It’s with great pleasure that I welcome you to yet another edition of Hotel Insider.

As with all our previous editions, with this issue too, we hope to inform and entertain you with interviews and insights from various industry experts while making sure you are up to date on important tourism happenings. This time in our Conversation section, we have a chat with Marteyne van Well, the Regional General Manager of Six Senses Laamu and Six Senses Kanuhura. Marteyne van Well, the Regional General Manager of Six Senses Laamu and Six Senses Kanuhura, is no stranger to the luxury hospitality market. With over three decades of experience in the industry – more than a third of which has been spent in the Maldives – Marteyne brings a unique perspective on the Maldivian tourism sector.

An avid diver and a passionate conservationist, Marteyne shares with us her experiences, her advice for up-and-coming young people in tourism as well as the way luxury and sustainability are defined and interwoven into the Six Senses’ operations and guest experience.

Hotel Insider: You’ve been in the hospitality industry for several decades and worked in multiple cities around the world. What has it been like?

Marteyne: I’ve been in the hospitality industry for over 30 years, and I consider myself to be one of the luckiest people out there because of it. I’ve had the good fortune to meet some really amazing people through this work; people that you can learn from, be inspired by, and can grow together with.

I’ve been in some really stressful, powerful roles, working in places like the Plaza Hotel in New York and the Willard Hotel in Washington D.C., when I was managing the diplomatic market and in charge of state head visits in the U.S. I’ve also done really fun jobs where I’ve worked in skiing alps as well. However, my longest service has been to Six Senses. I’ve been with the company for over 16 years and most of that time has been spent here in the Maldives. I think the Maldives is possibly one of the most beautiful countries in the world, and out of all the places I’ve worked at, it’s my favourite place to be.

Hotel Insider: How do you define luxury at Six Senses Laamu and Six Senses Kanuhura? And how do you strive to set that particular brand of luxury apart from

other resorts and properties in the Maldives?

Marteyne: At Six Senses, we want to make certain that people are able to reconnect and be rejuvenated with their senses. We offer empathetic service, pioneering wellness and sustainable practices, both of which are really woven into everything we do.

The Maldives is growing and there are a lot of incredibly beautiful resorts that offer luxury where it might be defined in terms of design, products, and technology. But at Six Senses, we define luxury as the opportunity to reconnect with yourself, to have choices in how you wish to explore your journey. Especially in a destination such as the Maldives, we offer the opportunity for our guests to be educated about something that they might not be exposed to in their daily lives.

All Six Senses resorts and hotels are in places of incredible natural beauty, and we offer meaningful experiences for people to reconnect with themselves, with others and the world around them. None of our services are cookie cutter or one size fits all. Manager overseeing both Six Senses properties in the Maldives, what does your job entail? What’s your vision for both resorts under your leadership?

Marteyne: I think my vision for both resorts is to ensure that we continue to do what we do, and we continue to do it well.

Six Senses Laamu and Six Senses Kanuhura are completely different properties. The experience offered in terms of empathetic service, reconnecting, sustainability, and wellness – which is interwoven into everything we do – that’s the same at both resorts, but the look and the feel is not necessarily the same. At almost 14 years of operations, Six Senses Laamu is more of a legacy while Six Senses Kanuhura is a newer version of this. It opened under our ownership in September last year after substantial renovations to the previous resort. My role is one of support, of making sure that both resorts deliver the authentic Six Senses experience and that it is something that we can be proud of. It’s about maintaining the culture, the ethos, and making certain that the two resorts complement each other.

Hotel Insider: Sustainability is a very important factor for Six Senses and your initiatives in both Laamu Atoll and Kanuhura island reflect that. Could you tell us about it and the impact that it has made on local communities as well as visitors to the Maldives.

Marteyne: One of my all-time favourite quotes is by Baba Dioum, which goes – “In the end, we will conserve only what we love; we will love only what we understand, and we

will understand only what we are taught.” So, that to me was part of my vision for what we do here at Six Senses.

We wish to educate and engage the hearts and minds of our staff, local communities, guests, and people that we interact with, making certain to not only tell them about the beauty here but about the importance of conserving it. At both Six Senses Laamu and Kanuhura, we have Earth Labs where you can learn how we turn waste into wealth and how you can eliminate single use plastic from your life. At Six Senses Laamu, we are particularly proud of our Sea Hub of Environmental Learning in Laamu (SHELL) that has just celebrated its one-year anniversary. This building highlights our conservation efforts and is named partly after one of our marine biologists, Shelly, who unfortunately passed away and was instrumental in setting the foundation for it. We have currently had twelve local schools come and visit the SHELL, as well as other key atoll stakeholders including, local Women’s Development Committees (WDCs) and members from local councils.

Our passion is to share knowledge and to make certain that the next generation is given the tools to go forward with it. We are continuously inviting experts to grow and develop our processes, and we are proud of the experiences that we have developed with the local community.

Hotel Insider: As a woman in a predominantly male-dominated field, especially here in the Maldives and as a General Manager, what has your experience been like? Is there any advice you would like to give to other young people who see your journey as an inspiration?

Marteyne: I’ll be honest, it’s not always easy. But when you’re surrounded by a team that you trust, who are transparent, open, and honest, it works. For any woman in the Maldives who would like to come into a senior position in the industry, there is a certain learning that you as a woman need to do. You have to understand the culture and make sure that you appreciate and understand what it stands for.

I would say to stick to it. There will be good days and bad days but don’t give up on the

bad days. Things will go wrong, but when it does, you have to be willing to move forward from it. Figure out what it is that you want to achieve, be resilient, speak up and seek advice. I love it when young hosts here ask me for advice; it brings me great pride to be able to offer them support. I hope that with more time, more women come aboard to the industry.

Hotel Insider: You’ve been in the Maldives for more than 10 years. What changes would you like to see in the Maldivian hospitality industry in the coming years?

Marteyne: The Maldives is definitely growing, and there are many different ideas around how to do that. In my opinion, despite all these changes, the authentic Maldivian beauty should not be compromised. While there is value to being open to visitors of all sorts of budgets, the exclusivity of having access to beauty and nature and being able to reconnect with it is of incredible value, and I hope as the Maldives grows and develops, it does not happen at the expense of what makes the country so beautiful.

I also hope to see more focus on developing our staff. I think it’s very important to develop people, especially those working in the tourism sector in the Maldives and give them the opportunity to have cross-cultural experiences that people from Asia, Europe or even the United States might have access to. It allows people the chance to grow into their roles and advance as well. While education is an important aspect, there is also value to being able to experience other countries and cultures without it negatively impacting your own culture, and that exposure will only enhance people. If I personally have a wish, then it would be there to be even more focus on that in the years ahead.

Accessibility at the Polls: Realizing the Vision

for Independent Voting with Innovative Template

September is when the Southwest monsoon sweeps strong across the Maldives, weaving a tapestry of contrasts – a fusion of life-giving rains and choppy seas, of quiet introspection and vibrant celebration.

It is election season, and the islands and cities are painted with vibrant party colors, the streets are adorned with flags of political parties, campaign music is playing, and gathering spaces are attracting people from all walks of life.

On the morning of election day, Mohamed Hamid makes his way to his polling station, guided by the voices and directions of friendly passersby. He senses the excitement in the air, the energy of the city coming alive with civic duty. At the polling station, he is handed his ballot paper, and a plastic template - a tactile masterpiece crafted to ensure an independent voting experience for people who are blind or with visual impairments. He feels it. The stencil features small, positive marks next to each candidate number, in character and Braille, allowing him to identify his preferred candidate by touch alone.

One of the primary design principles behind the template was to seamlessly integrate it into the voting process. Voters can place the tactile stencil on top of the official ballot paper. This simple yet effective solution ensures that people who are blind or with visual impairments can engage in the electoral process autonomously like any other voter, preserving their privacy and dignity.

With determination, Hamid places the official ballot paper under the proportional template. His fingers trace the tactile indicators, and he confidently selects his presidential candidate. The act of marking his choice is not just a vote; it's a symbol of empowerment and inclusion. He feels the weight of history on his shoulders, knowing that he is part of it.

As he casts his vote, he embodies the essence of democracy in its purest form— ‘of the people, from the people and by the people’ - ensuring that no procedural, physical or behavioral attitudes hinder or narrow the rights of a community of people who are blind and with visual impairments. His unassisted vote is a testament to the progress for disability inclusion in the Maldivian electoral process, joining other countries making reasonable accommodations to ensure voting

is accessible for all.

This was a transformative amendment to the Electoral Act (11/2008), implemented after a recommendation by the Blind and Visually Impaired Society of Maldives (BVISM), whose members have been actively advocating for this change. They had meetings with the Human Rights Committee and the Independent Institutions Committee of the Parliament to discuss the issue of vote secrecy for an electoral base who are blind and with visual impairments.

"Casting a secret ballot freely and of their own free will has long been a dream for people living with visual disabilities. One of the most challenging and successful achievements of our Blind Association is ensuring that people who are blind and with visual impairments, who cannot perceive the possibility of a secret ballot, obtain this right. Finding a way to vote using a template without relying on someone else, within the appropriate legal bounds, is an important opportunity that future generations can also take advantage of," says BVISM.

"Strengthening institutions and bridging the state with people is at the core of our governance offer. Our support extends unequivocally, and we could not possibly turn down the request for assistance from the Elections Commission, nor of those championing the rights of persons with disabilities. And we will keep being there through future cycles, shaping every facet of public administration,” says Enrico Gaveglia, United Nations Development Programme’s (UNDP) Resident Representative in the Maldives.

UNDP has been happy to facilitate the process, through financial support for the initiative with the generous backing of the Department of Foreign Affairs and Trade (DFAT) of Australia.

"The implementation of stencils facilitates meaningful and equitable political engagement for individuals with visual impairments. This represents a notable achievement for Maldives, and Australia takes great pride in supporting democratic participation for all," relays David Jessup, Australian High Commissioner to the

Maldives.

The process was fully supported by the Election’s Commission of Maldives (EC). On their part, the EC's efforts to enable unassisted voting for people with visual impairments began with an understanding of the demographics. Statistics showed that the areas of Alif Dhaalu, Haa Dhaalu, Gaafu Dhaalu and Male' atolls had the highest populations of blind and visually impaired individuals. It was in these very communities that the new template would prove its worth. Across these areas, 45 voters with visual impairments exercised their democratic rights independently thanks to this novel template advocated for by the disability community and introduced by the EC with the support of UNDP Maldives and DFAT.

"The Elections Commission of Maldives is dedicated to safeguarding the rights of all voters and enhancing the accessibility and inclusivity of the electoral system. The introduction of the stencil represents a significant and important advancement in the electoral process," the Commission has stated.

As voters who are blind and with visual impairments from across the Maldives exercised their right to vote freely and independently in the first and second rounds of the Presidential Elections last year, they sent a resounding message that disabilities should never be a barrier to civic participation. A responsive and inclusive democracy can be ensured by centering people for civic engagement, especially those with barriers to participation in society. With innovative solutions like this template, Maldivian democracy has taken a significant leap towards inclusivity, ensuring that every citizen's voice is heard, felt, and counted during elections.

The monsoon is indeed a time when the islands reveal their truest selves, when the pulse of nature resonates in every corner. In this place where land and sea converge, the monsoon is more than just a season; it is a living, breathing entity that witnesses the shaping of destinies.

We have a chat with Sofwan Ahmed, the current MD of MHA, where we touch on the secret of the company’s lasting success as well as the ways in which they are adapting to stay ahead of the game in the rapidly evolving digital landscape of business.

MHA Private Limited is an iconic veteran company in the Maldivian F&B scene. With over 50 years of experience leading the market, the company is a top importer and distributor of internationally renowned products.

Hotel Insider: You come from a highly tech-driven, entrepreneurial background. How do you translate that into your management of such an institutional F&B company as MHA?

Sofwan: I joined MHA during the peak of the COVID-19 pandemic, at a time when businesses had to operate behind closed doors. Established companies such as MHA had to rapidly adopt technology and conduct operations differently from how it has been doing for the past five decades. It was an unprecedented and challenging period. My experience in tech greatly helped in managing the business during those turbulent times and transformed it to what it is today – a highly scaled, fast-moving consumer goods (FCMG) business that is heavily data-driven.

Knowledge about technology, digital business, and transformation has become more important for leaders now than ever before. With emerging technologies such as AI entering every facet of our work and lives, every company in any industry today will be forced to become a tech company. I believe

that those who adopt tech will thrive and those who don’t, will not survive. Likewise, I have been urging our company to not be threatened by technology, but to embrace it. Looking back at my entrepreneurial background, it taught me a lot about building leaders. Running a business such as MHA, which is currently seeing a 30% year-onyear growth, continuously demands new leaders to take on the leadership roles generated as the business scales. My previous experience has greatly helped in shaping the way I develop future leaders in the organisation who embrace change, innovation, growth, and taking calculated risks.

Hotel Insider: How would you describe the transition between such jarring industries? Was it difficult?

Sofwan: Between the two industries – information technology and F&B – technology was certainly the more demanding industry for many reasons. First off, technology is something that changes very frequently, so we always have to be up to date every day. Also, buying decisions involving technology are high-involvement purchases where there are three phases of sales: the pre-sale, the sale, and the aftersales. It was a more complex industry where any purchasing decision involved convincing multiple parties such as consultants, contractors, authorities, architects, and

finally the actual buyer. So, coming from such a complex industry, F&B has certainly been an easier move for me.

Hotel Insider: MHA Private Limited has been leading in the industry for over 50 years. What’s the secret to your lasting success in the industry all these years?

Sofwan: The reason for MHA’s success is our integrity, which has allowed us to gain the trust of our customers and other stakeholders for generations. There are business practices and ethics that we standby and have followed since the company was founded by the late Mr. Hussain Abdulla.

Hotel Insider: MHA was also one of the first companies to be granted import licenses in the Maldives. How has importing goods and especially distributing them to different areas in the Maldives changed in the last few years?

Sofwan: The economy has grown considerably since the 1970s with most growth seen in the last two decades. The growing economy paved way for new businesses which has led to healthier competition. We’ve seen more specialisation in the economy and even the food industry. Likewise, MHA has also taken a more specialised approach to doing business rather than the general trading strategy we have implemented in the past. We now focus more on retail for the general trading line and have specialised in providing ice cream brands for hospitality and businesses.

In the last few years, the biggest change has been digitisation. We’ve also seen a growing interest among businesses in going for frozen products such as frozen dairy and bakery items which can deliver better quality at lower prices.

Hotel Insider: You have an array of renowned international brands under your portfolio, what do you focus on when bringing in new products?

Sofwan: We always strive to identify new needs in the market and keep an eye out for innovations in the food industry. For example, in the consumer business, we’ve seen a growing demand for healthy,

but convenient, easy-to-make, food.

For businesses, we understand that the Maldivian landscape is becoming even more competitive and that businesses need the best possible quality at the lowest possible cost. There are food technologies available today that can help achieve this. One such product that we import is frozen dairy goods, which is produced in Europe and shipped in a frozen state in larger quantities, enabling us to deliver high quality at low prices.

As such, over the past two years, we’ve collaborated with select hotel operators to offer premium ice cream brands such as Häagen-Dazs, KitKat, Nestlé, and London Dairy in customer-facing avenues like bars, public spaces, and even in minibars inside rooms. These have been very well-received and everyone that we have collaborated with so far has either continued or expanded their offerings. We are currently open for collaborations and can guarantee zero capital costs for those who partner with us.

Another important factor that we consider is compliance. Going with a renowned brand gives us the assurance that the regulatory standards as well as other industrial practices are followed. So, one key focus when bringing in new products is to ensure that it’s a product that’s established globally and adheres to the industry’s best standards.

Hotel Insider: As a wholesale supplier

for the resort industry, how have you had to adapt to the changing guest preferences and culinary practices in the market?

Sofwan: We have had to focus more on the evolving health and wellness trend that’s taking the market by storm now. We’ve seen a rise in demand for health-conscious products, including organic, gluten-free, vegan, low-calorie products and we foresee that the need for meat substitute foods will also grow in the future.

Some of these industry requirements have prompted us to invest in infrastructural upgrades; the safety and quality standards of products are now higher and hence more rigorous control measures are needed.

Hotel Insider: Based on your expertise, how important is it that suppliers adapt to the latest digital innovations and trends to stay ahead of the game?

Sofwan: A business’s ability to adopt technology will decide whether they will stay in the game, and how well it’s been integrated into the business processes will define how far ahead they can reach in the game.

Technology is intertwined into every aspect of our lives. It is no longer a competitive tool but a necessity. We now have the means to collect and analyse huge amounts of data, which is the case for the F&B industry, and particularly the case for the hospitality industry as well. This data, when used responsibly and effectively, can lead to huge cost savings and operational efficiencies.

The need for technology will be further amplified by the entrance of Gen Z into our workforce and consumer base; this generation was born into the age of automation and AI, and they will demand that their workplace and hotel rooms to be as smart as their own devices. This is especially true for South Asia where a greater proportion of our population falls into this category.

We have a chat with TJ Joulak, the recently appointed General Manager of Waldorf Astoria Maldives Ithaafushi. An industry veteran with over 25 years of experience in the luxury hospitality sector, TJ is a celebrated GM who has won multiple accolades for his leadership across several properties in different countries. Here, TJ shares with us his perspective on the Maldivian tourism industry, what sets Waldorf Astoria Maldives Ithaafushi apart and his approach to managing different luxury properties.

Hotel Insider: You’ve been in the luxury hospitality sector for a number of years and now you’re at the helm of Waldorf Astoria Maldives Ithaafushi. What got you interested in this industry?

TJ: My career in luxury hospitality spans over 25 years, during which I've had the privilege of working across various markets in Europe, Africa, Asia, and the Middle East. My interest in this industry stems from a deeprooted passion for serving customers and creating memorable experiences. Having been born into hospitality and having grown up in it, I've always found fulfilment in being at the service of people. I’ve had the opportunity to travel extensively, experiencing different cultures and cuisines, and I have always been passionate about sharing all that I’ve learned with our guests, enriching their experiences, and living to see guests smile.

Hotel Insider: The resort also has a thriving culinary scene with 11 restaurants and bars, including the world-renowned Japanese restaurant, Zuma. How important is the role of F&B service – and providing exceptional dining experiences to guests –in an industry like this?

TJ: We recognise the significance of F&B services in enhancing the overall guest journey. An unmatched culinary experience is what we offer at Waldorf Astoria Maldives Ithaafushi. With 11 distinct restaurants and bars, each offering a unique concept, we want our guests to savour each moment. Hotel Insider: You’ve worked all over the world, in very different hospitality markets. How would you describe the tourism industry of the Maldives compared to that of other countries?

TJ: The tourism industry in the Maldives is unique compared to other countries due to its enchanting natural setting and focus on luxury hospitality. Having worked in various markets around the world, and having lived in 11 countries, I bring a global perspective to my role as GM. The Maldives offers a unique experience with its pristine beaches, crystal-clear waters, and unparalleled beauty. As a destination, it offers an exclusive and indulgent experience for travellers seeking luxury and relaxation, while immersing in Maldivian culture, setting it apart from other tourism markets around the world – and truly a one-of-a-kind paradise!

Hotel Insider: You’ve won a lot of awards for your work as a GM in the hospitality industry. As a GM, what do you focus on when you join a new property?

TJ: When joining a new property as a

GM, I focus on several key areas. Firstly, I prioritise understanding the property's unique strengths, and areas of opportunities. Once I have the grip of the product, I place a strong emphasis on empowering my team members to be flexible and creative. It is imperative for me that the team at all levels believe in the best and thrive to be the best and ask for learning and teaching. At the end of the day, they are the key to every successful organisation, and I enjoy my time with everyone. Lastly, we try to find ways to elevate the guest experience by implementing innovative ideas and advance personalised services, all while upholding the brand’s standards of excellence. Finally, I try to learn on a daily basis to improve myself to be able to work better.

Hotel Insider: What’s your vision for Waldorf Astoria Maldives Ithaafushi under your tenure?

TJ: My vision under my tenure is to continue building upon the resort’s legacy of delivering unparalleled personalised experiences for every guest. I aim to introduce new concepts and experiences, to elevate the property to new heights by cultivating a culture of innovation, creativity, and excellence amongst the members of the team. The evolution of the food & beverage industry

The age of luxury travel is now, and discerning travelers from every corner of the world seek experiences designed around comfort, wellness and cuisine. Hoteliers keep raising the bar on what it is to provide an indulgent getaway for their guests, and at the core of these experiences, is gastronomy.

Maldives is now known as the epitome of destination tourism, and Maldivian resorts are known to provide comprehensive gastronomical experiences for their guests. The ability of the Maldivian food and beverage sector to adapt to contemporary expectations is what keeps the country high on the list. In order to maintain this status ethically, Maldivian resorts keep adopting sustainable methods to source their own produce and minimize their carbon footprint on the planet.

The F&B industry through the years

Back in the 80’s, the tourism industry was seasonal and F&B was not a stand alone industry. The handful of F&B suppliers at the time, who were predominantly souvenir businesses, slowly increased and extended their product portfolio and began catering to both the tourist and domestic market.

The F&B market was miniscule and therefore had little competition within it, which allowed businesses to grow with ease and meet the requirements of the market. The business community, whether intentionally or subconsciously, worked collectively and allowed each other the space to expand.

In contrast, the current F&B market includes large suppliers who provide almost the complete F&B solution to the resorts, guesthouses and catering sector. In terms of volume and supply range, the F&B sector has seen rapid growth, with companies like Standart & Origin, BBM, Fantasy, Happy Market and Euro Marketing at the forefront. In the past, resorts had to source the majority of their F&B requirements from abroad. Now, they can acquire almost all the F&B items they require locally, and at a far more affordable price than before.

Sustainability in the tourism industry

The global perspective on what we should consume has changed dramatically over the past decade. Sustainable dining choices and food production methods has prompted the farm-to-table movement that affirms ethical dining practices, organic and health conscious menus and the quality of culinary creations. Most Maldivian resorts have adopted the practice as well.

Soneva received the Terra Carta Seal from the Sustainable Markets Initiative last year, for their commitment to sustainability initiatives

at all their properties. At Soneva, their waste centers convert food matters and kitchen waste into 20,000kg of nutrient-rich soil for their thriving organic gardens. Their chefs and garden staff are trained to prep vegetable beds, make compost and maintain worm farms. Exclusive plant-based menus are made from the produce they source from their own farms and their chicken farms provide fresh eggs daily.

Movenpick Resort sources some of its produce from its very own organic garden. The garden grows vegetables and fruits that provide almost 70 kilos of their own produce every month. Kitchen waste and dry leaves are composted, providing nutrients for the plants and trees in the resort’s landscape. Wastewater is treated through their own sewage treatment plant and recycled for watering the island’s flora.

Sheraton Maldives has a water bottling plant on site that uses reverse osmosis technology to purify seawater, eliminating the need for water transportation from the mainland. The purified water is then bottled in reusable glass containers and made available to guests, saving 375,000 plastic bottles annually. The resort acquired the Green Globe Certification this year for their conservation efforts.

Patina Maldives is home to an organic permaculture garden that cultivates fresh pesticide free produce and all food waste is turned into organic fertilizer through bio-digesters. Their plant-based restaurant Roots encourages guests to adopt a more conscientious lifestyle. Patina Maldives received the EarthCheck Silver Certification last year.

F&B trends in the Maldives

Discerning travelers live by epicureanism and the expectation of reveling in delicious cuisine and novel dining experiences on their travels. Maldivian resorts indulge their guests with innovative offerings that rival world class dining experiences.

Ithaa Undersea Restaurant at Conrad Maldives Rangali Island is submerged 16 feet below the ocean, encased in glass walls and is the world’s first underwater eatery. The restaurant offers 180 degree panoramic

views of the surrounding coral reefs and its vibrant marine wildlife. Exclusive delicacies and cocktails decorate the menu of this extraordinary dining experience. The restaurant received three Global Awards at the 2017 World Luxury Restaurant Awards. The other underwater restaurants in Maldives are Subsix Underwater Restaurant at Niyama Private Islands Maldives, SEA at Kihavah Huravalhi Island, Undersea Restaurant Maldives at Hurawalhi Island Resort and Minus Six Meters at OZEN by Atmosphere.

Niyama Private Islands is home to Nest, a restaurant built in the middle of the lush jungle flora of the island. Guests can reach the restaurant by strolling along a wooden pathway that winds through the forest's thick trunks. The restaurant is built under the canopy of the island's aged banyan trees. A multi-level tree house with dining pods cocooned within lush greenery. Tables are set under the dense foliage on the forest floor or elevated six meters up in the treetops. The restaurant features a menu with a fusion of Asian and international flavors, created by sourcing the finest ingredients, both locally and internationally. The restaurant’s cocktail menu is forged from traditional Asian ingredients derived from their in-house Spice Garden.

JA Manafaru won the “Best Culinary Resort” award at TTM 2023 and the resort enhanced their culinary offerings with an upgraded teppanyaki grill with a skilled master chef. The Teppanyaki Experience allows guests to choose from the best seafood the region has to offer, or a choice of meat from the resort’s Ethical Meat program, which allows travelers to know where their food comes from, and that animals are treated humanely during the rearing process. The menu caters to vegan/ vegetarian, gluten free, dairy free, as well as low-carb lifestyles.

Anantara Kihavah Maldives Villas introduced an Epigenetic Dining concept for its guests this year. The Epigenetic Dining concept begins with a non-intrusive genetic test that determines the body’s level of nutrients, vitamins, minerals, essential amino acids, fatty acids, antioxidants, and contaminants. The resort’s culinary teams and a nutritionist

will then ensure that every dish the guests consume align with their wellness goals, based on their epigenetic results.

Residencies & visitors

The beginning of the year saw Joy Island hosting its first Gourmet Week of the year, held in collaboration with renowned Italian Chef Theo Penati of Pierino Penati’s Restaurant in Brianza. The resort organized a one of a kind Michelin Star dining experience for their guests, with a range of the chef’s signature dishes.

The Ritz-Carlton Maldives, Fari Islands is hosting the third edition of their Behind The Bar series this year. Renowned bartenders from famed bars around the world will be in residence throughout 2024. Hampus Thunholm from Röda HusetStockholm, Sweden; Paul Aguilar & Maros Dzurus from HIMKOK, Oslo, Norway and Matteo Cadeddu from Opium, Bangkok, Thailand are some of the celebrated figures to grace the resort for the series.

Six Senses Kanuhura welcomed celebrity chef José Pizarro for two exclusive dinners at The Point, the resort’s Spanish restaurant, in January. A Spanish-influenced menu with sharing plates of tapas, a wine bar and a live cooking station were included in the dinners. The culinary team of the restaurant used fresh ingredients from their organic garden and locally sourced and sustainably caught fresh fish in their dishes.

Patina Maldives began the year with visiting Michelin Star Chef Bo Bech who graced Kōen, their Japanese and Nordic cuisine restaurant. Barista Goran Goric then installed pop-ups, consisting of latte art masterclasses and coffee cocktail menus, around the island. A Balthasar Ress Wine Journey closed January with a journey into the world of winery from the legendary Rheingau.

Celebrated Chef Eyck Zimmer, who won the Meilleur Ouvrier de Grande Bretagne in 2000, British Chef of the Year in 2006 and Portuguese Chef of the Year in 2008, was in residence at OUTRIGGER Maldives Maafushivaru Resort early this year. In collaboration with Executive Chef Christopher

Long, and his culinary team, Chef Zimmer designed two five-course dining experiences at the resort’s Art-i-san restaurant.

Challenges in the Maldivian F&B sector

Maldives being a geographically isolated island nation with limited land for agriculture and vulnerability to climate change, can impact food production and supply chain logistics within the country.

The transportation system is another factor that hinders effectiveness. At present, suppliers are also facing difficulties in importing their goods. “In order to combat any delays in receiving goods, we keep an ongoing stock of all our products for 2-3 months at a time on hand. To do so, we have established one of the biggest storage facilities here in the Maldives with a cold storage facility that is up to ISO and HACCP standards and food safety regulations.” said Aneesh Roy of Standard & Origin, one of the largest frozen food distributor in the country. .

Contemporary F&B trends around the world

The global community now leans toward more sustainable and ethical eating choices. There is a growing preference for cuisine featuring plant-based ingredients and authentic fresh ingredients sourced from around the world. As a result, the global F&B sector now advocates for fair trade and sustainable practices.

"We’ve seen a rise in demand for healthconscious products, including organic, glutenfree, vegan, low-calorie products and we foresee that the need for meat substitute food will also grow in the future," said, Sofwan Ahmed, MD of MHA.

The industry is also moving toward more eco-friendly packaging, with biodegradable choices being more than just a trend. As consumers and establishments become more eco-conscious, suppliers ensure that ingredients meet international quality standards. The ever evolving stage of F&B now invites us all to explore, engage and contribute.

Aminath Hameed

Patissier, businesswoman & professional dreamer. When Ami first moved to the capital city, it was to continue her studies in Accountancy. So it was quite a leap for her to make when she decided to pursue pastry making, instead.

Doing a short course in the craft of dessert making changed the trajectory of her life. What followed was acquiring a Diploma in Hotel Operations and Catering at Lincoln University, Winstone School of Culinary Arts.

Ami’s professional journey began at Conrad Maldives Rangali Island, followed by two more years at the pre-opening of Waldorf Astoria Hotels & Resorts. Now she is the Sous Chef at Ritz Carlton Maldives, Fari Islands, where she has received three promotions within the space of three years.

Ami has won a number of accolades, including Gold Medal in 17th Seoul International Bakery Contest 2015, Gold Medal at Food & Hospitality Asia Maldives 2017, 1st Place in Hilton SEA F&B Masters Dessert Challenge Hotel Level 2017, 1st Runner-up in Hilton SEA F&B Masters Dessert Challenge Country Level 2017 and Most Promising Talent Award at Asian Pastry Cup 2018.

She also collected several awards at FHAM 2023, including Best Maldivian Pastry Chef, Gold Medal in Dress the Cake category, Silver Medal in Artistic Showpieces, and Gold Medal in hot cooking and dessert team challenge.

Ami has an established dessert shop at the SME Hub in Male’, from which she caters to her own clientele. All of which are significant achievements at the age of just 31. So, we, at Hotel Insider, got in touch with Ami for a chat.

Hotel Insider: Your creations are so aesthetic. Which part of the process of dessert making do you enjoy the most?

Ami: Glazing. Whenever I create a dessert, I want what is beneath to taste really good and for its surface to be visually clean. Glazing helps with the latter as the effect leaves the finished product looking aesthetic and appealing. The process of glazing, itself, is interesting, as the body of the dessert needs to be of a certain consistency and

temperature to achieve the required effect. So I enjoy experimenting and seeing how it turns out.

Hotel Insider: You’ve worked at multiple luxury resorts so far. How has your experience been, working in kitchens that require the maintenance of a certain standard? And do you enjoy the pace and demands of your work?

Ami: The guests who frequent these properties have very high expectations of their culinary options and I've learned to keep up with the standard they expect of me in the kitchen. The ingredients we use in our creations are some of the best in the market, and I am able to work in environments that challenge and excite me.

Hotel Insider: What are the obstacles you have overcome in the industry so far, as a woman and as a pastry chef?

Ami: I have seen discrimination against women and discrimination against local employees, as a whole, as well. Early in my career I had to carve my place in the kitchen, as it was and still remains a very male dominated space in the Maldivian tourism industry.

But I have been lucky to have been treated well at all the places that I've worked at, and Ritz Carlton, in particular. At Ritz Carlton, they actually walk the talk. The empowerment of women in the workplace is something they actually put effort into, by providing equal opportunities and pay and holding forums and such.

Hotel Insider: Is that why there are so few female figures in the kitchens of local resorts, do you think? The discrimination?

Ami: Yes. I think there is a strong misconception as well about female employees. Working in the kitchen requires some heavy lifting as well. I think the idea that women can't do certain tasks is a preconceived notion that needs to change. And I think we, ourselves, need to remain consistent as well.

And most importantly, I think when you have the support of those who are senior to you, it can make a huge difference.

Hotel Insider: Who, in your field, inspires you the most?

Ami: My mentor Glen Cooper, the former Executive Chef at Ritz Carlton. He is one of the best in our field and has an eye for perfection. He always motivated and challenged me to experiment with new techniques and ideas. He gave me space to create and the guidance I needed to become better at my craft.

Hotel Insider: What is your vision for the culinary sector of the Maldivian tourism industry?

Ami: I would like to see more local employees, especially female local employees, in our kitchens.

Hotel Insider: You have won a number of awards so far, most notably the FHAM Best Maldivian Pastry Chef 2023. How did it feel accepting the award?

Ami: Really good. It was two weeks of hard work on a piece composed entirely of chocolate with dainty decor, and I made a mirror glaze cake on the spot as well. A colleague I trained also won a gold medal, which made me really happy.

Hotel Insider: Who would you like to thank for being your support system, given the nature of your work?

Ami: Suzan, my sister. She is my partner in my own business and has supported me through it all.

Hotel Insider: What would you like to manifest for yourself as the ultimate career goal?

Ami: I’d like to create my own brand, starting with my own dessert cafe in Male’. I want to serve desserts and breads made of the absolute best ingredients I can get. That is the dream I am working towards.

NSURE team in Velassaru Maldives ensuring highest safety standards

With over ten years of experience promoting a culture of safety in the Maldives, NSURE Pvt Ltd is a front runner in the field of Food Safety. An experienced team of food safety experts work tirelessly to provide the highest standards that businesses expect. This includes ensuring that every section is thoroughly inspected and clear guidance and resources are provided to help build and strengthen the Food Safety Management Systems of their clients. A shining example of continuous improvement is Velassaru Maldives: showcased here because of their strong safety performance throughout the resort. To understand their achievement, let’s take a closer look at what happens during an NSURE visit there.

Shortly after, the audit starts from Purchasing, where receiving and storage practices are inspected to ensure that incoming goods are handled as per the standards. Under the guidance of NSURE, Velassaru stores’ team understands their role and responsibility in the food flow, guaranteeing good stock rotation and segregation practices, maintaining correct temperature and humidity, and keeping their areas spotless and pest-free.

The auditor then moves to the production site, where food is prepared and served. NSURE audits are comprehensive; every risk and hazard are identified and addressed on the spot and highlighted in the report. The audit covers documentation and knowledge, infrastructure, equipment, and personal hygiene. NSURE prioritizes processes, and conducts process and risk-based audits, which reveal what happens in the operations between audits.

During the audits, NSURE team will utilize the latest safety gadgets such as probe and maximum registering thermometers, pH meters, oil quality test strips, sanitizers test kits, and EnSURE ETouch ATP Meter. The latter measures the presence of microbiological hazards on any surface and water in 10 seconds.

Another important safety aspect and NSURE’s expertise is water safety. Most resorts run a desalination plant to produce its own water, which is then used everywhere in the resort for drinking, cooking, washing dishes, taking showers, and so on. NSURE verifies the safety of the water by testing it as per the parameters outlined by URA guidelines. NSURE colleagues are trained to collect samples aseptically to ensure test results are accurate.

When the NSURE auditor identifies a training need, on-the-job training is offered immediately. In ten to fifteen minutes, colleagues will acquire a new knowledge or skill to support their daily activities. The Culinary and F&B teams at Velassaru Maldives appreciate the benefits of these practical trainings, and surely enough, on-the-job trainings on thermometer calibration, cleaning and sanitizing, and food labeling are regularly conducted and new skills get immediately applied in the workplace.

And for new colleagues who have not been trained yet, comprehensive food safety trainings are done in the classroom. NSURE trainings are interactive, fun and provide practical food safety knowledge rather than just “dry” theory.

To conclude the audit, a debrief presentation is conducted to share the main findings with the Resort Management. The management team at Velassaru shares their input at the meeting too, and together solutions are discussed, action plans are drawn, and work is done for a continuous improvement culture at the resort. After leaving the resort, the auditor shares a detailed report with the resort to ensure that on-site highlighted issues are well explained and can be actioned by the resort team.

Anantara Kihavah Maldives Villas welcomes Joachim Textor as its new Executive Chef

Anantara Kihavah Maldives Villas has appointed Joachim Textor as the resort’s new Executive Chef. Chef Joachim has over 40 years of experience in delivering premium culinary services around the world.

Chef Joachim began his career as a cook at various worldclass hotels in Switzerland. After honing his skills at the Hilton in Basel, the Park Hotel in Vitznau and the Hyatt Hotel in Montreux, he

expanded his culinary horizons by exploring the tastes and cuisines of the world. Over 42 years of traveling took him on a culinary journey to 93 countries and countless fivestar kitchens around the world.

Chef Joachim gained invaluable experience as an Executive Chef in some of the world’s most prestigious hotel chains, including The Peninsula Hotels, InterContinental, Hilton, Mandarin Oriental, Shangri-

La, and Hyatt. He has received critically acclaimed awards and was also the Opening Executive Chef of Anantara Dubai Palm where he spearheaded the opening of the resort’s signature restaurants and dining experiences back in 2013.

Regarded as a pioneer in the industry, Chef Joachim opened multiple award-winning hotels and dozens of restaurants in both the Middle East and the Far East. His past assignments

include the G12 Asian Summit Conference in Busan, where he cooked for world leaders.

Kuda Villingili Resort Maldives acquires Green Globe

Kuda Villingili Resort has achieved the prestigious Green Globe Certification. The resort has implemented various initiatives to reduce its ecological footprint and promote environmental conservation. Social responsibility and community empowerment are also extended by the resort through supporting local livelihoods to implement eco-friendly practices.

The integration of solar panels

into the staff village resulted in a 40% reduction in energy consumption. The resort’s composting machine effectively eliminates food waste and dry leaves, which are utilized for vegetation. Educational initiatives and engagement programs are conducted at the island to empower both guests and ambassadors to become stewards of the environment.

The resort also operates a dedicated recycling center on-site, complete with a glass

crusher that smashes glass bottles for recycling in concrete works as a sand replacement. Carpets are made from recycled plastic and bathtubs are crafted from recycled crushed stones. The hygiene products used in F&B, housekeeping, and laundry are all biodegradable.

NH Collection Maldives Havodda appoints Marlon Abeyakoon as General Manager

Minor Hotels has appointed Marlon Abeyakoon as the General Manager of NH Collection Maldives Havodda, effective from 25 January 2024.

Abeyakoon, a luxury hospitality and rebranding expert, has over a quarter-century of industry expertise and experience with prestigious global brands such as Kerzner, Hilton and Marriott in diverse locations, including the UK, Sri Lanka, Maldives, Fiji and the UAE.

Abeyakoon began his journey with Minor Hotels in 2020 as

General Manager designate for Avani+ Fares Resort before moving to the role of General Manager at Minor’s Oaks Ibn Battuta Gate hotel in Dubai.

Abeyakoon’s background in managing luxury resorts includes senior positions at the Sheraton Fiji Resort & Golf Club, Reethi Beach Resort in the Maldives, and Hilton Colombo Residences in Sri Lanka. His earlier career was shaped by roles in London with Hilton and GLH Hotels, and the One & Only Royal Mirage Hotel in Dubai, UAE.

Maldives Manta Conservation Programme (MMCP), the Manta Trust’s flagship project, confirms the 1,000th individual oceanic manta ray sighting. This makes the Maldives home to the world’s third largest population of the species. The manta was dubbed ‘Anbu’.

The RahVeshi Programme, an initiative established at MMCP in 2022, has been studying mantas in the Maldives since 2005 but has archives going back to 1996. Citizen scientists and local scuba diving centers have also contributed data for the research. Nearly 85% of

the manta sightings were from Fuvahmulah Atoll.

“Unlike other oceanic manta ray aggregation sites, there is limited feeding, cleaning or courtship behavior observed,” says Fath-hee, the RahVeshi Programme Coordinator,

who believes the rays may be transiting through because they are usually seen for only a day or two and re-sighting rates are low. “Where they are coming from and where they are going is still a mystery.”

This summer’s inaugural Patina Maldives x Real Madrid CF Foundation football camp is the first edition in an ongoing partnership, with additional future football camp dates to be confirmed. Led by a licensed Real Madrid Foundation coach, the sessions will focus

on developing each participant both individually and as part of the group. The training methodology combines play, as well as sports values.

All participants will receive official football camp clothes and accessories while those completing a minimum of four days’ coaching will be presented with a Real Madrid Foundation
