his time of year, thoughts of warmth and sunshine creep their way into our busy minds, giving us Northlanders a sense of the realization that more temperate days are indeed moving toward us. The hectic pace of the holidays is over, and we have settled into a comforting pattern of familiarity with work, home and family. At Inspired Home, the Bed & Bath issue becomes a place where we seek out the warmth and comfort of our own homes to spite the cold temperatures outdoors and the sound of the howling north wind. We create a sense of solace, respite and relaxation by way of bed and bath design and by utilizing bath products that help foster warm, spa-like experiences for us without the purchase of an airplane ticket to warmer regions. We have interviewed a bevy of resources, from Brittany Sinclair—a Fargo businesswoman whose interest in saponification (soap making) led her to create natural soaps, chemical free and organic for her clients—to the talented designers of the most beautiful and trendsetting bathtubs available on the market. It goes without saying that a beautifully designed bedroom suite doesn’t necessarily guarantee a good night’s rest. Restorative sleep is a vital component in our lives, and with the help of Dr. Seema Khosla from the North Dakota Center for Sleep, you will learn about sleep deprivation and when it may be necessary to seek professional help to get your sleep health back on track. he air in the house tends to get a little dry this time of year, especially upstairs late at night. Dry skin and raspy voices are not attractive for those of us on the far side of 50. It was finally time to get out the humidifier. Looking up as it came in the bedroom, I froze in terror. It was the “broken” humidifier. That should not have been such a big deal, except we no longer had the “brokenbroken” humidifier in the storage closet just in case we needed to cannibalize some parts to fix the “broken” humidifier. Unbeknownst to the one digging out the humidifier, last spring during cleanup week, under cover of darkness, I had smuggled the “broken-broken” humidifier to the curb. I hid it under a 1970s bean bag chair carcass that had been bean-free since ’93 and a three-legged wicker chair that I was finally given permission to dispose of after it had spent the past four years on the back side of the garage. Before I could utter a word, it was remembered that the “broken” humidifier had been replaced last season with a new model, as it was clear after purchasing not one but two humidifiers over the past four years that the maker of the “broken” humidifier and the “broken-broken” humidifier was not a reliable manufacturer. The “broken” humidifier went back into the storage closet, and out came its replacement, made by a more reputable company. No one thought to ask where the “broken-broken” humidifier might be. I was safe—at least this time. There really shouldn’t be that much anxiety and drama surrounding a portable electric appliance. This is what happens when a “Why file it when you can pile it?” Personality type shares a household with someone who firmly believes “When in doubt, throw it out!” Whether it’s incoming mail or empty “White Delight Whipped Topping” containers, there are very distinct opinions on how to manage household stuff and what should stay and what must go. As you might imagine, I fall into the “throw it out” category and share a home with “pile it high!” It’s been long established that I have certain control and organizational issues that are best quietly acknowledged and thoroughly respected.

It’s also well-known that long-suffering “pile it” can reach a breaking point when the receipt for a pack of breath mints purchased in the Newark airport is nowhere to be found. “It is a legitimate business expense and must be included on this month’s expense recap, and it does not matter if it was only $1.19. I will not stop looking until the receipt is found. It was right here on the kitchen counter beside the broken measuring cup I was fixing!” The broken measuring cup is lying on a Price-Club Halloween ad. It is now mid– January. Where do you draw the line? It’s relatively easy to agree that the “Prize Fighter” grilling machine hasn’t seen the top of a kitchen counter in more than a decade. It might be OK to give it to someone who thinks using this contraption will yield fat-free burgers. Because we believe carbs are poison and I cannot keep track if this week the media insists coffee is toxic or if it will prolong your life and stave off dementia, we’ve ditched toast and coffee and switched to scrambled eggs and espresso for breakfast. Does that mean we should scrap the coffeemaker and the toaster?
Old income tax forms are easy—destroy the evidence after seven years. But what about the kids’ grade-school artwork, when the kids are now in their 30s?

What about cassette tapes that have not seen the light of day for more than 20 years? Do we still have a cassette player? I may have smuggled it to the electronic recycling center a couple of springs ago. I’ve developed some coping strategies that help keep this a house of harmony. People marvel that at any hour of the day, our dining room table is set for a formal dinner for eight. It’s not that we’re prepared for a soiree at the drop of a hat; it’s because a fully set table cannot accommodate daily debris, and thus temptation to “dump and run” is eliminated. Chalk one up for “throw it out.” When the mail pile has reached Mount Everest proportions, I get out the wastebasket, sort out the expired coupons and catalogs, shred the credit card offers, and put what’s left in a grocery bag and hang it from a wooden hanger in the hall closet. When “pile it” suddenly remembers the AmEx bill is due, if it’s not on Mount Everest, it’s in the hall closet. Chalk up another for “throw it out.” A series of small strategies and compromises can allow two people on opposite ends of the clutter spectrum to share an Inspired Home. Even if there aren’t many wins chalked up for “pile it.” Wishing you and those you love an abundance of all you treasure in 2015.

The year 2015 celebrates the concept of monochromatic colors—using warm, cool, dark and light layers of the same hue in the same home. She turned a studded, bare and unusable space above the kitchen into a sensational bedroom with a window seat, which doubles as extra sleeping space, that overlooks spectacular views of the Red River. “I chose a creamy-white crackle finish for the headboard, built-in storage under the bed and 18 drawers and a nightstand,” Newman explains. “A future bookcase will conceal a walk-in closet that is equipped with pullout belt racks and room for extra sleeping space.” New insulation, heating and cooling ensures complete comfort in the newly designed space. Angular ceilings and design details give an interesting nautical effect. And the addition of a personalized desk area provides a perfect study spot. Attic support beams were covered with white oak, the same material used for the flooring. Old-world compass brass lighting complements antique door hardware on salvaged doors Newman purchased from an old house in Chicago. Travertine stone on the steps matches a neutral color palette. “When I work with clients in creating

bonus room spaces, one of my main goals is to design the space for flexibility in its use,” Newman notes. “Ideally, the space can easily transition from a hobby room, office or game room into an extra bedroom for family members or guests.” There are many considerations when planning bonus room spaces, whether it is

new construction or a remodeling situation. Newman expressed the importance of utilizing plenty of natural and artificial lighting. Additionally, she stated that it was critical to heat and cool your bonus space efficiently and effectively and use adequate insulation and sound-proofing materials. “It is also crucial to access necessary plumbing and to plan for electrical needs for technology, appliances, etc.” Newman states. “Use the space effectively by incorporating as much built-in storage as possible. Take advantage of every inch of space! And make your space fun and exciting with distinctive features.” Newman also utilized bonus space above the home’s entryway to design a magnificent bathroom with a concrete countertop and beveled mirrors. A shallow sink allows deep storage drawers. She chose a Carrera marble backsplash and matching arched ceiling to follow the roof ’s curvature. Heated marble flooring in shades of gray and white keeps the space cozy and warm, and she created a distinctive pattern with a hidden drain in the shower. Polished nickel hardware, pedestal legs on the cabinetry and wall-mounted sconces lend a polished appearance. A convenient storage nook features glass shelves lined in marble. Whether you are remodeling or building new, your bonus room space should flow with the rest of the home. “Design your bonus space with a similar look to your home,” concludes Newman. “Then it will feel like part of the home—just like it was always there.” INSPIREDHOMEMAGAZINE.COM

his belief that shiners are rare and tough, just like Manus and his designs. After his high-end commercial construction company went belly-up during the recession, Manus decided to repurpose his employees and equipment, along with meager savings, to pursue a dream of creating modern luxury furniture. Manus, a self-taught designer, created the Mood Rocking Bed as one of his initial designs, and it quickly became a design industry icon, earning him a Rising Star design award in 2012. The materials used in Manus’ furniture are upcycled products, all once destined for America’s landfills, adding ecofriendliness as another great aspect of his home furnishings. Manus employs artists and craftsmen who turn the previously used steel, hardwood and cardboard into home goods that have a low environmental
impact and add high-end design to any room. Designer Mary Lystad of Fargo's own DesigningWomen2 is excited to have the bed on display locally in their showroom. “The oval shape is soothing, and it really catches people’s attention,” she says. “This bed makes a dramatic statement indoors or outdoors.” In 2012, Shiner International merged with Home Source, an international bedding and bath product company known for its upscale line of bamboo textiles and bedding products. he Home Builders Association of Fargo-Moorhead and Accent Kitchen and Bath are proud to announce that Kimberly Lacy, project manager for HGTV’s Curb Appeal, is presenting during the 54th annual Red River Valley Home and Garden Show. With spring right around the corner, it’s never too early to start thinking about giving your home and yard a fresh look. Whether you’re buying, selling or need to tackle a few home improvements, Lacy knows the tricks of the trade. After speaking with the vivacious designer, it was obvious that she is not only talented as a general contractor, landscape designer, interior decorator and painter, but she is also incredibly passionate. Lacy’s mother loved interior decorating, and this talent inspired Lacy as a child. She learned at an early age to pull different elements together to achieve a desired look. Her

love for fashion came early on as well and plays a huge part in what she does in her professional life. “Fashion has always been my first love,” she says. “Trying on a new blouse, the perfect-fit jean and a good shoe is a quick turnaround transformation.” The jump from fashion to furnishing a home isn’t a big leap at all, and it translates well when it comes to her designing. “I learned at an early age how colors, textures and patterns work together in the home and fashion.” Armed with knowledge and experience, Lacy will take center stage at the 2015 Red River Valley Home and Garden Show and provide her listeners with information on how to get the most out of their homes and yards. She will be talking to her audience about “Curb Appeal Made Simple,” “Yard Scheme (Schematic)” and “What to Renovate.” Her fun-loving nature and charisma are just part of what makes her so much fun to watch. She truly loves what she does and puts her heart fully into the projects she undertakes. Her inspiration and joy for her job come from the people around her. “Real, practical and functional living is what inspires me,” she says. “Everyday life inspires me. My clients and their families inspire me. I listen to their present and dreamed experiences with their home and property. I learn their do’s and don’ts, and I do my best to exceed their expectations.” Lacy says she loves the environment she gets to be a part of on Curb Appeal. She and the other designers are constantly pushing each other to be their best and to come up with the next big idea. To be able to express her creativity on the job is something she is truly grateful for, and she loves her HGTV family. “It’s TV, so everyone is striving to attain the same goal—a gorgeous before and after in “the last minute” time realm. It’s truly a rush—the good, the bad and the ugly!” she says. Lacy has also appeared on Designed to Sell: D.C. and Designed to Sell: Atlanta. A Vision for Designing A Fargo home is designed to accommodate sports-minded preferences, urban appeal and livable spaces. hen it comes to designing a home, some truly have a gift. When designing a home for an active, athletic family of five, the details are all about creating a space that is funky, eclectic, fun and—most of all—livable. That was Tami Norgard’s goal when she designed a home for her husband, John Zasada, and their three children. Not an easy task, when their eldest daughter’s style is white on white, their son likes the Washington Capitals hockey team, preferring decorations using hockey tape and sticks, and their youngest daughter and her tiaraed teddy bear dream in shades of princess pink. Decorated in wintery array, the modern dining room has ample natural light, a cable light fixture with frosted white glass, and a handy wine bar for entertaining.

Functional, spacious and modern, the kitchen showcases Cambria quartz counters, maple cabinetry with metal and glass inserts, Jenn-Air appliances and a generous island space.
They chose to build in Osgood, where friends with families were nearby. Building on their modern 5,400-square-foot, two-story, sixbedroom, five-bath home began in 2011. Stacked stone with Hardie board and corrugated metal accents lend an industrial appearance to the exterior. Architectural columns topped with cedar frame a stamped concrete walkway, which is softened by prairie grasses. A geometric-patterned leadedglass entry door and a variety of window sizes present an impressive appearance. “The curved roof areas on the exterior were challenging,” notes Jason Plecity, Plecity Kowalski Construction. “Their desire for a side-entry garage and half-circle front drive required careful planning and a wider golf course lot.” Inside the entryway, a modern staircase with cable railings,

custom raw-steel posts and thick maple treads ascend to a glass catwalk. “Our builder called, asking me to review the steel before installation,” Tami recalls. “He noted that it looked rough with metal stamping and obvious welds, yet the raw, industrial look was what we envisioned.” The decorating palette for the main living spaces includes shades of warm gray, maple and metal with white accents. Tami chose a modern stainless fireplace surrounded by a three-tiered wall system with different finishes to add dimension in the living room. Eye-catching urban gray panels descend from 20-foot ceilings. Floor-to-ceiling windows provide generous natural lighting in the dining room. A quartz-topped, rough-edge wine bar with cubbies for wine bottles is a perfect serving spot. Behind the wine bar is an ultra-chic powder room, laundry area and a mudroom

An adjoining bath shows off a Carrera marble countertop, a clear vessel glass sink, and a white vanity with decorative metal pulls. Bamboo flooring and two glass beaded pendant lights complete the space.
designed with closed lockers and drawers to keep shoes, coats and seasonal items out of sight. A whimsical kitchen sitting area boldly decorated in burnt orange, turquoise and pear overlooks an outdoor patio. The backyard is an entertainment space for all ages. It features a fireplace, built-in grill, hot tub, trampoline, children’s play system and a 40-by-60-foot hockey rink that John constructs each fall. White Cambria quartz countertops, natural-stained maple cabinetry with metal and glass inserts, Jenn-Air appliances, metal pendants, cable lighting and art-accenting eyeball lighting create a modern kitchen space. Molded plywood stools neatly tuck away beneath their island. Interesting metal pieces in the master suite include a wall of family photographs printed on stainless steel, lamps, a mirrored dresser and magnetized signs depicting the meanings of family. John’s office spaced is tucked away in a private area close to the master bath and walk-in closet. Downstairs are photos of metal grain bins from a farm near Arnegard, North Dakota, where Tami grew up. A family-favorite
theater room, family room, workout room, bathroom, guest bedroom and Tami’s office complete the downstairs. Tami spends her days as an attorney with Vogel Law Firm and her evenings and weekends as a busy hockey, soccer and volleyball mom. Besides design, she enjoys creative hobbies of photography, painting, pottery and running. John is also an attorney, managing a national consulting practice for CliftonLarsonAllen. He enjoys running, wake surfing, cross-country skiing and hot yoga and has completed many marathons and Ironman races. “It is not uncommon to see balls thrown over the catwalk or to hear screaming from knee hockey or soccer downstairs,” Tami smiles. “We wanted a fun home, conducive to kids without being too formal. I loved the home design and construction process, although there are things I would change. When you are in charge of design, you’re more critical of the results.” Tami is slowly renovating a home on Pelican Lake, where they plan to move after their children graduate. No doubt that by then she’ll have plenty of clever ideas to incorporate.

They wanted to include some special things, such as metal stairs, curved roof areas and different siding materials. The metal open stairway was a challenge with the catwalk and cable railing system. Using all the unique markings on the metal pieces captured the exact look they desired. The final results were extraordinary!”

Lavender
A relaxing, natural and timeless herb By LAUREN FERRAGUT
L
avender has long been intertwined in our human history, whether fresh in a garden, dried or pressed for oil. Its uses are broad due to its wide distribution across the globe—medicinal, aesthetic and culinary. It is the iconic plant that encourages sleeps, soothes aching muscles and calms our running minds. Lavender is a member of the mint family, and its use is documented as far as 2,500 years ago with uses by the Phoenicians and Egyptians. Not

only was it used for perfumes but also mummification, where shrouds dipped in lavender water were wrapped around the dead. Just as lavender had different uses in different regions, it had several different names. The Greeks called it “nardus” after the Syrian city of Naara, and it was used in temples as a holy herb. It is preserved in verse as mentioned in the Song of Solomon (4:14): “Nardus and saffron, calamus and cinnamon, with every kind of incense tree, with myrrh and aloes, and all the finest spices.” Moreover, it has a powerful and suggestive aroma, and it has been noted that Cleopatra used it to seduce both Julius Caesar and Mark Antony. The origin of the English word “lavender,” however, was derived from the Romans, who used “lavare” in Latin, which literally translates as “to wash,” because it was used to scent the water in Roman baths. Today, lavender is often defined by its calming attributes and is still used in baths and linens. To turn your own bed or bath into a relaxing retreat, you’ll need little more than a small vile of lavender essential oil. Lavender bath: As you fill your bathtub, add six to eight drops of lavender essential oil. Agitate to disperse the oil. For an aromatic shower, put two to three drops of the oil in a capful of water and tip onto your head. Cup your hands over your face and breathe in the soothing vapors. Bed linen spray: In a 4-ounce bottle, add eight to 10 drops of lavender oil and shake lightly. Mist linens every morning as you make your bed to induce restful sleep. Dryer sheets: Put four to five drops of lavender oil on a wet washcloth. Toss the cloth in the dryer to freshen and deodorize your laundry. Throughout history, lavender has proved to be more than just a beautiful bloom. Its vast use worldwide is a testament to the plant that has helped us drift off to slumber for thousands of years.

f you’ve read soap labels recently, you likely found yourself tripping on the pronunciation of most of the words listed in the ingredients. Soap, around in its most simplistic form as early as 2800 B.C., has been modified to our modern culture. The soap aisle is cluttered with a plethora of options—face bars, body bars, antimicrobial, liquid, foam. With these modern versions of a 1,000-year-old

product come chemicals, faux fragrances and artificial coloring. In an age where organic and natural products are an option, we may want to rethink not only what we put in our bodies but also what we put on them. Brittany Sinclair, mother of four, was inspired to create a natural cleansing product she was not afraid to put on the delicate skin of her young children. One morning while reading the back of a soap bottle laden with chemicals, the then-pregnant Sinclair had an epiphany. “Make your own soap!” rang through her mind. “I was so excited I practically ran out of the bathroom to tell my husband, Eric, my new idea. I’ll never forget his face! It was the face of a very patient husband with a very pregnant, very irrational wife. Being the caring man he is, he simply said, ‘OK.’” The Honey B Soap Company, specializing in handmade soaps, body butters, lip balms and bath salts created from all-natural ingredients, was born. Sinclair is originally from Princeton, Minnesota, and lived with whom she lovingly refers to as “hippie parents.” “We lived in the country and had chickens, cats, dogs, ducks and rabbits,” she says. “We lived off the land as much as we could out of necessity, and it taught me and my two younger sisters how to work and be creative.” Sinclair acquired a skill set that dates back 100 years. She can quilt, crochet, preserve food and grow a garden. After receiving a Bachelor of Science in biological sciences and geology minor, Sinclair taught earth, physical, environmental and life sciences for 10 years. After the birth of her third child, she made a personal decision to stay home and raise her family. She now resides in Fargo with husband Eric, who teaches eighth-grade earth science, and their four children: Hazel, 6; Iris, 4; Aveline, 2; and Ian, 2 months. Husband Eric helps by doing the cutting, wrapping and inventory tracking, and her daughters help by twisting on caps, tying ribbons or applying stickers to the finished products. Her father even pitches in by hand-cutting untreated cedar wood for soap dishes. Sinclair notes that as much as 60 percent of what you put on your skin is absorbed systemically, so avoid synthetic and chemical properties whenever possible. e have all felt the effects of a morning after a less than ideal night’s sleep. We reach for our cup of coffee and day dream about what “just five more minutes” might feel like. Groggily, we go about our day and fulfill the tasks our generally hectic schedule demands from us. Though seemingly benign at times, chronic sleep deprivation can be taxing on our relationships, jobs and overall health. Dr. Seema Khosla, a self-described “sleep geek,” is medical director for the North Dakota Center for Sleep in Fargo. She is passionate about practicing medicine and helping those with sleep disorders. She understands how detrimental interruptions in the sleep cycle can be. In the short term, lack of sleep can interfere in our daily routines. You may feel foggy, unfocused and easily distracted. It can be caused by stress and become a stressor itself. Relationships with co-workers, family or your sleeping partner can also be affected. Long-term effects of inadequate shut-eye bring about more alarming and negative effects on health. Obstructive sleep apnea is a common sleep disorder that interrupts sleep by causing short periods of interrupted breathing (apnea). The throat muscles periodically relax, causing an obstruction in the airway. Khosla connects this specific sleep disorder to a INSPIREDHOMEMAGAZINE.COM
host of potential medical issues, including diabetes, hypertension, stroke, dementia, heart disease and pulmonary hypertension. “Sleep loss by itself is a little harder to link to specific medical issues, because there is so much overlap with sleep disorders,” she says. “Sleep loss tends to worsen with age. Many people are sleepy during the day. It is also associated with worsening depression, obesity, diabetes (and impaired fasting glucose), anxiety, hypertension and heart disease.” If your sleep partner displays symptoms of sleep apnea, it is important that you bring it up to your medical provider so that he or she may be evaluated and treated if necessary. Khosla goes on to explain that there are subgroups of people who are more likely to have issues with sleep. Some of these situations may be temporary. For example, having a sick child or a newborn baby at home may cause sleep issues, but these issues are often resolved more quickly. People who do shift work, such as doctors, nurses and pilots, may be at higher risk for inadequate or poor-quality sleep. She also notes that people who are tied to a schedule may have issues getting enough z’s. “Teenagers tend to have a delayed sleep phase syndrome; they stay up late and would like to sleep in, but school dictates that they must wake up before most of their circadian rhythms are ready.” Also belonging to this group are farmers. Khosla continues, “Sunlight and harvest dictate that they must get the work done when they are able, regardless of the amount of sleep they have had beforehand.” It is important to recognize when disturbances in sleep patterns can no longer be attributed to the stressors of daily living. If you feel you may be suffering from chronic sleep deprivation, visit with your family doctor. Give your sleep health the same priority and importance you attribute to tasks in your waking hours. Your body, your mind and your loved ones will thank you.

Preserving a North Dakota Home First Lady Betsy Dalrymple’s book recalls the history behind the North Dakota governor’s residence and the families that made it their home.

M
ost individuals have the pleasure of choosing a home to reside in. An empty house is then comfortably furnished room by room. For North Dakota governors and their families, a historic residence is where they make their home while they serve our state. In December 2010, Governor Jack and First Lady Betsy Dalrymple moved into the North Dakota governor’s residence and found themselves intrigued by the rich history inside those walls. This curiosity inspired Betsy to write a book, Building a House, Making a Home: A History of the North Dakota Governor’s Residence.

They wondered who had built the home, why that specific location was selected and how the home had evolved since it was built in 1959. “Jack and I were inspired by the history surrounding the home and the stories of families that had resided there,” Betsy recalls. “We felt it was important to gather and preserve historic information, photos and stories

about the residence to share with the people of North Dakota. Otherwise, a moment in time might be lost.” Initial conversations started with the home’s architect, Bob Ritterbush. The 10,000-square-foot prairie-style design is complemented inside by earthy stone and rich wood accents. Betsy also visited with many former first ladies and their family members who had resided in the home, including Rick Davis, son of former Governor John Davis; former First Lady Jean Guy; former First Lady Grace Link; former First Lady Barb Olson; former First Lady Jane Sinner; former First Lady Nancy Schafer; and former First Lady Mikey Hoeven. Interior decorator Ed Conlin and former Lieutenant Governor Wayne Sanstead also offered insights. “When we moved into the home, we brought some personal furniture and family photos to help make it feel like home for us,” Betsy notes. “We also display a collection of artwork from North Dakota artists, including Randy Rick, Jon Offutt, Frosty Paris, Sheila Reiman and Walter Piehl. Betsy grew up in Detroit, Michigan, and later attended Briarcliff College in New York, where she studied developmental psychology and earned a teaching degree. Her love for lower elementary and preschool education led her to teach kindergarten and first and second grade in Fargo and later to serve on the Casselton School Board and State Board of Public School Education. Now as Governor Jack’s favorite supporter and fan, she enjoys family time with their four grown daughters and five grandchildren. When time allows, they golf, hunt and fish. always enjoy learning about a cook’s favorite tools—especially those deemed as indispensable. With the opening of Luna Lounge, I had the perfect opportunity to question Chef Ryan Nitschke about his necessary cooking tool. Nitschke started his cooking career in high school. “All of my friends were working in restaurants, so I decided, ‘Why not?’” he says. After a short stint at Minnesota State University Moorhead, Nitschke decided to go through Minnesota State Community and Technical College’s culinary program while continuing to gain industry experience. Almost eight years ago, he moved to the Hotel Donaldson, an environment and team he credits with igniting his passion for the food he now creates. While there, he and Co-chef Nick Weinhandl garnered a nod from the James Beard Foundation in 2014 and maintained the HoDo’s AAA Four Diamond rating for their locally sourced, nose-to-tail menus. He brings that passion to Luna Lounge. If you have missed the buzz or, like me, are afraid of Facebook, it is time to get happy. Where Luna Café has lived since the beginning of the latte boom, owner Nikki Berglund, with Nitschke and Peter Kelly of Green Market, has expanded the space and concept to create the kind of

neighborhood restaurant I have been waiting for, complete with artisanal cheese shop and tremendous wine and beer offerings. Berglund also runs Bernie’s Wines and Liquors next door, so the wine and beer list will be as well curated as Kelly’s cheese list. The new seasonal menu will have Nitschke’s imprint—not too serious, but seriously good comfort food like the fried chicken recipe below—and will include a few kidfriendly real-food options. Nitschke’s indispensable tool is a cast-iron pan. It is your standard, Grandma-issue cast-iron pan that any good hardware store stocks. Cast iron, once well seasoned with fat and heat, is a natural nonstick cooking surface that maintains even heat, making it a perfect choice for frying, roasting and stewing. A cast-iron pan will also survive multiple generations as long as it isn’t put through the dishwasher or put away wet. In Nitschke’s pan, he prepared a good old-fashioned fried chicken, brined for a day to keep the meat moist and juicy. Notwithstanding his pig tattoo, he loves a good chicken dish and sauces this one with a chili and lemon zest mix, Italian pecorino pepato cheese available at Luna Lounge, and a lemon sweet-and-sour sauce. Nitschke takes the recognizable and comfortable and likes “doing something different with it,” which is exciting news for local diners.

INGREDIENTS: 4 cups buttermilk 1 teaspoon kosher salt 1 egg 2 tablespoons flour 2 cups all-purpose flour 1 tablespoon salt 1 teaspoon paprika 1 teaspoon black pepper 1 teaspoon white pepper ½ teaspoon cayenne pepper 2 teaspoons onion powder 2 teaspoons garlic powder ¼ teaspoon dried thyme 1 tablespoon baking powder Enough oil for frying (vegetable, canola, peanut or rice bran oil all work well), approximately 2 cups DIRECTIONS: Break down chicken into 8–10 pieces, or however you wish. Whisk together buttermilk, salt and black pepper. Brine the chicken pieces in the buttermilk for a minimum of 2 hours, up to 24 hours. Remove the chicken from the brine and set aside. Let the brined chicken rest for 30 minutes at room temperature before cooking. Whisk egg and 2 tablespoons flour into buttermilk mix to form a thin batter. For breading, whisk together all remaining ingredients, except for oil. Using a standard cast-iron pan, add up to 1.5 inches of oil, depending on the height of the pan. You will need a margin of at least 1.5 inches between the oil and the rim of the pan so that it doesn’t overflow when the chicken is added. Keep a fryer or meat thermometer handy to monitor oil temperature. Over medium-high heat, bring oil to 350 degrees. Once it is at 350 degrees, turn down the heat to maintain an even oil temperature. Dredge the brined chicken in seasoned flour, shake off the excess before coating with the batter, and dredge again in the seasoned flour. Place breaded chicken on a sheet pan. Repeat with the rest of the chicken pieces. Working in batches, carefully place 2–3 pieces of breaded chicken into the hot oil. Do not crowd the pan with chicken as that lowers the oil temperature and affects the crispiness of the coating. Fry each piece for 8–10 minutes on each side. The chicken should reach 165 degrees after resting for 10 minutes. Between batches, let the oil reheat to 350 degrees before adding the next batch of chicken. Serve or keep chicken warm in a 200-degree oven for up to 30 minutes.

Already worldly by most people’s standards, she wanted to “get someplace really different.” She applied to the Peace Corps and listed her top three choices of world regions: Africa, the Middle East or South America. Their first offer was Turkey. In Turkey, she met the equally extraordinary Ugur Hanhan. They married in Istanbul in 1968 and had two sons, Kenan and Tolga, before moving back stateside. Upon return, the Hanhans settled in Grand Forks, where Sara completed her Ph.D. studies and Ugur, an accountant in

Turkey, opened a Turkish import store, Turk’s Corner. Beautiful copper, blue-andwhite ceramics, glass, samovars, kilims and other amazing wares from Turkey created a space in the then South Forks Plaza that, like its owners, was warm, welcoming and utterly fascinating. Ugur was a man so special that even Midwestern male friends learned to greet as Turks do, with kisses on each cheek. After his early passing in 2007, his funeral service was held in the Empire Arts Center to accommodate all who loved him, and those were just local fans. Sara says that Ugur really started cooking once they moved here because he so missed Turkish food. Although it is rare for a man to cook in Turkey, they learned to cook together and divvied up their favorite dishes to work on. In a family cookbook they later wrote for their children, Ugur writes to “shape the manti like your mother does,” even though he prepared the recipe up to that point. Sharing love and food is recipe enough, but here are two beloved Turkish recipes for your home.

Serves: 6–8 as a meze (hors d’oeuvres or small plates) with a crusty sourdough boule or Italian rustic loaf—good stand-ins for Turkish bread INGREDIENTS: 1 whole chicken, poached, or cooked meat from one chicken 3 cups walnuts 2 slices sourdough, crusts removed, soaked in water for at least 30 minutes 1 small onion, minced 3 cloves garlic, pulverized in a mortar and pestle or minced ½ teaspoon salt 1½ tablespoons paprika ½ teaspoon cayenne 1½–2 cups chicken stock (from the poaching liquid or store-bought)

DIRECTIONS: If you poached the chicken, pull the meat and tear into bite-size pieces. Reserve for later use. Traditionally, the walnuts are ground to extract the reddish oil that separates out from the meal. However, if you do not have a meat grinder, you can pulse in a food processor or blender until the walnuts are the texture of a coarse meal. Pull the bread out of the water and squeeze the bread like a sponge to remove most of the moisture. Add the bread pieces to the walnuts in the food processor bowl. Add the onion, garlic, salt, paprika and cayenne and pulse to evenly incorporate all of the ingredients. Add the chicken stock 1 cup at a time and stir to combine. Then add the reserved chicken meat. This dish is served cold or at room temperature, garnished with parsley and walnut oil (either the reserved or purchased walnut oil). It can be made up to 3 days ahead of time and refrigerated.

The Hanhans’ Manti Serves: 4 as an ample entree
Garlic yogurt sauce 2 cloves garlic, pulverized in a mortar and pestle 1 cup plain yogurt Manti ½ pound ground beef 1 small onion, grated ½ teaspoon salt 2 turns freshly ground pepper 2 quarts beef or chicken broth, homemade or purchased Paprika butter 2 tablespoons unsalted butter 1 tablespoon paprika Mix the garlic and yogurt to create the yogurt sauce. Reserve until serving. For the manti filling, mix the ground beef with onion, salt and pepper. To check seasoning, cook a small spoonful of the filling to taste. To shape and fill manti:

Place a stack of 20 wontons on a cutting board. Cut in half lengthwise and horizontally to create 4 stacks of 1-inch-square wrappers. Cover the wrappers not in use with a towel or loose plastic so they don’t dry out. Place four small squares on a cutting board or clean surface. Brush ½ of each diagonally with water and then place ½ teaspoon of filling in the center. Fold in half on the diagonal and seal the edges. To finish the fold, take the two side corners and fold around your finger to seal. The dumpling should look like the world’s tiniest bandana around a neck (see picture). Place filled dumplings on a wax paper-lined baking sheet. Cover with a towel or loose plastic. When all manti are filled, loosely cover and place in the refrigerator until service. To finish and serve manti: In a soup pot, bring the beef or chicken broth to a boil. Reduce heat to maintain a simmer. In batches, add the manti. They are fully cooked when they float to the surface of the broth. Remove with a spider or mesh skimmer and place on a baking sheet or in a bowl. With a small sauté pan, melt the butter. Once foamy, add the paprika and stir to make a red oil for garnish. To serve manti, put the simmered dumplings in a bowl, top with garlic yogurt and swirl paprika butter atop.

anuary and February are long, dark, cold months. The days are short, and the nights are pitch black. I often wonder about my pioneer ancestors and how they survived those bleak winters. Most mornings I wake to the sound of the wind howling outside my windows, its angry roar pushing against the panes, desperate to get inside. But I also wake up in a fully insulated house, heat moving through the vents, water hot in seconds. My great-grandparents homesteaded in the southwest corner of North Dakota, bringing four little boys, one of them my granddad, with them from Minnesota in the early 1900s. They came with virtually nothing beyond some rudimentary items, and they arrived to next to nothing. My great-grandmother, Alfreda Bowman, wrote her autobiography in her 80s, and she referenced these dark, cold nights throughout the book. One of my favorite sections is where she reflects on the kerosene lamps. She recalls: Of course there were always lights to think of having ready. Lamps to fill with kerosene, wicks to trim and lamp chimneys to wash; same way with the lanterns. And if anyone was out late at night, leave a light burning in the window for a guide so they would follow it to their homes. Many a night I’d have a

There’s something compelling about the image of these lamps periodically showing up on the prairie as a guide to travelers. I imagine being lost on the rough land that makes up the topography near the Badlands, wandering with no light to guide the way—then, in the distance, a glimmer of a flickering lamp, indicating a homestead and people welcoming you in if you were a wayward wanderer. We don’t have these kinds of experiences anymore. We don’t live in complete darkness once the sun goes down. Many nights, my husband and I have been out walking our dog, and I am grateful for the streetlights, the porch lights, the car lights and my cellphone light, but do you know what’s missing from this era that was so abundant in the past? Hospitality. This winter, even though we don’t need to provide physical light to guide people home, find a way to be the figurative light of hospitality for someone else. Reach out in this time of darkness, and be a beacon of welcome for those who are wandering. We might never know how our lights matter, but know that they do matter. Shine them far and wide.
