Catering – Professional Cookery Level 1
This is an introductory course covering the basic essential skills of professional cookery to enable you to develop a career as a professional chef.
This course will provide you with an introductory pathway for further study on the Level 2 Diploma in Professional Cookery, an apprenticeship or entering into employment. The qualification covers all aspects of basic cooking methods, an introduction to the catering industry, food safety and health and safety. You will learn to work as part of a team in the College’s excellent industry standard kitchen and restaurant, and carry out a period of industry work experience. During the course there will be the opportunity to take part in annual events and competitions which will enable you to gain valuable experience.

Course Content Topics you will cover include: • Introduction to Employability in the Catering & Hospitality Industry • Food Safety in Catering • Health & Safety Awareness in Catering • Prepare & Cook a Variety of Food
Assessment is by practical tasks on a continuous basis and industry related assignments, projects and written assessments, which are assessed through internal and external assessment papers. All full-time students are required to study maths and English at the appropriate level. Please see page 8 for more details.
Entry Requirements • GCSEs at grade E (grade 2) or above in English and maths • Successful interview and initial assessment • You will need to demonstrate an enthusiasm and commitment for this subject area
