STR AWB ER RY TAR T S Ready in 30 minutes, plus 15 minutes cooling

INGREDIENTS 100g ready-rolled reduced-fat puff pastry 8 tsp fat-free natural fromage frais 8 small fresh strawberries, hulled and thinly sliced ½ level tsp icing sugar METHOD Preheat your oven to 220°C/fan 200°C/ gas 7.
Cut out 4 hearts measuring about 8cm x 8cm from the pastry using a heartshaped cutter (or use a template made from card). Using a sharp knife, score a 0.25cm border around the edges, taking care not to cut through the pastry.
Press down the middle of each piece of pastry to create heart-shaped nests. Spoon the fromage frais into each tartlet, top with the strawberries and evenly dust with icing sugar to serve.

VEGETABLE CHILLI Ready in 30 minutes, plus marinating

INGREDIENTS Low-calorie cooking spray For the potatoes: 1kg large floury potatoes, thickly sliced lengthways 1 tbsp dried mixed herbs
400g can red kidney beans in chilli sauce 4 tbsp finely chopped fresh coriander leaves Lime wedges, to serve METHOD Using a heart-shaped cutter, cut each potato slice into a heart shape (you can keep all the trimmings for mashed potatoes another day.) Cook the potato hearts in a saucepan of boiling water for 5-10 minutes or until starting to soften, then drain well and tip into a non-stick roasting tin or baking tray. Season lightly, sprinkle with the dried herbs and spray with low-calorie cooking spray.
For the chilli: 4 shallots, peeled and finely chopped 2 garlic cloves, crushed 2 celery sticks, cut into 1.5cm dice 1 large carrot, peeled and cut into 1.5cm pieces 1 red pepper, deseeded and cut into 1.5cm pieces 1 tsp each of dried mixed herbs, ground cumin, ground cinnamon and chilli powder 400g can chopped tomatoes Toss them carefully and roast in the oven for 200ml vegetable stock (suitable for vegans) 30-35 minutes or until nicely browned and 400g can black-eyed beans in water, drained tender, shuffling them about halfway. Once

the potatoes are in, spray a large non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the shallots, garlic, celery, carrot and red pepper and stir-fry for 2-3 minutes. Add the dried herbs, ground cumin, ground cinnamon, chilli powder, tomatoes and stock and bring to the boil. Reduce the heat, cover and allow to cook gently for 10-12 minutes, or until the vegetables are tender. Stir in the blackeyed and kidney beans and cook for 2-3 minutes or until piping hot. Season lightly, remove from the heat and sprinkle over the coriander. Serve with the potatoes and the lime wedges to squeeze over.

INGREDIENTS Low-calorie cooking spray 320g bag frozen Slimming World Italianstyle Beef & Pork Meatballs (available to buy from Iceland stores) 1 large onion, finely chopped 4 celery sticks, finely chopped 2 garlic cloves, finely chopped 1 tsp hot smoked paprika 1 tbsp tomato purée 2 x 400g cans chopped tomatoes 300g dried tagliatelle ½ pack fresh basil, shredded, reserving a few small whole leaves to serve
METHOD Spray a large casserole dish with low-calorie cooking spray and place over a medium heat. Cook the meatballs for 5-8 minutes until browned all over, then remove and set aside.
Add the chopped tomatoes and meatballs and bring to the boil. Cover, reduce to a simmer and cook for 10 minutes. Meanwhile, cook the pasta according to the packet instructions, then drain.
Spray the dish with a little more low-calorie cooking spray and add the onion and celery. Cook for 2 minutes then cover and cook for a further 8-10 minutes, stirring occasionally, until the vegetables are soft. Stir in the garlic, paprika and tomato purée and cook for an extra minute until fragrant.
Stir the shredded basil into the sauce then divide the pasta between 4 bowls. Scatter over the reserved basil leaves and freshly ground black pepper to serve.

Kendal & Jackson A gorgeous wedding with peachy hues throughout. Bride Kendal tells her story... How did he propose? Jackson proposed at my favourite place, in the Blue Mountains in NSW at sunrise. What dress did you wear and where did you buy it? I wore the Elbeth Gillis Paige dress, and I bought it at Ivory Thread in Melbourne. What accessories did you wear and where were they from? The accessories I wore included the Vivian Organza Bow and pearl headband also by Elbeth Gillis. I also wore a bracelet with Jacksons last name initial that was from Sarah and Sebastian, an Australian fine jewellery company.
Who were your bridesmaids and where were their dresses from? Bridesmaids were my sister (Tarryn Bisley) and best friend (Lexi Gale). Tarryn wore a yellow Sir The Label dress and Lexi wore a pink Aje dress. Both Local Australian designer brands. What was your wedding theme and how did you create it? Our wedding theme was a spring garden party. That influenced the type of flowers we had, ceremony location, bridesmaids dresses and cocktail style reception. Unfortunately a big storm prevented us from having the outdoor reception we had planned at the Calile, however the ceremony was still outdoors and people could enjoy the beautiful park, before we moved to the indoor spaces at the hotel for the reception. I mainly got inspiration from Pinterest, instagram and wedding magazines.
What did the groom wear? Jackson wore a black suit from Joe Black and a white shirt from MJ Bale. What was the highlight of your day? The highlight of my day was probably getting ready with How did you feel when you saw him up the aisle? my girlfriends and family. Although I only had 2 official I felt a huge sense of comfort and excitement. Everyone bridesmaids, I had a couple of my closest friends come and everything else was a bit of a blur. with my Husband after the ceremony and before the reception, just us soaking in everything that had happened. It felt surreal and exciting that we had just been married in front of all our closest friends and family and now we were going to celebrate. What was your best buy? Our wedding coordinators were worth every cent. We had Kate from the Romantics (@theromanticsweddings) and she was absolutely incredible and gave us so much peace of mind leaving up to and on the day. I was skeptical of wedding coordinators/ planners before our wedding but I would recommend it to everyone now. What’s your saving tip? Do your research! Always look at multiple vendors and get quotes for everything and compare. Decide what matters the most to you and your partner and decide as a couple what will bring the most value to you and what you want out of the day. Also remember people are coming to celebrate you and they don’t remember the small things.

We caught up with the experts at Card Factory to find out what will be the biggest hen trends this year...

rom disco to Barbie, search data suggests many brides are choosing to have a themed event to celebrate stepping into married life, a trend expected to continue throughout 2024. If you’re tasked with selecting the theme however, that can sound like a daunting task. Not only must you consider the bride’s needs and wants, it’s easy to question whether the guests will be happy with the theme too. To spark inspiration and help you get it right, Amy Greenshields, party expert at Card Factory, reveals seven hen party themes you can expect to see in 2024 and how to recreate them. 1. THE LAST RODEO From statement boots to fun hats, brides are already celebrating their last rodeo by leaning into the cowgirl theme, with the trend seeing a 110% increase over the last 12 months. Amy comments: “The cowgirl theme is such a fun one for hen parties, and one we expect to see go into 2024. Not only are there plenty of party favours and decorations to choose from with this theme, it’s also one that can be easily tailored to each bride. For example, if your bride is a sparkly kind of girl, think about tying this theme into another popular hen party trend, disco. Combining a mixture of glittery bunting with silver and pink balloons will give you the perfect disco-cowgirl party, all within a reasonable budget. “Other cowgirl themes you can explore include

Amy comments: “To really personalise this theme, try focusing on specific elements of the decade the bride loves the most. Task your guests to come dressed in their favourite Britney music video look or favourite Spice Girl to really bring the theme to life. “If you’re looking for activities suited to this theme, many cities have dance classes for 90’s bands and artists, as well as 90’s RnB bottomless brunches which are both good options.” 3. CELEBRATE A BREW-TEA-FUL COUPLE WITH A ELEGANT TEA PARTY For a potentially more delicate theme, tea parties are a great option, particularly if you’re looking to throw an outdoor event. Whether you’re looking to take a mad hatter approach, or prefer a simple English garden party, there’s plenty of options for making this perfect for each bride. Amy comments: “Tea parties are a popular one with hens at the moment, and a nice way to step away from the raunchier hen party traditions, should that be… well, your cup of tea. “While outside parties probably aren’t high on the list for hen parties this side of the year, May is known for being a popular month for hen parties, making this a great option if you’re looking at a Spring date.” 4. GROOVIN INTO MARRIED LIFE WITH ONE LAST DISCO Not just suitable for a cowgirl party, a bride’s #lastdisco is a popular theme for hen parties right now, with the hashtag boasting over 17.5m views on TikTok. Amy comments: “A theme that can easily be done to any budget, a bride’s last disco is a sure way to get people singing and dancing, if that’s what you’re looking for. Not only is it on trend right now, but it’s inclusive for all ages making it a showstopper for those with mothers and mother-in-laws in attendance.“Setting the scene for your guests from the get-go is the best way to create a dazzling disco party. Incorporate a foil fringe door curtain to welcome guests in, with a big party balloon banner, iconic 70s tunes and of course, a glittering disco ball, and you’ve got yourself a disco to go down in the history books.” 5. SHE’S BARBIE AND HE’S JUST KEN… MOVIE AND MUSICAL INSPIRATION Barbie hen parties have seen a massive increase in
popularity (1,300%) following the release of the movie earlier this year. Similarly, searches for Mamma Mia! hen dos and Disney themed hen parties have also seen a rise in the last 12 months, meaning many are turning to their favourite shows and films for inspiration. Amy comments: “The Barbie movie truly touched all parts of our lives it seems, and for great reason. A simple one to turn around with pink options for pretty much every party item, this is a theme you can really scale up or down depending on everything from the bride, to the location and the budget. “Create your own DIY pink balloon arch for the perfect picture backdrop, or build some party favour bags to hold key accessories for the event, such as t-shirts, disposable cameras and treats.” 6. SECURING GLAMPING TICKETS TO HEN-FEST For music lovers, or just those who prefer the outdoors, what better way to celebrate entering married life than by throwing them their very own festival. A trend that’s increased by 11% over the past 12 months, it’s one expected to continue into 2024. Amy comments: “Throwing a festival can sound a bit terrifying, but it really doesn’t need to be. A glamping location paired with decorations, good music, a glitter station and 10/10 outfits is all you need to make it a good time. “If you really wanted to go all out though, consider recreating some of the foods you’d normally indulge in at a festival, or create your own line-up style itineraries for a personalised touch. 7. WELLNESS WEEKENDS FOR THE MORE WHOLESOME GIRLIES For the hens who aren’t too bothered about going out or drinking, wholesome or wellness weekends are a popular choice. Amy comments: “More and more people are opting to be teetotal, and if your bride is one of them, many of the ‘traditional’ elements of a hen party probably won’t be their preferred choice. “For those looking for a hen party centred around relaxation, wellness or slow-living, this is the theme for you. From hiring a private chef to cook you all a five star dinner, to heading to a yoga retreat or pottery painting, there’s so much you can do with this one. Charlton House Recently, Charlton House was taken over by Montigo Resorts; a gorgeous selection of resorts and spas in Indonesia. Having visited this beautifully quaint venue in Shepton Mallet before, we wanted to see what had changed and developed since the new ownership came in. Editor Jade Pepperell went to check it out... I was really excited when I found out that Charlton House had new ownership, and that lots of new developments were happening there including a complete refurbishment of the rooms. Having stayed here before a few times for special occasions, I thought I would investigate on another
timely occasion, my birthday, taking along my partner Ryan. Straight off the bat, there was a different feel to Charlton House, being warmly greeted at the door and told about all the amazing features there for us to take advantage of, including a glorious spa with a sauna, steam room and hot tub, top-end gym, treatment rooms and a restaurant with an exquisite menu. We headed straight to our room, and I was completely blown away! Charlton House had previously looked quite tired and dated, but the new, spacious rooms had been given a considerable ‘glow up’. Featuring

light clean hues, a beautiful roll-top bath, decadent drapes and bedding, and a large double shower, I was really impressed. We had our own private courtyard too, which we would have taken advantage of if the November weather was a little better! We then headed to the spa and enjoyed lots of time relaxing in the pool and hot tub outside under a canopy. It was extremely relaxing and tranquil. As fitness lovers, we couldn’t wait to try out the hotel’s gym as well, which was all very new and high quality. After a busy day, we needed to refuel, and we indulged in the hotel’s famous afternoon tea, which was as delicious as

it looked! It’s amazing how much one small tower of food can fill two adults up so fast! We decided to wait for our restaurant meal the following evening, and we both enjoyed the extremely tasty and high-end menu on offer. Taking
into account the cooked breakfasts too, the food was start-to-finish exceptional here. After a very comfortable night’s sleep, I woke up on my birthday feeling excited for the day ahead. We enjoyed the spa again before having a treatment
at their Elemis spa. It was honestly the best massage I’ve ever had! Afterwards, we went to the bar to enjoy a lighter menu, but little did we know, the Montigo Resorts team came out with a HUGE birthday cake for me and sang
