It soon became apparent how good it made people feel, putting their memories on paper. This sketch of York Minster was a special commission and I really enjoyed highlighting the details to capture the magnitude of this international landmark.”

Summer is now upon us and a host of exciting new businesses are popping up across the city to help us make the most of it. If the warmer weather has inspired you to get active, York’s newest sportswear shop, INOV8, is the place to go. INOV8 doesn’t just sell clothes and accessories, it also has its own community with a café where you can take part in yoga classes, listen to talks or meet with friends for a post-run coffee. If you feel like you’ve earned an even bigger treat, York has just become home to two great new dessert
shops. Amorino on Parliament Street sells Instagrammable Italian gelato that’s creatively sculpted to look like a rose, while Savvy Baker will soon open on Swinegate, bringing with it the delicious brownies and blondies that have been causing a buzz in Leeds. Located on The Shambles, the academy will initially be open on weekends and over the school holidays.

The Savvy Baker
Remember during lockdown when everyone was making banana bread? Then most people, pretty quickly, stopped making banana bread. Maybe because it was a phase but mainly because we were all bad at making banana bread. But what if we weren’t? What if we tried it once and it was really good? This is the story of what happened to that person…
Savannah had given baking a go for the first time in her life and it turned out she was very good at it. So she tried baking some more stuff: cookies and brownies and they were great too. This new found hobby created a surplus of food for just Savannah to eat, so she packaged up her bakes and dropped them off at some friends’ houses. Impressed, her friends shared their treats on social media, and a few Instagram stories later, word had got around.
Before long, people started asking Savannah if she would bake for them, so she made some more; she loved baking, so she kept going. By Easter 2021, Savannah was employing friends to help meet the demand, as people queued along Street Lane in Leeds for a taste of these delicious brownies. What was never intended as a business had no option but to become The Savvy Baker.
Now, four years on from that first bake, The Savvy Baker has continued to grow organically and impressively; they have a large warehouse to make from and a Leeds cafe on Lidgett Lane to eat from; they’ve had multiple popups, including at the White Rose Centre and at Christmas Markets; their brownies are stocked at Elland Road for Leeds United home matches; and excitingly, The Savvy Baker are opening a new shop in York in June this year.
Located on Swinegate, York will be treated to the best of The Savvy Baker - brownies, blondies, cookies, ice-cream sandwiches, evolving lines and seasonal flavours - whilst adding a personal touch unique for York. This includes a revamped drinks menu, featuring beautiful looking and gorgeous tasting creations such as raspberry iced matchas, flavoured iced coffees, sweet foams, plus high quality classics. The concept is to takeaway your brownies and drinks, though there will also be some comfy seating in this inviting space.
After a rapid rise from lockdown novice to master baker, the Savannah story is one of community, passion, skill and scrumptiousness - and the next chapter in York is sure to continue warming hearts, inspiring souls, and tickling tastebuds. For York to get a taste of what Leeds has loved about The Savvy Baker, getting on down to Swinegate from June would be very savvy.
Swimming Up Stream
For five years, Fish&Forest have been feeding the mouths and souls of York with food that is both impressively unique and comfortingly familiar. Setting up as York’s only independent fresh fish restaurant, Stephen Andrews also had a love for game; so, as well as the sea, he decided to also bring the forest to the city. The whole thing fit together harmoniously with Stephen’s overriding ethos of seasonal and sustainable, and as Fish&Forest now expand into new premises, it’s clear that York agrees.
The story started in Spark, where Stephen was welcomed to make street food versions of his cooking from a unit there. It was popular, but Fish&Forest was always designed for restaurant plates, so when the Gillygate pub offered him their kitchen and dining space, Stephen gratefully accepted. From there to a restaurant of his own on Mickelgate, within two years of opening, Fish&Forest were recognised in the Michelin Guide as one of York’s finest places to eat.
Now, Fish&Forest evolves again. An exciting move to Grape Lane, into the former home of 1331, sees the handsome venue become the bigger, even better Fish&Forest. Here, the much-loved feel of the original remains, of a relaxed and friendly bistro serving delicious fine dining dishes, whilst the menu develops and the experience progresses. There’ll be space for a drink at the bar before and flexibility for shared small plates, alongside the ever-changing fresh seasonal fish and game favourites written enticingly on the blackboard. Plus of course, more space means more opportunity for more people to enjoy it.
Better still, their old venue will become their fabulous new bar, Notes. Notes is a mixture of all the things they are passionate about: music, storytelling, food, culture, wine and beer. It’ll be a place to come and chill away from the hustle and bustle of the city centre. Much like Fish&Forest, Notes is elevated comfort and inclusive elegance. And together with Fish&Forest, they are hitting all the right notes.

This brasserie-style restaurant sits on the banks of the River Ouse and you can watch the passing boats as you dine on its terrace. The Star brings 'a taste of the countryside to the city' with seasonal offerings like a Brew York beer battered fish fritter or hay-baked celeriac with torched Yorkshire Fettle and pickled walnut.
If you'd like to tuck into sushi while admiring a bird's eye view of the city, Sora is the place to head. This Pan-Asian restaurant inhabits the rooftop terrace on the seventh floor of Malmaison York and its menu features mix and match small plates, which can be paired with signature cocktails.

This two AA Rosette-awarded hotel once housed judges presiding over criminal trials at the assize courts, so it's no surprise that it’s bursting with history and character. WHAT’S GOING ON
In the last issue, we revealed how researchers at the University of York are leading the way with their Institute for Safe Autonomy. However, there are many other challenges for modern cities to navigate, and when it comes to sustainable transport York is once again proving itself to be streets ahead. The City of York Council is supporting First Bus in its drive to make its fleet fully electric by 2035. So far, their partnership has made York home to both the UK’s biggest electric Park and Ride and the first fully electric bus depot outside of London.
INTERNATIONAL TATTOO CONVENTION COMES TO YORK
Whether you’re a longtime fan of body art or considering your first inking, York’s upcoming International Tattoo Convention will provide lots of inspiration as you watch some of the country’s best tattoo artists at work. Held in June at the New Earswick Club, the convention will also feature body modification and piercing, alongside food stalls and live music.
For those who prefer a more exhilarating way to travel, the Yorkshire coast is calling. Scarborough is getting its own giant zip wire, and those who dare will soon be able to make a thrilling journey across the North Bay, taking in magnificent sea views as they zip along.
Finally, if you’re currently hooked on the third season of Bridgerton, City Cruises has a special treat in store. In June, you can experience the magic of the Ouse by night as you listen to a live performance of the show’s soundtrack on a Bridgerton-themed candlelit cruise.
CITY IS ONE OF THE MOST EXPENSIVE FOR FIRST TIME BUYERS
A survey by Rightmove has revealed that York is the most expensive city in the north for those looking to get on the property ladder. It’s also the ninth most expensive in the UK, with a first home costing an average of £244,834, which equates to a monthly mortgage payment of around £908 based on a 35-year term.
JORVIK TURNS 40
On April 14th this year, one of York’s bestloved attractions marked a milestone birthday. When the Jorvik Viking Centre opened in 1984, there was nothing else quite like it. It might seem strange to describe a museum dedicated to life in the 10th century as being ahead of its time but Jorvik was a first: not only because it featured a ride, but also because it used archaeological evidence found on site to recreate the exact same spot as it would have looked, sounded and smelt 1000 years ago.
In 1976, York Archaeological Trust persuaded the city’s council to allow an excavation on the land where Coppergate shopping centre was soon to be built. This unearthed traces of Viking buildings and the short dig they’d planned turned into one that lasted five years, covering 1000 square metres and revealing 40,000 artefacts. While the dig was taking place, passers by would often stop and watch through holes that had been cut in the hoardings. People were fascinated and the idea for a museum was born.
As further excavations have led to a better understanding of life in Viking York, Jorvik’s displays have evolved to reflect this. The centre has now been visited by more than 20 million people, though the last four decades haven’t passed without some tough times. Much of Jorvik ended up underwater during the Boxing Day floods of 2015. Thankfully, all of its artefacts were rescued but the ride had to be completely rebuilt and the centre remained closed for over a year.
To celebrate its 40th birthday, Jorvik is planning a series of lectures and talks. A new Viking trail is also being created around the city.
TWO AWARDS FOR POCKLINGTON PIE MAKER
A Pocklington-based pie maker is celebrating a double success at the British Pie Awards. Dan’s Pie Company scooped a silver award for their chicken and leek pie and a bronze for their steak and ale. The company’s owner, Dan Leaver, has been making pies for over a decade. He sells them online and from his stall on Pocklington’s Tuesday market.
UNIVERSITY DEVELOPS ALZHEIMER’S BLOOD
TEST
Researchers at the University of York are working on a blood test for Alzheimer’s that will use light-based technology to detect protein levels in a patient’s blood. It’s hoped that the test can eventually be used in a handheld finger prick device, which will offer a quick and cost-effective way of diagnosing the disease.
MEDIAEVAL ARTEFACTS FOUND ON QUEEN STREET
The demolition of Queen Street Bridge has provided an exciting archaeological opportunity, revealing part of the city that’s been hidden for nearly 150 years. Excavations by York Archaeology have unearthed Victorian ‘scoria’ bricks and mediaeval ditches containing broken pottery and animal bones. As work on the new road continues, it’s hoped more traces of the city’s past will be discovered.

The popular cafe’s owner, Sophie Knight, will take over the old motor house next to Skeldergate Bridge that’s currently occupied by Dyls. The new SOPHiE has an outdoor area that’s perfect for al fresco dining and will stay open into the evening.
SCARBOROUGH GETS GIANT ZIP WIRE
Plans have been approved for a 650m zip wire in Scarborough’s North Bay. The new attraction will be run by zip wire experience company ZipnZap and will feature four lines, offering the chance to enjoy an exhilarating ride alongside family and friends while taking in breathtaking sea views.
MEN’S CLUB TO HOUSE NEW ICE CREAM PARLOUR
St Lawrence Working Men’s Club on Lawrence Street could gain a new lease of life if plans are approved for part of it to be converted into an ice cream parlour. Situated at the front of the building on the ground floor, the new shop would offer the refreshing treat to eat in or take away.

If you’re a big fan of Shonda Rhimes’ Netflix drama, you can experience a magical night on the Ouse with a Bridgerton-inspired candlelit cruise. Hop aboard the exclusive City Cruise on 20th June and you can sip fizz and listen to live performances of music from the show as you sail through York by night.
YORK HAS UK’S BIGGEST ELECTRIC PARK AND RIDE
The city’s Park and Ride network now has an all-electric fleet of 33 buses, making it the largest in the UK. The achievement comes as part of a move to make York greener that has also seen the First Bus Depot on James Street become the first fully electric depot outside of London.
GIN SCHOOL AND DISTILLERY PLANS APPROVED
Two York businesses are coming together to open a new distillery, gin school and tasting experience on Skeldergate. York Drinks, which makes York Gin, will work with the Middletons Hotel to build the distillery on the site of a disused swimming pool at their Emperors Gym.
MONET’S WATER-LILY POND VISITS YORK
‘The Water-Lily Pond’, which was painted by Claude Monet in 1899, is currently on display at York Art Gallery in an exhibition to mark the 200th anniversary of the National Gallery. The famous painting and works by Monet’s early mentors can be seen until the 8th September alongside a new commission by contemporary painter Michaela Yearwood-Dan.

Spark to a Flame
It’s been six years since Spark was ignited in York; this unique arrival lit up the city with an independent space unlike anything else here. Inside the distinctive shipping containers on Piccadilly were an eclectic collection of talented local businesses, offering food and drink, shopping and lifestyle, entertainment and culture. From then to now, the businesses have regularly changed, the venue has positively evolved, and Spark has fully grown - but the essence and ethos, of community, quality, diversity, creativity and inclusivity, always remains.
Founders Tom McKenzie and Sam Leach had sparked their idea into existence at the ages of just 22 and 23. What they lacked in experience, they more than made up for in enthusiasm and determination. After two years raising funds, building it physically and attracting traders, the pair’s enormous efforts were rewarded when Spark opened to a summer of sunshine and immediate success. When the sun went down, Tom and Sam refocused to establish Spark as York’s standout independent venue.
What started as an open air site soon had a roof to trade through all seasons, and new traders were keen to join. Indeed, part of Spark’s appeal is the comings and goings of different start-up businesses, a static space for an everchanging cast of new talent, who join the community, receive collective support, and often go on to great things. From the original units, fried chicken champions Clucking Oinks are still at Spark and last year opened their first restaurant on Castlegate. Donner Summer joined early too, and now serve their popular vegan junk food from sites on Gillygate and in Leeds. Others that have been given their first opportunity by Spark and have risen or are rising to York favourites include: Tasca Frango, Vi Coffee, Flori Bakery, Fish & Forest, Ossie Studio and Baby Boy Burgers.
Whilst food and drink is a big part of Spark, Tom and Sam are proud to have lots more going on here too. As a multiuse event space, they’ve hosted all sorts of different things over the years; from wellbeing days and co-working spaces to artist residencies and DJ nights, the vibe is fittingly positive and progressive. It is this authentic character which has created Spark’s place as an important piece of York; one that’s sympathetic to the city’s rich history, whilst offering a modern vibrancy for everybody to enjoy.
Determined to honour authentic Portuguese flavours and emulate the comfort and joy of a Portuguese tavern, Spark gave us the perfect opportunity to figure out whether our piri-piri chicken was something that the people of York were missing! Working alongside other independent businesses gave us a great insight into the world of hospitality, and allowed us to learn from our mistakes, without too much initial risk. You only have to walk around York to see the impact Spark has had on helping independent businesses to expand their start-ups. There is a great community that York needs to keep flying the independent flag!

We've been here with Baby Boy Burgers for four months, although personally I joined Spark in 2020. Having my own business is all very new to me - I love that it gives me a creative freedom. Spark is a really good space as a trial run of a business before looking to get a permanent site. It’s got that stability and I've always had the help from Tom and Sam. It has a real community vibe which provides independent businesses with a great platform to start and learn from.
vi means “us”. It means our connection with people through food and drink. We source and serve ever-changing seasonal coffees, natural wines, cured Yorkshire meats, and more. Simple offerings, done well. I’ve been a fan of Spark since its conception and it’s been a delight to watch them grow. They have helped vi to no end, offering support in a multitude of areas. Flori is a little neighbourhood bakery. Our all girl team are passionate bakers and growers, hand making croissants and growing seasonal fruit and flowers. Spark gave me an opportunity to open a 20ft bakery, and soon I began to build a lovely bakery community. It offered a route that would not be available or affordable without this opportunity. Spark gives young businesses a home, a platform to try out your dreams and ideas.

Ossie Studio is a self care space where people can enjoy treatments and fitness classes in a relaxed modern environment. Behind the scenes, Ossie is a hub for self-employed women, who can come and run their businesses from our space and collectively share our beautiful community. Spark allowed us to kick things off in York city centre without having to commit to traditional commercial property. They have always trusted us with whatever ideas and events we’ve wanted to do; they’ll guide if you want that but are also happy to let you do things your own way. Spark has been the starter home for so many thriving businesses, and without it York would be a very different place. It makes me proud to be part of the Spark legacy.

Fish&Forest is a relaxed neighbourhood bistro offering unique fish and game dishes. We have a fine dining attitude with a casual bistro vibe. Spark have given spaces to some of York’s favourite new places, and whilst I was there I found Tom and Sam very supportive in my ideas. They allowed me to have a space to explore my creativity of what I wanted Fish&Forest to be. They allowed the brand to grow organically and they nurtured the business to help it thrive.
