The Food & Agribusiness Network (FAN) is a leading Australian industry cluster, empowering its members to connect, learn, collaborate and grow. Established in 2015, by the industry for the industry, FAN is a not-for-profit organisation designed to grow the food and beverage industry by creating an ecosystem that supports collaboration, accelerates innovation and drives trade, locally and

globally.

With more than 370 members from across the food value chain in Gympie, Noosa, Sunshine Coast, and Moreton Bay; FAN is led by CEO Nicole McNaughton and is governed by a board of directors who are responsible for the overall strategic direction of the organisation, in addition to providing general oversight of FAN’s operations.

Members include input suppliers, growers, retailers, manufacturers, food service operators and affiliated services.

With three membership types available, there is an option to suit all businesses, whatever stage they are at.

Joining FAN provides access to FAN’s membership and services with FAN members spanning the entire agribusiness industry chain, including businesses within the industry and those who supply services to the industry.

People really do travel with their stomachs. So much of where we go and what we do revolves around food and drink. And lucky for us on the Sunshine Coast we have an abundance of fresh local produce, artisanal products and agritourism experiences to choose from. With our region’s rich volcanic soils and thriving coastline it’s easy to see why we are known as Queensland’s Sunshine Pantry.

The term ‘pantry’ is really a metaphor for how the Sunshine Coast is so well stocked with local fresh produce from our 900 producers across the region. We have grown from so much

more than our prawns and pineapples, having claimed the crown of Australia’s Craft Beer Capital and being home to award-winning cheeses, spirits, specialty coffees, handcrafted teas, jams bursting with the flavours of summer fruits, decadent chocolates, pure, golden honey

straight from the hive and so much more.

Amrita Park Meadery is an award-winning small boutique meadery in the Noosa Hinterland, specialising in crafting small, carefully curated batches of mead. EASTWELL FARMS’ MUSHROOM TARTLET WITH LITTLE WHITE GOAT CHEESE FETA

Our Hello Sunshine Sunday Soirée was part of The Curated (side) Plate in 2022 and brought together local chefs Matt Golinski, Josh Smallwood and The Wonky Loaf’s Katie Faulkner to present their favourite dishes starring local produce and producers.

Ingredients:

• 2 tbsp extra virgin olive oil

• 3 shallots thinly sliced

• 2 garlic cloves crushed

• Thyme leaves from 3 sticks

• 350g Eastwell Farms’ oyster mushrooms, sliced

• 25g butter

• 2 tsp sea salt flakes

• ½ tsp cracked pepper

• ½ bunch chives

• 40g toasted pine nuts slightly crushed

• 1 lemon zest

• 1 tbsp red wine vinegar

• Good quality butter savoury tart shells (4cm)

• 50g baby rocket

• 10g Little White Goat Cheese

Freeze Dried Feta

Method:

Pre-prepared filling:

• Add oil to saucepan and heat slowly with shallots, garlic and thyme leaves.

• Cook, stirring frequently until completely softened approximately 5-10mins.

• Increase heat to high and add

sliced mushrooms, butter, salt, and pepper.

• Cook until mushrooms have softened.

• Remove from heat and allow to cool to room temperature.

• Add chopped chives, pine nuts, lemon zest and red wine vinegar. Adjust the flavour with seasoning.

• The mix will store in airtight container in the refrigerator for up to 5 days or prepare immediately.

To serve:

• Prebake tart shells in a 170c oven for 5 mins to freshen them up.

• Place mushroom mix somewhere warm for 10 minutes before serving.

• Add 1-2 tbsps of mushroom mix to each tart.

• Top with torn rocket leaves and sprinkle with Little White Goat Cheese Freeze-Dried Feta.

BAKED LEMON MYRTLE AND MACADAMIA CHEESECAKE

Every edition of Hello Sunshine Magazine and IN Noosa Magazine features recipes by Matt Golinski and other local chefs that champion local produce as well as producer profiles and Chef Q&As.

Ingredients:

• 150gm digestive biscuits, crushed

• 75gm butter, melted

• 500gm cream cheese

• 150gm castor sugar

• 1 vanilla bean, split and scraped

• 3 eggs

• 3 egg yolks

• 30ml lemon juice

• 2 tbs fresh lemon myrtle, very finely chopped, or 1 tsp powdered lemon myrtle

• 200ml sour cream

• 150gm Nutworks macadamia chips, lightly roasted

• 25gm icing sugar

Method:

• Mix together the finely ground biscuit crumbs and melted butter until well combined.

• Line a 23cm springform cake tin with baking paper and press the biscuit mixture into the bottom of the tin.

• Place in the fridge to chill

while you make the filling.

• Place the cream cheese, sugar and vanilla bean seeds into the bowl of a food processor and blend until smooth.

• Add the eggs and lemon juice and blend for 30 seconds, scrape down the sides of the bowl and blend for another 30 seconds.

• Pour the cheese mixture into the tin.

• Bake for 40 minutes at 160°C or until firm in the centre.

• Whisk the sour cream until smooth and spread over the top of the cheesecake.

• Refrigerate until cold.

• Before removing from the springform tin, spread an even layer of macadamia chips over the top of the cheesecake

• Just before serving dust the top of the cheesecake with icing sugar.
