If you’ve just got engaged, welcome to the rollercoaster that is wedding planning – we’re here to help you every step of the way! This issue I’m loving our dress feature, with 40 new designs that every bride will want to add to their wishlist (page 19). Our details feature is a moodboard of inspiration, filled with pretty ideas (page 46) and I love our hen party feature, written by Carrie Marsden. MAKES

16 INGREDIENTS 250g skinless and boneless salmon fillet 1cm piece fresh root ginger, peeled and finely grated 2 spring onions, finely chopped, plus sliced spring onion to serve Low-calorie cooking spray

For the dip 2 tsp dark soy sauce 2 tsp rice vinegar ¼ tsp sweetener granules ¼ medium-hot red chilli, deseeded and finely chopped 1cm piece fresh root ginger, peeled and finely grated 1 garlic clove, finely chopped METHOD First mix the ingredients for

the dip together in a small bowl and set aside. Put 100g salmon into a food processor and process into a coarse paste using the pulse button. Transfer to a mixing bowl. Cut the rest of the salmon into thin slices then cut each slice lengthways into long, thin strips. Bunch up the strips and cut them across into small dice. Add the diced salmon to the mixing bowl along with the ginger, spring onions, season well and mix together well.

Spray a non-stick frying pan with a little low-calorie cooking spray and place over a medium heat. Working in batches, drop tablespoons of the salmon mixture into the pan and flatten slightly with a spatula to make nice cake shapes. Fry for 2 minutes on each side or until golden brown and cooked through. Lift on to a serving platter, scatter over the extra spring onion and serve hot with the dipping sauce.

SAGE AND APPLE FILO SAUSAGE ROLLS Ready in 45 minutes

MAKES

INGREDIENTS 1 small onion, finely chopped 150g lean pork mince (5% fat or less) 6 Slimming World Syn-Free Pork Sausages, thawed and skinned (available from Iceland stores) 1 small Cox’s apple, peeled, cored and finely diced 1 tbsp finely chopped fresh sage 1 medium egg, beaten 2 x 45g filo pastry sheets Low-calorie cooking spray METHOD Preheat the oven to 200°C/fan 180°C/ gas 6. Put the onion, pork mince, sausage meat, apple, sage, most of the beaten egg and some seasoning into a bowl. Mix well. Divide the mixture in half and shape into 2 long sausages – as long as your sheets of filo pastry. Lay 1 sheet of filo pastry on

a work surface and spray lightly with a little low-calorie cooking spray. Lay the other sheet on top. Cut in half lengthways to make 2 strips. Lay a long sausage down one side of each strip of pastry and brush the other long edge with the remaining beaten egg. Starting with the egg-free edge, roll up each sausage in the filo pastry, pressing the egg-brushed edge to make a good seal. Cut each long roll across into 12 pieces. Spray a non-stick baking sheet with a little low-calorie cooking spray and arrange the sausage rolls about 5cm apart. Spray the top of each sausage roll with a little more lowcalorie cooking spray and bake for 25-30 minutes or until crisp and golden brown and serve hot.

THAI TURKEY AND LEMON GRASS SKEWERS 6 spring onions, finely chopped 500g lean turkey mince (5% fat or less) 2 tsp Thai fish sauce (nam pla) 1 tbsp lime juice 2 tbsp chopped fresh coriander, plus 2 tbsp to serve 2 tbsp chopped fresh basil Ready in 20 minutes, plus cooling and chilling

INGREDIENTS 4 garlic cloves 4 lemon grass stalks, outer leaves discarded, very thinly sliced 1 kaffir lime leaf, stem discarded and leaf finely shredded (optional) 3cm piece fresh root ginger, peeled and thinly sliced 1 medium-hot red chilli, deseeded, plus extra finely chopped chilli to serve Low-calorie cooking spray

spray and place over a medium heat. Add the paste and cook for 2 minutes. Add the spring onions and another 1 tbsp water and cook for 2 minutes more, stirring now and then. Tip it all into a mixing bowl and leave to cool. Add the turkey mince to the paste along with the Thai fish sauce, lime juice, coriander, basil and ½ tsp salt. Mix For the coriander yogurt sauce everything together well with your hands 100g fat-free natural Greek yogurt (or a spoon). Divide the mixture into 1 garlic clove, crushed Small pack fresh coriander 32 pieces and roll each one into a small ball. New Year’s resolutions every bride should take care not to make, and the realities behind the lofty ideals, by Carrie Marsden

ight, this year I will absolutely never eat chocolate ever again. I will always, always take my make-up off before bed; I won’t ever get drunk and sleep in my contact lenses; I’ll wash the kitchen floor at least once a week; I’ll go to hot yoga classes every day; I’ll have one glass of Prosecco a week – nay, a month; I’ll be one of those women who wears matching underwear, and I’ll have shiny, bouncy hair every day for the rest of my life. Easy. Job done. Hmm. Oh the optimism. We doubt there’s a woman alive who hasn’t succumbed to the Bridget Jones style of making New Year’s resolutions. And what about brides? For you – and wherever you are on the wedding countdown – New Year’s resolutions feel heightened and imbued with a sense of weighty significance like never before. With 12 months of the

brand new 2019 tumbling ever closer, we bring you the top bridal New Year’s resolutions we don’t think you should ever make, and the reality behind the lofty ideals. The advice that follows is practical, tried and tested, and most importantly, achievable… I will never, ever eat chocolate again Yeah, you will. And you should positively revel in this fact. Oh the joy therein! Nothing good can come of denying yourself this utter, incandescent bliss (there’s a Galaxy Caramel open in front of us as we type). But you’ve got a wedding dress to fit into, we hear you cry! Ok, so let’s talk diet. Better still, let’s re-cast this discussion and dispense with this horrible word: no to the diet, yes to the fabulous fuel of life! This year, you’ll be asking something unique of your body: you’ll be asking it to put on the dress of your

dreams in front of everyone you know in the world and stand next to the guy you’ll be spending the rest of your life with. Your body deserves so much TLC! Give it nurturing, sustaining, healthy food over a year-long period and you will see it glow. (NB: This includes chocolate every now and again). I will exercise every day of the year No, you won’t. And thank goodness. Think of your body as your own baby and you’re halfway there: you would never punish your own baby in this way, pushing it to its absolute limits. With a baby, you nurture and love and listen to what it needs. Your body needs to move to stay active and healthy (and because we’ve got our eye on The Dress). So alongside the Fabulous Fuel, look at your schedule and be brutally real with yourself: aim to commit to an iron-clad once-a-week exercise session at the very

least. Top tip for making this a reality: make a pact with a girlfriend (you go together every week for six months then treat yourselves to a spa break), or get hubby-tobe on board (pre-wedding couples’ runs are the big thing for 2019. You heard it here first…). I will always take my make-up off before bed We believe in this one but, alas, the spirit is willing… Taking care of your beauty regime is, however, fundamental and can make a huge difference for your wedding day if you get a system in place now. I ask myself honestly if women the world over really do have time to cleanse, tone and moisturise every day, twice a day, and then ponder if I’m perhaps the laziest woman alive. But I think this is doable. And nothing motivates like an impending wedding day. The department store is your

The danger here lies in the pressure you put on yourself for sourcing everything and then holding yourself alone accountable. Being budget-savvy is an

And it’s a process you’ll have to negotiate together. With great candour, you may be required to ask of yourself every now and again: am I putting the wedding before my marriage? He may well have to ask himself some searching questions, too (‘I need to care more about this because it’s so important to her’), but as long as you hold on to your sense of humour, this will be an important journey you both share. Instead of (or as well as) vowing to spend every weekend preoccupied with wedding plans, vow also to do one thing together that brings to the fore the marriage ahead and the love you both share (ps discussing the wedding is off limits!). I will never ever not once

(even for a teeny moment) become a Bridezilla You might, lovely. It has been known. It’ll be the seating plan (heaven help us all), or the lighting, or because the chairs need to be a quarterinch to the left, and suddenly you’re a sobbing mess on the floor at the rehearsal, clinging on to the vicar for dear life. We are not mocking – this has afflicted us all. Be kind to yourself. No resolutions about ‘keeping things in perspective’. Accept that you might very well lose the plot (perspective? An idylllic Grade II listed Georgian mansion in the heart of the Lake District ABOUT STORRS HALL Storrs Hall was built in the 1790’s and is situated within 17 acres of picturesque landscaped grounds, on the scenic shoreline of England’s longest lake, Lake Windermere. The impressive exterior of the building is matched inside with its stunning romantic architecture, much of which is original. The hotel has hosted many famous guests in its time including the poets William Wordsworth and Robert Southey as well as Beatrix Potter and Winston Churchill. WHAT ARE THE BEDROOMS LIKE? The venue has 30 en-suite guest rooms all newly renovated with luxury fittings and contemporary bathrooms. The room that we stayed in was large with plenty of space, an extra comfortable bed, a flat-screen TV and tea and coffee making facilities. Our bathroom had a view that looked out over Lake Windermere, and we were able to completely relax and unwind throughout the duration of our stay. Storrs Hall also has a bridal suite and a luxury boathouse, complete with hot tub and a private terrace that overlooks Lake Windermere. It’s a beautiful private hideaway to relax in the build up to the big day, or a shorthaul honeymoon escape.

WHAT IS THE FOOD LIKE? We dined in the restaurant on the evening that we arrived and could not fault the service or meal, made from fresh local ingredients. The a la carte menu is available from 7pm, and we were seated looking out onto Lake Windermere and the fells. Breakfast and lunch can also be eaten here. The Tower bar with its famed historic furnishings and cosy fire also has food and beverages available from noon. Traditional afternoon tea can also be booked, this is served in the restaurant, drawing room or study, scenic views were aplenty from all three. In the summer months, this is also served on the terrace.

Maids of honour: this one’s for you. Carrie Marsden reveals the only tips you’ll ever need to plan the perfect hen party

ongratulations Miss bride-to-be! You’re getting married! Hurrah! Now pass this feature along to your maid of honour and go away this instance. She and I have some business to attend to and you, Miss Bridey, need to make yourself scarce. Have you gone…? Good. Right then, Maid of Honour: it’s up to us. That brilliant woman you love and adore deserves one heck of a hen do (let’s

ignore for a moment she’s a whisker away from losing the plot over crockery or tulle… or what was it last week? Tealights?!). Clearly, she is in need of this hen party now more than ever. And you’re going to give her an unforgettable one, right? Of course you are. So let’s get this party started: here are the only three tips you’ll ever need to create a hen party like no other, guaranteed…

1. The philosophy stage Let’s start at the very beginning – a very good place to start (panic not: I am not about to suggest a Sound of Music-themed hen party. Although…). Whilst we acknowledge we’re organising a hen party and not the UN national conference (warning: similar levels of diplomacy may be occasionally needed), aims and objectives are important and worth considering at

the outset. We like to call this The Philosophy Stage. First up, let’s consider the finishing line: what do you want the bride and girls to feel by the end of the hen party? This is an excellent starting point because it helps illuminate the entire ethos of the party, as well as clarifying in your mind what theme or ‘vibe’ you should opt for. The thought process runs something like this: “Knowing my bride and

2. Money matters We’re a fan of the celebratory ethos rather than the ‘last night of freedom’ approach. This isn’t a send-off into the state of matrimony (far too patriarchal), but an honouring of a beautiful next step in the lifecycle of womanhood. A really, really important point follows… this doesn’t have to cost the earth. Research suggests that the average cost of attending a hen or stag party in the UK is a whopping £464 per person (refinery29.com). Depending on your guests, for many, that cost could be prohibitive. There’s a fine line here and a balance to be struck (here’s where your diplomacy skills come in). Of course you want to shower the bride with treats but you certainly don’t want to alienate guests with a hefty bill. Once you have a handle on the ‘vibe’, do your research and look into various options (see some suggestions top, right). Keep the budget uppermost in your mind and once you’ve decided on a plan, be upfront

guests, I want the girls to go away having got to know one another better because we’re all relative strangers, so that on the wedding day we can have a shared giggle over some shared experiences.” Or, “I know my bride is bang-up for a night on the tiles and is crying out for a dance. Dancing and singing and laughing hard are essential to her enjoyment so I had better get all those things in place pronto.” Or maybe, “My bride would rather eat her own arm than go out on the razz. She wants to be pampered and spoiled.
