DOU BLE SALMON AN D CUCU M B ER BOM B E Ready in 30 minutes, plus cooling and chilling
SERVES

INGREDIENTS 4 skinless salmon fillets 1 bay leaf 8 black peppercorns 1 onion, cut into wedges 10 sheets of leaf gelatine 500g smoked salmon 200g plain quark 200g extra-light soft cheese A large handful of fresh dill, plus sprigs to garnish A large handful of fresh chives Finely grated zest and juice of 1 unwaxed lime 200ml boiling fish or chicken stock ½ cucumber, halved, deseeded and diced, plus a few thin ribbons to garnish
METHOD Put the salmon fillets, bay leaf, peppercorns and onion in a wide saucepan and pour in enough boiling water to just cover. Bring to the boil, cover the pan, reduce the heat to low and simmer for 8-10 minutes or until just cooked through. Lift the fish from the pan with a slotted spoon and drain on kitchen paper. Discard the bay leaf, peppercorns and onion. Meanwhile, soak the gelatine sheets in a bowl of cold water for 10-12 minutes or until softened. Line a 1 litre pudding basin with cling film then line the basin again with overlapping slices of the smoked salmon. Flake the salmon fillets into a food processor and add the
quark, soft cheese, dill, chives and lime zest and juice. Season to taste. Squeeze the liquid from the gelatine sheets and add the sheets to the boiling stock, discarding the soaking water. Stir to dissolve completely and pour the stock into the food processor. Process until well blended, stir through the cucumber and leave to cool. Pour the cheese mixture into the prepared mould, cover with cling film and chill for 6-8 hours or until set. Carefully turn out the mould from the pudding basin and peel away the cling film. Garnish with cucumber ribbons and dill sprigs to serve.

TU RKEY TIKK A SKEWER S Ready in 30 minutes, plus marinating
MAKES

INGREDIENTS 200g fat-free natural yogurt, plus extra to serve 3 tbsp tikka or tandoori curry powder, plus extra to serve 3 garlic cloves, finely grated 3cm piece of root ginger, peeled and finely grated Juice of 2 limes, plus wedges to serve 800g turkey breast fillets, cut into bitesized pieces
2 red peppers, halved, deseeded and cut into bite-sized pieces A small handful of finely chopped fresh coriander, to garnish
peppers on to 12 metal skewers (or wooden skewers soaked in water for 20 minutes to stop them burning). Grill for 6-8 minutes on each side or until the edges are lightly charred in places and METHOD the turkey is cooked through. YU LE LOG Ready in 50 minutes, plus cooling and chilling INGREDIENTS SERVES 6 eggs, plus 2 yolks 12 85g caster sugar 60g self-raising flour 50g cocoa powder, plus 2 tsp to dust 6 sheets of leaf gelatine 150ml skimmed milk 3-4 level tbsp sweetener, to taste 1 level tbsp cornflour 1 tsp coffee essence 2 level tsp icing sugar, to dust METHOD Preheat the oven to 190°C/fan 170°C/gas 5.
Put the six eggs and the sugar into a large mixing bowl and whisk until doubled in size. Sieve the flour and cocoa powder into the eggs and fold in. Line a 40cm x 30cm Swiss roll tin with baking parchment, pour in the mixture and bake for around 10 minutes or until springy to the touch. Leave to cool slightly. While the sponge is still warm, turn it out on to a sheet of baking parchment with a damp clean tea towel underneath and gently roll it up. Put the gelatine sheets in a bowl of cold water for 10-12 minutes or until soft. Put the milk into a saucepan over a medium heat and heat until hot but not boiling.
Meanwhile, put the extra egg yolks into a bowl with the sweetener, cornflour and 150ml of water. Stir well and tip this mixture into the hot milk then heat gently until thickened, stirring occasionally. Squeeze the excess liquid out of the gelatine sheets and add the sheets to the milk along with the coffee essence. Stir well, then remove from the heat and leave to cool. Unroll the sponge and spread the mixture over it evenly. Roll up carefully and leave to set in the freezer for 3-4 hours or overnight if possible. Transfer to the fridge about an hour or two before you want to eat it. Dust with the extra cocoa powder and icing sugar and slice to serve.

o achieve flawless wedding make-up, you want to create a look tailored to the bride. Whether that’s bringing life to their skin with the right blush shade or choosing the right false lash for their eye shape, the goal is to enhance the bride’s unique, natural features. 1 Prepping and priming the skin is key. Using a moisturizer to hydrate in combination with a strong-hold primer with allow the makeup products to seamlessly glide onto the skin, plus stay all day and night! 2 Blush can be intimidating, especially if you don’t like colour. But it makes such a difference in bringing the skin to life, therefore removing any dullness. The lightest application of blush can have the bride looking like she’s glowing from within. 3 Don’t be afraid of a little shimmer! If you want an allmatte look – go for it, but I highly recommend adding a touch of shine. My favourite area being the eyes, specifically on the lid or inner corner. This allows light to subtly catch your eyes and complements false lashes beautifully. 4 Speaking of falsies, less is more when it comes to brides. You want a style that enhances the eyes but doesn’t overpower the rest of the makeup or look too dramatic. This is why Velour is the bridal lash destination! AN ELEGANT ESSEX WEDDING
Amy & James Both the bride and groom share the story of their most idyllic day... How did he propose? Amy and I have been friends from a relatively young age. We dated a handful of times in our 20’s, but a mixture of immaturity, work commitments, and us both enjoying the different stages of our lives meant the timing wasn’t right. As Amy reached the end of her 20’s and me now into my early 30’s, we both secretly knew we were onto a good thing and decided to rekindle, now with more understanding, maturity and ready to become a partnership. I proposed to Amy on our daughter’s 6-month birthday. Our daughter presented Amy with a baby grow printed with, “Mummy will you marry Daddy?”, as I knelt behind her on bended knee, ring in hand. A ring that had been hidden in my sock drawer for over a year – just 3ft from Amy’s pillow! Amy had always dreamt of a vintage ring, so my dear friend Sam helpfully owns an antique ring boutique and helped me choose – a Sapphire with a Diamond Halo originally from Portugal, dating back to 1915. What dress did you wear and where did you buy it? I wore a silk gown by Grace Loves Lace with a custom veil made by Hayze Bridal – elegant, enchanting, and timeless, still with a hint of sexy. I really wanted a unique veil, so Hannah (owner of Hayze Bridal) and I designed an 80cm statement veil embellished with hand stitched flowers around the boarder. It wasn’t until the day that I felt the outfit was ‘the one’. I hadn’t had that feeling of this is THE dress until that moment. I was so happy with how the overall look came together and I really did feel amazing. For the evening, I changed into a Nadine Merabi white sequinned mini dress with feather hem, accessorised with a crystal encrusted custom BRIDE sailor hat. A real party piece!
What accessories did you wear and where were they from? I wore James’ wedding gifts to me – some new jewellery pieces from Missoma – paired with sentimental family items from my Mum’s collection. What did the groom wear? James wore a 2-piece tux from Moss Bros and a shirt from Zegna. James and the two best men wore tuxedo’s whilst the rest of the guests were in summer suits and cocktail dresses. We chose black-tie to complement the bridesmaids’ dresses, whilst allowing us as a couple and our bridal party to stand out from the rest of our wedding guests. I wore a new watch that was a wedding gift from Amy from Earnshaw, along with some other special, thoughtful touches Amy had included – a lucky Irish penny, a small pocket photo of my grandparents and a pack of tissues which said, “No Ugly Crying”. How did you feel when you saw him up the aisle? When we first saw each other as I walked down the aisle, we both smiled like children as a wave of emotion both of excitement and relief that we were finally there washed over us. Looking back at it now, there was also a sense of focus, as I don’t remember anyone else being there even though we were literally encircled by guests. Who were your bridesmaids and where were their dresses from? My sister Emma was my Maid of Honour with my best friend, Jade as a bridesmaid. The wedding party was all in black. The two bridesmaids wore black floor length dresses which they chose themselves whilst the two best men wore simple

2-piece tuxedos. The flowergirls wore ivory dresses and shoes. Both our mothers Sara & Margaret were involved in walking down the aisle as they carried two of the 4 grandchildren, from James x 1 and Mark x 3. Mark’s 2 eldest daughters walked down the aisle with bubble guns! What was your wedding theme and how did you create it? Our wedding had to be fun, relaxed, and free of formality. We aren’t people who believe in tradition for traditions sake, neither do we believe in the need for certain formalities. The challenge, to combine elegance with surprise, structure with fun, freedom with tradition. Out with the old and in with the new – we kept the ceremony and associated traditions to a minimum, a short ceremony conducted in the round saw us literally surrounded by friends. Reception drinks and canapes with games in the garden. A marquee designed to make the most of the brilliant English Summer and countryside, decorated with elegance and soft tones, full of space and intimacy in perfect harmony. A floating dancefloor, transparent to display a bed of hydrangeas beneath. Traditional fairground rides and more.

What was the highlight of your day? The whole day had a great feel to it, but I think this was most evident during the food service where we and our guests had freedom to choose from a multitude of food stations rather than being seated for a traditional service. It allowed for the guests to socialise more, as they enjoyed what they wanted, share what they had or hadn’t tried from the bar or food stalls and as a result it meant that people were constantly moving around the room, sparking up conversations here and there. As the hours ticked by, the sunlight softened, shoulders relaxed, hips loosened, and everything settled into the perfect harmony – our vision had come true. One final surprise remained; fireworks set to music.

Zoe & Joe We love the traditional feel to this wedding! Bride Zoe tells us more... How did he propose? Joe and I are very active people who enjoy walking, cycling, swimming and running. In November we were visiting family back home in Carlisle and we went for a walk up Blencathra via Sharp Edge. This has been a walk Joe has wanted me to do for a while as he usually runs it. On a damp morning we headed up the mountain. A week earlier I was playing hockey and took a stick to the head and was still recovering. As we came to Sharp Edge it became more of a scramble to get to the summit. I thought I was going to fall and with tears streaming down my face, Joe tried to encourage me to the top. I said I would rather be hit in the head 50 times more with a hockey stick than do this! We made it to the top and Joe highlighted the amazing view. I was not impressed. He delayed the proposal due to my comments! As we headed back down the mountain the skies cleared and there was a beautiful view of Keswick. We found a spot to sit and take in the view and this is where he finally popped out the ring and asked the question. After 10 years, of course I said yes!

What dress did you wear? As a must I wanted lace sleeves, I’m not sure why! The dress I chose was altered in various ways including shortening the train and using the lace to create sleeves. This made my dress unique.
Who were your bridesmaids and where were their dresses from? Natalie (Sister), Laura and Lucy (school friends) and Naomi (hockey friend). It was not hard to pick these ladies as they are always there for me. Laura is also my sister-in-law as she married by brother back in 2019. Lucy is the friend, who no matter what cycling or running challenge I have taken on, will be up for doing it with me! Naomi is the friend who will always tell me how it is, even when we are screaming at each other on a hockey pitch. I would not be where I am today if it was not for these ladies. I got their dresses
What accessories did you wear and where were they from? I am a simple person and I love comfort. I opted for custom Converse trainers for my main wedding shoes. They have ribbon laces, blue tongues, and ‘Just Married’
What did the groom wear? Joe refused to tell me what he was wearing on the day, even down to the colour. I would not show him my outfit so why should he show me his?! I was certain he was going to be wearing red. I was very wrong on this matter as he wore a three-piece blue suit and tie with a flat cap in honour of his Granda. Although I didn’t realise, he already owned his suit before the wedding. How did you feel when you saw him up the aisle? I felt amazing walking down the aisle, the moment my eyes locked onto Joe I could not stop smiling. Seeing him all dressed up and not in the suit I expected made me laugh.

from Coast. They all looked beautiful in there full-length sequined dresses. What was your wedding theme and how did you create it? We didn’t have a theme as such, we just liked a simple and rustic feel and tried to keep it minimal. Our venue had so much character, we didn’t need to do a lot. I did however ensure there were lots of bicycles where I could! Lots of photos of Joe and I were dotted around to show how we have changed over the 10 years we have been together. What was the highlight of your day? I can’t say I have a highlight of the day as it was truly amazing! Seeing my nephew and my bridesmaids’ kids all looking so smart, smiling and playing. Seeing Joe at the end of the aisle. In general, just having the best day of my life with my friends and family! What was your best buy? I have three best buys: the venue, the photographer and the Ceilidh band. These three things made our wedding the most perfect day and I would not change these things for the world. got the most perfect natural photos of the day. Janet from the venue was a superstar in making sure everything ran smoothly. The band kept the dance floor full all night! What’s your saving tip? I don’t really have any savings tips as such. We didn’t buy confetti as we just dried out our own petals from the garden and family friends did the same. We used a lot of decorations we already owned, such as magnetic photos. Lanterns were provided by our family. You may be surprised how many things you and your family have that you can use to decorate your wedding venue! Also, by not going to a boutique wedding dress shop, you can buy a beautiful dress without the huge price tag and still make it your own with the help of a good seamstress.

Wedding suppliers are specialised and they are also creating/supplying for what is likely the most important day of your life, that’s a lot of pressure to be perfect! Not only that but the amount of time, attention to detail and skills it takes to pull each service together is often not realised by couples. So no you don’t pay more for a wedding. You pay for talent, skill and perfectionism. Marquee weddings are cheaper than paying for a venue Nope as you are paying to build a venue from scratch and you then need power, toilets, lighting, refrigeration etc!

Foliage is cheaper than flowers In the current climate, that’s not quite the case and having foliage-heavy arrangements can still add up! Be selective about what flowers are your non-negotiables and go from there - both look stunning! Church weddings vs. registry office This year has seen a lot of conversation around church vs. registry weddings, however, wherever and however you get married - they are all just as official and special as the other - What is most important is the vows you are making to each other! Midweek weddings Although traditionally most people try and opt for a weekend wedding, more and more couples are beginning
to see the financial benefit of a midweek wedding. You often find with enough prior warning, family and friends are always happy to book time off work to attend. Too many cooks To avoid being overwhelmed and having lots of opposing opinions, try to be honest with friends and family about their involvement in planning. Although family and friends may naturally assume you want their help and support I always recommend that couples choose an inner circle of people to support them - this stops anyone from overstepping the mark when it comes to offering advice or opinions. For example, you don’t need to take 15 people to wedding dress appointments, just take those who really will offer support and productive opinions.
