She lives in Fargo with her husband and their golden retriever, and she loves when her college-aged son is home on breaks. Zainah Haider Ever since she was young, Haider remembers her parents always taking pictures. “They have inspired me to love photography. We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form.

Ashley F. Johnson Married mother of an active 5-year-old son and a 3-year-old daughter, Johnson also enjoys her career as an inpatient registered nurse in the heart of Oklahoma City. She adds, “I love traveling with my husband and look forward to exploring the world together as a family.” PHIL STAHL Stahl began his lifelong passion for all things creative in South Dakota, where time and long landscapes are plentiful. An NDSU architect graduate, with emphasis in art/ photography, his two-decade practice with Stahl Architects has led him places to observe life, including Europe and the Middle East. He is an adjunct lecturer at NDSU, national speaker for Intern Development, a regular contributor to regional and national home magazines, and has been featured on HGTV and in Dwell. Grace Estes Estes has always found writing compelling. Whether it is as simple as writing a card or writing for a local paper, words have great impact on others. She resides in Grand Forks with her husband and spends her free time cooking and hopes to start gardening at the local co-op this summer. Shauna Fellman A small-town girl at heart, Fellman states, “My dream is to raise our kids in the country with days consumed by exploration.” Until then, Fellman lives in West Fargo with her husband, John, and their two young boys. inter brings to some a season they hope will come and go in a short, efficient manner. They leave for the warmth of sunnier places with the end goal of returning once again to the warmth that spring eventually releases to us northerners. Well, I am here to admit that I rather like the winter season. There is a fresh beauty that covers the land, and yes, it is white snow, a blanket that covers the earth while she rests. I guess maybe my love of winter is one of the reasons we present to you the “White Issue.” Our January/February 2016 issue has everything to do with the wonder of white, whether it shows itself in interior design or something as the simple elegance of a floral arrangement for your home. “Simply White,” the chosen 2016 Benjamin Moore color of the year, gives testimony to the fact that we are indeed in love with the color that is actually the result of the perfect combination of all colors of the visible spectrum. One of the most common colors in nature, it reflects honesty, purity, cleanliness, innocence and light. In this issue, white also becomes integrated into the design of the beauty of our bathrooms, which have evolved through recent years into places that means so much more than a space to cleanse your body. Inspired Home spoke with area professionals and interviewed experts to garner information that we think will be of great benefit to you in planning your own bathrooms, whether you are building a new home or remodeling an outdated one. The misadventures of our adventures Great memories stem from not-so-perfect plans.

ou know how every now and then I talk about the best of intentions—times where I have a reasonably sensible outcome in mind, not much of a plan how to get there, and then am shocked at the crazy twists and turns along the way? This would be one of those times. We love getting away for a little while in the winter and trying new things. Sometimes, I’m just not in the mood to drag my Samsonite Silhouette II three miles up a muddy trail to a quaint monastery that’s been converted to a $300-pernight bed-and-breakfast with no Internet

connection. They play up that “feature” as a tranquility benefit along with bathroom facilities out back and no running water. Rest assured that our tomb in the crypt was anything but tranquil. This year, I didn’t want an adventure. I just wanted to sit and stare—maybe do some normal touristy things, as long as it didn’t require too much physical or mental activity. We decided to take a cruise! What could possibly be better than checking into a luxury hotel and waking up at a different exotic location every morning? I imagined lounging on a sandy beach, umbrella beverage in hand and gluttonous feedings at buffets with shrimp as big as a chicken. Or perhaps enjoying a champagne fountain right next to the chocolate fountain. We could dance the night away at Studio 54-like clubs filled with 50-something-year-olds grooving to “Burn

baby, burn! Disco inferno!” This was going to be great. Our vacations don’t start when we get off the plane. They start when we close the laptop and leave the office. We always join a few friends for happy hour and appetizers the night before we leave. Living in the geographic center of North America, getting to any coast involves waking up at 3 a.m. for a 4:30 flight from Hector International. Not to worry. I’m an expert packer and can pack a 10-day excursion in a 20-inch carry-on—blue shorts, white shorts, six polos, two button-downs, socks, underwear and hair goop. Done. My traveling ensemble consists of khaki pants, sensible walking shoes, T-shirt, button-down shirt, insulated vest, sport coat, cargo jacket, fanny pack, sunglasses and a floppy, wide-brimmed hat, along with a man-purse containing toothbrush, toothpaste, Montezuma’s

Revenge medicine, Sudoku puzzles, gum, the airport parking stub, a trashy novel, mini binoculars, medications, a sticky breath mint, old airline boarding passes, restaurant matchbooks, and a mixture of pesos, Euros and unidentifiable coins. It’s a “middle-aged, Midwestern geek Indiana Jones without the good looks and fight skills” style. It was decidedly too late to pack my bag after happy hour with the gang. Besides, I’d done this a zillion times before and had the routine down. When we got to our interior “state” room, my smug attitude would have flown right out the window if we had one. My carryon contained 18 pairs of black socks, seven T-shirts and a Hugo Boss tie. That’s it. Clearly, packing at 3 a.m. wasn’t such a good idea after all. Every evening the in-room ship’s TV started listing all the fun activities available the next day.

This was my year to try snorkeling! Since I am basically a sheet of pasty white skin very loosely draped over a 170-pound cast-iron frame, I tend to sink like an anchor. Everyone assured me that salt water is so dense that if you have large feet, you can probably walk on it. Sounded reasonable to me. The next morning, we boarded an oversized cabin cruiser that served cocktails. I knew I was going to like this. We got close to a small island that had the clearest sparkling water I’d ever seen. It was teeming with millions of brilliantly colored fish that I suspect had learned that the approaching cabin cruiser full of tipsy Midwestern vacationers meant lunch had arrived and they should hang out for a while. We got our snorkel tube and goggles out of a bucket of bleach water (yuk), strapped on some flippers and hopped in the water. You know that part about salt water being so dense you can walk on it? Not so much. I flailed my way back to the boat to get an inflatable life jacket, which was a canvas vest with a half-inflated beach ball in the front. I precariously floated in the water, looking like some four-legged octopus with appendages dangling over a deflated beach ball. After losing control of the beach ball life vest and flipping over on my back

to right myself, I became a disturbance among the normal people watching the serene beauty below. Maybe something more low-key tomorrow—like a beach excursion. As we rode the tour bus to the beach zone, our guide Flavia described some of the options available to us. There were family friendly beaches. There were breezy beaches and calm beaches, some with cafes and cocktail lounges and others with nothing as far as the eye could see. Yellow umbrellas marked the “sun lover” beaches. She indicated how most of the “birthday suits” on display at that beach required pressing. Like that was going to happen. I wear a coat and sensible shoes to lounge on the pool deck of the ship. Demonstrating shockingly good judgment, we agreed the beach with calm water and cocktails was perfect for us. A few days later, we returned to our Inspired Home in suburban Fargo, tanned, refreshed and energized not only to endure but also embrace the remaining winter. Well, at least spend the next few weeks remembering one more adventure that began with the best of intentions and ended even better than we expected. Wishing you a winter that’s warm and wonderful!

T

here was a time when tile didn’t have much to say. It was bland, it was blah, and it served its dutiful service as a floor covering or as the occasional backsplash. Today’s tile is making a statement and has worked its way to the forefront of modern-day design. It can bring depth, texture and color into what might otherwise be a lackluster space. ome say that white is the absence of color. That may be true; however, there is a growing popularity with its use. White presents a fresh, uncluttered and clean appearance, and traditionally, white is symbolic of goodness, perfection, illumination and purity. Combined with artistry in function and form—with an equally growing interest in using pastels and neutrals—today’s bath designs have developed into visions of tranquility, comfort and luxury. This movement toward the use of white, pastels and neutral shades in products and color tones within the bath plays a significant role in the overall design theme. “People are able to highlight other colors and materials within their bathroom environment while emphasizing a clean and consistent design through the use of white products,” states Erica Spranger, interior designer at Kohler Design Center. “This creates a strong presence while allowing the space to change and evolve. Additionally, we have seen Biscuit and Almond neutrals evolve into new, softer neutral shades, like Dune and Thunder Grey. Many of the glass showers we install consist of two walls of glass. Customized shower doors, with the most popular being 3/8-inch glass surrounds, are also available. If a wall is not completely square, glass is ordered to fit accordingly.” Optional accessories for the shower glass—towel bars, robe hooks, and corner shelves that can be grouted in—add convenience and storage for personal items. It is important to carefully evaluate your bath space to allow doors to swing freely without obstruction. Now in its 55th year, the Home Builders Association of FargoMoorhead is keeping it local and putting the spotlight on the talents of area experts. The presenters this year will be Maria Bosak, owner and founder of Eco Chic Boutique; Eric Watson, chef and owner of Mezzaluna, Mosaic and Rustica; and Mike Arnold, general manager of Accent Kitchen and Bath. Each presenter will be offering their tricks of the trade and how-tos related to their area of expertise. In 2010, Maria Bosak opened Eco Chic Boutique, Eric Watson a funky space specializing in home décor and furniture. She is also curator of the F-M area’s greatest Junk Market. More than 3,500 visitors will peruse the wares of 85 vendors at 2016’s market, which has expanded from its humble beginnings in a parking lot to the Scheels Arena. Bosak will be instructing her audience

on how to paint furniture and master the techniques of the popular Annie Sloan Chalk Paint while ensuring a process that is fun and enjoyable. She will have tips and tricks for designing a home that “hugs you.” Bosak explains, “You know, that feeling you get when you clean your room or even your closets. You sleep better; you’re more content. Your house should be a representation of you, what you like to do, what inspires you. If we focus on those things that make us feel good, then we design more for our comfort and serenity.” Sharing the stage this year is Fargo chef and soup connoisseur Eric Watson. Watson has more than 15 years of experience in all things food and will be bringing a fresh approach to soups for his presentation. Move over, condensed tomato; Watson’s soups are innovative and delicious, and he will be sharing his inspiration with you. ho can forget the grand architectural design of Scarlet’s home in Gone with the Wind? Rich in historic character and exquisite style, colonial homes were first built by early Dutch and English settlers and most prevalent from 1880–1945. Homeowners continue their fascination of this style of home design by merging historic character with modernday charm and amenities. Finding an ideal elevated lot in the heart of Edina, Minnesota, was the first step in designing an extraordinary colonial-style farmhouse that would provide a sense of instant history for two homeowners. They especially loved the idea of creating a home with history, and the large site with picturesque hilltop views was the perfect setting.


Beyond the entryway, the formal living room features a gas fireplace and comfortable seating in soft green and rich chocolate hues.

Before the building began in 2013, contractor Streeter and Associates Inc. in Wayzata introduced the homeowners to Jeff Murphy, owner and lead designer at Murphy & Co. Design in Minneapolis. The floorplan included an original central structure with connecting wings. This is similar to the design of how old farmhouses evolved to accommodate a family’s growth and a future generation’s preferences and spatial requirements. “Following the historical architectural details of colonial homes was of utmost importance,” explains Murphy. “We incorporated many historical elements to the exterior, including a flat-roofed INSPIREDHOMEMAGAZINE.COM

columned entry with entablature, working shutters made in Pennsylvania, a pent roof over the garage service door, tin roofs on the connection, brick chimneys, and cedarshingled and clapboard siding.” A screened porch and breezeway addition connects to a private carriage house with a separate staircase to attic-level rooms. The nearly 1-acre lot beautifully balances the stately 8,000-square-foot home with four bedrooms and six baths. “The interior also utilizes a mix of historic architectural detailing with a modern vibe, especially with lighting, hardware and certain furnishings,” Murphy adds. “A detailed paneled entry gallery welcomes

guests and displays the owner’s collection of artwork and personal photography. Doorways have over-door detailing with a pulvinated frieze. Shiplap siding adorns the mud room walls, giving it a more casual feel with protection from everyday life.” Dark wood flooring that offsets white trim work is featured throughout the home’s entry, living room, great room, kitchen and master bedroom. second floor and lower level, lend an update to historical colonial farmhouses of the past. The homeowners disliked the idea of a traditional colonial, where the staircase is designed near the entry. Instead, they preferred to reposition the staircase in the family room, where everyone gathers. This better combines the two levels, while creating an interesting backdrop to the room. The room’s pale green and chocolate hues are anchored by white architectural columns, shelving, trim and doors. An additional owner’s entry was designed with a built-in dog kennel, cubical shelving, and baskets that help organize personal items. Maintenance-free steel-gray slate flooring withstands daily traffic. Throughout the home’s exterior and interior, the homeowners requested the use of white. “The simple white siding and windows with dark shutters is a timeless, classic look that will never lose its appeal,” Murphy notes. “To keep the interior fresh and bright, the owners selected white as the main color. Jenny shared with Inspired Home some information about their company and their stunning products. In the early 1960s, young Edgar immigrated with his family from Paris to Brooklyn. Fourteen years later, Jenny, a native of Ohio, met and married Edgar. Upon purchasing a home in Massachusetts, the Berebis had difficulty finding the beautiful knobs and pulls they desired for their own cabinetry. Frustrated, Edgar literally took things into his own hands by designing and creating his own. The rest is history. The company’s designs are intricately detailed, and it all begins with a single sketch. Jenny explains, “Every style starts with an architectural drawing. A master model is made, molds are made, and then the style is cast, polished, sent to plating and finishing, and then enameling and crystallizing, if items call for it. Inspections take place between each step. Finally they are wrapped and tagged for the order.” The inspiration for their products, she adds, “comes from fabric, architecture, master jewelers and works done by the old masters.” Each piece is painstakingly created by artisans trained in the Old World craftsmanship style of Guilloche engraving, named for the French engineer by the same name dating back to 16th and 17th century France. The process is a painstakingly precise act of engraving intricate and repetitive patterns into an underlying metal, such as nickel, brass, copper or pewter, to which colorful enameling may or may not be incorporated.

technologically and becoming more affordable,” explains Marshal Albright, vice president of development and energy services at CCEC. “However, it is a complex issue for power companies when scheduling power delivery; fluctuating hourly production from renewables requires alternative sources of power to balance continuous flow of energy production.” The PSC project is an innovative array of 252 connective panels, 400 watts per panel, that will be constructed within three to four weeks during the spring of 2016. All members, whether commercial customers or those residing in homes or apartments, can participate by purchasing solar energy credits toward their energy bills. Participation costs cover their portion of the construction, the installation of the panels, connection to the array of panels, maintenance, insurance, and connection to CCEC’s power distribution system. Member homeowners can purchase a full panel for $1,670 or a half panel for $835 with an option to purchase up to 10 panels. Commercial members can purchase up to 50 panels of the total 252 panels. Albright indicates that the project will be rebid this winter, and the cost to participate will likely be lowered as they await approval of renewable energy grants from the state of North Dakota. “Currently, we are utilizing both wind and hydro for renewable energy,” states Trudy Wanner, manager of marketing and communication at CCEC. “Now, we’re adding solar to the mix.” INSPIREDHOMEMAGAZINE.COM

“There are many who believe that solar and wind can power the entire country. Today, that is not possible,” Albright admits. “Both solar and wind need backup sources of energy when the sun doesn’t shine or the wind doesn’t blow. Neither can stand on its own. People always appreciate when the lights are on all the time.” Today’s consumers are more aware and interested in the benefits of solar power. Albright notes that increased popularity among CCEC’s members, in combination with green energy and green building, are both significant reasons behind the inspiration for the project. “People are looking to invest in energy sources to secure a cleaner world for generations to come,” Albright notes. As technology continues to play an important role within the energy industry, CCEC will pursue future renewable methods of energy production. Their primary purpose is to supply reliable power and keep rates affordable for their customers. “It takes a lot of energy to live today, and equally, to live in North Dakota,” Wanner concludes. “We are happy to partner with INSPIREDHOMEMAGAZINE.COM

ith the winter cold upon us, we must remember to do all we can to keep our pets warm and safe. The cold weather in North Dakota becomes bearable because we prepare ourselves for it. Heavy coats, protective footwear and gloves keep the subzero chill out. We should be protecting our pets in the same manner. Although some pets fare better in the cold than others, it is always best if they have access to the indoors. Dr. Tammy Weiand-Ness, a veterinarian at Animal Health Clinic in Fargo, says that it can be difficult to say exactly how much cold your pet can tolerate. Oftentimes it depends on the size and breed of your animal. “Some dogs are exclusively outdoors. These dogs can acclimate to the environmental changes, and as long as they have an insulated shelter where they can keep dry and out of the elements, they can do well. They should also have access to food and water that is not frozen,� she says. Small dogs and elderly or very young dogs or cats are at a higher risk for succumbing to the cold and require extra protection.

Although we live up north, we can’t expect our animals to stay inside all winter long without walking or playing in the snow. Pet outerwear is an excellent way to protect our animals in chilly temperatures. Winter boots protect the pads of your pet’s feet, which may become susceptible to the freezing ground, and sweaters help maintain a nice warm core body temperature. Weiand-Ness offers a bit of advice on those adorable yet functional garments. “The challenge can be getting your pet to accept them and keep them on,” she says. “This may require a bit of training, so it

would be best to start that process before those items are needed.” This will help them gradually assimilate to the garments in time for the first snowfall. Cold is not the only threat to our pets during the chilling months of winter. Almost everyone has antifreeze on hand, and often it is out in the open. It’s bright in color, and it smells and tastes sweet— and it’s deadly if consumed. Even a small amount of this toxic compound ingested by your pet can result in kidney failure or death. If you suspect that your pet may have consumed any of this product, call your vet immediately. Weiand-Ness warns

to watch for signs of consumption. “The first symptoms usually noticed are an increase in thirst and urination. Vomiting may also occur. These can be followed by neurologic symptoms such as problems balancing progressing to becoming stuporous or comatose,” she says. “Fortunately, the prognosis can be good if your pet is treated immediately after ingestion of the antifreeze, so quick action in bringing your pet to your veterinarian is critical.” Pay close attention to indications of overexposure in the cold weather months, and be mindful of the signs of frostbite. “The areas most commonly affected are the tail, ears and footpads,” says Weiand-Ness. “It can appear initially as a central white plaque with surrounding inflammation. More severe cases can develop blisters. More concerning is developing hypothermia, which is life-threatening.” She suggests that if you find an animal out in the cold to cover it immediately with a blanket to prevent any further heat loss, and bring it to a veterinary clinic for further warming and medical attention. Weiand-Ness recommends that pet owners refer to the Tufts Animal Care and Condition (TACC) scales, which can be found online. They offer a chart to help determine how much extreme weather your pet can tolerate, hot or cold. You can calculate when and how long to leave your pet outside by using your animal’s size, age and body condition. Contact your local veterinarian for any questions specific to your furry family member, and remember to bundle up!

When acting out your dreams becomes a nightmare By Ashley Ferragut Johnson

I

magine that you are fast asleep having a nightmare about being chased or trying to protect your family from an intruder. Instead of opening your eyes to find yourself warm in bed, you are alone, standing in a place you don’t remember going. For many Americans, this is their reality. REM behavior disorder (RBD) is a sleep disorder that causes people to physically act out their often vivid and frightening dreams. During REM sleep, when most of your dreaming occurs, healthy sleepers experience atonia, temporary paralysis of arms and legs preventing most gross motor movements. For those with RBD, instead of remaining at rest, they become physically engaged and act out their dreams or nightmares, often 70 | January/February 2016

running to or from something. People have jumped out of windows, found themselves in the street, or worse. I am married to someone who has been a sleepwalker since he was a child. Into adulthood, the episodes became more frequent and frightening for him. One evening, a nightmare he was having landed him in the ER, where he would receive 43 stitches and a referral to a sleep specialist. It was there in the ER that we learned of RBD and were able to seek treatment for this unusual sleep disturbance. Dr. Seema Khosla, medical director for the North Dakota Center for Sleep, says that oftentimes, it is the sleeper’s spouse or partner who often becomes aware of the problem.

“Many patients are completely unaware of their behavior, so the bed partner is often the only one to realize that something is amiss,” she says. In my case, there were mornings after an episode where my husband had no recollection of events or conversations that occurred during the night. Though its exact cause and origin is unknown, Khosla notes that some risk factors for RBD include sleep apnea, antidepressants and sleep deprivation. Treatments may vary from person to person. In my husband’s case, a simple pill 30 minutes before bed keeps his body from physically engaging his dreams, and he’s able to have a restful night’s sleep. person who suffers from RBD safe at night, and a lot of it is environmental. Khosla explains, “Medications are helpful, but the most important intervention is to keep the sleep environment safe—no weapons, no sharp objects. Some people pad the headboard and move to a ground-floor bedroom. Separate bedrooms may become necessary as well. Depending on his findings, a neurologist referral may be necessary for occasional checkups to observe for early signs or symptoms of Parkinson’s disease. Don’t be afraid to discuss RBD with your doctor. “If it ever is something that causes any sort of worry, it is worth having it evaluated,” says Khosla. “It may sound silly or trivial, but dream enactment can have

devastating consequences. The decision to pursue treatment depends upon the severity and frequency of episodes. If the bed partner or the patient is at all concerned, I would advocate that they pursue further evaluation.” The good news is that it is treatable, and a full night of restful sleep is now once again the norm at our house. We may not have prevented my husband’s late-night emergency room visit, but hopefully this information can help prevent someone else’s.

A soap story Create your own fragrant and beautiful soap

recently made a weekend trip to Sharon Springs, a charming town of just more than 500 people in upstate New York. The narrow streets are lined with quaint boutiques worthy of Martha Stewart herself; she, of course, has visited multiple times. During the 19th century, the town’s main draw was its naturally formed mineral springs. Every summer, tens of thousands of visitors arrived, including Oscar Wilde and members of the Vanderbilt family. Framing the now-abandoned spas are picturesque pillars and domes where the well-to-do would soak and relax in a healing mineral bath of gently bubbling water. They stand now as a reminder of days gone by. After exploring the town’s many spring baths, I stumbled upon a shop that specializes in making homemade soaps. Upon walking in, I was greeted by a bouquet of alluring scents: citrus, lavender, honey, herbs and spice. McGillycuddy’s Naturals has been making soap the old-fashioned way with locally sourced herbs and 100 percent pure oil for more than 25 years. They raise

Equally creative to making soap is choosing how to package it. Simply stack and tie their own goats for their goat milk soaps and hand carve their molds with shapes from delicate flowers to intricately carved animals and holiday themes. I was inspired to make my own soap. Some people are reluctant to make homemade soap because of lye. I am one of them. Lye, also known as sodium hydroxide, is extremely caustic and can cause bad chemical burns. Extreme caution must be used when handling it. When blended correctly with a fat, a chemical reaction called saponification occurs, resulting in soap and glycerin. I decided to forgo all this and use the simple glycerin pour-over method. The soap is lye based, but the chemical process involving lye has already been done. I like this method for two reasons: It is a great last-minute option for homemade gift giving, and I don’t have to worry about poorly incorporated lye, which could be potentially dangerous. You’ll need a few basic ingredients: glycerin, herbs/plants/essential oils, and molds. I purchased my glycerin in a 2-pound block, which cost about $7. You can find them at any hobby or craft store along with molds and essential oils. Depending on your desired shape, you can use silicon cookie molds—store bought—or any vessel you own. I wanted to be as economical as possible, so I poured my soap mixture into a cleaned-out quart-size milk carton. After the glycerin cooled, I peeled off the carton and sliced them into squares. There are limitless fragrances for homemade soap. Herbs and dried flowers are lovely options, or use spices such as turmeric to add color. Add 1 to 2 teaspoons of oatmeal or poppy seeds per pound to add texture and aid in exfoliation. When adding textures, be sure to let the soap thicken slightly as it cools before you blend them in; otherwise it will sink to the bottom. When your soaps have cooled and hardened, you may notice small bubbles. These easily vanish by spraying rubbing alcohol on the soap surface, resulting in a beautiful

Method: Grate or chop your block of soap. Melt it by using a double boiler or at 30-second intervals in the microwave. I prefer the double boiler method because you have more control. Prepare your molds. You can spray them with cooking oil to help release the soap; however, this has never been an issue for me. Get creative! Once you have a smooth liquid, add dried herbs such as basil, flowers, spices or essential oils such as lemon, jasmine or peppermint. If you add texture such as herbs, oatmeal, seeds or flower petals, pour the soap in the molds and let it cool slightly to set; then add your extra ingredients to avoid settling. Pour into molds. Let your soap rest and harden, depending on the size of your mold, 1–3 hours.

lthough it should be, soup is rarely on my radar. When planning a lastminute dinner or brown bag lunch, I tend toward really uncreative things, like toast with mustard, until something jogs my faulty memory. Oh yeah, soup—nutritious, filling, perfect for any winter meal. And hey, you’ve made at least 2 gallons a day for most of your working life. I don’t easily translate cooking at work to help me at home. Maybe because of this, I am fascinated by those who transition well between commercial kitchens and home settings and integrate a restaurant schedule into a life that involves kids, activities and a semblance of work-life balance. Sara Watson, of Mosaic Foods and Mezzaluna and Rustica restaurants, is a chef who succeeds in all of the aforementioned settings. She and partner in life and work, Eric, manage to own and run a mini-food empire and still have a home-cooked dinner with family more often than not. Before the four children, husband and restaurants, Sara was a local girl who first left town to study liberal arts at the University of Minnesota in Minneapolis. While getting her undergraduate degree in art history, she happily worked in restaurants. Post-college, she decided to attend a three-year apprenticeship program at the Colorado Mountain Culinary Institute, where she met a young chef instructor named Eric Watson. The rest, as they say, is history, and at some point that history moved back to Sara’s home town. Sara’s no-nonsense approach to home cooking includes judicious use of a slow cooker, good braising technique for hearty winter meals, and keeping

Sara Watson’s Caramelized Onion, White Bean and Kale Soup

DIRECTIONS: Preheat the oven to 375.

Serves: 4 entrée portions

Heat 1 tablespoon of oil in a soup pot. Once hot, add sliced onion and cook on low heat until the onions are nicely caramelized, about 20 minutes.

INGREDIENTS: 2 tablespoons oil 1 yellow onion, sliced 2 large chicken breasts 1 tablespoon Italian seasoning 1 clove garlic, minced 1 can cannellini beans, rinsed and drained 1 quart chicken stock 1 bunch kale, cleaned, stemmed and chopped 1 tablespoon red wine vinegar Sea salt and pepper to taste Shredded Parmesan to taste 1 tablespoon fresh thyme

Toss chicken breasts with the second tablespoon of oil and dried Italian seasoning. Place chicken on a sheet pan and roast until cooked through, about 7–10 minutes. Remove from the oven and let cool. Shred chicken with a fork and add to the caramelized onions in the soup pot. Add garlic, celery, beans and chicken stock. Bring to a low simmer and cook for roughly 20 minutes. Add chopped kale and vinegar. Cook another 5 minutes. Season with salt and pepper to taste. Garnish with shredded Parmesan cheese and fresh thyme. Serve with good crusty bread.

it simple but real for the kids (ages 6 to 16). Always good at recognizing what the customer wants and needs, she advises build-yourown options where kids can choose their own ingredients and knowing when to call in the reserves—take out. For this easy winter meal, she used Google in a way that I am embarrassed to admit has never occurred to me. Her search included the ingredients she had in-house (chicken, white beans and kale). An hour later, she had adapted an Italian-style soup recipe, and lunch was ready. While we don’t all have the mad skills to pull a dinner out of our pantry, using the Internet as a well-indexed cookbook is a game-changer. With Sara’s low-key expertise and tasty results, I will definitely be following her lead. Hearty soup and Google may make this the easiest winter yet.

’ve always liked makeup. When I was very young, I vividly remember going into my parents’ bedroom and up to my mom’s dressing table. On it were some magical items: a mirror that was on a swivel so that you could rotate it to be a magnifying mirror or regular. It had a switch that took the little lights at the top of it from regular to pink to kind of an eerie, pale blue-green. I loved that mirror. Something about watching my face go from normal to big and from “regular” to slightly pink or green—it was so dramatic and immediate. Beyond this mirror, she also had a kind of square palette of about 24 small squares of magical, sparkling eye shadow. It ran the gamut of the rainbow, starting out with pale pinks and moving through the yellows and oranges and on to the deep greens, blues and purples. They were all like tiny geodes of magnificent color, and I remember gazing at them longingly. There was a miniature terra-cotta urn filled with loose, sparkling turquoise eye shadow that came out on a stick with a little puff at the end. That was almost more than I could handle with its princess-like beauty. It always had a little explosion of sparkle when you put the wand back in, and I would watch, transfixed, as the shadow settled on top of the dressing table. It was fairy dust, of that I am still fairly certain. Inside a little drawer lived what were

probably my favorite treasures: some necklaces that were secret perfume lockets. There was a plain silver kidney bean on a silky ribbon and a much more elaborately designed broach with a little garnet-colored gem in the middle on a gold chain. Both of these opened up to reveal a creamy perfume that you could run your finger across and apply to your wrists and neck. These various items weren’t particularly valuable, and most of them haven’t stood the test of time, but they were the finishing touches that I watched my mother use to complete her look in the mid-1970s. They were the details that tied her all together, and they are some of my strongest memories of my preschool years. Today, I wouldn’t dream of applying sparkling turquoise eye shadow, and I can’t imagine I would want to apply makeup underneath a pale, bluish-green-tinted light, but that corner of my parents’ bedroom holds a sacred place in my memory because it’s where I began to put the pieces together of whom I wanted to be when I grew up. It’s where I realized that “getting ready” had significance and meant that you wanted to present your best self beyond that bedroom door. Those items represent how we showcase ourselves and how we want to be seen in the world. Actually, maybe a little more magical sparkle would be a good thing. INSPIREDHOMEMAGAZINE.COM
