Many people think that a chill blaster merely freezes… nothing could be further from the truth! Store for longer The bacteria normally present in a food product proliferate most easily in the temperature band of between +65°C and +10°C. This is precisely the situation when a product that has just been cooked is allowed to cool at room temperature. Quick cold technology, instead, protects from bacterial attack, lengthening storage times and keeping the food’s appearance, quality, and organoleptic characteristics unaltered.

The soft, hard and freezing chill blasting cycles can be carried out in 2 different ways:
1 automatically by means of the probe through the 2 core, supplied as standard with all models
manually by setting a user-defined fixed time
In both cases, the change to positive (+3°C) or negative (-20°C) storage at the end of the cycle, is automatic. You can begin the chill blasting/freezing cycle in the evening, before leaving work, and return the following morning to find the product perfectly chill blasted and stored. Where chill blasting is repetitive for product type and quantity, a customised programme can be memorised with a pre-set time. Simply recall the programme to perfectly chill blast the product, without having to use the needle probe. 99 programme memories.

Positive soft and hard chill blasting It is important to use the most appropriate chill blasting system. The soft cycle is ideal for delicate, lightweight and thinner products: food temperature is lowered quickly but without damaging the outside. The hard cycle is perfect for denser products, with high fat content, or those to be stored in large pieces. In both cases, the product is cooled to a core temperature of +3°C.

Negative chill blasting (freezing) Ideal for increasing a food’s storage life (by weeks or a few months), quick blast freezing preserves the product’s original appearance, aromas and flavours, and stops macro crystals forming, thereby keeping quality and texture intact. Innovative technology, flexibility of use and quality results, come together to make Fast Master the traditional ice cream maker’s dream. The high refrigeration power of the appliance equipped with thermostatic valve, means that the product can be stored at -18°C and, as required, intense cooling cycles used to -30°C (Fast-Freezing function).
Storage Ample storage capacity and perfect temperature distribution means you can not only store ice cream at -18°C, but also semi-freddi, mousses, cakes, Bavarian creams and single portions.
Fast Freezing By placing the freshly-prepared tubs of ice cream at -30°C for a limited period of time, the surface will harden - particularly useful for products to be displayed for sale i-f the product extending out of the tub, avoiding its early melting.

Organisation
During creaming, the liquid mixture is quickly brought down to a temperature of -7/-10°C, and the solidpaste blend is formed, that we recognise as ice cream.
Ice Chill is also suitable for the chill blasting or freezing of the ingredients and raw materials to be used in production. Exploit this advantage to buy greater quantities of products in season, to be used at a later date, with the knowledge that you are still benefitting from a fresh, healthy, natural ingredient.
Macro crystals In order to reach a serving temperature of -14/16°C, some of the water present in the ice cream, must freeze. If this phase is too long, we run the risk of small water particles joining together to form macro crystals, with the consequence of a ‘rough’ product, that is not creamy, and with an unpleasant grainy feel.
Micro crystals The temperature must fall very quickly: by doing this, fine, regular crystals are formed, the ice cream is softer, more easily served, and pleasing to the palate. Ice Chill has been specifically designed to accomplish this delicate task in the shortest time possible, guaranteeing a high quality result.
Flexibility You can freeze the whole tub and store the product in a negative storage unit for later use, or alternatively choose to harden the surface of the product quickly, preparing it for immediate sale.

Positive soft and hard chill blasting It is important to use the most appropriate chill blasting system. The soft cycle is ideal for delicate, lightweight and thinner products: food temperature is lowered quickly but without damaging the outside. Choose whether you prefer the motor to the right or left, with no price increase. The refrigeration system will always be kept a suitable distance from heat sources, with benefits in terms of efficiency and energy-saving.
Pastry counters are 80 cm deep, accommodate 7 60x40 pans per compartment, with operating temperatures of -2°+8°C or -15°-20°C, and hot gas defrost (electrical in the remote and negative versions). The single unit structure, with 60mm thick insulation, also includes the motor compartment to reduce noise to a minimum.

The Ice Chill blast chiller extends storage times up to 5/6 days, whilst keeping shape, fragrance and flavours unaltered (storage up to 4/5 months with the freezing cycle).
You can blast chill cooked products, fresh fruit, raw materials and semi-worked products at +3°C, or freeze at 18°C to create a ‘stock’ to be used even several months later - with the absolute certainty of maintaining quality.

Freeze whatever you like Uncooked croissants and semi-worked products in general are still widely stored in negative temperature freezers (-18°/-22°). This has 2 negative effects:
Excessive use of the freezer cabinet, which was designed to store pre-frozen products, or to freeze small quantities. The process is therefore very slow, taking more than 12 hours, with high Energy consumption following extended use of the compressor. The average life of the appliance is inevitably reduced.
Large ice crystals form. This takes place following the joining of water particles present in the product, due to the excessive duration of the freezing phase. This damages the physical make-up of the product, and leads to significant dehydration upon defrosting. With Ice Chill, on the other hand, you can freeze whatever you like (raw or cooked food) in less than 240 minutes, and in complete respect of the product structure. Weight loss is avoided, and you are guaranteed that that original appearance and consistency will remain unaltered. You will be able to carry out many blast chill cycles every day, increasing production and your ability to successfully deal with particularly intense periods. The frozen product is appropriately stored in the freezer cabinets.

By combining LevTronic with the use of an Ice Chill blast chiller, you can freeze your doughts, thereby extending storage times without affecting the form, consistency and organoleptic properties. You can plan your work, improve staff management and rationalise the purchase of raw materials.
Everything ready, and right on time
Superior quality
Simply set the temperature, humidity level and time. The low temperatures used allows you to slow and block the fermenting of yeast cells, reactivating them later, in order to obtain the proven dough precisely when you need it.
The 2 separate proving phases, and 10 progressive increases in temperature come together to extend the action of yeast cells. Aroma, fragrance and flavour will be exalted, to give an excellent end product.

How to use
The active humidity control during proving stops the dough from drying out, and prevents superficial cracks from forming. The humidity level can be set from 60% to 95% depending on the percentage of water contained in the product.
In automatic mode, the duration of a given phase and the move onto the next phase, is set by the processor. Cycles can be repeated weekly, taking into account the day of the week on which the bakery is closed. In manual mode, you decide which phase to start and how long it is to last. You can use LevTronic as a normal refrigerator, or as a simple prover.

The PastryLev counters refrigeration system has been specifically designed to yield a completely uniform temperature and optimal humidity levels for the storage of small cakes, mousses, pasta and bases for fresh or blast chilled sweets.
Choose whether you prefer the motor to the right or left, with no price increase. The refrigeration system will always be kept a suitable distance from heat sources, with benefits in terms of efficiency and energy-saving.
Pastry counters are 80 cm deep, accommodate 7 60x40 pans per compartment, with operating temperatures of -2°+8°C or -15°-20°C, and hot gas defrost (electrical in the remote and negative versions). The single unit structure, with 60mm thick insulation, also includes the motor compartment to reduce noise to a minimum.
The stand alone structure allows you to exploit the version without a worktop, creating compositions with other ambient and refrigerated storage units. LevTronic Roll-in quick and practical The correct movement of pans and trays is extremely important in a well-organised pasty and bakery laboratory. RollTronic guarantees a rational, efficient work, with no time-wasting The Roll-in LevTronic cabinets allow you to exploit the practicality of the stainless steel pan-carrying trolley (optional) to move great quantities of product. When ready to bake, simply bring the whole trolley up to the oven, and place the pans in easily. Space is of fundamental importance in any laboratory.
The Roll-Tronic cabinets are particularly compact. The version for the 60x40 trolley takes up just 815mm depth, the smallest of its type. One or more Roll-in Pastry storage units can be placed next to Roll-Tronic.
