H
ello September! As we enter my favourite season of the year, Autumn offers an abundance of beautiful things: a whole range of new bridal collections and accessories, stunning surroundings for breathtaking photo opportunities, and a whole lot of weddings taking place! Top features this issue include 14 pages of gorgeous gowns for the modern bride (page 14), details with the famous ‘something blue’ rhyme in mind (page 59) and, as always, a selection of delightful real weddings, including the most fun-looking wedding I’ve ever seen, in gorgeous Colombia (page 66)! But my favourite feature this issue is the dress shopping tips (page 31). Essential advice to ensure you get the best experience possible. Falafel burgers with a punchy sauce SERVES

Ready in 35 minutes, plus chilling INGREDIENTS 1 small carrot, peeled and finely grated 400g can chickpeas, drained and rinsed 1 small onion, chopped 2 garlic cloves, peeled 2 tsp ground cumin 2 tsp ground coriander ½ small pack fresh parsley Low-calorie cooking spray 4 x 60g wholemeal rolls, toasted if you like 4 lettuce leaves 2 tomatoes, sliced Salad, to serve
For the punchy sauce: 200g fat-free natural cottage cheese 3 tbsp fat-free natural yogurt 1 garlic clove, crushed A small pack fresh coriander 1 tbsp lemon juice ¼ tsp smoked paprika METHOD Squeeze out and discard all the juice from the grated carrot (using kitchen paper or a clean tea towel) and put the carrot in a
food processor with the chickpeas, onion, garlic, cumin, coriander and parsley. Season to taste and pulse until well combined but not too smooth, as you want a little bit of texture. Divide into 4 portions, shape each portion into a burger and chill for at least 30 minutes. Light the barbecue for direct medium heat. Clean the food processor and tip in all the sauce ingredients. Blend until smooth then season to taste and chill until needed. Spray the burgers with lowcalorie cooking spray and

arrange them on a non-stick grill pan or baking sheet. Place the pan or sheet on the barbecue over direct medium heat (the burgers are quite delicate) and cook for 10-12 minutes or until cooked through, carefully turning them once. (Or cook them under a high grill for 8-10 minutes.) Fill each roll with lettuce, tomato and a falafel burger and top with a good dollop of the sauce and serve with a salad.
Pulled pork Ready in 3 hours
SERVES

INGREDIENTS 2 tbsp paprika 1 tbsp chilli powder 1 tbsp ground cumin 1½ tsp coarsely ground black pepper 2 tsp sea salt 2kg lean boneless pork leg joint, all visible fat removed 2 spring onions, thinly sliced diagonally, to serve Salad, to serve For the sauce: 100ml cider vinegar 100ml unsweetened apple juice 1 level tbsp soft light brown sugar 2 level tsp sweetener ½ tsp chilli flakes 1 tsp Tabasco sauce METHOD Light the barbecue for indirect medium heat.
Put the paprika, chilli powder, cumin, black pepper and sea salt in a bowl and mix well. Rub the spice mixture all over the pork, making sure you get some into all the nooks and crannies. Barbecue the pork over indirect medium heat for 2½-3 hours or until very tender, turning occasionally. Close the lid if you have one. If cooking over coals you may need to top up the barbecue with hot coals halfway through. Or put the pork in a casserole pan with the sauce, cover and cook in the oven at 120°C/fan 100°C/ gas ½ for 5-6 hours.
Season to taste and keep warm. Let the pork rest on a large platter for 15 minutes. Barbecue the drumsticks over indirect medium heat for 35-45 minutes or until cooked through, turning once. Close the lid if you have one. Or cook them in the oven at 200°C/ fan 180°C/gas 6. Arrange the drumsticks in a serving dish, sprinkle over the sesame seeds and scatter over the spring onions. Serve hot with the salad.

A breathtaking Autumnal wedding filled with love and laughter. Elaine tells her story... How did Seán propose? “Seán proposed in Bruge the Christmas before we got married. We went to the Christmas markets as we have done yearly (we pick a different European city famous for their Christmas markets). We were walking around the Market Square and he took me by surprise. designer I chose was Maggie Sottero. This experience was made incredibly easy by the owner Eoin who guided me to the perfect dress. He was always very professional, even when I would arrive to my appointments in my sports gear just off my bike. The durability of the dress was tested on the dancefloor
and still remains in perfect condition!” And the accessories? “I wore a favourite rose gold bracelet that Seán had purchased for me on a previous birthday. The dress had quite some detail so I kept the jewellery simple and matched it with gold pearl

It was one of the most special and best moments of my life.”
