READERS’ RECIPES! Thank you to everyone who sent in their favourite recipes last year. Congratulations to Ruth Coleman from Dunboyne Junior Primary School in Dunboyne, County Meath who sent in this recipe for lovely Christmas minty treats.

PEPPERMINT C REAMS Ingredients:

450g icing sugar 4 tbsp condensed m ilk 1 tsp peppermint es sence Dark chocolate to de corate

Directions: 1. Mix together the icing sugar and the condensed milk to form a thick paste. 2. Add the pepperm int essence and work into the m ixture. 3. Dust your rolling pin and countertop with icing sugar to prevent sticking. 4. Roll out the mixt ure and cut into sm all squares or triangles with a knife. 5. Lightly coat a ba king tray with icing sugar, place the pe ppermint creams on the tray and cover them with a clean tea towe l. 6. Leave to harden overnight. 7. The next day mel t the dark chocolate slowly in a bowl ov er a pan of hot wate r (ask an adult to he lp you with this). Dr izzle the chocolate in zig zags over the top of the peppermint creams or you can dip them completely in the ch ocolate – your choi ce! Enjoy these lovely treats or you could give them to someo ne special! 36
