s the holidays swiftly approach, I take stock of the place that I’m at in life. As my family has grown and scattered, some now raising their own children, a nostalgic wave passes over me that gives me pause for thought. Soon we will gather once again to celebrate this festive time of year, rekindling acquaintances, garnering yet again precious memories to store and sustain us. I must admit I loved the bustle created as we kicked our creativity into high gear to bring you the Inspired Home Holiday issue! We have garnered great ideas from talented area experts to add sparkle and shine to your homes as you prepare for family and friends. From Chef Wood’s thoughts on preparing a memorable meal to holiday décor expertise from local designers, we have it all waiting for you within these pages. The glitz and glamour of this festive season is a gratifying but as Inspired Home readers know, we also share the very heart of the season—something deeper and more profound than glitter. Nearly 35 years ago circumstances brought me to the bedside of a frail young boy in the hospital. As staff relentlessly pounded his chest, I was told he had cystic fibrosis. They were using ‘percussion’ to help loosen the mucous in his lungs so he could breathe. Cystic fibrosis? I had no idea what that meant, but I learned quickly. It’s a progressive, life threatening incurable disease. I will never forget the moment I was told he had died. Nine years ago I received a phone call from Lisa Backlund asking for help. She and her friends wanted to host a holiday walking tour of their own homes to benefit the Cystic Fibrosis Association of North Dakota. Her will was formidable and the rest is history. Among them were mothers whose children had CF. From that initial three home tour to nine stunning residences on this year’s agenda, Inspired Home encourages you attend the 8th Annual Holiday Homes of Hope tour, November 11-12. Our volunteers, designers and homeowners graciously invite you to enjoy a day of dazzling décor, food and shopping with this satisfaction—you are helping area young people live. We’ll see you there! Dayna Del Val Del Val is the executive director of The Arts Partnership, where she writes a monthly column on the arts for The Forum, manages two staff members and an active board, and works to support the mission of cultivating the arts in our community through a variety of ways. In other words, she wears 27 hats! She is also a professional actor and writer. She lives in Fargo with her husband and their golden retriever, and she loves when her college-aged son is home on breaks.

We get pretty competitive when we travel, and we see who can take the best pictures,” she says. Competition or not, Haider says she will always love photography as an art form.

Granville Wood Wood is an international chef who has worked in London, Stockholm, Toronto, Vancouver, Palm Beach and Houston before moving to Fargo with wife Susie, a doctor with Sanford Health. Most recently he operated The Blue Goose Café in the Plains Art Museum. Lauren F. Carlson Carlson, a Fargo native and geologist, is a research assistant at Cornell University at the New York Agricultural Experiment Station, where she conducts field work and data collection for the study of shrub willow as bio mass. She enjoys cooking, baking, running, renaissance art and writing. Ashley F. Johnson Ashley Ferragut Johnson, formally from Oklahoma City, has found her way back into the heartland. Cinnamon Egg Nog French Toast INGREDIENTS

• 2 cups Cass Clay Egg Nog or Light Egg Nog • 1 teaspoon cinnamon • 2 eggs

DIRECTIONS

1. Mix Egg Nog and eggs in mixing bowl until smooth. Stir in cinnamon. 2. Heat griddle or frying pan to medium heat.

• 12-14 slices firm white bread • Vegetable oil cooking spray, or 4 tablespoons butter or margarine

3. Soak bread slices in mixture until saturated. 4. Cook bread on each side until golden brown. Serve hot.

LOADED POTATO SOUP INGREDIENTS

• 4 (6-ounce) red potatoes • 2 teaspoons olive oil • 1/2 cup onion (chopped) • 1/3 cup celery (diced) • 1 1/4 cups chicken broth

• 3 tablespoons all-purpose flour • 2 cups 1% Cass-Clay low-fat milk, divided • 1/4 cup Cass-Clay sour cream • 1/2 teaspoon salt

DIRECTIONS

• 1/4 teaspoon black pepper • 3 bacon slices, halved • 1/3 cup cheddar cheese, shredded • 4 teaspoons thinly sliced green onions

1. Pierce potatoes with a fork. Microwave 13 minutes or until tender. Cut in half and cool slightly.

4. Remove from heat; stir in sour cream, salt, and pepper.

2. While potatoes cook, heat olive oil in a saucepan over medium-high heat. Add onion and celery and sauté 3 minutes.

5. Arrange bacon on a paper towel on a microwavesafe plate. Cover with a paper towel; microwave 4 minutes. Crumble cooked bacon.

3. Add broth. Combine flour and 1/2 cup milk. Add to pan with 1 1/2 cups milk. Bring to a boil; stir often. Cook 1 minute.

6. Remove potato from skin. Discard potato skins. Coarsely mash potatoes into soup. Garnish with cheese, green onions and bacon.

Inspired art of a winter season. An area artist takes us on a sentimental holiday journey. BY TERRI FERRAGUT | Photography by ZAINAH HAIDER

F

argo artist Suzanne Moser warms the hearts of many with sentimental depictions of her thoughtful and emotional scenes. Moser, a self taught artist began painting as a hobby to help pass time during long, cold winters. The "Holiday" and "Moseric" series (layered acrylics with a mosaic appearance) are some of her favorite works. Her nostalgic nod to Christmas makes us smile wistfully. We asked this gifted artist for her thoughts on the intricate images she creates. IH: The imagery you portray seems personal combined with charming whimsy. What enables you to create art that moves people emotionally?

SM: My childhood memories and my love of the Christmas season are what speak to me when I paint my holiday works. I want to re-create those moments. It might be the middle of summer, but if I am in my studio painting a Christmas scene, I am full of the spirit of Christmas! Most of my holiday art begins with a poem or rhyme that I write based on a Christmas experience or a special joy that occurs at that time of year. Then with paint, I illustrate that visual scene as I picture it in my mind. I grew up loving nostalgic Christmas books and cards, so I believe my ideas are drawn from that also.

IH: What mediums do you prefer to work with? SM: When I first discovered my desire to paint, I was an at-home mom on a budget. I wasn’t quite sure I would stick with the idea of painting as a hobby, so I went to the hobby store and bought the least expensive acrylic paint and brushes on sale! Today, 25 years later, I've developed my own style of work. I still use the same paint, but I do invest in good brushes. I enjoy acrylic paint. It dries quickly, and I've learned over the years by experimenting how to change its texture for different styles of painting. For example, my mosaic paintings are layered paintings that create a dimensional appearance. IH: Describe yourself as an artist. SM: This is always the hardest question! I live in a city with some of the best artists in the country. My artwork isn't created to be controversial, to demonstrate a mastering of a skill or to be decorative. I paint charming, detailed scenes for my own enjoyment. If anyone else enjoys the intricacies, the humor or the message, then I am successful as an artist.

Editor’s note: As another winter approaches, Inspired Home is proud to be a part of the Holiday Homes of Hope Tour. Each year, we share inspirational stories of families affected by cystic fibrosis, creating an opportunity to educate others. November 11–12, area homeowners again open their homes for public viewings, showcasing stunning holiday décor created by local designers. All proceeds benefit the Cystic Fibrosis Association(CFA) of North Dakota to help support families in fighting this deadly and expensive disease. We introduce you to Ashlee Rudolf, a vivacious 22-year-old and this year’s ambassador for the CFA of North Dakota.

W

ithin 24 hours of Ashlee Rudolf ’s birth, her mother, Diann knew something was wrong. Ashlee wasn’t having bowel movements; that quickly escalated to emergency surgery and several weeks in the ICU. Ashlee was diagnosed with cystic fibrosis (CF), and so began the Rudolfs’ new life path. “This was a shocking blow to our family, because in all mothers’ dreams, a baby with a serious disease is never a part of that dream,” says Diann. She recounts the fear she experienced while researching CF in the public library, realizing her daughter’s life expectancy could become shortened. They had many teary nights but were advised to “raise this baby just like any other.” And so they did. As a child, Ashlee seemed quite healthy and wasn’t hospitalized until age 10. Her new daily regimen consisted of taking handfuls of medications and enzymes to help digest food and to keep her lungs free from the excess mucous CF is known for. She used her physiotherapy vest several times a day, which automatically percusses the chest front and back to help break up mucal secretions. She began nebulizer treatments, vaporized medication inhaled through a mask to help open her lungs. Every few months, she received IV medication to help stave away illnesses. Despite this time-consuming and overwhelming schedule, Ashlee was a very active young girl, participating in basketball, volleyball and track. A successful young woman, Ashlee is now proving that she is not her disease. After two INSPIREDHOMEMAGAZINE.COM

years at UND and three years attending NDSU Nursing at Sanford Health in Bismarck, Ashlee recently graduated with honors. Caring for others as a registered nurse in Park River, North Dakota, is a dream she’s had since she was a child. Spending free time as millennials do, she enjoys hanging out with her boyfriend, family and friends and enjoying her youth. When it comes to CF, Ashlee wants the world to know that just because the disease is often invisible to others, it isn’t to her. “It’s hard for people to understand the toll it can take,” she says. “I put a lot of time and energy to keep myself alive and healthy every day. It gets physically, emotionally, mentally and financially exhausting some days. It’s hard to explain to people why I may not be in a good mood one day or don’t feel like going out. There’s a lot more to the story than just being tired.” With the love and support of family and friends, Ashlee continues to make people around her proud, raising awareness about CF along the way. While the struggles she endures can be physically and emotionally taxing, she remains positive. “I think it could always be worse,” she says. “I appreciate being able to live an almost normal life. I’m thankful for the life I have and all the people who support me. CF is a part of me and has molded me into the person I am today. A Look Back and Moving Forward. By Ashley Ferragut Johnson

N

early a decade ago, I listened intently as Lisa Backlund and Carlotta Schwartz discussed the challenges of raising children diagnosed with cystic fibrosis. Pioneers of Holiday Homes of Hope, the two mothers reflected on its early beginnings and growth of this vital event for the Cystic Fibrosis Association (CFA) of North Dakota. Backlund recalls, “2010 was the inaugural year of the Holiday Homes of Hope tour, which originated with a few wonderful friends in the neighborhood. Jana Swanson, Lori Tellefson and Dallas Christianson all opened their homes for public viewing. The tour was derived not only from a shared enjoyment of holiday decor but really from the heartfelt love and hope these extraordinary women held for my daughter, Sophie, and their desire to host a charitable event for children living with cystic fibrosis.” Since then, the event has grown from a small, neighborhood, three-home tour to a statewide event that hundreds attend annually. This year, November 11–12, there are nine homes on the tour in the prestigious Fargo Country Club neighborhood of south Fargo. This tour provides families like the Backlunds and Schwartzes a sense of community support. Backlund explains, “As a parent of a child diagnosed with cystic fibrosis, you live with many uncertainties and the knowledge that things may not always go well. Throughout this journey, however, you encounter unexpected blessings such as the gifts of perseverance, gratitude, compassion and courage.” She goes on to say that watching her daughter, now a grown woman, fight every day to beat this “relentless” disease has made her realize Sophie is truly her hero. Holiday Homes of Hope helps provide emotional and financial support to all of the “CF heroes” out there who need a helping hand. Schwartz, whose 27-year-old daughter, Nicole, has CF, is grateful to be a part of something that plays such an integral role in their lives and the lives of other families who suffer from this debilitating disease. Though not surprised, she is moved by the support of the F-M community and recognizes the many business groups that support the CFA. The sense of community has been something Schwartz and her family are thankful for. “Over the years, I have met many people with CF and their families,”

she says. “I also have known many that have died from CF, which is difficult. I feel we have a bond between us as we know what a struggle it can be to fight and treat this disease. To be able to be a part of helping someone get a lung transplant is great. winkling Christmas trees, fireplace mantels in fanciful holiday array, welcoming entryways adorned in rich, jewel colors—once again the F-M area looks forward to the 2017 Holiday Homes of Hope Tour. This year marks the eighth year that Inspired Home has sponsored the event. All proceeds benefit the Cystic Fibrosis Association of North Dakota to assist children and young adults in our community who are in need of medicine and life-saving equipment. With sincere gratitude, Inspired Home recalls the beautiful homes featured in the

2016 Holiday Homes of Hope Tour, the talented designers who decked them in festive style, and the generosity of homeowners who welcomed the community. Looking back at the historic homes on Eighth Street, we share the homeowners’ thoughts and memories of participating in the tour to help raise funds locally. Together as a family, Rod and Ellen Shafer agreed that it was an easy decision to take part in helping kids in need. “There are only so many historic homes in Fargo,” Ellen explains. “People love seeing the interiors and hearing

of the history behind these homes. We loved seeing our house transformed by the Scheels design crew. It never looked better!” Like so many faithful tour goers, Craig and Karla Benson attend each year, so it was especially a privilege to be involved as homeowners. “It was fun to be a part of the tour for such a great cause during a season of giving,” Karla says. “We enjoyed working with the designers from Holland’s, who had a great eye for decorating our home.” Shaun and Jessica Foss also feel fortunate to have been a part of the 2016 Holiday Homes INSPIREDHOMEMAGAZINE.COM

of Hope Tour. “McNeal and Friends turned our home into a winter wonderland,” Jessica remembers. “We enjoyed visiting with the tour guests who came through our home. It added holiday cheer to our lives just knowing that money was being raised for an incredible organization. Both the tour and the communication with us as homeowners was top notch and well organized. We can’t wait to tour the 2017 homes!” Besides gleaning many new holiday decorating ideas for the home, Kevin and Suzanne Moser commented that the tour was so much more than just fun. “It was exciting to watch the designers from Eco Chic turn our comfortable home into a house designed for a magazine!” Suzanne says. “Kevin and I were delighted to see the helpful ideas—many we have kept. The process was effortless for us, and our home was respected and cared for.” Roger and Margaret Nelson’s home became a whimsical holiday home, decorated in traditional style with flair by Leanne Siebold and her associates from the Green Room. “We enjoyed the process, the day and the ability to contribute to the Cystic Fibrosis Association by opening our home,” Margaret adds. 32 | NOVEMBER/DECEMBER 2017

year’s home reminded me of a doll house. It was so bright and airy “Last I wanted to fill it with color. The old character of the house mixed with light pinks, greens, and blues made it so playful and charming. We chose "It's a Wonderful Life" theme because it’s my family’s favorite holiday movie and represents how blessed we are to be part of this event that helps local families on a difficult journey. I love a good old-fashioned Christmas but enjoy using non-traditional décor colors. Neutral colors, gold-lit trees in the entry, white garland and hundreds of strings of pearls were used. An eclectic style was kept by mixing "old and new," keeping it fun and whimsical. We framed old book pages from "It's a Wonderful Life" and set the dining table using place cards with the movie character’s names. A Christmas tree near the table was filled with real peacock feathers, ribbons and ornaments. Our decorating philosophy is that it shouldn’t cost a fortune to decorate for the holidays- think outside the box and repurpose! We loved being a part of the HHOH tour that inspired us creatively and let us support an important cause. Shawna Davidson

come from a long line of remarkable women. I come from immigrants, homesteaders, single mothers, highly and lowly educated women and problem-solvers—and that’s just the ones I know about! My maternal grandmother, Genevieve Carss Bowman, is the one I am most often likened to, and I take the comparisons as a great compliment. She was wicked smart, beautifully creative, a true trailblazer (in the 1920s, she demanded—and was allowed—to take shop class in junior high because she already knew how to cook and sew) and didn’t suffer fools lightly. But there’s a place where my grandma and I dramatically diverge—she was a stunning knitter and seamstress. She was more artistic with thread and a needle or knitting needles than anyone I have ever known. Every Christmas, we received exquisite homemade Christmas ornaments, pieces I still fondly admire and hang up every year. She made clothes for my mom’s Barbie that brought new meaning to “micro couture.” I still wear a sweater she knit my dad, part of a trio she made for my parents and me when I was very little. I took one year of 4-H and made a softbox that my mom still has. Its corners are relatively straight, but that’s the extent of my sewing acumen. When you are a master seamstress like Grandma was, you have drawers and shelves of fabric, all colors and materials. When we cleaned out Grandma’s house 20 years ago, my mom kept just two pieces of fabric and gave them to me. They had been purchased for her when she was in high school, but for some reason, Grandma never got around to making anything out of them. The mustard yellow and olive green plaid cuts of Pendleton wool have sat in my closet all this time. I never knew when I was going to be able to do anything with them because I needed just the right person to help me make this material come to life. Then I remembered Cynthia McGuire Thiel of CMT Sews. Cindy is my son’s dad’s wife. I have known her for a number of years, but I had no idea she could sew. Believe me, Cindy can sew. Cindy is an artist with a sewing machine. And now I have the dress to prove it. She asked me what kind of style I liked. I sent some images, and she showed up with a number of patterns. I picked a relatively simple one. I asked for pockets and a fun, unexpected lining. INSPIREDHOMEMAGAZINE.COM

Cindy took my measurements and went away to create a mockup. The day I tried on the mockup, I wanted to take it home with me right then and there. The final fitting occurred on one of those days where I was feeling stretched in a million different directions. I rushed into her sewing room and slipped into the glorious plaid with burnt orange lining; the silkiness was like stepping into a warm bubble bath. Suddenly, I slowed down and allowed myself to enjoy the feel of that material. Cindy zipped me up and turned me around to the full-length mirror. I caught my breath—the dress was perfection. It fit me like a glove. The pockets invited my hands to nestle inside them. Each stitch was at attention—straight and true. The armholes were the exact size I needed; the length fell perfectly at my knee. I saw myself in the mirror, but I actually saw my grandma there, too. Her hands and her artistry were all over that material now sitting against my body. Cindy gave me the gift of a stunning dress, but she really gave me so much more; she gave me another moment with my grandma. estled on a private river lot on Southwood Drive, Russ and Audrey Newman’s French provincial home is a welcoming combination of vintage charm and contemporary details. It provides the perfect setting for this year’s Holiday Homes of Hope feature home. The Newmans wanted to be a part of this tradition of hope that helps those who suffer with cystic fibrosis, especially within our community.

The couple purchased their home four years ago and have been working on updating it, the kitchen being the most recent phase. Audrey is owner and principal designer at JW Kitchens, and her purposeful room designs preserve the home’s antique qualities and character while introducing traditional finishes. Double-arched entry doors beneath a geometric wallpapered ceiling and brass fixture coordinate with a rectangular antique

Plus, the oven location is easier on the back and eyes.” A veined marble backsplash and waterfall stone-topped island, riveted brass countertops and a hammered nickel sink with an antique brass faucet weave in finishes that appear authentically aged. the Newman’s French provincial home creates a storybook presence with its circular driveway and meticulously manicured trees.

Decking their tree each year with cherished ornaments is a favorite tradition. Audrey admits, “I like to change it up each year, sometimes with nontraditional and unexpected décor.” Warm and inviting, their 3,200-square-foot home was built in 1964 and includes four bedrooms and four baths. An additional 500-square-foot bonus space has a spacious rec room and a bedroom with a window seat and spectacular angled ceilings.

Rooms were planned to easily convert to an office space, family room or whatever is needed. Audrey also designed a gorgeous bath covered in marble with heated floors and Wood Mode cabinetry. Relaxing and welcoming, the Newmans’ home extends a warm welcome to our community this holiday season. This year’s Holiday Homes of Hope Tour will again bring hope to those in need and joy to the hearts of those who attend.

s winter approaches, we move indoors. Gone are the weekend trips to the farmers market, afternoon bike rides under a canopy of autumn leaves and evenings spent grilling on the deck. Inside our houses, we have settled into warm blankets and wool socks, and we prepare for the busy holiday season ahead. Temperatures drop below freezing, and the winds develop an icy bite, making our homes the central location for entertainment. After planning the perfect holiday menu and prepping our houses for the guests who will walk through our front doors, decorating the house for the holiday season can feel like an undue burden on the perfect host or hostess. Pam Erickson of Fargo’s Infinity Designs offers a unique service to take some

Another tree special to Erickson belongs to a couple who has traveled the world together collecting souvenir ornaments—fond memories of their adventures. “That’s what’s fun about Christmas trees,” Erickson says. “Everyone does something different. You never put up the same tree from one house to the next. One could be traditional red and green; the next could be all crystal and white. You never get bored, and you never get tired of it.” Each year brings another chance to be creative using traditional ornaments and blending them with silk arrangements or other elements to reinvent the tree. She works with both artificial and live trees and welcomes home décor color changes, allowing her new design opportunities. Infinity Designs typically specializes in floral design, but during the holiday season, Erickson uses her artistic skills to help families prepare their homes for holiday guests. She says Christmas is the most rewarding time of year for her work because “people tend to want more color, more sparkle and more life,” allowing her to be creative in the way she decides to decorate a home. She loves “walking into a house and seeing all of the boxes families pack away in January lining the halls” giving her the opportunity to dive into the decor and bring it to life every year. A few favorite trees come to mind when Erickson thinks about her holiday season work. One is a 7.5-foot tree she does every year for a local couple, memorable because every ornament on the tree is related to their children. Even though their children are grown, this couple’s tree reflects their love for family, welcoming glass ornaments cradling small succulent plants and frosted balls of twine hang among the branches, blending with the natural colors of the tree.

the festivity continues in the kitchen, where the island chairs have each been adorned with their own wreath to compliment the tree in the living room. From the top of the tree to the edge of its skirt, vibrant blue and emerald green bring life and energy to this neutral space.

Puppy Love…are you ready?

T

his holiday season, we will surely be bombarded with advertisements, viral YouTube videos, and Facebooks montages of individuals delightfully surprised by the gift of an adorable puppy. Beautifully wrapped boxes with air holes and a big shiny bow wrapped festively around their necks…what could paint a happier picture? While surprising a loved one with a four legged gift may seem like a perfect idea, it does require serious consideration. Is the recipient ready for the gift that certainly gives back? What type of dog is right for you? We reached out to our pet expert Dr. Amy Anderson of West Fargo Animal Hospital to get a little furry feedback. Dr. Anderson recommends reflecting on your lifestyle. The life you lead will undoubtedly affect the quality of your pet’s life so first evaluate the time you have to give. Is your family extremely busy with work, school, and other activities? Then perhaps a breed that is more docile and doesn’t require much exercise is a good choice. If your family travels often and your dog is kenneled or using pet sitters frequently, then dog ownership may not be for you. “While some dogs do not need a lot of exercise, all dogs need social interaction with people that are familiar to them on a regular basis,” says Dr. Anderson. 82 | NOVEMBER/DECEMBER 2017

She explains that if they do not get this crucial interaction with their owners, dogs may develop “ u n d e si ra b l e” behaviors that can become problematic. There are breeds that are Dr. amy anderson higher energy by nature, and some tend to be more sedentary. Older couples should evaluate their own energy level and health when choosing a dog. Dr. Anderson recounts an elderly female client was gifted a Labrador by her well-meaning family to replace a pet that had passed away. The energetic lab pulled her down the stairs while she held the leash causing a fall and broken hip. Smaller dogs may be more appropriate for elderly couples since they are easier to handle physically. On the flip side, families with small children must be mindful of both size and temperament of the dog they select. Dr. Anderson adds, “While large dogs can be great with kids, large puppies are often clumsy and sometimes knock children down accidentally. Any families with young children must be able to supervise their children and pets when interacting at all times. Conversely, small breeds can be fragile and injure more easily if a small child accidentally falls on them or drops them. “ Research is key when it comes to making the decision on extending your family to the furry variety. Dr. Anderson explains, “The herding breeds and hunting breeds are known to be high energy dogs. Terriers, both small and large breeds, are also known to be high energy. Many other giant breeds are surprisingly low energy. That’s why breeds such as mastiffs or great Danes make good apartment dogs, believe it or not! Many small breed dogs are great lap dogs that just prefer to sit by your side all day – common breeds such as Cavalier King Charles spaniels, Shih Tzus and Lhasa Apsos come to mind.” If including a dog in your household is in your future, take “paws” and truly evaluate if you and your family are ready. Holiday High Jinks

ur office has always had a Secret Santa gift exchange beginning Thanksgiving weekend and wrapping up the Friday before Christmas. I’m fortunate to work at a company where out of over 100 associates, there’s not one single person I dislike. That’s a good thing. But it’s not the reason I finally decided to participate in the Secret Santa exchange. I decided to participate because after what seemed like decades of drawing a blank as to what to buy each week, I had contrived the PERFECT plan for a six-week sequence of gifts.

Week one would be a small local cookbook of interesting dessert recipes. Each week after would be one of the ingredients for one of the recipes in the book. The final week would be identifying the specific recipe and including the baking pan to make it in. I told my work-wife Gwendolyn about my idea. (A work-wife/work-husband is your opposite-gender best buddy at the office.) Work-wife Gwendolyn thought it was a great idea and decided to do something similar with a craft-type project for her Secret Santa victim.

Work-wife Gwendolyn is many things. Thoughtfully creative is not one of them. I didn’t mind she piggy-backed on my brilliant concept. It’s the least I could do for the person who spent the last decade listening to me complain about some of the less-than-inspired gift selections. “It’s the thought that counts!” Guess what? So does the gift. No one wants a Hello Kitty pencil box or notepad or a coffee mug with an inspirational saying on it. Coffee is the only inspiration I INSPIREDHOMEMAGAZINE.COM

need at my desk at 7:30 a.m. Any inspirational words sent my way at that hour are likely to be met with a coffee mug whizzing by the side of the speaker’s head. November 15: It was time for Secret Santa name drawing. I got Loretta, someone I knew and admired enough to know she’d love the whole baked goods concept. Work-wife Gwendolyn insisted we play the

game fairly and not share which co-worker we’d drawn, which was fine with me. After work, I asked her to meet me at Barn & Stable Book Yard to get things started. She could find some how-to book on some crafty/home décor thing. Right away, I found a dessert book full of recipes for people with every food allergy on the planet.

Work-wife Gwendolyn stared at the crafty/ home décor section with a look of confusion and disgust. Maybe she could capitalize on the gift progression idea but do it from the Barn & Stable Book Yard coffee shop. I thought it was a GREAT idea, since work-wife Gwendolyn remained low on the thoughtful creativity scale but still had her

heart of gold and wanted to do something nice for her Secret Santa colleague. Work-wife Gwendolyn decided on a bag of whole-bean, fair-trade, Costa Rican coffee. Week one: My cookbook gift seemed a hit. I received a coffee mug that said “World’s Greatest Office-Mate.” Whatever. Week two: It was gluten-free, free-range, unbleached flour for Loretta and a mechanical pencil for me. Plastic. Looked like maybe the name of an insurance company had been scraped off. Week three: Organic, free-trade cherries for Loretta, and for me, an “As Seen on TV” giant bathrobe you wear backwards while watching TV and eating popcorn. Week 4: Extra-ultra-virgin olive oil hand squeezed by angry Italians and cage-free, free-range chicken eggs for Loretta. I got a box of school-fund raiser popcorn. Week five: The final gift, the Big Reveal of who’s who of office Santas. Loretta got a poly-paraben-free baking plan and organic, locally grown, unbleached linen food wrap and the identity of which allergy free dessert option she could assemble. Side note: The word “free” in these product names has nothing to do with their cost relative to similar, normal items. The only thing free about the end result of these recipes is taste and texture. I received a large box with a bag of wholebean Costa Rican coffee, a single-serve coffee grinder, a high-tech on-the-go coffee mug AND a pour-over single-serve coffee cone and free-range, gluten-free paper filters. Who was my Secret Santa? Work-wife Gwendolyn. She had manipulated the name drawing, just a little bit. My smug confidence in figuring out the PERFECT progressive gift idea and exasperated eye-rolls upon gift opening was too much for her to resist. She nailed it. Hope your world contains a best buddy that helps keep it real. And a 2018 filled with love, light, peace and joy.

Inspired Holidays Traditions and good food remain celebration staples

s an avid reader of several food-related periodicals, I find it hard to throw away these culinary nuggets of information with their adventures to distant lands. My wife jokingly implied that I might be a hoarder. So, somewhat grudgingly, I began the process of sifting through wellorganized stacks of magazines, and that is when I saw the pattern. Looking at every month of each publication, there was an obvious pattern in the November and December issues. Photos of glistening, golden turkeys adorned each publication’s cover, the only difference being a twig or two of holly on the December issue. Delving inside, it was amazing how every year they managed to tweak not so much the turkey but the accompaniments. I don’t know why I was so surprised. As a chef, I had been doing it for years. It is a formidable task to develop new dishes every year, so I applaud the editors for their creativity and tenacity. 90 | NOVEMBER/DECEMBER 2017

Everyone around the world has different traditions and ways to celebrate the holidays. We like to make Christmas dinner special. There is no football, and we all dress nicely. The table is set with linens, and we continue a tradition from my English roots—Christmas crackers, the ones you pull with the person next to you, releasing the silly little prizes. When I think of Christmas dinner, chilled oysters on the half shell and smoked salmon come to mind, followed by a nice salad of Belgium endive with shaved fennel, pear and blue cheese as a precursor to a majestic standing rib roast and all the classic accompaniments: Yorkshire pudding, roast potatoes, glazed carrots and Brussels sprouts with chestnuts, along with a nice au jus and a heady horseradish sauce. For dessert, Christmas pudding with hard sauce is the norm, and I offer up a nice lemon tart and a INSPIREDHOMEMAGAZINE.COM

chocolate pecan torte. Some meals just stand the test of time: Thanksgiving and Christmas are two of them. I experiment with food the other 363 days of the year. We are a country fortunate enough to celebrate Thanksgiving, so we get to eat turkey twice in a relatively short span of time. Having been raised in England, turkey was a favorite at Christmas, along with goose and duck. It was a ritual to go to your local butcher shop and place your order in advance. Come Christmas time, the butcher shops and the old markets were adorned with birds in full plumage hanging from the ceiling and rafters—quite a sight. When roasting any bird, it can be challenging to keep the breast moist while cooking the thighs through. To get around this and to cut down on the cooking time, this year we are going to spatchcock our bird and cook it on the grill for a woodsy, smoky flavor. Spatchcocking is when you remove the backbone from the bird and then flatten it out by pushing down hard on the breasts, cracking the bone slightly. This method of cooking fowl decreases the cooking time and allows more flavor internally, plus you get that meaty backbone for the gravy. You can roast the turkey in the oven, but I’m going to grill outdoors. A gas grill works well, as you can control an even temperature, but I prefer the flavor of wood. I make a mop of apple cider and butter, flavored with fresh sage and thyme. Regionally in Texas, cornbread dressing is the norm and a nice change from the more traditional white bread as it gives it sweetness. Smothered green beans, mashed potatoes, a cheesy sweet potato gratin, soft yeast rolls and a touch of jalapeno in the cranberry relish bring it all home. (Find these recipes on our Facebook page.)

turn turkey breast-side down. Use poultry shears to cut along both sides of the backbone beginning at the tail end. If you hit a tough spot, try cutting with just the top of the shears.

Spatchcocked turkey Spatchcocking, Irish in origin, dates back to 18th-century cookbooks. Spatchcocking any bird basically means butterflying, which results in less cooking time and juicier meat— and it's a lot easier than it sounds. INgrEDIENtS: Whole 10-pound turkey, breast side up MEthoD: 1. turn the turkey over, breast side down. Using a pair of sharp, heavyduty kitchen shears, cut along one side of the backbone. You may have to use both hands to power your scissors through rib bones. a sharp knife can also help get through the tougher spots. 2. repeat on the other side. 3. Save the backbone to make turkey stock or gravy. 4. to flatten the turkey, press down firmly on both sides of the breastbone until you hear a cracking sound. try to get the turkey as flat as you can. at this

point, you can season and roast the turkey right away, or you can brine it. 5. to roast the turkey, tuck the wingtips under the breast. 6. Place the turkey on a rack on a sheet pan. Pat the skin dry, rub it with butter or oil, and season with salt, pepper and herbs. 7. roast at 350 degrees for 1 hour, 30 minutes. Baste with butter or pan drippings. Increase heat to 400 degrees and roast for an additional 15 minutes to further crisp skin. Internal temperature at the thigh should be 165 degrees.

Set aside backbone (and giblets) for stock. take hold of both newly cut edges and open the turkey. remove large pieces of fat. turn turkey breast-side up.

8. remove the turkey to a platter or cutting board and tent it loosely with foil. the internal temperature will continue to rise 5 to 10 degrees. Use the pan drippings to make gravy. ENJoY!

In a medium saucepan off the heat, whisk together the eggs, egg yolks, sugar and lemon juice until incorporated. over medium heat, stir continuously with a heat-proof rubber spatula until mixture thickens and coats the back of the spatula. remove from heat and whisk in butter 1 tablespoon a time until incorporated. Pour the mixture through a fine strainer into the cool tart shells. Cool to room temperature and then refrigerate 2–3 hours until firm. Macarons Demystifying an intimidating confection (in time for the holidays)

or years I have avoided making macarons, the Holy Grail of French confections. They have a reputation for being finicky and temperamental. Many recipes include words like “if,” “but,” “only,” and “never.” They are words both intimidating and uncommon in recipes. To me, macarons were one of the things best left to the pros, like pho and sushi—until I made them. French macarons, pronounced “mah-kerohns,” are delicate, airy cookies made of egg whites, ground almonds and powdered sugar. A recipe with only three ingredients leaves lots of room for error. To me, it is sort of like making the perfect fried egg. It is only an egg and a hot pan, but a lot can go wrong quickly. My approach to making macarons was simple. My modus operandi was don’t think, just do. I watched one video online, read three recipes and just went for it. I think that is the key. Do not let the macaron intimidate you. You can do it! I made several batches with slightly different techniques, and this is what I learned. If you can whip two egg whites into stiff peaks, you can make macrons. Grind your own blanched almonds with a food processor, or buy almond flour. I used Bob’s Red Mill from the store. It is very fine and yields a smoother texture, and from my experience—truthfully—they turn out better this way. Add the almond flour all at once! I found no difference from adding the almond flour in thirds or all at once. Of the recipes I read, there are a specific number of folds to make while adding the almond flour to egg whites, anywhere from 37 to 90. This meant nothing to me. I folded the almond flour into the egg whites until it was very well combined and yielded a texture that slowly settled back into itself after folding—kind of gooey. After the first few folds, I was terrified. The mixture looked as if it would never combine, but keep the faith—it will! Just keep folding.

After you’ve reached the correct consistency, it is time to pipe them out. I used a 1.5-inch cookie cutter to trace circles on parchment paper. Remember to flip it over before piping. The most important factor in my macron

baking experience was the piping technique and amount of batter used. Use a round tip, and pipe from the center of the circle out— not in a circular pattern—using only about 1 tablespoon.

My approach to making macarons was simple. My modus operandi was don’t think, just do.

Be sure to tap the sheet pan on the counter to release any extra air bubbles, which seems counter intuitive because you’ve worked so hard to create those air bubbles, but just trust me on this. Do this a few times, like you would when making a cake. Another good trick is to let the piped macarons sit for half an hour or better yet, a full hour. This helps them dry out and form a skin. If you get this far, you’ve done it! All there is to do now is bake. After cooling, fill your macarons with buttercream of whatever flavor you like. I chose a rosewater buttercream. Jam is also a classic filling for the macaron.

macarons Whip eggs whites until smooth and glossy. A stand mixer makes easy work of this. You can also you a hand mixer or whisk by hand.

Traditional recipes require your fold in the flour mixture a specific number of times. Just makes as many folds as you need to until the mixture is a grainy, gooey mixture. It will begin to settle back into itself.

Ingredients 1 cup powdered sugar ¾ cup almond flour 2 egg whites, room temperature ¼ cup granulated sugar Food coloring (optional, but use gel if you do!) METHOD Beat egg whites to stiff peaks. If you are using gel food coloring, add after reaching soft peaks. Add the granulated sugar after the first few minutes. Meanwhile, sift powdered sugar and almond flour together into large bowl. When your egg whites have reached stiff peaks, add almond flour and powdered sugar all at once to egg whites. Fold in gently until well combined and the mixture is thick and gooey and settles back into itself.

As you pipe the macaron mixture it should spread slightly. You may see the point at which you released the piping bag or some imperfection on your macaron. Don't worry! It should bake out smooth and the beautiful "foot" will appear—the frilly edge along the base.

If you are using food coloring, be sure do use gel which is thicker. Add the gel during the soft peak stage. This will ensure the color is thoroughly blended by the time you reach stiff peaks.

Using a piping bag, pipe out macaron batter onto cookie sheet lined with parchment and pre-marked circles. Bake for 15 to 18 minutes at 300 degrees. ENJOY!

’m in my mid-40s, and for the first time in my life, I have no immediate family living in the same town as I do. I haven’t lived in the same town as my dad and stepmom since 1988, so I’ve long been used to making plans to see them, but my mother lived about four miles away all these years—until this year, when she retired, sold her house and moved to Edina, Minnesota. But she hasn’t seen it yet because I haven’t been down to the Cities since I got it from Cindy. When my mother announced she was moving, my friends kept anxiously asking me how I was doing. I think they assumed I was feeling like I did when I sent my child off to his freshman year of college. When that happened, I was a wreck. But this time, I wasn’t, and I’m not. Don’t get me wrong. I miss having her at my nonprofit events, and I hate that she hasn’t yet seen the new dress, but there’s this funny

little thing called a telephone, and we use that every day. The day I dropped my son off at college, I kind of thought I might die. Funny, I didn’t. And in part I didn’t because I could see his incredible excitement for this next stage of his life. He was ready, and so I had to be, too, whether I was or not. This holiday season, for the first time in my entire life, my husband and I will have to plan when to see both my parents as well as our son, for they all now live away from us. But it will be just fine because I will be ready, whether I want to be or not.
