ZACH DAVIS Davis loves capturing stories with his camera. He is a photographer and videographer who specializes in weddings and portraits. He has a weakness for wanderlust, feeling the urge to leave the country whenever possible. He currently curates The Open Window Exchange, a collaborative online travel journal.

Wanda Perkins For more than 15 years as a freelance writer, Perkins has enjoyed creatively crafting stories about local, national and international people and topics. She lives in Fargo with her beloved and incredibly intelligent rescued dog, Jake, who also appreciates an encouraging phrase: Good dog! Her book, Blessing After Blessing − Seeing God’s Blessings in All the Seasons of Life, was published in 2006.

Ashley F. Johnson Married mother of an active 4-year-old son and a 2-year-old daughter, Johnson also enjoys her career as an inpatient registered nurse in the heart of Oklahoma City. She is passionate about writing, entertaining, cooking with fresh foods and good wine. She adds, “I love traveling with my husband and look forward to exploring the world together as a family.”

Zainah Haider Ever since she was young, Haider remembers her parents always taking pictures. Apparently, they were excellent at it, too. “They have inspired me to love photography. We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form.

Dayna Del Val Del Val is a professional stage and commercial actor as well as executive director of the Arts Partnership in Fargo. She lives in Fargo with her husband, her 18-year-old son and their high-strung golden retriever.

My grown children have scripted the pages of their own busy lives, leaving reflections of fond memories and the anticipation of new ones yet to come. O Tannenbaum Into the wild The quest for the perfect tree By Bernie Erickson

L

ike almost everything in our lives, it started out with the best of intentions. Our time-tested ritual of going to the garden center on a whim some evening after work, selecting the perfect fresh Christmas tree, tying it to the top of our car and then driving exactly 4.5 miles per hour all the way home through south Fargo on some snowy December night had worked for years. It was time to shake it up a bit. After borrowing a friend’s giant SUV and a bunch of nylon straps with finger-severing,

spring-loaded ratchets and donning coldweather wear, we headed off to a tree farm to cut our very own from the freshest of fresh trees available. If you think sorting through trees at the garden center is daunting, it’s nothing compared to standing in a 160-acre forest with a hatchet and a map indicating where to find each type of tree. In 3 feet of snow. With a 15-mile-per-hour wind. And exactly 37 minutes of daylight remaining. The map was supposed to help. Did you know there are nearly a dozen varieties of trees to choose from in this part of the country? In the fir variety, there’s balsam, Canaan, Douglas, Fraser and noble. In the spruce group, there is Colorado, Norway and white. And in the humble pine family, there is white and Scotch. Are you kidding me? I wanted a full one with the short, soft needles that don’t make your fingers bleed when you decorate it, whose branches stand tall and proud well into January and then only drop its needles when placed on top of the 12-foot snowbank in the driveway, like Admiral Perry placing a flag on the North Pole. Well, that kind of tree wasn’t indicated anywhere on the map. So we slogged through the snow until we found the absolute perfect tree and managed to harvest it with the only severed limbs being those of the tree. Turned out to be a Fraser fir. Who knew? Tree farms don’t have those plastic fishnet stockings that garden stores put on their trees to make them a manageable size, so we did our best to attach a bunch of the nylon straps from one side of the INSPIREDHOMEMAGAZINE.COM

giant SUV over the tree to the other side. We then ratcheted them tight without losing any fingers. We hoped and prayed the tree would not fly off on the interstate and cause traffic drama on our way home. Speaking of manageable size, when you buy a sofa at the furniture emporium, it somehow manages to grow to the size of a locomotive between the warehouse and your living room. Same thing happens when you select a tree in a 160-acre forest. Only worse. We barely got the tree through the front door. And then promptly scraped a ravine the size of the Grand Canyon in the ceiling as we tried to stand it up. After decades of home improvement projects, we have virtually every hand saw imaginable, so we quickly cut a full 18 inches from the bottom of the tree. With all interior decor, there’s something really, really important about scale and proportion, intensity and restraint, expected and unexpected. When you snap the top off a Christmas tree as you scrape it against the ceiling and then cut a foot and a half from the bottom so it won’t touch the ceiling anymore, you end up with tree that looks like a giant green bowling ball. That would definitely fall into the category of unexpected. The hour was growing late, and we decided Sunday morning would be a much better time to decorate the tree and agreed to call it a night. About 2 a.m., there was a ruckus downstairs. It was only the second of December, and having misbehaved in epic proportions the past year, we knew it was not Santa Claus down there. It seems trees that make their home in the forest tend to become homes to animals that live in the forest. And those animals go into a deep sleep when the weather gets cold and then awaken when spring arrives. Or when someone moves their home to a 68-degree living room. Chipmunks! Two chipmunks had made their way off the tree to the top of the draperies and INSPIREDHOMEMAGAZINE.COM

were staring at us. Their groggy expressions suggested they were pretty sure they’d entered some parallel universe. We were tired but had the presence of mind to grab a laundry basket and sweep the chipmunks from the drapery rod into the basket and then out the back door, shooing them toward the evergreens in our backyard. I have no idea what kind of evergreens they are. The best of intentions. Although things took some crazy twists and turns, we had a great story to tell and pictures of an elaborately decorated roomsize bowling ball that would probably appear on the next year’s Christmas card. Here’s hoping the only chipmunks showing up in your home are Alvin, Simon and Theodore on a CD singing, “Christmas, don’t be late.” Have a truly Inspired holiday season! INSPIREDHOMEMAGAZINE.COM

ast year’s Holiday Homes of Hope Tour featured one of Fargo’s largest historic lots, on which sits a spacious 2,876-square-foot, four-bedroom, four-bath rambler. The home of Les Chan and Mark Mills was built in 1923 and encompasses more than two city lots. Since Chan purchased the home, he and Mills have enlisted the expert help of Julie Alin, design studio manager of Scheels Home and Hardware, to update six interior rooms. “For the tour, this timeless home begged to be adorned with chic neoclassic accessories and over-the-top metallic ornaments. The holidays are a time for sharing, not only with friends and family but with our community as well. I think of the Holiday Homes of Hope Tour as a finely wrapped present that we can share to help benefit the North Dakota Cystic Fibrosis Association and area young people,” INSPIRED HOME | 19

Guests are welcomed into the home by a vivid green front door and a set of double doors in the foyer. Spacious hallways allow smooth traffic flow in a circular motion from the front of the home to the back. The home features a bright sunroom off the foyer, a kitchen

with plenty of storage and counter space and a renovated nook area for additional seating. A gas fireplace in the living room invites warmth on cold fall and winter days. The home features closets that circulate air throughout the bedrooms. “Back in the early 1920s, people didn’t launder their clothing as much as we do today,” Mills explains. “The closets help clothes stay fresh with floor-to-ceiling venting.” The master closet and second bedroom have pullout clothes bars that extend from the closet. Additionally, there is ample space for larger or seasonal items. The original owners, who previously lived in Maine, built the all-wood den. They chose the east side of the back of the home to build the den to remind them of Maine and appropriately named it the “Bar Harbor Room.”

Formerly, it was a bedroom with French doors. The homeowners also accomplished extensive landscaping around the lot’s perimeter and removed several diseased trees to spruce up the home’s exterior. During the holidays, Chan travels to see his family in Malaysia to enjoy time with them. A Realtor at Park Company Relators, Mills also looks forward to the holiday season. “Holidays are a time to stop and recognize and embrace the close relationships in our lives,” he says. “We enjoy hosting a yearly Christmas party for neighbors, close co-workers and friends. A historic home on Broadway encompasses family, love and hospitality.

he greatest meaning of Christmas for the Moline family is celebrating the gift of Jesus and the hope he brings to each of us. Justin and Sarah Moline strive to live each day in his love while offering their lives and sharing their home in hospitality to others. Opening their home for last year’s Holiday Homes of Hope Tour was a fun experience for the Molines. Seeing their home beautifully decorated for the community by Sarah Liljestrand, owner of Holland’s Landscaping and Garden Center with her husband, Mike, was rewarding. She chose a “Joy to the World”

decorating theme to embrace the missionary focus of her family. “We used bright colors, symbolizing joy being brought into our world,” says Liljestrand. “The decorations were chosen to enhance their craftsmenstyle home with its gorgeous windows and original woodwork.” The Molines’ 2,200-square-foot, three-bedroom, two-and-a-half bath historic home on Broadway was built in 1917. Mission doors open from the dining room into a wonderful play area for their daughter, Malory, and son, Riley. Near the dining room, the kitchen space is the real heart of the home. Renovated in the 1970s by previous owners, it features a bay window overlooking the backyard. A gas fireplace, gray ceramic tile floors, granite countertops, original cabinetry and a gas stove all help create a welcoming family space. “We love the element of history and the cosmetic and structural nature associated with our home,” Justin says. “Discovering the changes that have occurred throughout the years and learning about various owners is fascinating.” Sarah especially loves the white antique mantel over the living room’s gas fireplace. “The detailed mantel blends beautifully with the era of our home,” adds Sarah. “It is definitely one of my favorite details of our home.” Except for replacing the kitchen’s flooring and adding some fresh coats of paint, the Molines plan to keep their historic home preserved in its original condition. Justin especially admires the two-toned, sturdy oak staircase with its chunky banister, dark oak treads and white spindles. Upstairs, three bedrooms and a full bath keep the family closely tucked in. Justin, a busy owner of ServiceMaster and general manager of Nichelson Oil, explains, “For us, our home means family. It’s the place where we have a chance to experience the funny or silly things of life and just enjoy being a family. We love inviting people to our home and extending our home to others.” As a mom and part-time nurse at the Roger Maris Cancer Center, Sarah believes in returning the gifts they’ve received. “We truly feel our home is a gift from God on loan,” she says. “Why not share it with community and others?”

Owner Michael Rohr says, “Boerth’s was in dire need of a face-lift, and with the renovation of the Loretta building, it became a glaring need that we were just dated.” That was the beginning of what became a three-phase transition.

Phases one and two had the shop looking back to its roots: custom framing. Rather than ignore that valuable asset, Rohr invested further. He opened a second location in southwest Fargo to more adequately address the needs of framing, but he didn’t remove framing from the downtown location. Instead, he added higher-quality materials and software to help customers see what their finished artwork will look like upon completion. “During the process, we started to realign who we wanted to be. I was keen to open a wine bar, and it took two years of planning. I was fortunate to have great people who believe in me to fund it. The Kilbourne Group deserves a lot of credit for partnering with me,” says Rohr. Phase three had D’Vine opening in the back and accessible from both inside Boerth’s and the alley. It also included a new strategy for the gallery. Rohr notes, “We are committed to showing more often new merchandise to further have the element of fresh. I partnered with some agencies that represent national artists, and every two months we show artists who are not normally in our area.” A current artist showcased is Megan Mitchell, the James Rosenquist artist in residence at North Dakota State University during the 2014 spring semester and a INSPIREDHOMEMAGAZINE.COM

We believe cleaning is an art form visiting professor at Marlboro College in Vermont. Multiple large-scale pieces Mitchell calls steles are scattered around Boerth’s. Mitchell says, “That was a new body of work for me. I had never made work that was on that large a scale.” The Steles are coil built, meaning Mitchell started at the base and worked up. NDSU uses clay from Hebron, North Dakota, and the Steles are all made from that clay. Despite looking like they are made of ancient stone, they are hollow ceramic structures. Rohr says, “It’s fun to think about who is going to be fortunate enough to have these pieces in their home. I hope we sell them all and never have to send them back.” Gallery, framing shop, event center, wine bar and more: Boerth’s is definitely on the grow and is another special stop on Broadway. As for his revitalized presence downtown, Rohr comments, “I’d like to be a partner for the community. Art is important for a community, and I’m excited that we have four galleries downtown. The more of us there are, it becomes more of a destination. I would love to see more businesses opening up downtown. here are few things as magical as St. Nick’s reindeer racing past the moon or landing gently upon your roof with the faint jingle of bells. The Seneca white deer of upstate New York come very close. Seneca County is home to a now-closed U.S. Army Depot built in 1941. As World War II erupted in Europe, the army needed a safe place to store war munitions far from the eastern seaboard. The quiet 10,587 sprawling acres of land between Seneca Lake and Cayuga Lake was chosen, and miles of 6-foot chain-link fence were erected around the plat. Today, six decades of military history have left behind an entire spectrum of remains: mature forest, abandoned bunkers, military graveyards, wetlands, apple orchards, meadows, rolling hills, fields and the world’s largest population of white deer. The Seneca white deer, though snowy white, are not albino but leucistic. They carry a recessive set of genes expressed by a lack of pigmentation in their hair only, retaining their brown eyes. In 1941,

when the Army erected the 24 miles of fence, they unknowingly isolated a small herd of white-tailed deer that carried the recessive gene. Over time, breeding within the herd passed the gene to other generations. Among the 800 deer living within the Army Depot, approximately 200 are white, leaving a beautiful juxtaposition among the Cold War remnants of the base. I heard of these illusive deer shortly after moving to Geneva, New York, and I hoped one day to get a glimpse. Driving to work along Route 96A, which runs parallel to the depot for six miles, my wish was granted. I saw it, a doe. She was standing there, unaware of her own beauty and grandeur. She looked delicate and graceful and stood with poise and strength. I could say nothing. I remained speechless as my eyes welled up with tears. The surreal presence of the deer is clear, but their future is not. I spoke with Dennis Money, president of Seneca White Deer Inc. (SWD), an organization dedicated to preserving the deer. “We began as a group of volunteers who didn’t know what the heck we were doing,” he said with a genial

chuckle. Money went on to explain with deep concern the fate of the Depot. In 2016, the Army will no longer manage the property or the wildlife on the compound. The 24 miles of fence protecting the deer will no longer be maintained. Moreover, the Army currently manages the population by hunting the deer to control population, but that hunting will stop, thereby increasing the deer population and winter starvation. SWD fears that without help from the state of New York and passage of their proposed Ecotourism

Hundreds of Cold War munition bunkers stand like eerie ghosts, dotting the landscape in the Depot. In 1941 as World War II erupted in Europe, the U.S. Army searched for a place to store war explosives in a sparsely populated area far from the eastern seaboard.

Center, the land, wildlife and history will be lost. Within the compound exist 140 miles of paved roads, 40 miles of railways and 519 “igloos,” bunkers that were used to store war munitions. It is a place where two entirely different worlds live side by side. “There is much that can be done here to protect and preserve the Depot,” Money says with optimism. Just a handful of ideas include wildlife and self-guided tours, birding, camping, more scientific research and studies, horseback riding, environmental education, endless trails for hiking or skiing and a visitor’s center. All this would boost the already thriving tourism in the New York Finger Lakes region, provide jobs and generate revenue. But with the maze of political red tape, SWD needs the help of the people. Raised in North Dakota, reverence for nature was instilled in me at an early age; I felt compelled to share the story. he holiday season is a time to reflect upon the good in our lives. This is particularly true for Jen Anderson, a registered nurse in Fargo and the mother of two beautiful children who are living with cystic fibrosis (CF). CF is an inherited, life-altering disease that causes mucus within the body to thicken and become sticky. The mucus often plugs air passageways, making breathing a difficult everyday task. As of yet, there is no cure. Eight-year-old Ryan and 5-yearold Lily were diagnosed in the early weeks after birth. Jen describes Ryan as a smart and curious boy who loves soccer and Legos. “He is outgoing, compassionate and makes me smile like no one else,” she says. “Lily is my baby, and she is a firecracker. She will tell you exactly what she thinks, for better or worse, and doesn’t stop talking for much. She is caring and a friend to everyone.” The Andersons’ daily routine is tedious, involving two therapy vest treatments for both children. The squeezing, oscillating vest helps clear the excess mucous from their airways, facilitating its removal by coughing. Ryan and Lily require breathing treatments, nasal washings and countless meds to be taken throughout the day to lead as normal a life as INSPIREDHOMEMAGAZINE.COM

possible. “The hardest part as a parent is that I feel the kids lose out on extra playtime, chill time—whatever you want to call it—because of their treatments,” says Jen. “They don’t complain, because it is all they have ever known.” For the Andersons, family has played an integral role in their support system. Jen’s husband knows the children’s daily routine inside and out. Her parents, in-laws and three sisters also play a pivotal role by offering to help whenever needed. This is a time of year when the Andersons are especially thankful. The Holiday Homes of Hope Tour and Boutique Sale November 8 and 9 is a main fundraiser for the North Dakota Cystic Fibrosis Association (CFA). By showcasing seven stunning homes decorated for the holidays by local interior designers, CFA raises awareness in our community and is able to allocate ticket and boutique sale revenue to help families in desperate need of assistance with the skyrocketing expenses of treatment. Through tears, Jen explains that she fears having to sit her children down and explain to them what CF could mean—a shorter life expectancy. She knows they may not be able to do the things many take for granted, and she realizes she cannot always make it better. “They don’t deserve this,” she says. “I would take their place in a heartbeat, but God has a plan for us, and I am not here to judge. So live today, hug your children a lot, and tell them you love them until they make you stop. Keep doing the treatments no matter what! Accept help when you need it; be strong when you do not think you are.” Ryan and Lily’s favorite part of the holidays—aside from family and their cousins—are the presents. hat special time of year is upon us. Snow is falling, and holiday décor adorns our city. If you listen carefully, you may hear the familiar jingling of change being dropped in the famous red kettles of the Salvation Army. The Fargo-Moorhead Area Association of REALTORS® (FMAAR) is an organization of local REALTORS® and other area businesses aligned with the housing industry, including lenders, appraisers and inspectors. They will unite December 5 to man their stations for Realtor® Ring Day, a one-day special event that raises funds for the Salvation Army. Mason explained that in 2012, 48 percent of proceeds raised by the Salvation Army went to help those in need with mortgage and utility assistance, a humbling statistic. osing a pet is a difficult process to go through, but most people traverse this path at some time in their lives. My family’s 8-year-old boxer, Rupert, recently died from an undiagnosed heart condition. He had been such a big part of our lives, and now he is gone. His water and food bowl sat filled in our kitchen for days after; I was not yet willing to admit that he was gone. Rupert was a big, strong dog, and his absence was palpable. Coming home from work was the hardest part. Every day, my 2-year-old daughter would walk through the door INSPIREDHOMEMAGAZINE.COM


with her hands cautiously guarding her face, wincing, anticipating the inevitable moment that Rupert would barrel down the hall to lick her face. It happened daily. The obvious stillness in the house and the fact that our 2-year-old was still standing upright when she walked through the door seemed to perplex her. “Where’s Rupie?” she would ask. I began to realize the things that drove me a bit crazy soon became the very things I missed. For those grieving the loss of a pet, there is a very important resource to utilize— your pet’s veterinarian. Since 2008, Dr. Amy Anderson and Dr. Carrie Summerfield have owned the West Fargo Animal Hospital. I recently spoke with them about coping with the loss of a beloved pet. Dr. Anderson explains, “A veterinarian can be a counselor to the family in this time of grief. We understand the loss they are feeling and know that everyone deals with it in a different way. We listen. We comfort. We give professional advice, and we provide medical support to the animal so that they can be as comfortable as possible as the end is nearing.” Veterinarians can also support you when making the difficult decision between prolonging the life of an aging pet or euthanizing it. This decision is often the most difficult if your pet’s quality of life is being considered. Anderson responds, “If they can no longer experience the joy in life that they used to, then it is time to consider euthanasia. Pets can be very

Children also factor into the loss of a family pet. Explaining the loss can be difficult, but experts agree that ageappropriate honesty is best. Anderson explains, “I find that children younger than 4 will definitely feel sadness and loss but can’t quite comprehend what is truly happening. Telling that child that their pet is very sick and can’t get better may help them to understand that the loss will be more permanent.” A month after we lost Rupert, I discovered a pit bull rescue website and felt compelled to adopt. After a family discussion, we decided to add a new family member. Some said we were getting a dog too soon; some told us we were waiting too long. The lesson we learned: There is no right or wrong. When it feels right, it is right. We are still healing from the boxer-sized hole left in our hearts, but our adopted pit bull puppy, Francis Albert (named after Frank Sinatra), has turned our home into a rambunctious and chaotic state. Once again, there are water spills on the floor, doggy toys strewn about, slobber on my remote control and a freshly chewed hole in our leather couch. I could not be happier. hankfulness, remembrance, giving and sharing—these are the true meanings of Christmas for the Bannach family. When they were asked to open their home for the Holiday Homes of Hope Tour to benefit the North Dakota Cystic Fibrosis Association, Mike and LaDonna Bannach wholeheartedly agreed. Since 2010, Inspired Home has sponsored this event. It originated when neighbors and friends of Lisa Backlund and her daughter Sophie decorated and opened their homes for the holidays. They invited the community with a goal to raise awareness and to benefit local families with children living with cystic fibrosis. “Having a child with cystic fibrosis is a cross but also a blessing,” Backlund admits. “This event is a wonderful gathering of community, homeowners, sponsors and designers who come together. and co-organizer Carlotta Schwartz choose a neighborhood of homes for the tour. A holiday boutique filled with hand-crafted items for sale provides unique gift ideas. This year’s tour features seven homes, including the Bannachs’ beautiful home. Built in 2013 by Rich Schmit, Schmit Brothers Construction, the nearly 7,000-square-foot, six-bedroom, fiveand-a-half-bath home was methodically planned with useable spaces and one-level handicap accessibility. “The catwalk with arched openings overlooks the foyer and formal living room,” notes Schmit. “The floor extends

beyond the arches and catwalk, forming a semicircle on both sides. Our in-house designer, Amy Moszer, worked closely with the Bannachs to ensure the entire building process flowed smoothly.” “Over the past 10 to 15 years, we began with a sketch pad of ideas that eventually became a reality,” LaDonna notes. “We wanted to create a place where our family feels connected, where friends feel welcome and where we feel we belong spiritually.” The Bannachs’ previous home in Grand Forks was lost during the 1997 flood, so their chosen location is now

flood-protected as well as convenient to amenities, schools and work. Wide-open spaces with architectural columns, soft archways, abundant natural lighting, symmetry, clean lines and finishing details work together to complement their gorgeous family “forever” home. They especially enjoy the piano room, where LaDonna frequently plays a catchy tune. It is not uncommon for the Bannachs to host more than 60 of their daughters’ classmates in their home to celebrate the end of the school year. Beyond Concrete Inc. designed an outdoor entertaining area with a 20-by-40-foot pool, which provides

As an occupational therapist and co-owner of Beyond Boundaries Therapy Services and the executive director of the House of Everyday Learning, LaDonna loves working and speaking with professionals, parents and providers to raise awareness and understanding. Having worked 26 years in the Army and National Guard as a medical logistics officer planning, coordinating and transporting medical supplies and equipment, plus spending a year in Iraq, Mike also brings a compassionate servant attitude to his career as the senior vice president and business banking manager of Bremer Bank. Together with their two daughters and their fond and cherished canines, the Bannachs look forward to favorite holiday traditions:

orking closely with LaDonna to capture the family’s design preferences seemed more like a friendship, just as my relationship with both LaDonna and Mike felt more like friends than clients. It was important for the Bannachs to incorporate intimate spaces by creating some division within rooms. This is evident in the upstairs space with the girls’ bedrooms and personal bath spaces as well as the upstairs theater room and game room. Their foyer with a nearby sunken piano room is one of the most elegant entrances we have ever built. The Bannachs’ entire home reflects spaces to connect and enjoy family time together.”

he holidays are times to reminisce about sentimental family memories: the oak chair the puppy gnawed on when the children were little, a pine table displaying a child’s first printing impressions, the ring a 6-year-old son presented to his mom when he asked to marry her. For Greg Stephens, owner of The Crown Jewels in Fargo, the holidays—and other special occasions and events—are times when the art of jewelry making takes on personal and sentimental significance. The Crown Jewels has been family owned for more than 50 years, and Stephens enjoys the generational relationships they’ve developed throughout the community during that time. He finds it enriching to be on the front line, helping customers celebrate many happy occasions. INSPIREDHOMEMAGAZINE.COM


“That’s one of the beauties about this business,” Stephens explains. “Almost daily, I hear stories from customers about my grandfather Al Lundeen and my father, John Stephens. It is both rewarding and heartwarming to be a part of a strong, three-generational family heritage.” Since 1952, The Crown Jewels has specialized in designing beautiful, highquality, artisan jewelry pieces. Each handcrafted creation is skillfully designed to be cherished and admired by the person who receives and wears it. Their onsite goldsmiths have nearly 60 years of combined experience in jewelry repair, customization, sizing and restoration. There are many different scenarios where customers seek their expert advice in creating new heirlooms from existing pieces of jewelry. “Maybe a special jewelry piece was acquired through an inheritance, or someone has old pieces of jewelry lying around their home that they desire to update, or they just want a special, one-ofa-kind creation or engagement ring set that truly captures a loved one’s preference,” Stephens says. “Whatever the need, we explore various options, decide upon what type of jewelry piece to create, gather personal ideas to capture a cherished event and consider the individual’s tastes. Then we go to work to design a piece that will be meaningful and unique.” Stephens recalls a couple who brought in a family diamond with sentimental value. They desired to create something special for their daughter to celebrate her upcoming 40th birthday. “After viewing many styles of rings, pendants and bracelets, the couple returned after a few visits and decided

upon a custom ring,” he says. “The emotion that the ring evoked when they picked up the newly created version was almost unbelievable. We were honored to play a part in this special family gift.” Another customer brought in a wedding ring that her father had worn. She wanted her son to wear the ring for his upcoming wedding. Unfortunately, it was in extremely poor condition. After several visits and drawings, they were able to come to an agreement on the appearance of the original ring. “It was a beautiful antique filigree design with diamonds and rubies,” Stephens remembers. “After several weeks, we were able to build the ring back to nearly new condition. Being a part of restoring this piece of heirloom jewelry to commemorate a special bond between a grandfather and grandson—and to be worn by a new generation on a significant day—is such a blessing and very rewarding.” Diamonds, rubies, emeralds, sapphires, rutilated quartz, amethyst, turquoise, topaz and chocolate pearls—with so many stunningly gorgeous gemstones to utilize within a necklace, bracelet, a pair of earrings or a ring, the options are nearly endless. hen you are looking for expert advice for your holiday entertaining, look no further than Deb Jenkins: nurse, chef, caterer, musician, entrepreneur, writer, event promoter and indefatigable organizer. Despite her numerous talents and courage in the face of vast projects—or maybe because of it—she keeps it simply delicious and fun for stress-free entertaining. Although Deb grew up in a globe-trotting family—“Air Force brat”—with parents who loved food, she didn’t start cooking professionally until after a breast cancer diagnosis in the mid-1990s renewed her interest. She had always liked cooking and found it calming: “The process—the beginning, the end, talking to my food, being grateful for good food is all part of the fun.” She began catering for friends, and 20 years later, she still has more than enough work through word of mouth and has spun off a food products business, Deb’s Corner Foods. to marinate chicken skewers or roasted vegetables, thinned with rice wine vinegar and a bit of lime for a vegetable dip, mixed with mayonnaise for a bread spread, or used as in the recipes we have for you here. Her guidelines for a holiday party spread? Keep it simple. You don’t need a lot—really no more than three items for a good assortment of hors d’oeuvres. Don’t stress yourself out and take on too much. Share the work with family members or friends. You will learn from what other people (literally) bring to the table. Follow Deb’s solid advice and recipes: Have a wonderful holiday season and spend time with people, not pans!

Servings:

Makes roughly 25 1-ounce meatballs. This recipe is easily doubled or tripled for filling the freezer or for a big party.

INGREDIENTS:

tablespoon canola or vegetable oil pound ground turkey (we used 90 percent lean) 2 tablespoons finely diced onion 1 egg, beaten 1–3 tablespoons Deb’s Jalapeno Pesto, depending upon how spicy you like your meatballs 6–8 tablespoons bread crumbs 1 teaspoon salt 2–3 turns of the pepper mill Directions: Preheat the oven to 400. Use the oil to grease a sheet pan or cookie sheet. Mix all other ingredients in a bowl. If you would like, test your meatball mix: Fry a little bit to see if you want to adjust any of the seasonings. Shape into small meatballs and roll to round out the edges. Place on the oiled sheet pan with about 1 inch of space between each ball. At this point, you can freeze the meatballs for up to a month or refrigerate for up to two days until you need them. It never hurts to have meatballs on hand! Roast for 10–13 minutes, or until cooked through. Once these are cooked, they can be served immediately with the sauce or dip of your choice—even the jalapeno pesto, mixed with a bit of mayo or on its own.

Baking Holiday Sentiment Connecting generations with holiday traditions By LAUREN FERRAGUT

think I need to call my aunt.” Those were my harried thoughts as I made Norwegian kringla for the first time. I was working from a recipe handwritten by my great-grandma Verna, who is now 101. The paper was rumpled, riddled with old flour and scattered with edits added later by my aunt Leah Ann, who has since perfected it. It was one of those old recipes where it is inferred that you understand the method and all that is listed are the ingredients—no amounts, no times, no techniques. Growing up, I looked forward to a sweet bread every Christmas at my grandparents’ farm. I didn’t know what it was or what it was called until I grew older, but it was always there, served in the same wicker breadbasket, lined with a festive holiday napkin. Inside were lightly golden, twisted knots of subtly sweet bread speckled with fragrant black flecks of cardamom. They were always placed in the middle of the table, nestled among the lefse, pickles and butter. To remain warm, they were covered with a holiday napkin until it was time to eat. Cardamom, from the ginger family, is one of the world’s most ancient spices. It grows wild in the forests of Sri Lanka, Guatemala, Indochina and Tanzania. It’s warm and pungent bouquet attracted the Vikings about 1,000 years ago in Constantinople and introduced it to Scandinavia, where it still remains popular to this day.

as I gazed out the dining room window at the evergreens bending under the weight of snow signified my Christmas. As I grew older, I realized the importance of keeping alive old traditional recipes easily forgotten. Fattigman, berlinerkranser and many other Norwegian delicacies not found in modern bakeries are testament to my heritage and a nod to my great-grandma V. I come from a very long line of talented bakers. Great-grandma Verna baked for a living as a young woman on the farm, baking dozens of loaves per day—all types, all day, all from scratch. I, too, share this genetic predisposition, and it was only a matter of time before I made Norwegian kringla of my own. I set out to do research on the history of this golden-brown delicacy, but I was unable to find a lot of information. It seems the bread I was so intrigued by as a young girl lives up to its reputation as a Scandinavian mystery. I found recipe variations with buttermilk and eggs, but nothing that was yeasted like my greatgrandmother’s. The recipe was handed down to her orally, so I am fortunate she wrote it down. Discussing the recipe method with her is equally as challenging. “Oh, sometimes I add an egg. Sometimes I don’t. Sometimes I punch down the dough for a second rise. Sometimes I don’t. Sometimes I add extra yeast. Sometimes I don’t.” My favorite: “You take note of the weather outside, and you just know,” she explains in her thick Norwegian accent. With that—and a twohour conversation and many panicked text messages with my aunt—I made kringla. In my nostalgic opinion, out of 36 rolls, eight turned out perfectly. tries to finally obtain the desired shape. I learned from my aunt to use whole cardamom pods and grind them myself; pre-ground cardamom is an ashy green color, and using it will result in ashy green dough. After my baking adventure, I realized my great-grandma Verna’s Norwegian kringla is still a mystery, but I have many years ahead of me to work on shape, flavor and consistency while perpetuating a recipe generations old. And I will teach my children, just like my great-grandma V taught hers.

Norwegian Kringla Ingredients: 1 cup whole milk ½ cup cream ½ cup butter 1/3 cup sugar 1 teaspoon salt 2 rounded teaspoons crushed cardamom 1 egg (optional) 1–1½ packets dry active yeast 3–4½ cups flour Directions: Scald milk and cream together. Remove from heat and add butter; this helps to cool the milk mixture. After slightly cooled, add sugar, salt and crushed cardamom; this is also when you could add the optional egg. Meanwhile, activate yeast with ¼ cup warm water and a pinch of sugar. Once the milk mixture is cooled to room temperature, add yeast and 2 cups of flour all at once. Stir very gently. Add flour little by little

until the dough forms a mass and stops sticking to your fingers. I ended up using about 3½ cups of flour, but it will depend. Knead the dough until it holds its shape and doesn’t flatten. You can do the knuckle test here: Punch your knuckle into the dough. If the indent stays, keep kneading. If it bounces back, it’s ready. Shape the dough into a ball. Oil a bowl and cover the dough with oiled plastic wrap and a towel. Let rest until double in size. If it is warm in your kitchen and the dough starts rising too fast, you can punch it down to let some of the gas out. Form the kringla: Cut off pieces slightly larger than a golf ball. Begin by shaping them into a ball. Roll into a rope about 8 or 9 inches long, ¼ inch in diameter. Take both ends of the rope, bring them together and twist 2 or 3 times. Bring the twisted rope end toward you and tuck under the base (center of the rope). Cover with oiled plastic wrap and a towel. Let rise until double in size. Brush with a beaten egg. Bake at 350 degrees for 15 minutes, or until golden brown.

Eat Your Beans, Sometimes With Cream

W

hile opening a Spanish tapas restaurant in Los Angeles eons ago, I learned to make socca, a Southern French crepe of sorts made out of chickpeas. Because the recipe is roughly based on a street food from Nice, France, and historically linked to the Ligurian specialty farinata, I was frustrated that the restaurant owner insisted on adding it to a Spanish menu, but I wasn’t the owner, so socca found its way on the menu. Socca, pronounced soh-ka, is traditionally made in large, shallow copper pans placed in wood-fueled ovens, roughly cut into pieces and simply dusted with black pepper before serving. It is thin, crispy and best eaten straight from the street vendor. The recipe below is not even close to the peasant food enjoyed on the Riviera. With the addition of roasted garlic, cream,

whole chickpeas and herbs, these socca are more like rich pancakes than crepes. It is tremendously good served as an appetizer with cured olives, pickled vegetables or any number of condiments and sauces— aioli, mojo (a simple pepper sauce from the Spanish Canary Islands), pesto (or the French pistou) and Romesco (another Spanish pepper sauce thickened with nuts) all work. Socca also stands as a hearty side for main courses such as Moroccan lamb kebabs, Spanish meatballs or even Mediterranean fish. Naturally vegetarian and gluten free, it will work for most guests and diets. Although socca did not travel far enough on the Mediterranean coast to make it to Spain, I learned to love this version of socca and used it on several menus in the past 12 years. I also learned that authenticity, while

important, doesn’t always make the recipe. A little cream never hurts either.

(adaptation of Neal Fraser’s recipe) SERVINGS: Makes 30 3-inch diameter cakes

INGREDIENTS: 2 heads garlic 1–2 tablespoons plus 2 tablespoons olive oil 2 onions, small dice 2 tablespoons herbes de Provence (optional, you can also substitute an Italian blend or your own custom mix of thyme, rosemary, marjoram or oregano) 2 tablespoons ground cumin ¼ cup fresh parsley leaves, minced 1 tablespoon smoked paprika ¼ cup unsalted butter 6 shallots, peeled and sliced 20 ounces cooked chickpeas or garbanzos 2 cups whipping cream 6 eggs, slightly beaten 1½–2 cups chickpea flour (available in the gluten-free aisle of the grocery store or as gram flour at ethnic markets) 2 tablespoons kosher salt ½ teaspoon freshly ground pepper Directions: Roast the garlic until soft and sweet: slice the top 1/4-inch off of the garlic heads, exposing the tops of the cloves. Place the heads on a larger square of foil, drizzle with olive oil and close the foil around the garlic to make a packet. Place in a 400-degree oven until the cloves are soft and can be squeezed out of the paper outer skin—approximately 30–40 minutes. Remove from the oven, open the foil and let cool to room temperature. Heat a sauté pan over medium-high heat. Add olive oil and when shimmery but not smoking, add the diced onions. Reduce heat to medium and sauté onions until soft and mildly colored (about 6–8 minutes). Stir in the herbes de Provence, cumin, parsley and smoked paprika and remove the pan from the heat. In another sauté pan over medium-high heat, add the butter. Once the butter is foamy, add the sliced shallots and sauté for about 5 minutes, or until softened and lightly colored. Reduce heat and squeeze the roasted garlic cloves into the pan. Add drained chickpeas and whipping cream. Reduce to a simmer and continue simmering for 5–10 minutes. Then remove from heat and let cool. In a blender jar, blend eggs, cooled chickpea and cream mixture, and chickpea flour until well-mixed. Pour chickpea batter into bowl and add the onion mixture, salt and pepper. Stir to incorporate. Batter can be made up to 3 days in advance and kept in the refrigerator. You may have to thin the batter with a few tablespoons of water, depending on desired consistency of cake. To fry the socca: Heat a fry or sauté pan over medium-high heat. Once hot, add 1–2 tablespoons of olive oil—enough to give a thick coat to the bottom of the pan. Once the olive oil is shimmering, add the batter in ½–1-ounce ladles. Do not overcrowd. Once the socca is browned on the bottom, flip the cake over and cook the second side. Once the socca cakes are cooked, move to a sheet pan in a warm oven to hold. Serve with your choice of dipping sauce, or eat as is.

he thinks I’m cuuuuuuuuuuuute!” “Happy birthday!” When you read these this time of year, don’t you know immediately what stories they are from? Don’t they take you right back to childhood and waiting in anticipation for the nights that Rudolph the Red-Nosed Reindeer and Frosty the Snowman were going to be on? For those of you from the “rent it, own it, TV-on-demand” generation, you don’t know that we used to only be able to see a program when it actually aired on television. If you missed Rudolph, you had to wait another whole year before you could see it again. Somehow, many of my holiday memories are tied up with these programs and the excitement of waiting for them to air on TV. It didn’t feel like Christmas was coming until I had seen these shows. I think the content had very little to do with why they were so exciting. I think it’s because we gathered as a family to watch them together. Watching TV together was not something we did much of, so these nights always felt extra special. We all settled into the small TV room, my dad in his chair on my right and my mom in hers on my left. My younger brother, and eventually another one, and I sat on the floor, waiting in great anticipation for Sam the Snowman to come gliding toward us and begin the story. We laughed at Hocus Pocus, the precocious rabbit in Frosty. We got scared

by the Abominable Snowman and cheered when it turned out he was a “Mighty Humble Bumble,” according to Yukon Cornelius. What mattered on those nights was being together, anticipating the season to come and dreaming about the toys that were inevitably advertised during the breaks. Snuggling into our warm little house to watch something as a family was just one of the ways that we got ready for Christmas, but it was clearly an important one, because I still fondly recall those annual nights all these years later. Last year, I was working on something in the kitchen and turned on the TV. Imagine my delight when it turned out to be the night for Rudolph the Red-Nosed Reindeer. I turned it up and called my husband and son in to see what was on, thinking they might sit down and enjoy it with me. They acknowledged it and moved back to whatever they had been doing. I wondered that we had not been anticipating this night, but then I realized that because we had always had a VCR or DVD player, my son and I had never set aside the night that any of these shows were on TV when he was little. If he wanted to watch Frosty, we just slipped the tape or disk in and watched it. I had a little moment of sadness at this lost tradition, but then Clarice came to tell Rudolph she thought he was cute, and my heart soared with him.
