Ready in 30 minutes
INGREDIENTS
Low-calorie cooking spray
SERVES 4
8 skinless and boneless chicken thighs, all visible fat removed
300g long-stem broccoli florets
300g sugar snap peas
8 thick spring onions or salad onions, halved lengthways
4 garlic cloves, unpeeled
4 large tomatoes, halved
4 tbsp chopped fresh tarragon
450ml boiling chicken stock
Lemon wedges, to serve
Preheat your oven to 220°C/fan 200°C/gas 7.
Spray a non-stick frying pan with low-calorie cooking spray and place over a high heat. Make a few deep slashes in the chicken thighs, add them to the pan and fry for a couple of minutes on each side or until lightly browned (in batches if necessary).
Put the broccoli, sugar snaps, spring or salad onions and garlic cloves in a nonstick roasting tin and season lightly. Add
the tomatoes, cut-side up, and most of the tarragon. Sit the chicken thighs on top, pour over the stock and cover with foil. Cook for 20 minutes or until the chicken is cooked through and the vegetables are tender.
You can serve the garlic cloves whole or squeeze out the garlic flesh and toss it through the vegetables. Scatter over the remaining tarragon and serve hot with lemon wedges to squeeze over.
Ready in 1 hour
INGREDIENTS
Low-calorie cooking spray
1 onion, finely sliced
2 garlic cloves, crushed
350g dried risotto rice
1.2 litres hot chicken stock, made with 2 stock cubes
2 courgettes, coarsely grated
300g raw peeled king prawns
200g spring greens, shredded
Zest of 1 unwaxed lemon, plus a squeeze of juice
SERVES 4
Spray a large, deep, non-stick frying pan with cooking spray and place over a medium heat. Fry the onion for 10 minutes, adding a splash of water if it starts to stick to the pan. Add the garlic and fry for 2 minutes.
Add the rice and fry for 1-2 minutes, stirring. Gradually add the stock a ladle at a time, stirring continuously, until the rice is almost tender but you have some stock left. (This should take around 30 minutes and the risotto should bubble
gently all the time – you may need to add some hot water if you run out of stock.)
Season, then add the courgettes, prawns and spring greens with a couple more ladles of stock. Cook for 5 minutes until the prawns are pink and cooked through, and the greens are wilted.
Remove from the heat. Cover and leave to stand for 5 minutes. Ladle into 4 bowls and top with the lemon zest and juice.
Ready in 1 hour
1.25kg frozen spinach
2 medium red onions, chopped 500g chestnut mushrooms, roughly chopped
2 garlic cloves, crushed
1 tbsp chopped fresh sage
3 tbsp chopped fresh parsley
100g reduced-fat feta cheese, crumbled Grated zest of 1 small unwaxed lemon
3 level tbsp freshly grated Parmesan cheese
4 medium eggs, beaten
2 x 39g filo pastry sheets, halved widthways
Low-calorie cooking spray
Mixed salad, to serve
Cook the spinach according to the pack instructions, then tip into a colander and press out every drop of liquid that you can. Transfer to a chopping board, roughly chop and set aside.
Meanwhile, place a non-stick frying pan over a medium heat. Add the onions and 3 tbsp water, cover and reduce the heat to low. Cook for 10 minutes or until the onions are soft, then uncover, increase the heat to high and cook until all the liquid has gone and the onions are beginning to brown.
Preheat your oven to 180°C/fan 160°C/gas 4. Add the mushrooms, garlic and sage to the onions and stir-fry for 3 minutes or until the mushrooms are soft. Tip the mixture into a large mixing bowl and leave to cool slightly. Stir in the spinach, parsley, feta, lemon zest, Parmesan, eggs and a little seasoning, and spoon the mixture into 4 individual pie dishes, or a medium-size ovenproof dish.
Lay 1 piece of pastry out on a work surface and spray with low-calorie cooking spray. Carefully ruffle it and lay it on top of 1 of the pies, then repeat to cover the remaining pies. Bake them all on a baking sheet for 25 minutes or until the pastry is crisp and brown and the filling has set slightly. Serve with the salad.
If you’re frantically planning your wedding right now, I know what an exciting time it can be but also that there is a less glamorous side that is rarely talked about....the stress, the disappointments, the dramas, the pressure to look a certain way and the emotional effects that all of this has on you as a Bride and perhaps even on you both as a couple.
At what is arguably the most important time of your life, I believe from my personal experience of a post-wedding burnout, that it’s a good idea to be thinking about investing in your holistic health, physically, mentally & emotionally, and not just how you would like to look on your big day but also how you want to feel, long into happily ever after.
Too many Brides and clients tell me that despite looking stunning, they didn’t feel it inside, they were lacking confidence, feeling nervous, anxious
and worried how the day would turn out. I want you to know that this is all normal and there are simple steps you can take to prepare yourself and ensure you’re glowing from within, hair and make-up will just be the icing on the cake!!
Set aside time that is just for you and your self-care, prioritise the things that make you feel good, this might be as simple as reading a book, cooking your favourite healthy weekly recipes, booking a yoga class, going for a daily walk in nature, or spending longer on your night-time skincare rituals. Plan an occasional date night where you and your partner talk about things other than your wedding - it can become all-consuming and overwhelming to talk about it 24/7 and it’s good to check-in with each other and remember that this is all
about the bond between the two of you and your exciting future together. As far as possible, try to put yourself and your partner first when making choices and decisions about your health, the wedding day etc You might have to get comfortable with saying No if you find that others try to make decisions for you, or try to take over.
Sleep is the best natural beauty booster there is, so prioritise at least 8 hours if you can, if you’re not a good sleeper, or find yourself not sleeping so great as it gets closer to your wedding....there are lots of things you can do to improve sleep hygiene - ensure your bedroom is nice and cool (18 deg is ideal), turn off devices at least an hour before bedtime and dim the lights to support melatonin production (the body’s
natural sleep hormone), try a short breathing exercise for a minute or two which will put your body in a calm state, activating the parasympathetic nervous system (the opposite of fight or flight mode, the stress response) Don’t underestimate the power of some time out just ‘doing nothing’ our minds need a break to recharge! Rest and tune in regularly to how your body and mind are feeling.
Stress raises our Cortisol levels (the body’s stress hormone) which is normal for short periods of time but left activated over longer periods, this can be extremely detrimental to our health & well-being.
There are many different ways you can lower your stress levels and what works for one person doesn’t necessarily work for another, so try some of these out and see what feels good to you.
Stress is an emotion and emotions are energy in motion, therefore often we need to move to gently ease the stress out of the body - this might look like going for a run or to the gym for you, or a gentle bit of stretching or walking will also work well.
At other times, finding stillness can really help, just take a few minutes to stop what you’re doing and tune into those feelings, breathing deeply - where do you feel them in your body, can you describe them? More often than not, just recognising and acknowledging them will help and in a few minutes they should pass. If meditation feels good to you, or a gentle yoga class, then this will work wonders for your mind and emotional state.
Another activity that can be hugely helpful for some is journalling, write out how you feel about a stressful situation, maybe talk it through with a friend or supportive family member and see if you can start to see it differently and in a more positive light - there is often a lesson, or silver lining.
Remember that as Women, our hormones naturally fluctuate and so
we’re prone to feeling more stressed, or to have more negative thought patterns at certain times of the month, they do pass as our hormone levels rise again.
Establishing a morning wellness routine is a good way to build resilience, this doesn’t have to be complicated and if you’re short on time this could just look like a few minutes of journaling, stretching, meditation / breathwork, writing in a gratitude diary, or just applying a nourishing face-mask whilst taking a few deep breaths into your belly.

Tell us about the proposal...
I did it! DJ had always jokingly said we would get engaged when I asked him, and apparently he waited by the phone on the leap year when I was living in Venice and he was living at home with my mum. But that call didn’t come. A year or so later I decided I would do it and I hatched a plan. DJ was also planning to do it but I got in there 3 weeks before him. I arranged for all our closest mates to be at the top of Ditchling Beacon, near to Brighton. I arranged for them all to gather hidden just over the hill with “DJ will you marry me?” in coloured bold marker pens written across their bare bottoms! As DJ and I went over the hill, to what he thought was a walking club meet up, he saw the question spelled out one letter at a time on each of our mates’ bare bottoms! Why bare bottoms? On a holiday to Cornwall we visited a nudist beach (it was the only one that allowed dogs), but once we had a customary skinny dip we had a picture
taken looking out to sea, and it’s a firm favourite (it became our wedding invites). It started the tradition of getting a ‘bum picture’ on all of our holidays and we always rope our mates in, too.
What dress did you wear and where did you buy it?
The dress was called India by Madi Lane. It was from Flora in Robertsbridge. I absolutely loved it.
What did the groom wear?
He wore white chinos and a light blue tweed jacket with bow tie and waistcoat to match with brown brogues. The best man, Tom and groomsmen (our brothers and DJ’s Dad) all wore the same.
How did you feel when you saw him up the aisle?
Pwoooaaar! And a huge bout of excitement. Our little niece, Lily-Mae, and Nephew, Jesse, had sprinkled petals on the

floor before me and they did a very diligent job, one petal at a time.
Who were your bridesmaids and where were their dresses from?
I had seven bridesmaids. There was a mix of dresses all with a dusty pink colour. I gave the bridesmaids the options to choose their own style so they came from a range of shops.
What was your wedding theme and how did you create it?
Boho/Rattan. I made over 100 macrame chair backs in the year leading up to the big day, I had some help from some bridesmaids and DJ did a lot of string cutting. We ordered in a large macrame centerpiece, and decorated the tables’ macrame runners with brass candle sticks and small bottles of beautiful flowers.
What was the highlight of your day?
This is really hard to pick, but I think it was seeing so many happy faces all day. Everyone was there because of us, but they made the day really special for us!
What was your best buy?
There were so many lovely things that added to the feel of the day. Most of all we wanted our wedding to be about

our friends and family enjoying as much time as possible with us, and so the best buy was having Beaconside House and all the grounds for a long weekend and spreading the fun across BBQs, pool parties, hot tub time and garden games, all playing out to the theme tune of popping prosecco.
What’s your saving tip?
We had three aims when we were finding a venue:
1. As much accommodation as possible to keep our friends with us a long as we could.
2. No curfew so we could party with our friends as long as possible.
3. No corkage, so we could bring as much prosecco as best man Tom could find in a van. This last one was a great saver! Turns out it’s over 300 bottles, and it all went!

How did he propose?
Luke had booked a romantic weekend away in Stellenbosch and treated us to a relaxing full day at Lanzerac SPA on Saturday 27.11.2021. We were told that we would be treated to lunch, so after our treatments I was privately driven by the friendly staff to a beautiful room in the venue, which I assumed was the restaurant. As I walked in my heart stopped and the tears started – the room was perfect for the beautiful rainy day, there was a fire place burning, a picnic basket set up in front of the fire place with Champagne on ice and flowers scattered around the room. Then he got down on one knee, my heart melted, and I said I do!
What dress did you wear and where did you buy it?
Looking for my dream dress was not an easy task, however once I found Elbeth Gillis Couture everything fell into place. She was simply amazing and so professional.
My experience was one that I will always remember. The dress that I chose was the Tina & Alice dress. To this day people are still complimenting me on the elegant dress that made me feel so confident and poised.
What accessories did you wear and where were they from?
My custom made veil by Elbeth Gillis was my main feature, so I kept accessories to the minimum. I wore pearl dropped earrings that I was gifted by my very special Grandmother, Verity.
What did the groom wear?
Luke wore a custom suit from Italy by Spaghetti Mafia. The suit was deep black with a slight sheer.
How did you feel when you saw him up the aisle?
As I stepped out and saw Luke standing at the magnificent chapel, my heart stopped
and I was overwhelmed with the feeling of love and gratitude. Everything felt so perfect and it truly was the happiest I have ever felt in my lifetime. I married the man of my dreams and was surrounded by all our loved ones; in that moment I knew this was my life plan.
Who were your bridesmaids and where were their dresses from?
My bridesmaids were my beautiful sister Kelsey and my two best friends that I could not get through life without; Amy and Lauren. I wanted my bridesmaids to feel confident and elegant, and therefore I wanted to find a dress that would suit all three body shapes (not always an easy task). I came across a local designer in Cape Town who owns the brand Rosey and Vittori, and she kindly agreed to make my bridesmaids’ dresses. We went with the colour Emerald Green, the material fell perfectly and my bridesmaids looked just amazing.
What was your wedding theme and how did you create it?
I did not have a specific theme but when I thought of my day, I wanted to bring a sense of nature into it and the feeling of closeness. Therefore the venue was perfect as it had the beautiful garden, the glass house and a room that I could fill to bring the day to life. I went with the theme of glass, white and sage green, with lots of greenery, white

flowers and lots of lights and candles scattered across the table and room. The theme worked out perfectly and the venue looked extremely modern, classy, and elegant.
There is no specific moment of the day that was my highlight, the day was everything I dreamed of and more. When I was planning my wedding, everyone told me, the day goes so fast and after the wedding you may feel a bit lost and down coming off such an exciting time, however I felt the complete opposite. I Have never felt so present in the moments throughout the day, from getting ready, to the emotional reveal to my parents, to seeing the man of my dreams, saying I do in front of my loved ones, to the heart felt speeches and then dancing the night away and finding myself watching everyone and being reminded how lucky I am to be living in my dream moment, overwhelmed with gratitude.
My best buy was my dress. Your dress is what is going to
make you feel like a princess on your day. Ensuring you choose a designer that makes you feel good, confident and gives you personalised service is so important, as so many people have sleepless nights over the dress. I had a seamless experience with Elbeth and honestly it was the best value for money.
My first step would be deciding on what you want for your day, what are the three most important things that you want to remember, and you want your guests to remember, once you have that get your quotes and make those three your biggest budgets. Weddings cost a good lump sum and certainly can be a big stretch for some, so my tip would be to focus on one or two things per month that you want to cover, so that you are paying deposits over various months and not all at once. The last month is where it really hits, as you must often pay the remaining amounts, so ensure that you are putting money away each month for each vendor.

It used to be the bride’s father, the groom and the best man who got mic-time at weddings, but in 2023, the speech line-up has been well and truly shaken up...
Heidi Ellert-McDermott, founder of the bespoke speechwriting service, Speechy, and the author of The Modern Couple’s Guide to Wedding Speeches, tells us who’s taking their place.
‘Firstly, we better clarify, that, of course, nearlyweds can still opt for the traditional three,’ says Heidi. ‘Sometimes it’s the right choice, but couples and family shouldn’t automatically assume that those three fellas get to have their say on the day.’
For a start, there’s women to consider. And children maybe. And, with family dynamics so diverse these days, mothers of the groom, uncles of the bride and, well, anyone on the core guestlist really.
So how do you decide who you invite to give a speech? Heidi and the
Speechy team have noticed a formula that works. Let’s start with the crucial component…

Of course, you need someone on the speech line-up who represents you as a couple but Heidi says she’s still surprised by how little some couples think about this.
‘In heterosexual couples, more often than not, the groom speaks on behalf of the newlyweds. Sometimes this isn’t even discussed,’ says Heidi. ‘I suspect this is because a lot of brides are reluctant to add another ‘to do’ to their list but as someone who gave a speech, I know how much joy it added to my day. If brides really want to divide up the ‘to dos’ better, I’d suggest allocating the transport to your partner instead!’
There are a three basic ways a couple can present themselves on the
day. It could be one of you delivering a speech (though, remember, your partner can claim to have an equal dislike of public speaking!), both of you delivering individual speeches, or a joint speech – something that’s becoming much more common.
‘A joint speech really says ‘we’re a team’. It’s modern, fun and it always goes down a storm,’ says Heidi.
There’s plenty of reasons why your dad might not be the best choice. Sometimes family circumstances dictate this but it could just be that you know your mum would enjoy it more and have plenty she’d like to say!
And it doesn’t actually need to be a parent paying tribute to you; it could be another relative you adore, or maybe even a close friend. The questions to ask yourself is simply 1)

who knows you best and 2) who can articulate what you mean to them in a way that’s both meaningful and entertaining.
The same applies for your partner as it does you.
Whether or not your other half is a groom or a bride, it’s up to them who they’d like to invite up to the mic. Do they know their parents would love to say a few words, or do they want a traditional roasting from a friend?
‘Times have changed. There’s actually no right or wrong when it comes to the wedding speech line-up
so I’d encourage all nearlyweds to really think about it,’ says Heidi. ‘The mix of speakers should ideally offer an insight into your relationship, some tear-jerking moments and crucially, lots of joyous laughter! That mix guarantees you’ll kick-start the party!’
