again government has given way to the interests of industry over its citizens. On a lighter note, to emphasize the “Food Games” that continue unfolding in Washington these days, the Food and Drug Administration has officially resurrected a 10-year-old existing policy defi nition of milk as involving “lacteal secretion” from a cow. In doing so, it has strengthened the milk industry’s resolve to seek a greater market share by claiming that vegan products cannot use the word “milk.” “Almonds don’t lactate” cite proponents, therefore industry cannot use the word milk, calling such impostures “cow-nterfeits.” In fact, the issue has surfaced as the almond industry has outstripped the milk industry’s utter failing market share as healthy substitutes have grown at a rapid pace of 61 percent over the past five years. The milk industry wants to wrestle back its narrative, thinking that cracking down on the use of the word will boost consumer sentiment.
