An Italian Affair at Baan Thalia
For the second course we had deep-fried risotto on tomato basil mousse. The mousse took us to Italy with its strong taste of tomato and basil. This dish was accompanied by Barbella d’Alba superior ‘Bricco Airoli’, Piedmont, Italy 2010. We continued with Bollito Misto, slow cooked pork, beef, chicken and sausage with smoked herb infusion, mostarda and salsa verde. This was only for meat lovers. A strong wine was the accompaniment this time; Nebbiolo , Langhe, Italy ,2010. Nebbiolo wines are distinguished by their strong tannins, high acidity and distinctive scent – often described as “tar and roses”. For main course we had Roasted Lamb Cutlet with crusted bread and a garlic mousse, grilled vegetables and lamb juice; my favorite dish of the day. Garlic and lamb; what a great combination. Barolo ‘Buon Padre’ Piedmont, Italy 2007 is very rich, complex but balanced. Viberti Giovanni Winery presented five different red wines served with creative alternative Italian food at Baan Thalia restaurant at Anatara Resort Hua Hin. The chef once again surprised us with his choices. First course: ‘sala of duck confit, with rocket, orange, roasted walnuts and light Rossini cheese dressing’. This dish was accompanied with Dolcetto d’alba superior , Piedmont , Italy , 2010. The wine has slightly floral, juicy and more delicate characteristics. It has a pleasant bitter almond aftertaste, which is particularly present in those from Alba.

Is not easy to have wine after dessert but the chef made the difference by creating a cheese soufflé with onion jam and grilled pear on honey thyme sabayon. The last wine was for me was the most enjoyable of all; Barolo Riserva ‘La Volta’, Piedmont, 2006. Barolo is a delicious red wine from the Piedmont region of Northern Italy. It is made strictly from Nebbiolo grape; aromatic with rich tannins and characteristics of old oak, these wines are considered by most to be some Italy’s finest. Thanks one more time Anantara Hua Hin team who let us be part of this great wine dinner.

Zafran, New Indian Restaurant in Town. You Have to Try it!
Indian is one of my favorite cuisines and now I found one restaurant that serves Indian food the way it should be. An Indian chef creates traditional Indian food with his heart and we loved it. Great crispy samosas with curry chicken or potatoes arrived on our table and they disappear immediately. They are not only looking good but tasting good. Try the different dipping sauces to find your taste, I like the mint sauce. Lamb tikki masala, poha rice, butter chicken, lentil vegetarian mixture and warm Naan were some of the dishes we had at that night. Everything tasted delicious and my little advice “you need to be prepared to get your hands dirty to enjoy Indian food”, so don’t be ashamed to use your fingers, it tastes better. The menu is big and definitely you can find some yummy vegetarian dishes that might convert you to vegetarian also! The restaurant is located in the centre of Hua Hin, on the way to the central Hua Hin Beach but soon everyone will know where it is. Keep it a secret, you don’t want to be full when you go. The Chay Had Restaurant – Fine Dining At Its Best
What a great ambience and taste Chay Had restaurant offers to Hua Hin locals and tourists. We arrived at the Hilton Hua Hin Resort & Spa to be greeted by Naticha (Poy) in such a professional manner with an overwhelming warm smile. Shortly after we were escorted down to the relaxing Chay Had restaurant which looked and felt exceptional. Elegant lighting in the trees sets the evening for romance. The restaurant is a serious contender as the best fine dining experience in Hua Hin with sleek looks and keeping that all important relaxed feel. Elegant teak flooring is throughout and the restaurant is well positioned on the seafront to catch the magnificent sea breezes and the sea views. We all know how good this can be when dining in the heat! After being seated our wine choices were Stable Hill Private Cabernet Sauvignon (red)and Slent Farms which is a Sauvignon Blanc (white). Both had great depth and full flavour. We were served their signature three-course meal, as well as tasters which were simply divine, beginning with a Seafood Salad and Seafood Starter Platter. The platter consisted of 4 starters served together on one plate, containing Lemongrass Prawns, Crab Cakes, Hokkaido Scallop Ceviche and Thai Tuna Tartare. This was a great, well balanced, full flavored, fresh and extremely colorful starter! (Hua Hin Today recommendation). We swiftly moved into the main course and went for a few dishes which were all exceptional to taste. Cooked to perfection was the Boneless Lamb Shank Massaman, containing Pearl Onions, Potatoes, Pumpkin and Peanuts. I have to say these worked wonderfully together, the meat was like butter melting in your mouth. Next we tried the Soft-shell Crab Singapore-style Chilli, Crispy Skin Salmon with Chu Chee Curry, Sugar Snaps, Baby Corn, Bok Choy and the signature Wok Fried Rock Lobster accompanied with Black Pepper Sauce and Capsicum. These meals were of an exceptional standard and taste. To bring together Eastern and Western cuisine is not an easy task by any means. The Chay Had proved it can be done, and they deliver in style. The Desert; WOW!!! I can’t even begin to say how perfectly this was developed! All I can say is “compliments to the chef” When you are offered a “Thai Tea & Condensed Milk Crème Bruleè, you kinda ask yourself, can they do it??? Well let me tell you… they nailed it!! I was lost for words! This proved an exceptional dessert and we will be back. So what do we think??? Well it was a fantastic mouth watering experience, bursting with flavours from all corners of the world. They have genuinely accomplished East meets West and have truly satisfied the diners of Hua Hin. All meals were presented in an orderly form and these were fantastic value for money for the locals or the tourists. Unforgettable Champagne gourmet dinner at Palm Pavillion Centara Grand Beach Resort & Villas Hua Hin
On Sunday 21st of March we were invited to attend the most exclusive event of the year at the beautiful set up of the Centara Grand Beach Resort & Villas Hua Hin. There were many things that made this night special. The night began with a show of the Confrerie du Sabre s’ Or, who are devoted to promote the art of Sabrag; -opening Champagne with a sword. Each guest had the chance to try this technique as a unique experience.
The lychee and mint sherbet arrived to refresh our palate and let us continue with the main course feeling cleansed. This was an Australian beef fillet at 56’C’ with baby carrots, creamy mashed potatoes with black truffle. The night closed with ‘coconut mousse and passion fruit, mango cream’ with almond, hazelnut, coconut dacquoise and chocolate, glanduja ice cream with banana and coconut macalong.
Gael Lardiere, the executive chef and his team created a special menu drawing inspiration from French cuisine to exceed all expectations.
All night Pommery Champagne was flowing into our glasses while we were enjoying the notes of the harp performed by the beautiful Italian lady Chiara.
For starters we had duck foie gras terrine served with red onion, tomato and coriander seed chutney and pan-fried brioche with butter, mixed lettuce and herb salad with balsamic olive oil dressing.
The event was attended by the French Ambassador to Thailand H.E. Mr. Thierry Viteu and Mrs. Catherine Viteu who came to Hua Hin especially for the event.
The second course was ‘ravioli with lobster’, foie gras wild sautéed mushrooms with black truffle leek jus. This was a surprisingly beautiful combination of earth and sea.

White toast 4 slices Espelette chilli pepper Method 24 hour earlier, start black olive tapenade. Marinated olive oil : In extra virgin olive oil, add garlic clove, thyme, crushed fennel, tarragon, basil, cardamon seeds, grounded cumin and bay leaf. Cover with clingfilm and store at room temperature. Preheat oven at 180c. Marinate Tuna loin in olive oil, salt & pepper.

Clean vegetables and salads. Cut toast bread in thin sticks, season with olive oil, salt & pepper and bake for 10 min until golden brown. Rub the crispy bread with garlic. Grate cucumber, cut all vegetables in different sizes and shapes. Make classic dressing mixing balsamico with salt and pepper first. Then add mustard and olive oil. Tapenade : In a food processor, mix well anchovies first. It must be perfectly mixed. Then add capers and finally olives. Filter marinated olive oil and add to the mixture. Stir well. Season salads and vegetables with the classic balsamic dresing. At last, put the tuna loin in mixed sesame seeds to make them stick on it, and in a very hot pan, sear it on 4 sides. Dress your plate in a modern style : Mixed salad on the side, topped with few vegetables. Place some vegetables, halves of quail eggs and drop of delicious home made tapenade around the fish loin, Finish with crunchy garlicky crouton on top and sprinkle a touch of Espelette chilli pepper.
