he year is racing by – can you believe we’re into August already? The weather has been nothing short of a heatwave recently, but perhaps you’re not willing to gamble with the British forecast and you’ve got a foreign wedding destination in mind, instead. If so, you’ll want to read our must-ask questions for getting hitched abroad (p93) and our review of the magnificent Sugar Cane Club hotel in Barbados (p96). For those of you not planning a summer wedding, don’t panic, we’ve got you covered. No need to order in something greasy – these recipes have all the feel-good factors and they’re healthy, too!
PORK IN BLACK BEAN SAUCE Ready in 25 minutes, plus marinating INGREDIENTS 500g lean pork fillet, all visible fat removed, cut into thin strips 2 tbsp soy sauce 1 tbsp sherry 1 level tsp cornflour 1cm piece of root ginger, peeled and grated Low-calorie cooking spray 1 garlic clove, crushed

Half a bunch of spring onions, sliced diagonally 1 green pepper, deseeded and thinly sliced 1 red pepper, deseeded and thinly sliced 2 level tbsp black bean sauce 4 tbsp boiling chicken stock Boiled dried noodles or rice, to serve

METHOD Put the pork in a bowl with the soy sauce, sherry, cornflour and ginger. Mix together, then cover and leave in a cool place to marinate for 30 minutes. Spray a nonstick wok or deep frying pan with low-calorie cooking spray and place over a medium-high heat. Add the pork and stir-fry for 5 minutes or until cooked and golden. Remove from the wok and drain on kitchen paper. Add the garlic, spring onions and peppers to the wok and stir well. Stir-fry for 1 minute over a high heat, then add the black bean sauce and chicken stock. Stir well and return the pork to the wok. Cover the wok, turn the heat down to medium and cook for 5 minutes, until the liquid has reduced and the pork and vegetables are coated with the sauce. Serve hot with noodles or rice of your choice.
SPICY MEXICAN BEAN BURGER Ready in 30 minutes, plus chilling INGREDIENTS 2 slices of wholemeal bread from a small 400g loaf 2 x 400g cans kidney beans, drained and rinsed 2 tsp smoked paprika 1 tsp ground cumin Large handful of finely chopped fresh coriander leaves Finely grated zest of 1 unwaxed lime 1 egg, lightly beaten* Salad, to serve METHOD Put the bread into a food processor and blitz to make breadcrumbs. Add the beans, paprika, cumin, coriander, lime zest and egg, then season and blitz again until you have a rough

paste. Transfer the mixture into a bowl and divide into eight portions. Using wet hands, shape each portion into a burger and space them apart on a baking sheet. Chill for 6 hours or overnight, if time permits. When you’re ready to cook, preheat the oven to 180C/Fan 160C/Gas 4. Bake the burgers for 15-20 minutes, turning halfway, until golden and crisp. Divide the burgers between plates and serve with plenty of salad. * Pregnant women, the elderly, babies and toddlers are advised to choose eggs showing the British Lion stamp if eating raw or partially cooked eggs.
SWEET AND SOUR CHICKEN Ready in 30 minutes INGREDIENTS Low-calorie cooking spray 8 skinless and boneless chicken thighs, cut into bite-sized pieces 1 large onion, roughly chopped 1 green pepper, deseeded and roughly chopped 3 large carrots, peeled and cut into chunks 435g can pineapple chunks in natural juice, drained, reserving 2 tbsp juice 1 garlic clove, crushed 1 level tbsp cornflour 1 tbsp tomato purée 1 tbsp red wine vinegar 2 tbsp soy sauce Finely sliced spring onions, to garnish Boiled dried rice, to serve

METHOD Place a non-stick wok or deep frying pan over a high heat and spray with low-calorie cooking spray. Add the chicken and cook for 3 minutes, stirring continuously. Transfer the chicken to a plate with a slotted spoon. Add the onion, pepper and carrots to the wok and cook for 4 minutes, stirring occasionally. Return the chicken to the wok and cook for a further 3-4 minutes until the chicken is cooked through. Meanwhile, make the sauce by mixing the reserved pineapple juice with the garlic, cornflour, tomato purée, red wine vinegar, soy sauce and 100ml of water. Stir the sauce into the chicken and vegetables, add the pineapple and cook over a low heat for 2 minutes or until thickened. Scatter over the spring onions and serve hot with rice.

Bride MariAnne tells all about her big day in a wonderful warm location close to her heart How did Grant propose? “It was at a place very special to us both – Falls of Dochart, in Killin. It was one of the first places Grant took me on my first ever visit to Scotland. It was a beautiful sunny and frosty February day, just us and our daughter. What dress did you wear? “My dress was by Stella York and was purchased from La Belle Boutique in Mansfield, Nottingham. The staff made me feel comfortable and at ease, something I was really worried about beforehand. They were so helpful every step of the way, helping me pick my dream dress.”
And the accessories? “My veil belonged to my chief bridesmaid, from her wedding five years ago (my ‘something borrowed’). My shoes were by Pink Paradox London. My earrings were a gift from my parents and purchased from a jewellery shop in Nerja, Spain, before the wedding.”
What did Grant wear? “Grant wore a traditional Scottish kilt in a not-sotraditional manner. The kilt was custom-made by Howie Nicholsby at 21st Century Kilts in Edinburgh. The detailing and styling was amazing – the buttons on his kilt jacket had our wedding date on them.”

Who were your bridesmaids and where were their dresses from? “My my best friend Bec, and my sister-in-law, Emma. Our flower girls were both ours and Bec’s daughters – Hope, Orla, Summer and Pixie. The bridesmaid dresses were both TFNC from ASOS, with
one slightly altered to allow room for a baby bump!” What was your theme? “Nerja is such a beautiful place and we wanted our guests to fall in love with it as much as we have. Therefore we allowed the natural and rustic venue to speak for

itself, with the addition of lots of light colours and greens. We opted for round tables, garden games and lots of food and drink.” What was the highlight of your day? “For me, it would definitely be seeing all of the guests

hen it comes to choosing one of the most special holidays of your life, it’s important to think about what memories you are going to create and share on your honeymoon. There are plenty of farflung destinations that can offer you paradise beaches and warm turquoise waters, but Barbados can offer you so much more. The world-renowned hospitality of the Bajan people make a holiday here so unforgettable. Every local that you encounter takes pride in making sure that you have an amazing time. They are eager for you to return again and again. The tropical beaches, lined with palm trees and cool blue
waters are everything you could wish for. Not only did I get to enjoy those chilled moments, but I jumped at the opportunity to experience what the locals call a ‘soft adventure’. So what fantastic activities are on offer in Barbados?
FEEDING THE TURTLES There are two types of turtles in Barbados, the Hawksbill and Leatherback
BARBADOS NINJA THROWDOWN This is like TV show, Ninja Warrior, but with a Bajan twist! It was great to see the athletes competing in this gruelling course at close hand. There are many different tours available here, ranging from a tram tour that allows you to sit down and leisurely explore all of the sights, or there is an ‘eco tour’, which involves tracing the original cave entrance that early explorers would have used back in the 1700s. Some parts of the tours involve wading through deep pool and crawling on hands and knees through a narrow gully of stalagmites
and stalactites. Don’t worry – guides are on hand! Helmets, elbow- and knee-pads are all provided. This is an amazing experience for those with a strong sense of adventure! harrisonscave.com HORSEBACK RIDING Jah Works Riding Stables provided the horses and tour guide for a wonderful, relaxing experience. I’d never ridden a horse before, but Empress, our guide, explained the basics to me then we took a slow, relaxed walk over the hills of St. Andrews and down onto the beach below. As the horses trotted along the seashore, waves lapped against their
hooves – this made for an extremely enjoyable experience.

WATERSPORTS As an island, Barbados is surrounded by water and people really enjoy all the activities on offer in the warm Caribbean Sea. I headed to Pirate’s Cove at St. Michaels to try out a selection of equipment. Jetskiing, paddle boarding and fly boarding were on offer. Riding the jet ski and paddle boarding were great, were on hand at their training but fly boarding was a totally new experience for me and ground at the University of something that I genuinely The West Indies to teach loved. when the water expelled from a jetski is funnelled through two tubes that are attached to boots on your feet. Once the you are in position in the water the jetski instructor powers up its motor and (probably with a few failed attempts!) you will soon get your balance and be shooting out of the air like a super hero! It’s a tremendous thrill when you finally learn how to balance, rising steady out of the water.
