FINDING THE PERFECT CUP OF COFFEE ISN’T ALWAYS EASY, UNTIL YOU STEP FOOT INTO CARTWHEEL COFFEE... Independent coffee shops can be risky, but they can also surprise you when it comes to exploring new flavours – just like Cartwheel surprised us! This café and roastery have managed to create the perfect coffee-food balance by producing a highquality menu alongside their great varieties of coffee.

CARTWHEEL CAFÉ & ROASTERY Expect the unexpected at Cartwheel with their hand-picked menu, offering a plethora of fresh, vegan and vegetarian dishes.

One of their most popular dishes is their avocado on toast, however recently they’ve taken a new twist on this with their smashed pea, broccoli and eggs on toast – hap-pea days! During our visit we had the beetroot and celeriac soup with sourdough bread, so delightful and full of flavour – who wouldn’t love purple soup! Coming up next was the vegan special, consisting of roasted cauliflower, chickpeas, sun blushed tomatoes and crispy potato hash with lime and black pepper hummous, if that doesn’t sound amazing, I don’t know what does!

These ingredients combined, created the most flavoursome option, not only for vegans!

Next, we enjoyed a classic with a twist, a homemade sausage sandwich accompanied by Somerset brie, red onion marmalade on a rosemary focaccia from Welbeck Bakehouse with their crispy paprika potato-hash sides. The Somerset brie paired with the sausage patty was revolutionary! We enjoyed speaking to Alex, who took us through the thought process behind this independent coffee shop.

CHRISTMAS CRACK

HERE’S MY FAB CHRISTMAS CRACK RECIPE MADE WITH LAYERS OF CHOCOLATE, TOFFEE & M&M’S. YOU CAN USE SALTINES, TUC OR RITZ CRACKERS TO MAKE THIS FESTIVE CANDY FOR THE HOLIDAYS. 1. Pre-heat the oven to 180c/350f. 2. Lay the crackers on a 15-inch baking tray lined with greaseproof or parchment paper.

3. Melt the butter in a saucepan then add the sugar. Stir and bring up to a simmer.

4. Simmer whilst stirring continuously for 5 minutes. 5. Spread the toffee evenly over the crackers then bake in the oven for 5 minutes. Then leave to cool.

6. Melt the dark chocolate in a saucepan or microwave and spread it over the toffee crackers.

7. Sprinkle over the M&M’s and drizzle over melted white chocolate. 8. Leave in the fridge for at least 1 hour to set. Then crack into 30 pieces and enjoy.

SERVES: 30 | PREP TIME: 20 MINUTES COOKING TIME: 15 MINUTES. 180 CALORIES & 11.3G FAT PER SERVING.

INGREDIENTS • 1 PACK OF SALTINES, RITZ OR TUC CRACKERS (APPROX. 150G) • 225G BUTTER • 220G LIGHT BROWN SUGAR

• 240G DARK COOKING CHOCOLATE • 20G WHITE COOKING CHOCOLATE • 60G SMASHED M&MS

EASY FUDGE MY EASY FUDGE RECIPE IS MADE WITH SWEETENED CONDENSED MILK, BROWN SUGAR & BUTTER. IT’S QUICK AND EASY TO PREPARE AND PERFECT TO GIFT AT CHRISTMAS. 1. Add all the ingredients to a saucepan. 2. Stir over a low heat until the butter has melted and sugar has dissolved. 3. Bring to a gentle simmer and simmer for 15 minutes whilst stirring continuously.

4. Drop a small amount of the fudge in cold water. Remove from the water and If you’re able to form a ball with it, then it’s ready.

5. Remove the saucepan from the heat and pour the fudge into a dish lined with greaseproof or parchment paper.

6. Spread evenly so it’s of equal thickness then leave in the fridge for at least 1 hour.

7. Cut the fudge into 25 squares and enjoy! INGREDIENTS • 1 TIN (397G) SWEETENED CONDENSED MILK • 100G BUTTER

• 400G LIGHT BROWN SUGAR • 1 TBSP GOLDEN SYRUP

CREAMY OATMEAL WITH FIGS THE NIGHTS ARE STARTING TO DRAW IN, THE AUTUMNAL CHILL IS IN THE AIR, WHICH USUALLY RESULTS IN CRAVING WARM AND COMFORTING FOOD. I’M SHARING MY FAVOURITE AUTUMNAL RECIPES TO MAKE THE MOST OF SEASONAL FRUIT AND VEG 1. Add the stone ground oats and water in a pan and heat gently,

HEARTY VEG BUTTERNUT CURRY NOTTINGHAM HAS SO MANY INDEPENDENT GREENGROCERS AND MARKETS TO PICK UP SEASONAL FRUIT AND VEG. MY FAVOURITES ARE THE FRUIT BASKET IN WEST BRIDGFORD, SLADE ON MELTON ROAD AND THE FRUIT BOWL IN MAPPERLEY 1. Heat the dried spices and seeds in a pan for around 60 seconds then add 1 tbsp coconut oil with the finely chopped onion and fry until softened.

2. Add the finely chopped chilli to the pan then after a few minutes add the minced garlic & cook for a further 60 seconds.

3. Add the chopped and the pre cooked butternut to the pan and allow to infuse

5. Steam or boil the rice then serve up in a bowl topping with coconut yogurt,

CHRISTMAS PUDDING SOUFFLÉ WE’RE GOING TO TAKE A LOOK AT THOSE PRE/POST-CHRISTMAS DINNER PARTY FOR YOUR FRIENDS AND DROP A COUPLE OF SHOW STOPPING DESSERTS. FIRST UP IS A CHRISTMAS PUDDING SOUFFLÉ. DON’T BE SCARED OF THIS – IT'S THE EASIEST DESSERT YOU’LL MAKE THIS YEAR, AND ONE GUARANTEED TO IMPRESS! SERVE WITH SOME SHOP BOUGHT ICE CREAM. Soufflé Base:

1. Reduce puree by half. 2. Mix cornflour and brandy, add to purée and cook till thick. 3. Boil sugar and water to 121 degrees celsius, add to purée. 4. Cool and then place in blender till smooth and glossy. Egg Whites:

5. Whisk egg whites gradually adding sugar till peaky. 6. Fold ¼ into purée mix. 7. Fold rest in gently – taking care not to knock out air. 8. Butter soufflé moulds, and line with brown sugar. 9. Put mix in soufflé moulds and bake at 175 degrees for 10 mins approx. 10. Serve with balls of Daltons Brandy Butter ice cream.

INGREDIENTS • 800G CHRISTMAS PUDDING • 1000G MILK • 3 TSP CORNFLOUR

• 100G BRANDY • 300G EGG WHITE • 150G SUGAR

BAKED ALASKA SECOND UP, BAKED ALASKA. A TRUE MIRACLE OF SCIENCE – COLD ICE CREAM, FRESH OUT OF THE OVEN, SET AGAINST A BACKDROP OF WARM MERINGUE, REMINISCENT OF SNOW DRIFTS AND WHITE CHRISTMASES PAST AND PRESENT. Pistachio ice cream:

1. 10 balls ice cream, place in freezer to firm up. Meringue:

NETWORKING ETIQUETTE AS MY JOB FOR THE LAST TEN YEARS HAS INVOLVED. CONNECTING PEOPLE IN BUSINESS, I AM OFTEN ASKED ALL KINDS OF QUESTIONS SURROUNDING THE WONDERFUL WORLD OF NETWORKING AND I'VE COME ACROSS EVERYTHING THERE IS TO SEE; MANY OF WHICH ARE SUPER SIMPLE THINGS THAT ARE SO OFTEN AVOIDABLE, SO HERE ARE A FEW BASIC, SOME MAY SAY OBVIOUS THINGS SO EASILY FORGOTTEN... 1. Always stand when being introduced- If you

are sat down at a meeting or round table event and are approached by someone- As we all know first impressions really count, so present yourself in a strong, secure manner and have the courtesy to stand when someone offers their hand or introduces themselves to you, make eye contact, make the hand shake firm and with purpose, plus a smile goes a long way.

2. Watch your language- No one likes a potty mouth, especially when in a business environment, so no matter how well you find yourself 'clicking' with someone, reserve your relaxed language for when around your friends and family- again first impressions really count and you don't want to appear unprofessional- remember you are representing your brand/business. 22 | IN Nottingham | Christmas 18

3. Be clear- State your name clearly when introducing yourself, make eye contact when speaking with someone directly and don't make it difficult for the person on the receiving end to understand or hear you. Know how to respond confidently when asked what line of work you are in - Be memorable. 4. Be brief- Practise your 'elevator pitch' before attending a network event- in other words prepare your introduction and keep it brief and intriguing. Many people panic when asked 'what do you do' and this opens the gateway for a whole load of waffle, leaving the person on the receiving end no option but to switch off, whilst nodding politely looking for the nearest escape route- Practise makes perfect. 5. Hide your phone- Looking at ones phone whilst

talking to someone is deemed exceptionally bad manners, in particular whilst networking, so keep it in your pocket and if it needs answering urgently, excuse yourself from the conversation politely and take the call somewhere private. I recently had a conversation with a guy who proceeded to look at his phone the entire time he was having a conversation with me, which lead me to stare at his phone quite obviously to point out his rudeness, making him aware of my annoyancehis phone very quickly went in his pocket and an apology soon followed, so don't be afraid to educate those along the way who may need a little help in etiquette!

6. Don't interrupt- These may seem like really

basic things, but many people; even in adulthood haven't yet grasped the art of listening and as Stephen. R. Covey once said- " Most people do not listen with the intent to understand; they listen with the intent to reply"- so stay one step ahead of 'most' people.

7. Don't force yourself onto people- Sounds seedy right? Though this is one I get asked about regularly- it's quite easy to see a group of people in conversation and want to be a part of it, but when it comes down to it- how do you access the group without seeming rude? My advice- hover near the group making eye contact with at least one of them and hopefully they will acknowledge you in time and welcome you into the group naturally, without you having to stop the flow of conversation abruptly looking like a plonker in the process. 8. Stay positive- No one likes a grump, so in conversation leave out negative stories and tales of self pity, instead focus on what is great about your business right now and encourage the person you are engaging with to do the same-pay a compliment- the moment you do this, you will see the atmosphere of the conversation switch and it will make the experience more memorable for them and you. In summary think about the things that annoy you when out networking and make sure you don't do any of those things yourself- it really does starts with you - Happy Networking!

DECK THE HALLS & FILL YOUR CHRISTMAS STOCKINGS! WE ALL KNOW THAT ALTHOUGH IT ONLY COMES ONCE A YEAR, CHRISTMAS CAN BE A PRET TY STRESSFUL TIME. NOT ONLY THINKING WHAT TO BUY THAT PERSON WHO HAS ABSOLUTELY EVERY THING, BUT FINDING THE TIME TO DECORATE YOUR HOUSE AND OUTDOOR SPACE CAN BE HARD WORK AND THAT'S ALL BEFORE YOU BEGIN PLANNING THE CHRISTMAS DINNER!

Here are a few ideas which may make your Christmas preparations a little easier… Bring your Christmas decorations up to date by adding a few key pieces - to create a bang on trend industrial look, use stripped back wood and smooth concrete and add a splash of depth and colour using copper and brass.

Of course nothing says Christmas like glitter! If you’re after a bit of luxury you can never go wrong with twinkly beaded glass baubles, extravagant sparkly garlands and stunning metallic creatures!

Try a rustic wire moose head for the wall, wrapped in string lights which add a bit of Christmas sparkle, or a bronzed metal pheasant beside your fireplace.

Add a little va va voom to your decorations this year with sparkly details that really catch the light and stand out on your tree.

For your garden, how about a rustic wicker reindeer, or if you don’t have much space, then try a deer head on an outside door or wall.

But it doesn’t have to stop there - wrap champagne garlands around banisters or drape on the mantlepiece. Don’t forget your outdoor space - a simple stunning outdoor twinkling tree just adds the finishing touch.

If the industrial style isn’t your thing and you just want to feel that nostalgic Christmas glow, then delightful decorations will help to evoke that sense of excitement. Felt tree decorations in the shape of mice, dogs or foxes, and traditional decorations such as tin Santas and retro Christmas camper vans help make your Christmas tree look very cosy indeed.

CHRISTMAS IS COMING! IT’S THE MOST WONDERFUL TIME OF THE YEAR…. WE ALL SEEM TO BE SAYING THE SAME THING AT THIS TIME OF YEAR, “I DON’T KNOW WHERE THE TIME’S GONE?” AND IT’S TRUE, THE FESTIVE SEASON DOES SEEM TO CREEP UP ON US EVERY YEAR.

Truly my favourite time, Christmas is when we like to adorn our homes with beautiful decorations and no matter what your style is, Christmas should bring a real cosy warmth into your home at the time when the weather is providing just the opposite! A good idea when planning your decorations for the festivities is to try and keep to a concept or scheme. A little like planning any room decoration, a plan should help to ensure that the end result is a resounding success!

A much-loved theme and one which will never date is the ‘traditional’ Christmas of reds, greens and golds. This will always have a place in any home and simply due to the colours, will immediately bring the comfy, fireside feeling that we all enjoy. As most of us are spending more time indoors at the moment, it’s also an opportunity to really personalise your style and get crafty.

Home-made decorations are still a big hit and the one thing this will guarantee, is that your home or gifts have a really bespoke feel – you can’t beat a little creativity! This year I have chosen a brand new ‘sparkly’ look for Christmas and it will sit beautifully in any home within any style. ‘Fairytale Frost’ is a look full of feathers, glitter, glass and glamour. Metallics, teamed with plenty of shimmering fairylights and the magic of Christmas is easily brought into your home. Once the decorations are hung and the gifts have been wrapped, the attention will turn to the Christmas table.

My choice this year is simple and stylish whilst adding a few little metallic elements to carry through my concept. A collection of candles set in votives and jars offer an ambience and creates an atmosphere fit for a feast! Simple glassware which will catch the light and a few of the tree decorations scattered around the place settings complete the look seamlessly.
