BRAISED BEEF CHEEK

INGREDIENTS FOR THE BEEF MARINADE • 2 BEEF CHEEKS, SILVER SKIN & SINEW TRIMMED, CUT EACH CHEEK INTO 2 PIECES • 700ML MALBEC RED WINE • 2 SPRIGS THYME • 2 SPRIGS ROSEMARY • 6 FRESH BAY LEAF • 6 CLOVES GARLIC • 12 WHOLE BLACK PEPPERCORNS • 1TSP DEMERARA SUGAR FOR THE SAUCE • 1L REDUCED CHICKEN STOCK • SPLASH OF VEG OIL FOR SEALING THE BEEF CHEEKS
FOR THE MASH • 500G MARIS PIPER POTATOES PEELED & CUT INTO EVEN CHUNKS • 75G UNSALTED BUTTER • 120ML DOUBLE CREAM • 4 SPRING ONIONS • CHOPPED FRESH PARSLEY FOR THE CARROT • 2 MEDIUM-SIZED CARROTS PEELED & CUT INTO HALF-LENGTH WAYS • 2 TSPS HONEY • 25G UNSALTED BUTTER • FRESH THYME
1. Place all the marinade ingredients together
in a plastic tub add the beef cheeks and leave to marinate overnight.
2.Take the beef cheeks out of the marinade, pat
dry and seal the cheeks in a hot frying pan with the vegetable oil until coloured on all sides.
Add the marinade liquor & reduce by half, then add X 14inCHIPS AWAY:Layout 1 to 28/10/2013 12:05with Page the stock, bring gently a simmer cover a 1 lid & braise for 3 hours until the cheeks are tender. Take the cheeks out of the cooking sauce and keep in a warm place ready to serve, reduce the sauce to a thick glossy glaze and set aside.

3.Half way through the cheeks cooking place your potatoes into a pan cover with water, ½ teaspoon salt & gently simmer for 20-30 minutes until the potatoes are cooked through. Drain and mash, add the cream, butter, spring onions & chopped parsley, taste to ensure the mash is correctly seasoned, keep warm ready to serve.
4.Once the potatoes are at a simmer, place the
carrots in a pan with the honey, butter & just cover the carrots with water, add a pinch of salt.
Pull the leaves from the thyme and set aside, and boil until the water has evaporated and the carrots are glazed.
5.To build the dish place the cheeks back in the
sauce to warm through, then place a piece of beef cheek onto each plate, spoon on the champ mash. Place the carrot onto the plate, scatter the thyme leaves over the carrot to garnish, spoon the reduced sauce over the cheek & drizzle with a little olive oil.

THE ABBEY, WELCOMING, UNASSUMING AND TUCKED AWAY ON MAPPERLEY TOP. As I arrived, I was met by Lina who I soon found out was a reflexology wizard. Not as yet a regular salon user but knowing I probably should be, and that you cannot expect your skin and youthful looks over time to stay the same, so I decided to start.

I was asked if I had any specific areas that I was concerned with, as the treatment can be utilised to work on problem areas, crow’s feet and jowls being the most usual areas people start to see ageing.

WEDDING FITNESS PREPARATION IF YOU HAVE BOOKED TO WALK DOWN THE AISLE THIS YEAR, FEELING FABULOUS AND IN SHAPE WILL MEAN A LOT TO YOU. AS THIS WILL BE A DAY THAT YOU WILL LOOK BACK ON IN YEARS TO COME. Getting in shape for your day shouldn’t be a dreary and bleak process. Along with everything else you will have to think about; your training should be one less thing to worry about. By scheduling your sessions and planning your meals ahead, the rest should come easy.
START SOONER RATHER THAN LATER Whether you are new to training or you are giving your current regime a new lease of life, set aside a minimum of 12 weeks to shape up. Bear in mind, how much time you need will depend on your initial starting point and ideal body composition goal.
EAT BETTER, NOT LESS! You may need to change your eating habits, as making healthier choices is the key to obtaining the results you want. Eating a variety of wholesome foods can help you to obtain enough vital nutrients; these include protein, essential good fats, carbohydrates and vegetables.
Instead of being fixated on achieving a certain scale weight by the wedding date, see this as a fresh start. Use this time to work towards becoming a healthier you.
Cut out processed foods, sugars, and replace the high-glycaemic index foods such as white rice and white bread with brown rice, sweet potatoes and quinoa (more effective at keeping your blood sugar stable).
THERE’S NO QUICK FIX
The main thing is to focus on improving your whole-body health by making healthy food choices instead of food deprivation. Finally, always stay hydrated and keep your water intake between 2-3 litres a day.
Let this be a word of warning, this shouldn’t be something you tackle as a quick fix. No starvation diet or crash diet will help you reach your goal any faster. With its bold use of orchestral colour, inventive rhythms and melodies and dramatic contours, Haydn depicts the creation story in an artistic, and sometimes operatic style. Started at the age of 65 and taking two years to complete, the work was considered the supreme achievement. It is a work of great love and faith, with the composer reflecting that he was 'never so devout' as during the time he was writing it.

The Nottingham Wedding Fayre at Notts County Football Club will take place from 11:00am - 4:00pm. The 1862 Suite at the Notts County Football Arena in Meadow Lane, Nottingham plays host to the big Nottingham Wedding Fayre, up to 40 wedding suppliers will be crammed into this really lovely "vanilla" wedding suite.
Set in 30 acres of tranquil parkland just beyond the Nottingham Water Sports Centre, Holme Pierrepont Hall is perhaps Nottingham’s best kept secret. The gardens are a delight in the Spring with magical displays of snowdrops, daffodils, tulips, aconites and hellebores. The family also have a passion for decorative early flowering shrubs and interesting topiary. The plant fair spills out on the lawns in front of the Hall and brings a mouth-watering selection of specialist plant growers from the North and Midlands offering a huge choice of herbaceous plants, shrubs with particular emphasis on colour and shape, climbers, lilies, herbs, heucheras, shade loving plants and ferns. Many of the nurseries are award winners from RHS shows and offer quality plants, which are not normally found in garden centres and other outlets. Entry to the fair, gardens and grounds is just £4.00 and parking is free. Refreshments are available throughout the day and dogs are welcome.

COUPLES ARE MAKING SURE THEIR CAKE STANDS OUT AS A TRUE CENTRE PIECE, REFLECTING THEIR RELATIONSHIP! Still unsure about your cake? We asked Philippa from Knot & Bird for some advice and guidance...
SEARCH FOR INSPIRATION Pinterest, Instagram, Facebook, and magazines. Absolutely anything can be a source of inspiration for your cake. My top tip is to keep a record of anything you see that you like.
WEDDING FAIRS Wedding fairs can be a great way to meet cake makers and other suppliers! They are a fantastic way of getting inspiration for your cake, spotting upcoming trends, and most importantly - tasting samples! All in a very low pressure environment. Samples are so important! Your cake needs to look amazing, but at the end of the day – it’s cake, so it’s got to taste great too! Most cake makers offer tasting sessions too, so you can choose some more flavours to try, and see what combinations work best for you.
TO TREND OR NOT TO TREND? Trends can guide you, but make sure you stay true to your own style. It’s your big day, and you’re the only one that needs to like the cake!
Show your collected images to help explain to your baker exactly what you’re looking for and come up with a unique design just for you – a picture is worth a thousand words after all!
Cake designers love tying your personality in with the design, a subtle nod to a hobby, a special moment between you and your partner, or even an inside joke can help make your cake truly special to you.
EXTRA TIP Create a specific wedding email address to give out to suppliers, that way you can speak to as many exhibitors as possible without worrying about clogging up your regular inbox, or missing crucial e-mails about availability. ASK THE RIGHT QUESTIONS There might well be “no such thing as a wrong question” but there are definitely ‘right’ questions, or rather, the right information to provide. Asking your baker “how much for a cake?” isn’t going to get you very far along the design process.

But if not, don’t worry, it’s much better to make sure you pick something you truly love.

However, do bear in mind that cake makers are a proud bunch, and nobody wants to steal someone else’s hard work - many bakers won’t recreate another cake maker’s cake exactly, but they’ll happily use it for inspiration.
You need to tell them your wedding date, how many guests you’re expecting, any flavours or themes you have in mind, and any dietary requirements or allergies.
If, you love rose gold, or geometrics or flamingos, or whatever else happens to be on trend right now, then perfect!

Usually one colour is the main focus with one or more other colours coming in to complement this. Make sure to consider existing colours in the venue and if these need to be taken into consideration when choosing your colour scheme.
HOW MUCH IS TOO MUCH? Too much is putting you into a huge amount of debt as you begin your married life. Everyone has a budget, everyone has an idea of what they want. You want all the bells and whistles it will cost more but with hire it can work out cheaper.
WHAT ARE SOME SIMPLE WAYS FOR PEOPLE TO EXPRESS THEMSELVES ON THEIR WEDDING DAY? Make sure both think about what you really want on the day and pick perhaps one thing that you will not budge on! Whether this is Lego figurines in your table centres, a travel inspired seating plan, or photos of lost loved ones, do what you want to represent you as a couple, not what you think your guests expect. Some think they need to stick to a theme or a strict colour scheme, which is fine as it helps you stay on track, whereas others like to include lots of individual personal elements which all work together to create a unique style which reflects them exactly.
DOES IT HAVE TO COST A LOT? Not necessarily, if you do not have much of a budget, think carefully about decor elements you think will really make an impact in your venue and perhaps leave the chargers and fancy cutlery.

It was after my own wedding in February 2018 that I decided it was time to follow my own dreams, and in that September, I launched Fiona Elizabeth Couture; designing and creating bespoke bridal wear for the unconventional bride. For me it’s so important for you to feel like YOU on your wedding day, whether that means wearing a colourful dress or perhaps a stunning bridal two piece skirt and top or even a jumpsuit. If you are considering having your wedding dress bespoke made, you will either have a really strong vision in your mind of what you are looking for, or you might have exhausted all of your local high street bridal shops and you just can’t find ‘the one’. They will get to know you like your best friend and will help and guide you on your journey to create your dream dress.

CREATE A MOOD BOARD Pinterest is a great tool for collating all of your inspiration to help you design your perfect wedding dress. Think outside the bridal box here, what is it that inspires you in life?
CONSIDER THE TIME FRAME Most designers will like to start anywhere from 6 to 12 months in advance of your wedding, allowing plenty of time for you to build that important relationship and develop your ideas, sourcing the perfect fabrics and allowing enough time for all the fittings you will need.
CONSIDER OTHER IMPORTANT FACTORS OF YOUR WEDDING DAY You may want to think about where are you getting married? How big is your chosen wedding venue? What time of year are you getting married? There are many factors that may influence the design of your wedding dress.

CHOOSING YOUR PHOTOGRAPHER SELECTING A WEDDING PHOTOGRAPHER IS ONE OF THE MOST DIFFICULT CHOICES YOU WILL HAVE TO MAKE IN THE RUN UP TO YOUR WEDDING. As you start to budget for your big day it can be tempting to try and cut costs by roping in a friend or family member who enjoys photography as a hobby to do the honours. Tempting as a freebie is, think carefully. After all, there are no do-overs. You're going to get married once, and you only have one shot to pick a photographer. You're spending a lot of money, and you're putting all your eggs in one basket without being able to see the final product in advance. Most professional photographers have years of experience and training under their belt and are therefore far more likely to do the job you pay them for well. I try to put myself in my clients' shoes when I am meeting with them to talk about their photography needs. When I chose my own wedding photographer, I reached out to a trusted and talented photographer whom I already knew well and it was still a little scary.
So I can imagine the fear and trepidation that couples must feel who are approaching completely unfamiliar photographers. So, from a photographer's point of view, I thought I'd share a few tips on making this huge decision. I know it may seem that I'm a little biased... pick me! pick me!... But I honestly don't think every bride out there is right for me or me for them. So how do you find the best wedding photographer for you? Three simple pieces of advice:
MAKE SURE THAT WHEN YOU VIEW THEIR PHOTOS, YOU FEEL SOMETHING You are hiring an artist with a specific eye and heart. They curate their portfolio to communicate their personal photography style and point of view. You want to resonate with how they see and capture the world around them - specifically relationships. And if you feel something when you look through their portfolio at a bunch of strangers' wedding photos, you are guaranteed to love your own photos all the more!
ASK TO VIEW AN ENTIRE WEDDING WORTH OF PHOTOS Any photographer can show you a slideshow of their best 50 photos they've ever shot and you will be impressed. But that won't give you a good sense for what your wedding photos will look like. You want to make sure they have good quality photos throughout the course of one entire wedding.
MAKE SURE YOU LIKE THEM AS A PERSON Whoever you pick to be your photographer is going to be around you and your family for many hours on the best day of your life. So you want to feel comfortable with them and most of all, be able to trust them. DERMAPLANING SINCE I HIT 30, I’VE NOTICED MY SKIN SEEMS TO HAVE LOST ITS NATURAL GLOW AND MY “PEACH FUZZ” HAS INCREASED AND NO MATTER HOW MANY FACEMASKS, SCRUBS AND PEELS, MY SKIN NEVER FEELS FRESH OR SMOOTH. PLUS MY MAKEUP DOESN’T SEEM TO LOOK AS FLAWLESS AS I WOULD LIKE ANYMORE. Usually I tend to stay away from “trending” treatments, such as Dermplaning, but I took the plunge and booked myself in. Dermaplaning is a really simple, highly effective and safe procedure using a surgical scalpel, to gently exfoliate (shave) away the top layer of dead skin cells, along with removing any fine vellus hair (peach fuzz) from the skin.
Adele offers 3 types of Dermaplaning treatments; “Simply”, “Enzyme” and “Ulitmate”.
TIME TO SEE THE RESULTS!
I had the “Enzyme” which seems to be a very popular option, especially for makeup lovers. The treatment is started with a double cleanse and skin prep, followed by the actual Dermaplaning treatment. Then a medical enzyme is then applied to help make the skin even smoother, which is amazing for makeup application! The treatment is then finished off with moisturiser and spf application.
Adele revealed what she removed from my face and OH MY GOD! For someone who cleanses and tries to look after her skin, I’m still in shock now of what was on the cotton pad! Then I looked in the mirror and my shock continued - my skin looked plumper, smoother and glowing!
After I had my double cleanse, I felt very relaxed and ready to have the Dermaplaning. As a surgical scalpel was involved, I was convinced I would feel it across my skin, but I didn’t feel a thing! When it came to the “Peach Fuzz” part, I could only slightly hear it being removed, but I still couldn’t feel anything. To say my whole face and neck was done, it didn’t take long at all and before I knew it the Enzyme treatment was being applied. It did tingle a little bit, but that’s normal, as it works into the skin to remove any deeper dead skin cells and smooths out the skin.
The entire face and neck is treated, accept for the eyebrows. There’s also a bonus of no downtime, so once the treatment is complete, you can continue with your daily activities. The procedure can be done every 4-6 weeks depending on the individual. I had my treatment with Adele Coxon, who is an award winning professional makeup artist, with qualifications in Microblading, Oilaplaning and Dermaplaning.

I didn’t wear any makeup until 3 days later, for an evening out and I was blown away of how flawless my foundation looked! I have a tiny bit of hair starting to come through, but it isn’t thicker or darker and my skin still looks smooth and radiant! Overall I highly recommend Dermaplaning by a professional. I’ll admit I was nervous, as in basic terms Dermaplaning is having your face shaved, but I knew I was in safe hand with Adele. She was so relaxed, professional and talked me through every little detail about the treatment. Tucked into a sympathetically restored, street level Victorian carriage house with lush, living walls, open kitchen and contemporary furnishings, is now one of the main attractions for any foodie in Nottingham.
The big winners on the night were the independent operators, scooping 13 of the 15 awards up for grabs. Alex Bond of Alchemilla picked up Best Newcomer, cementing his arrival on the Nottingham food and drink scene.

Alex’s pedigree – Restaurant Sat Bains and Auberge du Lac, certainly gave him an excellent platform, on which to launch his own success story and the Derby Road restaurant.

A Michelin star in the offing? - Well we certainly think so. Watch this space! The Aziz brothers, long time operators of Indian fine dining restaurants in Nottingham including MemSaab, picked up Best Independent Neighbourhood Venue for their latest venture, Masala Junction. Housed in the former Nat West Bank building on the junction of Hucknall Road and Mansfield Road, this contemporary eatery combines classic flavours with a taste of Kashmir and some imaginative presentation. A superb restaurant, well worth a try. World Service scooped Nottingham Restaurant of the Year and Best Service Team Awards. The restaurant has enjoyed somewhat of a resurgence under head chef, James Nicholas. 20 year old, Jack Pearce, also scooped the Best Young Talent, Back of House Award.
This Far Eastern inspired fine dining restaurant first opened its doors eighteen years ago and enjoys a very loyal clientele as well as staff. Owner, Dan Lindsay comments “The team has worked really hard to make World Service a truly great dining experience for everyone that comes through the doors. Picking up these awards is testimony to what we do day in, day out. There’s lots to see and do here including the Temple of the Tooth, the Royal Botanical Gardens and the Bahiravokanda Vihara Buddha statue which is set on the top of a hill with amazing views of Kandy and the countryside below.

From Colombo, heading north west into the centre of the country will take you to Sigiriya where you can explore the ancient rock fortress located on top of a mountain! Nearby is the busting town of Dambulla with its many temples, huge market selling fruit and vegetables from all over the country and its unique cave temple. Also nearby is the UNESCO World Heritage city of Polonnaruwa, an ancient city and the former capital of Sri Lanka. Walking through the ancient ruins that date back over 800 years is a truly memorable experience.
South of Kandy is the tea growing region and the rolling hills and cooler temperatures here offer a great place to take in the countryside on foot or by bike.
Continuing south, there is Yala National Park where you can go on safari in search of elephants, crocodiles, leopards and hundreds of bird species. You are now on the south coast of the country and from Yala National Park you can travel along the south and west coast of Sri Lanka back to Colombo. Along the way there is the historic walled city of Galle, another UNESCO World Heritage site as well as plenty of places where you can spend a few days on a tropical beach.
