INGREDIENTS 1 small unwaxed lemon ½ small pack fresh mint 3 garlic cloves, 1 whole and peeled, 2 crushed 16 spring onions, thinly sliced 300g frozen peas or petit pois 450ml boiling chicken stock 300g dried couscous Low-calorie cooking spray 750g skinless and boneless mini chicken fillets Small bag fresh pea shoots Vegetables, to serve
METHOD Pare three wide strips of zest from the lemon using a peeler, then squeeze the juice into a bowl and set aside. Put the mint leaves, lemon zest and whole garlic clove on a chopping board, chop finely and mix well (this is the gremolata: a classic Italian garnish). Set aside. Put the spring onions, crushed garlic, peas or petit pois and the stock into a large non-stick saucepan over a high heat and bring to the boil. Stir in the couscous, cover and remove from the heat. Set aside for 5 minutes. Meanwhile, spray a non-stick griddle pan or frying pan

with low-calorie cooking spray and place over a high heat. Season the chicken fillets and add them to the pan. Reduce the heat to medium and cook for 3-4 minutes on each side or until golden brown and cooked through. Uncover the couscous and fluff up the grains with a fork. Stir in the lemon juice and half the gremolata and season to taste. Spoon the couscous on to plates, arrange the chicken on top and sprinkle over the rest of the gremolata. Add the pea shoots and serve hot with your favourite vegetables.
HOT POTATO CURRY Ready in 30 minutes INGREDIENTS SERVES 4 Low-calorie cooking spray 1 tbsp black mustard seeds 1 tbsp cumin seeds 1 large onion, finely chopped 5cm piece fresh root ginger, peeled and finely grated ½ tsp dried chilli flakes 1kg waxy potatoes, peeled and cut into small chunks 1 tbsp curry powder (heat level to your taste) Seeds from 8 green cardamom pods, lightly crushed 350ml boiling vegetable stock 4 large tomatoes, chopped ½ small pack fresh coriander, roughly chopped Pinch of cayenne pepper, to serve Boiled, dried rice, to serve
METHOD Spray a large non-stick frying pan with low-calorie cooking spray and place over a high heat. When hot, add the mustard seeds and cumin seeds and cook for 30 seconds or until they start to pop. Add the onion, ginger, chilli and 3 tbsp cold water. Cover, reduce the heat to low and cook for 10 minutes. Meanwhile, put the potatoes into a pan of lightly salted boiling water over a high heat. Bring back to the boil and cook for just 3 minutes,
then drain and set aside. Uncover the onion pan, stir in the curry powder and cardamom seeds and cook for 1 minute. Stir in the potatoes, stock and 1 tsp salt and simmer gently for 10 minutes or until the potatoes are completely tender and the liquid has reduced. Add the tomatoes and simmer for 2 minutes, then stir in most of the coriander. Sprinkle with the cayenne pepper and remaining coriander and serve hot with rice.
COCONUT AND PASSION FRUIT CUSTARDS Ready in 30 minutes, plus chilling INGREDIENTS SERVES 4 4 passion fruit 4 large eggs* 175ml reduced-fat coconut milk (shake the can before opening to avoid separation) 3 level tbsp sweetener granules METHOD Preheat the oven to 150C/fan 130C/gas 2. Scoop the pulp from two passion fruit into a small sieve set over a bowl. Rub the juice through the sieve using a spatula or the back of a spoon, discarding the seeds left in the sieve. Break the eggs into a mixing bowl and whisk lightly with a fork. Whisk
in the coconut milk, sieved passion fruit juice and the sweetener, then strain the mixture into a jug. Pour the coconut mixture into four 125ml ovenproof ramekins and arrange them in a small, deep roasting tin. Pour enough boiling water into the tin to come halfway up the sides of the ramekins and bake for 15-20 minutes – or until just set, but still wobbly in the centre. Carefully remove the ramekins from the hot water, leave to cool, then cover and chill for at least 2 hours or overnight until set. Halve the remaining passion fruit and scoop the pulp on to the custards to serve. * Pregnant women, the elderly, babies and toddlers are advised to choose eggs showing the British Lion stamp if eating raw or partially cooked eggs

Bride Gemma tells us how she prepped for her perfect day, wearing in her new heels and all! How did Sean propose? “Sean got down on one knee and proposed while we were on a walk around the lakes at Barton Marina. In the past I’d thought it was going to
happen when he took me to Paris for my 21st birthday, or when we moved into our own home, but it never did. I’d almost given up and put the thought to the back of

my mind, so when he did actually pop the question it was a big surprise!“ What dress did you wear and where did you buy it? “My dress was ‘Divine’ by Anna Sorrano. I loved the lace heart on the back. When I put it on I felt like a princess! I loved everything about it – there was nothing
that I didn’t like, but with it being such a big decision, I still wasn’t one hundred per cent sure. However, when I looked at Mum and saw her welling up, I knew it was the one. I bought it in Hinckley.“ And the accessories? “I wore a veil because I wanted to look and feel like a traditional bride. I chose

Who were your bridesmaids and what dresses did they wear? “I had two bridesmaids – my cousins, Megan and Katie. When I bought my wedding dress I saw exactly what I wanted in their bridesmaid section, but when I came to order them they no longer stocked them,

which left me feeling glum. However, my mum managed to find some dresses that were extremely similar online. I wasn’t sure at first, but Mum ordered them anyway. When they arrived I have to admit they were really nice. Megan and Katie both looked great wearing them!“
What was your theme and how did you create it? “I wouldn’t say we had a set theme, but I would describe it as vintage, rustic and British. We put up bunting, and flowers were placed out in hessian and lace jam jars. We had photographs of our parents’ and grandparents’

wedding days hung up on fairy lights, while the wedding cake and cupcakes were displayed on a wooden table with logs. The aisle was decorated with rose petals, candles and flowers, all in milk churns. I arrived in a Volkswagen camper van, and as I mentioned
earlier, walked down the aisle to a brass band! Later, we had afternoon tea for our wedding breakfast. Very British, indeed!” What’s your saving tip? “Get creative! There are certain things it’s worth paying people to do, but
there are other things that you can do yourself, if you’re willing to get arty. We designed our table plan and even made our own personalised guest book.” What was the highlight of your day? “It was all so wonderful!
My highlight was probably straight after the ceremony. We’d just become husband and wife and we were having our canapés and Buck’s Fizz in the sun, chatting to everyone. He got down on one knee in front of the beautiful Normanton Church, said my full name and popped the question!” What dress did you wear? “I wore a Maggie Sottero dress called Paulina. at Laura’s, a local shop in Llanidloes, mid-Wales. I went in with an idea of what I wanted, but after trying on over 20 dresses, I picked something totally different! Sam and Amanda recommended I try the Maggie Sottero and as soon as I tried it on I was blown away – it was a perfect fit.”
And the accessories? “I had a gorgeous, simple jewelled belt sewn onto my dress (also purchased from Wedding Belles at Laura’s). I saw it during their fantastic yearly Maggie Sottero event and knew it was the elegant detail I wanted. I also purchased a lace-detailed veil by Richard Designs.”
What did the groom wear? “Joe wore a lovely threepiece suit from Next. He chose a light grey suit with brown Oxford brogue shoes, and a sage green tie.” Who were your bridesmaids and where were their dresses from? “My best friend Natalie, my

cousin Ellie, and four of my very dear friends – Tyanna, Emma, Kimberly and Sophie. We discussed dresses and colours, and one day Emma found a beautiful dress from Debenhams’ Little Mistress range that matched the colour and theme. They were something of a bargain, too!”
What was your theme? “Timeless and classic with a bit of old Hollywood glamour. We went for less is more, all details from flowers to favours were elegant yet simple. I bought chalkboard signs and one of my bridesmaids, Kim, designed little signs to add a personal

touch. Nearly everything at our wedding came from local sources, which really meant a lot to me. Finally, in the evening we hired Casinut, a casino company. The guests loved it! The staff were brilliant and so much fun. Joe and I were so pleased with how it all came together.”
What was the highlight of your day? “Our ceremony was short and sweet, and I know this might sound a bit corny, but taking my vows in front of our family and friends was my favourite part. It was a very special moment and one I will cherish forever.”

LOVE THE PLANNING
STEM 1 Cut three pieces of wire, each 25cm (10 inches) long. Bunch them together and then wrap the entire length of the stem with parafilm tape.

CENTRE 2 Cut one 4x4cm (1.5x1.5 inches) square of black paper. 3 Put a small amount of cotton wool around one end of the stem to form a ball. Cover the cotton wool ball with the black paper square and use parafilm tape to secure the paper to the stem. 4 Using a toothpick, Anemone Flowers #2cover the surface of the covered cotton wool ball with a small amount of PVA glue and then dip it into ground coffee to cover. Allow this to dry.
of the paper around the base of the flower centre and secure well with PVA glue. Holding the stem, lightly dip the tips of the fringe into PVA glue and then into ground coffee. Tap off any excess coffee, then allow to dry.
PETALS 7 Using peach-blossom pink paper, cut three small petals with template A, three medium petals with template B, and seven large petals with template C. Use the edge cut-out technique on a few of the petals. 8 Layer 1: Using PVA glue, attach the bottom 1cm (0.5 inches) of two A petals and one B petal evenly around the base of the flower centre. 9 Layer 2: Attach two B petals and one C petal around the base of layer 1, between the gaps of the already attached petals. 10 Layer 3: Attach the remaining petals
STAMENS 5 Cut a 2.5x18cm (1x7 inches) piece of white paper and fringe the top 1.5cm (0.5 inches). Wrap the unfringed section
randomly around the base of the flower centre. 11 Starting from the base of the flower, wrap the entire length of the stem with light green paper strip, securing with PVA glue. LEAVES 12 Using the light-green paper, cut five leaves with template D. Scrunch and FLOWER twist all the leaves. Use PVA glue to attach the leaves evenly around the stem, 7–10cm (2.75-4 inches) below the base of the flower. 13 Wrap the stem with another layer of light-green paper, starting from the base of the leaves. 14 Using a bamboo skewer, delicately curl several leaves outwards and away from the stem.

BASICS 1. STEM WRAPPING WITH CREPE PAPER STRIP When making your own flowers, there are two different weights of crepe paper you can use to make strips – 180gsm and 60gsm. The 180gsm paper strip is used to thicken the flower stem, whereas the 60gsm paper strip is used to wrap the stem for finishing. (Note that these strips are not the same as the crepe paper ‘streamers’ you can buy from party suppliers, which are usually wider.) When cutting strips from a roll of crepe paper, make sure you cut across the grain and maintain a consistent width. Keep the length of your working strip to a 30cm (12 inches) maximum, especially if you are new to flower making. To wrap a stem, first apply a small amount of PVA glue to one end of the stem, then attach one end of the paper strip. Hold the top of the stem with your thumb and index finger, while pressing the length of the stem against your palm with your pinkie and ring fingers. Wrap the paper strip around the stem in a downwards spiral, stretching the paper gently in the process. Wrap until the stem is completely covered, then cut away the excess paper. Secure the end of the strip with PVA glue. 2. STEM WRAPPING WITH TAPE It’s better to use parafilm tape rather than florist tape, because parafilm tape is nonsticky and a lot easier to work with. Unless otherwise specified, DIY flower projects will often use green parafilm tape. Both florist tape and parafilm tape adhere by stretching, so stretch gently as you go. If this is your first time working with these tapes, it is best to cut them into short working strips of 20-25cm (8-10 inches). To wrap a stem, first cover the top of the stem with tape. Hold the top of the stem with your thumb and index finger, while pressing the length of the stem against your palm with your pinkie and ring fingers. Wrap the tape around the stem in a downwards spiral, stretching the tape gently in the process. Wrap until the stem is completely covered, then tear off the excess tape. To secure the end of the tape, gently apply pressure around the bottom of the stem. This technique is the most essential and challenging skill in flower making, so allow yourself plenty of time to practise. Once you
have mastered this method, you’ll find the rest of your flower-making a breeze. 3. ATTACHING PETALS/LEAVES WITH TAPE Use your thumb and index finger to secure the petal or leaf between the wire stem and the parafilm tape. Gently stretch the tape with your other hand, while wrapping the tape around the stem once. Tear off the excess tape, then apply pressure to secure the tape to the stem. Continue attaching the petals/leaves, tearing off the tape after each layer. If you are new to flower making, it is recommended that you attach one petal at a time. Once you are familiar with this technique, you can try securing multiple petals with one piece of tape. 4. ATTACHING PETALS/LEAVES WITH PVA GLUE Using a toothpick, dab a small amount of PVA glue onto the bottom 5-10mm (0.25-0.5 inches) of the petal or leaf. Place the base of the petal/leaf against the stem and gently apply pressure to secure. To get the dried glue off your fingers without having to constantly wash your hands, apply hand lotion, then wipe it off using a dry towel.
flat, smoothing the surface and securing the sheets together. Allow the paper to dry completely before cutting (this may take up to 30 minutes). SHAPING 1. CURLING On the previous page we suggested you curl using a bamboo skewer. However, curling can also be done using a pen or the end of a paintbrush. To curl a petal, hold the bottom of the petal with your thumb and index finger. Hold the bamboo skewer in your other hand. Place the middle of the petal between the skewer and your thumb, then gently draw the skewer outwards, curling the petal in the process. 5. EDGE CUT-OUTS Cut out a small inverted triangle anywhere on the top edge of the petal. Trim the pointy edges to make them round. Use the curling technique to curl the scalloped edges. The trick to this technique is to embrace imperfection, as this will make your petals look more natural.
5. CUTTING SHAPES WITH THE TEMPLATES (ON PAGE 107) The templates shown on the previous page are actual size, and the two lines on each template show the direction of the paper grain. Again, if you are new to flower making, it is suggested that you cut out one shape at a time using your templates. Once you have gained more control, you can cut multiple shapes at once by folding or stacking several pieces of paper together. When doing this, use a bulldog clip to secure the template to the layers of paper while cutting, moving the clip as you go. 6. PAPER PASTING This technique is used when crepe paper needs to be thickened before use. Using a glue stick, cover the entire surface of one sheet with glue; use a minimal amount of glue to avoid discolouration. Place the second sheet on top of the first, making sure that the paper grain and edges are perfectly aligned. Use your palm to press the paper

DECORATE WITH NATURE If you can’t hold your full day outdoors (with British weather, you sometimes have to plan for this!), then why not bring the outside in with natural wedding décor? Does your venue have a beautiful garden? Mimic the flowers that will be in bloom in your bouquets and décor. A mix of British blooms and foliage will give you that just-picked feel. Greenery is still massively popular for wedding décor, so using foliage on your tables and wound around any beams or pillars is ideal for nature-loving brides. We also love potted plants and herbs as centrepieces or favours, and rustic log slices as part of table decorations and table plans.
Search for wedding venues with outdoor ceremony licence Not every wedding venue will have a licence to perform outdoor wedding ceremonies. If your heart is set marrying outside, it’s essential that you search for wedding venues with an outdoor wedding ceremony option. Look at summer wedding dates We all know how unpredictable the UK weather can be, but by choosing a summer wedding date, you’ll raise your chances of having a rain-free day!

Nordic nuptials Andy Allen explored the incredible landscape of Iceland, and found a wedding destination with a difference
A
rriving in Iceland feels like the start of an adventure novel. As we touched down into Reykjavík airport, we were welcomed with -2C bitter winds. A snow blizzard had just begun. But we were prepared for this – after all, Iceland is a land of ice and snow, the midnight sun and hot springs. We hopped into a Superjeep to begin our journey to Hotel Rangá, situated an hour south of the airport. A VISIT TO GEYSIR En route we stopped at the famous Geysir. This hot spring bursts into life every five minutes with a tremendous explosion of hot water and steam, which rises up to 30 metres. The anticipation was excellent: the water pool starts
to churn and bubble, signalling an imminent eruption and a distinct smell of sulphur. We discovered almost instantly that Iceland has unique geography. It has both vast areas covered in glaciers and as well as many live volcanoes. This incredible juxtaposition of hot and cold make it like no other destination on the planet. We hadn’t even reached the hotel yet and we were already very excited! GULLFOSS WATERFALL We also visited the magnificent Gullfoss waterfall, one of the most popular tourist destinations. There are many waterfalls spread around Iceland, each set in breathtaking settings. During the winter months the waters continue to flow, but they’re

heated thanks to the natural hot springs below. Sitting in a piping hot jacuzzi with a glass of bubbles while the outside temperature is well below freezing is something you have to experience. Just make sure your hair doesn’t get too frosty! The fine dining experience at the hotel was superb. A real taste of Iceland was on offer, with many seafood dishes as well the best meat, poultry and vegetarian options. Some of the more unusual dishes, such as smoked puffin, could also be sampled. Local beers and liquors like Brennivín (a type of schnapps) were available, too. hotelranga.is GETTING MARRIED IN ICELAND There is a dedicated team on hand at Hotel Rangá that can
answer all of your wedding questions. They can arrange everything from unique venues (beside one of the waterfalls, perhaps?) to the many quaint village churches like Oddi Church (left). catch, because it can appear and disappear so quickly. Fortunately Hotel Rangá has its own observatory, with its two quality telescopes making it Iceland’s most advanced place to see the stars. We had a guide give us a tour of the night sky, which was fantastic – the skies were so clear due to very little light pollution on the island. The Northern Lights did not appear during our time at the observatory, but thankfully the hotel staff have a great solution to this – you can request that you receive a telephone call to your room should they appear. The

THE NORTHERN LIGHTS The aurora borealis is notorious for being hard to
concierge at reception check every ten minutes throughout the night, ensuring you don’t miss out. We received a late night call on our second night, and we were so glad we got to see them. The hotel supply snow suits at reception, so it’s a quick dash to get dressed, getting into a snow suit and heading out into the bracing night air. The bright green lights appeared and then vanished as they danced across the sky. This was a genuinely magical moment. OFF-ROAD ADVENTURES When in Iceland, something you must do is take a trip into the glaciers in a Superjeep. These expert-led group tours take you across the icy terrain, deep into the glaciers before parking up, where you can then
