PJ HARVEY HONOURED BY DORSET MUSIC AWARDS AT LIGHTHOUSE
Dorset-born musician, composer, poet and songwriter PJ Harvey is to be honoured with a special award for her Contribution to Dorset Music at the Original Music Awards at Lighthouse Poole on Friday 17 January.
Having consistently drawn on her Dorset roots, from the gutsy songs of her 1992 debut album Dry, through the Mercury Prize-winning Stories from the City, Stories from the Sea (2000) and Let England Shake (2011), to last year’s I Inside the Old Year Dying. In 2022, she published her verse novel Orlam, the first substantial work written in the Dorset dialect for decades.
Polly Harvey grew up on a farm near Corscombe and cut her musical teeth playing pub back rooms and get togethers in West Dorset before joining Bristol-based band Automatic Dlamini that precipitated her forming her own band in 1991 and moving to London where their first demo tape attracted the attention of John Peel, the music press and record labels.
Announcing the award, the Original Music Awards Panel 2024 say: “We are recognising PJ Harvey with this award, not because of her notable successes, but because Dorset has always remained at the heart of her work. Whether it be using soundscapes of Dorset in her creations or writing poetry in the Dorset dialect, it’s very clear that she has always remained true to her roots.

“What we want to celebrate is the inspiration this brings to grass roots Dorset musicians, particularly the younger generation. That in this day and age of streaming music to the masses, as a songwriter and composer you should never be afraid to be experimental, to try new things and continue to discover where your voice and writing can take you.
“This award is for her often unseen or overlooked contribution to the music scene, but one that we think is highly important to recognise and should indeed be celebrated.”
A host of awards will be presented on the night, most of which will see the winners of each category announced from a list of three nominees decided by the judging panel of music writers, presenters, event organisers and PR specialists.
However, the Original Music Awards also feature a number of Special Awards for those whose music, and the circumstances in which it is made, call for wider recognition.

TREECYCLING CELEBRATING 10 YEARS
Diverse Abilities, Dorset’s disability charity has launched its annual Christmas tree recycling service sponsored by Waste Management Facilities.
The charity will be celebrating ten years of collecting Christmas Trees from the local community to be sustainably recycled to raise money for the disability charity.
Bookings are now being taken to have your Christmas tree collected on Thursday 9 January until Sunday 12 January 2025 from Poole, Bournemouth, Christchurch, East Dorset and Ringwood.
Francesca Potton, community fundraiser, commented: “We’re thrilled to be celebrating ten years of Treecycling. We were the first charity in the area to introduce this scheme, and it’s become one of our most important fundraisers of the year and allows us to raise vital money and truly makes a huge difference in our efforts to continue supporting more than 1,600 children and adults with physical and learning disabilities across the county.”

Tangle and MAST Mayflower Studios are partnering to deliver WOVEN, a safe space for African, Caribbean and Global Majority live performance artists living in Southampton and the surrounding areas to meet and connect regularly as an artist-led community.
The WOVEN network offers opportunities for training and learning at MAST, social events, allyship, and a space to share projects and working practices. Their hope is to build a community where members with diverse skillsets can connect, form working relationships and support each other.
This is a newly formed group. Whilst theatre is their passion, they welcome African, Caribbean and Global Majority creatives working in any live performance artform to join them in sharing and embarking on this journey together.

The Purbeck Film Festival was delighted to kick off its 2024 edition on Friday (18 October) with an unforgettable launch event at the Mowlem Theatre in Swanage, headlined by the acclaimed theatre and film director Sir Sam Mendes.

Maximalism is back
and it’s brighter and bolder than ever
Take inspiration from Dulux Colour of the Year 2025, True Joy – a sunny yellow – to create a maximalist interior, says Sam Wylie-Harris.
A bright, sunny colour palette is usually associated with summertime schemes – but this year as autumn takes hold, decor is hotting up.
As we head towards the colder, darker days, maximalism is the trend that’s really serving the feel-good vibes, says Sophie Robinson, interior design expert and champion of colour.
“It’s all about making bold, expressive and joyous design choices,” says Robinson. “I’ve always believed more is more, and if you’re someone who loves colour, textiles, and beautiful things like me, maximalism is your go-to interior trend.”

In fact, now is the perfect time to embrace colour, Robinson believes: “When the world outside is grey and cold, your home can be a warm, vibrant, sanctuary full of life, personality and optimism.”
The more-is-more approach to decorating isn’t about creating cluttered chaos, however. “It’s about layering thoughtfully and showcasing your unique personality. And nothing brings that out better than colour,” adds Robinson, who also runs an online course on this theme (How To Create a Maximalist Interior).
While winter may seem like the time to layer up the neutrals, it’s actually an opportunity to go big with rich bold hues in order to bring warmth and energy into your home, she Robinson.
“When it comes to picking a colour, take inspiration from Dulux Colour of the Year for 2025, True Joy – a sunny yellow, radiating warmth and positivity,” she suggests. “It’s the perfect example of a colour that can brighten up your space and mood during the winter months.”
Whether you choose to roll it out on all four walls or do a quick mini makeover by painting your front door, she says this happy shade will be sure to help combat the winter blues.
“This is the perfect colour for a maximalist home that’s unapologetically bold, and a strong colour like True Joy exudes confidence.”

The key to embracing maximalism, for Robinson, is layering. “When it’s cold outside, we want our homes to feel like a cosy retreat, and layering different colours helps you achieve that,” she explains.
If you’re not quite ready to commit to colourful walls, she suggests trying to layer colour through your furnishings instead.
“Jewel tones like emerald green, sapphire blue and amethyst purple work beautifully with brighter shades – these colours complement each other and create a sense of warmth and richness,” enthuses Robinson. “Incorporate textured throws, cushions, and rugs to build a space that feels both luxurious and cosy.”
Moreover, maximalism is all about creating a welcoming vibe – and the designer says she loves mixing patterns and textures in order to create a comforting, convivial space.
Choose a bold pattern as a starting point, she suggests: “Be it a floral, geometric, or stripe, and then use this as your core colour palette to mix in other patterns that share similar colours.
“This way, you can make sure your pattern mixing stays harmonious,” Robinson continues. “Mixing plenty of different patterns – and indeed different scales – has a busy and energising effect visually, which can really cheer up a space. A great antidote when everything outside feels dreary.”
Texture is another key player in making a room feel snug and inviting during winter, says Robinson – and once again, maximalism calls you to layer, layer, layer.
From super soft textiles like velvet, wool and silk, to contrasting raw timber, sisal and marble, she says they all play together in creating depth and interest in a room.
“Velvet, in particular, enhances colour beautifully – it has a plush pile that makes rich hues like coral, teal, and mustard glow,” she says.
“Lighting is crucial, especially during short, dark days of winter. Maximalist interiors come to life when the accent lighting is done right.
“Don’t rely solely on one large overhead light, instead use a mix of table lamps, floor lamps and wall sconces to create layers of light around the room. With a lack of sun-filled daylight, warm-toned bulbs become your best friend.”
Avoid cool-toned lights, adds Robinson, which can make bright colours feel flat – especially during winter when we need all the warmth we can get. “Warm lighting will make your vibrant colours feel inviting rather than harsh.”
Finally, she says maximalism isn’t just about bold colour and clashing patterns. It’s about creating an eclecticstyled home that feels unique to you.
Avoid trying to be overly co-ordinated or matching schemes, she advises, and instead opt for mixing different styles and periods in a way that feels uncontrived and lived-in.

And do not to be afraid of pairing a contemporary velvet armchair with a vintage wooden sideboard or traditional patterned rug, for example.
“The beauty of maximalism is in its diversity – your room should feel like it’s evolved over time, full of stories and personality,” says Robinson.
“Just remember colour has the power to energise and uplift us, and in the darker months, we need that more than ever.
“Lean into it, layer it, and embrace the journey of creating a home you love.”

Why are heat pumps so important in tackling the climate crisis?
Most homes have traditionally been heated by oil or gas, but these polluting and expensive fossil fuels are exposed to the volatilities of the international energy markets.

These are Fred Sirieix’s top places for holidays and haute cuisine on home ground.
Celebrity maître d’hotel and proud dad Fred Sirieix may have recently returned from Paris, where he saw his daughter Andrea Spendolini-Sirieix win a bronze medal in the women’s synchronised diving – but his heart belongs to Britain.
The enthusiastic TV personality, who with Gordon Ramsay and Gino D’Acampo has toured Europe and the US in search of culinary delights in ITV’s Gordon, Gino And Fred: Road Trip, is now focusing his attention closer to home, with his memoir, Seriously British.
Brought up in Limoges, in western France, where meals were elaborate and rigid, and food was predominantly French cuisine, he left for the UK in 1992 at the age of 20 after securing a job at the three Michelin-starred restaurant La Tante Claire in Chelsea.
The book is a homage to Britain, its beautiful countryside, buzzing cities, wonderful locally-sourced ingredients and the culture he so loves.
“I’ve been here for 32 years, which is longer than I’ve been in France,” he reflects. “I feel British.” Sirieix, who has two daughters from a previous relationship, lives in Kent with his partner, who he calls ‘Fruitcake’ to protect her privacy.
He has long embraced British culture and in his book relays stories of all the wonderful places he has visited during his career, from Devon and Cornwall, to the Lake District and Loch Fyne, Scotland.
Here, he looks at five of his favourite UK destinations.
The New Forest
“In the New Forest I drank English sparkling wine, called Hambledon, for the first time. You’ve got to get a bottle, it’s very good. There’s a fruitiness to it, it’s biscotti with lovely fine bubbles and it’s perfectly balanced, very elegant. “I was staying in a hotel with Fruitcake and we were drinking it in the spa. It was a lovely, romantic experience.
“I love the woods in the New Forest – you can walk for miles and I love being lost in the British countryside. It’s also very close to the sea so you’ve got the best of both worlds, not only in terms of food but in terms of scenery. You have the wild ponies.”

The Gower Peninsula, Wales
“I went there three or four years ago, filming an episode of Remarkable Places To Eat with (chef, food writer and Wahaca co-founder) Thomasina Miers – it was insane, miles and miles of sand, unspoilt beaches and there’s nobody there.
“There’s a very rich gastronomy there that we don’t know in London or in other parts of the UK, like laverbread. It’s made with seaweed and there are different recipes. We went to this restaurant on the beach where laverbread was being made with fresh seaweed.
“Another time, I was walking in the Gower and I remember coming across these three people travelling together who were camping. We stopped and asked what they were doing and one of them replied, saying he was travelling with his sister and a friend. They were cooking on the fire and invited me for a beer.

“It was lovely, so simple. There was no chi-chi. They offered me food they were cooking on their stove – a bean casserole with some sausages.
“After about an hour, he said, ‘Hey, are you the guy…?’ and I said, ‘Yeah, I’m the guy’ and the girl said, ‘My brother is single’ and I said, ‘I’m going to get you on the next First Dates’. We exchanged emails, but it didn’t work out.”

“I was filming B&B By The Sea, very close to Bushmills, the oldest distillery in the UK. We met Rory, a local tour guide who knew everything about the history of Ireland, where it is now and where it might be going and we sat around the table with some local people. I found the Irish really warm and hospitable.
“The next day, I woke and said, ‘Guys, we are near the sea, let’s go and swim’. Rory had never been in the sea. But I said, ‘We have to enjoy everything that we’ve got’. And they reluctantly agreed. It was cold but it wasn’t freezing. It was the most amazing swim. Everyone was so exhilarated and excited.”

“I’m in Bromley now and what I love about Kent is that you are just at the border of London and the countryside. If I drive five minutes from my house I’m in the middle of nowhere. If I drive a little bit further I’m in the (Kent) Downs. You can go for 15-20km and you don’t see a soul.
“I love the rolling hills and the oast houses where they put the hops in the old days. You come across old villages and old houses, it’s very quaint, very British.
“The gardens are a delight because the Brits have a way with gardens. For me, a perfect garden has to be good enough to be in Chelsea Flower Show – that’s what I’m aiming for at home.”

“I’ve been to Edinburgh many times because my daughter has competed in Edinburgh a lot, especially British-led (diving) championships, which take place there.
“Waking up in Edinburgh in the shadow of the castle and walking from the western end of the Royal Mile, you get gloriously lost in intoxicating myths and legends.
“The great thing is that you’re in a Scottish city, it’s old, it’s beautiful. I love the old stone buildings, and then you go to Arthur’s Seat. I like the Scottish accent and the warmth of the Scots and the fact they love the French because we have this old alliance, so they love you just because you are French.
“I’ve had some exquisite experiences at Tim Kitchin’s restaurant The Kitchin. Tom was head chef at Le Tante Claire, the first restaurant I ever worked in, so we come from the same pedigree. In Scotland you have the best seafood in the world: oysters, langoustine, lobster, crab, mussels, whelks, cockles, all this.”

With autumnal celebrations taking centre stage, a stylish refresh to complement a fall palette can really elevate your space.
Especially with doorscaping and tablescaping firmly on the design map, and fiery oranges, autumn garlands and popularity of pumpkins inspiring us to embrace Mother Nature – and forage for harmonious hues.
“Doorscaping has become an increasingly popular trend in recent years, and tends to surge around the autumn and Christmas period,” says Suzi Samaddar, room styling expert at Furn.
“As the trend continues to grow, it’s extended beyond the door itself and to the general porch area – meaning you can have more fun with your design choices,” highlights Samaddor.
“If you have a small covered bench in your doorway, start by adding outdoor cushions in traditional tones such as burnt orange, honey yellow and burgundy,” suggests Samaddor.

She continues: “Memory is intrinsically linked to scent, so infusing your home with seasonal fragrances like cinnamon, gingerbread or bergamot can help give those cherished moments a more lasting impact.”

Either option will still achieve the desired result of adding autumnal warmth and character to your dining experience, outlines Clark. “Tie your scheme together with retro-coloured glassware.”

Jack and Amber, the heart and soul behind this unique duo, create music that channels ancestral voices, celebrating life, love, and unity beyond language and borders. Their sound is deeply rooted in the earth, drawing on ancient techniques and instruments, yet evolves with a natural authenticity that refuses to conform. In this interview, they share insights into their creative journey, their spiritual connection to music, and their dedication to reshaping how audiences experience sound. How would you describe the essence of your music to someone who’s never heard tribal music before?
Our sounds are sourced from deep within, echoing the voices of our ancestors and channelling love and connection to all living beings. We seek to share our journey, joyful without addiction and with deep gratitude for the gift of life on this planet.
What inspired you both to create this unique fusion of tribal sounds? Was there a specific moment or experience that sparked it?
Following three months of silence, tribal sounds guided Jack’s return to vocal power. For Amber, her voice was truly discovered within the realms of our love. Only time between presented the evolving blossoms of our music. As we explored around England, particularly Glastonbury, and the ‘Crops Not Shops’ community, inspiration stemmed.
Can you share with us the cultural or spiritual significance behind the tribal elements in your songs?
We don’t follow a specific religion; we believe powerful lessons can be learned when we are open to all cultures. Our music is about one Earth family and connecting with a higher power. Language can sometimes divide, whereas tribal sound is a universal song.
Your music feels like a departure from modern trends—how do you balance honouring traditional sounds with innovating something entirely new?
Only when we truly believe in the sound can our hearts pour. The nuance is a natural evolution, we just let it be. Of course, we are inspired by fellow artists, though, through meditation we find balance.
What role do instruments or vocal techniques play in shaping your distinctive sound? Do you incorporate any ancient or lesser-known instruments?
We discovered our voices singing amongst the elements, our techniques are free-flowing, we call back to the universe and the universe responds through us.
Amber plays a shamanic frame drum which resonates differently to modern drum kits, while Jack experiments
with a bow upon his guitar strings. Both instruments create ethereal frequencies transporting listeners beyond the present into feelings of ancestral unity.
How do you want your listeners to feel when they experience your music for the first time?
Compelled to sing alongside, fearless and primal, like brothers and sisters rekindling. A part of this vision is to transform lives, manifesting an ethos free from substances and without consuming or harming any living being. We want people to recognise the joy that is always within.
What challenges have you faced introducing a genre that many may not be familiar with? How do you overcome them?
We sometimes question whether our music is right for a venue; especially when there is a common desire for popular cover music. Though for messages to spread we can’t echo within the chambers of the agreed, so we, and the venues, must be brave. If they open their doors to more live original music, artists will dare to shine their light and bring new sounds to the world.
What are your songwriting and composing processes like? Is there a ritualistic or meditative aspect to your creation?
Songs arise in many magical ways, ‘Shed My Skin’ is inspired by a Mexican fire ceremony. Following the moment of inspiration, we allow our masculine and feminine energy to playfully bring us to the song’s destination.
Do you see your music as a bridge between different generations or cultures? How do you hope it resonates with diverse audiences?
The mission is to connect! Like the Hare Krishna movement in the 70s, we would love to help move the vibrations of different generations, cultures and audiences.
Where do you envision taking your sound in the future? Are there any upcoming collaborations or directions you’re excited to explore?
Already, we join our dear friend Ana Clara (@ mindfullnessarts) in creating a monthly ‘Immersive Art Universe’ in Boscombe, where communal creativity blossoms. We have plans for monthly Kirtan, a communitydriven form of mantra singing, open to all regardless of belief. We also have ambitions to grow the sounds of DiPPYBaMbA! We wish to meet like-minded musicians to join our tribal quest for magic. To reach larger audiences, awaken the souls of fellow spirits, and live harmoniously within this beautiful gift of life and sound.

‘Ferrari’ film producer puts New Forest country home and studios up for sale
Film and TV producer and FHM’s ‘Sexie ’ Charlotte Fantelli is the ep ome of the ‘self-made’ woman. From humble be nnings in Stroud, Glouce ershire, she arted her entrepreneurial journey at ju 14 years-old.
Two decades later, her net-worth hit seven figures and her films and TV shows were being enjoyed across the globe; From ITV to Netflix, Charlotte’s ‘male-skewing’ shows engaged fans from all over the world. In her recent article for Hollywood Magazine, following the premiere of her latest series, that sees her take cameras inside the top secret Ferrari factory and design centre in Maranello, Italy, she hinted at new things on the horizon. Speaking to House & Lifestyle magazine, she tells us that she is moving her home and studios as her life takes on a ‘new direction’.
The 4,500 square foot sprawling estate, set just 90 minutes outside of London is a stones throw from Southampton, beautiful beaches, and has direct New Forest access.

The main residence was developed just seven years ago, being converted from an original New Forest bungalow, but many of the character features remain, including original timber floors, a garden well and even a full size cellar.

‘All That Jazz’ and more: Faye Brookes talks Chicago, life on tour, and theatre’s thrill
Star of stage and screen, Faye Brookes, returns to the role of Roxie Hart in the UK and Ireland tour of CHICAGO which comes to Mayflower Theatre, Southampton from 19th to 23rd November. We caught up with Faye to chat all about life on the road, and all that jazz.
You are well known for your awardwinning turn as Kate Connor in Coronation Street, however you’re no stranger to the stage – what is it about theatre that keeps you coming back?
I love performing live. The stage is where I truly feel challenged as an actress. A place where I can play and really bring a character to life.
What are the main differences between preparing for a screen and stage role, and do you have a preference?
I think they’re equally challenging, I tend to do a lot of research for any role but I suppose the difference with TV is that you may get an opportunity to do another take whereas theatre is live, you only get one shot!
You previously played Roxie Hart to acclaim. Are you excited to revisit the role, and will you be approaching her differently this time around?
I’m so unbelievably grateful to be returning to play the role Roxie Hart. I adore her. Always have. Always will. She’s such an interesting character that I discover something new about her every day.
CHICAGO is the longest running American musical in Broadway and West End history. Why do you think the production stands the test of time?
There’s a reason why it’s the longest running American Musical, everyone can relate to the story in some way. To me it’s the perfect musical, there’s something for everyone.
CHICAGO features the famed music of John Kander and Fred Ebb. How would you describe the score, and do you have a favourite number to perform and/or watch? I think the score is timeless, unforgettable rhythms, toe tapping numbers throughout and the most stunning jazz melodies. My favourite number … and I love them All!
Probably “Roxie” and “Me & My Baby”
Touring a musical is no easy feat. How do you keep yourself on top form both physically and mentally?
Honestly - a lot of discipline. To perform every show to the best of my ability I must make sure I take care of myself, mind, body and spirit. I will be quite strict with my diet so that I’m fuelled efficiently not only to get through the show but to keep my immune system strong. Sleep is vital, and meditation for focus and peace of mind.
You were the runner-up on Dancing On Ice in 2021. Would you be open to any more TV competitions and/ or learning another challenging skill?
I loved learning how to ice skate, I’ll forever treasure my time on Dancing On Ice. I’d never say no to ‘Strictly Come Dancing’ but for now I’m totally focused on performing onstage or acting for TV roles
Is there a piece of advice you’ve received or that you would pass on to anyone hoping to go into the creative industry?

What are you looking forward to about visiting Southampton on the tour?
I previously played Goldilocks in the Panto at the Mayflower, alongside Jason Donovan, and made some incredible friends. I’m looking forward to coming back with Chicago.

Isn’t it time solar was standard for new builds?
Currently, fewer than 5% of UK homes have solar panels. With the government driving a surge in home building over the next five years, and the new Future Homes and Buildings Standards on the horizon, now is the time to take bold action to on solar to tackle the climate & energy crisis, argues Andrew Woodru , MD of Arrow Energy Solutions, an installer covering the South and Southwest.
The legislative landscape
Despite the clear environmental and financial benefits of solar panels, there isn’t legislation requiring their installation on new homes. Instead, developers are left to decide whether to include them, and many opt not to, or only do so in the minority of projects.
Energy e iciency standards for new homes are already in place across the UK, and they are set to get tougher.
The upcoming 2025 Future Homes and Buildings Standard aims to deliver zero-carbon-ready homes, with the consultation pro ering two options, one of which doesn’t mention solar at all:
Option 1 includes “high-e iciency solar PV panels covering the equivalent of 40% of the home’s ground floor area” along with a wastewater heat recovery system, increased airtightness and a decentralised mechanical ventilation (dMEV) system.
Option 2, which does not include those elements, would have lower additional build costs but be less beneficial in terms of consumer bills.
Both include, “a high-e iciency air source heat pump and good fabric standards to minimise heat loss from windows, walls, floors and roofs and high performance standards for domestic hot water storage.”
Surely, with air source heat pumps becoming standard in new homes—doubling energy consumption—solar panels are even more critical?
The case for mandatory solar systems
One major barrier to mandatory solar is cost; Installing solar panels could add around £6,200 to construction costs. However, this is o set by long-term savings on energy bills, which can amount to over £40,000 during a system’s lifetime for a typical home (figures from Solar Energy UK). Installing solar panels during construction rather than retrofitting is cheaper and also means you can optimise their e iciency too.
The Energy Saving Trust estimates that the average UK home with a solar PV system can reduce carbon emissions by between 1.3 to 1.6 tonnes per year –making them more attractive to buyers and renters who increasingly value eco-friendly features, as surveys by Legal and General and Landlord Today have shown.
Political as well as public support is growing. A YouGov survey found that 70% of MPs support the idea of mandatory solar, and a coalition of housing
and environmental organizations has called on the government to be more ambitious with its Future Homes Standard – specifically that all new homes incorporate integrated solar PV as a standard feature.
The Time is Now
As the new Labour government plans to build 1.5 million homes within five years, this is a key moment to act and set a strong foundation for the future.
We already have a huge mountain to climb in terms of improving the current housing stock, so it seems madness to me that we are not moving faster to ensure new homes are properly equipped to be net zero, even net contributors to the decarbonised grid – and for that, solar is the obvious choice.
With new homes currently so high on the political agenda, and a surge in building on the horizon, now is the moment to get this right.

His father was a baker, and Hollywood soon followed in his footsteps – working in exclusive hotels like The Dorchester in London. He even set up the Paul Hollywood Artisan Bread company, making a name for himself in 2008 for making a £15-a-loaf Roquefort and almond sourdough sold in Harrods, which at the time The Telegraph claimed was the most expensive loaf in Britain.
Hollywood, 58, is now best known as a steely-eyed judge on The Great British Bake Off, which recently kicked off its 15th series.

Pain de campagne
MAKES 1 LOAF
INGREDIENTS
400g strong white flour, plus extra for dusting
100g rye flour
10g salt
20g yeast
50g butter, softened
Large bunch of fresh oregano, destalked and chopped
300ml water
1. Put all the ingredients, except the water, into a bowl, then slowly add the water and mix in with your hands until all the flour on the sides of the bowl has been incorporated.
2. Tip the dough out onto a lightly floured surface and knead for six minutes. Put the dough back in the bowl and leave for two hours.
3. Line a baking tray. Tip the dough out onto a floured surface and shape into a ball, then slightly flatten with your hands and dust with flour. Using a knife, mark out a square shape on top of the dough, put on the baking tray and leave to rise for one hour.
4. Preheat the oven to 220°C/425°F/gas mark 7. Bake for 30 minutes until golden brown, then transfer to a wire rack to cool.

MAKES 4 LOAVES
1. Put the flour, yeast and salt into a food mixer, taking care not to put the salt on top of the yeast.
2. Add 300ml of the water along with the olive oil and, using a dough hook and slow speed, mix for three minutes to bring the ingredients together.
3. Slowly begin to add the remaining water and mix for a further five to eight minutes on a medium speed. The dough should now be wet and stretch easily when pulled.
4. Place the dough into an oiled two litre plastic tub and leave for about two hours, or until doubled in size.
5. Line two baking trays. Tip the dough out onto a heavily floured surface and cut the dough in half lengthways, then divide each half in two lengthways so you have four pieces of dough.
6. Gently stretch each piece of dough so it is about 20.5cm long, then place on the lined baking trays to rest for one hour.
7. Preheat the oven to 200°C/400°F/gas mark 6. Dust the loaves with flour and bake for 20–25 minutes until golden brown, then transfer to a wire rack to cool.
Wholemeal soda bread
MAKES 1 LOAF
1. Preheat the oven to 200°C/400°F/gas mark 6. Line a baking tray.
2. Put all the ingredients into a large bowl and work together to form a soft dough, adding a dash more milk if necessary.
3. Shape into a ball and flatten slightly, then dust the top with a little flour and cut a cross into the top.
4. Put onto the baking tray and bake for 30–35 minutes until golden brown. Transfer to a wire rack to cool.
Variation: This bread can be made with 100 per cent white flour – just replace the wholemeal flour with 250g white flour. Proceed as above.

Designs are chosen! The Great Tail Trail reaches an exciting milestone
The final designs for The Great Tail Trail sculptures have been chosen by their sponsors at an exciting event held at AFC Bournemouth’s Vitality Stadium.
Nearly 500 designs were submitted earlier this year by artists all hoping to see their artwork appear on one of 45 giant mermaid tail sculptures during next spring’s 8-week trail across Bournemouth, Christchurch and Poole (BCP). The entries were whittled down to a final shortlist and local business sponsors were asked to choose their favourites at the design selection event.
The trail will raise vital funds and awareness for Julia’s House, Dorset’s local children’s hospice charity.

The last few winters have been challenging for European ski resorts, due largely to a changing climate and the ongoing cost of living crisis. But there’s a strong sense of optimism for the months ahead.
As a result of El Nino, Europe will likely experience colder weather this winter; in September, some of the coldest temperatures on record were recorded in the Alps and snow is already falling in higher altitude resorts. The rising strength of sterling in recent weeks also means that many resorts are becoming more affordable,
particularly in lesser-known regions where pistes have been mistakenly overlooked.

Italian resorts offer the best value
According to early data from the Post Office Ski Resort Report due for publication in December, Italian resorts are likely to offer British skiers some of the best value skiing in Europe.
Of the 36 European resorts surveyed in partnership with Crystal Ski Holidays, Bardonecchia has the best prices. Although the cost of a week’s skiing has risen by 3.9 per cent year-on-year to £405.48, it’s still 12% cheaper than its closest competitor – Norwegian resort Norefjell.

Travelling to Europe’s northernmost slopes in the Nordics presents an opportunity to ski while witnessing the natural phenomenon, combining two holidays in one.
“With its long ski season, stretching from November to the end of April, Finland offers a unique winter wonderland experience,” says Amy Hope, managing director from specialist operator The Aurora Zone.
“With the abundance of snow lasting approximately 200 days a year, resorts such as the award-winning Levi and Iso Syote offer well-groomed, uncrowded slopes that perfectly complement the full range of winter activities available.”
From December 3, reaching the region will be much easier when British Airways launch a new twice weekly route from Gatwick to Ivalo.
For snow-sure slopes head north
A combination of dependable snowfall and beautiful landscapes is attracting more winter sports enthusiasts to Norway. This season, operator Ski Solutions (skisolutions. com) has introduced two new resorts in the region.
Surrounded by pine forests and wooden cabins, Gausta in Telemark has slopes reaching up to 1,880 metres and reliable snowfall. Stay at the Gaustablikk Mountain Resort with saunas on the frozen lake, where seven nights’ half-board costs from £1,145pp (two sharing), including flights and transfers.
With a ski season running from November to May, Alpine ski resort Narvik has a range of slopes to suit all abilities, with the largest drop heights in Scandinavia and panoramic fjord views. A seven-night self-catering stay at Basecamp Narvik, with ski-in/ski-out access to the slopes, costs from £1,245pp (two sharing), including flights and transfers.

Slash costs by choosing smaller resorts
Greater demand means big name resorts can command higher prices. But it’s possible to have an (almost) equally brilliant experience at a reduced cost by opting for under-the-radar slopes nearby.
“Choosing a lesser-known or smaller ski resort connected to a big ski area is one of our top tips for slashing holiday costs,” says Marcus Blunt, co-founder of specialist ski operator Heidi. “Quieter resorts can also mean less time queuing, and an overall more chilled-out experience.”
Blunt suggests Brides Les Bains in France’s Three Valleys, which is connected by cable car to the exclusive high-altitude resort of Meribel. Les Menuires and Saint-Martin-De-Belleville give access to the Three Valley ski area, while Fieberbrunn in Austria is a more cost-effective option than Saalbach-Hinterglemm for exploring the Skicircus valley.
He also recommends avoiding Saturday flights or slightly shortening trips to five or six nights instead of seven.
“We’ve seen a huge surge in shorter ski trips and we suspect budget is one of the key reasons – you don’t just save on accommodation, but also kit hire and lift passes.”

We all want to be living our best life – and that’s certainly reflected in the emerging home design trends we’re seeing right now. “Insights drawn from the 2024 Emerging Trends Report reveal a desire to bring a sense of calm into the home, through wellness features and soothing shades of green,” says Amanda Pollard, senior editor at home and design platform, Houzz.
“Along with those trends, homeowners are showing a growing interest in dedicated leisure spaces for all ages, and an emphasis on elevating home entrances.”

There’s an appetite for home design that conjures wellness vibes. As we increasingly seek stress-free environments, an increasingly popular concept is multifunctional wellness. “Which can include a combination of workout facilities, spa-like bathrooms and, in some cases, even an adjoining kitchen for post-workout refreshments,” says Pollard.
Zoe Grey, regional design consultant for outbuildings and extensions at Oakwrights, says: “Many of our clients looking for a pool house or gym opt for a single storey building – a wonderful vaulted ceiling and plenty of glazing creates a light, fresh room.
“It’s important to ensure wellness outbuildings have all the facilities to be self-sufficient,” Grey adds. “Including showers, water closets and kitchens, or bars to entertain friends and family. And a door that connects to outside entertaining areas and guest accommodations.”
Green interiors
With the trend for green continuing, choosing green colours for home decor helps create a sense of tranquillity and connection to nature. As Ervis Ibra, managing director at Grand Projects, highlights, this shade creates “a calming and refreshing environment”.
Ibra adds: “Additionally, green is versatile and can complement a variety of styles, from modern to rustic, making it a popular choice for a cohesive and aesthetically pleasing home.”
Pollard notes there’s been a particular rise in demand for green kitchens and cabinets.
“However, more homeowners are looking to incorporate this soothing shade in other areas of the home, with searches for ‘green living rooms’, ‘green bathrooms,’ and ‘green walls on the rise,” she adds.
Impressionable thresholds
“When starting a project, we find the entrances to homes are so often overlooked and undervalued,” says Connor Beckmann, architectural designer and director at Beckmann Architecture.
But this is part of the home that, if well designed, can be functional as well as welcoming. “They are spaces we always encourage to be prioritised, as they give the first and last impression of your home,” Beckmann adds. “They should be a focal point that attracts attention, while also being a functional space.”
To create the optimal entryway, he says to make sure it’s uncluttered and, if possible, maximises any natural light. “Whether that be through light-boosting paint colours, a glass panelled front door, or window treatments that allow light to pass through,” he adds.

Lindsey Roberts, director at Forrester Roberts Interior Design, says: “We all need a bit of space, especially when more people are working from home. Having a dedicated personal space for relaxation is less of a luxury and more a necessity for wellbeing, whether it’s to switch off from work, or have some time away from other family members.

No matter how big or small, she says giving the space a bit of thought is well worth the effort. “If it’s relaxation that’s needed, it should be designed to be comfortable and calming, with ambient lighting,” says Roberts.
Practical requirements should be considered as well. “For example, power for a reading light or devices such as headphones,” Roberts adds.
“Your space should be as individual as you are. It’s not just about getting it right visually and choosing colours that appeal to you – thought should be given to each of the senses.. A good sign you’ve got it right is if your shoulders drop as you enter – and you just can’t help but look forward to the time you’ll spend there.”

She continues. “Traditionally, tactile furnishing fabrics such as velvets and boucle in rich and sumptuous colours have offered a real touch of luxury.”
“In recent years we’ve also seen sofas with well-designed curves, fluting and shapely turned legs further elevating the look of a space.”

For example, if you have a curvy sofa with fluting or piping, Lancaster says a few carefully chosen accessories with a similar silhouette or design detail will help to tie the look together.
“And create a cohesive scheme which looks greater than the sum of its parts.”

“Good design doesn’t have to break the bank, and being detail-oriented is a great way to make a big impact through small changes,” states Mara Rypacek Miller, managing director and founder, Industville.
“The key is to invest in a few hero pieces that inject a refined elegance, whether that’s through uplifting finishes like metal knurling, the texture of an organic rug, or simply through a more minimalist or classic style.”
A timeless lamp style made from marble is the perfect example of a luxe-for-less aesthetic that will never go out of style, suggests Miller.
“Opting for a hand-crafted design has the added feelgood factor of supporting artisans and sustainable practices,” she continues. “Something that’s becoming increasingly important when choosing décor pieces.”
Furthermore, Miller says statement pieces such as mirrors, wall art, lighting or quality rugs not only serve as focal points, “but will aid the feeling of a truly considered and thought through scheme that evokes luxury.”
One of the easiest ways to make a space feel brighter and more inviting is by laying down a rug, notes Miller. “A well-chosen rug can instantly elevate the feel of any room – opt for handcrafted designs and unique textures. This subtle attention to detail will add depth and a sense of luxury, making your home feel more elegant.”
On a smaller scale, she says inexpensive changes include replacing ordinary bulbs with decorative alternatives, to add unique character to any room.
“You can also add subtle touches of luxury by mixing textures, such as velvet cushions, silk throws, and linen lampshades for the table lamps.”
Streamline your space
“Streamlined spaces where clutter is easily hidden can be a quick win when it comes to elevating most rooms in the house,” says Rachal Hutcheson, national retail manager, Sharps.
“Integrated storage and shelving in a smooth and concise colour palette that offsets the room is a great way to establish a serene and luxurious interior.”
She says fitted pieces also help avoid the common problem of having too much furniture in one room. “A mistake high on the list of things that can quickly cheapen the look of any living space.”

BMW PLANS HYDROGEN LAUNCH IN 2028
BMW plans to launch its first ever production fuel cell car in 2028. BMW and Toyota are pooling their considerable resources to bring a new generation of fuel cell technology to the roads.
The two companies will jointly develop the powertrain system for passenger vehicles with the core fuel cell technology creating applications for both passenger and commercial vehicles.
The companies plan to launch individual models that will utilise the jointly developed technology and both companies are keen to stress their individual and distinct identities will be maintained.
BMW plan to offer an existing model in an additional hydrogen fuel cell variant.
The German manufacturer also acknowledged that the full potential use of hydrogen needs the establishment of a refuelling infrastructure.
ŠKODA FABIA - 25 YEARS OF SALES
For 25 years, the Škoda Fabia has been a cornerstone of the Czech brand’s product range. Along with the Octavia, it has enjoyed a continuous production run and become the brand’s second biggest selling car of all time.
The UK has played a major part in the Fabia’s success story. British buyers adopted the Fabia in big numbers and it has been one of the brand’s biggest markets in Europe, along with Germany, the Czech Republic and Poland.
The Fabia’s sales success highlights its broad appeal across all markets. Almost 1.8 million examples of the first-generation car were built, with the second-generation car adding 1.7 million to the total. To date, more than 4.9 million Fabias have been built since production started in 1999, a figure only surpassed in the Škoda range by the Octavia.
The appeal of the Fabia has been remarkably broad. While value-packed entry level models have enabled many buyers to choose a new car for the first time, at the
other end of the range, vRS models gave the Fabia range a more focused, sporting edge. Indeed, cars like the turbo-diesel-powered Mk1 Fabia vRS have become modern classics. The same can also be said for the Mk2 vRS, which introduced the sector’s first turbocharged and supercharged drivetrain.
Škoda revealed the final design of the Fabia at the 1999 Frankfurt Motor Show. The 1.0 and 1.4 8v engines offered at launch were reworked versions of the 1.3-litre units developed for the Felicia and Favorit. Both engines remained part of the range until a mid-life facelift was introduced in 2004. The Fabia proved to be an instant it with both buyers and critics, who praised the model for its style, practicality and value for money. It was named overall Car of the Year 2000 by What Car?
Škoda’s engineering reputation grew further in 2003 with the introduction of the Fabia vRS powered by a 1.9-litre 130PS turbodiesel engine.
Launched 21 years after the first-generation model, the fourth Škoda model to wear the Fabia badge went on sale in the UK at the end of 2021. The Fabia currently comes with four petrol engine options with outputs ranging from 80PS to 150PS.
ALL-NEW DACIA DUSTER
The All-New Dacia Duster is keeping up with tradition of the marque with prices starting from just £18,745. Building on the merits of its predecessor, the latest model enhances the tried and tested formula with a new design, greater interior comfort and space, and the latest technologies including hybrid powertrains and advancements in safety.
The underbody shields, wheel-arch guards, snorkel and bumper inserts are made from a sturdy new material called Starkle that is made from up to 20% recycled composition and is 100% recyclable. The front and rear skid plates are dyed in the mass, meaning the plastic is already coloured when the part is made. This is better for the environment since it does away with the need for painting.
Inside, the Expression models and above are equipped with a 7-inch digital driver display and a centrally-mounted 10.1-inch Media Display that has been angled towards
the driver. Wireless smartphone replication together with both Apple CarPlay and Android Auto is included, with Journey and Extreme models also benefiting from a wireless smartphone charger.
There’s increased ground clearance, approach and departure angles, and a new 4x4 Terrain Control on 4x4 models that offers a choice of five modes to match the prevailing conditions. In addition, a new Hill Descent Control automatically regulates the Duster’s speed during steep descents.
Powered by a choice of three engines the Hybrid 140 comprises a four-cylinder, 1.6-litre, 94 hp petrol engine, two electric motors and a clutchless gearbox. Its efficiency makes it possible to drive in all-electric mode up to 80% of the time in cities. The TCe 130 combines a threecylinder, 1.2-litre turbocharged petrol engine with a 48V mild-hybrid motor which aids the combustion engine when starting off or accelerating. Continuing Dacia’s promotion of LPG, the TCe 100 Bi-Fuel offers a combined range of more than 800 miles (WLTP) thanks to its dual 50-litre tanks. A dash-mounted button switches between petrol and LPG quickly. Dacia say the new Duster emits on average around 10% less CO2 than a comparable petrol engine.
Four trim levels are available – Essential, Expression, Journey, and Extreme – all with air conditioning, cruise control, rear parking sensors, and an array of advanced driver assistance systems as standard. The range starts at £18,745 with the Essential trim.
HONDA JAZZ
HYBRID – SMALL CAR, BIG SPACE
There are some cars that have the wrong kind of reputation, and some that have an unjustified reputation. The Honda Jazz definitely falls into that latter category because although it’s actually a great little car it’s also widely viewed as being the favourite of, how can one put it, more mature drivers.
In its latest form the Jazz Hybrid has all the virtues of a Honda, being well built, reliable and immensely practical for its size. Prices start at £26,885 with three trim levels in the line-up – Elegance, Advance, Advance Sport – and then the Crosstar which has a bit of an SUV vibe. Slightly raised ride height and plastic cladding to the wheel arches and door bottoms complete the look. Standard fare is generous to a fault, the lead-in version has everything from keyless entry and start and adaptive cruise through to navigation and Bluetooth with wireless CarPlay.
In addition to terrific practicality and space, given the Jazz’s diminutive proportions, the visibility is from another age, in a good way.
Lots of glass and slim pillars makes for a nice and airy interior. None of the lowered rooflines, slimline windows and chunky pillars that one normally expects nowadays. The magic rear seats offer a myriad of different folding options that can effectively turn the Jazz into nothing short of a small van. It is amazing what will fit inside it.
The 1.5-litre 4-cylinder engine is mated to not one but two electric motors with three drive modes – electric, hybrid and engine – and a CVT automatic transmission. Regular readers will know that CVTs have a particular characteristic where hard acceleration causes the engine revs to rise while the speed catches up. It can be quite
vocal so feathering the throttle makes life quieter and is soon adopted when you’re used to the car.
Electric power switches in seamlessly and the Jazz will run electric only at low speed or you can select engine power or full hybrid mode that leaves the car to choose which mode of power depending on driving conditions.
If you thought the Honda Jazz was car for downsizers, the more mature driver or those with just a weekly run to the shops, then think again. It looks smart, in my opinion, and has lots of standard equipment and seems to hold its price well on the used forecourt. All of which makes up for that higher initial purchase price.

SKODA OCTAVIA – IMPRESSIVELY PRACTICAL PERFORMER
I’ve commented before that not everyone loves cars, to many they’re merely practical, a means of getting from A to B, completing the school run or the daily commute. As long as it’s comfortable, economical and has enough space for all the paraphernalia that comes with daily travel tasks then it fulfils the requirements.
If that sounds like you then, except for the vRS model, the Skoda Octavia could be the one for your garage. Priced from £26,775 and offering amazing amounts of space for luggage and rear seat passengers in particular, lots of standard equipment and a decent range of engines, it’s no wonder it has become a staple of the Czech car maker’s range.
Standard fare on the lead-in version includes heated front seats, navigation, wireless phone charging, dual zone climate, powered, heated and folding door mirrors, LED lights, auto dimming rear view mirror and the signature Skoda accessory of an umbrella in the door.
There are petrol, petrol hybrid and diesel engines with power outputs of 116PS or 150PS and manual or automatic transmissions. Diesel has become a dirty word of late but in reality not only do they emit less Co2 than petrol but particulate levels have been cleaned up dramatically over the last few years. Given how the motoring world is moving to try and combat climate issues, if you want diesel power now is the time as less and less models offer the option.
Skoda’s 2.0-litre unit develops either 116PS with 6-speed manual gears or a healthy
150PS with DSG automatic transmission. In 150PS form the benchmark 62 mph is passed in 8.5 seconds and from my experience, even allowing for a margin of error, the fuel consumption figures are impressively good. In a busy week I covered over 600 miles and failed to exhaust the fuel tank and am confident I could have reached 700 miles on a single tank.
On the road the Octavia is a quiet and smooth performer with my only misgivings being too much touchscreen, that’s not especially intuitive, and too many ‘warning’ chimes for driver assistance thanks to European legislation. And why have Skoda not fitted a rear screen wiper?!
Of course for many their misgiving would be diesel power. For me the benefits outweigh the negatives, but even with petrol power the Octavia makes a very compelling case from entry level to the top-of-the tree. At the very top the vRS version adds some excitement to the practicality too.
FORD KUGA –PERFECT FOR URBAN COMMUTES OR FAR FLUNG ADVENTURES
Those of a certain age may remember when the Kuga in Ford’s sales brochures was spelt differently and wasn’t an SUV. The Cougar was a sleek and svelte prowler worthy of the big cat whose name it bore. The current KUGA, spelt differently and an SUV, has been in Ford’s brochures for longer than you may think. It was launched back in 2008 and as the different generations have come and gone it has got better and better.
The latest Kuga models are arguably the best yet with petrol, petrol hybrid and plug-in petrol hybrid power from 150PS to 243PS, front-wheel-drive and four-wheeldrive along with manual or automatic transmission. Standard fare on the entrylevel version is impressive, especially when you consider the starting price of £32,095.
LED lights, 13” touchscreen, Apple Car Play and Android Auto, rear view camera, front and rear parking sensors, heated, powered and folding door mirrors, rear privacy glass, useful sliding rear seats, keyless entry and start, quickclear heated front screen and cruise control.
My Active version sits one below the top-ofthe-range and with a 2.5-litre hybrid petrol unit, allied to CVT automatic transmission and all-wheel-drive, makes for a very practical, comfortable and well equipped travel companion. The full hybrid system offers smooth changes between gears and switches between electric, combustion and a combination of the two according to conditions. In terms of MPG, on a long haul up North to the Isle of Mull in Scotland, followed by lots of short journeys, it returned a near 50 mpg average.
On the road it handles well, but that shouldn’t be a surprise as every Ford I have driven, whether humble or expensive, handles well. In urban driving the Kuga hangs on to electric power for longer than a lot of hybrids, which is good, and when the engine does power up it’s discreet and smooth. Being a CVT rapid acceleration is accompanied by some vocal notes from under the bonnet as the engine revs rise while the Kuga gets up to speed. All CVTs share the same characteristic, but linked to the 2.4-litre petrol engine the Kuga is a smoother and quieter operation than many.
Overall the Kuga is an impressive means of travel whether for urban commutes or more far flung adventures that utilise the very effective all-wheel-drive. It manages to do its bit for the environment without the current (excuse the pun) impracticalities of a full EV.

Autumnal air fryer recipes to try 3
Pumpkin panzanella anyone?
Air fryers are now the third most-used appliance in British kitchens after toasters and microwave ovens, according to an annual survey.
The Good Food Nation study – which surveyed 2,003 UK adults – found that air fryers are now used more often than conventional electric ovens and conventional gas ovens. So, let’s make the most of all the wonderful seasonal produce autumn has to offer by roasting them to perfection in an air fryer.
We have spoken to chefs at Philips and Gousto who have shared their favourite air fryer recipes, and combined they make up the perfect three-course autumnal meal for any dinner party or date-night plans…
This indulgent double mushroom risotto recipe by Gousto is the perfect cosy, hearty meal to whip up on a crisp autumn evening. Autumn’s damp and cool conditions are perfect for mushrooms, so they taste great this time of year.

Mushroom risotto SERVES

INGREDIENTS
160g chestnut mushrooms
30ml Chinese rice wine sachet
1 spring onion
5g chives
150g portobello mushrooms
1 vegetable stock cube
40g Cheddar cheese
160g Arborio rice
3 garlic cloves
40g Cornish clotted cream
Takes 45-50 minutes
1. Boil a kettle and trim and finely slice the spring onion. Then chop the chives finely, and peel and finely chop (or grate) the garlic. Dissolve the veg stock cube in 650 millilitres boiled water.
2. Add a drizzle of vegetable oil to the air fryer, tear and crumble both the portobello and chestnut mushrooms directly into the air fryer. Cook at 200C for three to five minutes or until starting to brown and caramelise.
3. Once caramelised, transfer the mushrooms to a bowl and cover to keep warm. Add the sliced spring onion and half of the chopped chives (save the rest for garnish) with a knob of butter to the air fryer along with the Arborio rice, chopped garlic and Chinese rice wine. Stir to combine.
4. Add the vegetable stock and return to the air fryer and cook for 30-35 minutes, stirring every five minutes until all the stock is absorbed and the rice is cooked – this is your risotto. Meanwhile, grate the Cheddar cheese.
5. Once the risotto is cooked, stir in the grated cheese, clotted cream, and half of the mushrooms (save the other half for garnish). Add a little more boiled water if your risotto is too clumpy – a risotto should have an almost porridge-like consistency.
6. Season with pepper and serve the risotto in bowls. Top with the remaining mushrooms, a sprinkle of the remaining chives and a good grind of black pepper.

SERVES 4
INGREDIENTS
500g Hokkaido pumpkins
1 red onion, small
4tbsp of olive oil
200g of bread
70g of pecan nuts, unsalted
30g of pumpkin seeds
3tbsp of apple cider vinegar
1tsp of Dijon mustard
1tbsp of maple syrup
2 pinches of thyme
50g of baby squash
2tbsp of cranberries, dried
40g of feta cheese
Takes 25-30 minutes
Pumpkins aren’t just for decoration, they taste great in salads too! Martin Senders, Philips’ in-house air fryer chef, has shared the following pumpkin panzanella salad recipe, which encompasses a delicious contrast of crunchy croutons and sharp cranberries.
1. Wash the pumpkin and peel the onion. Dice both into roughly one centimetre pieces and season with one tablespoon of olive oil and salt to taste. Cut the bread into approximately two centimetre cubes, and brush or spray it with the one tablespoon of olive oil.
2. Add the pecans and pumpkin seeds to the left pan, and arrange the bread on top. Set the temperature to 190 degrees and cook for seven minutes.
3. Transfer the vegetables to the right pan to 180 degrees and cook for 15 minutes.
4. For the dressing, whisk together the remaining olive oil, apple cider vinegar, mustard, maple syrup, thyme and salt and pepper to taste.
5. Combine the roasted pumpkin, toasted bread, pecans and pumpkin seeds, baby spinach, and the prepared dressing in a bowl. Toss until everything is well combined. Top with the crumbled feta and cranberries.

Apples are particularly sweet and crisp this time of year – so why not incorporate them into a delicious dessert? This sweet recipe from Gousto is a crowd-pleaser that will make your mouth water. The rhubarb and apple compote adds a seasonal twist that’ll convert even the most devoted cinnamon roll purist.
1. Chop your rhubarb into small bite-size pieces. Peel, core and chop your apples into small cubes. Add your fruit to a saucepan with two tablespoons of water and maple syrup. Cook on a low heat for around 10-15 minutes until the fruit starts to soften.
2. Open and unravel your cinnamon swirls, spread your apple and rhubarb compote over the pastry and sprinkle over the chopped pecans (saving some for garnish).
3. Roll your pastry back up into a long roll, then chop each roll into five equal pieces. Do this with both packs to make 10 cinnamon rolls. Lightly oil the bottom of your air fryer then place in the cinnamon swirls (it’s okay if they are touching). Cook for eight to 12 minutes or until golden brown.
4. Carefully remove them from the air fryer and pop them onto a serving plate. Decorate with the icing provided and sprinkle over any remaining pecans.

Elf the Musical to tour to Southampton this December
After sell-out arena tours, Elf the Musical comes to Mayflower Theatre, Southampton where it will play Tuesday 3 - Saturday 7 December.
The stage show Elf the Musical features Santa’s magical flying sleigh, an audience snowball fight, a giant candy cane journey from the North Pole, amongst many spectacular scenes all set against amazing video-film backdrops on a large LED screen.
With a large cast and live orchestra, the winter spectacular will star one of the UK’s most exciting rising comedy talents, Jordan Conway, who will step into the big floppy shoes of Will Ferrell.
