She lives in Fargo with her husband and their golden retriever, and she loves when her college-aged son is home on breaks. CARLSON Carlson, a Fargo native and geologist, is a research assistant at Cornell University at the New York Agricultural Experiment Station, where she conducts field work and data collection for the study of shrub willow as bio mass. She enjoys cooking, baking, running, renaissance art and writing. WANDA PERKINS For nearly 20 years, Perkins has creatively written stories about local, national and international people and topics. Her book, Blessing After Blessing − Seeing God’s Blessings in All theSeasons of Life was published in 2006. An NDSU speech communication graduate, she lives in Fargo with her intelligent rescued dog, Jake.
TRAVIS BEAUCHENE graduated with a Bachelor of Fine Arts from NDSU and a Master of Fine Arts from The George Washington University in DC. Beauchene who has painted for 14 years and taught photography for 8, also does creative marketing for businesses. Upon returning to the F/M area, he and wife Brittany founded STUDIO THREE BEAU. A
Quirks of Christmas
thing I’ve noticed about family holiday traditions is that they begin in someone’s childhood as normal activities that grow into something near and dear to everyone’s heart. Some families look forward to the holiday sweater Christmas card photo. Imagine 30 years of picture-taking in matching hand-knit sweaters made of yarn spun from the recently harvested hair of Burmese alpacas, lovingly dyed with vegetable-based dyes grown in their non-GMO organically fertilized garden. We’re not that family. Our family has food traditions.

Specifically, food traditions from my Nordic heritage. I’m a third-generation American; my greatgrandmother crossed the Atlantic in the early 1900s. My family comes from that part of the world where the sky, the groundcover, the clothes, the food, the people and their overall outlook on life are the same shade of pale, grayish white. Our grocery baskets always contain exactly the same things: 20 pounds of potatoes, flour and sugar, whole milk, whipping cream, butter and eggs, cod fish and some type of poultry.
And salt. You could literally eat every meal of your entire lifetime from some combination of these ingredients. My ancestors did. Our family holiday traditional foods include lefse (potatoes, milk, butter, salt, rolled paper thin and fried on a griddle, served with butter and sugar), spritz cookies ( flour, oil, sugar, butter, eggs spritzed into the shape of a Christmas tree), rommegrot ( flour, milk, cream, butter, salt, made into a kind of porridge, served with butter and brown sugar), kringla ( flour, milk, butter, sugar, baking powder, baking soda rolled INSPIREDHOMEMAGAZINE.COM
into a pretzel shape, baked and served with lots of butter) and eggnog. The eggnog I grew up with has the color and consistency of the aforementioned ingredients but comes in a half-gallon paper carton from the dairy case. For nearly 20 years, we’ve hosted a Christmas party the last Friday before Christmas, 7 p.m. until the last guest left. We recently switched to a more civilized after-work open house format from 5 to 8. It’s easier for a friend to stop by who (like me) refuses to leave the house after getting home from work; or friends who like to drop by and say ‘hi’ but still head to another party later. Then there are friends who don’t have much to do so they drop in at 2 p.m. to set up and stay late to clean up, like our friend Dahlia. Dahlia just happened to be off that Friday and couldn’t wait to help. We loaded up the shopping cart with potatoes, flour, sugar, salt, baking soda and baking powder. ( Just like every other trip to the grocery store every week of the year.) At the dairy aisle, I began stocking up on whole milk, extra heavy cream, eight pounds of butter and six dozen eggs when Dahlia asked how many half-gallon containers of eggnog to get. “Dahlia, don’t be ridiculous. Do you really think David would even consider serving synthetic eggnog?” “You mean you make this stuff from scratch?” she said. “Dahlia, we have a cart with six different ingredients here that can make no less than 17 different, yet oddly same Nordic family recipes. We can make eggnog out of this, except for one ingredient we must get next door — bourbon.” Dahlia was so totally intrigued by the idea of making eggnog that we decided to get a batch going right away. Other than the eggs being separated, it was simply a different variation on every other recipe except for a little vanilla and nutmeg (how exotic!) and bourbon. At coffee time, we decided a little splash of eggnog in our coffee might go well with the sugar cookies she brought from her office goodie exchange. They were white. Dahlia peeled 10 pounds of potatoes, put a pot of water on to boil and poured herself a cup of half-coffee, half-eggnog. She was clearly starting to appreciate the homemade eggnog. Dahlia finished her coffee, refilled her cup with pure eggnog, took a swig and started ricing the freshly boiled potatoes to make lefse. “Why do they call it ‘ricing’? Shouldn’t it be called ‘potato-ing’ or something?” Dahlia mused. “Yes, that certainly is a wonder, isn’t it?” I muttered as I clunked around the Lazy Susan looking for the used-once-a-year flour sifter to begin the kringla. Dahlia remarked how lefse looks like tortillas as David started frying them on the used-once-a-year lefse griddle. “Lefse kinda looks like someone ‘lefse’ tortillas on the grill too long, dontcha think?” Dahlia snorted. “Yes, I suppose it does. How’s that eggnog treating you there, Dahlia?” David said. “Why, it’s just delightful! Where’ve you been all my life!” Dahlia cooed to the punchbowl of eggnog as she topped off her cup. Every family tradition is uniquely different yet oddly the same. Just like the people who enjoy them. Dahlia sampled the lefse, kringla, spritz cookies (we dyed them green!), along with some of our Hamilton-Erickson holiday traditions including phyllo triangles filled with prosciutto & ricotta, spinach balls & clean-your-sinuses mustard sauce; Manchego cheese-stuffed, bacon-wrapped dates; bûche de Noël (chocolate cake shaped like a forest log) and Aunt Glenda’s bonbons. And of course, a crisp white pinot grigio. Wishing you a holiday season filled with the joy of “same-old, same-old” traditions spiced with new found, homemade-eggnog surprises. Editor’s note: Inspired Home Magazine is proud to support the 2018 Holiday Homes of Hope Tour & Boutique. Each year, we introduce you to an area family whose personal experience with cystic fibrosis (CF) has inspired us to create a platform to educate others. Each winter, local neighborhood families open their holiday-adorned homes for public viewing, with a boutique, lunch and silent auction also available. All proceeds go to the Cystic Fibrosis Association of North Dakota (CFA), which devotes its time and financial resources to help support local families across the state to fight this deadly and expensive disease. This year, we are honored to share the inspiring story of Cooper, a vivacious 2-year-old boy from Jamestown, N.D., who was diagnosed with CF just weeks after being born.
T
hough Cooper comes in a small package, his impact on his family, his community and his friends is mighty and inspiring. His mother, Erin Paulson, speaks candidly and openly about how her life changed the moment she received a call from her doctor’s office suggesting his newborn screenings were indicative of cystic fibrosis (CF). “I knew nothing of the disease. I was holding our little baby who wasn’t even a week old and all my hopes and dreams for him began fading. I had no idea what his life was about to look like. My fear turned into a wish for him, if that makes sense.” Erin goes on to explain that she wants her son to have the opportunities to do many of the things he desires. She wants his life to be long and fulfilled and, of course, the greatest fear she carries is that his life may be cut short. As time passed, more tests were run. Cooper was 6 pounds 11 ounces at birth and, in the coming weeks, Cooper dropped to a mere 5½ half pounds. Finally, at 6 weeks of age, Cooper was officially diagnosed with CF. While Cooper’s daily routine may look a INSPIREDHOMEMAGAZINE.COM
lot different from the average 2-year-old’s, it is important to remember he is just that. He is a little boy with a healthy mind and a spirited personality. But his life is indeed different. To keep well, his daily routine consists of twice daily vest percussion therapy (a vibrating vest vigorously shakes loose the notoriously thick, sticky buildup of mucus in his lungs) and nebulizer treatments. He will need to do both treatments more often if he should fall ill. Cooper also must take enzymes to help properly digest his food, as well as medications to help his liver function properly. Additionally, he takes daily vitamins and meds to help increase his appetite. It has been difficult for Cooper to gain weight as he grows and Erin is hoping to avoid the placement of a G-tube (gastrostomy tube.) This is a tube placed percutaneously through the abdominal wall directly into the stomach to help deliver the nutrition and sustenance that Cooper may not otherwise be receiving. Since his diagnosis, Erin, her husband and their four other children have learned to lean not only on family and friends for support,
but also to rely heavily on getting pertinent and up-to-date information from their doctor and the Cystic Fibrosis Association of North Dakota. Erin encourages those who in the midst of a cystic fibrosis diagnosis to not to dwell on the unknown or things that are out of your control. “Getting Cooper’s diagnosis helped us to remember not to take things for granted,” she said. “We keep our family and faith the focal point of our household and we are thankful every day for happy, healthy children.” She describes life now as a balancing act — trying to keep Cooper away from germs and unnecessary illness while also learning when it is important to let go and let him experience his life. She describes her little Cooper as her daredevil. “He is a happy-go-lucky little boy with a love for adventure.” She knows he will do great things in his life and, with the future of innovative medicine before them, Erin yearns to see what the world has in store for this little superhero.

o you see what I see?… A two-story Christmas tree, adorned with silver ribbons and white snowflakes cascading down lush evergreen boughs. Do you see what I see?… Charming wicker chairs, tied up with bows, seated at a long dining table set for a holiday feast. Do you see what I see?… An old-fashioned brick fireplace centered on a plaid wall, radiating heat between a cozy toffee-colored leather armchair and a nostalgic Christmas tree. Although this may be an obvious ploy to borrow a popular holiday tune, each of these scenes also represent something more grand than holiday decor and interior design: the 2018 Holiday Homes of Hope Tour & Boutique event. Every year, Inspired Home is honored to sponsor the Holiday Homes of Hope event, a fundraiser for the Cystic Fibrosis Association of North Dakota (CFA). This year will be no exception. And the best way to celebrate the Holiday Homes of Hope Tour in its ninth year of supporting the CFA is to reflect on the
rousing success of the 2017 Holiday Homes of Hope tour. “It was a pleasure for me to be in the Holiday Homes of Hope tour last year,” said Brian Hayer. “It was great to help raise money for a cause like cystic fibrosis and to share my home of 25 years. The designingwomen2 team did a wonderful job of transforming and decorating my home for the holidays. I purchased almost everything they brought over.” And looking at designingwomen2’s creative work from last year, it’s obvious why Hayer chose their décor for his home INSPIRED HOME | 27
permanently. Just a glance at his dining room table, topped with gold statement pieces and flourishes of translucent fabric, makes it clear that designingwomen2 poured their heart into the holiday transformation of Hayer’s home. Maureen Zimmerman Hintz also appreciated the decor so much that she chose to keep it and treasure it for many holiday seasons. “It was a pleasure to be able to contribute in some small way to this annual event helping young people living with cystic fibrosis,” she said. “Our designer Leanne Seibold and her team did a wonderful job.” And, again, after seeing Seibold’s design come to life, it is obvious why Hintz was pleased. The entire living room felt like a Christmas package, wrapped in plaid wallpaper, pulled together with a nostalgic Christmas tree balancing out the leather armchair and finished with fragrant garland across the cozy mantle. Katrina A. Turman Lang voiced her gratitude for how the designers catered to her particular style in dressing up her home. “We loved the Scandinavian theme… the modern mint-green and red palette with cozy accents of sheepskin throws and rugs matched our style perfectly,” she said. Our beautiful Cody Foster houses laid colorfully under the tree to add to the cheery happiness. We used our beautiful Vietri and Simon Pearce dinnerware and glassware to dress the table while fresh flowers and sprigs ran down the center, making it the main focal point. We look forward to another wonderful year of decorating for such a great cause and are so grateful that we get to be a part of it.

Katrina welcomed our thoughts, which allowed us to embrace their current mid-century mod style with lush influences of winter and whimsy of modern colors. my cheerful elf & assistant, Shayla Knutson, created tiny custom pennant & snowflake garlands and pom-pom ribbons with firefly lights to give a whimsical glow as the evening arrived. We introduced in red velvet pillows, fur pelts at each head chair and faux fur guest stockings hung from place settings with subtle notes of plaid incorporated in table throw, gift wraps and pennant papers. Whimsical pom-pom trees & mint glass trees accented the coffee tables in the formal living, while miniature snow-tipped trees and fresh greens adorned the dining table. a snow-tipped Christmas tree in the formal living room tied in pom-pom whimsy with fluffy white poms and red pom-pom garlands. mint adorned the tree in handmade glass ornaments and gift wrappings. The lang’s love tradition which included handmade ornaments by their boys, Hudson, ian & Wyatt. Their special treasures hung on the tree with their own collection of collectible Christmas ornaments. We were honored to work with both Holiday Homes of Hope and the lang family.

The tour truly does represent the warm feeling of community and charity felt throughout the holiday season, and I’m so thankful that local families benefit from the money raised. Their Tudor two-story was full of charm and beauty so it easy to embellish with Christmas decor. We played off the home’s traditional style and incorporated classic Christmas colors, using greenery and splashes of red. Our favorite part of the decorating process was the garland we placed at the entrance. We continued the theme indoors by garnishing the window coverings with garlands and berries. it was a pleasure and honor to decorate their home.

Although it is early November, the neighborhood has already begun preparing for the holiday season. Staircases are draped with holly-dotted greenery, Christmas trees

fill living rooms and dining room tables are set as though distant family members will be pulling into the driveway any minute — all for Holiday Homes of Hope. Michelle Atchison, an ophthalmologist in Fargo, is just one of the many homeowners in Tessa Terrace whose homes will be showcased in the 2018 Holiday Homes of Hope Tour &

Minimalist table decor draws your attention from the tableware toward fresh sprigs of evergreen and the individual pine cones on each place setting. A rustic industrial centerpiece holds branches of evergreen dotted with miniature pinecones, bringing the clean smell of pine into the dining room.
Boutique event. She and her husband, Andrew, a local dentist, have been Moorhead residents for the past seven years. Their history in the Fargo-Moorhead community is long, ranging from their upbringing in the area to their undergraduate years at Concordia College. Now, having settled back in the Red River Valley, they are participating in the Holiday Homes of Hope Tour for the first time. “We got a call earlier in the year asking if we’d be willing to participate and it’s such a good cause that we couldn’t say no,” Atchison said. “It’s also just such a fun opportunity for someone to come in and decorate your house.” Maria Bosak and her team at Eco Chic Home have been hard at work transforming Atchison’s home into a winter wonderland, full of classic red and green tones and

The holiday decor theme stays true to the homeowners design theme, maintaining Atchison’s style and color scheme while adding festive elements to every corner of the open-concept living room. A modern taper candle holder is embellished by a scattering of pine cones and metallic Christmas trees, an effective way to bring festivity to the most simple home decor. Another angle of the kitchen and dining table provides a different look into the architectural beauty of the home, allowing a peek to the second floor and the overall theme of greenery and minimalism.

plenty of greenery. “It’s traditional Christmas decor. There are fun little antique Christmas houses around our home, which I really like. And it’s great to have new ideas and get new things in our home,” Atchison said. The dining room table follows the decor theme, featuring seasonal greenery contrasted against the texture of reclaimed wood. Food, and the opportunity to make food with loved ones, is a central feature of the Atchison holiday experience. “We like to spend time with our family and cook — we all just love

to cook together. So, we just appreciate getting together and making meals,” Atchison said. “Our kitchen is very open, so we have a big gathering space that’s centered on the kitchen. The kitchen was the main focus of how we designed our home because it was so important to us.” Bosak and the Eco Chic crew began decorating Atchison’s home in the first few weeks of October, ironically on the very same day surprise flurries hit Fargo-Moorhead. Atchison’s daughters, ages 5 and 8, saw it as a sign. “Our girls thought that the snow and the

Ice will spread across the nearby pond, providing a rink for the neighborhood kids to scratch up during impromptu games of hockey. Snow will settle in blankets across the earth, disrupted by snowshoers moving
across the riverside. Deer will scavenge for food in the empty cornfields behind the Atchison home. The homes of Tessa Terrace, lit by Christmas lights and adorned in varying shades of red and green, will ease into their winter routine as they wait for Holiday Homes of Hope Tour & Boutique (and possibly even a visit from a jolly old St. Nick).

Perhaps nothing says Italia like the bright and sweet taste of limoncello, or limoncino as it’s referred to in northern Italy.
P
erhaps nothing says Italia like the bright and sweet taste of limoncello or limoncino as it’s referred to in northern Italy. This decadent liqueur made increasingly popular in the last century is delicious and simple to make at home with endless recipe variations to choose from. The bright yellow liqueur is traditionally served ice cold in a small chilled cordial glass after an indulgent meal. While it is traditionally made with grappa, vodka (preferably Everclear) can easily be substituted, making this exotic sweet drink even more accessible to the home barista. As the granddaughter of Sebastiano Ferraguto, a pure-blooded Sicilian, I grew up knowing and appreciating the Italian culture at a young age. Cured meats, cheeses, homemade pastas, “red gravy” and a ridiculous amount of garlic were a part of many of my childhood meals. It wouldn’t be until my fourth or fifth trip to Boston to visit my grandfather’s side of the family that I was old enough to taste the liquid sweet renderings of lemon zest that I’d heard so much about. I immediately fell in love. Typically, I’m not one to sip on sweet drinks; I much prefer a dry, robust full-bodied red wine, but limoncello is a delightful exception. With its crisp and vibrant flavor after a savory meal, it doubles as a palette cleanser and satisfying dessert. I have made limoncello a handful of times in my life, but it has always been delicious and well received. It’s beautiful to look at when bottled to reveal its naturally bright lemon-colored syrup. The process of

making the digestif is relatively simple, and patience is really the only prerequisite (which I admit, I don’t always have a lot of), but, even for me, the process of making my own limoncino is a satisfying endeavor. For the most traditionally accurate variation, the lemon zest and grappa or Everclear should sit in an airtight container for a good 90 days. Most Italian and Sicilian families have their own traditional recipes for the zesty concoction, as do we. I have made a few changes here and there but, ultimately, haven’t found that it needed to be improved upon much. Get your zester ready and enjoy every drop of this decadent digestif ! Salut!
Zesting all the lemons with a microplane may seem a bit tedious, but the end result is well worth it. The liquid begins to turn a vibrant sunshine yellow within minutes of introducing the liquid to the peels. Once the limoncello resting period is over, the liquid gold is ready for festive packaging and enjoyment. Numerous online websites offer affordable swing top bottles, and customization of labeling stickers.

INGREDIENTS: 16-20 lemons (organic if possible). Make sure you wash your lemons thoroughly, if not organic. 1.75

METHODS: Using a microplane, zest only the bright yellow peel of the lemons. This is the best way to ensure you do not get bitter white pith in the mix. This method is tedious, but I find it’s the best. Using a veggie peeler is faster, but you are more likely to get bits of the lemon you do not want. Once zested, place the lemon zest and vodka in a large, sterilized airtight mason jar. One ½-gallon size will hold all the liquid. Keep the jar in a cool, dark place to rest 4-6 weeks. After the resting period, strain the liquid through a cheesecloth; large coffee filters also work well. Return strained liquid to a clean glass jar. Make simple syrup, cool and add it to the strained vodka — no need to stir. Return to the airtight container and let rest for another 4-6 weeks. Store your limoncello in the freezer until ready to serve. Serve ice cold. Keeps a year or longer. Once finished, pour into small, swing-top glass bottles to gift or enjoy yourself!

hen I was a little girl, I hoped and prayed every day for a kitty. Every wishbone I’d break, each birthday candle I blew out and every Christmas wish, I begged and pleaded with my parents, with Santa Claus or anyone within earshot to “pretty please, give me a kitty with a bow around its neck.” Receiving a cat around the holiday season seems like a lovely idea, but I fully understand why my parents never gave 4-year-old me a big box with a bow and air holes under our tree. While gifting pets seems like a thoughtful gesture, it is also a real commitment. Before deciding to bestow a cat upon a loved one this holiday season, there are a few things to think through. Inspired Home reached out to our faithful friend of all things furry, Dr. Amy Anderson, veterinarian at the West Fargo Animal Hospital. First, Dr. Anderson urges people to really consider if the holiday season is the best time to give a pet. There are good reasons for waiting until the hustle and bustle of the holidays has died down. 72 | NOVEMBER/DECEMBER 2018

important reminder is that most animal shelters, such as Homeward Bound and Cat’s Cradle, are filled above and beyond capacity. Please consider opening your heart to adopting one of the countless animals in need of a loving home — my family did. While my parents never did give me a kitten under the tree with a bow, I did one fateful day come across a tiny little tabby curled up on a cold day in a rain gutter. I was 7 years old when I found him while playing with my big brother and the neighborhood kids. He was cold, wet and, as we soon learned, had a broken leg that needed to be casted — but he was mine. My kitten Sam wasn’t wrapped in ribbons and bows, and he wasn’t purchased at a pet store for me on my birthday, and he certainly didn’t come to me at Christmas time, but he needed me. And I needed him.

“The holidays are probably the busiest time of the year for most families, and the time and concentration it takes to introduce a new pet into the household is often nonexistent at this time of year. Even though the little kitten pretty much comes “litter box trained,” they still need a lot of quiet time while they adjust to their new surroundings, and time and quiet are both hard to come by during the holiday season. Giving someone a pet during Christmas also puts the new pet at higher risk for accidents. With all the commotion of the holidays, it’s easy to lose track of a 4-pound kitten. Accidents can occur easily when you have a full household. Dr. Anderson warns, “Falling, getting stepped on, folded up in the easy chair or eating things they should not, such as tinsel or ribbons, are more likely to happen with excited party goers bustling around a busy holiday home. With the seasonal stress levels already high, a sick or injured kitten may result in a large vet bill as well. This scenario is not uncommon, and very difficult for the families and veterinary team.” If you and your family are considering giving a cat for Christmas, it is important to be prepared. Have everything you need at home: litter, cat toys, appropriate food and a bed, and create a nice quiet place to sleep for the kitten. This will ensure a safe, silent and secure place to begin their new life, until they acclimate to the rest of your home. his fall, after months of contemplating whether our family was ready for another rescue cat, we drove to Homeward Bound Animal Shelter. I had my sights set on an older cat, quietly curled up. Then we heard her. A kitten extremely vocal, pawing at the steel bars of her kennel seemed to be calling out to us. been born with cerebellar hypoplasia, due to an infection while in utero. “Fancy,” we learned she had been named, exhibited difficulty with coordination and frequent tremors. In July, a farmer who had found Fancy with her brothers and sisters in a field, brought them to the shelter. She was the only one left from the litter. No one seemed to want this shaky little girl who had lived at Homeward Bound for nearly three months. As a nurse, I knew we would have to be a little more patient with her, but that her condition was ultimately quite benign. It took her almost a week to master our stairs and, even now months later, she still rolls down them if she starts to run down too excitedly. She trots around then house as awkwardly as a brand-new foal. Her coordination is off, but she is the most determined little cat I’ve ever seen. Just knowing there is another furry little heart beating in our home makes our family complete. There are so many animals in shelters that need a loving family. Nothing speaks to the delight of holiday guests as does the traditional holiday pudding, alight.

or it is good to be children sometimes, and never better than at Christmas. Charles Dickens The British are sticklers for their traditions. The Royals are proof of that and I believe that is a good thing. The irony of that is it is inclusive for everyone no matter your lot in life. It gives most of us a sense of security in this ever-changing world, it is something you can count on to never change. And they follow the rule that all Christmas decorations come down on the twelfth day of Christmas. Christmas is a wonderful time to be in England. There is a gaiety in the air, the burden of commercialism not as present. Tasteful decorations adorn the streets in the center of London and throughout the markets as well as in the villages and towns. Butcher shops display turkeys in full plumage hanging from the ceiling along with geese and pheasants. It is the norm to place your order in advance with your local butcher to secure your bird. As Thanksgiving is a purely American holiday, turkey is the popular choice in England for Christmas Day but traditionalists prefer a goose or perhaps a standing rib roast of beef. Chestnut stuffing, brussels sprouts, roast potatoes and bread sauce round out the Christmas Day lunch; and of course, a well-fed Christmas Pudding. Back in the Middle Ages, the Pagan winter festival which is the precursor to Christmas, was a celebration with music, dancing, feasting and boisterous drinking. This paganism is somewhat present in the way the British celebrate Christmas today. It is a lively affair with song and dance - parties and revelry. Christmas went through several transitions such as the introduction of the Holy Day and Fast Act of 1551 and then along came Cromwell in 1647 making Christmas illegal, calling it immoral. But Cromwell’s tight fist wouldn’t last long - all it took was a lady. It was Queen Victoria who introduced gift giving and we were back on track to Christmas as we know it. A week before Christmas in 1843 Charles Dickens penned his book A Christmas Carol giving us the model for our modernday celebrations. In our village, Christmas Eve was spent INSPIREDHOMEMAGAZINE.COM

singing carols, going to church or spending time at the local pub with friends and family. This was the day to hang stockings over the fireplace, put out mince pies and a glass of whiskey for Father Christmas (aka Santa Claus in America). We roasted chestnuts by the open fire, juggling them in our hands waiting for them to cool enough to peel of the hard shell revealing the meaty goodness inside. There are many origins of our Santa, he was said to be St. Nicholas, a Bishop living in Turkey. The Dutch made him into a gift giver who brought presents to young children. But England held firm that they named him Father Christmas and that holds true today. Prince Albert imported the Christmas tree and it quickly became an everlasting symbol of the holiday. The most fun comes on Christmas Day with Wassail, a warm mulled wine & fruit punch,
eggnog with a heady splash of brandy or rum and shandys for the boys (half beer & half ginger ale). Let’s not forget the presents. When we were youngsters there were no presents under the tree until Christmas morning. Father Christmas (or our parents) would stack presents under the tree once we were tucked in for the night. Lying in bed, with great anticipation of what would be under the tree, listening to our parents laughing and having a drink with friends, lulled us to sleep. Piling out of our beds for the mad scramble to see what Father Christmas had left under the tree, we slid into the living room, wildeyed and unstoppable. Grabbing our parents’ presents, we rushed to their room, and jumped on the bed waking them to open their presents. Eventually we made it back to living room with bleary eyed parents in tow to watch us open ours. The main event was yet to come with Christmas lunch. And what an event! The table was set with our best linens, china, silverware, crystal and flowers. Base plates held the proverbial Christmas crackers, a must for every Christmas dinner. The crackers held the silly paper hats and novelties, but it was the silly hats that made it Christmas. You would pull your crackers with the person next to you and the one with the biggest piece got the goodies. Not to be mistaken with Christmas cake or the dreaded fruit cake you find packed in a tin. Christmas “pud” is moist, with nice soft fruit, served warm with a good dollop of creamy sauce. There is no mistaking as it has the sweet taste of the sherry it has been fed weekly for the past month or longer. But there is more to Christmas— spreading joy, reflection, laughter, a drink or two and spending it with loved ones. My Christmas Pudding recipe. Enjoy and Happy Thanksgiving and Merry Christmas! Christmas Pudding: Make six weeks before Christmas
This recipe will yield enough for 6-8 people. It is a great leftover warmed and served with ice cream or, better still, share it with friends. ¼
cup dried cranberries, coarsely chopped

cup + 2 Tbs. Crisco shortening (frozen)

cups fresh white breadcrumbs, with no crusts (Do not use store-bought.)

METHOD: Use a 1½-quart Pyrex glass mixing bowl for cooking the pudding. Use a larger one to mix ingredients. Place the empty glass bowl in a saucepan and fill saucepan with water half-way up on the bowl. Remove the bowl and bring the water to a low boil. Macerate (soak) the dried fruits in the sherry for at least three days Grate the shortening on a box grater using the large holes, return to the freezer. Combine all the dry ingredients. Fold in lemon zest, grated apple, honey and egg. Scrape the dried fruit into the bowl. Stir to mix well. Fold in the Crisco, mix well, leaving small pieces visible. Butter the 1½ quart Pyrex bowl. Push the mixture down into the bowl leaving no air pockets. Cover bowl tightly with foil and then plastic wrap and another layer of foil, making in water tight.
Place bowl in hot water bath and steam for 5 hours. Adding water as needed. After 5 hours, carefully remove bowl and, when cool enough to handle, remove foil and film. Cut a circle of parchment paper to cover pudding. Place in cool place, such a larder, until Christmas Day. Once a week, remove parchment paper and, using a skewer, punch some holes in the top of the pudding. Then “feed” the pudding a few ounces of sherry or brandy. Cover and put back in the larder. On Christmas Day, re-wrap with foil and plastic and steam for 3 more hours. To serve, turnout onto large plate. Douse with a little warm brandy and light. EGGNOG CREAM: Whip 1½ cups heavy cream to soft peaks. Add a ½ cup eggnog liqueur and whip until stiff.

ew occasions call for a flambé dessert as much as Christmas, and the British have it covered. Christmas pudding, a steamed confection abundant with fruits and spices, has holiday spirit and “spirits.” It macerates with brandy or rum and is traditionally served with flaming brandy.
Flambé
THINGS YOU'LL NEED: • Wide‐rimmed serving plate • 80‐proof brandy • Safety lighter or long matches • Large pot • Long‐handled ladle Flambé desserts are perfectly safe when executed properly. Light the fumes, not the alcohol. Place a metal pot close by to snuff an aggressive flame. Turn the finished pudding out onto a wide‐ rimmed serving plate. Place the plate where you'll serve the pudding, which will give your guests 15 to 20 seconds to view the flames before they subside.
Heat about 3 tablespoons of 80‐proof brandy in a deep saucepan over medium heat until small bubbles form around the edges, about 45 seconds. Pour heated brandy into a long‐handled metal ladle. Hold the ladle of warm brandy just above the pudding and tilt it slightly, just enough to make the brandy easier to light without spilling. Have a helper ignite the brandy fumes using a safety lighter or long match. Pour the flaming brandy over the top and sides of the pudding. Let the flame extinguish itself before serving. Brandy burns blue and will best be viewed by guests under low lights.

here is never a wrong time for bubbly, but it seems especially fitting for the holiday season. Toasting to the past year, to new beginnings and to celebrating life with friends and family—what could be more fitting?
Champagne hails from the Champagne region of France and is made from chardonnay, pinot noir and pinot Meunier grapes. The bubbles are created in each bottle, which is the classic French method. The taste profile you experience will be yeast driven, with notes of biscuit and baked goods, sometimes even cheese. Prosecco, on the other hand, comes from Italy, is made with Glera grapes and is tank fermented, creating lighter bubbles. The taste profile on prosecco tends to be more fruit and floral driven. Scandinavian style

Once baked, the boller look like sunshine in a snowstorm. The golden yellow custard, surrounded by sweet, snow-like coconut, make them perfect for holiday baking — a wonderful way to warm up the kitchen on a cold winter morning.
C
entral to Norwegian baking are “boller” or buns. They are known for having a touch of sweetness and, like many Nordic pastries, cardamom. Boller come in an endless array of shapes, fillings and sizes. Some are simple round buns while others are baked into beautiful knots. One boller recipe I have been meaning to make since visiting family in Norway is for “skoleboller” or school buns. These buns are shaped in a simple roll, filled with subtlety sweet custard, and wrapped in coconut clinging to a vanilla glaze. The dough is airy, light and truthfully perfect. Once baked, the boller look like sunshine in a snowstorm. The golden yellow custard, surrounded by sweet, snow-like coconut, make them perfect for holiday baking — a wonderful way to warm up the kitchen on a cold winter morning. It is hard to know the origination of the Norwegian school bun, but it has been traced back to the 1950s in Norway when it was first placed in children’s school lunches. Today, they are found everywhere in Norway from gas stations to high-end bakeries. However, like most things, you won’t find a better one than right from your own oven. Depending on where you are in the country, the boller have different names. Skoleboller in western Norway; skolbrød in the east; tolvøres, purke, sånn med gul I midten, pai and lørdagsgodt everywhere in between. I just call them heavenly. Skoleboller are simple to make and, like most yeasted breads, they just require some time. The recipe I used mentioned the dough would be “wet.” I didn’t know what that meant, but, after having made them a few times, I now know. The dough IS very wet. At first, I thought I should add more flour because it really had no structure, but don’t. The dough is very loose and soft during both rises. Add only enough flour to be able to move the risen dough from the bowl to your board or work surface. I didn’t think it would hold up when I shaped it into a log and cut into 12 equal pieces, but it does. The final result is a beautiful, light, bun.

While the dough is on its first rise, make your custard. You could even do this a day ahead of time; just keep the custard in the fridge overnight. The recipe doesn’t say how long to cook the custard for. I found 10 minutes is just about right. Do the wooden spoon test if you are not sure. If you can scrape the back of a spoon with your finger and the mark you made stays, the custard is thick enough. To make the well or indentation that will hold the custard, a pestle portion from a mortar and pestle works perfectly, as the recipe notes.
You could also use the back of your knuckle, or a spoon to open up a hole. Just be sure to make it symmetrical and to push the dough all the way down because it will rise up again during the baking. I found it easiest to have a giant bowl full of snow-like coconut shavings to coat the boller. Instead of rolling them through the coconut as the recipe suggests (because the buns are so delicate and light), I held a bun in one hand low to the bowl and sort of shoveled the coconut upwards on the side of the bun — much the
way you would put sprinkles or nuts on the side of a frosted cake. I do a lot of baking and have been meaning to make these for a long time. I can say, in truth, this is the best thing that has come out of my oven. The texture from the coconut and coy sweetness from the custard, and the floralspice of cardamom all held together by the humble boller — one of its many iterations. It is the perfect thing to bake to bring sunshine and warmth into your kitchen on a cold, snowy day.
When shaping the buns, a very simple round shape will do. They do not have to be perfect, so do not fret! Soon they will be beautifully dressed in delicious coconut.
To make the well or indentation that will hold the custard, use the pestle portion of a mortar and pestle, your knuckles or the back of a spoon. Push all the way down, because it will rise up when baked.
I like to make the custard a day in advance. Cover the custard in Saran wrap making sure to place the wrap directly on the custard. This will prevent the surface from forming a skin.
Brushing the sides of the bun with the egg wash before baking produces the beautiful and even golden brown which you desire. This not only looks beautiful but adds delicious flavor.
I found the best way to dust the boller is to place the coconut in a large shallow dish, or a pie pan. I love coconut so I used more than the recipe called for.
I found the glaze in the recipe wasn't quite enough so I tweaked it by adding a little more powdered sugar and milk until I reached the consistency I wanted.

Once you have added the butter, turn the machine on to medium speed for 5 more minutes. The dough will be very elastic and somewhat moist; this is exactly what you are looking for!
(Makes 12 skoleboller)
Place the dough in a greased bowl, cover with a tea towel and let rise in a warm spot

In a food mixer, with a dough hook, place all of the dry ingredients inside. Add the warmed milk and the egg. Turn the mixer on low and knead for about 8 minutes without stopping. afterwards. Warm the milk just before it begins to boil, without letting it boil. Take it off the heat. Steadily and slowly, add the milk to the bowl with the sugar mixture, whisking constantly to avoid any curdling of the eggs. When you have mixed everything together, pour it back into the saucepan and return to the stove. Over medium heat, cook the mixture until it has thickened. You want the custard to be more on the thick side because it will be placed inside the buns. Remove from the heat and allow to cool completely. If you wish, you can transfer the custard to a strainer and push gently through to remove any bits of curdled egg. Place plastic wrap over the top until you are ready to use it. When the dough has finished rising, take it out and place it on a lightly floured surface. Form the dough into a large “sausage” and cut it into 12 pieces. Roll each piece into a round bun and place half of the buns on
one prepared baking sheet and the other half on another prepared baking sheet, leaving a good amount of space between each bun. Cover each sheet with a tea towel and let the buns rise for another 30 minutes. While the buns are rising, make the glaze. In a small bowl, mix together the powdered sugar, egg white and water until a nice glaze forms. In a separate bowl, wide enough to fit the buns, place the coconut. Preheat the oven to 450°F. When the buns are ready, make a nice indentation in the center of each. I like to use the back of my pestle (from my pestle and mortar), but you can use a spoon or anything else that will work. Make sure to press down all the way, as the dough will spring back when baking. Fill each indentation with about 2 -3 tablespoons of the prepared custard, making sure not to overfill them as the
custard might flow over the bun while baking. Brush the sides of each bun with the lightly beaten egg. Place one of the cooking sheets on the middle rack in the oven and bake for 10 -12 minutes (I found 12 minutes to be perfect for me). Repeat for the second batch. Allow the buns to cool completely. When the buns have cooled, take the glaze and place it around the custard center. I find using a small spatula helps with this. And after you have glazed a bun, immediately press the glazed area into the coconut and rotate until the glaze is completely covered by coconut. It is perfectly fine if some of the coconut gets onto the custard. I think this adds to the homemade look. Serve immediately! The buns will last up to two days, but they won’t be as good as when they were freshly baked.

A magical excavation

e’re back at that holly and jolly time of year. Somehow, 2018 flew by in a series of too much work, not enough time for my friends or myself, lots of lovely summer bike rides, some travel, disheartening news stories, family reunions, great food, many excellent books read, and myriad other highs and lows. And, suddenly, we’re back in that period of gearing up for the busiest time of the year. But we all know about this time of year, so I’m going to leave all that alone. This year, I want to address January 2019 and beyond right now because the clock is ticking, and time is resolutely marching forward. One of my favorite go-to books is “Big Magic” by Elizabeth Gilbert. I could fill this reflection with quote after quote from it. I have read it dozens of times since if first came out, and each time I feel like she is speaking to me exactly where I am in that particular moment. Old sections, highlighted and noted, don’t resonate with me every time, and each read brings a

new revelation of another way, illuminating something I need to be reminded of or made aware of right now in my life. I am rereading it now because I’m yearning for change of some sort. I want a great big life, and I often feel like I am being asked to fold myself into a box that is way too small for all that I know I am. This time, new sections of the book hit me squarely between the eyes and knocked me over, asking big questions of me. Early in the book, she writes, “The universe buries strange jewels deep within us all, and then stands back to see if we can find them.” What are your “strange jewels”? How are you going about finding them? Is that work exciting? Painful? Time consuming? Freeing? She continues, “So this, I believe, is the central question upon which all creative living hinges: Do you have the courage to bring forth the treasures that are hidden within you?” Many of us construct New Year’s Resolutions
lists because it is what people do. Some of us get together with friends and create Vision Boards for the New Year, finding images of all the shiny and sparkly things we desire. We commit to losing weight, to journaling more, to eating better… This year, during this crazy season of parties, presents, food and more, I encourage you to actually stop everything for a bit and go inside, go way inside. What are your deep jewels? What are your actual dreams and aspirations? What will you do to bring them to light so that you are living the most courageous, creative life possible? This year, let’s give ourselves the present of self exploration so that when the New Year’s ball drops, we’ve excavated our inner jewels and are ready to share them with the world in 2019. I have some thoughts on what mine are and how I want to pursue them. I hope you do, too. Happy digging!
