OFF A REMOTE ISLAND in the Pacific called Cocos, we descended
through a school of scalloped hammerhead sharks and headed to the purple-hued deep. I’d spent a week exploring the area on a luxury yacht and the owner had a personal three man sub, which he liked to use to see what we could discover in the twilight zone below 500 feet. I’ve got a touch of the explorer in me, so I joined him on each downward venture. As we descended, the submarine groaned and squealed as it adjusted to the increasing pressure of the water. The sub had a high-pressure, clear sphere and with the optics, it looked as if there was nothing between me and the marine life beyond. Whale, sharks and manta rays would pass close enough to touch, and the pure magic of being in a part of the planet that few ever experience only heightened each exploration into the little-seen depths of the Pacific. Few toys give us access to these unknown corners of our world like a personal submarine does. If I personally had to put an order to my sprawling list of Toys I Love, I’d include at least one personal sub somewhere near the top. It would, however, share the top spot with quite a few items from this issue, including the Tiffany bangle for my Love; and the SSC Tuatara, an American made speed demon from the legendary Shelby SuperCars. Of course, driving fast on my way to the submarine, with my Love sitting beside me and wearing the bangle, would most certainly complete at least one day of my many days in a Life Well Lived. Enjoy! This feels like the familyrun inn it is at its heart from the moment you walk in the front doors. And, every thought and detail that went into the experience of the Allison Inn is built upon the talents and craftsmanship of the local community, as well as finding inspiration from the ancient Lake Allison, which once covered the entire valley and lends its name to the resort. The owner of the inn, Joan Austin, literally attended school across the street from the Allison (a school you can still see on the property), so her love of the region palpably resonates throughout every space. The carpets are weaved to look like a root system or aerial views of the farmlands, the art was hand-picked by Mrs. Austin and her team exclusively from the galleries of Oregon’s art community to shed a creative light and vision on region for the resort’s guests. to start with the Allison. The renowned spa is a haven worthy of the effort it takes to get there. Having traveled the world and experienced spas from the Seychelles to Thailand, perhaps four or five still tingle the memory. After my 90-minute Essential Massage, there’s now one more on that short list. I rarely feel completed after a massage, but my therapist, Sonja, intuitively and deftly worked out my stress points and worked her way into a rare space in my spa memory. The rooms are comfortable retreats with valley views, deep tubs, cloud-soft beds and fireplaces for nights that turn to romance. But, people come for more than the pampering. Food and Wine (yes, with capital “W”) quickly steal your focus at that Allison. And on the food front, Executive Chef Sunny Jin is perhaps the most down to earth kitchen wizard you’re likely to meet. After stints at The French Laundry in Napa, Tetsuya in Sydney and El Bulli in Spain, and travels that took him through the exotic food realms of Thailand, France, Germany, Vietnam and others, he came to the Allison full of inspiration and asked to be their chef. His love of fine and fresh food has elevated his restaurant, Jory, to the highest levels of fine cuisine. He sources most of his menu items from within 5 miles of the Inn, so you get only the truest farm to table experience. You’ll usually find Chef Jin in the Inn’s gardens first thing in the morning, or feeding hazelnuts to prized pigs that eventually adorn the menu. My wine-paired

Chef ’s Table pageant included such items as Crab Profiterole, Chilled English Pea Soup, Heritage Pork and Butter Roasted Guinea Hen, and Chocolate Pinot Cake, along with a line-up of sommelier picked regional wines of note. And, there is an abundance of wines of which to note in this valley. For two straight days, virtually non-stop, I worked my way through the region’s top wineries. The Allison Inn has developed special relationships with many of the region’s private, by appointment only vineyards and chateaux. If you want to have exclusive tastings, the concierge can arrange it for you. There are more than 200 winemakers in the region, and the Allison will make sure you’re tastings include only the best of the region. Among the highlights, I enjoyed a private flight tasting in the barrel room of the Domain Serene, where owners Ken and Grace Evenstad shared their award-winning pinots. They’ve been perfecting their pinots for more than 20 years with a passion for fine, lush, and complex wine that still lights a fire in their eyes. The wine that has grabbed their creative attention recently is their much-touted Couer Blanc, a white pinot that has engaged the attention of sommelier’s the world over with its unique texture, taste and structure. For entertainment, passion, and great wine, the Allison organized a Chef Sunny-made lunch, which we took al fresco, and tasting at the Hawk’s
View with co-founder A.J. Kemp. The views from here are both intimate and vast, and the mostly burgundy-style wine, like the winemaker, embodies a personal quest to tell a remarkable story on the palette, which manifests in wines that are deep and rich and noteworthy. As you walk around the Allison Inn, one of the prominent artists whose work adorns the walls is named James Frey, who also happens to be one of the Willamette’s premier winemakers. His winery, Tristaetum, which was named after a combination of his children’s names, specializes in dry Riesling and white pinot. The Rieslings evoke the same complexity as his art, and none of them trend toward the sweet side of the Riesling family, making them highly drinkable as a main bottle with a meal. James brought in another local craftsmen, Sarah Marcus from the Briar Rose Creamery, who paired each of his wines with one of her handcrafted cheeses. The cheese, fine art and wine made it hard to leave, but more wine beckoned. Noteworthy among the wineries I visited were Soter Vineyard, which has no sign and must be organized by the Allison. The views and 2012 pinots were worth the trek. In the town of Newberg, quite on a whim, I stopped by the Dobbes Family Estate tasting room and discovered a wine I am savoring even as I write this piece, their 2009 Cuvee Exceptionelle Pinot Noir. I like my wines full-bodied and complex, and this wine exemplifies that experience. Its tasting notes include the words, “dark and brooding.” The wine, like most of the exceptional wines in the Willemette, was aged 18-months in French Oak. It’s sensual, garnet colored with forward, lingering but balanced, tannins and has touches of cherry and cocoa, and has a solid grip on the palette. My other bottles of this vintage can age, but this one improved a rainy day in NYC. With the wonderful wine, expansive views and extraordinary meals, each day ended with me feeling quite unrestrained. The bouquet of many fine wines lingered upon my palette. I lit the fireplace in my suite and sunk into the deep tub with the sated and satisfied feeling one gets from a fine meal made by a true culinary artist. I never thought I’d go to Oregon for luxury wine-country escape, but The Allison Inn and Spa has put a mark of true distinction on this famously friendly corner of the world.

The pronouns of the sea have always been feminine: Yachts are women and the ocean is a fickle lover, but seafaring has historically belonged to men. Now Zaha Hadid, the most famous woman in modern architecture, is bringing a woman’s touch to a world that has often lacked females. Hadid has partnered with German shipyard Blohm + Voss to bring her sinuous, fluid forms to the world of ultra-luxury super yachts. Winner of the Pritzker Architecture Prize, architecture’s Nobel, Hadid has been on a winning streak since designing the Aquatics Center for London’s 2012 Olympics. It is no wonder that the designer, born in Iraq and now based in Britain, would become the darling of the uber-rich after conquering the realms of public architecture, furniture, theater, jewelry and even shoe design. The“Unique Circle”fleet of six yachts will include a 420-foot“mothership”that spawns five smaller yachts, measuring at 295 feet. The first of these, the Jazz, has been digitally rendered by Blohm + Voss. According to Hadid, the renderings“creatively explore the design philosophies within the technical requirements of a fully engineered yacht design.”
Hadid’s trademark sculptural and undulating forms find a welcome home on the sea, where the architect’s latticework hulls suggest the sun’s reflection on waves, reaching up and over the decks. The living spaces are monochromatic in white, with teardrop windows that frame the vast blue water without obstructing the passenger’s view of the sea. Hadid’s capacity to take dynamic, almost liquid, forms and translate them from the page to the jetty is a relatively new development in her career. She has long been considered a “paper architect.”But shipbuilding’s extensive use of composite materials and novel forms lends a perfect canvas for experimentation. That is not to say that these ships will get built. It takes deep pockets to bring architectural innovation to the storied world of shipbuilding. But if Philippe Starck could build the Venus for Steve Jobs and the A for Russian billionaire Andrey Melnichenko, it can happen for Hadid. As we go to press, there are no sailors willing to make the Jazz or her siblings a reality. There should be.

Fast Times IN THE WORLD OF ULTRA LIGHT, mega expensive, lightning fast supercars there is a long-standing feud between Bugatti, the legendary Italian racecar manufacturer and Shelby Super Cars, the Washington State-based specialty car maker. The title of world’s fastest production car was stripped from Bugatti last year after the Guinness Book of World Records revealed that the Bugatti Veyron Super Sport clocking in at 267.8 mph had been modified after the factory – that is, that Bugatti cheated and put a non-production vehicle into competition. “This wasn’t how we planned to reclaim the record,” said SSC Founder Jerod Shelby, who made his fortune in medical device manufacturing. “But it will do until the Tuatara takes a run at several records that exist out there.” The superfans of supercars willing to drop $1 million or more on an elegant and ludicrously speedy roadster now wait breathlessly for the launch of the twin-turbo-charged V8, 1350 horsepower Tuatara, with a rumored top speed of 275 mph. The sevenspeed manual transmission is said to resemble the gearbox Porsche included in its newest 911’s. The Tuatara will be made of almost nothing but carbon fiber, from the aquiline body to the breaks and even the tires. In 2011, SSC stunned the auto world when it announced it would drop the world-speed record holding Aereo design for the Tuatara after only three years of production. SSC’s newest concept car is named for a lizard that lives in remote islands off New Zealand, who is said to have the fastest evolving DNA on earth. No sale date has been announced. “Tuatara is about to monumentally evolve in the areas of sophistication, design, aerodynamics and sheer all-around performance,” said Shelby.

The Martin Jetpack, engineered by the Martin Aircraft Company in New Zealand, will soon transform the airways and endow humans with the ever-elusive gift of flight. With an anticipated release date in 2016, this super-toy has already garnered significant interest among adventuregoers and collectors looking to explore new frontiers. Equipped with a powerful V4 aircraft engine and a lightweight airframe, the

Jetpack is the progeny of over 33 years of research and development. Founder Glenn Martin’s conception began in his garage in 1981, and it is currently still undergoing development at the hands of elite aviators and test pilots. The creators aim to provide over 30 minutes of flight capability with a ceiling of over 800 feet. The first model scheduled for commercial use is the First Responder Jetpack,
intended to enhance search and rescue capabilities for various emergency services organizations. The company will also offer the Jetpack for use as an unmanned air vehicle for heavy lifting and transport. The smaller, lighter Personal Jetpack will soon follow. It remains to be seen what training and licensing requirements will need to be met before buyers can take to the sky. Additionally, aviation laws vary by country.
As the world’s first practical, personal flying machine, the Martin Jetpack will undoubtedly change the way we look at recreational vehicles. The anticipated price is approximately $150,000, and potential buyers must submit a $5,000 deposit to secure a position on the company’s waiting list. An Amelia Earhart quote explains the true value of the Martin Jetpack — “the fun of it is worth the price.”

WHEN IT COMES TO “PAIRING,” most of us have

had the opportunity to enjoy fine wines chosen from the tasting menu of a great restaurant. I would venture a guess that when Charlie Palmer presents the first course of his tasting menu at Dry Creek Kitchen, in Sonoma, CA, he does not want us to pour the glass of 2011 Marimar Allbariño on top of the beautifully prepared espelette seared Hawaiian butterfish with wasabi and avocado puree. The actual pairing, or marriage, of the flavors of food and wine is clearly intended to occur in the mouth, not on the plate. The same holds true when pairing with cigars. While I appreciate the old pastime of dipping a cigar in port, brandy or Cognac, I assure you that if the cigar maker wanted a different flavor on the cap of the cigar, he or she would have put it there. What’s more, if the port, brandy or Cognac maker wanted little bits of tobacco in his or her precious potion, it, too, would be there. Allow the pairing to occur on the palate. I enjoy pairing almost anything with great cigars, but one of my favorites is single-malt Scotch whisky. And one of my favorite single malts is Glenmorangie. A few years back, I had the pleasure of enjoying a private whisky dinner with Dr. Bill Lumsden, head of distilling and whisky creation for Glenmorangie, which led to a late evening (or early morning) of pairing Glenmorangie whiskies with premium cigars. Since then, Glenmorangie single malts have been one of my go-to partners with a cigar.

Glenmorangie Original with Nat Sherman Sterling Corona Gorda Glenmorangie Original has been Scotland’s favorite single malt for more than 50 years. Take one sip and you’ll know why. It has great finesse but still maintains complexity, and it can be enjoyed almost any way you please: neat, with water or over ice. The Nat Sherman Sterling Corona Gorda offers a hand-in-glove approach to this whisky pairing because the two share many characteristics. Most important are the subtle shared notes of citrus and vanilla. Try adding a small twist of mandarin-orange peel to the neat whisky (after you’ve tasted it without) to enhance the citrus aroma and to help showcase some of the understated citrus flavors of the cigar.

This whisky was destined to be enjoyed with cigars. So often we imagine men in smoking jackets retiring to leather chairs to enjoy an after-dinner Churchill and sherry. Well, this wonderful whisky spends extra time in Spanish Oloroso sherry casks after vacationing for a minimum of 10 years in bourbon casks. The whisky takes on a wonderful sweetness, with notes of caramel and toffee; it’s almost dessert in a glass. I enjoy this whisky neat, with a Nat Sherman Timeless Churchill. Tasting together, the first point of order is “temperature.” While the 46 percent ABV spirit can give a slight impression of heat on the palate, the smoke of the seven-inch, 48-ring-gauge Churchill gives a cooling effect, balancing the impact of the spirit. There is a subtle hint of sweetness on the cigar’s finish, and the cigar’s light spiciness creates a dialogue with the silky whisky. Sip first and then puff. Once the smoke is expelled, look for the raisin note that lingers on the palate.

The common notes of apricot, peaches and honey found in Sauternes are magic in the mouth after a sip of Château d’Yquem, but perhaps almost too subtle and fragile is the precious wine to risk overpowering it with a cigar. This whisky is the solution. Following 10 years in bourbon casks, this whisky is further aged in hand-selected Sauternes wine barriques, resulting in an aroma reminiscent of walking into a French bakery. On the palate, the whisky reminds me of Christmas. Taste the whisky neat against the first few puffs of the cigar. This obvious spiciness is an even match, and the intensity and ferocity of the two in the beginning are like the first round of a featherweight championship. Add just a few drops of water to the whisky, and watch this bout settle in for a full 12 rounds. The spiciness of both the whisky and the cigar settles a bit, but a baking-spice note remains in the thinnerformat cigar, providing a platform for the more subtle notes of lemon and cream to shine through.
Glenmorangie Signet with Nat Sherman Timeless 749 Who doesn’t enjoy a little chocolate after a meal? Well, skip the dessert menu and ask for the spirits menu. Glenmorangie Signet, the only whisky in the world to use high-roast chocolate malted barley, is a dram come true. Paired with this Nicaraguan puro, it’s as close to a chocolate soufflé as one can get, without all the calories and guilt. Serve this whisky over one large ice ball, and enjoy with a cigar by puffing the cigar first, followed by sipping the chilled whisky. The cocoa powder and espresso notes are an uncanny match

and reveal underlying notes of dried red fruit. A hint of white pepper on the cigar’s finish inspires a quiet conversation with the lemon note from the whisky’s finish. As the experience continues, you’ll notice that as the temperature of the whisky gets gradually cooler, the cigar gets gradually warmer, and the roles of the two almost reverse by the end.
Glenmorangie Quarter Century 25 yr with Nat Sherman Sterling Super Lancero The oldest expression regularly available from Glenmorangie is deserving of a suitor equally rare. The Nat Sherman Sterling Super Lancero is made in very limited quantities because of the difficulty in blending and manufacturing this vitola. With age comes subtlety and complexity, embraced in both the whisky and the cigar. Serve this whisky neat, and taste it alone. Dark fruits and subtle spice coat the palate. Take a puff, and the smoke is noticeably cool yet focused, with toasted almond and an equally subtle spice. Enjoy the pairing by puffing and sipping, as they perform in equal roles. Perhaps the most interesting result of this pairing is the oh-so-delicate note of mint chocolate that this combination creates on the palate. As the experience comes to an end, the temperature and intensity of the smoke build consistently, leaving you with a very exciting exchange of flavors, textures and temperatures.

THERE WAS A TIME IN NEW YORK HISTORY that taverns would use bowls of caviar as salty

snacks to keep patrons drinking. The same caviar that now commands our attention as the world’s most fashionable delicacy was once enjoyed by drunken bar hounds by the spoon or, egads, the fingerful. If there remain places in the New York City area that continue the tradition, we’ve not encountered them yet. We certainly like the idea, although, perhaps, on a more refined scale and presentation. Until then, we’ll have to rely upon the creative whimsy of the greatest chefs in the world to sate our appetite for the salty treat. So, this month we grabbed two of the region's top chefs and challenged them to come up with just that: a refined treat made with caviar as the main ingredient. The rules were simple. The recipe cannot appear on their current menu. HudsonMOD would go into the kitchens of these two famous chefs to record the making of the dish, then we sample it. It’s an easy challenge. Moving with ease in his kitchen, Chef Kida came up with a deceptively simple cold dish that was both delicate and provocatively sophisticated on the palette. While he didn’t divulge the portions, this is his take on our Caviar Challenge. The caviar he chose, perfectly complemented the seasonal and piquant ramps mignonette with a smooth, decidedly non-fishy taste, which elevated this dish to something worthy of a future menu inclusion. Chef Kida proves that simple, fresh ingredients are hard to challenge for taste.

1. Wrap sepia with plastic into a circle and twist tight. Freeze overnight. 2. Shave paper thin on a slicer (while frozen) and put in a bowl. 3. Place sour cream, yogurt, truffle and lime juice, olive oil and chives in a bowl and whisk well. Season with sea salt and fresh pepper. 4. Add radishes to bowl with sepia and dressing. 5 Mix real well and twist in a circle like spaghetti. Lift on to the center of the plate. Spoon 1 teaspoon spread over salad in five different locations. Getting a bite of caviar in every bite. Top with a sprinkle of sea salt, some micro celery and serve.

Whether she’s adding that distinctive Deleon touch to a restaurant, building lobby, or even her own Hudson River duplex in Edgewater, her spaces evoke a sense of happiness and leave her clients feeling her design services were worth every penny. What influences and motivates you? Obviously, design is function and form, but as far as aesthetic is concerned, I love to travel the world and see and experience other places: restaurants, hotels, even the way people live. I’m influenced by my travels and incorporate that into my everyday designs. Where have you traveled recently? I recently came back from Amsterdam and St. Maarten. We are actually working on a villa in St. Maarten, and the villas there are interesting because you have to sort of work with your surroundings. Our floor plans are different than a home I would do in Alpine or Franklin Lakes. Working with a plan that’s true indoor/outdoor—I know a lot of people say they have a home that’s indoor/outdoor, but they just have a bank of windows. In these villas, it’s true indoor/ outdoor living: The dining room is in a courtyard outside, overlooking the beach. In Amsterdam, the homes have an old French Parisian style but at the same time are minimal. It’s black and white. It’s fun to see. It’s like eye candy for me.
What does your home look like? My style is very all over the place. I personally like a mix of classic-meetsmodern-meets-traditional, French meets very modern and minimal. It sounds confusing, but it sort of works. I typically like a sense of clean and hotel lofty living, and that’s sort of how I live. I have a duplex in Edgewater, and it’s all glass rails and a floating staircase. I have oversized slate tiles throughout. I play a lot with wallpaper; I love wallpaper. And then my pride and joy is my closet. I have a full bedroom that I converted into a walk-in closet, which is very funky: It’s black, with wallpaper on the ceiling. What’s it like working with other designers on American Dream Builders? Because we are all type A personalities and all seasoned in our careers, this is not like designers trying to make it, like a Top Chef show. Everyone here has already made it, so what makes it most challenging and difficult is that we have to compete with egos. Everyone believes their design is best, because it’s what they do every day. Your wedding is coming up. How did you incorporate your design aesthetic? The wedding is all my design vision. It’s all black and white; I like to keep it timeless. Wearing a tailored suit perfectly fitted to his 6’3” body that covers up some notably flawless sun-kissed skin, and sporting the latest tech gadgets, Ryan Serhant radiates smooth importance as soon as he greets me for his interview, which we have to squeeze in between meetings. “We’re meeting the car around the corner,” he says, and as we walk, he points out places where his hit Bravo television show, Million Dollar Listing New York, has been filmed. We jump into the car and head south through the wonderland of Manhattan real estate that has become his field of dreams. spective in his crazy, competitive world of luxury real estate in New York City. Ryan Serhant is a relaxed and down-to-earth guy—unexpected qualities for the star of a hit reality show, one of the most renowned real estate brokers in New York City, and a too-good-looking man just 29 years old. His life is similar to your average romantic comedy. The guy comes to NYC to chase a career he wants, he eventually gives up and decides to pursue another career, and then the original career seeks him out. Except in the Serhant version, his career goals of being an actor and real estate agent have converged. After graduating from Hamilton College with degrees in theater and English literature, Serhant moved to Manhattan in 2006 to pursue an acting career. Following a stint on As the World Turns—
which ended when his character was killed off and the writers decided, against all soap opera logic, to resurrect his character from the dead—he soon realized that acting involved a lot of waiting, standing in line, going to callbacks, taking new headshots and working with acting coaches, all without receiving much in return for his efforts. Serhant—unlike most aspiring actors who hold onto the hope of making it big, connecting the dots in between with one drab job after another—decided to try something new in early 2008. He became a real estate agent and got a job with Nest Seekers International, eventually becoming executive vice president and a broker of his own team. In retrospect, it was probably the right move for all of his competitive passions. “I have more control—which is why I think I did so well so quickly, because every other real estate agent will tell you that the one thing about real estate is that they have no control. I’m not the buyer, I’m not the seller, I’m not the attorney, I’m not the banker. I’m just that middleman who’s hoping the deal is going to work out. But compared to acting in New York City, I have an unbelievable amount of control over my own destiny.” Ironically, acting is now pursuing him. He not only stars on Million Dollar Listing New York, which will be entering its fourth season, but will also star in the 2015 film While We’re Young, with Ben Stiller. And this time, Hollywood called him. But Serhant has never really stopped acting. Serhant is always on a new set, whether he’s planning an ‘80s-themed open house or traveling to a different country to meet his girlfriend’s parents. He’s always trying to advance and develop his character into a better version of his former self. And if there’s a core quality to Serhant, it’s his innate competitive drive to never come in second. Serhant had to work hard to advance his “I want to do more than I did yesterday” attitude. In his 7-days-a-week world, he only has time for himself on Saturdays, between 7 a.m and 10 a.m., when he “regroups” and reads and responds to emails. To stay on top of his world and immersed in Manhattan real estate trends, he moves every couple of years to different parts of the city, which have included Midtown, Murray Hill, Chelsea, the Upper East Side and the Financial District. But he didn’t just become a confident businessman, who is busy 24/7, overnight. Early in his life, he lived on a farm and

worked as a farmhand as well as with contractors. “With those jobs, the clock hits 5 o’clock and you’re done. You can go to the gym and hang out. There’s nothing hanging over you. The 2x4s aren’t calling at two in the morning that they don’t want to do the deal. They’re going to be there tomorrow, no matter what,” explained Serhant, when asked how his life and responsibilities have changed. “So I think that the level of responsibility just gets greater and greater and greater as you get older, and I’m the kind of person who does not like failure of any kind, so I go above and beyond to make sure that everything, as best I can, gets done, and gets done perfectly.” Serhant also mentioned that he never knew people, or really understood the good and the bad sides people have, the way he does now. He went from acting and wearing his life on his sleeve, to living in a world where, he jokes, “people would lie to the face of baby Jesus to do a deal.” He admits that he is not a salesman at heart. He had to teach himself how to persuade, negotiate and communicate. Serhant had to become meaner, tougher, less trusting in order to deal with people in a business setting and effectively outcompete other brokers. “When it comes down to people, their money and their homes, it’s every man for himself,” he says about the inner world of Manhattan real estate. What sets Serhant apart from other brokers, particularly his co-stars on Million Dollar Listing New York, Fredrik Eklund and Luis D. Ortiz, is his laid-back and welcoming aura. Although he respects both of them and their business approaches, he plays the role of “real estate businessman” differently than they do. “I’ve never been that social. I was always kind of shy growing up. I don’t have that innate ability to schmooze and sell, so I had to learn that.” Serhant says co-star Ortiz, on the other hand, has a natural knack for working a room. When it comes to co-star Eklund, Serhant says, “He’s a very good broker because he’s so tough and cold, and I don’t know if I’ll ever be able to be like that with people, but he can be.” As for the future, in addition to “world domination,” Serhant is in the process of opening a Ryan Serhant Team office in Los Angeles. When asked to predict the next up-and-coming New York City real estate hot spot, Serhant says,“The Hudson Yards” because of the new transportation extension to the area as well as the
expansion of the Hudson Yards Time “We jump in his car Warner Center. Also, anywhere along and head south second avenue on the Upper West Side, through the wonder“because of the second avenue subway, land of Manhattan [that area is] going to explode, and then real estate that has people are going to regret that they become his field of didn’t buy there when they start seeing dreams. To stay on top of his world … the resale prices two years from now.” Serhant is currently preparing for [Ryan] moves every a trip to Greece with his girlfriend, couple of years to different parts of the city.” Emilia Bechrakis, by reading The Odyssey and brushing up on his Greek mythology. Serhant and Bechrakis will be celebrating their birthdays, July 2 and July 3, respectively, while they are in Greece. Serhant will be preparing for what may be one of the most difficult roles in the movie of his life yet: meeting the Bechrakis family. And with that information, the car stops, and Serhant steps out to work on his next deal, graciously asking the driver to take me home. On the drive back through this transcendent city, I realize why Serhant says he never plans on leaving. From the businessmen in suits running to catch a cab, to the elaborate street art providing a deeply human statement in response to its corporate counterpart, many people only visit the set of New York City, but Serhant is fortunate enough to call it his reality.

watched a low fog move over the surface of the water as the last pale strip of daylight was engulfed by what passes as night in Hong Kong. The lights from the buildings sparkled to life, and a halo of ambient light hung over the city. The wisps of gauzy white fog moved low across the waters of Victoria Harbor, squeezing into the narrow passage that divides Kowloon from Hong Kong Island. It was as if the fog were on a slow, careful search. I watched the scene from the hallowed perch of the Peninsula Suite, on the 26th floor of the famous Peninsula Hong Kong, the original hotel in this storied brand’s legacy of luxury. The low-flowing fog consumed ferries, transport boats—every vessel on the water—and even the Convention and Exhibition Centre, its pale light pulsing through the mist. I stood on the balcony to watch Hong Kong’s nightly spectacle of light. Every evening, precisely at eight o’clock, the skyscrapers that define the waterfront put on a laser show, beaming lights into the sky, accompanied by music. The narrow streaks of blue reminded me of a futuristic space battle as they fired into the air at surprising, uneven intervals, piercing the night with sharp shafts of light like sabers. I watched the chaotic dance of lights before me from my grand

perch amid the luxurious confines of the suite, Möet & Chandon champagne in my hand. As I watched, I was afraid the shroud that covered the river would rise and smother the view. Instead, it lofted the scene so that the buildings looked to be rising not from land but from the low-lying cloud thickening at their bases, a city emerging from the clouds, perhaps providing a prophetic peek into Hong Kong’s future as it continues to stretch to heaven. And if there were a city that could rise from the clouds, the conundrum that is Hong Kong would be it. It has evolved from a 19th-century warren of opium dens, fishing villages and silk and tea merchants, to a manufacturing export hub from which the “Made in Hong Kong” tag has become known around the globe, to its current iteration as a global financial powerhouse. As a result of the rapid rise in wealth, the city is crowded with luxury: top restaurants and chefs and battalions of opulent brands — Louis Vuitton, Chanel, YSL, Prada, Gucci, Cartier, among others. A casual drive through Kowloon or Hong Kong Island reveals massive stores touting these top brands, not in single showrooms but in numbers that seem more prolific than teahouses or traditional Chinese-medicine venues. There are more than ten Chanel stores and seven Louis Vuittons. There’s one of each, along with other top brands, just in the Arcade of the Peninsula Hotel.

PENINSULA SUITE
Encompassing 4,111 square feet of the 26th floor, the Peninsula Suite embodies the elegant luxury that defines the Peninsula Hong Kong. The only thing not understated or refined is the mind-boggling view over Victoria Harbor.
Interestingly, Hong Kong’s art scene has been stirring up attention from the world’s collectors, and you’ll find gallery showings in odd places, such as the third floor of a Louis Vuitton store, and in hotels, restaurant lobbies and other nontraditional spaces. But these placements effectively and creatively put the vibrant art in front of people with money, who have become the underlying manifestation of the Hong Kong of today. And yet, despite all the explosively modern trappings—the buildings and showrooms, and even the newly refined expanse of the Peninsula Suite in which I stood—the ancient and mysterious still swell through the narrow streets of this eclectic city. The enigmatic theory and thoughts of feng shui dominate the way spaces—even the most modern of architecture—are designed. The past still resonates in personal healthcare. Around the corner from the fashion houses and paeans to commerce and business, and sometimes right next door, are stores filled with jars of secret ingredients and potions and other archaic forms of medicine that seem more entrenched in the world of Harry Potter’s Diagon Alley than part of the spellbinding pulse of such a cosmopolitan city. This is what makes Hong Kong such a wonderful and compelling conundrum. It’s leading the world into the future and not letting go of the deep and exotic ties to a long cultural history.
And amid this exotically enigmatic and sometimes wildly contradictory city sits the Peninsula Hong Kong, the legendary flagship of this luxury brand. At once a solid and unchanged Hong Kong icon that harkens back and celebrates an earlier (and perhaps more refined) era, the hotel also embraces the marvels of technology, which have been elegantly woven into the elevated experience. Hong Kong’s grand dame, as the hotel has been called, has managed to remain relevant by holding on to its storied and luxurious past and simultaneously doing what all wise grand dames do: define the future. Becoming at once timely and timeless.
The Arrival: Into the Timely and the Timeless SINCE 1928, THE PEN, AS THE PENINSULA HONG KONG IS KNOWN
throughout the world, has hosted the world’s elite—presidents, world leaders, rock stars and the most fashionable people from every decade since the hotel doors opened. And the majority of those guests arrived, as I did, in one of the hotel’s British Racing Green Silver Shadow Rolls-Royces. Even this heralded tradition comes with a modern twist: Internet in the car, so you can keep up with the HudsonMOD Instagram. Traveling in the soft leather confines of the Rolls is like a hand from above reaching down and softly, quietly, gracefully and ro-

mantically transporting you along the 45-minute ride from the airport to the hotel’s Grand Lobby and delivering you into a singular world and experience that exists only in this one place. I arrived with a small group, and we were all immediately escorted to our individual rooms. Once inside my suite, I was introduced to the technology-driven amenities and swept away by the views over bustling Victoria Harbor. Every room at the Peninsula Hong Kong—including the one I was in—is controlled with an iPad, in what the Peninsula terms “the world’s most customized room”: the lights, curtains, air, music, language, valet service, flight information, guest services, privacy, Rolls-Royce pick-up request, helicopter transit, restaurant reservations, room service, city guide and a host of other things are all controlled with a swipe of the finger. Essentially, one has a butler in an iPad, and it will even summon a live butler to further enhance the guest-customized services. There’s also a VoIP phone, which allows you to make free calls via the Internet to keep up with your business. One of my favorite options was the expansive bathroom’s “Spa” mode, which dimmed the lights, changed their hue to a relaxing blue, and turned on music to accompany a quiet bath. The service during my stay was particularly impressive, with superior responsiveness and an extraordinary attention to detail. I sent a few shirts for laundering, and the presentation upon their return was kingly: They had been pressed, folded and wrapped in paper and were delivered in a leather box. Pressing jackets was done upon request. Complimentary shoeshines finished within 10 minutes. When summoned, the valet seldom took more than a minute to arrive, and everything seemed to appear by magic, unnoticed even when I was in the room (I have yet to figure out how the ice bucket remained so fresh). Little details predominated in a quiet manner: a touch-button, lit vanity that lifts from a dressing table and tucks away unseen when you’re done; an array of chargers for almost every known device in the bedside table, and slide outs for your drinks which extend from the sofa arms; stemware for all your drink choices; and dozens of

other niceties one would expect from such a grand dame. And, although I would have been happy to just exist for a while, ensconced in my room, the view from my 26th floor window was too enticing.
My Hong Kong Affair with Food TASTE. THERE’S NOTHING LIKE FOOD TO FORM AN UNDERSTAND-
ing and a bond with any place in the world. It’s a common tie we humans have. It tells wonderful stories. It expands the soul while exposing it. And in every dish there are secret histories to be heard. Great meals make the past speak to the present, which can only find its voice through taste. So my first foray into the city, the culture and the Peninsula led me not into the sultry, crowded streets but into one of the working hearts of the hotel, the kitchen of the Spring Moon restaurant, to learn the art of making dim sum with Chef Fong Li Hing. On the menu, our small group of nouvelle dim sum artists were to make chive dumplings and steamed shrimp dumplings. The ingredients had been laid out. We made the dough, and the chef taught us how to flatten the dough with a knife and then stuff and fold the dumpling to give them an artistic and palatable appearance. My first efforts at folding dim sum looked more like beat-up tacos; folding is harder than you’d imagine. After slow improvement, our little cooking group actually produced edible, even artistic, dumplings (taking three times longer than the chef), which were later put to the taste test during our lunch in the restaurant. Our results ended up being savory tidbits to temper my palate for a cuisine whirlwind through Hong Kong. There are nine restaurants in the Peninsula, each a culinary delight. There’s hardly a reason to dine outside the coddled confines of this iconic hotel. I debated with myself about ever venturing out. Breakfasts in the lobby are masterpieces (the eggs Benedict and the waffles are both decadent and immediately addictive); even the buffet at the Verandah is a marvel of gourmet cuisine. Each of the restaurants evokes an Old or New World experience, from the Old World truffle-infused opulence of Gaddi’s for exquisite French cuisine to the glittery rooftop dining at the Felix—created by avant-garde designer Philippe Starck—complete with cascading views of the sparkling city lights. But to really immerse yourself in the Old World lavishness of the Peninsula, you have to take your afternoon tea in the soaring expanse of the Grand Lobby, where the air lobby fills with the orchestral musings of the Lobby Strings band, and the sound transports the space back to a time when tea was enjoyed as a daily social occasion that was a must for every prominent citizen and guest. Afternoon tea arrives on Tiffany china with Sheffield silverware and is served with an elegant swagger by white-jacketed waiters who deliver a specially blended Peninsula Afternoon Tea (or jasmine, a local favorite) along with a three-tiered tray of finger

ART EVERYWHERE
Street art finds expression everywhere in Hong Kong. But one can’t overlook the art of the Peninsula steam room.
core of the Duddell’s dining experience harkens back to the rituals and rites of the Chinese on the history of Hong Kong: tea drinking. Unlike British afternoon tea, which evolved historically as a midafternoon break for sustenance, tea drinking in Chinese culture is a true, socially embedded phenomenon, and its significance has gone unchanged for centuries, despite the press of the modern world. Sharing tea is an act of hospitality and plays a part in weddings, religious rituals and anything else of import in the Chinese culture. There are even specific teapots for specific teas, and specific water temps to brew green tea (140°F to 185°F) versus black tea (near boiling, as soon as the bubbles rise), and steeping time varies: 2 to 3 minutes for green tea, 3 to 5 for black tea. It’s a social art, and Duddell’s includes such tea delicacies as Joyous Moment, Jasmine White Dragon and Fragrant Phoenix. Each meal begins with tea. The menu, like the tea, bends to authentic Chinese cultural fare: crispy eel, bird’s nest soup, sautéed pigeon, bean curd, double-boiled sea cucumber and, of course, Peking duck. And every dish that appeared in front of me was dazzling in its simplicity, artistic presentation and complex flavors. Even the pigeon.
Rising Above PUMPED UP ON BIRD’S NEST SOUP AND JOYOUS MOMENT TEA, WE
sandwiches and freshly made little cakes and scones, which, of course, are accompanied by jam, sweet butter and clotted cream. Eventually, I had to leave the white-gloved world of the Peninsula and venture out to experience the culinary amalgamations that fill the streets of Hong Kong with heady aromas bursting from hundreds of kitchens that make up the complexity of the streetscape.
Foreigners Are Everywhere! So Is Tea THERE’S A NEON SIGN OVERLOOKING THE STAIRS THAT LEAD TO
Duddell’s at the Shanghai Tang Mansion, in the region of Hong Kong called Central. The sign has red-lit Chinese hanzi logograms that read, “Foreigners Everywhere.” It’s part of the art exhibit at the famed Duddell’s Cantonese restaurant. Hong Kong’s daily life, history and identity have evolved on the influence and influx of foreigners, and the exhibit spoke to that in an enigmatic manner that was a slight or a celebration of the fact, depending upon the bias one brought up the steps into the gallery and restaurant. It was another example of art finding a platform in a nontraditional space, forcing everyday people to confront it and form an opinion. But Duddell’s is first and foremost a celebrated Cantonese restaurant and is built upon traditional cuisine. One tradition at the

headed back to the Peninsula’s Clipper Club, which provides access to the helipad, where we boarded a helicopter for an aerial view of the gilded city. The view from the helipad alone was dazzling, but when we lifted off, hovered over Victoria Harbor and looked out across the expanse of Hong Kong, the impact was breathtaking. Seeing any city, any countryside, any crowded or unpopulated space from the air makes the world seem more comprehensible and awe-inspiring But the biggest surprise about Hong Kong is the amount of green space. It’s not just an ever-rising thicket of buildings and commerce; there are hillsides, empty beaches, silky clear blue water and expanses of land without a single structure—only trees and grass. There are uninhabited islands (Hong Kong actually comprises 263 islands), even farmland and, of course, the odd bloom of high-rises. For me, this diversity makes Hong Kong even more of an interesting puzzle. It’s not an all-consuming, skyscraper-engorged landscape. It’s actually well balanced, like the perfect brew of tea, or a meal made by a true kitchen artist. Shortly after landing, I was back in the Silver Shadow and winding through the labyrinth of narrow streets to a place I would have walked past a hundred times without remarking.

and Yang restaurant. It has a small kitchen. There are few tables. From the outside, it looks like an ordinary 100-year-old home. In-

side, however, you’ll find a magician, Chef Xu Yuan. He uses organic ingredients, sourced from his own farm in the New Territories, and traditional cooking methods and mixes them with haute cuisine presentation and style. You never know what the chef will cook on any given night—you just have to trust his whimsy and creativity. Our meal began with vine-tomato jelly with octopus followed by urchin with tomato pesto and hand-scraped noodles. Both dishes were visually elegant and oddly shocking at the same time, especially the tomato jelly, which resembled octopus Jello shots, but each proved sumptuous. Among the mains, I enjoyed Doughnut Devil Crab and Red Hot. The crab lit up my taste buds with a tangy mix of homemade chili miso and ginger mince, which mingled provocatively with the sweet crabmeat. The Red Hot is a traditionally roasted baby pig, and the meat slipped off the bone like piquant edible silk. Stepping out into the street after the meal and looking back on the nondescript building in which I’d just dined—and dined exceptionally—I climbed into the Rolls Royce to return to the Peninsula, a building recognizable the world over. The car slipped through the night, passing under glowing signs of every kind of merchant, wending past skyscrapers, turning at the fountain of the Peninsula and finally pulling into the U-shaped drive, from which I was swept into the high-ceilinged Grand Lobby.

Up in my room, Hong Kong stretched out beneath me. From my floor-to-ceiling window, I watched boats crisscross the harbor while I idly sipped champagne and tea. I’d turned on a jazz station from the iPad, and the soft lilt of Miles Davis filled the space. All at once, I was in an oasis and immersed in the middle of the rush of this city. And the Peninsula Hong Kong was the linchpin that entwined the experiences—connected the past to the present—stolidly overlooking this rapidly evolving city, almost seeming to nod in approval, knowing its history would remain and be the platform upon which the future of Hong Kong finds its voice.

Guest were invited “behind-the-scenes” for a peek into the theatre’s completely renovated Theatre Factory. In attendance were Bergen County, NJ-based interior designer, Vanessa Deleon and other cast members. The show is hosted by Nate Berkus. The party took place at the Soho House in Manhattan. TVs were stationed around the room for guests to watch the premiere episode. Hors d’oeuvres and an open bar kept the scene lively.

Churchill famously said of golf: “Golf is a game whose aim is to hit a very small ball into an even smaller hole, with weapons singularly ill-designed for the purpose.” So, the fact that Pat Perez has spent the last 13 straight years on the PGA Tour playing at the highest level of what is one of the world’s oldest organized sports is both a testament to his athletic skill and his passionate desire to be the best. But, despite the extraordinary focus it takes to maintain a place among golf ’s elite, Perez has not lost his love for family or humanity. He supports a non-profit started by his father called, Operation Game On, which helps rehabilitate wounded warriors and utilizes golf as a path to living a life out of uniform for these decorated veterans. Every year, Perez hosts the Operation Game On Golf Classic to raise funds for those who have truly sacrificed. You’re currently playing exclusively with Callaway Golf clubs for the 2014 season. Let’s talk about your charity involvement with Operation Game On. How’s that going? Operation Game One is a non-profit that my dad started in 2008. It is a rehabilitation program for wounded warriors that provide them an opportunity to use golf as a stepping stool to re-enter civilian life. It is a fantastic program and I am so proud of my dad’s passion and efforts to get it to the place it is. It’s rewarding for me to give back to people who have sacrificed for our country. You’re currently training with swing coach Joe Mayo, one of the world’s foremost experts on ball flight. What’s the best piece of advice he’s given you so far? He has told me the truth about how and why the ball flies the way it does. He also taught me that the club face determines where the shot STARTS and the path determines where the shot CURVES.
Define luxury. Luxury to me is being able to work doing something I love and that allows me to take care of my family and the people I love. This is your thirteenth straight season on the PGA Tour. What are some takeaways from your career? Patience, fairways, greens, no three putts … there are no freebies. Working hard is critical to the end result. You’re a big time collector of limited edition Robert Graham pieces. How many do you own and can you pick out a favorite? Skull is the greatest to me, by far – Ben Franklin with sunglasses is number 2. On Twitter you can usually be found posting pictures of supped-up cars and motorbikes. What’s your favorite “toy” outside of the golf bag? My Nissan Carbon-fiber GTR. You’re also a big fan of Iron Maiden, especially Nicko McBrain, the drummer. Any lessons you’ve learned from watching him that translates onto the links? Iron Maiden is the most talented – they did it all on their own. They’re genuinely talented at what they do and they do it LIVE every time. They are true to their legacy. Love that Drummer Nicko McBrain “does it for the fans.” How do you spend your downtime? On my weeks off I love to watch sports on TV and cook for family and friends. I learned from my mom and dad to cook and I love doing it for the enjoyment of the experience and spending quality time together.
