ROAST LAMB WITH GOLDEN ROOT VEG

Ready in 2 hours

INGREDIENTS

SERVES 4 METHOD

1.6kg leg of lamb on the bone, all visible fat removed (taken out of the fridge 1 hour before cooking)

6 garlic cloves, thickly sliced

6 sprigs of fresh rosemary, halved

1kg floury potatoes, cut into chunks

500g swede, peeled and cut into chunks

500g carrots, peeled and cut into chunks

1 tsp dried thyme

1 Savoy cabbage, shredded

4 level tsp beef or lamb gravy granules

Preheat your oven to 200°C/fan 180°C/ gas 6. Pat dry the lamb and make deep slits all over with a small knife. Push the garlic and rosemary into the slits and lightly season. Put the lamb in a non-stick roasting tin, cover with foil and roast for 40 minutes.

Spread the potatoes, swede and carrots in a large, non-stick roasting tin in a single layer. Scatter over the thyme, season and spray with cooking spray.

When the lamb’s been cooking for 40 minutes, take off the foil and return to the oven (if you like your lamb well done, roast for 55 minutes before removing the foil). Put the veg on the

Remove the lamb from the oven and leave to rest. Cook the veg for an extra 15 minutes to crisp up.

While the veg finish cooking and the lamb’s resting, spray a large, non-stick frying pan with cooking spray and place over a medium heat. Stir-fry the cabbage (a handful at a time as it cooks down) for 3-4 minutes until just tender. Make up the gravy with 280ml justboiled water. Slice the lamb (discarding any visible fat) and serve with the roasted veg, cabbage and a quarter of the gravy per person.

SPINACH AND FETA PIE

Ready in 60 minutes

INGREDIENTS

1kg frozen spinach

A bunch of finely chopped spring onions

A small handful of finely chopped fresh parsley

A small handful of finely chopped fresh dill

100g reduced-fat feta cheese, crumbled

250g fat-free natural cottage cheese

2 garlic cloves, crushed

A pinch of freshly grated nutmeg

3 eggs, lightly beaten

Low-calorie cooking spray

2 x 45g ready-rolled filo pastry sheets, halved

Roast potatoes (available to buy from Iceland), to serve Salad, to serve

METHOD

Preheat the oven to 180°C/fan 160°C/ gas 4.

Cook the spinach according to the pack instructions then tip into a colander. Press out the excess liquid and squeeze dry with kitchen paper or a clean tea towel. Roughly chop and set aside to cool in a large bowl.

Add the spring onions to the spinach along with the parsley, dill, feta, cottage

cheese, garlic and nutmeg. Season to taste and mix to combine then pour in the eggs and mix again.

Spray a 30 x 20cm ovenproof dish with low calorie cooking spray and spoon in the spinach mixture. Lightly spray the filo sheets with low calorie cooking spray and scrunch them over the top of the spinach mixture to cover. Bake for 30-35 minutes or until golden and serve warm with the potatoes and salad.

RASPBERRY MERINGUE NESTS

Ready in 1 hour 20 minutes, plus cooling

INGREDIENTS

MAKES 8

2 medium egg whites, preferably from older eggs (see tip)

75g caster sugar

80g fat-free natural Greek yogurt

1 tsp vanilla extract

16 fresh raspberries, plus extra to serve 8 Galaxy Enchanted Eggs

METHOD

Preheat your oven to 180°C/fan 160°C/ gas 4. Line a large baking tray with baking paper. In a large, clean glass bowl, beat the egg whites with an electric hand whisk on a medium speed until they form stiff peaks.

Increase the speed to high and add the sugar a tablespoon at a time, whisking for a few seconds between each addition to bring the meringue back to stiff peaks.

Fit a piping bag with a large serrated nozzle and spoon in the meringue. Pipe 8 x 8cmdiameter nest bases onto the lined tray, starting in the centre of each and circling out like a snail shell. Pipe a layer of meringue on top of the outer edge of each base to make the nest wall. Put the meringues in the oven and immediately reduce the heat to 140°C/ fan 120°C/gas 1.

Bake for 1 hour, or until crisp and the nests lift easily from the baking paper. Set aside on the tray to cool completely. Mix together the yogurt and vanilla extract, and use to fill each nest. Top each with 2 raspberries and a chocolate egg, and serve with the extra raspberries.

Tip: Meringues are better made using eggs that are 2-3 days away from their best-before date. They have runnier egg whites, making them easier to beat and create more volume.

A CHIC SUMMER WEDDING

This wedding had all the fun of the fair! Read how this couple made their day spectacular...

How did he propose?

He took us on a private boat tour around the lake in Disneyworld Florida (our favourite holiday destination) and got down on one knee on the boat in front of the magic kingdom fireworks display. I nearly jumped out of the boat in shock!

What dress did you wear and where did you get it?

I chose a Madi Lane dress with an over skirt, and after trying on so many I knew it was the one. It was from Abigail’s Collection in Colchester, who made the whole experience very special.

And the accessories?

I had a beautiful hand-crafted silk bouquet from my friend Nicole at Berrys and Grey. She also made matching smaller versions for the bridesmaids and pin holes for the groom and groomsmen. My most special accessory was a bangle I had made using my grandmother’s engagement ring. It meant she could be at the wedding even though she is no longer with us and counted as my something old and new.

What did the groom wear?

My husband wore a suit from The Grooms Room in Colchester. The groomsmen also wore matching suits.

How did you feel when you saw him as you were walking down the aisle?

I had been very calm all morning but became very nervous as soon as the music started playing to walk

down the aisle. But when I saw him he smiled, along with making me laugh, which meant I relaxed and couldn’t wait to get to him.

Who were your bridesmaids and where were their dresses from?

My bridesmaids Hollie, Sian Meghan and Sophie all wore dresses from ASOS and my bridesman Liam wore a suit from BOOHOOman.

How did you decide upon a venue and why did you choose it?

We already had another venue in mind but went for a private show round at The Old Hall Ely after seeing it at a wedding fair and fell in love with it immediately.

Did you have a specific wedding theme and how did you create it?

The theme was a funfair theme and we hired lots of vendors to create this for the reception. We had a full sized carousel, funfair games such as a coconut shy and hoopla from Dolly Dimples Weddings, and there was alcoholic candy floss and dragon breath popcorn too, all while a steel drum player kept the guests entertained.

What was the highlight of your day?

Apart from saying ‘I do’ and the brilliant wedding speeches from the groom and best men, my highlight was arriving by helicopter to the venue. I kept it a secret from the bridesmaids who thought we were arriving by minibus and when the helicopter landed in the field to

pick us up from my parents’ house that morning, it was a fantastic surprise.

What was your best buy?

A second comfy pair of shoes to change into for the evening. These were a life saver!

Do you have any saving tips?

I bought a cricut machine before the wedding (a vinyl label and craft maker) meaning I made all my own table names, place name cards, welcome sign and seating chart along with so many other bits such as matching tracksuits for bridesmaids and a handbag with my new married name on. It saved me a small fortune.

A STUNNING WEDDING IN CYPRUS

This lovely couple chose to say ‘I do’ overseas. Bride Catherine tells us more...

How did he propose?

We had arranged to go to a hotel in Belfast (Grand Central) to celebrate me finishing my chemo and Dale had arranged (me not knowing) to propose as well. He had arrange with his best friend and the hotel that while we were having dinner, to go into the room and leave gifts, Terry Bradly Art, ‘She said yes’ balloons and a scrapbook reading ‘From saying yes to saying we do’. After dinner we went to the roof top cocktail bar and that’s where Dale got on one knee and proposed.

What dress did you wear and where did you get it?

My wedding dress was purchased in a local bridal shop in Newtownards, Co Down – Now and Forever Bridal. Karen was absolutely amazing. The dress was designed by Millie May Bridal.

And the accessories?

My shoes were from Aldo, necklace and earrings were from Pandora, the hair piece from Now and Forever Bridal and a bracelet Dale had bought me as a surprise for the morning of the wedding from Cartier.

What did the groom wear?

Dale wore grey corded chino trousers with a white shirt and yellow dickie bow and black and yellow check braces. His shoes were grey brogues, and I bought him a Tag Heuer watch to wear on the day. The whole outfit was from Focus Menswear in Bangor Co Down.

How did you feel when you saw him as you were walking down the aisle?

Excited and emotional but couldn’t wait to become his wife. We had been planning the day for two years and it was finally here, and we got to celebrate in front of all our loved ones who travelled with us to Cyprus.

Who were your bridesmaids and where were their dresses from?

My bridesmaids were my two Sisters and Dale’s niece. All three wore dresses from Wed to Be in Belfast and all three wore different styles. Their shoes were silver glitter sandal from Next. The flowergirl was also Dale’s niece, and her dress was from Next and her shoes were also silver glitter sandals from Next.

How did you choose your venue?

With getting engage during Covid, we decided we wanted to get married abroad. We both agreed on Cyprus even though we had never been. We were watching lots of wedding videos on Youtube and came across Liopetro wedding venue and completely fell in love with it. We booked it before we even went out to Paphos to see it!

Did you have a wedding planner?

Yes, the best – Planet Weddings – Mathilde Robert and Carol Walker.

Did you have a specific wedding theme and how did you create it?

Our wedding theme was very pale grey and yellow, and the flowers were sunflowers. Sunflowers were the main theme of the wedding, table décor was based around this

as well as the table setting and display for table names etc.

What was the highlight of your day?

Highlight of the day was getting to marry each other and committing to forever in front of all our friends and family.

What was your best buy?

Best buy for the wedding was polaroid cameras and a scrapbook. Everyone was able to take selfies on the day and the kids loved snapping up pictures of everyone, which we have to look back on. It was lovely to read all the funny comments with the photos in the book after the wedding.

Do you have any saving tips?

Do what you can yourself. You can buy so many things on the internet for cheap and make them what you want them to be. Get a wedding planner when getting married abroad as they are able to communicate with the suppliers and make sure you are not getting overcharged etc. Don’t overdo it on the small things as you don’t even remember them on the day of the wedding.

How did he propose?

He chartered a helicopter from the north of New Zealand, then flew us to a beautiful vantage point on the top of a mountain overlooking the sea where he proposed. Then we did a helicopter winery tour around three beautiful vineyards in the upper north island of New Zealand.

What dress did you wear and where did you get it?

I wore a dress from Pronovias. I chose the dress almost a week before the wedding! We bought it in Florence in Sogno di Sposa salon. They were very helpful with tailored additions to the dress.

And the accessories?

My accessories were Jimmy Choo shoes, and our rings were designed based on our preferences and handmade by Gary Meadon in Auckland New Zealand.

What did the groom wear?

The groom wore a tailored suit, handmade in Thailand, Ortigni handmade Italian leather shoes and belt.

How did you feel when you saw him as you were walking down the aisle?

I felt nervous before the ceremony, but happy. I felt like it’s an important moment in my life, very emotional and sentimental. Dave felt nervous and excited!

Who were your bridesmaids and where were their dresses from?

We didn’t have bridesmaids, it was an intimate wedding

for 20 people. Due to the war in Ukraine, my family couldn’t come, but I had my husband’s family and our closest friends, who came from all different countries: France, Australia, Ukraine, England, New Zealand and Austria.

Where did you get married?

We got married in Italy, Cortona, in a beautiful villa Relais la Corte dei Papi.

How did you decide upon a venue and why did you choose it?

It’s a beautiful place and it had a good reputation, we were told the service and food was good. Also they have a beautiful dining area, which made the wedding day very special. We both love Italy – Dave worked as a head chef in Sienna, so Tuscany is very special to both of us. We didn’t regret choosing this villa, it was one of the best decisions.

Did you have a wedding planner?

Yes we did, Feel & Create Italy. They were very helpful throughout the process. We had only three months to plan and they were very thoughtful and quick to respond with our ideas. Lovely people to deal with.

Did you have a specific wedding theme and how did you create it?

For the wedding theme we wanted to create a festive family atmosphere. I sent lots of ideas to my wedding planner, we were very involved in every aspect of our

wedding, being thoughtful about our guests as much as we could. We wanted to mix traditions, with lots of food, drinks and music.

What was the highlight of your day?

It’s hard to say about one highlight because the whole day was very special - from breakfast together, the ceremony, the champagne tower and dinner together.

What was your best buy?

The best buy was the wedding rings. We also bought handmade robes for our breakfast together with Mr and Mrs on them.

Do you have any saving tips?

Flowers are very expensive, you should use more candles instead. At the end of the day, you don’t want to overdo it – you don’t need a photobooth, candy bar and extra lights. If you have too much stuff it can feel cluttered!

The Devonshire Arms Hotel & Spa was built in the 17th century and came under the ownership of the 4th Duke of Devonshire in 1753 as part of the Bolton Abbey Estate. It was the 5th Duke, though, who cemented its place in history. Realising the importance of visitors to the area, the Duke established miles of footpaths. This gave the public a chance to admire the splendid views and take in the serenity of the land. Word quickly spread. The area soon attracted poets and artists including Wordsworth and Turner, who

marvelled at the joys of the Estate.

In 1981, the hotel underwent a major refurbishment. Additional bedrooms were added, under the supervision of Her Grace the Dowager Duchess of Devonshire. The Duchess’s personal touch is still evident throughout. Much of the artwork has come from Chatsworth’s Devonshire Collection, one of the finest private art collections in Europe. The Devonshire Fell Hotel is situated in Burnsall, offering breathtaking views of the Yorkshire Dales National Park. He returned to his home county of Yorkshire where he used his new-found wealth to build Burnsall’s school building and restore the 13th century Church of St Wilfrid.

The Devonshire Fell itself was built as a gentlemen’s club, but quickly evolved into a hotel. It was taken over by the Bolton Abbey Estate in 1999, and restored by the current Duchess of Devonshire.
