Avery warm welcome to issue 20 of Kitchen. Since the launch of Kitchen 7 years ago, we have produced 3 issues a year. This year however, we are planning on 2 issues, plus a Christmas supplement (sorry to mention the C word this early in the year). This ensures we are still able to offer a high-quality publication whilst tempering ever-spiralling print costs. That said, we have never struggled to cram so much into an issue. After the hiatus of international trade shows (caused by another C word we don’t like to mention) plus an emphasis from suppliers on cost control and survival ahead of new product development, we have finally seen a return to some type of norm. Trade shows are back up and running and a deluge of exciting new products are available, many of which you will find featured in the pages to follow.
Whilst it is raining and not the warmest of days at the time of writing, memories from last year of the high temperatures and increased demand for air cooling, are prominent. David and our purchasing team have not forgotten this either as you’ll see in our Fan Club feature on pages 8 and 9.

Chef, food writer and nature lover, Valentine Warner shares a couple of his delicious recipes and talks about his Dorset roots and the importance of seasonality on page 20. I will always remember a conversation with her regarding washing knives in a dishwasher that went something along the lines of: “If you owned a supercar, would you clean it in an automatic car wash? So, why would you put a top of the range knife in the dishwasher?”

The Coffee Loft always has a great selection of homemade sweet treats to choose from and this recipe, from Coffee Loft manager Ben, combines two British classics - the oaty delights of flapjack and almondy loveliness of a Bakewell tart.
MAKES 9 GENEROUS SQUARES
450g porridge oats
250g butter or margarine
250g golden syrup
100g demerara sugar
100g strawberry jam
30g flaked almonds
25g icing sugar
1 Grease and line 1 x 23cm square cake tin.
2 Stir 250g butter, sugar and golden syrup in a pan on a medium heat until melted, then add the oats and stir well.
3 Pour into tin, spread evenly and cook for 20-25 mins at 180C.
4 While the flapjack is cooking, beat together the ground almonds, caster sugar, 120g butter, eggs and almond essence in a cake

5 When the flapjack is out of the oven and still warm, spread the strawberry jam over the top followed by the cake mix then sprinkle with flaked almonds.
Get your garden looking gorgeous for the summer months and beyond, with these top tips from Michael, our garden department manager.
• Perennials can be trimmed by up to half their height in early July to delay flowering and extend the season (the ‘Hampton Court Hack’ - so called as it is around the time of the famous flower show).
• Wisterias should be pruned twice a year (July/August and then January/February) to encourage reliable flowering. For the summer prune, cut back long new growth to around 5 or 6 leaves up the stems.
• If you didn’t feed your lawn in

7 Sprinkle with icing sugar to decorate when cool and cut into squares.

• Looking forward to 2024, bulbs and corms planted in autumn will bring colour to your garden in the spring and will be available to buy from August onwards - keep a lookout for your favourites and new varieties.

The most recent Excellence in Housewares Awards were held at the Royal Lancaster in London and we were finalists in no less than 3 categories. Widely regarded as the Oscars for the housewares sector, we were thrilled to win the Excellence in Online Retailing award for a second year running – a category with competitors including Next and Wayfair. Harts managing director Graham Hart commented: “We are very honoured to win this award. In what was a hard year with the passing of my father, Philip, everyone at Harts has worked extremely hard to keep us at the top of our game. Say hello to warmer months with Fiona Uyema’s light and tasty Japanese themed dishes

Irish TV chef Fiona Uyema fell in love with the Japanese way of cooking whilst living and working in Japan. Now dubbed “Ireland’s Japanese Cuisine Queen”, she loves to introduce people to the benefits of the Japanese diet and way of eating and has been featured on TV, radio and publications, including the cover of Food & Wine magazine, Sunday Times and Independent. She has her own range of award-winning, Asianinspired sauces, Fused by Fiona Uyema and has authored a cookbook, Japanese Food Made Easy, from which the following recipes are taken.
Vegetable oil
2 salmon fillets
Handful of sesame seeds to garnish
FOR THE TERIYAKI SAUCE
4 tbsp soy sauce
2 tbsp sake
2 tbsp mirin
1 tsp sugar or honey
1 Combine all the ingredients for the teriyaki sauce, mix well and set aside.
2 Pour a little vegetable oil into a nonstick frying pan on a medium to high heat.
3 Place the salmon fillets (skin-side down) on the frying pan and sear both sides.
4 When the fish is nearly cooked, pour the teriyaki sauce over it.
5 Use a large spoon to continually pour the sauce over the fish fillets while continuing to fry until the teriyaki sauce is reduced to the consistency of a syrup.
7 Garnish with sesame seeds.

Shichimi Lamb Kofta Kebabs
The meat in this recipe is seasoned with shichimi togarashi (Japanese sevenspice) and served with a natural yoghurt dip.
MAKES 8 SKEWERS
Vegetable oil
1 medium onion, peeled and finely diced
500g good quality lamb, minced Bunch of fresh parsley, finely chopped
1 tbsp shichimi togarashi
Salt and pepper to season
8 skewers, soaked in water for 20 mins if using wooden ones
FOR THE YOGHURT AND MINT DIP
5 tbsp natural yoghurt
Large bunch of mint leaves, finely chopped
2 tsp lime juice
Zest of half a lime
1 tsp olive oil
Salt and pepper to season
1 Heat the oil in a frying pan on a medium heat and add the diced onion. Slowly cook the onion, allowing it to sweat, and then fry until translucent (do not brown). Remove from the heat and let it cool.
2 In a large bowl mix together the minced lamb, parsley, shichimi togarashi and onion. Season with salt and pepper.
3 With dampened hands, take a handful of meat and, using a firm hand, form a rectangular shape. Push a skewer through the meat.
4 Place under a grill on a high heat for 10 to 20 mins (or until cooked to your liking). Place a cup of water on the base of the grill to stop the meat drying out.
5 Mix all the ingredients for the dip together in a bowl and serve on the side.

Kale and Garlic Donburi
This recipe takes about 5 minutes to make (once the rice is cooked) and is packed with goodness. The flavour of the kale and garlic go really well with a bowl of plain rice.
SERVES 2
100g kale
1 tbsp vegetable oil
1 tbsp olive oil
2 gloves of garlic, peeled and finely diced
Salt and pepper to season
Juice of half a lemon
1 Cut the thick part of the stem from the kale leaves.
2 Roll the leaves into a bunch and cut into ribbons.
3 Pour the vegetable oil and olive oil into a non-stick frying pan.
4 Turn the heat to medium and toss the garlic in the pan, cooking until you start to get a nice aroma from the garlic (do not brown).
5 Season the garlic-infused oil with salt and pepper.
6 Add the chopped kale and reduce the heat to medium-low.
7 Pour the lemon juice over the kale.
8 Stir and fry until the kale is bright green all over, then take the kale off the hot pan as it will continue to cook.
9 Serve on top of a bowl of rice.

300ml condensed milk
1 tbsp lemon juice
1 Using a fork or a small whisk, mix the matcha powder and water together until all lumps are dissolved. Set aside.
2 Whip the cream until soft peaks form.
3 Stir in the condensed milk, lemon juice and matcha mix using a large spoon. Mix well together.
4 Transfer the ice-cream into an airtight container and freeze for at least 4 hours or overnight.

VALENTINE’S SAY
Chef, food writer and nature lover, Valentine Warner talks about his rural roots and the importance of seasonality
After a childhood divided between home on a farm in Dorset and a boarding school in Hampshire, chef, food writer, broadcaster and nature lover Valentine Warner left rural surroundings for art school in London.
Although he then went on to make his mark in the culinary world, rather than as the portrait painter he was training to be, his artistic talent hasn’t gone to waste. He illustrated 3 of his cookbooks – and still finds time to draw, with a preference for pencil.
Of course, cooking can be an art form in itself and as Valentine has previously explained, both involve organisations of shapes, colours and taste, albeit one in the mouth and one visually.
Today the father-of-two lives in west London, but for almost a decade has been setting off for a hotel and restaurant on the remote Lofoten Islands in Norway for 6 weeks each year. There he is a founding member of Kitchen On The Edge Of The World events, where guests enjoy a culinary treat above the Artic Circle. Valentine acts as cook and host at Holmen Lofoten and revels in the surrounding natural beauty and bounty along with his chosen guest chefs. This year they include Rick Stein, Nuno Mendes and Fuchsia Dunlop to name just 3.
We caught up with Valentine to ask him a few questions about his Dorset roots and influences and his thoughts on food today.

Q. What are your fondest memories of growing up on a beef and dairy farm in west Dorset – and how did those early experiences shape your life?
I would say it is mainly the freedom from that time that stands out. Children seem to be indoors on their phones now. Back then, we just wanted to be outside. The farm provided plenty of opportunities for that as well as naughtiness with my brother – throwing apples and stealing raspberries from the kitchen garden come to mind.
I also grew up to understand food, whether that was walking through fields with my brother to collect milk or seeing my father come home with anything from mushrooms to rosehips in his pockets.
Q. Name your three favourite places in Dorset, and tell us why you love them?
Lewesdon Hill is really magic to sit at the top of on a sunny day with the sea glinting in the distance. It is a beautiful place to walk, although you may sometimes spot an adder as I have in the past. Lyme Regis would be my second. I adore it, whether that’s swimming on the beach or sitting on the cob, catching mackerel. Finally, on a similar theme, there’s a tiny stretch of river in West Milton where I like to go with a jar of worms and catch trout.
Q. You extol the virtues of simple, seasonal cooking… do you think this message is being embraced?
No I don’t, and feel quite gloomy about it actually. There is masses of good food in the UK, but I would argue we know less about food than ever before and have lost the art of cooking seasonally.
I don’t want to eat jet-lagged asparagus, and winter is not the time to be enjoying strawberries, but we are often not encouraged to consider what is naturally in season when choosing meals and ingredients. The seasons provide us with a carousel of treats if we embrace them. Doing that encourages you to cook available food in different ways, to thoroughly celebrate and appreciate it before moving on to the next seasonal delight.
Q. How have you evolved as a chef?
Chefs are quite competitive but I’m at the stage where I’m comfortable in my own skin and am no longer looking over my shoulder. I know my own style, which I liken to an international grandmother. I like food that has roots, whilst still enjoying being inventive.
Q. Name five ingredients you deem essential in your kitchen. Lemons, Dijon mustard, salt, herbs, particularly sweet marjoram (which often gets confused with oregano), and really good quality garlic. One tip that uses 3 of these is to use powdered marjoram, lemon juice and olive oil to make an amazing dressing for fish, it is particularly good with sea bass. You can also take the opened flowers of wild garlic and deep fry them - absolutely delicious.
Q. Do you have one memorable taste experience that sticks out beyond any other?
The first time I ever ate a sea urchin. I would describe the taste as a mix of umami, sea foie gras, minerals and metallic. It was so good it made my eyes dilate.
Q. Who would your top 3 dinner guests, dead or alive, be and what would you cook for them?
Bill Bailey – he’s very funny and a naturalist, as well as a comedian who really makes me laugh. Anjelica Huston, who I find captivating – she would be guaranteed to provide some cutting lines and quips over dinner. The third guest would be my dad. He died 26 years ago when I was in my mid-20s, and I would love to see him again. In terms of the food, I’d serve up an enormous platter of fruits de mer with mayo and crusty bread.

Faggots
Faggots remind me of the lesscomfortable pubs that are better for it: hard, dark-wood bench seating, whitewashed walls, a low ceiling, and the low murmur of locals leaning against the bar.
MAKES 12 FAGGOTS
50g butter
1 medium onion, finely chopped
1 tbsp chopped thyme leaves
12 sage leaves, finely chopped
1 tsp ground mace
2 tsp black pepper
500g minced pork belly
100g minced bacon
4 lamb’s kidneys, rinsed, skinned, cored and finely but roughly chopped
150g pork or lamb’s liver, finely but roughly chopped
1 level tbsp flaked sea salt (half a tbsp if using fine salt)
100g coarse white breadcrumbs, made from stale bread
100ml whole milk
200g beef caul
FOR THE GRAVY
2 large onions, finely sliced
1 tbsp soft dark brown sugar
2 tbsp malt vinegar
1.5 level tbsp plain flour
500ml good dark beef stock, or a can of consommé mixed with water
Flaked sea salt and black pepper
1 Melt 30g of the butter in a frying pan and sweat the onion with the thyme, sage and spices over a medium-low heat for about 15 mins, or until very soft.
2 Add the mixture to the meats and salt in a big bowl, and mix all together well, then add the breadcrumbs and milk. Get your hands in there and squish the mixture through them until it is well combined.
3 Take a little of the raw mixture and fry it to see how it tastes; correct the seasoning accordingly.
4 Tenderly open the caul and hold it to the light to see where any holes might be (to avoid when assembling the faggots), then spread it out on the work surface.
5 Take an open fistful of the mixture and place it on the caul so that you can cut a sheet around it to the size of two-thirds of a piece of A5 paper. Fold the caul over the top of the meats as if you were wrapping up treasured possessions in a handkerchief. All the corners should overlap, and the meats be tightly surrounded. Turn the faggot over. Repeat until all are done.
6 Heat more butter in a frying pan over a medium-high heat and put the faggots
in, fold-side down. Briskly fry until brown, taking care not to burn them. Turn over and gently fry on the other side. They should not open, but if they do, place a plate over the top of the batch to secure the folds. Repeat until all are good and brown. Transfer to a board.
7 In the same frying pan, fry the onions in the leftover faggot fat over a mediumlow heat for 30 mins or so until richly coloured.
8 Meanwhile, preheat the oven to 160C/Gas 4.
9 Add the brown sugar and malt vinegar to the frying pan and cook until the vinegar has evaporated completely. Then sprinkle in the flour and cook gently, stirring, for a further minute or so. The flour must not burn. Start adding the beef stock or canned consommé, bit by bit, stirring constantly. Taste for seasoning, remembering that the faggots are highly seasoned.
10 Place the faggots in a good-sized, shallow casserole and cover with the gravy, then the lid. Bake gently for 1.5 hours. For the last 20 mins, remove the

Brandy crème brûlée
I always associate crème brûlée with grown-up restaurants and evening time, and really wanted to exaggerate this by adding prunes and brandy to make it serious.
SERVES 6
150g pitted soft prunes
150ml orange juice
4 tbsp brandy
FOR THE CUSTARD
600ml double cream
1 vanilla pod, split lengthways
4 large free-range egg yolks
100g caster sugar
1 Preheat the oven to 130C/Gas 2.
2 Put the prunes in a small saucepan with the orange juice and cook over a low heat for about 6-8 mins, or until the prunes soften and become plump, stirring occasionally.
3 Tip into a food processor and add the brandy. Blitz to a smooth, spreadable purée. If the mixture looks too stiff, add a little more orange juice and blitz again.

cream into a medium saucepan and into it scrape out the vanilla seeds from the pod and add the pod too. Heat the cream over a very low heat for about 10 mins, stirring occasionally. Do not allow to boil.
6 Whisk the egg yolks and half the sugar in a jug until well combined. Strain the eggs through a fine sieve into the cream. Stir well. Remove the vanilla pod. Set the ramekins in a roasting tin and divide the cream mixture between them.
7 Pour enough just-boiled water into the roasting tin to rise halfway up the outsides of the ramekins. Carefully transfer to the oven and bake for 30 mins, or until the custard is very lightly set and still wobbles slightly in the middle. Do not allow them to overcook or they will split.
8 Remove from the oven, take the ramekins out of the water and leave to cool. Once cold, transfer the dishes to the fridge and leave to chill overnight.
9 About an hour before serving, sprinkle the custards with the remaining sugar and either pop under a very hot preheated grill or use a chef’s blowtorch to caramelise the sugar. Refrigerate and then serve.

Bake Off’s Carole Edwards is just as at home in her garden as her kitchen
Homity Pie with a Twist
Some say the original recipe comes from Devon and call it Devonshire pie. Others call it a wartime pie, when ingredients were sparse, and they had to make the most of what they had. Personally, I just like using the vegetables I grow in my garden. You can leave out the bacon if wanted. It is very nice just warm or, if you leave it in the fridge overnight, it cuts into nice wedges.
SERVES 8
SHORT CRUST PASTRY
300g plain flour
200g wholemeal flour
2 pinches of cayenne pepper
250g unsalted butter
2 eggs
Carole Edwards appeared on The Great British Bake Off’s 13th season last year as one of 12 hopeful contestants and since then, says she has never been busier.
Born in the West Country, she now lives on a hillside near Sherborne, in Dorset, with her husband Michael. Aside from working in a well-known supermarket, Carole spends any spare time between her garden, kitchen and family. She is also a customer at Harts of Stur, where she got the KitchenAid she’s pictured with above!
Here she gives us 2 of her favourite recipes for using produce she grows herself, tips on tending a strawberry bed and her verdict on an innovative new composting product.
Egg wash (1 egg beaten)
FOR THE FILLING
600g potatoes, peeled and cubed (floury ones like Maris Piper)
225g onion, peeled and chopped
150g leeks, peeled and chopped
3 tbsp unsalted butter
Half a tsp fresh thyme, finely chopped
200g cheddar cheese, grated
240g bacon, chopped and fat removed
40g gruyere cheese, grated
3 spring onions, finely chopped
5 tbsp double cream
Salt and pepper
1 To make the pastry, rub the butter into the flours and cayenne pepper,
add the 2 eggs, roll the dough out on a floured surface, and line a greased tin. I used a 25cm flan tin, but you can use a deeper one. Leave the pastry an inch or two higher than the tin, prick the base several times and chill in the fridge. If you want to save time, you can use shop-bought pastry.
2 Preheat oven to 190C/Gas 5.
3 Boil potatoes, until just tender, drain and set aside to cool.
4 Fry bacon until just cooked, set aside to cool.
5 Heat the butter, and sauté the onions and leeks, about 20 mins, until soft and caramelised, set aside to cool.
6 Bake the pastry blind with greaseproof paper and beans or rice, for about 15 mins. Take out, remove the paper and brush on the beaten egg to seal it. Bake for another 10 mins until cooked, then set aside.
7 In a bowl, mix the potatoes, bacon, onion and leeks, with the thyme and cheddar cheese, then add the cream, salt and pepper.
8 Spoon the filling into the pie dish, sprinkle with the gruyere cheese and spring onion, and put into the oven on 170C, for 20-30 mins.
9 When cool, trim the edges, with a sharp knife.

Fresh Strawberry Cupcakes
I love strawberries and in June there is always a glut as I have a large, raised bed of them. So, lots of strawberry gateau, jam, and my grand-daughter’s favouritestrawberry cupcakes.
MAKES 12
170g butter
170g caster sugar
170g self-raising flour
Half a tsp baking powder
140g fresh chopped strawberries
FOR THE ICING
250g softened unsalted butter
500g icing sugar, sieved
1 tbsp caster sugar
100g fresh chopped strawberries
6 fresh whole strawberries
Meringue sprinkles
Freeze-dried strawberries
Pink gel food colouring
BERRY HELPFUL
1 Preheat oven to 170C/Gas 3.
2 Cream the butter and sugar together for about 5-10 mins, until it‘s creamy and white, as this beats lots of air in.
3 Add the eggs one at a time.
4 Fold in the sieved flour, baking powder and chopped strawberries.
5 Fill 12 muffin cases with the mixture.
6 Put in oven for 20 mins, until golden brown. Leave to cool.
7 Add the chopped strawberries and sugar to a saucepan and simmer to break down, simmer for 20-30 mins to reduce. Leave to cool.
8 Beat the butter and icing sugar together, then add a spot of food colouring to get a nice pink colour. Add just some of the reduced strawberry mixture to loosen the icing. You want a nice dropping consistency.
9 Pipe the icing onto the cakes, decorate each one with half a strawberry, meringue sprinkles and freeze-dried strawberries.
After a winter rest, I start to tidy up the plants in my strawberry bed around March time, pulling off the dead leaves and the old runners, tickling the soil between them, and giving them a feed with a high potassium content.
The plants will start fruiting in June, so I ensure I cover them with netting, to keep the birds off. I also use straw; barley is best because it is soft, but you can still use wheat straw, between and under the plants to stop the slugs having a munch too!
Later in the season you may get a second flush of fruits, if you are lucky. The beauty of strawberries is that you can grow them in all manner of pots, containers and hanging baskets - just make sure they are watered regularly.

Perfectly Portmeirion
Portmeirion was founded by the legendary pottery designer Susan Williams-Ellis and her husband Euan Cooper-Willis. Susan passed away in November 2007 but her philosophy of creating collections that are not only beautiful but also functional lives on.
Susan was born on the 6th June 1918 to Sir Clough Williams-Ellis, the architect and creator of Portmeirion Village in North Wales, and his wife Amabel. The story of Portmeirion pottery really first began when Susan’s father asked her to create some ceramic gifts for the shop at Portmeirion Village. This ignited Susan and her husband Euan’s flair for business, which would see them later launch Portmeirion pottery.
In 1960 Susan and Euan purchased A. E. Gray Ltd, a small pottery decorating company based in Stoke-on-Trent. This was followed by the purchase
of a second pottery company, Kirkhams Ltd, which had the capacity to not only decorate the pottery but also make it. These two businesses were combined and Portmeirion Potteries was born. In fact, Portmeirion Potteries continues to manufacture Susan’s designs as well as others in the same factory in Stoke-on-Trent to this very day.
The 1970s saw the birth of what is considered by many to be Portmeirion’s most recognised design, Botanic Garden. Launched in 1972, Botanic Garden was unique - inspired by a serendipitous find of antique botanical books, and with a variety of individual floral decorations, it encapsulated the new mood for casual dining. It became an instant success and has become a classic of British design and hailed as the world’s most popular casual tableware design.

The ethos that was established over 60 years ago continues to live on and today Portmeirion pottery is made with a unique spirited individuality, taking inspiration from the beauty of nature to bring the outdoors in. It’s utterly distinctive, but built for the real world, embracing form and function, soul and spirit, mind and moments.

SHARPEN
Every knife user, professional or amateur, will have their own preference of handle design, weight, balance and overall appearance. These aspects cannot be contested as they are down to individual choice. However, there are facts governing knife design and sharpening methods, which apply to all culinary knives.
Keeping your knife sharp is just as important as buying the right one. If you buy “the best knife in the world” but use the wrong method of sharpening, you may as well have bought a £5 supermarket one.
All your Options
SHARPENING STEELS
This is a traditional method of sharpening knives, however it is extremely imprecise. It’s impossible to hit the knife edge from tip to heel on both sides at a specific angle and thus a
“shoulder” is produced and a “bowing” in the central part of the blade.
The angle of the shoulder at the cutting edge is far steeper than the angle with which the knife was supplied, which basically means that it is going to blunt quicker than using an anglecontrolled method.
MANUAL PULL-THROUGH SHARPENERS
High-quality sharpeners (such as the I.O.Shen or the Mino Sharp) are fine for all quality knives. They are not overly abrasive and sharpen to a precise angle from heel to tip. Beware of cheap pullthroughs on high-quality knives. The tungsten carbide will be too aggressive and will leave chips in the blade.
WHETSTONES
These are a fantastic method of sharpening, especially when coupled with an angle guide to lock you in position. There are low grits for reprofiling and high grits for polishing. Many manufacturers will offer dual grit stones. The only downside is it can
take a lot of time to sharpen a knife on a stone.
ELECTRIC KNIFE SHARPENERS (EKS)
In the past these have had a bad reputation (for good reason, to be fair) but the KE198 from I.O.Shen changed all that and started an EKS revolution in the UK. Still the UK’s number 1 selling electric knife sharpener, the KE198 has 2 circular whetstone discs which are loaded on to springs (which react to the thickness of the blade being sharpened). The coarse wheel de-shoulders and reprofiles the knife edge if needed and the fine wheel sharpens the blade. The slots are set at 15 degrees and the wheels come with a lifetime guarantee.
The KE3000 from I.O.Shen is a belt system and where the KE198 has a hard contact sharpening system, the KE3000 uses a cushion contact method to polish the knife sharp. Sharpness levels achieved by this machine are exceptional.

The Cold Brew Method
Grinding coffee at home is the easiest way to the best flavour, as Kilner demonstrate here with their easy recipe for cold-brew coffee.
50g coffee beans - freshly roasted, specialty beans are best 400ml water
Ice
1 Adjust the star-shaped cog to set your Kilner Coffee Grinder to a coarse grind size. Pour the beans into the stainless steel hopper and turn the handle to grind the beans.
2 Tip the ground coffee into your Kilner Clip Top Round Jar and add 400ml of cold water. Close the lid.
3 Move the jar around gently to combine, but don’t stir.
4 Pop the jar in the fridge and leave it for 18-24 hours.
5 Place a filter paper over a container or jug and gently pour over the cold brew mixture. Store your cold-brew concentrate in the fridge – it’ll keep quite happily for 2-3 days.
6 To serve, fill glasses with ice and pour in the cold brew. You can add more water or some milk, if you like. Or try a little maple syrup!

To make homemade lemonade, roughly chop 3 unwaxed lemons and add to a food processor with around 140g of caster sugar and 0.5L of water. Louise Jones, from Food For Thought Cookery School in Dorset, explains the vital role food plays in keeping our gut healthy
Did you know that around 70% of your immune system is in your gut and around 95% of the feel-good hormone serotonin is also created there? If your gut is working well, then your body and immune system is happier.
The gut has even been dubbed as your second brain, affecting how you feel as your brain and gut talk to each other and your mental health is affected by how you feed your body. Ways to improve gut health include upping your prebiotic and probiotic intake.
To briefly explain, a prebiotic is a type of soluble fibre that is used by your beneficial good bacteria as fuel. So, making sure you eat plenty of prebiotics is essential.
Prebiotic foods include garlic, onions, beetroot, asparagus, leeks, dates, fennel, pomegranates, dried mango, almonds, cashews and artichokes.
Probiotics are live ‘good’ bacteria and yeasts that help keep your gut and digestive system healthy. They compete for space over the harmful bacteria and prevent them from settling in the gut.
Foods full of live probiotics includes natural yogurt and milk kefir (fermented yogurt drink) kombucha (which is a fizzy fermented green tea) and other fermented products like miso, popular in Japan. Sadly, in the western world we have a lot of processed foods and not enough fermented ones, so we need to make a conscious choice to seek them out and include them in our diet.
Other ways to improve gut health include reducing stress, increasing water intake, getting enough sleep and limiting alcohol consumption. All the basics for a healthy lifestyle generally, in fact.
Most of us don’t get enough fibre, so up your intake of fruit, vegetables, nuts, seeds and pulses. Try new fruits, vegetables and different recipes. Many of us have the same dinners and foods each week and this lack of diversity can mean starving our microbes of nutrients.

Black Bean and Mango Salsa Tacos
Beans and pulses are a cheap, versatile ingredient which are also great for gut health as they are full of soluble fibre. Mangos are also a source of prebiotics, which we need alongside probiotics.
SERVES 2
1 tin of black beans
1 tbsp olive oil
Good pinch of pink Himalayan salt
Half a bag of fresh coriander, chopped
Fresh chilli (optional)
Wraps or baby gem lettuce to serve
FOR THE MANGO SALSA
75g frozen mango (defrosted)
2 medium tomatoes
Half a red onion
1 tbsp extra virgin olive oil
Half a lime, juiced
Pinch of pink Himalayan salt
Pinch of black pepper
FOR THE GUACAMOLE
1 large ripe avocado
Half a red onion
Half a bag of fresh coriander
Half a lime, juiced
Pinch of pink Himalayan salt
1 Make the mango salsa by chopping everything into small pieces and place in a bowl with the extra virgin olive oil, lime juice, pink salt and mix.
2 Make the guacamole by placing all the ingredients into a bowl and, using a blender, mix until smooth.
3 Drain the black beans in a sieve and run under the tap until the water is clear and shake to drain as much water off. Heat the oil in a frying pan over medium heat, then add black beans and pink salt. Cook for a few mins, stirring until they start popping and opening.
4 Assemble in wraps or lettuce cups and top with fresh coriander and chopped fresh chilli if using.

Packed full of flavour and diversity with lots of herbs and vegetables, your gut microbes will love this recipe as much as you do and it’s so quick to make.
SERVES 4
300g tin of sweetcorn
Half a red or orange pepper
2 spring onions
10 cherry or plum tomatoes
Quar ter of a cucumber
Half an avocado
Half a lime, juiced
Handful of coriander, plus extra to top
Handful of parsley
Small handful of dill and mint
3 tbsp extra virgin olive oil
Pinch of pink Himalayan salt
Pinch of pepper
1 Chop the pepper, onions, tomatoes, cucumber and avocado into really small pieces. Add to a bowl with the drained sweetcorn.
2 Place the herbs, oil and lime juice into a blender and blitz until smooth.
3 Stir through the sweetcor add salt and pepper to taste. Top with extra coriander leaves.
4 If making ahead of time, don’ add the dressing until serving. This will keep for up to 2 days in an airtight container in the fridge.
TOP TIP
Adding half a tin of black beans or chickpeas will increase the protein in this dish. Turn it into a full meal by serving on a bed of wild rice or quinoa.

Spring Green
Quinoa and Goat Cheese
This is fresh, tasty and great for guts with plenty of dietary fibre from peas, edamame beans, quinoa and different veggies.
SERVES 2
100g peas
100g edamame beans
100g quinoa
1 red pepper
2 pak choi
1 courgette
2 tbsp extra virgin olive oil
Squeeze of lemon juice
Handful of fresh chives
English goat cheese or vegan equivalent
Pinch of pink Himalayan salt
Handful of walnuts
1 Preheat the oven to 180C and boil the kettle.
2 Place the quinoa in a big saucepan and cover with double the amount of hot water. Cook for 18 mins on medium heat, then strain.
3 Deseed and cut the red pepper into small pieces, place on a baking tray with a slash of extra virgin olive oil and a pinch of pink Himalayan salt. Bake for 20 mins.
4 Cut the courgettes into 1cm strips and griddle in a hot griddle pan for a minute or so on each side. Remove from the pan. Cut the pak choi in half and add to the griddle for a further few mins on each side until charred.
5 Cook the peas and edamame beans in a pan of boiling water on the hob for 7 mins. Strain and place in a large bowl. Using a stick blender, pulse with chopped fresh chives, leaving it a little chunky.
6 Add a touch of good extra virgin olive oil, a pinch of pink Himalayan salt and a squeeze of lemon juice to the pea mixture and then add the cooked quinoa and mix well to combine.
7 Cut the goat cheese into circles and place on a baking tray lined with parchment paper. Pop in the oven for 5 mins until melted in the middle.
8 Assemble by placing the quinoa and pea mix on the bottom of the plate. Add the roasted peppers, griddled courgettes and pak choi. Top with the melted goat cheese and broken walnuts.

CENTRIFUGAL JUICERS
Ideally, when juicing, it is a good idea to mix ingredients roughly in the ratio of 80% vegetables (or low sugar fruit) and 20% fruit (or high sugar content vegetables).
Jasmine
These are also known as fast juicers and use a high-speed spinning blade surrounded by a sieve to separate the juice from the pulp. They are faster, cheaper to buy, take up less space and are easier to clean, although they can be quite noisy and not as good at juicing certain ingredients. They usually come with 2 speed settings for soft and hard fruit and
vegetables and are best suited for juicing carrots, apples, and other hard vegetables and fruits rather than fibrous leafy greens like kale and wheatgrass.
MASTICATING JUICERS
Also known as a cold press juicer or slow juicer, these crush and press juice out of ingredients using a slow rotating auger (screw) and a screen. This method is well suited for juicing fibrous leafy greens such as kale and wheatgrass. Very little heat is generated, and less oxygen incorporated, in the juicing process thanks to the machine’s slow operating speed. This means less discoloration and an increased shelf life for the juice. They are much quieter than centrifugal juicers although they do tend to be bigger, heavier and more expensive.

THE HISTORY OF HARTS
A family business for over 100 years.
– Harts of Stur is founded by blacksmith Walter Hart.
– Walter’s son, Bill, joins the family business, followed in 1945 by his other son, Eddie.
– With farrier work in decline, Harts starts retailing agricultural ironmongery.
– Harts of Stur becomes a major manufacturer of farming equipment.
– Eddie’s son, Philip, joins the business and the transformation from agricultural suppliers to country department store begins.
– Harts takes its first steps into mail order.
1995 – The company’s first transactional website is launched.

2003 – Continued growth leads to bigger retail premises.
2006 – Philip is joined by sons Johnathan and Graham.
2010 – A 60,000 square foot, purpose-built despatch centre is constructed, followed by a new suite of offices.
2017 – First edition of Kitchen magazine is published.
2018 – Latest incarnation of the company website is launched.
2019 – Harts of Stur celebrates its 100th anniversary. After 40 years in the business, Philip relinquishes his custodianship of the business. Graham takes on the role of MD with Johnathan becoming commercial director.
2021 – An ambitious redevelopment of the store and garden department is completed, and Harts Coffee Loft opens.
