Hello all, welcome to the 11th issue of Hotel Insider and I hope you’ve had an excellent festive season.
This time, our cover story explores the environmental cost of tourism development.
And we interviewed the minister of environment and energy Dr Hussain Rasheed Hassan to find out his thoughts on several key issues revolving around development and safeguarding the environment.
For Conversation, we met Ramsay Perera of Kaimoo Group, who was recently recognised by MATATO for his contributions to Maldives tourism. The soft-spoken Ramsay has several observations that will interest anyone curious about the evolution of our hospitality industry.
We also had a chat with Oscar Perez, who’s overseeing the recently reopened COMO Cocoa Island.
Oscar comes with an exceptional F&B background (he was a Michelin Starred chef) and food is one of the biggest strengths of Cocoa Island. We talk about food a bit in the interview and also touch on another of Cocoa Island’s fortes: wellness.
Our Working Woman, this time, is Nina Mohamed. A marketeer
with a keen eye for design, she manages marketing at Hotel Jen and wears many hats. A woman of many talents, Nina nurtures her passion (which you can read about) while working fulltime and being a mother.

Hotel Insider visits a classic Maldivian property, Embudu Village in South Male Atoll, to have a chat with Ramsay Perera, Group General Manager, KAIMOO Resorts and Hotels. In hospitality since the late 80s, Ramsay was recently recognised by MATATO, and rightly so. We talk about his award, and move on to the shifting hospitality landscape, how a resort like Embudu survives in an ecosystem with major international brands and more in this edition of Conversation.
Hotel Insider: Let’s start off with the award you received from MATATO recently. It’s well deserved – you’ve been in our hospitality industry for so long.
Ramsay Perera: Yes, I have to admit it’s a great honour for me. I’ve worked for 32 years in the Maldives and I’m very proud to have my contributions to the hospitality industry recognised by MATATO.
Hotel Insider: What do you think are your biggest contributions?
Ramsay Perera: Well, in my tenure with KAIMOO I’ve helped them grow from a company with one resort to one with three resorts and two city hotels in Male. Our properties are highly rated on review platforms and I believe I’ve helped maintain a standard of excellence. Also, we have some longstanding staff with us who’ve grown with the company while others have learned from their time with us and gone on to do great work elsewhere.

Hotel Insider: What sort of guests were you getting when you started out here? Has the guest demographic changed much over the years?
Ramsay Perera: I joined KAIMOO in 1987 and tourism was very different then, we didn’t have international brands, everything was local. At the time, fisheries was the main industry here. Things have changed greatly since but our guest demographics haven’t been affected much. We used to get mostly European guests – German, Swiss, French, British, and we still do. And we have a lot of senior repeat guests, as you can see when you look around.
And they keep coming back because this [Embudu Village] is a place where you get a quintessentially Maldivian experience. By that I mean you have a beautiful beach, lush tropical vegetation, a great house reef. And of course, it’s a barefoot island. So, it ticks all those boxes.
Hotel Insider: That’s great. What sort of comments do you get from your regulars?
Ramsay Perera: They really love the island, the food and the service. They feel at home here. That’s very important, making them feel welcome and at home.
Hotel Insider: Yeah, you can be a threestar property and deliver a five-star service and that’s what guests will remember. And when you look at reviews, Embudu has scored very well in the service aspect.
Ramsay Perera: Of course, that’s at the core of everything we do here. Maldivians, I find, are naturally hospitable people. And that has helped take our industry to the top tier.
Hotel Insider: We wanted to ask you what the impact of big hospitality brands are on your business. Have they affected your market share?
Ramsay Perera: We’ve been in the business for a long time so we have excellent relationships with our tour operators and customers in Europe. Our market share hasn’t
been affected - we have enjoyed very high occupancy in peak months. We are marketing ourselves more now with social media and digital marketing tools. But also, I think there’s good word-of-mouth marketing happening in our main markets. A lot of our guests go back home and share their experiences with their friends and family. We offer something that big-name brands don’t – a very simple yet uniquely Maldivian experience that’s very reasonably priced.
Hotel Insider: Yes. We notice you’ve freshened up certain areas like the restaurant and coffee bar. Are more renovations on the way?
Ramsay Perera: Not in the immediate future but we’ll not be letting go of the island’s essence when we do. That’s something our guests say to us as well – even if we renovate, don’t go five star [laughs]. Keep the natural, relaxed feel of the island.
Hotel Insider: The Maldives is becoming more popular with Asians now, India is one of our biggest markets. Are you seeing this shift here in guest demographics?
Ramsay Perera: Yes, recently we’ve been getting a lot of inquiries from Asian operators, especially from India. Our guest demographics haven’t changed much as you can see but we’re seeing interest from South and South East Asian markets. We have some repeat guests who are from India actually.
And with them, too, it’s very much based on word of mouth. We look after everyone in the same way, regardless of nationality and that pays off in the end. It means happy guests who are likely to refer us to their friends and come again.
Hotel Insider: We suppose you won’t have to invest much in marketing like other newer properties who bring social media influencers and bloggers to their properties.
Ramsay Perera: Yes, we are already very established so we don’t need to be that
aggressive in our marketing. Although of course we do have social media and digital marketing specialists, they are necessary in today’s world.
Our older guests aren’t very social media savvy but we’re attracting a younger clientbase who’re very much into technology and social media. We’re rated highly on Holidaycheck [Germany-based review and booking site] and TripAdvisor and performing well on these platforms is very important to us now.
Hotel Insider: So, all in all, you’re in a very comfortable position.
Ramsay Perera: Yes, but we mustn’t get too comfortable [laughs]. We are very lucky because Embudu Village is a wonderful island, nature has blessed it abundantly. And we are not even half an hour from Velana International Airport, which is a big plus.
Hotel Insider: Yes, that works very well in your favour. Anything you’d like to add before we part?
Ramsay Perera: Yes, we are very lucky to be in one of the world’s top tourism destinations. And I want people in hospitality to know that it’s an excellent career path and they can grow a lot if they persevere. They must always be honest, treat all guests equally, be punctual and always serve with a smile because a smile doesn’t cost you anything. They have to remember that for a lot of guests, it’s a once in a lifetime dream to visit the Maldives so there’s a huge responsibility to make that dream as beautiful as possible.

Bridging the Divide - Step towards Unity (Aikya)
Maldives as a rapidly developing nation experiences a fair share of the global migration pattern which has been on the rise during the past century.
With the economy expanding, and industries such as tourism and construction growing at fast rate – they employ a great proportion of migrant laborers including Bangladeshi migrants. IOM estimates the Bangladeshi migrant population to be in the range from 50,000 to 120,000, which accounts for 1025% of the total population. Many of these Bangladeshi workers live undocumented and under exploitative conditions. Despite the hardship and challenges, why do they choose to leave their beloved home country to go and live a foreign country?
It is questions such as these and more that was explored through the art of film-making in the programme Aikya: Migrant Film Series, a collaborative effort of UNDP Maldives and The Government of Japan. The title “Aikya” which translates to “unity” in Bengali precisely captures the vision of bridging the social rifts between Maldivians and the large migrant community of Maldives. This initiative aimed at empowering young people towards exploring these social issues through the medium of film.
The programme was designed to incorporate 8 days of training on film-
making by industry experts, post which the participants produce four short-films capturing migrant lives and their experiences. Each film focusing on a sub-theme comes together to tell one over-arching story of ‘Migrant Lives.’
The story begins with understanding the life of a migrant worker as depicted by the short film ‘Emmen’, which provides a heartbreaking account of exploitation and constant hardship faced by a migrant worker in his attempt to provide for his family.
An integral part of understanding the experience of migrant lives is understanding the continuous prejudice and discrimination they are subjected to. Prejudice fueled by biased misconceptions often translate to discrimination and exploitation of human rights as depicted by the next two short films 'Eh'dhuvas' and 'Ekai.' The former takes the audience through one day of a migrant worker’s life in the Maldives highlighting the various forms of prejudice and exploitation at work. The next film too takes a similar tone where it demonstrates the stories of two migrant workers woven together by the common thread of discrimination.

Moving forward, to achieve a peaceful and inclusive society, we as a community should learn to disassociate from prejudices and take corrective measures to tackle discriminatory practices against our migrant communities. In this regard, the last film of the series, ‘Ummeedhu’ advocates for equal treatment of migrant workers, ending the story with a glimpse of hope.
Reflecting on the lessons learnt through this journey, Maahil Saeed (participant) explains that in contrast to popular beliefs “most migrant workers remain optimistic and hopeful for better changes.” Keeping the optimism alive, Jumain Faisal (participant) adds that through the experience he discovered that “migrant workers are just like any regular Maldivian trying to live their lives and working to support their family.”
Understanding the similarities between the local and migrant populations can go a long way to overcome prejudice and tackle discriminatory practices. It is equally important to welcome the diverse cultures and perspectives the migrant communities bring in, to embrace the differences and to learn to co-exist harmoniously.

Hotel Insider: Can you tell us a bit about Hotel Emporium and its values?

Hotel Insider: You're the first to introduce powder based amenities that are free of single use plastic. This is a great innovation especially in the Maldivian context when we're trying to get rid of single use plastics by 2023. Can we talk about this a bit?
Dinaj Paranawithana: The EcoPod is a revolutionary alternative to traditional single use amenities. As a sustainable solution to plastic packaging and heavy liquid formulations, the EcoPod uses a waterless powder based formula packaged in paper pods made with 60% bamboo fiber, 30% sugarcane, and 10% wood fiber. Shipping such a lightweight powder product also lowers our global carbon footprint. Easy to use, easy to transport, and even easy to compost, we are paving a new road to a zero plastic future.
Hotel Insider: You are also supplying customized dry guest toiletries which are completely ecofriendly. It's presents a great opportunity for resorts that are trying to reduce their single use plastics.
Dinaj Paranawithana: Yes, we do provide all guest accessories now in two ecofriendly options, option one : Wooden or bamboo accessories such as tooth brush, razor, cotton buds. Option two: straw & corn starch accessories. The end product is packed with a paper hygiene pouch printed using soy-based ink. We have options of packaging using craft paper, butter paper, cotton paper and stone paper.
There are certain luxury hotels and resorts who still wish to go with disposable bottles
who still wish to go with disposable bottles and tubes. We’ve got them covered too. The tubes which we manufacture are 100 per cent biodegradable and recyclable. These tubes or bottles will be decomposed within a period of six months of landfill and return to nature.
Hotel Insider: That’s really awesome. And Hotel Emporium is also providing resin, ceramic, glass and wooden dispensers to resorts. So, this reduces plastic use as well.
Dinaj Paranawithana: Every hotel or resort is looking for solutions to eliminate the single use plastic from their property. Amenities are one major area which adds disposable plastic products. As our solution to minimise the use of plastic we provide our customers the refill bulk liquid options and offer a variety of dispensers such as resin, ceramic, stone and glass. We provide unique designs with the propertys’ brand logo, color etc.
Hotel Insider: You also carry L'Occitane products that are ecofriendly and organic and L’Occitane’s Citrus & Verbena amenities. A good range of luxury products.
Dinaj Paranawithana: Every facet of freshness is captured in this blend of citrus fruits and crushed, lemony leaves, which offers both a comforting, gentle sensation and an invigorating breath of vitality. Organic lemon and verbena extract from Provence come together in an exhilarating zesty accord that acts like an endless antidote to everything.
The formulas used in this range are free from phenoxyethanol, silicones, colorants. They are 98 per cent biodegradable and produced in France.
The bottles are made from 100 per cent recycled and recyclable plastic material also available with bulk refills.

Hotel Insider sped down to its favourite South Male Atoll haunt, COMO Cocoa Island, to have a chat with the resort’s new hotel manager Oscar Perez. Oscar is a fascinating guy – he was a Michelin Starred chef in Denmark but he wanted to expand his skillset and take on more challenges.
So, after several years in South East Asia, here he is today, overseeing a great Asian property known for its focus on wellness as well as food. Oscar tells us about his foray into the culinary realm and his transition to hotel management. And today’s a really special day for him and his team because they are welcoming the resort’s first guests after eight months of renovation..
Hotel Insider: You were a Michelin Starred chef not too long ago. That's pretty amazing, especially considering you’re now managing a hotel. Tell us what drew you to the culinary arts.
Oscar Perez: Cooking was something close to my heart from a very young age. But you know how it is with Asian parents – they want you to pursue an academic field like medicine or engineering. So, I was kind of forced to study mechanical engineering but at one point I just said ‘Hey, this isn’t for me.’
Hotel Insider: What did you do then?
Oscar Perez: I knew I wanted to become a chef by then. So, I found an apprenticeship programme in Copenhagen, Denmark and after three and a half years I graduated with a masters degree in culinary arts. My first job after graduation was at a famous restaurant called Leonore Christine, Nyhavn in a very touristic part of town. The owner noticed my performance and recognised my talent. He promoted me to a premium restaurant called Restaurant Nouvelle, which is awarded a Michelin Star. I was the head chef there.
Hotel Insider: That’s really awesome.
Oscar Perez: Yes, I grew tired of Europe after that and headed east to Malaysia. I really enjoyed Malay culture and food and my

first job as an executive chef was actually in Penang, Malaysia.
Hotel Insider: You came to management with a deep background in F&B. Would you say there’s an overlap between the two?
Oscar Perez: Well, in a sense yes. Because you have to lead people, make them perform at their best. But I also wanted to get out of my comfort zone and do something challenging. I wanted to see if I could run a hotel.
Hotel Insider: Why, though?
Oscar Perez: Curiosity, I guess. Also, I found it very interesting. Because I’d want to continue in the hospitality industry and eventually have my own hotel or restaurant one day. It’s very different to the work I’d done because there are other concerns when you’re running a hotel. You have to think from a financial standpoint.
I spent some time in Bali, with St Regis as the director of culinary and services-complex, a cluster position. Then I moved to the St. Regis Singapore as the Executive Assistant Manager. Thereafter, I decided to take a break and spend some time with my family. It was around this time that I was contacted by Culina (a Singapore-based food and beverage distributor) to manage their retail and bistro shop.
And then I had a chat with our founder [Mrs Ong] and coincidentally, learnt there was an opportunity for an EAM position in Phuket, at COMO Point Yamu. I’d been to Thailand many times by then but I’d never worked there. So, Phuket was an experience I could add to my portfolio and I was looking forward to it.
Hotel Insider: You’re very experienced in Asian hospitality, and COMO is an Asian brand, one that’s very wellness focussed. What can we expect from Cocoa Island’s wellness front now with this revamp?
Oscar Perez: Through our sister brand in wellness, COMO Shambhala, we’re going to be promoting awareness a lot, educating our guests and nudging them towards balanced,
healthy lifestyles. We’re strongly focussed on getting the best ingredients for our wellness menus. You know, there’s a lot of ingredients out there being marketed in a very misleading way, so we have to be vigilant. You really have to know the source of your ingredients and believe in them. We’re also seeing alternative remedies to common complaints become more visible now. In fact, we have our own range of COMO Shambhala juices, available across our hotels and resorts. I myself have some turmeric juice every day, it helps reduce blood pressure. I’ve reduced my intake of conventional medicine from eight to three [laughs].
Also, if you take our new elevated yoga pavilion for instance, when you’re up there you get a good dose of the fabulous Maldivian sea breeze. It’s really peaceful, a perfectly meditative place, and without doubt a great addition to our resort. Especially for our repeat guests, who’ll really appreciate the difference.
We also made some modifications to the hydrotherapy pool, as you know. We’d like to utilise it more, have guests experience it more often, supporting them in their wellness journey.
And we have a Pilates studio now, plus we’ve expanded our spa facilities. Three of our four treatment rooms are now couples’ suites and this will no doubt please our guests, a lot of whom are couples.
Hotel Insider: We also wanted to ask whether we can expect changes to the menu since Cocoa Island is noted for its excellent F&B offerings and because you yourself have an exceptional culinary background.
Oscar Perez: [laughs] What we’ve tasted today is beautiful [note: we had lunch at Ufaa and it was superb]. And it’s not everywhere that you get a product of this standard. Do you think it needs to be changed? I don’t think so. Maybe we can tweak certain areas things, present them in a different way. But you have to consider how much more you can make out of a product that’s already giving you a hundred per cent return. I think we will continue as is and maintain consistency. Our F&B is part of the reason why we get so many repeat guests.
Hotel Insider: All right. You welcomed your first guests today after the eightmonth revamp period.
Oscar Perez: Oh, we were so happy and excited, my team and I. During the renovation period it was really hard to keep ourselves motivated because we are operators, right? We do things for guests and when we don’t see them, it affects our spirit. When the first guests came today, we were so full of joy. And we were all the more thrilled because they were repeat guests.
We really want to get their feedback on the property. We’ve not really deviated from the Cocoa Island essence: we’ve kept that as is and kind of enhanced things a bit, freshened things up. And we hope our guests love it.

Is it possible to achieve economic growth without sacrificing the environment? Or is environmental degradation an inevitable cost of development?

As an archipelagic nation seeking to provide basic services such as water, sewerage and harbours to dozens of islands with small populations, these are pertinent and vexing questions that offer no easy answers.
The Maldivian economy is largely dependent on tourism, which in turn relies on the country’s natural beauty, pristine environment and rich biodiversity to draw surfers and divers, sun-seekers and honeymooners. In 2019, the Maldives surpassed a long-held target of attracting 1.5 million tourists a year.
Before the first guesthouse opened on a local island in 2010, the lucrative industry was based on exclusivity and the ‘one islandone resort’ concept. Luxury hotels were developed on untouched and uninhabited islands. Stringent rules required most of the vegetation to remain in place. Some resorts banned fishing in its waters and became a sanctuary for marine life, allowing guests to feed or swim amidst varicoloured fish. An overwater bungalow built on stilts in a
turquoise lagoon is perhaps the most famous image that evokes the Maldives. The resort was in harmony with nature.
Land reclamation
But as tourist arrivals grow and new properties open every year, resorts are now being developed by reclaiming lagoons and shallow reefs. Mature coconut palms and trees are being removed en masse from other islands to landscape these artificial ones. Land reclamation is not limited to resorts. Maafushi, a local island famous for pioneering mid-market tourism, is reclaiming part of its lagoon. Hailed by the World Bank for inclusive wealth creation, the island is now full to overflowing.
“Maafushi is a guesthouse brand. They want to build more hotels and guesthouses on the reclaimed land and the tax money received would go towards our children’s education and healthcare,” minister of environment and energy Dr Hussain Rasheed Hassan told Hotel
Insider in an exclusive interview.
Dr Hussain acknowledged the environmental damage caused by dredging and reclamation, which kills swathes of coral reefs and habitats critical for coastal marine flora and fauna.
“We can’t avoid it. If it’s being reclaimed, biodiversity would be destroyed,” he said. “So the question is, is it right to sacrifice part of our reef for development? It depends on the downstream impact. What happens to the area. Is it a unique environment for biodiversity, are those found somewhere else as well? It’s a sacrifice for any island that’s been reclaimed.”
But there must be limits to ensure that our islands are bequeathed to future generations, the minister stressed.
“So we have to respect it. If we can’t reclaim in the lagoons, are we limiting our scope of development?” he asked. “It’s a difficult question to answer for the environment minister. That’s also something that was being done for a long time, long before I came into

The method of reclamation is also significant: “We should do it in a way that doesn’t clog the corals. We couldn’t avoid reclaiming so far. We have reclaimed inhabited islands and resorts as well. Hulhumale’ is one example. It’s like a natural island now. Male’ is also reclaimed. We have to consider whether it would cause ecological damage.”
But could environmental damage be justified for the sake of development? The minister did not have a simple answer. “I don’t want to say yes or no,” he said. “It should be left to a value judgement. It should depend on your values.”

Successive administrations have been criticised by scientists and environmental groups over the transfer of trees to reclaimed land, a practice local activists have popularised on social media as #MvTreeGrab.
On this issue, the environment minister was more sympathetic. “This is something that concerns me greatly,” he said. While vegetation had been removed to build roads
and houses as the Maldives population tripled over his lifetime, Dr Hussain noted the difference when trees are taken out of islands.
“In my opinion, it’s better if they were replanted somewhere else on the island. I also know that there are islands where they can’t be replanted, because there’s no space. In that case, is it better to burn them down or take them to another island to be replanted?” he asked.
“That includes inhabited islands or reclaimed islands for resort development. This is also a value-based issue. I don’t see any haram or halal islands in the Maldives. What I mean is, some people think that if it’s a reclaimed island, those that aren’t natural, they shouldn’t be planted on those islands. That view isn’t valid because I live in Hulhumalé, there are trees planted on that island,” he argued.
Importing trees from overseas meanwhile poses the risk of bringing in diseases, he cautioned. Spit beetles that are causing palm fronds to wilt are suspected to have come from palms brought from Malaysia. Lime trees across the country have also died from citrus canker brought over by unsuspecting
importers.
The authorities should prevent exploitation and ensure that trees are not being cut down for profit, Dr Hussain said. Unneeded roads should not be built and uninhabited plots of land should not be cleared unnecessarily, he added. But the minister also offered a business-friendly solution.
“As the environment minister, it worries me that palm trees and other trees are being sold off and taken to reclaimed land for resort development. It’s better for me if they were grown in nurseries and done as a business. That’s something that needs to be done now. It would be a good industry. People can make money from that too,” he suggested.
“In the future, we would like to have traceability when trees are being taken from one island to another, have the permit numbers, and a system to see how many, so that when they are replanted we can see where it came from and under which permit. So we are working towards that now, God willing.”

Aluminium cans are collected at source and compacted at Eco Centro. It receives around 80kgs of aluminium a week. It’s all melted down to produce items that the resort needs such as door handles and curtain fixtures. Eco Centro also compacts cardboard, which Soneva Fushi uses to transport its food in an effort to reduce their intake of Styrofoam. The cardboard is then sent over to Thilafushi where a private company, Secure Bag, recycles the material.

Waste to Wealth at Soneva Fushi
We flew up to Soneva Fushi to observe how they handle their waste. The Baa Atoll property’s Waste to Wealth programme is innovative and wellknown and we go over some of its key components at the resort’s waste management depot Eco Centro. These include composting, reusing Styrofoam, aluminium, glass and more. Some of it seems pretty far out and we didn’t expect anything less from a property known for a very pronounced creative streak, especially when it comes to problem-solving.

They make charcoal here too, putting jungle trimmings and used coconut shells to good (re)use. They are placed in the special oven and left for about a week. And the resulting material is sold to F&B outlets at the resort.

A staff collects coconuts daily from around the island and they’re brought to Eco Centro. The coconuts are then husked and pressed for coconut oil. The resort produces about 60 litres per week and it’s sent to F&B outlets and sold to guests. The coconut husks are further processed to make coconut fibre and coconut peat, which goes to the gardens.
Glass is broken down in a glass crushing machine and reused, along with Styrofoam, to make bricks. These are then used in repairs and renovation around the property. Soneva Fushi has an ingenious use for clear glass, which is also crushed and upcycled to produce glass art at the resort’s Glass Studio.

Composting is a big deal at Soneva Fushi. Kitchen waste is collected and mixed with waste from the garden. Bacteria is introduced to the mixture to breakdown food material further. It’s then fed into an industrial machine to hasten the composting process.
The mix is then bagged for a week, and the bags are emptied and turned to spread out the heat and for further breakdown. It’s done every three days till the mix turns to compost, which is then used in the resort’s gardens.

Solar energy - a clean, renewable source of power

It’s ‘The Sunny Side of Life,’ promises the slogan that invites tourists to the Maldives. For a country blessed with more than 300 days of bright sunshine but dependent on costly diesel imports, one would think harnessing solar energy would be a natural fit.
But reality is far from expectation. Only eight percent of the 280 megawatts of peak energy collectively generated in the Maldivesincluding local and resort islands - is produced by solar panels.
The suitability of solar power was questioned in the past due to space constraints and the salty environment. Some luxury resorts also believed long rows of panels would detract from its plushy architecture and natural beauty. With growing awareness of the dangers of global warming, however, a more solar-friendly trend has emerged across the tourism industry in recent years.

Free-swimming coral larvae can even use the platforms to grow into adult colonies, which can then be replanted on the sea floor. Plans to further increase capacity are underway. Among resorts opting for rooftop panels that could supply enough power to operate with just one diesel generator are Centara Ras Fushi, Pullman Maldives Maamutaa, Mecure Maldives Kooddo resort, Dust Thani Maldives, Heritance Aarah, Mövenpick resort, Reethi Faru Resort Island - all of whom have installed rooftop systems to complement diesel powerhouses and reduce reliance of fossil fuels.
Drawbacks and untapped potential
The International Energy Agency expects solar power to become a viable alternative to fossil fuels – ahead of coal, hydro and nuclear – within a decade, predicting that solar will be the world’s largest source of electricity by 2050.
The environment minister of Maldives concurs.
“Solar is the best option we have right now. We have to do it and not just for environmental reasons,” Dr Hussain Rasheed Hassan told Hotel Insider in an exclusive interview. A recent auction for a five megawatt solar project near the Hulhumalé bridge fetched a price of 11 cents per kilowatt per hour, compared to 21 or 23 cents from the most efficient generator. “So that’s 100 percent cheaper compared to diesel,” he observed.

Blazing a path
The world’s first 100 percent solar-powered resort was unveiled in 2015. Finolhu villas by Club Med features 6,500 square meters of solar panels capable of producing 1,100 kilowatts, well above the peak load of 600 kilowatts required by the island at full occupancy. The system is entirely automated. Computers are programmed to switch between direct solar power, battery power and diesel generators. Excess power generated during the day is stored in an extensive battery system capable of powering the resort throughout the night. Three diesel generators are on standby for rainy days.
Other resorts have followed suit. In March 2019, the Four Seasons resort at Landaa Giraavaru connected its first RoofSolar inverter and turned on one of the largest resort-based solar installations. It is estimated to produce between 900,000 and 1.1 million kWh annually and save between 250,000 and 300,000 litres of diesel, which corresponds to 650-800 tons of carbon dioxide.
Last August, the world’s largest floating solar system at sea was installed at LUX* South Ari Atoll. Dubbed SolarSea, these unique eco-friendly platforms also provide

The Maldives is especially vulnerable to climate change as the lowest-lying nation in the world and travellers are increasingly becoming conscious of their carbon footprint, offering advantages to resorts that advertise clean energy.
The benefits and incentives are obvious but switching to renewable sources is often not simple. The main challenge is the requirement of a storage device to provide electricity during the night. Cloudy weather makes the technology unreliable at daytime. Solar technologies also remain comparatively expensive and require large areas to generate enough electricity to power even a small tropical island.
But increased competition has resulted in sharp declines in installation costs. Solar energy use has surged at about 20 percent a year over the last two decades, thanks to rapidly falling prices and gains in efficiency. Japan, Germany, and the United States are major markets for solar cells. With tax incentives and efficient coordination with energy companies, solar electricity can often pay for itself in five to ten years.
solved by batteries and scaling up, he suggested. A solar farm the size of a football pitch would cost nearly US$1 million and produce one megawatt of electricity. Capacity would have to be doubled to generate electricity needed at night.
The government is seeking to invest in renewable energy both by offering grants and soft loans to utility companies, and inviting foreign investors through competitive bidding processes to sign co-purchasing agreements. The Maldives could also emulate Indian Ocean neighbour Seychelles in exploring floating platforms, the minister said.
“The third option is asking people to install solar panels on their houses, and we are planning to pay them for excess energy produced. That will be fed to the grid,” he said.
“We want the resorts to do it, too. They are also investing proactively. But there are those who don’t do it as well. But now it will make sense for them do so. For two reasons: one is economic. And when they go solar they can use it as a marketing tool as well.”

Dr Hussain Rasheed Hassan
We had a long chat with Dr Hussain Rasheed Hassan, minister of environment and energy, on a range of critical issues tied to the hospitality sector. The following excerpts have been edited for brevity.
On reducing, reusing and recycling
People don’t take individual responsibility here. Out of the 500 tonnes of waste taken to Thilafushi [landfill near the capital Malé], 65 percent is biodegradable food waste from households and restaurants.
If they didn’t cook so much at home, it won’t be wasted. For example, things like rice, you can keep the leftovers in the fridge and use it again. So we have to learn not to waste so much as well. That’s something you can do individually.
On waste management in the tourism sector
I know that there are many resorts that do it responsibly and there are places that do not take much care. For example, there are resorts that dispose untreated sewage in the sea. Some [local] islands too.
So there are challenges. People would say that the environment minister or the ministry is not doing anything, but we have a lot of issues to address. We can’t do everything at once. I admit it. We don’t just need time, we need money, too.
As you know tourists don’t come here to look at us. They see people like us in many countries in the world. They come here to see the beautiful marine life, the white beaches and the waves crashing on the shore, the oxygen-rich breeze, the biodiversity. We are destroying it with waste. That’s one of the most important issues we want to address this year, but to do that, we need the appropriate investments.
On the government’s plans
It’s impossible to take all the waste produced in the country to Thilafushi. In the past, there were no investments made to manage
waste in Thilafushi. It’s a place that receives waste, so the waste mounds there have been burning since 20 or 30 years ago. So we are not burning it again, just that the fire hasn’t been put out. It doesn’t go out when it rains or when sprayed with water. It’s been burning from the bottom. If we were to put the fire out, we would have to take parts of it and do it in parts.
So we are investing US$165 million dollars, if I remember correctly, to develop a modern waste management system. Biodegradable waste recycling and recycling old vehicles that get thrown out, as well as concrete waste from houses that gets demolished. Our plan is to break them down and recycle them to be used again in construction. So we are developing a facility by 2024. But even before that, some services will be available. Right now, we are receiving so much waste there that we don’t have the space to build the infrastructure needed. But we are trying to clear some of it and move some to new grounds. So there are challenges. I’m not saying it was the past government or anything but the issue is we have not invested in the appropriate infrastructure.
Our plan is to manage all the biodegradable waste on all the inhabited islands in the Maldives on the islands themselves. And the waste that has to be taken out, like scrap metal, cans and plastic bottles, solid waste, to be taken to a regional facility.
So there’s one in Raa atoll Vandhoo. We are building one in Thilafushi. And one in Addu that’s ongoing. When these are being operated, everything will be facilitated. The Addu facility will be done by 2021. And Thilafushi by 2024, because it’s bigger. These are done with donor assistance, with World Bank or ADB funding, so it's not done at the speed we want. It’s done through their procurement process. We have to do certain assessments and make [bid] announcements

so it can’t be done as fast as we want. On sustainable tourism
People should accept the polluter pay concept. Investors should include it in their operational cost. They have to pay to get rid of the waste they are producing. It shouldn’t be that when I keep it outside, the council has to take responsibility. The council gets paid from the government budget. It’s people’s money in the budget. And we need that money to educate our children, for healthcare, everything related to development. So when you refuse to pay a fee that you have to pay for the waste that you have produced, it’s very sad.
There are some islands, I won’t name names, where they have good guesthouse businesses, and they don’t want to pay for the island’s waste management. They say they pay their green tax and to do it through the green tax. The green tax has to be used for many environment-related projects. More than 70 percent goes towards establishing sewerage systems and water supply, renewable energy.
We are not saying we won’t spend on waste management. We should create awareness so that guesthouse businesses and citizens should get involved and cooperate so that we can do it in a meaningful way.
Everyone has to take proportionate responsibility. Personal responsibility should be taken for the waste they generate. For example, for households MVR150 [as garbage collection fee] is too expensive but to pay MVR750 to watch TV is OK, or to spend MVR200 on coffee every day. They tell the council that they won’t vote. Guesthouses don’t want to pay MVR1,000 for waste management. Businesses should also take responsibility. It’s not just the state’s responsibility. Ultimately, the state is the people.
And there are some resorts that dump their waste on islands, and that’s not OK. For example, they’d say they will pay MVR5,000, so the islands get the money but the waste is being collected there and we have to pay millions to bring it to Thilafushi.
On climate change and adaptation
According to science, if we continue business as usual, earth’s temperature will increase by 1.5 degrees by 2030. Compared to pre-industrial times, it has increased by one degree. So 70 to 90 percent of our tropical reefs would be destroyed if we continue like this. The less resilient corals will die. We are experiencing coral bleaching even now. In the
last 30 years, we had 3mm increase in sea level per year. Coral can grow faster than sea level but corals aren’t in a healthy state. They are dying. Some resilient ones are growing. That’s happening because it’s getting warmer, so that is impacting us.
The next question is, what are we going to do in the future? I think if we are to survive, our safety would be sand. This is just my opinion. If we were to raise the periphery of some islands, we have to use sand so that the salt water won’t come into the island and damage farms.
And we could live on stilts. The expensive resorts are selling villas on stilts built on the lagoon. Why can’t we live like that? We don’t have a million people yet. We have a lot of adaptation strategies that we can use. We are experiencing the effects of climate change but it wasn’t the result of something we did. It’s because other countries far from us emitted greenhouse gases, carbon dioxide, harmful gases. We can’t stop it. What we can do is mitigate the impact.
There’ll be huge change in the future, 50 to 100 years down the line. But Maldivians are determined to remain as a nation. We don’t want to be climate refugees elsewhere in a foreign land. There are ways we can survive here. We have to survive as a nation. The next question is what price are we paying for that? Even if we do or don’t do anything, biodiversity will be destroyed. Life is something that keeps evolving and changing, I mean geological times, there were times when the sea level has risen. Continental shelves are there because of it. Every continent has them because of that. It’s evidence of sea level rise.
On innovative solutions
Most of the energy we use is used by the resort sector. A lot of it goes to transportation as well. Especially sea transport is something we need to address. Solar doesn’t provide speed. Here, we can create solar energy as much as we want. We can use the sun’s energy to create hydrogen. We can store it to for fuel cell technology, and by using that, we can get speed for transportation. If we can do that, the intermittent issue that comes with electricity generation would be solved as well. We can create pure water as well.
When we go a 100 meters further from the channel, we reach a depth of 3,000 meters, the surface level is 28 degree celsius. But at a depth of 1,000 meters, it’s five degrees. We can use that difference and produce energy and water by using ocean thermal energy conversion (OTEC). The simplest way to do that would be to put the water on the surface
level in a chamber. And it is vacuumed, so it evaporates. So the cold water gets poured on top and the water gets condensed. Then we get pure water. If we did that, we could save a lot of money spent on water.
RO [Reverse Osmosis] is expensive. There are many technologies we can use. And people are even proposing them to us. We are saying yes as well, but most parties want exclusivity, but we don’t want to do that. I think that’s not in the interest of the country. What i”m trying to say is, there are technologies we can use, there aren’t any countries in a better position than us to go to OTEC. There are other benefits as well. For instance, the water from under released on the reef would make it cooler. And we could use solar pumps, it’s used even now for agriculture in other countries.
We can do so many things, and you will wonder why aren’t we doing that. We are trying to do all that. Again, we need money. We are testing wave energy at the moment, we know it’s successful. If we make wave energy life-size things, that means if we install them on the reef , they work like generators. They’ll produce electricity. Intermittency can be cut. So there are many things we can do. We can do them with funding. People will believe when we show them. In the future, there’s potential in hydrogen technology, wave energy, and water.
On the future
The Maldives has a bright future. We will see impacts of climate change, and we have to be prepared for that. Nothing stays static. It’s always changing. In the 60s they said we can’t do tourism either, who would come here, there’s no food. That’s not how it happened. Maldives is the largest renowned brand in the world and we have to take advantage of that. So I don’t feel hopeless. I’m positive about the future. It’s going to take time. If we have a strategy for the future and if we work together as a country, we can achieve it. If we change our direction every now and then we’ll go nowhere.

This time around, we catch up with Nina – she leads marketing at Hotel Jen but wears many hats and has a background in interior design, so you know there’s a story here. As a kid, she was a tomboy who hung out with older male relatives and was drawn to her father’s carpentry and design work. She was also a netball star and is still into fitness in a big way. Nina has a baby now, but she works just as hard as any of her colleagues. She believes young women can make it in hospitality as long as they are ready to be fully committed.
Hotel Insider: You studied interior design and marketing but you opted for a career in the latter. You’re with Hotel Jen in Male now, and it seems like there might be a good story behind your choice.
Nina Mohamed: Yes, it’s a pretty strange journey to be honest [laughs]. I was always into design and as a kid I really loved art. My mum wasn’t very pleased that I had a passion for the creative, arty side of things. She was an accountant who worked for a big company, Horizon Fisheries. She was very practical and would push me towards accounting and business – art was pretty much a waste of effort for her.
And when we chose ‘streams’ [of study] we weren’t really aware of the opportunities that came with each. Like, if we studied science, we had little idea of what doors it might open for us besides maybe becoming a doctor. Or if we did business an accountant. We had so little information back then.
Hotel Insider: Yeah, we didn’t have the internet, kids take that for granted now.
Nina Mohamed: [laughs] Yeah. Well, I always kept art as an option though, just in case. My dad was actually a carpenter and he’d design furniture and interiors. He did quite a bit of work for Seagull, too, back in the day. And I think I got the passion for art and design from him.
Hotel Insider: Did your dad work at home? Like, did he have a carpentry studio?
Nina Mohamed: Yes. And my mum used to say I ran around with a hammer and nails like a tomboy [laughs]. I hung out with my relatives who were mostly boys, we climbed the roof and the trees in the yard. Then my grandfather had an accident and my dad stopped working at home. Not related to carpentry, mind. But my dad would still bring over blueprints for various projects and I found them really interesting.
So, to please my mother, I did an ABE diploma in marketing because my mother really wanted me to soon after completing my O’ Levels. Then, I had to move to Malaysia and I continued with my diploma. When my family moved to Sri Lanka, I went and enrolled in the Northumbria University in Colombo and studied interior design.
Hotel Insider: That’s a really bold move.
Nina Mohamed: Yeah, but you know, I think by then my parents, my mum especially, had realised that you can’t always be controlling your children, you need to let them make their own choices and get on with their lives. So yeah, I finally studied interior design.
Hotel Insider: And you took part in a management course taught by Harvard, which looks pretty impressive on your CV. But is any of it applicable in the work you do? Would you recommend it to someone following a similar career path as you?
Nina Mohamed: Yeah, that was after I’d joined Shangri-La. The course was very indepth, and there were many modules with real life case studies that were presented by our professors. You had to find out how to apply what you’ve learnt for each module. And in areas where you’d scored low you had to demonstrate that you could apply your knowledge at work and get results. It was very interesting, really. And I’d recommend it, of course.
Hotel Insider: Cool. So, when you came back to the Maldives you found a job pretty quickly. At Clique College, right?
Nina Mohamed: Yeah, I was with them for a while until I found a better opportunity at V Media.
Hotel Insider: What was it like working in media? Is it very different from the work you’re doing now?
Nina Mohamed: Yes, though I was in sales and marketing, it was a totally different ballgame. I’d be coming up with programme proposals and trying to sell airtime. I think my biggest achievement with V Media was Euro 2012, we hit way above the sales target.
Hotel Insider: Oh, cool. How would you describe your role here?
Nina Mohamed: I’d say it’s not easy since I’m a one-person department handling marketing, PR, digital marketing, social media marketing, graphics and photography. And to an extent I also lead the CSR efforts here. As this is a small property, my role isn’t specialised – we multitask. It gives me certain advantages
– I know quite a bit more about hotel operations than most in my position.
Hotel Insider: That’s a lot! We also wanted to ask you what the culture here [at Jen] is like, like is it accommodating to a woman in a position like yours?
Nina Mohamed: Well, it’s just three ladies in the management meetings every day [laughs]. And I really liked it when we had a woman GM. I haven’t ever felt discriminated against because of my gender here. I think this is a good place for a woman to work and build a career.
Hotel Insider: We know you’re incredibly busy here but do you do anything besides this? Any hobbies?
Nina Mohamed: Yes! I’m a fitness instructor and I’ve been working in fitness since 2000. My friend and I brought ‘pound fitness’, a kind of drum-based fitness to the Male fitness market. We had a good launch in 2016. And I used to play netball. I was actually on the national team, under 16, under 18 and under 21.
Hotel Insider: That’s incredible. Tell us more!
Nina Mohamed: [laughs] But I had to quit [netball] because of a back injury. Around this time, Sheri Fitness [of Sheri Salon] was conducting some fitness classes. A friend and I attended those classes during our time off.
So, later, when Heat [fitness centre] was about to open, Shifana gave me the opportunity to become part of their team. We were the first batch in Male who did Les Mills training programmes. We brought in a dance programme, weight training and kickboxing. And while I was in Malaysia, I found the time to take classes for people. It was very satisfying and also an additional source of income.
Hotel Insider: That’s awesome. And before we part, do you have a word of advice to young women who want to make it in hospitality?
Nina Mohamed: Hospitality is not an easy industry – you have to have commitment. I feel that there are women who get started in hospitality, and slowly rise through the ranks but then at some point they’ll start a family and leave. I really think you can succeed if you compartmentalise your life. I have a baby too, but I work as hard as anyone here. So, like I said, you give your full commitment – it might take some time for you to shine but you’ll get there eventually.

Centara Grand unveils new staff canteen
Cantara Grand Island Resort & Spa Maldives has unveiled its newly renovated staff canteen, the Grand Cafe’.
According to the resort, this project was one of love for the team, who look after its guests with their hard work and dedication to service and guest experience.
“Our GM, Riaan Drever, together with the in-house Engineering, TFC projects and Housekeeping teams set out to improve the canteen and deliver a restaurant which the team can be proud of. The
inspiration for Riaan came from common and multi-use spaces, which is far more the trend today rather than the ugly dining spaces traditionally found in hotels,” the resort said.
“We managed to keep the costs down by using furniture saved up from previous front of house upgrades along with fabric no longer used in the resort. The outcome of the improvement was well received by the team who now thoroughly enjoy the space.”
“The culinary team under the supervision of our executive
chef and sous chef managed to put a phenomenal menu together. It is a 14-day rotational menu, built the same way we would for our main guest restaurant. However, since our teams live and work on the island, the menu starts from 06h00 and last meals are till 21h30, with the main set times and snack meals in between for those who might be off or missed a meal period.”
In addition to this, the team have the option of a Coffee Café. Its chefs are also planning to add an a la carte menu in January, with a choice of items
on the guest In-villa menu or from its Thai and Italian restaurants.
