ell, I can barely believe this is the last issue of 2016, but what a brilliant year it’s been! We’ve loved every second creating our magazine using the best dress collections, planning tips and gorgeous real weddings this year, and with everything we have in the pipeline, 2017 looks to be even better! This issue we’ve got some great features, including pretty plus-size dresses for curvaceous figures (page 57), top tips for perfect photos (page 107) and our amazing planning guide so you can tick off the list (page 110)! But my favourite feature this month is the venue special, showcasing some of Britain’s best places to say ‘I do’. Love spicy food but not the calories that come with it? Check out these tasty, healthy dishes LAMB MADRAS
One of the hotter curries on the Indian menu, the Madras is thought to come from the eastern city of that name (now known as Chennai). Leave the seeds in the chillies if you want an extra blast of heat!
SERVES 4 READY IN 3 HOURS INGREDIENTS 2 green chillies, deseeded 3 garlic cloves 2cm piece fresh root ginger, peeled and grated
Low-calorie cooking spray 700g lean lamb leg steaks, visible fat removed, cut into large chunks 1 onion, thinly sliced 6 cardamom pods, crushed 2 bay leaves 400g can chopped tomatoes 6 tbsp tomato purée 300ml boiling chicken stock 2 level tsp tamarind paste Finely chopped fresh coriander Rice, to serve For the Madras curry powder 2 tbsp coriander seeds 2 tbsp fenugreek seeds 1 tbsp black mustard seeds 2 tsp cumin seeds 1 tsp fennel seeds 1 tsp black peppercorns 1 cinnamon stick 5 cloves 1 tsp turmeric 1. Preheat the oven to 180°C/ fan 160°C/gas 4. Put the chillies, garlic and ginger in a small food processor and blend with100ml water to make a paste. Set aside. Make the Madras curry powder. Use a pestle and mortar to grind the coriander seeds, fenugreek seeds, mustard seeds, cumin seeds, fennel seeds, black peppercorns, cinnamon and cloves to a powder. Stir in the turmeric and set aside.

2. Spray a non-stick casserole pan with low-calorie cooking spray and place over a high heat. Season the lamb and stir-fry in batches until browned on all sides, setting each batch aside. Add the onion to the casserole pan and stir-fry until soft and starting to colour – about 10 minutes. Add the garlic paste, cardamom, bay leaves and 3 tbsp of the Madras curry powder and stir well. (You can keep any leftover Madras powder in an air-tight jar). 3. Return the lamb to the pan and add the chopped tomatoes, tomato purée, stock and tamarind. Season to taste, mix well and cover the pan tightly. Cook in the oven for 2½-3 hours, stirring every hour or so until the meat is meltingly tender. Scatter over the fresh coriander & serve with boiled dried basmati rice.
MEXICAN CHILLI CHICKEN CUPS
INGREDIENTS Low-calorie cooking spray 2 garlic cloves, finely chopped 1 red onion, halved and thinly sliced 1 large red pepper, deseeded and thinly sliced 1 red chilli, deseeded and finely chopped 1 tsp ground cumin 1 tsp paprika 4 tbsp canned chopped tomatoes 4 tbsp tomato purée 4 cooked skinless and boneless
1. Heat a large non-stick frying pan and spray with low-calorie cooking spray. Add the garlic, onion, red pepper, chilli, cumin, paprika, chopped tomatoes, tomato purée and chicken and stir-fry for 6 minutes or until the mixture is hot and the vegetables are just tender. Season well and scatter over the parsley. Spoon the chicken mixture into the lettuce leaves, fold them over to enclose the filling and serve with lime wedges and boiled dried rice. ELIZABETH STUART

SPICY HOT-SMOKED SALMON NOODLES Noodle dishes are as filling as they are flavoursome, and this easy supper has tasty chunks of salmon and healthy vegetables in every mouthful.
Small handful of chopped fresh coriander Lime wedges, to serve
1. Cook the noodles according to the packet instructions then drain and set aside. Meanwhile, spray SERVES 4 a non-stick wok or large frying READY IN 25 MINUTES pan with low-calorie cooking spray and place over a high heat. INGREDIENTS Stir-fry the onion and carrot for 350g dried egg noodles 3 minutes, then add the garlic, Low-calorie cooking spray ginger, curry powder and peppers 1 onion, halved and thinly sliced and stir-fry for 4 minutes or until 1 large carrot, peeled and finely just beginning to soften. Add the diced drained noodles and about 2 1 garlic clove, crushed tablespoons of water and toss 1 tsp ground ginger everything together. Add the soy 1 tbsp mild or medium curry sauce, season and stir-fry for 1 powder minute. Add the salmon and stir400g frozen sliced mixed peppers fry for 2 minutes/until piping hot. 4 tbsp light soy sauce Remove from the heat, scatter Salt & freshly ground black pepper over the coriander and divide 300g skinless hot-smoked salmon between plates. “I wore a Pronovias dress from Beautiful Brides in Nottingham. I was with my mum and Michael’s mum when I found it. It was the dress that made me smile the most so I knew it was the one! I did try lots of different styles just to be sure, but I kept going back to this one.”
And the accessories?

because my dress was quite dainty and girly. I wore earrings from Accessorize, a headband from Debenhams and my shoes were Next sandals. Because I couldn’t get my dress altered in length due to the lace around the bottom, sandals were the perfect height.”

“Michael wore a Hugo Boss suit and shoes. He didn’t really want to spend a lot on a suit but I managed to talk him into it. I thought if I had a lovely dress that I felt amazing in then he should have something special to wear. We
decided to go for black because of his dark hair. He looked so smart!”

“I had four bridesmaids. My best friend Jo was chief bridesmaid, then my other best friend Jodie

“Make as much as you can yourself. Even if your craft skills aren’t great (which mine aren’t) it still makes it more personal and gives a great sense of achievement knowing you made a lot of things and didn’t waste money.”

“We were on holiday in New York and the trip was about to come to an end. We had already had a pretty amazing day – we walked the Brooklyn
Bridge, had lunch at a lobster bar, visited the pop up Friends 20th anniversary Central Perk and then headed up to the top of the Empire State Building. To my

delight Giorgio took out a small ring box as we watched the sun set over the New York skyline. He produced an £8 ring from Amazon as the ring he’d bought me didn’t arrive in time for our trip! I was over the moon.”

bespoke wedding dress made. I found Rowan Joy at The Vintage Wedding Fayre in Edinburgh. The lace I chose was pinned on a mannequin at the entrance of the studio and I fell in love with it. Rowan was so helpful and creative throughout the whole process. She took the time to discuss

“It was my 26th birthday and the first day in our new home. Ben had organised a taxi to pick me up and take me to have a massage and facial in Leamington Spa. When I arrived home later, Ben took me out for lunch. Afterwards, we walked down to the amazing Warwick Castle to have a stroll around. there was a table with a bottle of champagne on, and all the tourists were ushered out. Ben then popped the champagne and thanked me for moving so far away from my family and friends for him. He then he got down on one knee and asked me to marry him.”
