During this week we wanted to make sure, more than ever, that the wonderful people who offer our local charity their continued help and time through volunteering, understand that we are all so very thankful for their support. Our volunteers are wonderful people and so I wanted to say on behalf of everyone at our hospice, thank you. Without our volunteers we simply would not be able to help the local people that we are here to care for.” Lewis-Manning Hospice Care said the biggest thank you to its devoted volunteers during Volunteers’ Week 2020. The village of Worth Matravers has shown its commitment and loyalty in lockdown to a muchloved local charity, MYTime Young Carers. The MYTime activity centre is based in the heart of Worth Matravers and is where young carers are able to take time out and enjoy a much- needed break from their caring responsibilities.

A Dorset based, British telecoms company, who designs and engineers wired and wireless headsets, has responded swiftly to increased demand by developing a solution niche sector for users in just six weeks. JPL Telecom, which is based in Sturminster Newton, Dorset, invested in new products in 2019. This was following the marketplace removal of an item which severely impacted customers who are impaired hearing. JPL Telecom, worked with speaker experts in collaboration with a specialist telecoil manufacturer and using the housing from its JPLConnect headset, produced a headset which was ready to trial in the UK market within just three weeks.

During lockdown the villagers showed their amazing community spirit and initially got behind the London Marathon 2.6 Challenge initiative. They also decided that as their popular annual summer fete couldn’t go ahead that they would replace it with alternative activities and organised plant sales and a bric-a-brac sale to help raise funds for MYTime. All sales were made using honesty boxes. The first sale raised £630 and the second a huge £830 making a total of £1,460! MYTime Executive Director Krista Cartlidge added, “We are overwhelmed at the support that the village has shown us, not just as an organisation but also the young carers. Jack, Yvonne and their team have done a brilliant job and we are extremely grateful to have their support and loyalty. We’re looking forward to other exciting events in Worth Matravers in the future. Watch this space!”

TO S U PP O RT LO CA L H O S PI C E CHARITY A 10 year old boy from Poole is replicating swimming the English Channel by completing 2817 lengths of his pool at home to raise money for Forest Holme Hospice. Fraser Burnet, a pupil at Dumpton School in Wimborne, decided during these difficult times to raise money to help others in need and wanted to honour the memory of his Daddy and Grandpa, who passed away two years and one year ago respectively. He has even managed a personal best of 140 lengths in one day. So far Fraser has raised nearly £2,000, which is going to be generously match-funded by Teleost Cayman Ltd and Ancora Software. Fraser, said, “An enormous thank you to you all, it will keep me going on my long swim, which I estimate will take me just under two months to complete, if I average 50 lengths a day.

The up and rumming drink is just that – rum – from an artisan Lymington-based company, which is set to see its spirit level out of the recent ginaissance. Sun Rum, which is owned and run by Matt England, who has worked in the hospitality sector across the South for nearly two decades, came about after working with local artisan gin makers. He spotted a niche for a fresh brand which would appeal to younger lifestyle-focused customers and rum was the category that showed most promise. Rum contributed to a rise in sales across the spirits category in 2019. With total sector value up by 6.2 per cent, this growth undoubtedly powered by the massive popularity of gin and a wider love of new cocktails.

To thank its members for their unwavering support, the first four days will be exclusively for members only ahead of the public opening on Friday 3 July. The zoo will be strictly limiting numbers each day to ensure guests can keep a safe distance so all guests, including members, will need to book online before they arrive while payments at the zoo will be card only. Marwell will finally unveil its world exclusive summer brick adventure SUPERSIZED!, which is on display until 1 November 2020 and included with general admission. Safety measures will include two metre floor distance markings at enclosures and queues, new one-way routes on narrow paths, multiple hand sanitisation points, stringent cleaning and signage to inform visitors. All indoor animal areas will remain closed and there will be no animal talks, touch tables or train services. The indoor cafes will not be open however there will be outdoor catering outlets where takeaway food and drink will be available as well as extra picnic areas.

Hampshire Fare is a not-forprofit membership organisation working with nearly 400 local producers, retail and hospitality venues committed to sourcing locally.

The zoo, run by charity Marwell Wildlife, has so far raised more than £50,000 to help with its high running costs such as animal feed and bedding during closure.

In the absence of international travel, we’ve had to search farther and wider to find connections with other parts of the world. During the past three months, sales of wines have skyrocketed, hinting at the holidays we’ve enjoyed from the comfort and safety of home. A product of local soil and climate, wine encapsulates the feel and flavour of a region, reminding us of places we’ve visited and new destinations we yearn to see. Based on the bottles that have been flying off shelves, these are the destinations to visit when the world starts moving again. Provence, France Warm weather demands a refreshing drink, and a glass of silky, elegant rosé is the perfect match for the Mediterranean spring we’ve been enjoying so far. Both Waitrose and Co-op have reported huge rosé sales compared with this time last year, and bottles from Provence have been doing particularly well. Like the soft, ethereal light that attracted so many great artists to this region of southeastern France, rosé blooms with aromas of ripe berries and zings with light citrus fruits; settling into a sunset with a crisp chilled glass is like stepping into a Cezanne painting, transporting you to Provençal olive groves, pine forests and lavender fields.

An expert view on safaris of the future: Beks Ndlovu A professional guide who grew up in the bush, Zimbabwean Beks Ndlovu launched African Bush Camps with a vision for creating an authentic safari experience with the full involvement of local communities. Sustainable tourism is at the very heart of his ten camps in Zimbabwe, Botswana and Zambia, which have remained open during the global pandemic. “We have 25% of staff on site,” he explains, “Because there are less eyes in the field, we do really need to have some sort of surveillance.” Although he acknowledges there has been an unfortunate upsurge in poaching incidents, he remains hopeful for the long-term future of safaris. “I’d like to believe that we all take heed of this time; we’ve seen clearer skies, less carbon emissions,” he reflects, suggesting a growing trend for more sustainable travel. “We have small camps, it’s not mass market, there are no large gatherings and for the most part, it’s outdoors; it’s an attractive type of travel.” In reality, few changes are required to comply with new social distancing and hygiene guidelines. But the crisis has certainly inspired new positive ideas. “It’s validated the work and energy we put into conservation and working with communities, to the extent we are saying we need to find ways in which we can do more.”

The Fiesta has been a familiar site on our roads for decades and with a myriad of body, trim and engine options it truly does offer something for everyone. The halo model has to be the ST with its hardcore sporting looks, racy interior and an engine note to match. Classic fast Fords have been in the ascendancy for some years and with new fast Fords like the Fiesta ST it’s not hard to see why.

Power comes from a 3-cylinder 1.5 litre turbocharged petrol engine that develops 200 hp and propels the car from 0 to 62 mph in 6.5 seconds, yet 40 mpg in combined driving shows just how useable the ST is in daily commuting. Standard fare includes rear privacy glass, navigation, Recaro seats, air conditioning, a plethora of ST badges so you don’t forget you’re in the sporty version and selectable drive modes of normal, sport and track. The ST-3 costs approximately £2,500 more

With 6 manual gears to work your way through it not only looks the part but very much drives it too. It shares all the practical virtues of the more sedate Fiestas with space, folding seats and sensible running costs. The bright colours, snazzy interiors and driveability is what sets the ST apart.

THE NEW MINI COUNTRYMAN The biggest and most versatile MINI, the Countryman, has received an update and new additions to its equipment. In addition to a plug-in hybrid drive, the new Countryman is also available with two petrol engines and one diesel engine ranging from 136hp to 178 hp. Turbocharging is used in the 3-cylinder petrol engines and in the 4-cylinder petrol engine of the Cooper S version. ALL4 is an option for four engine variants and a standard feature of the plug-in hybrid model. The redesign of the front section adds LED headlamps to the standard trim and adaptive LEDs as a newly added option. The range of body finishes includes newly added colours and a new Piano Black exterior dechroming option. Depending on the model variant, the Countryman is fitted as standard with light alloy wheels in either 16 or 17-inch. Inside it has a versatile interior with three fully-fledged rear seats which fold down with a 40:20:40 split. The addition of new options of Chester Indigo Blue and Chester Malt Brown have been added to the selection of seat upholstery. The new MINI Countryman is available in seven model variants and is priced from ÂŁ23,500 RRP and available to order now.

Look at some Audi, BMW and Mercedes Benz models and even a moderate amount of ticking in the option boxes can easily accelerate to a £50,000+ price tag. While any car with an Audi, BMW or Mercedes Benz moniker on the bonnet is an automotive powerhouse they are rather plentiful, especially lead-in models. So, you might be surprised to hear that one of the most stylish Italian luxury car makers, with strong links to iconic motoring name Ferrari, can be bought new for similar money.

Two petrol engines in two power outputs, and a diesel are on offer. The 350hp and 430 hp petrol units are 3.0 litre twin turbo V6 engines, the turbo diesel is also a 3.0 litre V6 and develops 275 hp. Sarah Rainey: ‘If we ever needed cake, this is the time’ Did you know it is possible to make meringue in a microwave? How about almost-instant ice cream with a freezer bag and some rock salt? Or a whole cake in the time it takes to boil an egg?

It sounds like chemistry-lab level alchemy, but these are just some of the miraculoussounding baking tips Northern Irish food writer Sarah Rainey shares in her new cookbook, 6-minute Showstoppers. “If you can make egg whites and sugar come together and puff up in the microwave,” she explains, “you’re halfway there to making an entire pavlova.” Her coconut berry pavlova genuinely takes six minutes to make, and probably even fewer to scoff. When it comes to baking, Rainey has a history of making the daunting and complicated seem suddenly achievable. Her

Frozen Nutella loaf INGREDIENTS

1 x 400g tub Nutella 50g unsalted butter 200g Hobnobs (13–14 biscuits) 400g cream cheese 80g icing sugar, sifted 50g chopped roasted hazelnuts

SERVES 8-10

1. Line a standard loaf tin (approx. 2lb or 1 litre) with cling film, completely covering the base and sides and making sure there’s plenty of excess overlapping the edges. I use three strips – one for each long side and one for the middle. Place a medium saucepan on the hob and turn the heat up high. You’ll also need a food processor (or a ziplock bag and a rolling pin) for crushing the biscuits, and a whisk. 2. Put 150g Nutella and the butter in the pan and melt, stirring often so they don’t burn. 3. Meanwhile, blitz the biscuits in the food processor until they turn to crumbs, or you can put them in a ziplock bag and bash them with a rolling pin. 4. When the mixture in the pan has melted to a smooth chocolate paste, tip the biscuit crumbs into the pan and stir until combined. Pour this into the lined loaf tin and use the back of a spoon to press it down. 5. In a separate bowl, whisk the remaining Nutella with the cream cheese and sifted icing sugar until smooth. Tip this into the loaf tin and spread on top of the biscuit base. 6. Finish with the chopped hazelnuts, covering the surface right to the edges. Wrap the excess cling film over the top of the loaf to cover it and place in the freezer for three to four hours to set. 7. Remove from the freezer around 20 minutes before serving and slice with a sharp knife dipped in boiling water. If you don’t eat it all in one go, keep the rest of the loaf, well covered, in the freezer – it should last for two to three months.

1. Preheat the oven to 250°C (fan 230°C) and line a baking sheet with greaseproof paper. 2. Mix the almonds, egg, coconut oil, maple syrup and vanilla extract together in a bowl until they come together into a loose dough. INGREDIENTS

Enjoy hot or cold, with a cup of tea. The cookies will keep for five to six days in an airtight tin.

Choca-mocha cake INGREDIENTS

30g cocoa powder

MAKES 1 CAKE, SERVES 8-10

1. Grease a 20cm-round, microwave-proof cake dish with a little butter and line the base with greaseproof paper.

3tsp (heaped) instant coffee 175g self-raising flour, sifted 175g caster sugar

2. Mix the cocoa powder and three teaspoons of coffee together in a small bowl and add approximately 100ml boiling water. Stir vigorously until dissolved.

3. In a separate bowl, mix together the flour and sugar. Add the coffee mixture, followed

Mix in the icing sugar, a little at a time, adding more water if you need to, until you have a smooth paste, roughly the texture of thick cream. 5. When the cake is done, carefully tip it out on to a cooling rack and immediately spread the icing over the top (or drizzle, if you’re more artistic than me). You may want to put a plate or chopping board underneath the rack as this bit can get messy. 6. If you like, sprinkle chopped walnuts, pecans or coffee beans around the edge of the cake for a pretty finish – do this before the icing sets so they stick.

What are meditation walks and why should we be doing them? As we adapt to our new normal, many of us are finding it hard to concentrate. Liz Connor hears how taking a walk can help to clear the brain fog.

The last time you went for a walk outdoors, how engaged were you in the surroundings? Were you scrolling through social media, replying to a WhatsApp message and listening to a podcast episode, or were you truly taking in the sights, sounds and experiences around you? Taking a walk outdoors can work wonders for your mental and physical health during lockdown, but to truly embrace the benefits, experts say we must bring our body and minds in sync. Known as ‘walking meditation’, this type of mindfulness in motion is about more than just getting from A to B. Rather, it’s an opportunity to clear your mind of any internal worries, by hyper-focusing on the rhythm of your steps and tuning in to what’s going on around you. What is walking meditation? Also know as ‘kinhin’, this type of peaceful practice is part of several forms of Buddhism that involve movement and periods of walking between long periods of sitting meditation. If you struggle with traditional meditation, taking your practice outside gives you an opportunity to harness your awareness and focus on the present, rather than being distracted by internal thoughts, worries or fears.

Marwell will finally unveil its world exclusive summer brick adventure SUPERSIZED!, which is on display until 1 November 2020 and included with general admission. Alongside Marwell’s hundreds of animals including exotic and endangered species, the zoo will showcase a unique collection of bright and colourful brick sculptures around its beautiful 140-acre park.
