and cinnamon and bake for 10-12 minutes. Meanwhile, make the topping by putting the spread, sweetener and flour in a bowl and rubbing it together with your fingertips until the mixture resembles breadcrumbs. Remove the fruit from the oven, sprinkle over the topping and bake for a further 10-12 minutes or until lightly golden. Allow to cool slightly before serving.
LEMON AND POPPY SEED ICE CREAM CHEESECAKE Ready in 30 minutes, plus freezing INGREDIENTS SERVES 6 5 unwaxed lemons 4 level tbsp sweetener granules 180g extra-light soft cheese 200g low-fat custard from a can or carton 200g fat-free natural Greek yogurt 1 level tbsp poppy seeds METHOD Line the base of an 18cm Victoria sandwich tin with non-stick baking paper. Finely grate the zest of two and a half lemons and juice three lemons. Put the zest and juice in a bowl with three level tablespoons of sweetener and mix together until the sweetener has dissolved. Put the soft cheese in a bowl and gradually beat in the lemon mixture. Fold in the custard, 150g yogurt and most of the poppy seeds.
Spoon the mixture into the prepared tin, scatter the rest of the poppy seeds on top and freeze for at least eight hours or overnight until firm. To make the candied zest decoration, pare the peel of the remaining lemons, thinly shred and put the shreds in a saucepan with the remaining sweetener and three tablespoons of water. Bring to the boil over a high heat then reduce the heat to low and simmer for 10-12 minutes until soft. Spread out the shreds on a tray lined with non-stick baking paper and leave at room temperature to dry out and crisp up. Shortly before you want to eat, remove the ice cream cake from the tin and transfer it to a flat serving plate. Spoon the remaining yogurt into the middle of the cake and sprinkle the candied zest on top. Leave at room temperature to soften slightly then slice to serve.

Ready in 40 minutes, plus cooling INGREDIENTS 2 medium Granny Smith apples, peeled, cored and cut into wedges 2 medium Bramley cooking apples, peeled, cored and cut into wedges 1½ level tbsp sweetener granules ¼ tsp mixed spice 4 x 20g filo pastry sheets Low-calorie cooking spray (ideally butter-flavoured) ¼ level tsp icing sugar, to decorate Fat-free natural Greek yogurt, to serve METHOD Preheat the oven to 190C/fan 170C/gas 5. Put the apples into a large non-stick saucepan with
the sweetener, mixed spice and one tablespoon of water. Cover and cook over a low heat for 10 minutes or until the apples have softened. Spoon into a shallow one-litre ovenproof dish and leave to cool. Place one sheet of filo pastry on a clean surface. Spray lightly with low-calorie cooking spray, fold it in half and scrunch it up into a loose rosette. Place it on top of one-quarter of the apple mixture and repeat with the remaining sheets of pastry, making sure that the apple mixture is covered. Spray the pastry with a little more low-calorie cooking spray and bake for 10-12 minutes or until the pastry is crisp and golden. Dust with the icing sugar and serve with the yogurt.

And the accessories? “I wore a Liza Designs veil and a Warren York floral crown hairband (both from Destiny). My necklace came from Ernest Jones – it was a wedding morning present from Sie. My rose bracelet was a gift from my dad and came from Debenhams. My shoes were from Badgley Mischka.”

Who were your bridesmaids and where were their dresses from? “Our bridesmaids were David’s sister, both sister-inlaws and my cousin. They were all dressed in TFNC Pleated Maxi Dresses, which we purchased from ASOS. They all looked fabulous. We also had our daughter and two cousins as flower girls – they wore matching white lace dresses with ivory belts along with white or ivory shoes.”
What was your theme? “Blush pink, mauve and ivory with lots and lots of gypsophila flowers and roses. It was so romantic, with candles and flower petals everywhere! There were fairy lights in abundance and we had huge helium balloons at the barn’s entrance, with petals scattered along the red carpet. All of my décor was created by Louise at Balloon Dreams (based in Willenhall) with elegance
and perfection. We had a beautiful four-tier cake created by Laura Jane Cake Design (based in Walsall). Each tier had a different design and colour to match the theme and we even had tiny ballet shoes in the design for our daughter.” What was the highlight of your day? “There were so many! The one that sticks with me though is once David and I said our ‘I do’s’, our
daughter ran over and jumped up to give us a massive hug. We all started crying together with tears of happiness – it was a very emotional moment.” What was your best buy? “It has to be my dress. It took forever to choose and I will always treasure it. Every time I see it all the emotions from our wedding day come flooding back, and it reminds me of how wonderful I felt.”

Instead, go for things like vases, candlesticks and photo frames that you can use in your home afterwards (or potted plants that can live in your garden), so you’ll get enjoyment out of them after the big day, too. As always, upcycling jam jars, decorative alcohol bottles and china with seasonal flowers and candles makes for a cost-effective table centre that will look beautiful in photos.

This means your blooms won’t have to be flown in specially, which hikes up the price for both the florist and, by extension, you. GO BIG For a clever way to make an impact on a budget, all you need to do is choose bigger blooms! Big flowers like sunflowers, hydrangea, protea and amaryllis will make such a statement that you

GO FOR AN AFTERNOON CEREMONY One sure-fire way to cut back on catering costs is to make your day shorter. Having a lunchtime ceremony means that people aren’t likely to have eaten beforehand, which means that you’ll have to bring your wedding breakfast time forward to avoid starving guests. If you’re having a 4pm wedding breakfast, for example, then you’ll also have to provide evening snacks, or you’ll end up with seriously hungry (and potentially very drunk!) guests. However, if you have your ceremony later in the afternoon, then people will have eaten a normal lunch beforehand, which means your evening meal can be at a regular time. This method cuts down on both canapés and evening food, which easily adds up. CHOOSE A BUFFET A buffet is generally always likely to be a cheaper option than a sit-down dinner, because it involves fewer
members of staff compared to one that requires table service. Barbecues and hog roasts are great for this, as are classic family favourites such as curries and lasagne. SERVE YOUR CAKE FOR DESSERT Save money and ensure your cake actually gets eaten on the day by serving it up instead of a separate dessert! Your guests aren’t going to want to eat dessert and then cake, which means it often goes to waste. So instead, schedule your cake-cutting for earlier in the day and then present cake slices after the main course. SWAP OUT CHAMPAGNE Doing away with pricey champagne can be a good way to save a little extra money. If you want flutes filled with fizz for the toasts, then picking Prosecco, sparkling wine or a Bellini cocktail can be a more budget-friendly alternative. Another option is to keep the wine flowing when it comes to the toasts and some guests won’t even notice! For welcome drinks, consider Pimm’s or a punch for a summer wedding, and cider or mulled wine for an autumn or winter wedding.

I completely appreciate that it can seem a little overwhelming to say the least, so I would always start with getting things down on paper, or – even better – putting it all together on a spreadsheet. On this should be everything you need to do for your wedding – from sorting wedding insurance to the decorations. Brain dumping everything in one document helps you de-compartmentalise, and assigning a timeline to each element breaks things down in more manageable stages.

DO YOUR RESEARCH Wedding budgets can have a habit of creeping their way up as the big day approaches. In my time I’ve witnessed a lot of couples who waste money on things that, if thought about earlier, could have been achieved a lot cheaper. For example, decorations. A lot of weddings have an outside element and it’s always lovely to decorate that area in line with the theme and colours of the wedding. What I see a lot is couples going online and thinking the decorations are cheap, but it very soon adds up, as you need to buy quite a lot to get the effect you desire. You don’t have to be particularly artsy to have a go at making them yourself – you just need to dedicate time, and the end result feels so much more personal and often looks a lot better. DELEGATE As a wedding planner I love it when couples assign roles to people in the lead up

to the day and on the day itself. Giving people roles and responsibilities really helps, and for me, having a little go-to team is hugely beneficial. So even if it’s something like ensuring grandma is helped to get somewhere or making sure a taxi is arranged for your out-of-town guests, these little things are appreciated on a colossal scale and really contribute to the day
running smooth as clockwork. I have heard about brides and grooms dealing with emergencies or sorting out paying of suppliers on the day – this shouldn’t happen, not on their big day – which is why I personally think a wedding planner is vital. DON’T OVERCOMPLICATE THINGS TOO MUCH I’ve seen a lot of weddings that just have too many

elements to them. This is particularly common when the budget is big, which can result in the day feeling over-produced and not very relaxing. For me, the weddings that work best are calm and simple, and the elements that are there are executed really well. It’s about asking, ‘do we really need a plane with a ticker tape with our names attached, and fireworks, and a dance routine?’ Probably not. REMEMBER TO REFLECT YOU The best weddings are the ones where the couple’s personalities shine through. This can be through little touches such as the music, colours chosen, favours or readings. It’s such a personal day, so really focussing on what makes you tick works really well. For example, I’ve seen couples have readings
of their favourite song lyrics instead of religious readings, or having a specific drink or sweet from one of their home towns as favours. Also involving close family and friends in the ceremony and running of the day makes it feel extra-special. GET A WEDDING PLANNER! Now, not blowing my own trumpet (okay, maybe I am a bit!), but I can’t stress the importance having a planner enough, especially on the big day. They just bring everything together and ensure everything works on time and ensure your vision comes to life.
