t seems crazy to me that I am sitting here listening to the cold north wind howl as we put the finishing touches on another holiday edition. Time simply evaporates until the next day—and here we are! We are excited! In this holiday issue, with the help of the most talented designers in the area, we share great decorating tips and creative ways to make your home shimmer and shine for the season, just in time for your guests. That is just the beginning. Chef Granville Wood shares the secret of preparing the most delectable turkey, and you will discover decorating tips, from adding natural beauty to your wrapped packages to creating inspiring tablescapes for your special gatherings. In this issue, we are also reminded of the true gifts of the season—the willingness and sheer determination of area people willing to work for a cause much bigger than they are. In its seventh year, the Holiday Homes of Hope Tour, Boutique and Vendor Show enlists the hearts and souls of more than 100 volunteers with one determined goal in mind—to benefit and improve the lives of area young people living with cystic fibrosis. Wanda Perkins For nearly 20 years, Perkins has creatively written stories about local, national and international people and topics. Her book, Blessing After Blessing − Seeing God’s Blessings in All the Seasons of Life was published in 2006. An NDSU speech communication graduate, she lives in Fargo with her intelligent rescued dog, Jake.
Bailey Hovland As an English writing major at Concordia College, Hovland is passionate about writing and social media. "Blending my obsession for interior design with writing and scrolling through the endless feed of tweets, pins, and Instagram posts is my idea of 'living the dream,'" she says. Hovland enjoys reading, coffee shops, DIY projects and working out.
Dayna Del Val Del Val is the executive director of The Arts Partnership, where she writes a monthly column on the arts for The Forum, manages two staff members and an active board, and works to support the mission of cultivating the arts in our community through a variety of ways. In other words, she wears 27 hats! She is also a professional actor and writer. She lives in Fargo with her husband and their golden retriever, and she loves when her college-aged son is home on breaks.
ZACH DAVIS Davis loves capturing stories with his camera. He is a photographer and videographer who specializes in weddings and portraits. He has a weakness for wanderlust, feeling the urge to leave the country whenever possible. He currently curates The Open Window Exchange, a collaborative online travel journal.

Zainah Haider Ever since she was young, Haider remembers her parents always taking pictures. “They have inspired me to love photography. We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form.

Ashley F. Johnson Ashley Ferragut Johnson, formally from Ohlahoma City, has found her way back into the heartland. Living once again in her beloved Fargo— with husband, and two children, she is a Registered Nurse at Sanford Medical Center and writer. She lives for her family, to travel and taste great food and wine. She views life as an adventure, and can't wait to show her children the world PHIL STAHL Stahl began his lifelong passion for all things creative in South Dakota, where time and long landscapes are plentiful. An NDSU architect graduate, with emphasis in art/photography, his two-decade practice with Stahl Architects has led him places to observe life, including Europe and the Middle East. He is an adjunct lecturer at NDSU, national speaker for Intern Development, a regular contributor to regional and national home magazines, and has been featured on HGTV and in Dwell. Grace Estes Estes has always found writing compelling. Whether it is as simple as writing a card or writing for a local paper, words have great impact on others. She resides in Grand Forks with her husband and spends her free time cooking and hopes to start gardening at the local co-op this summer.
Shauna Fellman A small-town girl at heart, Fellman states, “My dream is to raise our kids in the country with days consumed by exploration.” Until then, Fellman lives in West Fargo with her husband, John, their two young boys and baby daughter. When not working as a registered nurse, she enjoys traveling, art, cooking, and being outdoors with her family.

My brush with...
Honing your shopping skills saves holiday headaches...maybe
L
egend has it the term “Black Friday” came about because it was the first day retailers stopped operating in the “red” and began operating in the “black,” all thanks to the huge influx of holiday shoppers. Personally, I always thought it was called Black Friday because it was pitch black when I went to work at 4 a.m. and there was most likely going to be some customer getting a black eye in a squabble over an early bird special. Whatever the name’s origin, I’ve always had a love/hate relationship with the day. Having spent a significant portion of my career on the business side of a cash register, I really enjoyed the excitement of the holiday shopping season. I loved being there at 5 a.m., flinging the doors open and diving for cover as the throngs of bargain shoppers stormed in looking for the $15 cashmere sweaters and $10 pancake griddles. Every retailer knows that the most easy-going customer in

the world is the one who casually shops the “new arrivals” rack, and the most demanding customer can often be the one who shops early bird specials and the 90-percent-off clearance rack. “90 percent Nancy” is always the first one in line Black Friday and most likely has her disagreeable mother-in-law and bossy sister with her. I’ve never been a fan of any kind of group activity beyond consuming huge amounts of food and drink, and the idea of standing outside in the cold with hundreds of people, waiting for a chance at a $50 flat-panel TV or $100 dubious-quality diamond bracelet had zero appeal. Things were a little different this year. It was becoming increasingly difficult to find replacement parts for my Motorola bag phone. And I was growing weary of people looking at me like I’d just asked to borrow their ChapStick every time I

dragged the behemoth out of my backpack. This year, I was willing to stand in line with the teeming hordes of shoppers and take a chance that I would be one of the chosen few to get the new Pi-Phone 3.14. I knew from past experience that you had to stand in line at the phone store in the mall for a minimum of two hours on any day of the week, so there was no way I was going to take my chances getting a Pi-Phone 3.14 there on chaotic Black Friday. The best thing would be to tough it out Friday morning and stand in line at Best Big Blue Box, the mega-store of all things home electronic. Thursday was spent doing pretty much the same thing as every other American— consuming an entire month’s worth of calories and carbs in one sitting, taking a nap, waking up and having a bun with turkey and some warmed-up stuffing at about 4:30, casually dozing off as Uncle Albert gave a detailed account of his bout with gout and then having a light snack while watching the 6 p.m. newscast. That’s when I got my first glimpse of what I was truly in for. The young cub reporter assigned to prowl the shopping destinations on Thanksgiving evening was standing in the wind and sleet outside Best Big Blue Box, interviewing people who were setting up camp to be first for a chance at the Pi-Phone 3.14 at tomorrow’s 5 a.m. opening. There’s no way I was going to stand in the wind and sleet all night. I was going to have one more bun with turkey and some scalloped corn before getting into my luxurious warm bed for a carbohydrate-induced good night’s sleep and take a chance in the morning with all the other 5 a.m. shoppers. It’s kind of surreal to be at the back of the line stretching around the store and around the block. Over the course of about 3 minutes, every single one of the shoppers outside the store is suddenly inside the store, scrambling to load their carts with as many of the early bird specials as they can. Well, it goes without saying that when I found the rack that held the cards to bring to the register to claim a Pi-Phone, it was picked clean.

I spotted a “90 percent Nancy” making life miserable for a sales associate, most likely a young mom working extra hours to expand the family budget to help Santa put some nice things under the tree. Then I remembered Nancy’s counterpart: “Hide-it Heidi.” You know the times you find a nice sweater on a rack with some cookware or a kitchen electric in the men’s underwear? It’s not always lazy customers ditching merchandise they don’t feel like putting back. Sometimes it’s “Hide-it Heidi” coming in the store the day the ad comes out and hiding merchandise so she can leisurely pick it up the day it goes on sale. So, if I were “Hide-it Heidi,” where would I stash a Pi-Phone 3.14 pick-up card? I looked around and spotted the CD department. If I were going to stash a Pi-Phone pick-up card in the CD department to leisurely purchase on Black Friday, where would I stash it? I’d stash it in the bin between “Pink” and “Prince.” Seems “Hide-it Heidi” had the same idea. Imagine that. I guess I’ll never know if “Hide-it Heidi” came back to the store to retrieve her Pi-Phone 3.14. I do know that I sure am enjoying my new smartphone—pocket-dialing friends at inappropriate times, having ’70s disco music suddenly blaring out of my briefcase as I’m retrieving a file and being connected to everyone on the planet every single living, breathing moment of my existence. Wishing you peace and joy at holiday time and all the best that 2017 will bring.

ights are glowing amidst a crisp nip in the air as Christmastime beckons us to gather near to loved ones. Once again, Inspired Home looks back on last year’s Holiday Homes of Hope and the designers who festively designed each home. Homeowners reminisce about cherished Christmas traditions, memories and opening their homes to benefit cystic fibrosis. Being a part of last year’s Holiday Homes of Hope was especially meaningful for Dr. John and Lori Erie, who begin the holiday season by recalling stories behind the ornaments they hang upon their tree with their children, Ellen and Tom. Their daughter has learned much about cystic fibrosis from her father and her best friend, Sophie Backlund. “Even though Sophie has this disease, which affects every aspect of her life, we all admire her bright, happy attitude and determined spirit,” Lori explains. Dr. Emmet and Diane Kenney also witnessed a special friendship between their son, William, and Sophie. “We were honored to have played a small part in trying to help individuals locally with cystic fibrosis and their families,” Diane shares. “Our family believes Christmas is truly the season of giving and thinking of others.”

Memories of Christmases past flood our minds and hearts with joy. James and Suzanne Maring recall spending Christmas Eve with family. “Growing up, clam chowder soup with shrimp cocktail were the menu’s highlight,” Suzanne reminisces. “After dinner, we played family bingo to determine gift-opening order. Later, we read ‘The Night Before Christmas.’” Many families fondly remember outings to select that perfectly shaped real Christmas tree. Whether real or artificial, a Christmas tree’s decorations often complement family preferences and the home’s décor. “Our tree is the one constant decoration in both my own family and Rusty’s, too,” says Neva Papachek. “It’s filled with more than 20 years of decorations, and this tradition will likely carry on with our children.” Watching the wonder of Christmas through the eyes of children is especially exciting for Zack and Kelly Dawson. “It’s fun to hear our young children discuss theories on how Santa Claus travels to each home in just one night,” Kelly smiles. “Of course, this includes utilizing speed boats and jet skis for warmer weather.” For Dave and Deb Gemar, the holidays are often a busy time. “In our minds, holidays can signal stress with decorating, shopping and entertaining,” Deb admits. “However, in our hearts, Christmas means faith and tradition.” Inspired Home staffer Sheri Fercho was happy to have her home on the tour last year. Husband Bill and son Ben enjoyed the process, and Sheri adds, “I was thankful for the opportunity to support such a special event.” The Fercho family enjoys their tradition of attending the candlelight service every Christmas Eve. At the Stibbe home, a favorite memory happens each Christmas morning when their family of four celebrates together with coffee and gift opening. “We travel a bit during the holidays, so we’ve grown to cherish that special morning when we’re all together,” Stacey recalls. This holiday season as you prepare to gather with family and friends, share from a heart of love, joy and kindness. The Holiday Homes of Hope tour 2015 was an excellent way to kick off the Christmas season and help benefit the North Dakota Cystic Fibrosis Association. John and Lorie’s Rose Creek home with its panoramic views and soaring ceilings made it easy for us to execute a dramatic traditional theme with a touch of whimsy. By adding mischievous elves and a life-size Santa, we were able to create a feeling of childhood nostalgia.

Holland’s was honored to decorate a home for the 2015 Holiday Homes of Hope tour. The home had an Asian dÊcor influence, so that was our inspiration. In the formal sitting room, we used white, silver and red with natural capiz shell garland for the tree. We hung crystals from the dining room chandelier and featured locally made rose hip wreaths for centerpieces. Place settings on the kitchen table had a plant bird nest centerpiece with feather adornment. Green bamboo, yellow orchid flowers and moss pinecone garland dressed the family room tree. Birch rounds with family initials were ornaments integrated with hand-crafted recycled metal stars and large metal bells. Design Thoughts The Holiday Homes of Hope Tour is one of our favorite events each year. Not only do we get the chance to showcase our products and talents, but we do it for a worthy cause. The Eco Chic crew brainstorms all year to inspire those attending the tour. Our design plan always incorporates classic Christmas colors like red, white and green by adding natural and timeless décor pieces like boxwood wreaths, cotton stems and lots of berries. We love the smell and beauty of a real Christmas tree, but locating them in early November is difficult. Finding an artificial tree large enough to fill the vaulted ceilings was a challenge, so we made our own Christmas trees out of salvaged wood and created an “Into the Woods” feel! Dining room place settings incorporated layered green plates and natural wood candleholders to tie into the living room. Adding boxwood wreaths to cabinet doors and incorporating an old weathered window completed the look. We look forward to another great tour this year, hoping to inspire and wow the viewers.

This will be our fourth year designing for the Holiday Homes of Hope, a tour we will continue to be a part of. From getting to know the homeowner to create the right décor for the home to knowing our hard work and passion goes toward fighting a worthy cause, it’s all worth it. The Fercho residence is beautiful, and Sheri’s French country and French Regency styles were the perfect palette for us to think outside of the box. As a design firm, we don’t like to get caught up in a particular style, so when we can do something different, it is our time to play! Christmas is the time to stylize—the more lights, glitter, ribbon, ornaments and greenery the better. If we’ve done it right, we find glitter in our eyelashes and under our nails for the next few days! Don’t forget to set your table. Layer dishes on top of placemats or fabric runners. Try mixing and matching glassware, and add height with candelabras to finish your masterpiece.

Design Thoughts Zack & Kelly Dawson home The Dawson house gave us the opportunity to marry two completely different looks. We brought in traditional Christmas decor to complement their simplistic yet colorful mid-century modern furniture. We did this by bringing in our timeless Simon Pearce evergreen trees, flocked garland, our vintage-inspired Cody Foster houses and many other unique items. We were thankful to have been able to bring Christmas joy to the Fargo community for this event and for the Dawsons’ willingness to offer their beautiful home to us.

Design Thoughts Neva & Rusty Papachek home The Papacheks had recently remodeled their Rose Creek home, and it was done in a stunning décor style we were showcasing at Scheels Home and Hardware—rustic chic. A style still very relevant now, it is a high-contrast trend that features the warm and casual feeling of rustic elements mixed with the shimmer and chic of metallics. Their home, done in a mix of gray, mocha and "greige" (gray/beige), had a lot of beautiful natural maple. Their furniture is refined and a bit contemporary, so this was the perfect canvas for us for rustic elements and metallics. We love being a part of this tour every year because the Holiday Homes of Hope team is so passionate about their cause and so hard-working. It is a fun event for us, and we love doing our small part in making it a success.

Decking the halls to fight cystic fibrosis certainly was a great cause to be involved in with last year’s Holiday Homes of Hope tour. I drew personal inspiration from friends like the sweet Huus family, whose young child battles cystic fibrosis, and from the Kenney family, the kind and generous homeowners whose beautiful home I decorated. This project brought the meaning of Christmas to life for me. Celebrating the birth of our savior and supporting a wonderful cause alongside other passionate and creative designers truly made this a memorable experience.

hristmastime was not always joyous for Scott and Shawna Davidson. They recall the year when just two days before Christmas, their 18-month old daughter, Megan, was diagnosed with retinoblastoma, cancer that starts in the retina. She lost sight in her left eye. Three years later, the Davidsons had a son, Alex. Then, when Scott’s two great-nieces, Kylee and Amber, needed a home, the couple unselfishly adopted the young toddlers. “As parents of a child who suffered with a devastating illness, we feel a connection to other parents who may feel helpless. Modern and vintage with a nod to English country, the storybook exterior features interesting peaked rooflines, paned windows, cutout ebony shutters, circular entry steps and inviting landscaping. Built in 1931 by J. Dorn Helsing, the home was formerly owned by Dr. Donald and Linda Lamb, who remodeled it in 1996, doubling the square footage. With its storybook appearance, combining peaked rooflines, cutout ebony shutters and stucco exterior, the home accentuates European flair with a nod to English country design. Despite the home’s 5,500 square feet, the three floors easily transition together. “My favorite room is the great room,” Scott admits. “It’s a beautiful, quiet and comfortable room where friends can visit. Moving from a 1,600-square-foot home, the Davidsons didn’t want their spacious home to look or feel like a museum but rather livable with a relaxed atmosphere. The couple shared several cups of coffee in various rooms to determine their function. As an artist and project manager overseeing the remodeling, Shawna imaginatively combines her eclectic personality by mixing vintage, mid-century modern, quirky pieces into each room. “Our home is designed for fun. We’re not going to be formal here,” Shawna notes. “I find things that make me smile and incorporate them.” Inside the piano bar, an array of tinted wine glasses and goblets and Christmas pastries are handy for serving.

Repurposed elements are evident in each room. Gorgeous stained-glass windows were transformed from a massive front window. A ship’s porthole in the mudroom, intricate crystal doorknobs and hardware, archways and an outdoor chess game in a private outdoor entertainment area provide unique points of interest. Throughout the home, paned windows, stunning woodwork and built-ins, niche wall openings, repurposed and original oak flooring and stunning beamed ceilings captivate guests. “I love the kitchen’s original green tiles,” Shawna adds. “A door was removed in 1996 to create a larger space with eat-in areas. I brightened the space by painting the cabinetry white.” A formal dining area showcases cherry paneling and a marble-patterned wallpapered ceiling. “The dining room exemplifies a beautiful yet timeless exhibit of exquisite craftsmanship not typical today,” Scott explains.

Just off the family room’s striking arched stained-glass French doors, a tranquil outdoor garden setting features a heated salt-water pool, fire pit, chess set and metal bar. An original playhouse and garage space is utilized as a workshop. Plans are underway to remodel three baths, a laundry room and mudroom while converting the sunroom near the dining room into a butler’s room for serving and entertaining. When together for the holidays, the Davidson family of six has plenty of space, as each of the four bedrooms include a private bath, with two to spare. Even their cherished canines, Lola and Milly, have their own shower in the mudroom. For three years, Christmastime reminded the Davidsons of devastating news. “Looking back,” Shawna recalls, “I realize now that Christmas is a gift. It’s a gift to share, a gift that brings hope and joy to others.

everal years ago, my husband and I were preparing our traditional Christmas Eve meal. The table was set beautifully with Christmas dishes, my finest sterling silverware and an arrangement of flowers in an antique gold vase. It was quiet. We both were feeling a sense of loneliness this holiday. Our three teenage daughters were not with us for the first time; friends had invited them to spend Christmas vacation in Florida.

My husband and I were about to sit down to eat when our business line rang. We owned a transmission repair business, and with the minus-38-degree weather that night, my husband decided to answer the phone. A young man was calling from a truck stop in Moorhead and explained that he and his family were en route from Minneapolis to Hallock, Minnesota, to spend Christmas with relatives. The bitter cold was causing transmission problems with his car. I listened intently to the conversation and heard my husband tell the traveler he would send a tow truck to pick up his car and we would bring his family to our home in our station wagon. The young family needed a ride to Hallock. I had been thinking about the situation for a few moments when I remembered a previous conversation with another young man. Earlier that day, I had been Christmas shopping at a local electronics store in the mall where I met a friendly salesman. I recalled he mentioned his hometown of Hallock.

T
he last of the leaves have fallen and the wind decidedly colder means the holiday season is on its way. For Inspired Home, it is a time to prepare for a very special community event- the Holiday Homes of Hope Tour, Boutique and Vendor Show. In its 7th year, the home tour benefits the Cystic Fibrosis Association of North Dakota, an organization dedicated to providing emotional, financial, and educational support for those living with cystic fibrosis. Five years ago, Inspired Home introduced our readers to13-year-old Sophia Backlunddiagnosed at 18 months old with cystic fibrosis, a life threatening respiratory disease. It was a day mother Lisa Backlund will never forget. We learned of the struggles, costs, and never ending regimes of pills, chest physiotherapy, and nebulizer treatments needed just to get little Sophie through the day. We recently caught up with Sophie, now a freshman in college at Arizona State University. Sophie is a beacon of hope and wants the world to know that there is life outside of CF. For Sophie and her family, moving away to college was never a question. Last spring, she had already made the decision to attend ASU this fall. Self described as independent, she is enjoying the freedom that college offers her. Her parents have supported and prepared her for college life. “My dad showed me how to do my laundry. My mom helped me buy cleaning supplies, and made sure I knew exactly how to clean my nebulizer.” (Respiratory equipment that delivers medicated vapor to her lungs via a facemask). Sophie says her parents were always serious about adhering to a daily schedule for her treatments, therapies and medications, and now she understands why. Without her family near, it is up to Sophie to take care of herself. Time management has been the biggest hurdle when it comes to college. INSPIREDHOMEMAGAZINE.COM

Balancing class, studying, extracurricular activities and managing her health is not easy, but she handles it daily and with grace. Her day begins at 7:30am taking medications, doing chest physiotherapy and breathing treatments. She wears a vest, which rapidly pounds on the chest and back so mucous in the lungs can be broken up for a productive cough. These routines are repeated at nighttime. Sophie sleeps at night, propped up on pillows to keep mucus from settling in her lungs. Throughout the day, she takes multiple medications. Everywhere she goes she carries a bottle of enzymes, which must be taken anytime she eats to allow her digestion system to function properly. Lisa Backlund explains that as a young girl, Sophie was fortunate she didn’t experience too many serious complications. Imparting a healthy lifestyle for their
daughter has been an important goal. In high school, Sophie was in crosscountry, gymnastics and track. Her love for running has made a positive impact on her health. “It’s obvious to say I liked running. It helped clear out my lungs and gave me more endurance. I now run every single day.” Sophie adds, “It makes me healthy and helps me manage my time well, because I always need to get my workout in.” (Her doctors recommend an hour of physical activity a day.) Sophie understands the importance of a healthy diet. She drinks lots of water, avoids greasy foods and tries to eat plenty of fruits and vegetables, though she confesses, the latter are still not her favorite. For Sophie’s parents, “letting go” was never easy. Their daughter Alex moved to Chicago to attend college two years ago, but CF made Sophie’s departure more daunting. Lisa adds, “We have prepared her the best we knew how, now it was really going to be up to her! The focus in our lives was about to shift and neither of us knew what was in store. Many prayers were said in the hopes that all would go well.” Today, Sophie is not only surviving, she is thriving. She has a great group of friends, joined a sorority and hopes to become a doctor. Parents Dave and Lisa have raised Sophie with the belief she can achieve anything she sets her mind to. The CFA of ND has helped families like the Backlunds financially and emotionally by creating a network of support that defies description. Lisa Backlund adds, “For us there was no other choice, we pushed past our fears and went to work. Our goal has been and always will be for Sophie to live a normal, long life. o me, the best part of holiday gift giving is just that—the giving. I relish the excitement and joy after weeks of creating or finding a meaningful present for that special person. I like to keep a notebook of gift-giving ideas year-round for this exact purpose. If someone mentions throughout the year, “Oh, I would love a…,” or, “I really need a…,” I jot it down for when the moment is just right for giving. Like the gift itself, the wrapping should match the thoughtfulness and love hidden inside. I like to keep things natural by using whatever pockets of nature I can find in the heart of winter, such as holly, spruce boughs, pine cones or even small twigs

Giving a gift with a touch of fresh rosemary or holly will be appreciated by the receiver. Scraps of felt material, buttons and readily available kitchen string add a vintage feel to your gift wrap.
Preparing for Christmas, I’m equally busy baking as I am wrapping gifts; therefore, I always have parchment paper around, both bleached and natural brown. They both lend themselves perfectly to beautifully concealing a gift. I don’t stop at parchment paper. Check your kitchen spice drawer! Cinnamon sticks, star anise, cloves and vanilla beans are perfect seasonal garnishes to adorn your gift wrap, plus they add aesthetics and heavenly aroma. If you are feeling exceptionally creative, you can easily dry slices of apple and orange as you would to make Christmas ornaments and adhere them to a gift box. Yarn, raffia and twine—even kitchen twine—are my favorite choices to add color and texture zigzagging around a present. Leftover scrap fabric is another great option to achieve a nostalgic look—and my husband’s preferred method of gift-wrapping! Presentation is important when serving guests their holiday meal, and just as impressive is a thoughtfully wrapped parcel for your friends and loved ones. With a little creative winter foraging around your home—both inside and out— you’ll have all you need for a package that shows you care.

h by gosh by golly, it’s time for mistletoe and hollye… But make sure you keep them away from your furry family members, because they are harmful if ingested. It’s that time of year where bowls of sweets sit out on the table all day, trees are decorated with tinsel and popcorn strings, and the low light of burning candles warms homes and our hearts. To us humans, these things create ambiance and a sense of coziness, but they may pose a health risk to cats, dogs or other family pets.

Dr. Amy Anderson of West Fargo Animal Hospital is always happy to share important pet safety tips. The holidays keep her office busy with pets and festivity mishaps. “The most common thing we see are sick pets with vomiting and diarrhea due to eating things they should not, such as human foods that are rich and high in fat,” she says. She once treated a dog that had eaten an entire popcorn string, including the needle used to string it. You may want to avoid using edible ornaments so your pet isn’t tempted to gobble up the Christmas décor. Dr. Anderson recommends buying shatterproof tree ornaments so when the dog or cat bats at the dangling sparkly adornments, there’s no risk of stepping on the broken bits of glass, causing harm to the paw or face. If you’re having a lot of holiday guests, it’s easy to overlook your four-legged friends, so they might be safest in their kennel if they happen to be crate trained. Dr. Anderson has also treated pets for injuries directly related to the Christmas tree itself, so sometimes a watchful eye is the best way to keep your animal safe. Dr. Anderson adds, “Pets commonly get corneal injuries from getting poked in the eye with pine needles. If it's a real tree, the substance in the needles is extremely irritating to the eye, which can lead to a more serious eye injury. Both cats and dogs will sometimes try to drink water from the tree stand, which can also make them quite sick.” In addition, popular holiday plants like the Christmas cactus, amaryllis and lilies are toxic to pets if ingested. If you suspect that your pet has consumed any of these, call your veterinarian immediately. Another great tip she offers is to eliminate real wax candles and tea lights in favor of the newer battery-powered ones. They are a great way to enjoy the ambiance of the season without worrying about harm to pets or children. Pets can burn themselves, knock the candles over and start a fire, or become injured from the hot liquid wax. If your dog gets into the bowl of delicious dark chocolate or your cat gets into a tussle with the tinsel, it’s important to know where to turn for help, especially late at night or on a holiday. Dr. Anderson says that larger cities

Chase off the chill Warm your holidays with family, friends and treasured time-honored recipes. BY Chef Granville Wood
W
hen I think of the approaching holidays, one word comes to mind that best captures the essence of the season. That word is “warmth.” The north wind sharpens its teeth to take a bite out of the last of the fading warmth of the short autumn days, yet there is still a coziness in the colorful fall leaves and the wisps of smoke from chimneys as evening fires are lit to chase off the chill. Gathering by the fire with family and friends with a warming glass of fine singlebatch bourbon, a platter of cheese beignets hot from the oven and an assortment of cheeses makes for a perfect end to a day as it falls into darkness much too early. Even though colder winds are blowing, it is the approach of our favorite holiday season that engulfs us. It is the warmth as families come together for Thanksgiving and the joy that comes with sharing the holiday season gathered around the tree that wards off the chill. And nothing says holidays better than the aromas drifting throughout the house from the kitchen—the intoxicating smells of baking breads, roasting turkeys, cinnamon and allspice, savory casseroles and pies. The groaning board that will soon render everyone comatose will be laden with the season’s best—bronzed roast turkey, creamy sweet 86 | NOVEMBER/DECEMBER 2016
potato casserole, smothered green beans, flaky biscuits and at least two—maybe three—pies, pumpkin for sure. There are a few dishes that are mainstays on our holiday table—traditions, so to speak— whether it is Thanksgiving or Christmas. These dishes ooze warmth and home. Turkey goes without saying, and there is butternut squash soup, a decadent sweet potato casserole and a chocolate pecan tart to sidle in next to that silky, spicy pumpkin pie. In the spirit of the season, let me share a trick for the best roast turkey ever, along with a few of our family favorites that will appear on our well-dressed dining table. To add a new twist to the roast turkey this year, you will need a couple of things. First, a large brown paper sack or bag from the grocery store with no printing on it, just a plain brown paper bag. Second, swing by Pinch and Pour, 210 Broadway N., Fargo, for some smoked paprika; I prefer the hot one, but there is a sweet one as well. Defrost and pat dry your bird. Take some softened butter and rub all over the turkey. Mix together 3 tablespoons each of kosher salt and smoked paprika. Rub two-thirds of the mixture inside the cavity of the bird, and massage the rest onto the breasts and thighs. Put the turkey

inside the bag and crimp the bag to seal it well. Place in a roasting pan and cook at 375 for the recommended weight and time until a thermometer reads 160 degrees at the thickest part of the thigh. Remove from the oven and let it rest for 10 minutes. Open the bag, and find the juiciest and tastiest bird on the block. I find the best way to ward off the autumn chill is with a warming bowl of soup. Utilizing the best of autumn produce, we roast INSPIREDHOMEMAGAZINE.COM
butternut and acorn squash, shallots and myriad warming spices, all tempered by the natural sweetness of pure maple syrup. This can be made as follows or for vegetarians by simply substituting vegetable stock. This is a rich potage that makes for a satisfying lunch with a chunk of warm, fresh-baked bread and sweet butter. Roasted Butternut Squash Soup with Ginger Cream

INGREDIENTS: 2 medium butternut squashes, split in half lengthwise, seeds removed (reserve and toast for a snack) 2 acorn squashes, split in half, seeds removed 4 shallots, diced 4 tablespoons powdered ginger 1 teaspoon cinnamon 1 teaspoon allspice 1 teaspoon grated nutmeg 1 quart stock 4 tablespoons pure maple syrup, no substitutes Kosher salt and white pepper to taste 1 cup plus 1 tablespoon heavy whipping cream Fresh-toasted small croutons to garnish Method: Brush all squashes lightly with melted butter. Place on a baking sheet and bake in a 350-degree oven until tender. Cover with foil, if necessary, to prevent browning. When soft and cool enough to handle, scoop out the flesh and discard the skins. SautĂŠ shallots with butter in a heavy stock until soft. Add flesh of squashes. Season with 3 tablespoons powdered ginger, cinnamon, allspice and nutmeg. Stir well to combine. Cover with stock. Bring to a simmer and cook uncovered for one hour; add more stock if necessary. In small batches, puree soup in a blender and place in another pot. Stir in pure maple syrup. Adjust seasoning with kosher salt and white pepper. To serve, whisk together 1 cup heavy whipping cream and 1 tablespoon powdered ginger until thickened but still slightly runny. Place soup in bowls, swirl in a tablespoon of cream, and serve with fresh-toasted small croutons on the side.

n adult version of a Dot” is the way I describe Turkish delight to those who have not tasted it. I was one of those people until two years ago. My husband and I work for Cornell at the New York State Agricultural Experiment Station, a vibrant and creative community of scientists from all over the world. It was there we met Okray and Didem Orel from Ankara, Turkey. We became fast friends, bonding over—what else—food. I will never forget my first Turkish delight. First, the aroma: a floral, ethereal scent floated up from the plate as I reached to pick up the small pink cube. As soon as my teeth sank through the soft confection, the flavor of sweet rose filled my mouth. “It is good, no?” Okray asked. I could only roll my eyes in pleasure. Dusted with the likeness of snow from confectionery sugar and with a taste of a fragrant summer rose, it satisfied my desire for something delightfully fresh that cold winter day. There are many legends claiming origin of the treat. My favorite begins on a mountaintop in Anatolia, modern-day Turkey, where confectioner Bekir Effendi was inspired to journey to Istanbul to open a sweet shop and Turkish delight was born. delights were given as a gesture of love among socialites. They spread in popularity through the country the way confectioner’s sugar billows up from its bag when opened. Effendi’s sweet shop still makes Turkish delights to this day, just as it has for more than 250 years. Didem gave me a traditional recipe
like Effendi’s, still a favorite in Turkish kitchens today. It’s not overly complicated but does take a bit of time. You probably have everything you need in your pantry now, save the rose water. I’ve made this recipe several times and have fine-tuned my method to share with you. I will always think fondly of my dear

1 teaspoon cream of tartar 1 cup cornstarch 1 tablespoon rose water 1 or 2 drops red food coloring Candy Dusting: 1 cup powdered sugar, extra if needed ¼ cup cornstarch Method: Place 1½ cups water in a pan. Add lemon juice and sugar. Bring to a boil while stirring. Once the mixture comes to the boil, keep stirring until the temperature reaches 240 degrees (soft ball stage) on a candy thermometer and remove from heat. In a separate pan, add 2 cups of water. Add cream of tartar and cornstarch. Whisk to remove lumps.

Continue whisking while you bring the cornstarch water to the boil. Once it becomes a glue-like paste, remove from the heat. I find it much easier to use an electric hand mixer. The paste gets very thick. Add about ½ cup of the sugar syrup to the cornstarch mixture and whisk to incorporate. Continue adding the syrup a bit at a time, whisking between each addition. Bring the mixture to a boil. Turn the heat down and simmer very gently for about an hour. Stir frequently. Because the mixture is so thick, it almost requires continuous mixing for even cooking.

After an hour or so, the mixture should be a amber color. Remove from heat. Add in rose water and 1 or 2 drops of red food coloring. Mix well. Lightly oil an 8-inch-by-8-inch baking tin and line with lightly oiled baking paper. Pour in the Turkish delight. Cover and cool completely for several hours. Dust the Turkish delight with powdered sugar and turn it out onto a surface covered liberally with powdered sugar. Remove baking paper.
Holiday Entertaining Time
Cut the slab of Turkish delight into squares using a pizza cutter or a lightly oiled knife. Sift powdered sugar and cornstarch into a large bowl and add the squares of Turkish delight. Mix well to dust surface area. Store the Turkish delight in a sealed box together with remaining powdered sugar/cornstarch mixture. Do not store in the fridge.
Helpful Hints There are two schools of thought when it comes to making Turkish delight. There is a gelatin-based version and one using cornstarch. I’ll save you the trouble of making the gelatin-based version. It is a shortcut variation that is fine if you want roseflavored Jell-O that tastes like Grandma’s soap. The real essence of Turkish delight is its al dente or “to the tooth” texture—soft yet firm. When bringing the water and cornstarch to a boil, I advise using an electric hand mixer. A whisk and your wrist will not cut it, as the mixture quickly becomes extremely thick and glue-like. Keep a close eye on the mixture as it thickens. After adding the sugar syrup, be watchful for the color change from translucent white to rich amber. The red dye is added after this step which turns it pink.

Advent in Reverse?
hen I was little, my grandma often sent my brothers and me Advent calendars to celebrate the season. They were beautifully painted Dickensian cityscapes with groups of carolers singing on street corners and garland strewn over all the doorframes. Twenty-four little windows opened to reveal chocolates shaped like Christmas ornaments. I remember searching for the number and perforating that day’s window to eat that little bite of milk chocolate. When my son was little, I purchased a large wooden reindeer Advent calendar that is Scandinavian-themed: bright red with white piping and 24 little drawers that open to reveal whatever gifts I want to include. There’s something wonderful about a small daily “task” that has a limited time commitment and leads up to something celebratory, in this case Christmas. But there’s also something a bit excessive about it. The holidays are already filled with so much: parties, presents, decorating and the like. Do we really need one more element that is all about receiving? What if Advent became about giving? I recently came across the idea of a reverse Advent calendar. or homeless shelter needs: socks, shampoo, canned goods, mittens, toothpaste, etc. I would encourage one item that is more of a gift than a necessity. When you’ve reached the end of Advent, December 24, you drop off your filled boxes. I really love this idea because, again, I’m not totally comfortable with an additional, expected daily present, however small, at this time of year. Particularly for young children, I think it’s important to get them thinking about how they can be of service to others. If my son were still little, I would purchase all the supplies needed to fill the 24 days and then let him pick which one he wanted to put into the box every day. You could decorate the boxes together so that there is an added element of festivity around the whole project; think of the important conversations you could have about giving and not just receiving. It’s so easy to get caught up in the materialism of the season; this is such a wonderfully simple way to help children remember to think about others and to be enthusiastic in their giving. I already have my box ready and am thinking about the kinds of items I am going to put into it every day starting December 1.
