L et’s Wine , Blind Tasting: But now I see …

Wine is one of those things that can seem intimidating. With all the fancy jargon, the different types of grapes, and the various regions where wine is produced, it’s no wonder that some people might feel overwhelmed. And it’s also what makes people so impressed when they see someone able to accurately identify a wine during a blind tasting. But like every skill it can be practiced and there are a few tips to help you along the way.

1. Start with the basics

If you’re new to blind tasting, start with the basics. Focus on identifying the major characteristics of the wine, such as the color, aroma, and taste. Use it to try to guess the grape varietal.

Once you’re comfortable with those, you can start focusing on more specific characteristics, such as the vintage or the region where the wine was produced.

2. Use your eyes

It might seem counter intuitive to use your eyes in a blind tasting. But unless this is a formal event using opaque bottles and glasses the chances are that you will be able to pick up a few clues from the shape of the bottle or the capsule. For example, a white wine in a tall thin bottle will give you some indicators on the possible grapes that were used to make it. A screw cap or a wax cap wine might help you narrowing down as well. Some people might call it cheating, others might call it bringing some

education into the guessing process. As for my opinion the responsibility falls into the person who prepared the blind tasting; if you prepare it loosely you can’t blame the taster to exploit it.

3. Proceed by elimination

While it might be possible to pick up a very distinctive characteristic of a wine (such as petroleum smell for a Riesling) the chances are that you will proceed by elimination along the way. By determining on the eyes, nose and palate what a wine most likely will not be then you will narrow it down sufficiently to make a final decision.

4. Use a methodology

There are a few methods used to identify a wine. The WSET teaches its systematic approach to wine tasting

which evaluates a wine following the principles of sight, nose, palate and conclusion. There is also the FAST methodology, a systematic approach used in blind wine tasting to evaluate a wine. FAST is an acronym for:

F - Appearance (color, clarity, intensity)

A - Aroma (intensity, complexity, quality)

S - Structure (body, tannins, acidity, alcohol)

T - Taste (flavors, balance, length)

By using the FAST method, tasters can evaluate a wine objectively, without being influenced by preconceived notions about the wine’s origin, price, or reputation.

5. Practice, Practice, Practice

Like anything, practice makes perfect. Blind taste as often as possible, even if it’s just with a couple of friends or family members. You can also join a wine club or attend tastings to get more exposure to different wines. You can follow our Facebook page to get informed of the next wine tasting.

6. Take Notes

Take notes on each wine you taste, including the grape variety, region, and vintage. Write down your impressions of the wine’s appearance, aroma, flavor, and texture. This will help you identify patterns and recognize the characteristics of different wines.

Don’t take it too seriously – after all, wine is meant to be enjoyed!

This offering is defined as a surf ‘n’ turf extravaganza featuring only the freshest local seafood and prime cuts. We can attest that the description does not even begin to tell the story of this Saturday dinner buffet.

The large, elegant indoor restaurant

provides an ideal air-conditioned setting for fun-filled feasts. Those looking for an alfresco setting can opt for the adjacent moonlit dining terrace, surrounded by the resort’s loop pools and landscaped gardens. The Scandi-feel décor inside combines bleached timbered walls, textured stone flooring, muted tones of blue-grey, elegant wingback chairs, and functional blocks of black to contrast the neutral tones.

All fuse to create a clean, simple, stylish balance between functionality, cosiness, and aesthetics.

Amber Kitchen’s buffets and live-cooking station occupy the restaurant’s rear wall and are divided into distinct sections. Start in Japan with freshly made Sushi rolls and gleamingly fresh sliced Sashimi. Stop at the fresh seafood on ice, indulging in oysters,

prawns, crabs, squid and mussels. Veer to the Charcuterie section with choices of sliced hams, salami and other cold meats and typical antipasti accompaniments. Perhaps sliced Smoked Salmon or gravlax also needs to be on your plate. No problems, as you can return to gradually work through all that tempts.

If Thai flavours entice, check out the Fish Cakes (Toht Mun Pla) and the Golden Bags (Thang Thong) or ask the Chefs to cook your preferred Thai noodle dish. Perhaps Tom Yum Goong or Pad Thai cooked to order right before you. The buffet’s Italian section has whole Pizza waiting for you to grab a few slices, or stop at the Pasta Your Way and have the Chef create your ideal as you wait.

The carving station is laden with choices. Sample from crispy rolled roast pork, beef rib-eye roast, and whole-baked fish. Sauces, gravies, roasted potatoes, Yorkshire pudding, and Mediterranean-style grilled vegetables are ready to add to your plate. On top of all these choices are hot pots of classic French and Italian casserole-style dishes calling to be supped. Fresh chef-made salads and a selection of salad ingredients on ice fill the colourful salad bar.

Outside on the terrace, the barbecues are firing with options like Thai grilled pork neck and ribs, grilled whole prawns, local squid, sea whelks, chicken thighs and wings, lamb chops, plus grilled sweet corn and tomatoes. Your buffet and barbecue dining choices can feel a little overwhelming, though our Let’s Eat team took a measured and norush approach as we navigated all the tasty offerings.

If, like us, desserts are an essential component of your dining experiences, your heart will jump for joy at the selection. On the outside terrace is a mango and sticky rice station complete with house-made coconut ice cream for a classic Thai dessert fix. Inside is a dessert buffet divided into three sections. First, a platter-laden table of favourites like crème caramel, red velvet cake, apple tarts, chocolate brownies, mango slices and much more. Individual dessert servings are in an open refrigerated cabinet at just the right height to tempt any children in your party. Then there is the ice cream fridge with a six-flavour selection. And for all kids, big and small, a Fairy Floss (Cotton Candy) station.

For those who prefer Cheese to finish your meal, a suitable selection of soft and hard cheese is offered at a separate buffet with typical cheese board accompaniments. However, the yacht’s size and masts have not been without controversy. In February 2022, Oceanco requested the partial dismantling of a centuries-old bridge in the port city of Rotterdam to allow the colossal yacht to pass

through to the high seas. The masts’ height, comparable to the Great Pyramid of Giza, exceeded the bridge’s 131-foot (40-meter) clearance, posing a significant obstacle. Unsurprisingly, the people of Rotterdam were displeased and even threatened to pelt the yacht with rotten eggs. Ultimately, the request was denied, and the yacht was discreetly towed through Rotterdam without its masts.

While the designers responsible for Koru’s interior and exterior remain undisclosed, the yacht’s timeless and elegant appearance is undeniable. Koru features a sleek black hull and white superstructure, exuding sophistication. The yacht also boasts a large pool on the aft deck and several plush alfresco lounges for ultimate relaxation.

However, the towering masts make it impossible for the superyacht to

accommodate a helicopter landing. As a solution, Bezos commissioned a second yacht to hold his toys and tenders. Christened ABEONA, the custom 246-foot (75-meter) support vessel is Damen Yacht Buildter’s largest to date, making it the perfect companion for the monumental Koru.

Koru’s impressive size and unique design elements have positioned it to become one of the most spectacular superyachts on the seas. For the delivery of Koru, a central street in Rotterdam was temporarily closed to facilitate the transport of the masts. The masts, each weighing 50 tons, were installed in a separate location before being joined with the main yacht for final assembly. The intricate process of installation was carried out by Rondal, a Dutch company specializing in the construction of sailing yacht masts and rigging. The main event of course was beach polo with teams from Thailand, Hong Kong, Belgium, and Macau competing. In the end it was the Macau team emerging victorious, defeating Belgium with a score of 5 to 3.

With polo concluded, the festivities moved to the grass lawn of the InterContinental as the hotel hosted an elegant White Gardens themed dinner party by the sea. In its 12th year, the beach polo tournament has become the biggest and only beach polo equestrian competition in Asia.
