BANANA AND PASSION FRUIT PAVLOVA NESTS METHOD Preheat the oven to 120C/ fan 100C/gas 1-2. Line a large baking sheet with nonSERVES 4 stick baking paper. Using a bowl or cup as a template, mark four 10cm circles on INGREDIENTS the paper, spaced well apart, 2 large egg whites then flip over the paper so 75g caster sugar that the pencil marks are on 2 level tbsp sweetener granules the underside. Put the egg ½ level tsp cornflour whites into a large clean ¼ tsp white wine vinegar bowl and whisk, using an 150g plain quark 100g fat-free natural Greek yogurt electric hand whisk, until stiff peaks form. Gradually 2 ripe and wrinkly passion fruit whisk in the sugar and 2 small bananas, sliced Ready in 1 hour 10 minutes, plus cooling

sweetener to form a stiff, glossy meringue. Whisk in the cornflour and vinegar and spoon the mixture into a piping bag (fitted with a star nozzle, if you like). Starting in the centre of each circle on the baking paper, pipe the Pavlova mixture in a spiral to form a flat disc, then pipe two lines of meringue around the edge of each disc to form the walls of the nests. Bake for 45 minutes, then turn off the oven and leave the nests in

the oven for at least three hours or overnight to cool and dry out. When you are almost ready to serve, beat the quark and yogurt in a bowl until smooth. Halve the passion fruit and scoop the pulp into a bowl with a teaspoon. Carefully peel the Pavlova nests off the paper, spoon in some of the quark mixture and top with banana slices and passion fruit pulp. Serve straight away before the meringue has a chance to soften.

BAKED GOOSEBERRY SPONGE PUDDING Ready in 50 minutes

SERVES

INGREDIENTS 500g gooseberries, topped and tailed 3½ level tbsp sweetener granules Finely grated zest and juice of 1 lemon 3 large eggs ½ tsp vanilla extract 75g plain flour ½ level tsp baking powder ½ level tsp cornflour 1 level tsp caster sugar, to dust Fat-free natural fromage frais or plain quark, to serve METHOD Preheat the oven to 180C/fan 160C/gas 4. Spread the gooseberries out in a 1.25-litre shallow ovenproof dish. Scatter over one level tbsp sweetener, the lemon zest and

lemon juice and bake for 15 minutes or until the gooseberries have just collapsed and are tender. Meanwhile, prepare the sponge layer. Put the eggs, remaining sweetener and a pinch of salt in a large bowl (or stand mixer) and whisk with an electric whisk for 15 minutes or until the mixture is thick, tripled in volume and leaves a little trail when drizzled back over the surface. Whisk in the vanilla extract. Sift the flour, baking powder and cornflour over the egg mixture and gently fold in with a large metal spoon. Spoon it all over the gooseberries and bake for 25-30 minutes or until a skewer pushed into the sponge comes away clean. Dust with the caster sugar and serve hot with the fromage frais or quark.

BAKED MARMALADE RICE PUDDING Ready in 1 hour 15 minutes, plus standing INGREDIENTS 2 large oranges 125g dried pudding rice 800ml unsweetened almond milk 3½ level tbsp sweetener granules 100g reduced-sugar marmalade

SERVES

METHOD Preheat the oven to 180C/fan 160C/gas 4. Grate the zest from one orange. Segment both the oranges, cover and set aside at room temperature. Put the rice, almond milk and sweetener into a non-stick saucepan and bring just to the boil over a medium heat. Reduce the heat to low and simmer for 10 minutes, stirring regularly, until the rice is just tender. Remove from the heat and stir in the orange zest. Spoon the marmalade over the base of a 1.25-litre ovenproof dish and spoon the rice pudding evenly on top. Bake for 15 minutes then reduce the heat to 160C/fan 140C/gas 3 and bake for 45 minutes or until the pudding has thickened and the rice is tender. Turn off the oven and leave the pudding to stand in the oven for 15-20 minutes (this will help a tasty crust form on top). Serve with the orange segments.

on a windy day, it was a nuisance! I borrowed a pearl bracelet from my sister (from H.Samuel) and my shoes were from BHS. I swapped to comfy Converse for the evening.”

Who were your bridesmaids and where were their dresses from? “My younger sister, Charlotte, Nick’s sister, Anna and friend, Kate. They wore plum dresses from Debenhams and sparkly gold pumps from ASOS. My niece Lacey was our flowergirl. She wore a dress from Monsoon and gold pumps from Next.”

What did Nick wear? “Nick chose a relaxed, slim fit brown tweed-style jacket from Moss Bros with a red check, regular fit oatmeal chinos from Marks & Spencer, What was your theme? and a burgundy wool silk tie “We went for an autumnal from T.M. Lewin.” theme. We didn’t want

to be tied down to one colour. We wanted to use pumpkins to hold our flower arrangements; our florist clearly thought this was crazy but she got on board and filled them with red, orange and yellow flowers! My sister made our bunting in red, orange, yellow and plum colours. We used log slices, conkers, pine cones and fake fallen leaves on our tables. Oh, and our cake had a gingerbread bride and groom on it, too!”

What was your best buy? “We used the band Rock My Reception. They played literally all day and night! We met them in advance and they recognised the sort of music we wanted and, happily, our guests loved them. They even entertained the eighteen month-old children – at one point they played kids TV theme tunes for them, which was really cute! They had a good feel for the room and kept the party going all night.”

cocktails, he proposed on our second night, in our private pool! I remember I didn’t answer straight away as I was in shock, he had to ask me twice!”

What dress did you wear? “I knew my wedding dress was ‘the one’ after entering my first and only wedding dress shop in Taunton – the dress chose me! It was Alexandra by Marylise. It was elegant and simple (not too much lace detailing) and I loved that it came with a flowery bolero, too.”

And the accessories? “My handmade headband with flower detailing by Polly Edwards and bridesmaid hair pieces were all from Sassi Holford in Taunton. I found their customer service excellent and the experience as a whole was brilliant. When my friends get married I can visit again!”

What did Luke wear? “Luke’s traditional suit, waistcoat and cravat came from Moss Bros.” How did you feel when you saw him up the aisle? “I couldn’t wait to see my husband at the altar. I was so early at the church, the driver had to drive us round the block! I felt excited to see him and a little nervous for his reaction to seeing the dress and how I had my hair, hoping he liked it.”

Who were your bridesmaids and where were their dresses from? “I had four bridesmaids – we’re all really good friends, and we went shopping in Clarks Village where we found their floor-length, pink-dusk coloured dresses from Monsoon.” What was your theme? “There wasn’t a specific theme as such on our wedding day. However, I spent hours on Pinterest

(as I’m sure many brides do!) pinning away all my favourite ideas. Originally I wanted an autumn wedding, but it changed from fir cones to white flowers due to us having a summer wedding.“

The biggest expense is food. With roughly 75% of your guests still feeling relatively full from the wedding breakfast, there’s no need to go over-the-top here. Put on a hog roast to feed everyone, or put on a sweet and savoury buffet for guests to tuck into. • The entertainment for the evening could be expensive. Check out local bands in your area trying to build their portfolio. Can’t afford a DJ? Some big amps and Spotify should do the trick!
