ZESTY BUTTERFLIED CHICKEN

Ready in 40 minutes, plus chilling INGREDIENTS Pared peel of 1 small unwaxed lemon, plus grated zest of ½ unwaxed lemon to serve 1 tsp sea salt ½ tsp dried chilli flakes, plus extra to serve 1 garlic clove, crushed 1 tbsp chopped fresh rosemary, plus extra to serve 4 skinless and boneless chicken breasts Low-calorie cooking spray Salad or veg, to serve
For the potato salad 500g Jersey Royals (or use new or baby potatoes) 3 tbsp warm vegetable stock 2 level tbsp extra-light mayonnaise 4 tbsp fat-free natural Greek yoghurt 2 tbsp roughly chopped fresh parsley 2 tbsp roughly chopped fresh mint 6 spring onions, sliced
METHOD Preheat the oven to 140C/fan 120C/gas 1. Put the lemon peel strips on a baking tray and bake for 15-20 minutes until palegolden and dry. Using a pestle and mortar or a rolling pin, grind

the baked lemon peel and salt together. Stir in the chilli, garlic, rosemary and a little freshly ground black pepper and mix well. Now ‘butterfly’ the chicken breasts. Hold one chicken breast on a chopping board and slice through the middle horizontally until almost cut in half – take care not to go all the way! Open out flat like a butterfly. Repeat with the other breasts and rub the lemon mixture all over the cut sides. Lay flat on two plates, cover and chill for at least one hour. Meanwhile, make the potato salad. Cook the potatoes in a saucepan of boiling water over a high heat for 15-20 minutes or until tender. Drain and halve, put them in a bowl and pour over the stock. Toss well and leave to cool – the potatoes will soak up some of the stock while they’re still warm. Mix the mayonnaise and yogurt in a bowl, stir in the herbs and spring onions and season to taste. Add to the potatoes and fold everything together. Light the barbecue for direct medium heat. Spray the chicken with low-calorie cooking spray and barbecue over direct medium heat for 8-10 minutes or until tender and cooked through, turning once. Or cook on a griddle pan over a medium-high heat. Scatter over the lemon zest, chilli and rosemary and serve hot with the creamy potato salad and lots of salad or veg.
MASALA PRAWNS AND PICKLED CUCUMBER Ready in 25 minutes, plus marinating INGREDIENTS 150g fat-free natural yogurt 2 level tbsp curry powder (heat level to your taste) 500g raw peeled king or tiger prawns, thawed if frozen Low-calorie cooking spray Roughly chopped fresh coriander, to serve For the pickled cucumber 1 cucumber, peeled and shaved into ribbons with a peeler 1 tsp sea salt 3 tbsp white wine vinegar 2 level tbsp sweetener 7.5cm piece fresh root ginger, peeled and finely grated

METHOD Put the yogurt and curry powder in a large bowl and mix well. Stir in the prawns, cover and marinate in the fridge for two hours. Meanwhile, make the pickle. Put the cucumber ribbons in a colander, sprinkle with the salt and mix well. Leave for 10 minutes then rinse with cold water, drain well and tip into a large bowl. Mix the vinegar, sweetener and ginger and pour over the cucumber. Mix well and grate over a little pepper, then cover and chill. Light the barbecue for direct medium heat. Brush the excess marinade off the prawns and push them on to eight skewers. Spray with low-calorie cooking spray and barbecue over direct medium heat for about five minutes or until tender and cooked through, turning once, or cook under a high grill. Scatter over the coriander and serve hot with the pickled cucumber.
FETA-TOPPED PORTOBELLO MUSHROOMS

Ready in 40 minutes INGREDIENTS Low-calorie cooking spray 1 small onion, finely chopped 1 garlic clove, crushed 6 portobello mushrooms, stalks cut off and roughly chopped 1 tbsp chopped fresh oregano, plus a few leaves and sprigs to serve 400g can plum tomatoes Pinch of sweetener 100g reduced-fat feta cheese, diced METHOD Light the barbecue for direct medium heat. Spray a non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add the onion and garlic and cook for five minutes
or until softened then add the chopped mushroom stalks and cook for another five minutes. Add the oregano and the tomatoes plus the juices in the can and bring to a simmer. Reduce the heat to low and cook for 10 minutes or until reduced and thickened. Add the sweetener and season to taste. Spray the mushroom caps with low-calorie cooking spray and turn them upside down. Spoon in the tomato sauce, scatter the feta on top and barbecue over direct medium heat for 8-10 minutes, or cook under a medium-high grill. Scatter over the oregano leaves and sprigs to serve.

Real bride Demi tells us how her wedding journey began by her hiking her way to her proposal! How did Dan propose? “In March 2016, Dan took me to the beautiful town of Sheringham for the weekend, in Norfolk. I have fond memories here, having grown up in Norfolk with my grandparents. Dan had positioned himself at the top of ‘The Beeston Bump’, a cliff that overlooks the sea and my grandparents’ house, without me knowing. 86 ♥ L OV E O U R W E D D I N G ♥ S E P T E M B E R 2 0 1 8
He’d asked family members to give me gift bags, all of which included hints on where I needed to go to find him. It was a cold but beautifully sunny day, and I found myself climbing this cliff on my own, gift bags in hand, to find Dan at the top surrounded by candles, down on one knee!”
What dress did you wear? “I went for a traditional princess dress with a jewelled bust, by Sincerity. We were getting married in Leez Priory, a 16th-century mansion in Great Leighs, and I felt it suited the grandeur of the location. I purchased it in Perfection Bridal in Maidstone.”
And the accessories? “A Swarovski bracelet was my ‘something borrowed’, kindly provided by my bridesmaid. I blew the budget slightly when it came to my shoes, opting for ivory, glittery Louboutins!” What did Dan wear? “The groom and groomsmen

beach in Queensland to pop the question. He dropped to one knee at sunset! He had the ring made by a jeweller in Melbourne.”

What dress did you wear and where did you buy it? “Unlike a lot of brides, I wasn’t looking forward to dress shopping! I knew I wanted a tea-length dress – mainly so I could dance with ease. After visiting a few boutiques with no luck, I turned to the high street in desperation. I found my dress in Ted Baker.”
And the accessories? “My shoes were also from Ted Baker, and surprisingly comfortable! In the evening I changed into some glitzy sandals from Accessorize. I wore earrings (the sterling silver and Swarovski crystal range from Accessorize) and a beautiful pearl bracelet my friend had given me the day before the ceremony.”

They looked incredible and we wouldn’t have been able to create the same effect ourselves.”

Bride Amy tells us how she successfully planned a ‘big’ wedding with a relaxed vibe How did Dan propose? “Dan booked a break away on the Isle of Wight. He’d tried a couple of times during the week without my knowledge, but he
got interrupted by various things (metal detectors on the beach being one)! He found a quiet spot on a gorgeous beach at sunset and popped the question.”

Tell us about your dress “My lovely dress was something I never thought I’d end up wearing for my wedding – it was off-theshoulder with a lace bodice and small lace sleeves. From the waist down, it was plain satin with buttons running all down the train, which was very long. I felt amazing in it.”
And the accessories? “I wore flat shoes – Dan is the same height as me! Myself and my bridesmaids all wore Converse trainers. Best decision ever… No sore feet! I also bought some pearl earrings with tiny diamantés around them from Warren James, and my mum bought me a delicate silver bracelet.”

What did Dan wear? “Dan wanted a country look for the wedding. He found some gorgeous blue tweed suits on a website called Mark Darcy. He also found blue tweed flat caps, which looked great.” Who were your bridesmaids and where were their dresses from? “I had five bridesmaids – my two sisters, one of Dan’s sisters, my best friend who I’ve known since I was
three and another friend who I’ve known since college. I found their gowns online, which was a bit of a gamble – two needed slight alterations, but I was pleased with them.” What was your theme? “Rustic/country. We bought material to drape across the village hall ceiling and walls to give it the look of a marquee. We had hessian chair bows and table runners. Dan is a tree
surgeon so all of our table names were trees, fitting in nicely with our theme. The centrepieces were thin log stumps with a butterfly table name holder, hessian, and ivy-decorated jam-jar vases with wild flowers. Dan and the groomsmen also drove to the venue on quad bikes that were all borrowed from friends!” What was the highlight of your day? “The whole day from start
to finish was a dream come true. We both have massive families, so we wanted a ‘big’ wedding. We aimed to have a relaxed day with a huge evening party and it all went according to plan.” What’s your saving tip? “We had a hog roast with salads and pasta for our meal at about 5pm, so it meant that we only needed to do very light nibbles in the evening, which ended up saving us a fortune!”

GET HITCHED ON HOLIDAY As well as looking after and organising your guests, there are actual wedding procedures to consider, too

WHO’S THAT GUY? Take a sensible approach with plus-ones – for the sake of your wedding photography!
from outside of town, it’s reasonable to only invite them to the evening if they don’t have too far to travel – even if it means they have to find accommodation. However, if they have to travel (for more than a few hours, or even to another country), it can be deemed rude to offer them anything less than an invite to the whole day, otherwise there’s a good chance they just won’t attend at all – what with the costs they’re going to be incurring for travel and accommodation. Put yourself in their shoes, f the roles were reversed – would you attend?
Would you treat them? Would you buy them dinner? Would you lend them money? Would you go out of your way to help someone? If the answer is yes, then they should most definitely be on the list to attend the wedding. If it depends on the situation, go ahead and invite them to the reception only, but if you’re not sure you would at all, then don’t feel bad about not inviting them. Do you invite partners? If you have a friend that is married, whether you know the spouse well or not, it’s

only polite to invite both to the wedding/reception. However, if you really want a friend to attend the wedding but they have a new partner that you don’t know that well, it’s not rude to not offer the friend a plus-one, instead letting them know they’re welcome to attend the reception. This is where you need to think of your wedding photos. Do you want to look back on your photos wondering who this person was? Did they invite you to their wedding? This isn’t petty, honest! If
you’re unsure whether to invite a friend and they got married when you knew them, consider whether or not they invited you to their wedding, the reception or not at all. If you thought you were quite close but only got an invite to the reception, you wouldn’t be out of line only inviting them to your reception. Of course, if you didn’t get an invite but weren’t close at the time (but that’s changed now), make sure they’re on your list – for the day or just the evening? That’s up to you.
