Trying to keep trim in time for the wedding, but still get takeaway cravings? Try these delicious treats, guilt-free!

Burger in a bowl Ready in 20 minutes

For the sauce 3 level tbsp extra-light mayonnaise INGREDIENTS 5 tbsp fat-free natural Low-calorie cooking spray 500g lean beef mince (5% fat or less) fromage frais 1 onion, finely chopped 1 level tbsp American-style 2 garlic cloves, crushed mustard ½ iceberg lettuce, roughly shredded 2 tbsp tomato purée 2 tsp white wine vinegar 8 gherkins, sliced 1 small red onion, finely chopped ½ tsp garlic salt ¼ tsp onion granules 2 tomatoes, roughly chopped ¼ tsp sweet smoked paprika

METHOD Spray a large, heavy-based non-stick frying pan with lowcalorie cooking spray and place over a high heat. Add the beef, onion and garlic and stir-fry for 6-7 minutes or until the beef is cooked through and the onions have softened. Season well. Meanwhile, put all the sauce ingredients in a

bowl with 4 tablespoons of water and whisk until well combined. Mix together the lettuce, gherkins, onions and tomatoes and divide between four wide bowls. Spoon the beef mixture on top, drizzle over the sauce and serve hot.

Creamy chicken korma Ready in 45 minutes

SERVES

INGREDIENTS Low-calorie cooking spray 3 bay leaves 1 cinnamon stick 1 tsp cardamom seeds, crushed ¼ tsp ground cloves 2 tsp cumin seeds 1 onion, finely chopped 1 tbsp ground coriander 1 tbsp ground cumin 2 tsp mild curry powder 3cm piece of root ginger, peeled and finely grated 3 garlic cloves, finely crushed 200g chopped tomatoes 4 skinless and boneless chicken breasts, cut into bite-sized pieces 200ml boiling chicken stock

5 tbsp fat-free natural fromage frais A small handful of roughly chopped fresh mint, to garnish Boiled, dried rice, to serve METHOD Spray a large non-stick frying pan with low-calorie cooking spray and place over a high heat. Add the bay leaves, cinnamon stick, cardamom seeds, cloves, cumin seeds and onion and stir-fry for 5 minutes. Add the coriander and ground cumin, curry powder, ginger, garlic and tomatoes and stir-fry for another 3-4 minutes. Put the chicken into the pan, pour in the stock and bring to the boil. Season to taste, cover tightly, reduce the heat to low and simmer gently for 20-25 minutes, stirring occasionally. Remove the pan from the heat and stir in the fromage frais. Scatter over the mint and serve hot with your choice of rice.

Vegetable noodles with tofu Ready in 25 minutes,

INGREDIENTS 350g dried egg noodles 3 tbsp light soy sauce 4 garlic cloves, crushed 2cm piece of root ginger, peeled and finely grated 1 tsp Chinese five-spice powder Low-calorie cooking spray 200g mangetout, trimmed and halved 100g shiitake mushrooms, sliced 1 red pepper, halved, deseeded and thinly sliced A bunch of spring onions, sliced diagonally 1 pak choi, roughly chopped 1 level tbsp sweet chilli sauce 2 tbsp dark soy sauce 300g firm tofu (plain or naturally smoked), cut into large cubes

METHOD Cook the noodles according to the packet instructions then drain and set aside. In a bowl, mix together the light soy sauce, garlic, ginger and Chinese five-spice powder and set aside. Spray a large non-stick wok or frying pan with low-calorie cooking spray and place over a high heat. Add all the vegetables apart from the pak choi and stir-fry for 5 minutes or until just tender. Add the garlic and ginger mixture and stir-fry for 2-3 minutes. Add the noodles, pak choi, sweet chilli sauce, dark soy sauce and tofu pieces and toss together for 3-4 minutes. Serve hot in warmed bowls.

We adore this gorgeous wedding at one of our favourite venues – The Italian Villa. Amanda tells all... How did Luke propose? “Luke proposed whilst we were away on holiday in the Dominican Republic. He suggested a walk on the beach before dinner. He

had thought of everything, including a light up ring box so I could see the ring sparkling away. For me, it was the best surprise in the world.”

What dress did you wear? “I knew before I even started my wedding dress hunt that I wanted something modern, with lace and a big train. I found my dress initially in a bridal magazine and then had to go looking for a bridal shop that stocked the designer. I bought my dress from Anya Bridal Couture in Wickham. After trying on a

dozen or so dresses, I came right back to this one.” And the accessories? “All of the bridal party were wearing Links of London earrings on the day. My bracelet was my ‘something borrowed’ courtesy of my mum. My shoes were from Rainbow Club. Not only are they super comfy but

The dresses were beautiful and they all looked stunning in them.”

What was your theme? “We didn’t have a specific wedding theme but tried to pick things that complemented our venue. I am so lucky to have had the help of Luke’s stepmum, Nicky, who turned our hundreds of Instagram and Pinterest favourite tags into a reality. Nicky helped with the designing throughout the wedding and supplied all of the flowers through her shop Penelope’s Petals in Cosham.”

A traditional wedding in blue, silver and white created the perfect day for this couple. Claire shares all... What dress did you wear? “It was ivory with a sweetheart neckline, detailed with lace and sequins. I had a jewelled belt stitched into it around the waist and had detailing added to the straps to flow over my shoulders. I bought it from Lucy Alexander in Stafford.” And the accessories? “I wore a pair of silver pearl 74 ♥ L OV E O U R W E D D I N G ♥ M A R C H / A P R I L 2 0 1 9

earrings and a necklace that my mum bought me the previous Christmas. I also wore a silver bracelet from my bridesmaids saying ‘he put a ring on it’. My lace comb hair piece was from Lucy Alexander. I wore a pair of customised Converse that were designed with sequins and had written on the left

foot ‘2.12.18’ and the right foot ‘Mrs Scerri’ with a small bow at the back.” What did the groom wear? “James wore a very modern navy blue three-piece suit. He decided to buy the suit because it wasn’t much more then renting. My dad and James’ dad wore the same

suit and they all looked very smart. They all also wore black shiny patent shoes, which looked amazing.” How did you feel when you saw him up the aisle? “If I’m honest, I was nervous getting ready, it almost felt it wasn’t real. Then as soon as I got into the car leaving

my house with my dad, my nerves went away. Then while I waited outside the room where all the guests were, I just wanted to get in there and see him. I felt so overwhelmed and emotional and could see James was holding back the tears when I stood beside him.”

Who were your bridesmaids? “My bridesmaids were my two best friends, Kim and Sara. I also had James’ sister as a bridesmaid, although she was with James on the morning of the wedding. My maid of honour was my big sister Nicola.”

What was your theme? “It was around Christmas and the venue had their trees and decorations up. Our colour scheme was white, silver and royal blue.” What was the highlight of your day? “Our afternoon tea was

amazing at the Staffordshire County Buildings. We had a relaxed atmosphere where two families came together to celebrate with us. James also decided to play a song and sing to me, despite, on his own admission, his poor guitar skills and questionable singing abilities!”

This couple celebrated with a beautiful rustic-meets-Highland theme! Harriet shares her story... How did Andrew propose? “Andrew surprised me with a long weekend in Gairloch for my 30th birthday, to stay at the same house we later decided to hold

our wedding ceremony! The weather was beautiful when we arrived, so we decided to take advantage of the garden hot tub, with a stunning view overlooking

the Torridon mountain range. While holding a glass of champagne, contemplating my surroundings, Andrew took me by complete surprise with his proposal.” What dress did you wear? “My wedding gown was by Stella York in Moscato, which is a pale antique beige/blush. This was a

romantic, but classic ball gown with beading, lace and a full, floaty tulle skirt. The sheer lace and net-trimmed bodice features a sweetheart neckline with cap sleeves, and Swarovski crystals accenting the waistline. I bought my dress from Wedding Belles Bridal in Alness, with a lot of greatly appreciated help from Mel.”

And the accessories? “My shoes were by Jenny Packham, my hair piece was by Jon Richard and my bracelet and earrings were from Debenhams.” What did the groom wear? “Andrew wore a traditional kilt in-keeping with his family origins and clan. The tartan was of the MacDonald of Glencoe Muted; handmade by the lovely, local kilt-maker Karen Bethune in the Black Isle. To complement his

kilt, Andrew wore a white shirt and dark grey Braemar jacket, waistcoat and kilt socks, all bought from Slaters in Inverness.” How did you feel when you saw him up the aisle? “Although there were only 10 guests, I was terrified. I remember taking a deep breath right before I walked into the room and hearing the song we had chosen. I didn’t look at anyone else but my husband-to-be. I

remember thinking he looked incredibly handsome, and his calm gaze and smiling eyes kept me steady.” Who were your bridesmaids and where were their dresses from? “My maid of honour, my best friend Kate, wore a forest green full-length dress from Debenhams. My sister Megan also wore a forest green dress from Coast. My nieces, Milly and Eliza, wore Monsoon dresses.”

What was your theme? “Rustic woodland, with a Highland twist. We created our theme with inspiration from nature; tree log slices, wild flowers, foliage, lavender and thistles.” What was the highlight of your day? “Our photographer drove us to beautiful locations around Gairloch – the first time my husband and I were alone together. These made magical highlights of our day.”

here’s always one element of wedding planning that causes more headaches than anything else – the guest list. Not only is it the one area that may cause rifts between you and family members, it will also take a huge bite out of your budget. So how are you meant to decide

who makes the final cut? Are you inviting children? What about plus-ones? Or your auntie and uncle you haven’t seen since childhood? The potential pitfalls are everywhere, and you can bet your bottom dollar everyone in your family will give you their opinion. Before you even cross that bridge, you

earlier ‘evening’ party with everyone else. With a lower cost per head, it’s the perfect way to not offend anyone and ensure that all family members are with you for the majority of the day. DON’T INVITE CHILDREN This one can ruffle a few feathers, but cutting out the cuties will save you lots of money and any distractions during the ceremony. You might be pleasantly surprised – the opportunity for parents to have a ‘night off’ may go down well!

GET MARRIED ABROAD It may seem a bit extreme, but getting married abroad will definitely mean that only the people who you really want there will make the effort to come, and those who don’t can’t be upset that they weren’t invited.
