THAILAND TO OFFER LAND OWNERSHIP AND 10 YEAR VISAS T he Long-Term Resident (LTR) visa aims to attract foreigners of “high potential” to live and work in Thailand.

The Board of Investment of Thailand (BOI) has confirmed that applications for the LTR visa will open on Sept 1, 2022.

“Thailand is introducing a new visa called “Long-Term Resident (LTR Visa)” which is a program that provides a range of tax and non-tax benefits to enhance the country’s attractiveness as a regional hub for living and doing business for ‘high-potential’ foreigners,” the BOI said.

“Today, Thailand is already home to multinational corporations from all over the world and one of the most important tourist destinations in Asia.

Thailand presents itself as a very attractive location for “work from anywhere” professionals.

“This new visa program is expected to attract new foreign residents, technologies and talents contributing to domestic spending and investment while supporting economic growth.

“The Thai government has set the target of attracting one million wealthy or talented foreign residents into the country over the next five years”, the BOI website reads.

The 10 year LTR visas will be offered across four categories: Wealthy Global Citizens, Wealthy Pensioners, Work-from-Thailand Professionals, and Highly-Skilled Professionals.

The BOI says the LTR visas will make living in Thailand long term more straight forward.

“There will be many privileges for LTR visa holders that will make living in Thailand long term easier and less bureaucratic”, the BOI says.

“These privileges include: discounted personal income tax rate, the removal of the requirement for employers to hire four Thai citizens per foreigner, fast track at international airports, 1 year reporting to Immigration instead of 90 days, and the overall ease of regulations concerning foreign residents”.

Holders will also be granted a digital work permit enabling them to work in Thailand.

For ‘Wealthy Pensioners’, these are defined as retirees aged 50 years and older who have “personal income of at least USD 80,000/year at the time of application”.

Alternatively, “in case of personal income below USD 80,000/year but

no less than USD 40,000/year, applicants must invest at least USD 250,000 in Thai government bonds, foreign direct investment, or Thai property.”

For ‘Work-from-Thailand Professional’ they need to show “personal income of a minimum of USD 80,000/year for the past two years”.

They also need to be employed by a “public company on a stock exchange or; Private company in operation for at least three years with combined revenue of at least USD 150 million in the last three years”.

The BOI also confirms that applications for the LTR Visa can be made at “the Royal Thai Embassies/the Royal Thai Consulate Generals overseas or Immigration offices in Thailand within 60 days from the issuance date of the endorsement letter”.

The BOI also confirms the processing fee for the 10 year LTR Visa is 50,000 baht per person.

The fee was originally meant to be 100,000 baht per person.

However, Deputy Government Spokesperson Rachada Dhnadirek announced in May that the fee would be reduced to 50,000 baht.

Thailand as a premium travel destination The news of the proposals regarding land ownership and 10 year visas for wealthy foreigners come at the same time stakeholders in the country’s tourism industry look set to make a further push to attract tourists with a higher spending power.

Speaking at an event in July aimed at promoting tourism in Thailand, Deputy Prime Minister Anutin Charnvirakul said the country should aim to become a “premium travel destination”.

Mr Anutin told representatives from many of the country’s leading hoteliers, businesses and private hospitals that they should no longer offer big discounts as a means to attract foreign tourists.

“We cannot let people come to Thailand and stay because it’s cheap,” said Mr Anutin who was speaking at the Thailand Moving Together, which was held at Suvarnabhumi airport.

Mr Anutin even made comparisons between Thailand and the luxury fashion brand Louis Vuitton.

“Hold your ground. Sell premium. The more expensive, the more customers,” he said.

“Otherwise Louis Vuitton wouldn’t have any sales.”

Mr Anutin’s remarks were also echoed by Tourism and Sports Minister Pipat Ratchakitprakarn, who said: “Instead they should say ‘because it works, it’s reasonable’, that’s where we can increase value”.

Recent years have seen Thailand repeatedly announce various strategies aimed at attracting so-called “quality tourists” who offer greater spending power.

In October 2021, Deputy Prime Minister and Energy Minister Supattanapong Punmeechaow said Thailand’s post pandemic recovery of its tourism industry would focus on quality rather than quantity.

“Instead of relying on 40 million tourists to generate 2 trillion baht in revenue, we will turn to focus on quality tourists who can spend more,” Mr Supattanapong said.

But even before the pandemic, Thailand was aiming to attract high quality tourists.

Back in 2017, Mr. Yuthasak Supasorn, Governor of the Tourism Authority of Thailand (TAT) credited the strategy of targeting higher quality tourists with a then rise in tourism revenue.

“2016 was another record year for Thailand’s tourism industry, and we hope to maintain this momentum and attract even more visitors over the next few months.

“I’d like to point out that the growth of revenue was larger than the growth in visitor numbers indicating that the strategy of targeting higher spending, higher quality tourists had been a great success over the past year,” he added.

ou will have seen that it forms part of the front page story of the August issue of Hua Hin Today: Thailand’s plan to allow foreigners to own up to 1 rai of land.

The government has said foreigners will be allowed to own 1 rai in return for an investment totaling 40 million baht, (approximately US$1.09 million) for three years.

Before now, it had not been possible for foreigners to own land in Thailand.

The government said the plans could help to attract as many as one million high spending foreigners to live in Thailand as expatriates.

The plans would also provide a significant boost to the Thai economy post COVID-19, by generating an estimated 1 trillion baht in new investment.

Such an act could also only apply to houses with a minimum value of say 5 million, 7.5 million or 10 million baht.

And while the plans may indeed attract some wealthy expats, the number of would-be buyers willing to shell out 40 million baht for one rai in Thailand might be few and far between.

This too would ensure foreigners of a certain level of spending power are able to invest in Thailand.

For most people, an investment of 40 million baht is simply out of reach.

If the goal is to spur foreign investment into the property market in Thailand, an alternative solution could be to establish something similar to Condominium Act but for houses or villas located on property developments or in gated communities - the likes of which are already popular among foreigners.

Under the Condominium Act, foreigners in Thailand are allowed to own up to 49 percent of the aggregate unit space in a condominium building.

As such, foreigners can own a condominium unit, freehold, with their ownership registered at the land office, legally recognised and all in their own name.

To apply such an act to property developments could see 49 percent of the total units being made available to foreigners to own outright - including the land it sits on up to a maximum of 1 rai.

This would ensure the majority of houses on a development would remain owned by Thai nationals but at the same time offers foreigners who are willing to invest in Thailand the security of owning property and land freehold.

Rather than being applied nationwide, the measures could be implemented in special tourism or economic zones.

These areas could be in places such as Hua Hin, Pattaya or Chiang Mai - locations which are already popular with foreign expats.

It could be applied to housing developments on the Eastern Seaboard or located near the Eastern Economic Corridor (EEC), for example, and used as a way to attract

ROTARY CLUB OF ROYAL HUA HIN FORMALLY INSTALLS NEW PRESIDENT

T

he Rotary Club of Royal Hua Hin formally installed a new president and executive committee during a ceremony held at the Amari Hua Hin on Saturday (July 23).

Mrs La-or Chinda, District Elect Governors 3330, presided over the inauguration of the President and Executive Committee of the Rotary Club of Royal Hua Hin, Rotaract Club Stamford International University, Rotaract Club Rajamangala University of Technology Rattanakosin Wang Klai Kangwon.

The ceremony saw Mr Phil Lawrence installed as the President of the Rotary Club of Royal Hua Hin for the 2022-2023 fiscal year.

Mrs La-or Chinda congratulated Mr Lawrence, and the new board of directors, as well as fellow Rotarians. She said that through everyone’s cooperation, Rotary will be a powerful force in driving social service work in the future, as well as leading the Rotary Club of Royal Hua Hin to achieve its goals.

Also in attendance was Mr. Nopporn Wutthikul, the Mayor of Hua Hin, Police Colonel Hongphrom Wisitchanachai, Superintendent of the Hua Hin Police Station, Mr. Cell Dilon, Executive Director Stamford International University, Mrs. Wassana Srikanchana President of Hua Hin/Cha-am Tourism Business Association and Mrs. Pranom Chupu, President of Hua Hin Women Club, along with many Rotarians and distinguished guests, both Thais and foreigners, who joined in the congratulations.

AIRASIA CHANGES TIMES OF HUA HIN AND CHIANG MAI FLIGHTS FROM AUGUST

A

irAsia has confirmed a change to the schedule for flights operating between Hua Hin and Chiang Mai in August.

Flights will still operate every Wednesday, Friday and Sunday.

However, the new flight schedule will mean later departure times compared to the flights it operated in July.

From August 3, flight FD3900 will depart Chiang Mai at 11:10, arriving in Hua Hin at 12:30.

Flight FD3901 from Hua Hin will then depart at 13:00, arriving in Chiang Mai at 14:15.

In July, AirAsia had operated morning flights between the two destinations, departing at 07:15 and 09:05 from Chiang Mai and Hua Hin, respectively.

Flight schedules are subject to change.

Passengers are advised to contact AirAsia directly for the latest flight information.

THAILAND AMONG THE TOP 10 COUNTRIES FOR EXPATS T

hailand is among the 10 best countries for expats, according to the annual Expat Insider Survey carried out by InterNations.

The latest ranking sees Thailand move up to 8th place from its 14th place ranking in 2021.

The survey gauges expat’s satisfaction with life in their country of residence across various different factors, such as: Quality of Life, Ease of Settling In, Working Abroad, and Personal Finance.

In addition, this year’s survey included a new Expat Essentials Index which assessed people’s satisfaction with their Digital Life, Admin Topics, Housing and Language.

A total of 11,970 expats participated in the survey, representing 177 nationalities and living in 181 countries or territories.

The survey was carried out between 1-28 February 2022.

Overall, Thailand was found to be an affordable and friendly destination for expats.

According to the survey, 77 percent of expats are happy with life in Thailand, slightly above the global happiness average of 71 percent.

Thailand’s best rankings were in the Personal Finance index (4th out of 52) and Ease of Settling In (11th). It was ranked in a mediocre 35th place in the Quality of Life index, while its ranking of 45th in the Working Abroad ranking brought down its overall score.

NO MONEY CONCERNS: “Personal finances are

a breeze for expats in Thailand”, the survey said.

Most expats in Thailand (85%) feel that their disposable household income is enough or more than enough to lead a comfortable life (vs. 72% globally).

“Your money definitely goes far” a British expat reported.

Expats vote Thailand third for general cost of living - 71% are happy with this factor, 26 percentage points more than the global average (45%). Thus, it is no surprise that 70% are happy with their financial situation overall (vs. 60% globally).

Housing is no trouble either, and Thailand also lands in first place in this subcategory. Expats describe it as both affordable (74% vs. 39%

globally) and easy to find (85% vs. 54% globally).

ADMINISTRATIVE BARRIERS: The amount of

paperwork was one thing that expats in Thailand were not happy about and this was reflected in the ranking in the Expat Essentials Index (18th).

Thailand ranks in the bottom 10 of the Digital Life Subcategory (43rd), and expats are particularly unhappy with the availability of administrative/ government services online (43% unhappy vs.

21% globally).

“It is all paperwork for everything,” explained an expat from Chile. Overall, more than half (51%) find it hard to deal with the local bureaucracy/ authorities, compared to 39% globally.

While 70% find it easy to live in Thailand without speaking the local language (vs. 51% globally), 68% struggle to learn it (vs. 38% globally). “I just cannot pick up the language,” said a British expat.

In fact, 78% speak the language just a little (54% vs. 25% alobally) or not at all (24% vs. 10% globally).

EASY TO MAKE CONNECTIONS:

The Ease of Settling In Index (11th) is a genuine highlight, though, and expats rate Thailand particularly well in the Local Friendliness Subcategory (8th). The majority (86%) finds the residents to be generally friendly (vs. 66% globally), and another 81% describe them as friendly towards foreign residents (vs. 65% globally).

“I have found the Thais to be very friendly and welcoming to me living in their country,” an expat from the United Kingdom explained.

Expats also rank Thailand among the top 10 in the Finding Friends Subcategory (8th). They love their social life (69% satisfied vs. 56% globally), and more than half (52%) say that making local friends is easy, compared to 42% globally.

EXCELLENT LEISURE OPTIONS & HEALTHCARE:

The Quality of Life Index (35th) was a mixed bag: When it comes to Leisure Options (5th), expats are especially happy.

They vote the country second worldwide for its culinary variety and dining options, only beaten

by Mexico. “The thing I enjoy most so far is their food variety,” says a Vietnamese expat.

Over three in four expats (77%) are satisfied with the culture and nightlife in Thailand, compared to 67% globally. Expats also love the healthcare in Thailand - the country narrowly misses out on a top 10 spot in the Health & Well-Being Subcategory (11th). More than three-quarters of expats (77%) state that they have access to all the kinds of healthcare services that they need (vs. 67% globally). Most also say that medical care is easily available (84% vs. 73% globally) and of good quality (85% vs. 72% globally).

ENVIRONMENTAL CONCERNS:

On the other hand, the Environment & Climate Subcategory (44th) is a major concern for expats in Thailand.

Two in five expats (40%) believe that the government does not support policies to protect the environment, more than double the global average (18%). “People are not aware enough about pollution, and it is sad to see nature spoiled by rubbish,” a French expat reports.

Furthermore, 45% rate the air quality negatively (vs. 19% globally) and 32% are unhappy with the urban environment (elements such as green spaces, noise levels, and eco-friendly architecture), compared to 17% globally.

“There is air pollution and limited parks and green spaces” explains a Dutch expat.

The only real highlight is the climate and weather, which is rated positively by the majority of expats (82% vs. 62% alobally).

UNHAPPY WORKERS:

Thailand performed worst in the Working Abroad Index (45th). Expats vote the country into the bottom 10 of the Work Culture & Satisfaction Subcategory (48th).

According to them, the local business culture does not encourage creativity (41% vs. 26% globally), nor does it promote independent work

(45% vs. 28% globally). Expats are also especially disappointed when it comes to Career Prospects (45th).

Nearly two in five (38%) are unhappy with the local job market (vs. 27% globally), and only 41% say that moving to Thailand has improved their career prospects (vs. 60% globally).

Expats also rank Thailand among the bottom 10 for Salary & Job Security (46th).

More than three in ten (31%) are unhappy with the state of the local economy, compared to only 17% globally. Additionally, one in four expats (25%) is unsatisfied with their job security (vs. 20% globally).

However, 35% of expats do not have to worry

about this, as they are already retired, compared to the global average of 10% retirees. In fact. 19% of expats in Thailand moved there specifically to retire, compared to only 3% globally.

Overall, the survey found Mexico (1 st ), Indonesia (2nd) and Taiwan (3rd) were the top three destinations worldwide for expats, with high scores for Ease of Settling In and Personal Finance.

The remainder of the top 10, in order, were Portugal, Spain, the United Arab Emirates, Vietnam, Thailand, Australia and Singapore.

The three countries with the lowest ranking, largely due to poor scores with regards to the personal finances of expats, were Kuwait (52nd), New Zealand and Hong Kong.

BANGKOK AND KOH PHANGAN RANKED TOP DESTINATION FOR DIGITAL NOMADS T

wo separate surveys have ranked Bangkok and Koh Phangan as leading destinations for digital nomads or travelers seeking ‘workations’.

According to a study by UK-based flexible working solutions provider The Instant Group, Bangkok was ranked the second best city in the world and the best city in Asia for digital nomads.

Second only in the world to Lisbon, Portugal in the global ranking of 80 cities for digital nomads, Bangkok scored well in the key areas of affordability, weather, broadband speed, scenery, and transport.

Its impressive placing was helped by the wide variety of excellent local cuisine and street food on offer, the more than 15,000 high-speed Wi-Fi hotspots available, great transport options, and some of the lowest priced accommodation available globally.

Bangkok was also one of only two Asian cities to make it into the survey’s top 10 cities from around the world, the other being Seoul in 7th place.

Mr. Yuthasak Supasorn, Tourism Authority of Thailand (TAT) Governor, said: “This is a wonderful accolade for both Bangkok and Thailand, recognising as it does the Thai capital’s modernity, connectivity, and affordability attributes. It is even more rewarding when considering how well it complements Thailand’s goal of growing its digital nomad travel sector under the ‘Visit Thailand Year 2022: Amazing New Chapters’ campaign.”

Meanwhile, another survey ranked Koh Phangan in Surat Thani as the best destination in the world for those seeking a workation.

The term ‘workation’ refers to those who work remotely from a holiday destination.

According to a survey carried out by William Russell, a website which specialises in providing international health insurance for expats and digital nomads, Koh Phangan is the world’s number 1 destination for a workation, followed by No 2 - Gran Canaria, Spain; No 3 - Lisbon, Portugal; No 4 - Austin, Taxas, USA; No 5 - Sao Paolo, Brazil; No 6 - Budapest, Hungary; No 7 - Canggu, Bali, Indonesia; No 8 - Belgrade, Serbia; No 9 - Berlin, Germany; and No 10 - Buenos Aires, Argentina.

The survey ranked a destination based on various factors such as the cost of living, internet speed, fun and safety.

Koh Phangan was found to have it all - a low cost of living, fast internet, is fun and a safe place to live.

“In December 2021, the Tourism Authority of Thailand (TAT) educated business

operators at Koh Phangan about accepting digital nomads because of the strong trend of working remotely. Many foreigners want to find a place to get away from the Covid-19 pandemic and at the same time work from where they stay.

“When asked by the TAT, foreigners said Koh Phangan has all they need. The cost of living there is acceptable,” Surat Thanu governor Wichawut Jinto told the Bangkok Post.

Research has shown there are already 35 million digital nomads worldwide, and with advances in technology, remote working and workplace culture it is thought that by 2035, this number could be one billion. Predictions say the global nomadic workforce will account for one in every three employees.

Alongside Bangkok, Thailand also offers other popular destinations ideal for digital nomads, such as Phuket, Samui, and Chiang Mai. Locally, Hua Hin mayor, Nopporn Wutthikul, recently announced ‘Work from Hua Hin’ - plans which aim to turn Hua Hin into a working space for people from around the world.

It’s true that if you are looking to lose weight, most of your efforts should be spent in the kitchen.

But quick fix or fad diets will not be the answer to your waistline woes and will not lead to sustainable weight loss.

Fad diets are only a temporary solution, which may help you to shed a few kgs in the short term, but which will almost certainly see that weight return in the long term.

It can then become a vicious circle that results in nothing more than yo-yoing weight, where you will get nowhere fast.

There are so many different diets and you have probably heard of most of them: low carb, high fat, keto, fruitarian. Some gain a lot of publicity or seem to be ‘trendy’ or popular.

And while all of those diets may have some benefits, they also have many downsides.

The biggest problem with such diets is that they are very restrictive.

For example, a diet such as keto (high fat, very low carb) is unlikely to be sustainable for most people, especially those who like to run or

swim, or for anyone who needs to consume carbs in order to fuel their training.

A ‘good diet’ is a sustainable diet.

My answer is always, “it depends”.

So if you want to lose weight, instead of thinking about a diet, you should start thinking about how you can implement a better overall approach to food that is sustainable over the long term.

How many carbs you consume is probably not the issue. If you have gained weight it will be due to the overall amount of calories you consume on a daily basis.

Your diet should also fit your lifestyle

As mentioned, if you lead an active lifestyle, exercise regularly, go running, cycling or take part in CrossFit, for example, your body will need carbohydrates. And in fact, it can be a big mistake not to consume enough carbohydrates.

Having the best food approach for your own body must be an individualized and customized experience as it has to fit your own lifestyle.

In the simplest terms, people who are more active, will need to eat more.

For example, if you are very active and you move around all day long, or you like to participate in intense exercise, then your food intake will need to support your active lifestyle.

Too often I see people with a very active lifestyle making the wrong food choices and actually eating too little.

This can leave them feeling tired and hungry, which in turn can lead them to reaching for less than optimal foods - or junk - which over the long term is counterproductive to their weight loss goals.

All calories are not equal Counting calories is a great way to understand if you are eating too much or not.

But it is important to understand that all calories are not equal.

A frappucino that has 500 calories is very different to a 500 calorie serving of rice, salmon and fresh vegetables - which is nutrient dense and will be much more beneficial to your body.

Generally speaking, you want to have a nice balanced nutrition with diverse types of food. As a simple guide, try to follow this:

THE EXPAT PHOTOGRAPHER TELLING THE STORIES OF ABANDONED STRUCTURES IN THAILAND

merican photographer Dax Ward spends a large amount of his free time going to places most of us are likely to avoid.

sites to explore in the Thai capital, particularly on the outskirts of the city: from condos and office towers to shopping malls and bowling alleys.

When he isn’t teaching IT at an international school in Bangkok, he is out exploring abandoned buildings and other interesting forgotten sites.

Many of the buildings were left abandoned as a result of the 1997 Asian financial crisis, known in Thailand as the Tom Yum Kung crisis, following the collapse of the Thai baht.

His passion for photography and urban exploration or ‘urbex’ has enabled him to take fascinating photographs of abandoned structures in Thailand and elsewhere.

His photographs have been featured in CNN, The Guardian, The Daily Mail, The Sun, Lad Bible, the Weather Channel, Lonely Planet and many more.

His journey into photography, which he only started in 2015, was almost by accident.

“I joined the Bangkok Photographers Group and started attending workshops and going on walks with them but before that I knew hardly anything about photography”, Dax told Hua Hin Today.

Then in 2016, again almost by accident, some of the first photographs he shot of an abandoned location in Bangkok came to the attention of a UK based content syndication company.

“I posted some photos on the 500px.com website, a popular photo sharing site similar to Flickr,” Dax said.

“I was then contacted by a British syndicator that asked if they could use my photos and interview me for a story. I didn’t really know much about it or think much of it but then the story ended up going really viral.”

The photos were of the so-called Airplane Graveyard - a field in Bangkok’s Bang Kapi district - where two MD-82 jetliners which used to belong to Orient Thai Airlines have been left to rot.

After Dax saw the popularity of his photos from the Airplane Graveyard, he began visiting other locations around Bangkok.

Dax says there is no shortage of abandoned

Despite the crisis happening 25 years ago, the buildings remain abandoned.

As well in Bangkok, Dax has traveled all over Thailand photographing abandoned buildings.

He says one of his favourite locations was the Petch Siam Cinema in Sukhothai, which had been left almost intact, even with the original seating and projectors, for the last 30 years.

Abandoned sites in Cha Am, Hua Hin and Pranburi Locally, both Phetchaburi and Prachuap Khiri Khan are home to several interesting abandoned sites.

Hua Hin Today caught up with Dax after he visited the site of an abandoned temple in Pranburi.

Village of Death” which is located approximately 15 kilometres from Cha Am beach. He said construction of the village coincided with the Tom Yum Kung crisis and the site has been abandoned ever since.

The village is also said to have been the location for a number of serious crimes, with Dax saying the site left him feeling “uneasy” and was “unsettling”.

In Phetchaburi, Dax has explored the abandoned building of what used to be The Roxy Disco, which was once a buzzing nightclub and the place to go for a night out.

The club, which first opened in the mid-1980s was reportedly the scene of a serious crime, resulting in bad publicity from which it never really recovered. It did reopen for a short time before closing due to a fire in 2007.

Dax, who has shot more than 50 abandoned places in Thailand, says that he normally finds out about a location through word of mouth, with people reaching out to him online and on social media.

“The temple is in the middle of nowhere but looks like someone at sometime put a lot of money into it”, Dax explained.

He also has a friend who is well established in the ‘urbex’ community in Thailand and is able to help Dax gain permission from the owners or overseers of the site prior to him visiting.

“It has a beautiful reclining Buddha and a large statue of a monk. It’s really quite grandiose”.

“I don’t take any risks and always gain permission before I enter a site”, Dax said.

Dax has also explored the site of a hotel in Cha Am which was left unfinished and never opened. The so-called ‘Cha Am Ghost Hotel’ is the subject of much speculation and rumor.

“Once I get told about a place, I will do my own research online using Google Maps and Google Street View and I will also try and find out about the history of the building”.

What actually occurred during the construction of the hotel has been difficult to verify.

“I do as much research as I can to try and understand what a place once was and what happened there.

Needless to say, according to local legend, the hotel allegedly has somewhat of a dark past involving a foreign man and his Thai girlfriend.

The Ghost Hotel isn’t the only site in Cha Am which is said to have a shadowy past.

Dax recently visited what he called the “Abandoned

All our staff are still being tested each week for signs of COVID and we can assure you that we are doing all we can to ensure their safety, along with the safety of our customers.

3-STAR MICHELIN CHEF BRUNO MENARD AT THE INTERCONTINENTAL HUA HIN As soon as I was born I was a chef! I am from a family of pastry chefs, my entire family is in the business and back then it was normal that people would work in the family business. But it was a passion of mine from a very young age to become a chef. I always had a dream to become a chef and I had a dream to have three Michelin stars. I was born and raised in a family where we ate good food and this meant that I got an amazing education of the palette from when I was a young boy. So I will say I have been a chef my entire life and I will be a chef for the rest of my life. It’s my passion, it’s my life.

How would you describe your cuisine and its style?

T

he 3-star Michelin chef Bruno Menard was at the InterContinental Hua Hin for one night only on Friday, July 22.

Chef Bruno presented his culinary delights at the hotel’s Azure restaurant with a spectacular menu which featured Poached Cod with Creamy Clam Sauce and Chives Coulis; Roasted Lamb, Carrot Orange Blossom Mousse, Lemon Cumin Noque, Lemongrass and Lamb Jus, while the Floating Island with Benedictine Vanilla Ice Cream made for an incredible finale.

Chef Bruno, who has been in Asia for more than two decades, was at the helm of L’Osier in Tokyo, owned by renowned Japanese cosmetic company, Shiseido, when it was awarded 3 stars in the first edition of Michelin Guide Tokyo in 2008.

Prior to L’Osier, Chef Bruno was at The Dining Room at the Ritz Carlton Buckhead in Atlanta, where he gained the Mobile Guide’s five stars and AAA’s five diamonds (only 14 restaurants in North America have this recognition).

He has also been designated a “Chevalier de L’Ordre du mérite Agricole” by the French government.

Hua Hin Today spoke to Chef Bruno in the run up to his guest appearance at Azure.

How long have you been cooking and when did you become a chef?

It’s very French, that’s my education and I have a strong foundation in French cuisine.

I first arrived in Asia in 1995 but I also spent five years in America at the Ritz Carlton in Atlanta so everywhere I go I try to pick and taste. It is important for any chef to be curious. My journey has enabled me to add on to my pallet of flavors which helps to make my cooking completely unique.

You won three Michelin stars at the first attempt, not many people do that, what kind of pressure does that put on you as a chef?

First of all it was the dream of my life to take the job at L’Osier - to have a restaurant where I could achieve the level I always dreamed of. I knew that Michelin would launch its guide in Tokyo within two or three years so it was a once in a lifetime opportunity for me to try to get three Michelin stars at the first attempt. It was a lot of pressure.

The restaurant is owned by Shiseido and they ensured we had the best of the best of everything, the best food, the best wine, the best decor and lighting.

But after we received the three stars there is more pressure because after you reach the top, the only way is to maintain or go down and if you don’t maintain it’s a failure. The restaurant maintained its three stars for four years and to maintain that level of quality is even more pressure than winning the stars initially.

What is your process like in developing a menu?

Where are you looking for inspiration?

I try not to look for inspiration, for me the process is more instinctive. I will think about recipes once I am at the market looking at the different products. It is very difficult for me to sit down and think about what I will do. I need to be in the motion or in the moment.

I have an ability, like many chefs, that I already know the flavour is in my head before I cook. It is a bit like a musician who already knows the melody and he only writes the notes down on paper after he has the melody in his head. That’s exactly how it is with cooking.

Finally, what do Michelin star chefs eat at home, what do you cook on your days off?

Anything and everything! It can be a simple salad, pasta or dessert, things that we would not normally cook in a restaurant, just done in a good way.

When I cook at home, I just keep it really simple, even if I am cooking for friends. At work I am used to having twenty people clean up behind me but at home it does not work like that!

KEEPING IT IN THE FAMILY: NEW ERA BECKONS FOR HUA HIN ARTIST VILLAGE

ua Hin Artist Village, the popular art gallery and cultural centre located in Hin Lek, is under new management.

After more than two decades, owner Khun Tawee Kesa-ngam, is to hand the day to day running of the Artist Village to his son, Krit.

Also known as Baan Sillapin, the Artist Village has been open for 22 years and acts as the central hub for Hua Hin’s creative community.

During that time, Khun Tawee, along with his brothers, sisters and other family members, created the Artist Village, which today is recognized as one of the region’s leading cultural attractions.

Khun Tawee said that handing over the management of the Artist Village to his son will help to support the next generation of artists not only in Hua Hin but throughout Thailand.

“I want to give an opportunity to the new generation of artists for the city of Hua Hin, Prachuap Khiri Khan and Thailand. My wife and I have already delegated all the daily tasks involved in running the Artist Village to our son. We will simply monitor his progress and ensure the Artist Village continues to develop like it has in the past,” Khun Tawee Kesa-ngam said.

Mr Krit said he will make every effort to continue the good work of his parents and will embark on a new era for the Hua Hin Artist Village.

Mr Krit graduated with a degree in Visual Communication Design from Silpakorn University’s Faculty of Decorative Arts.

After receiving his degree he started working as a writer for advertising journals and eventually started designing logos for numerous public and private organisations in Thailand and overseas.

He gained recognition and commendation from clients around the world for the quality of work and designs he provided to them.

Krit is also an accomplished English speaker, which will help him to communicate with tourists and expats who visit the Artist Village. Outside of work, he is a keen musician and guitar player.

Krit says that his work going forward will be to maintain the heritage of the Artist Village, while at the same time making sure the organisation is modernised for the so-called “IT era”.

He plans to boost public relations and awareness to help inform both Thai and foreign visitors of new developments and upcoming events happening at the Artist Village. He will also implement effective cost-profit management performance measures, as well as managing the internal space for various festival activities.

And that’s just the start.

Later a series of events and initiatives will be held aimed at boosting the profile of the Artist Village among both Thai and foreign visitors.

The events will help to attract visitors including those from Europe, Scandinavia, and ASEAN, to visit and experience firsthand the many different aspects of the Artist Village.

There are also plans to link up with the local administration, including the Subdistrict Administrative Organization, at municipality, district, and provincial levels in order to help showcase not only the Artist Village but also Hua Hin. Mr. Krit added that Hua Hin’s proximity to Bangkok, which can be reached after a few hours of driving, makes it a popular destination for both Thais and foreigners.

Hua Hin’s beaches, temples, historical landmarks, and cultural attractions are just some of the many reasons why people like to visit Hua Hin, Mr Krit said.

“After graduating from college, I went on a trip to Saigon, Ho Chi Minh City, Vietnam, where I discovered that after the war, the government had adopted a style of life in which the cultures and traditions of the old and the modern were blended to attract tourists, including at historical landmarks, old towns, and bombers erected for visitors to see,” Mr Krit said.

It is this approach of blending old with new that he sees as the concept for the Artist Village going forward.

If you have never been to Hua Hin Artist Village, it really is well worth visiting.

It has undergone significant expansion in recent years and now features an excellent coffee shop, as well as a host of workshops, studios and galleries which showcase pieces from both local and national artists.

ENGINEER TURNED BAKER: DANISH EXPAT SWAPS LUCRATIVE CAREER FOR BAKERY IN HUA HIN Bakery Cafe 88

P

re-pandemic, life was very different for Danish expat Kjartan Hentze.

An experienced engineer of more than 20 years, Kjartan’s career working aboard fishing vessels took him all over the world.

A chief engineer with the highest certifications in marine and electrical engineering, he has worked across South America, Africa, Scandinavia and Europe in challenging conditions and environments.

Kjartan’s career and shift patterns - he often worked five weeks on and five weeks off - meant he was able to split his time between his work and Thailand.

Over the past decade or so, he has helped to set up home with his wife Fon and their children, traveling back and forth between Hua Hin and his latest work posting.

Life had been going well.

Then Covid happened.

Almost overnight, Kjartan found that his work had come to an abrupt stop.

While there were some stints working overseas, each trip abroad meant that Kjartan was forced to spend time in quarantine both in the country he was entering for work and on his return to Thailand.

“It was after spending too much time in quarantine that I thought I needed a change”, Kjartan told Hua Hin Today.

It was around the same time that wife Fon told Kjartan she was thinking about opening a bakery and together they came up with the concept of Bakery Cafe 88 - a Danish inspired bakery located next to City 88 at the top end of Soi 88.

The bakery, which opens daily from 7.30am, first fired up its ovens in April 2021 and now has six staff members, including trained chef Ice, who Kjartan said has been instrumental in helping to

make the business run smoothly.

Despite having no experience of baking, Kjartan and Fon did have one thing very much in their favour.

Kjartan’s brother is a master baker back in his native Denmark and has been a useful source of all manner of baking related information, hints, tips and advice.

“It took about one month of trial and error to get the recipe for the rye bread just right”, Kjartan said.

“There were lots of calls back to my brother and I was able to pass on his advice to my wife and chef Ice,” Kjartan said It was a similar story with the sourdough bread, taking time to perfect the recipe of what is now one of Bakery Cafe 88’s best sellers.

Other popular items include the korn pepp bread, Danish wiener stang and flodeboller - a sweet Chocolate-coated marshmallow treat that you’d be hard pressed to find at any other bakery in Hua Hin. It is not only bread,

pastries and desserts, Bakery Cafe 88 also sells a selection of cold cuts, homemade liver pate and Danish style hotdogs.

In fact, ‘hot dog Wednesday’s’ where customers receive a free soft drink with every hotdog order has proved very popular, Kjartan explained.

While Kjartan says he always has his engineering career to fall back on should the need arise, he is more than happy spending his time in Hua Hin supporting his wife in the running of Bakery Cafe 88.

“The lifestyle now compared to before is just so much better as I get to spend more time with my wife and children. There are some things in life that are more important than money or a big salary”, Kjartan said.

In addition to the location on Soi 88, Bakery Cafe 88 sells items from a mobile stall opposite Ban Khun Por market from 7am to 10am every day.

n organic farm in Hua Hin is not only becoming a hub for great produce but is helping to bring a new vision to members of the local community.

“I am always researching, learning and looking for ways to improve my own knowledge”, said Khun Ong, who recently took part in marketing training which he says will further help to improve the farm.

Over the last six years the management team of the Pran Por Piang Organic Lifestyle Farm have developed the site by following the Sufficiency Economy Philosophy (SEP) of King Rama IX.

In fact, most of Khun Ong’s farming knowledge has been self taught, which is even more impressive given the success of the farm, which has won numerous awards for sustainability and agriculture.

Khun Ong and the farm have also been recognised by DATSA - Designated Areas for Sustainable Tourism Administration (Public Organization).

By using SEP, the team has been able to develop the farm into a social enterprise and show the local community how sustainable agriculture can help to improve their lives and boost their income.

Originally from Sisaket via Bangkok where he studied Mass Communication at Ramkhamhaeng University, Khun Ong previously worked as a pilot for Bangkok Airways.

“There has always been farming and agriculture in this area but it was different before we came here, said Khun Ong, who oversees the farm’s marketing and communications.

Today, he has enabled members of the local community to grow produce which is then sold directly to customers who visit the farm and to local restaurants and hotels, as well as at a pop store at Market Village.

He has also introduced other smart measures that are of benefit to the local community, such as teaching the locals how leaves and plants can be turned into compost rather than being burned on the side of the road.

Khun Ong explained how previously many farmers in the community of Nong Pran Puk in Thap Thai would grow produce which they would then sell to an agent for a minimal amount, who in turn would take the fresh produce to sell at markets in neighbouring provinces, pocketing a significant markup in the process.

“Some households are just growing a small amount of vegetables, while others grow more, but everyone can grow something”, Khun Ong said.

“We showed them how we could take out the middleman”, said Khun Ong.

“If we achieve the goal it could be the difference between someone sending their children to a better school or being able to afford better healthcare”, said Khun Ong.

“We taught people in the community how they didn’t need agents to go and sell their produce, they could sell it themselves and make more money.

“We taught them that rather than just being suppliers, they can become entrepreneurs.

“But they were reluctant at first, they said they did not want to change from how they had always

The goal is to have all 500 households at Nong Pran Puk earning 500 baht per day from growing produce which is then sold at the farm.

At Pran Por Piang, which in Thai means “hunt for sufficiency”, the farm is totally self-sufficient.

As well as being used to grow fruit and vegetables, the farm is home to a variety of animals including sheep, goats, horses, chickens, ducks and pigs - all of which have their own important role in the running and upkeep of the farm.

“People come here to stay on the farm and learn about sustainable farming and in return we ask them to give small English lessons to kids in the local community”, said Khun Ong.

“Now they realise that they are literally burning money. Instead we taught them about compost which they now sell back to the farm which we use for helping to grow the vegetables.

“We told the local kids that if they collect plastic bottles rather than throwing them away we will give them free cookies from the cafe. It’s just a small thing but it helps and teaches the kids an important message”.

The farm is also home to the Sparrow’s Cafe, which sells a variety of homemade snacks and other tasty treats, locally sourced coffee served up in a variety of styles, and fresh organic eggs, which we tried and were an absolute delight. In fact, the eggs would be worth a trip to the farm alone.

Both the farm and Sparrow’s Cafe are well worth visiting for anyone living in Hua Hin or nearby, especially for families.

Visitors can sample the offerings at the Sparrow’s Cafe, as well as learn about the various aspects of sustainable farming that Khun Ong and the team are implementing at the farm.

The farm is located in Thap Thai, not far from the main immigration office, and is open seven days per week.

HIDDEN MANGROVE FOREST IN PAK NAM PRAN IS ONE OF THE REGION’S BEST KEPT SECRETS of shrimp along Pranburi River estuary, with the area being declared a centre for conservation as part of the Pak Nam Pranburi Forest Development Project.

Today, the award winning centre is one of the region’s conservation success stories and is a fantastic place for people of all ages to visit.

Y

ou could be forgiven for thinking that Pranburi Forest Park is the only such park and nature reserve within easy reach of Hua Hin.

But the truth is there is a lot of really good work being done locally with regards to the restoration and conservation of the region’s mangroves - all of which can be easily accessed from Hua Hin and Cha Am. Last month, Hua Hin Today highlighted The Sirindhorn International Environmental Park in Cha Am. The park is part conservation project and part learning centre and is a great place to visit for anyone with an interest in nature and the environment.

But south of Hua Hin in Pak Nam is the Sirinart Rajini Mangrove Ecosystem Learning Center - Thailand's first specialty learning center for mangrove forest restoration.

The centre is part of the Khlong Kao and Khlong Khoi National Forest Reserve and was opened to help restore large areas of land that had been destroyed due to more than a decade of shrimp farming, which had a devastating effect on the local ecosystem.

The plight of the mangrove forest was first highlighted by His Majesty King Bhumibol Adulyadej The Great and Her Majesty Queen Sirikit The Queen Mother during a visit to the area in 1996.

Acting on the King’s wishes, the Royal Forest Department then implemented a ban on the farming

Visitors can explore the 850 metre walkway through the mangrove forest. The walkway has been excellently maintained, is wheelchair and pushchair accessible, and features signs in both Thai and English which offer a plethora of information about the forest and learning centre.

The centre spans a total of 786 rai, with approximately 600 mangrove trees per rai and is thriving with wildlife and is home to 102 different species of birds, 46 species of fish, 89 butterfly species, 28 crab species and 32 shellfish species.

It also includes a communal area where locals go to catch shellfish, crabs and fish. However, they must follow the centre’s strict rules which aim to preserve fish stocks and limit damage to the local ecosystem.

The centre, which is support by PTT Public Company Limited, also acts as a learning zone for locals who benefit from being taught about the importance of the mangrove forest and how some of the plants that grow there can be used to create products which can then be sold, which in turn helps to create a sustainable income for people from the local community.

Some of the items are then sold at the centre’s Manggi Market, which has been set up with the aim of developing an environmentally friendly market model.

Plastic packaging, for example, is not available at the market, while the income generated is distributed to the local community and the ongoing conservation project.

The next Manggi Market will take place on August 1314, 2022.

From November to February, once the tide rises following the wet season, visitors to the centre are able to kayak around the mangroves.

Future events According to Mr Komsan Hongpadharakiree, Manager of the Sirinart Rajini Mangrove Ecosystem Learning Cente, a number of events and activities are due to be held in the coming months.

Mr Komsan said that bird and firefly watching trips are set to be organised, while a night time nature walk is also in the pipeline.

The centre will also apply for the Sustainable Tourism Management Standard (STMS) next year.

In 2010 and 2021, the centre was awarded the Thailand Tourism Award, while in 2016 it won Friendly Design of the Year from Friendly Design for All Foundation.

It was also granted Certified Ecological Tourism status TISTR by the Office of Certification Body, [OCB] for the period 2021-2023.

The Sirinart Rajini Mangrove Ecosystem Learning Center is open daily from 8.30 to 16.30 Visitors are asked to not bring food or water from outside to the centre.

Visitors are also required to show a history of COVID vaccination before entering.
