ow can it be that a year has passed, and we are again amidst a flurry of activity in preparation to celebrate the holidays? The smell of a wood fire, cinnamon-scented candles or fresh pine and a familiar carol — we yearn for that sweet anticipation and nostalgia. Loved ones will gather safely once again, highways and airports will hum with activity and our social calendars will reflect the events of the season. The importance of family and friends rings truer each year as we gather together in the safety and comfort of our homes. These special moments provide us with connectivity and a treasured respite from day -to-day life. There she worked with hemp for CBD/grain/fiber and willow for bioenergy. After having a baby she took some time off to be a mom. She loves knitting, running, cross-stitch, and of course, Scandinavian baking. JILL OCKHARDT BLAUFUSS Jill Ockhardt Blaufuss is a photographer for architecture and interior design. Her clients range from designers and builders, both commercial and residential. When she's not working she enjoys spending time with her family and friends, cooking, traveling and entertaining. BAILEY HOVLAND Before earning an English writing degree at Concordia College, Hovland dreamed of being an interior designer. Now, serving Inspired Home Magazine as a writer and social media director, she has the best of both worlds—pairing the power of words with innovative interior design.

ASHLEY F. JOHNSON Ashley Johnson loves her home city of Fargo. She works as a registered nurse at Sanford Medical Center and shares her happy home with her husband, 2 children and a rescue cat. A Christmas Remembered BY SANDRA MILES, AREA ARTIST AND AUTHOR

EDITOR’S NOTE We ran this heart warming, true story five years ago. I felt its charm and message of charity was very appropriate to be read and cherished again for our Holiday issue. Happy Holidays! Terri Ferragut

S

everal years ago, my husband and I were preparing our traditional Christmas Eve meal. The table was set beautifully with Christmas dishes, my finest sterling silverware and an arrangement of flowers in an antique gold vase. It was quiet. We both were feeling a sense of loneliness this holiday. Our three teenage daughters were not with us for the first time; friends had invited them to spend Christmas vacation in Florida. 12 | NOVEMBER/DECEMBER 2021

My husband and I were about to sit down to eat when our business line rang. We owned a transmission repair business, and with the minus-38-degree weather that night, my husband decided to answer the phone. A young man was calling from a truck stop in Moorhead and explained that he and his family were en route from Minneapolis to Hallock, Minnesota, to spend Christmas with relatives. The bitter cold was causing transmission problems with his car. I listened intently to the conversation and heard my husband tell the traveler he would send a tow truck to pick up his car and we would bring his family to our home in our station wagon. The young family needed a ride to Hallock. I had been thinking about the situation for a few moments when I remembered a previous conversation with another young man. Earlier that day, I had been Christmas shopping at a local electronics store in the mall where I INSPIREDHOMEMAGAZINE.COM


met a friendly salesperson. I recalled he mentioned his hometown of Hallock. Determined, I decided to call him at work. He came to the phone, and I explained the situation at hand. I simply asked, “Are you going home for Christmas?” He replied without hesitation, “I haven’t been home for Christmas in six years, but I guess I could surprise my parents. I get off work in 20 minutes. I have to fill up my car with gas. I need directions to your house.” I hurriedly packed blankets and food for their cold winter’s night journey. We drove to the truck stop where we unloaded the young family and wrapped mother and child in warm blankets. We transferred their suitcases and presents into our station wagon. When we arrived home, we drove into our heated garage. Just a few minutes later, like a Christmas miracle, the young electronics salesperson, still donning the Santa hat he had worn earlier that day at work, pulled up in a vintage red Cadillac Eldorado. We motioned to him to drive into the warm garage alongside our station wagon. Immediately, the two young men recognized each other. They had gone to high school together in Hallock. Together they began loading presents and luggage into the red Cadillac’s trunk. The mother and their sleeping 2-year-old child were tucked warmly in the backseat with blankets when the little one woke up and sleepily asked, “How is Santa Claus ever going to find me?” The mother softly replied, “Santa has already found you. It is so cold this evening that Santa Claus himself is driving you to grandpa and grandma’s house tonight.”

I looked at my watch. In less than an hour from the time the young father called for help, they were on their way north. As I reheated the oyster stew for our Christmas Eve dinner, I prayed: “Thank you, God, for our meal we are about to receive. Thank you for our new friends and guide them safely north to their families. Thank you for this unusual Christmas Eve that you provided us—one we both thought would be lonely. Thank you for reminding us that a simple act of kindness can create a cherished memory.

Like little winter fireflies, twinkling in the night time skies… Their colors set the tree aglow… a calming peace in dark shadow. They flutter in the stems of pine, amongst the ornaments that shine. Their lights through crystal prisms dance, while sparkling glittered reindeer dance. Reflecting in the balls of glass, across shooting stars of shiny brass. Children young and old delight to see a Christmas tree at night!

I must protest and make correction, this passion of mine is no “infection.” I just have a great affection for this jolly man collection. It stirs in me Christmas perfection and invokes childhood reflection. A time as sweet as sweet confection. I love my Santa Claus collection!

Early dusk. A dark blue sky. Homeward bound the cars pass by. Twinkling strands of lights aglow, illuminate the sparkling snow. Fragrance from the chimneys rise, lingering in the evening skies. Bundled friends out for a walk, pause to say “Hello” and talk. Laughing children hard at play, while neighbors scrape the snow away. And then the call, “It’s time to eat!” How I love Christmas on our street.

Who in their right mind would stand out in this cold? Freezing with a bunch of strangers…I’m just too old! Besides, there’s too much waving and cheering. It’s hard on my hearing! There’s loud laughter and joyous song singing, while parade participants their treats they’re flinging! All for candy-gathering kids who are screeching and squealing, as they dash about madly. It’s so unappealing! And the spectators shiver themselves silly, teeth chattering. Is it worth it really? The whole parade moves at a snail’s pace. I wanna scream, “Get me out of this place!” Horse-drawn and tractor-pulled floats made from antique cars and really old boats, are strung with lights and candy canes while my cheeks, ears, and nose, INSPIREDHOMEMAGAZINE.COM

(and apparently brains) have all totally froze! Gone completely numb. Can’t believe I’m out here — it’s totally dumb! Finally! The end is in sight! Hey, Santa’s float. The last one. Alright! Wow! He smiled at me, waving his arm. He winked, too! Suddenly, I’m warm. The last time we met, I was about ten. Well, Santa and I go back a long way. I’m so glad I saw him today! This parade was actually, sorta, kinda fun. When did you say there’d be another one? These small-town parades are rather neat. I’m coming early next year to get a front seat!

Mom, how do reindeer fly?

“Sprinkling snow?” Is that all it takes?

OK, some snow and starlight… anything more?

Oh, that’s Christmas magic… don’t you know? Before Santa takes to the star-filled sky, he sprinkles his reindeer with Christmas snow.

Well, this snow is special. It reflects heaven’s light. Each tiny sprinkle of each glittering flake, recalls Bethlehem’s star on the first Christmas night.

True Christmas magic is faith, hope and love. These lighten your heart, so your spirit can soar, as high as the glistening stars above.

About the

Author PAINTING IS MY PASSION and lifelong hobby. The subject matter I draw upon is related to my favorite memories. Christmas and the holiday season have been one of my most popular themes. Usually, I think up a title or a phrase which gives me the mental imagery of what I’m about to paint. “The Santa Collection” came about because I had become fascinated with his joy and inspiration for those less fortunate. His appearance is a universal expression of hope, and as my poems says, “I love my Santa Claus collection!” As I paint, I imagine being there. I used this technique for “Christmas Cove”. Before I begin, I ask myself, “What sounds do I hear? What is happening around me?” Then I think of what the characters would be doing around me. I put myself in their environment and paint what I see when I open my eyes again. I also enjoy painting activities and events like street fairs, street parades, carnivals, and lake events (like skiing, boating and just having fun at the lake). I enjoy filling my compositions with people, activity and the joys of summertime. Hidden objects are also added for fun. As I figure out these details, I get a sense of the message I want to convey. My mind begins to compose a poem to coordinate the scene with what words come to me in that moment. After years of painting and writing, I decided to assemble my work into visual coffee table books. Early in my pursuit of marketing my art at local shows in the area, I had a customer comment to me after strolling through my booth, that really stuck with me. He said walking through my art was like walking through a picture book. That comment has stayed with me ever since. I knew then someday I would create the very books he had envisioned. an online self -publisher, I have created five books using my art and poetry. I use my books as a reference for my work or as gifts to family and friends. I have sold them on request and have donated them for charity raffles. I am grateful to enjoy the journey my hobby has taken me on thus far and look forward to the experiences left to be had.

I

’m not really what I would call a “crafter.” I do, however, like trying ideas that create an artful appearance, from plating food to arranging picture galleries on my walls. My daughter has inspired me with some of her gift wrapping over the years, so, with a few cues from her, here a few simple tips that can make wrapped gifts for this holiday gift-giving season a special treat for your loved ones. Use items you have on hand at home to decorate your gifts, such as fragrant pines, spices, herbs, candies, cookies or ribbon. You’ll enjoy the wrapping process this year with these easy ideas! Remember, the holidays are all about giving. It’s more fun when you’re gifting something you are excited to share with friends and family. Your gift wrap is just another layer of excitement. So, just relax, grab your mug of hot cocoa, play your favorite Christmas carols and let the fun begin! Step one: Gather your supplies. Brown craft paper is inexpensive and becomes your “canvas.” Good scissors, Scotch tape and a little Elmer’s Glue are always helpful, too. Some items to have on hand:

n this crazy world of ours, we yearn for a sense of comfort. With our fast-paced and ever-changing lives, we seek out and search for a balance in our life. This holiday season, we will surround ourselves with the familiar things that we treasure the most. Home is more important than ever, and we desire to gather with family and friends for the holidays and celebrate together in an atmosphere laden with comfort and familiarity. and holding on to our age-old traditions. Our holiday homes become graced with candles, stars, fir branches and pine cones — without them, we would miss something quite special. T

his autumn, while walking my dog by the river, I stopped to admire a stand of poplar trees resplendent with yellow leaves. With a strong gust of wind, the leaves on the trees dry rustled, nudging each other in a crisp, harmonic melody. It was quite beautiful. Trees, now naked of their foliage, means Thanksgiving is upon us. America has kidnapped the holiday as if it were ours alone, but Canada celebrated theirs in October, followed by Germany, Brazil, China, Israel and Mexico. Thanksgiving isn’t only a celebration about Native Americans saving starving Pilgrims (that’s a whole other story), it is about thanking God for a bountiful harvest, a religious celebration. In Mexico, houses are decorated with the harvest bounty of fruits, flowers and vegetables. The harvest festival is a special day in their culture. Their food is spicy, vibrant and colorful and is a feast to be shared. They grow and harvest the food themselves, a religious experience unto itself. Fact: Turkeys were first domesticated in Mexico and corn was first farmed in Mexico before arriving in Spain and America. Sweet potatoes, yams and squashes came from Africa and the Caribbean. Cranberries seem to be the most prolific American original on the Thanksgiving Day menu. After years of professional cooking, I have cooked no less than 3,000 turkeys between Thanksgiving and Christmas. That’s a lot of birds, dressing and gallons of gravy — the joys of being a chef in hotels and private clubs. After spending years cooking with Mexican staff members, I have shifted my Thanksgiving culinary focus towards the vibrant, rich and complex flavors of our southern neighbor, Mexico. Mexican cuisine uses many of the same ingredients we use but in different ways. Turkey, corn, squash, sweet potatoes and pumpkins are used. Sometimes their turkey is de-boned, stuffed with fruit and nuts, rolled in banana leaves and baked, depending on the region. I like to make mine braised in mole sauce from Puebla, Mexico. This complex

combination of dried chiles, nuts and bitter chocolate results in a deeply rich sauce to braise the turkey in. While it braises, you can enjoy pumpkin empanadas before dinner with a soup of chorizo and butternut squash, garnished with candied pumpkin. Serve with a savory corn and poblano bread pudding. When the turkey is ready, it is shredded and wrapped in warm corn or flour tortillas along with cranberry chile salsa with rice and beans on the side. For dessert, a tres leches pumpkin flan, cool, smooth and creamy — a nice nod to pumpkin pie. December brings Christmas to families around the world to celebrate. I grew up in a Scottish/British household in a neighborhood with a lot of Italian families. That culinary influence helped shape my culinary tastes, career and my own family’s Christmas dinner. During my formative years, I was introduced to real Italian food cooked by mothers and nonas (grandmothers) of three of my best friends. Domenic’s mother would let us stand by her pot of simmering tomato sauce and dip chunks of fresh Italian bread straight from the bakery into that delicious sauce. Frankie’s nona would lean out the door and yell that lunch was ready for Frankie and me. We would stop our street hockey game and run across lawns for bubbly hot slices of homemade pizza or salami and provolone sandwiches with hot cherry peppers. Mike Lafranco, one of my best friends in junior high, was my mother’s nemesis when it came to dinner. We’d go to his house after school to horse around and maybe even do homework. Mike’s household was right out of a movie. His two sisters in their 20s lived there with one set of grandparents and his dad’s brother. There was dinner for eight every night, and I made it nine on occasion. The kitchen was classic, a linoleum black-and-white tile floor, vinylcovered stainless chairs and a table set for eight with the father at the head of the table. The women would play canasta and when they weren’t, they cooked. Dinner consisted of platters of eggplant parmigiana, meatballs, sausage, pasta, tomato sauce, roasted

peppers, green salad, bread and lasagna. This established flavor profiles in my memory that would come roaring back when I became chef of Maurice’s Italian Restaurant established in 1946 in Palm Beach, Florida. Christmas was always a special time at the restaurant. Over the five years I was there, we incorporated the different regions of Italy. To say “this is what Italians eat” at Christmas is nearly impossible because every region, from Sicily to Veneto, have their own ingredients and flavor profiles. The consistencies were antipasti, primi, secondi, contorni and dolce. Christmas in Italy is not one day. It’s a period beginning with Christmas Eve Feast of the Seven Fishes, followed by Christmas Day and cumulating with Boxing Day, a traditional simple lunch of cold meats, cheeses and breads. The Italian Christmas is a celebration expressed through prayer and passion for food. The Feast of the Seven Fishes is in recognition of the apostles and items such as salt cod or baccala arrcanato are featured fish, baked and adorned with seasoned breadcrumbs and lemon butter. Christmas Day primi is the first course, typically a risotto or pasta, a small flavorful portion to wake up the taste buds and to stimulate the appetite. The secondi or main course is a meat, or in the south, fish. I like a pork loin stuffed and roasted or a lush cheese-laden lasagna or beef braciola braised in Barolo wine with fennel and tomato sauce. Contorni is the vegetable dish accompanying the primi and, for me, it is eggplant rollatini, basically individual portions of eggplant parmigiana. Now for Christmas dolce or dessert! A favorite is Panettone, a traditional light cake with dried fruits and nuts — great with a good espresso. Traditional Tira Misu, a decadently rich dish, creamy and dense with flavor, is my personal favorite. It has been an extraordinary and stressful year so this holiday season enjoy great food, your family and friends and may you all have a healthy and happy new year.

Eggplant Rollatini

Read the recipe and instructions thoroughly and gather all ingredients before starting.

Place sliced eggplant on a sheet pan, brush both sides with olive oil and season with salt and pepper.

In a medium-sized bowl, whisk the eggs and then fold in ricotta, goat and mozzarella cheeses, raisins, pine nuts, basil and oregano. Season with salt and pepper. Mix together well. Make enough 2- to 3-ounce balls out of the cheese mixture, one for each piece of eggplant. Shape each ball into a cylinder the width of an eggplant slice. Place the cylinder at the narrowest end of the eggplant and roll-up. Brush olive oil onto a baking dish just large enough to hold the rolls firmly together. Place the rolls seam side down in the baking dish. Spoon tomato sauce over each roll and sprinkle with Parmesan cheese. Bake at 350 degrees until cheese is melted and sauce is bubbling. Preparing the eggplant for rollatini is quite simple. Wash thoroughly and pat to dry. Slice the eggplants lengthwise, approximately ½-inch thick, discarding the ends. Place sliced eggplant on a sheet pan, brush both sides with olive oil and season with salt and pepper. Next step? Under the broiler they go—cook until slightly brown and tender.

What a beautiful combination of flavors and textures to star in this delicious holiday Italian favorite. Chef Granville's Wine Tip The high acidity of the tomatoes and eggplant calls for a high acidic wine. Chianti, a Sangiovese wine grape variety, a Barbera from Northern Italy or a Pinot Noir are all great pairings for eggplant rollatini.

Olive oil comes in many varieties, but we suggest extra virgin, which simply means it is the first pressing of the olives, never heated or chemically treated.

The crowning glory and the final step in making eggplant rollatini is adding the sauce. This "California" sauce is light, fresh and the tomates aren't overcooked. Good tomatoes crushed by hand help the garlic and onion "melt" into the olive oil. Spoon tomato sauce over each roll and sprinkle with Parmesan cheese. Bake at 350 degrees until the cheese is melting and the sauce is bubbling. Delizioso!

What makes this sauce so flavorful is the slow cooking of the onion and garlic in the olive oil. The aim is not to brown either, but to slowly cook them at a low temperature, melting them into the oil. This should be done in a deep sauce pot. Once the onion and garlic are completely fused into the oil, add the tomatoes, juice and all, and bring it to a simmer for approximately 30-45 minutes. Stir in the tomato paste to pull it all together. Add salt and black pepper to taste and perhaps a pinch of sugar, if needed. Remove from heat and stir in the basil.

What Is Eggplant?

From the nightshade family, which includes tomatoes, okra and zucchini, eggplant grows in a variety of shapes, sizes and colors, and it thrives in hot climates in summer months. They range from small globes about two inches in diameter to more oblong and tubular varietals 12 inches long or larger. The seeds of all eggplant varieties are edible, making it especially easy to cook. Eggplant has a flavor similar to summer squash or zucchini: tender, mild and sweet with a slight vegetal bitterness. Eggplant will absorb the flavor of whatever it’s cooked with. Its texture is firm and spongy when raw and meltingly tender when cooked (especially fried, smoked or braised). The most common varieties found in the United States are globe and Italian eggplant, which are teardrop-shaped varieties with glossy purplish-black skin and a thick stem cap. When selecting eggplant, press your finger lightly against the skin. If it leaves a light imprint, it is ripe. If there’s too much give, it’s too old and will be bitter. The extra-friendly eggplant has limitless possibilities — definitely worth getting to know better!

T

he holidays are a time of tradition for many and those traditions come in many forms — decorations, food, family recipes, movies. I, for one, watch “It’s a Wonderful Life” and “A Christmas Story” multiple times during the holiday season. This year I wanted to honor and keep past traditions going yet add something a bit new to my family’s holiday experience. So, I decided to make julekake, the-not-so-cake-like-cake. It’s actually a delicious bread! Call it what you like, cake or bread, either way julekake is a divine representation of a Norwegian Christmas and perfectly encapsulates holiday flavors. Other countries have their versions of this holiday treat. The traditional sweet breads pannetone and pandoro are popular in Italy, and stollen — full of candied fruit, nuts and spices — hails from Germany. Three Kings Bread from Spain is baked to resemble a crown with candied fruits

placed as jewels and Swedish saffron buns shaped in a sweet “S” are made for Advent and St. Lucia Day. Joululimppu, for all the Finnish folks out there, is a sweet and earthy bread made from rye that’s zesty with fennel, candied orange peel and caraway seeds. All these Christmas “cakes” are yeasted breads. The Norwegian iteration is a cardamom bread whose floral spice sets the tasty background for punctuated bites of candied cherries, citron, raisins, cranberries or any candied fruit you like. Beautifully braided together or baked in a round loaf, it fills a void I didn’t know existed before I made it. It’s not sweet but packed with flavor and is dense and substantial. It makes the most perfect toast (especially with a shmear of gjetost, a traditional Norwegian brown cheese) for Christmas morning or any chilly winter day. I adapted my recipe from Daytona Strong’s “Outside Oslo” food blog;” she adapted her

recipes from her Norwegian Grandmother Adeline. I was honored to be one of her test bakers for her beautiful cookbook “Modern Scandinavian Baking.” I added quite a bit more cardamon and orange zest to her recipe to amp the flavors even more. This is a very simple recipe and it doesn’t require a stand mixer — your hands and a large bowl will do the trick nicely. The recipe makes two loafs, so you can make two braided loaves as I did or simply divide the dough in half and bake them in two 9-inch cake rounds. You can also half the recipe and just make one, though I always like to make more to have something on hand in the freezer to whip out at a moment’s notice for a holiday guest. So, whether you stick to tradition or mix it up every year during the holidays, you might just find that julekake becomes your new tradition.

Julekake

INGREDIENTS:

¾ cup whole milk

Warm milk in a small saucepan over medium heat. When bubbles begin to form around the edge, remove from heat and stir in sugar, butter and salt, stirring to melt the butter. Set aside to cool to lukewarm. In a large mixing bowl, sprinkle the yeast over the water and stir until dissolved. Add the lukewarm milk, then stir in two beaten eggs. Add 2 cups of the flour and the cardamom and beat with a wooden spoon until the mixture is smooth. Stir in raisins and citron. At this point, you’ll want to stir in just enough of the remaining flour to form a soft dough — I used about 2½ cups. Let rest, covered with a towel, about 10 minutes. For the first rise: Knead the dough on a lightly floured surface until smooth and elastic, about 8 minutes, then transfer to a large, lightly greased bowl. Turn it so that the oil coats the entire ball of dough. Cover with a towel and set in a warm place, about 85 degrees F, to rise until it’s doubled in bulk. (In the conditions in my home, this took about 90 minutes.) For the second rise: Punch down the dough and divide in half, forming the dough into two balls. Cover them for 10 minutes; prepare baking sheets by lightly greasing them. Place a round loaf onto the baking sheets and let rise again in a warm spot, covered with towels, until they’ve doubled in bulk, another 1½ to 2 hours. Toward the end of the second rise, preheat the oven to 350 degrees F. When ready to bake, beat the remaining egg in a small bowl then gently brush it over each loaf, taking care not to press down on the dough too much. Bake for 20 minutes, then cover with foil and bake until done; the original recipes suggest the second period should take about 25 minutes, until the bread is deep golden brown. Mine — which I baked in two ovens — took about 17 or 18 minutes for the second part. Immediately transfer to wire racks and cool. Makes 2 round loaves. Drizzle with icing when warm. Garnish with almonds.

A Scandinavian Christmas Tradition for the Birds B

irds don't celebrate Christmas, but they appreciate a feast any time of year. Originally, to distract birds from grain stores, the Swedish tradition of sharing the final harvest became a charming way to end the old year and welcome the new. The Julkärve, or Christmas sheaf, is customarily a farmer's last sheaf of harvested grain. TO ASSEMBLE: Using individual wheat or oat stalks, (it can be as large as you like), arrange heads into an attractive, rounded bunch. With scissors or shears, snip off the bottoms of the stalks evenly. The sheaf should be 18 inches to 24 inches tall. Tap the bottom of the bundle on a flat surface to make it relatively even. Wrap wire around the bundle twice, then twist the ends to fasten wire firmly in place. Cut off excess with wire cutters and tuck ends under for a smooth finish. Wrap ribbon around the bundle twice to cover wire, then tie with a bow. Gently twist stalks above the wire in one direction, those below the wire in the opposite direction, until the wheat or oat heads form a rounded fan shape. Tie the finished sheaf in a tree, on a deck or balcony, or fasten to a pole or fence. It will feed hungry birds and bless all who live with or visit you. INSPIREDHOMEMAGAZINE.COM
